lThe Menu: Ca’ Dario’s much-

loved northern-Italian favorites: about a dozen pizzas and as many pastas, grilled lamb with garlic and herbs, a 20-ounce ribeye, a pizza-oven-roasted split artichoke topped with bruschetta and aioli, fried zucchini flowers, fresh fish from near and far, and scallops on the half shell with breadcrumbs and butter, flash-roasted in the pizza oven.

lStrange Beginnings:

Able to open only partially during the pandemic, Furlati quickly built a to-code parklet and soon began offering — and continues to offer — a free bottle of wine for family-style to-go orders totaling $75 or more.

Restaurateurs don’t plan to open during a pandemic. But

Dario Furlati did just that when he opened his fourth in the Ca’ Dario group of restaurants in Montecito in April 2020. Despite the difficulties, he stayed open and kept his staff - a group in whom he takes great pride for always “welcoming you like family.”

STAFF MATTERS When things returned to a semblance of normal this summer, Furlati closed Ca’ Dario for a few days to spend some leisurely time away with his staff. “It’s important to treat them well,” he says. “They have been super loyal to us, and we wanted them to have a good time.”

BRINGING BACK THE GOOD

beer lists feature a variety of local brews and California wines, including many organic selections.

lSeasonal Surprises:

Mesa Verde is all about seasonal change. “When ingredients for a seasonal dish go out of season, the dish may be gone, to be replaced by the next seasonal surprise,” Arnold says.

lGluten-free Good: Variety makes the green plant bowl great, with fried black rice, hazelnuts, black lentils, avocado, sweet potatoes, roasted carrot and cauliflower, grilled radicchio, micro greens, pea tendrils, herbs, tahini, hemp seeds, cilantro and onion. Exhausting to read, energizing to eat!

Peachy Avocado:

l The California avocado reaches new heights in a salad combining a half-avocado, seared peaches, pickled mustard seeds, hemp seeds, dill, parsley and black charcoal vinaigrette.

M

esa Verde became an instant hit when it opened in 2014, earning entry in the Michelin guide thanks to the innovative, greattasting vegan cooking prepared by chef Greg Arnold, a veteran of multiple top L. A. restaurants. A few years later, Mesa Verde encountered the kind of headwinds — topped off by the pandemic — that can doom a restaurant, and eventually, Arnold moved back to L.A., consulting from afar. Now, having ironed out the issues, he’s back in SB, he says, “to restore Mesa Verde to how it was when it opened.” COMING UP — CHEF’S DINNER MENUS: Watch for regularly changing seasonal dinner menus to appear this fall, reflecting Arnold’s extensive creativity while bringing a finedining touch to the rustic dining room. 1919 CLIFF DRIVE • 805.963.4474 • MESAVERDERESTAURANT.COM

TASTE YOUR WAY THROUGH WINE COUNTRY—IN THE HEART OF SANTA BARBARA!

Santa barBARA

is where the mountains meet the ocean, and a world-class, no-car-required wine tasting experience is just a few steps in almost any direction. Given Santa Barbara’s proximity to the Santa Ynez Valley and the Santa Maria Valley, two of the best wine regions in the US, it’s no wonder that a variety of wineries and tasting rooms now populate hot downtown spots, the perennially poppin’ Funk Zone, and other bustling nearby neighborhoods. And thanks to the Santa Barbara Urban Wine Trail, navigating the wealth of options has never been easier.

DINING & DESTINATIONS

WINE TASTING in Santa Barbara dates back to 1962 when Santa Barbara Winery first opened its doors in a warehouse near the city’s oceanfront. In 2005 the Trail began to organically develop around this forerunner, and by 2007 eight of the original downtown wineries joined forces to officially create the Santa Barbara Urban Wine Trail. The goal was to offer everyone - from

oenophiles on serious tasting missions to novices simply looking for a day of fun - the opportunity to learn about and taste the wide range of varietals and styles crafted from the county’s best vineyards. THE TRAIL is currently comprised of 33 wineries and tasting rooms sprinkled throughout several districts, each with a distinct personality and vibe: the iconic Funk Zone, the historic Presidio Neighborhood, the Haley Corridor, and to the north in the “Goodland” of Goleta, and to the south in upscale Montecito, and laidback Summerland. Explore the Trail on foot, hop on a shuttle, cruise it by bike, or catch a ride-share. Along the way, be sure to stop and sample the eclectic assortment of restaurants, breweries, cocktail joints, art galleries, coffee bars, retail shops, and even a distillery. GUEST EDITOR Meet Guest Editor Jules Kramer, jewelry designer and owner of the Funk Zone lifestyle gallery Jules by the Sea. Along with several other long-time local artisan makers, her treasure-filled shop is housed in a 1950s Quonset hut located just a few blocks from the ocean. When Jules is not at her on-site studio (which she typically is), you’ll likely find her hanging out with her family or running on Montecito’s Butterfly Beach, scanning the tide for sea glass and other gifts from the sea, which typically end up starring in future ring or necklace designs. She loves connecting with the many visitors-turned-customers from all over the globe who frequent her store and often makes on-the-spot custom adjustments to jewelry pieces to fit their needs. “The shop is primarily curated with handmade jewelry that I have designed and made. Gold-fill and sterling silver alongside ocean-colored gemstones are the principal components used to create the beautiful accessories which capture my elegant yet approachable dayto-night designs. I also offer a selection of quality goods like crystals, blankets and candles, which pretty much represent all my favorite things that inspire laid-back ‘Cali’ living,” says Jules. ETHEREAL. ELEGANT. EXCLUSIVE. These are just a few words that come to mind when describing local artist Colette Cosentino's work. However, visitors who have been fortunate enough to visit Colette in her downtown flagship art studio would likely add welcoming, down-to-earth and approachable to the list. Like the layers of paint, textures and decorative motifs of her signature painting style, gorgeous layers of completed canvases and prints line the floor and cover the walls of her fanciful space. From murals two years in the making and wall coverings for storied design houses to fine art prints and playful wooden art block puzzles (inspired by a beloved childhood keepsake), this esteemed painter makes her art accessible to all. And the serene scene is not limited to art. Colette also carries a small selection of hand-made tulle skirts, dresses and velvet slips that harken back to time spent in a tutu when she was a small child with ballerina dreams. Of the clothing collection, Colette says, "I really believe it is important, vital even, to cultivate the life of our child within. We're too young to be old!" It is this attitude and the pervasive presence of sophisticated whimsy that ultimately define her 30+ year career. Even as the accomplishments, prestigious commissions and collaborations stack up, Colette considers herself a "late bloomer" and feels she's "just getting started." If this is just the beginning, we can't wait to see what comes next!

A Quick Q&A with Colette

Tell us a bit about yourself and the origin story of the atelier/gallery. It was always a dream of mine to have a retail shop/gallery in which to work. In the past, my studios mainly were solitary, and I wanted interaction. I like visitors! What inspires and informs the ethereal themes presented in your work? It's a heart thing. I want to inspire and affect people in a way that makes them feel comforted and invigorated all at once. I create with the intent to inspire others to be creative. I want the viewer's inner-child to be awakened, invoking imagination. How do you go about getting your concepts on canvas? My process is highly experimental. I work in oil, oil sticks, open acrylics, gauche, ink and metallics and use water, light and wind. My approach to the canvas, which gets turned in all sorts of directions, is spontaneous.

clockwise from top: artist Colette Cosentino in her downtown atelier/gallery; a detail of Twilight's Garden; an artfully curated gallery wall; a first edition handblown glass paperweight.

What have you been up to since launching your impressive wallcoverings collaboration/collection with F. Schumacher & Co? I have two mural-sized works in progress, both two years in the making, which I work on as time allows. I'm also finishing up commissions and busy creating new works. In addition to your original paintings and prints, what other treasures might customers discover in the gallery? I'm very excited to announce the launch of my signature paperweights - a first edition of 50 each, of four different designs. Each piece, made of hand-blown glass using imagery from my paintings, is hand-signed, numbered and dated. Also, just in time for holiday shopping, I'll be introducing my hand-crafted, signature art kits. Intended to be done with a friend, the kits come in a hinged wooden box and contain two images, along with a curated group of paints, brushes, a palette, and more. It's for those who want to be creative but just need a little push in the right direction. In a world of big-box stores and corporate chains, local business owners like Steven Tiller, founder and owner of SeaVees, are working hard to preserve the distinctive character of Santa Barbara. Independent establishments like his reflect our community, bring variety to our retail experience and vitality to our neighborhoods. Here's a quick intro to the man behind this thriving brand and its Funk Zonelocated flagship store.

Come check out Santa Barbara’s only craft coworking space! STEVEN TILLER Founder/Owner of SeaVees

From kids’ parties to adult birthdays to corporate team bonding we can do it all.

Tell us a little about yourself and how you came to resurrect a sneaker brand initially founded in 1964. I was a disenchanted brand designer and trendspotter for a large corporation. Even though my travels took me all over the world, I’d been trying to find the courage – and the big idea - for a while to go out on my own. I’d been collecting vintage sneakers for several years that I would acquire on my trips. In my free time in the evenings I’d wander the streets, listening to music, hitting thrift stores in search of the latest addition to my collection.

It was behind glass in a second hand store in Shibuya – the first time I laid eyes on a pair of SeaVees. They were deadstock from the 1960’s. They had the seduction of the sea in their name and a beautifully distinct light blue herringbone bottom. I knew right away I had to have them. They’d either be the most random and rarest addition to my collection or perhaps that opportunity I’d been privately planning for – to finally start my own brand. Why did you choose Santa Barbara as home base for operations and to set up a flagship shop in the Funk Zone? We think of our stores as a passage into a 1960s California dream. Community clubhouses built to celebrate the Golden State in its golden age, while providing immersive experiences to our customers. When we began the search for our flagship location, the right space, in the heart of the Funk Zone, eventually presented itself. The building had amazing bones to start with – it was an old surf shop outfitted with concrete floors, a tin roof, and origins steeped in history. It was the perfect place to open up shop and share who we are with the community. (continued on page 80)

FALL/WINTER 2021

THERE ARE PLENTY of reasons to frequent Haley Corridor, located just east of downtown Santa Barbara - historic restaurants, wine tasting, breweries, and first-rate espresso - but perhaps the best reason and one that has us swooning is Catherine Gee boutique. This elegant flagship store and atelier, neatly curated with current collections, timeless staples and a tight edit of covetable accessories and lifestyle goods, could be right at home in SoHo. But to the delight of locals and visitors looking for an elevated yet approachable fashion experience, Catherine Gee, fashion designer, artist and owner of her eponymous label, calls Santa Barbara home. Over six years ago, the line debuted as an all silk collection, including her enduringly popular slip dress, and has since grown into a complete ready-to-wear brand. While printed silk blouses and dresses remain at the heart of the collection, offerings like jacquard coats, luxe velvet jackets, and perfectly tailored cotton twill pants hang beside them. Here, the designer talks about the birth of her brand, seasonal inspiration, her go-to look and more.

C AT H E R I N E GEE BOUTIQUE

Silky Success Story

Catherine Gee launched in 2016 as an all silk collection, emphasizing the classic biascut slip dress and a clear vision: luxurious, quality silks with attention to drape and fit. The Mediterranean climate of Santa Barbara, combined with the phenomenal landscapes and light, informed the brand's DNA from the beginning and continues to inspire and direct the collections year after year. Initially, we discovered an excellent niche resort wear market, and over the years, I realized that I wanted to dress women from day to night. It is now a full ready-to-wear collection with our signature silk blouses and slip dresses as core classics, along with denim, twill and pima cotton pants and tees made in Peru. Our eye-catching, luxe, jacquard jackets are skillfully made in LA.

Practical Pragmatism, With A Side of Local Flora

Real, everyday women inspire me. I look at style and practicality - pragmatism with a little flair. When I travel, my eyes are always open to how women live and what they live in that makes them feel empowered, comfortable and beautiful. Strong women from all walks of life inspire my designs. I also find design inspiration on long walks all along the Riviera and have created many custom prints from ideas spawned by Santa Barbara flora and fauna.

Up Close & Personal Styling

Catherine Gee customers who shop our flagship location are treated to a highly individualized and intimate experience. We call the store a "boutique/atelier," and on most days, you'll see me amongst the upcoming season's design concepts, print swatches and bolts of silks. I actually work and conceptualize in the store! My colleague Lauren is a masterful merchandiser, and she has made it feel like a designer's space combined with a store, with a floor-to-ceiling mood board including press and fabric swatches mixed in as well. I am in the store Monday through Friday, so personal styling naturally comes with serving our clientele. Building a lasting wardrobe takes time, thought and attention to fit and detail. It's always a joy to meet new clients and see them return season after season to discover the new collections.

Clockwise from top: Designer, Catherine Gee in her boutique/atelier. • Altaire Demi lune drawstring bag. • Beauty products from Costa Brazil. • The jacquard Margot Car Coat. • Below: Catherine Gee models her signature look.

Currently in Rotation

My day-to-day uniform is the Daria Blouse (prints and solids) with the new Olivia pant in denim or ivory cotton twill. If I meet a friend for dinner or drinks, I'll put on the jacquard Lydia Jacket for a bit of flair.

Less = More Please

My style is less is more, and I also love investing in pieces that make you sing and feel great. Dress to enhance yourself and let your wardrobe help tap into your strength. And color or a lively print always gives a lasting impression. Catherine Gee is available in about 80 retail locations across the US. THE CRAFTER'S LIBRARY

FAMILY FRIENDLY FUN

DIY FUN WITH NO DUE DATE

Attention all crafters, wanna be crafters and those who don't yet know they want to be crafters! There's a new venue in town with an entirely refreshing concept for entertainment and socializing - a place built around the idea of making things and meeting people. Recently opened in Downtown Santa Barbara, The Crafter's Library is the ultimate place to nurture your creative spirit, learn something new and leave with a one-of-a-kind, hand-crafted project. This beautiful and unique gathering space hits the sweet spot for those seeking a departure from the traditional food and drink-centric mingling. Various classes and workshops, including basic sewing, glass etching, macrame and other modern craft projects, are offered. You can take a class or work on your own, bring your own supplies or purchase them on-site. And for those members who just want to relax, knit, crochet, or simply commune with fellow crafters, a cozy lounge area awaits. A range of membership options, designed to meet the needs of both locals and visitors (more about that in the Q & A), allow guests access to some of the newest and most sophisticated craft machinery available. And of course, friendly, knowledgeable, and talented team members are on-hand to assist and instruct users on operating the cutting-edge technology. We recently caught up with owner and maker extraordinaire Andrew Rawls between workshops to learn more about his creative endeavor. By the end of our visit, all we could say is sign us up! Tell us a bit about yourself and the origin story of The Crafter's Library. As a native Californian, I am thrilled to open my first brick-and-mortar DIY craft and co-working space in Santa Barbara. I hope this space will inspire folks to get in touch with their creative side and allow them to make a few friends along the way. Are beginners and children welcome at the library, or is it for seasoned crafters only? Our motto at The Crafter's Library is "anyone can craft!" We truly believe that crafting ability transcends age, race, gender, perceived ability, and pretty much everything else with which we identify ourselves. Of all the craft machinery members have access to, from simple sewing machines to incredibly hightech digital carving and laser etching equipment, which are you most excited to have in the library? As a sewist, I LOVE my sewing machines. But I will say, having some computerized die-cutting machines is awesome. They really elevate craft projects to the next level and give them a totally professional look. The Crafter's Library offers a variety of affordable membership options, but can out-of-town crafters pop in just for the day? We are happy to offer single day, week, month or annual membership options. No matter who you are or how much time you're spending in Santa Barbara, you can come in and take advantage of all that we offer here. The library is a place to create - what other hopes and visions do you have for its future? I'm excited to see what kinds of communities organically grow here. We are passionate about making sure all people feel welcome and safe with an opportunity to get out of their comfort zone and try something new. What else would you like for potential members to know about The Crafter's Library? We are so much more than just a craft store. We offer private event space for parties, corporate events, kids' birthdays, etc. We also have a retail section that features books, fabric, quilting supplies, gifts, and other craft-related goods, along with a selection of consignment items made by members. Folks love having the opportunity here to buy artisan goods from local makers. 9 EAST FIGUEROA STREET, 805.770.3566

LOCAL STYLE

POPPY

28 YEARS OF CENTRAL COAST STYLE COMES T O S A N TA B A R B A R A

SOPHIA TOLLE, owner of the always bustling Poppy women's clothing and gift boutiques, has been dressing legions of fashionable Central Coast fans and outof-town guests since launching her flagship store in Morro Bay nearly 28 years ago. And fortunately for Santa Barbara shoppers, she opened a second location on State Street in 2020. Given the breadth of categories covered within the bright space, shopping at Poppy could be a bit overwhelming, but because the departments are so well organized and the clothing and accessories beautifully merchandised, perusing is a pleasure. Also, friendly staff members are available to cater to any customer needs, which is a good thing because this shop is nearly always buzzing. That's likely due to the smartly curated selection of labels like Habitat, Life Is Good, Liverpool, Cut Loose and more. And for the Brighton fans out there, Poppy has a section, almost like a shop-within-a-shop, dedicated to the collection, including jewelry, handbags and other Brighton accessories. Then there's the gift section, filled with luxurious bath and body treats, candles, decor items and toys and goodies for the wee ones. We recently popped into Poppy to have a quick chat with Sophia. Luckily, we were able to catch her between locations and her busy buying schedule. She graciously gave us a few minutes of her valuable time, and here's what she had to say about her beloved boutique, her recipe for retail success and more. Tell us a bit about the origin story and evolution of Poppy and what inspired you to open a second location in Santa Barbara. I opened Poppy in Morro Bay in 1993. Although it started as a gift store, the business continued to grow and expand to include clothing, accessories and shoes. I fell in love with Santa Barbara on my first visit and instantly knew I wanted to have a store that presented the Santa Barbara lifestyle. I was taken by the sun's warmth, the beach and the rich culture and history seen in the buildings and architecture throughout the city. Although we signed our lease in January of 2020, due to the lockdown, we couldn't officially open until June first of 2020. It was a challenging year, especially for a new business. Still, local customers were kind enough to welcome us to their community and support us through it all. We love serving Santa Barbara locals and visitors and providing them with timeless style and a unique selection of gifts and accessories. Given that Poppy was established nearly 30 years ago in Morro Bay and the retail landscape has changed so much since then, to what do you attribute your boutique’s longevity and continued success here on the Central Coast? Our focus has always been on three different areas of the business. • We listen closely to our customers to know what they like, which allows us to become their personal shoppers. • We are blessed with an excellent, friendly and knowledgeable staff. That creates a comfortable environment for our customers to find the perfect gift or an outfit they absolutely love. • We constantly source new brands, unique styles and gifts you won't find in every store. For someone who has never been to Poppy, what kind of experience should they expect? They'll find a fun place with a friendly atmosphere with zero pressure to buy. What's the best thing about your State Street location? We are in the middle of a very active downtown section - close to the mall, opposite the movie theater and surrounded by great restaurants. And parking is a breeze with two nearby parking structures. What is currently on most of your customers' wish lists? We've noticed an increase in people looking for both clothing and gifts everyone is excited to travel and socialize again! 911 State Street, Santa Barbara • 805.564.0004 911 Embarcadero, Morro Bay • 805.771.9750 poppywoman.com

EMBRACE YOUR OUTDOOR SPACE

Since you took the helm in 2008, SeaVees has gained a reputation as an innovator regarding both materials and design. What inspires you and keeps the brand moving forward? I’m driven by the opportunity to create designs that celebrate individuality across a range of styles and forms of self-expression. To create products that offer the highest level of quality and comfort so you look good and feel good. I’m also driven by the challenge of exploring how we can make positive change within the footwear industry, an industry that has a long way to go when it comes to reducing its environmental impact. We’ve been challenging ourselves, our factories, and our suppliers for years - asking ourselves how can we do better? How can we expand these changes across our brand? With this persistent push, we were eventually able to make numerous inroads and implement these changes throughout our product range. Our SeaChange collection is an example of those efforts, as every shoe in the line features recycled and consciously-sourced components. What new styles are you most excited to have in heavy rotation this fall? I’m particularly excited about our Expo sneaker – a brand new archival-inspired style that’s offered in multiple colors across both men’s and women’s sizes. It highlights sportier details than our customer has seen before, and boasts top-notch materials including Leather Working Group certified suede, French terry lining and post-consumer recycled plastic laces.

What about SeaVees makes you the proudest? I’d say that I’m proudest about our team of impassioned people – the SeaVees crew. They inspire me and challenge me in the most amazing and rewarding ways on a daily basis. I’m 13 years in on this quest, but it still feels fresh and like we are just getting started. CELADON HOUSE

WHERE STYLE & BEAUTY RESIDE

AT THE DOWNTOWN Santa Barbara showroom and studio Celadon House, owner and lead designer Kelli Thornton keeps her exquisite offerings and interiors earthbound with a cohesively curated mix of global goods, a calming color palette and natural textures. There’s a palpable alchemy in the showroom as rough-hewn ladders, modern marble candle holders and mid-century wood and raw iron coffee tables seem right at home together. The gallery-like shop is filled with inspiring yet approachable vignettes - the kind that is easy to envision in your own home. The pièce de résistance of Celadon House collections and what anchors most of these very liveable vignettes is furniture from Cisco Brothers - a sustainable furniture line with a serious commitment to social awareness and the environment. These chic and comfortable sofas, sectionals and chairs are manufactured using FSC certified woods, organic latex, jute, hemp, organic cotton and wool by local craftspeople in Los Angeles. Having partnered with the line for over 20 years, Celadon House now boasts the largest selection of Cisco Brothers furniture on the Central Coast. This thriving design destination is a family affair. Kelli’s daughter, Allie Thornton and son, Rick Thornton, help run the business, along with long-time employee and design assistant, Jorja La Barre. The dynamic team is onhand to provide assistance, insight and guidance to customers. In addition to the retail experience, Celadon House offers comprehensive in-house design services for commercial and residential projects, including new development and construction, space planning, color selection, custom upholstery and room design. Here the team shares their expert advice for creating sophisticated, grounded-in-nature living spaces.

1.

FAMILY AND FUR FRIENDLY There’s

nothing quite like gathering with family, friends and furry companions in a cozy, comfortable spot. For these high-use pieces, like sofas or sectionals, I always recommend one of our easy-to-wash linens, organic cottons or new performance fabrics - they’re moisture, stain and water-resistant.

3.

get enough of these 100% Belgian linen Foutas. These multi-purpose towels come in a variety of colors and are perfect poolside, at the beach, as a table cloth or for my favorite use, curling up outside by the firepit. - Jorja

4.

SWEET DREAMS

When a client comes in for bedding, we love to pull everything off the bed and start from scratch. Then we start layering, maybe with a duvet, then a blanket and perhaps a quilt. For the finishing touches, we might add a throw and, of course, pillow, pillows, pillows!

5.

ART OF GLASS Accessorize with a cluster of ocean-hued recycled African glass beads for an elegant, subtle pop of color the more, the merrier!

totally on board with our new collection of serving trays and cutting boards - they’re inspired by the California coastline and finished with a food-safe resin.

Tie-Dye

TO-DIE-FOR

VEGGIE TACOS

I recently hosted a few friends for an interactive “tie-dye” taco party. The fillings and colorful masa were prepared ahead of time, so when my guests arrived, they could experiment with various color combinations and make their own one-of-a-kind tortillas. Although this process requires no actual tying, there’s plenty of dyeing, and everyone at the party had their own creative methods of combining the naturally-colored masa dough. Some guests rolled it lengthwise and then coiled it into a ball, while others took tiny bits and assembled small speckled balls to place in the press. It was fun to see the results, as each tortilla was unique, much like snowflakes. The best part (besides how delish the tacos were) is that everyone had an absolute blast making and eating them! ¡Salud!

Tie-Dye Tortillas

Ayda

Green dye: Juice 2 bunches of cilantro and washed baby spinach Blue dye: Juice 1 head of purple cabbage Orange dye: Juice 1 bunch of carrots and ½ teaspoon of turmeric powder. Red dye: Juice 2 red beets Juice each “dye” separately and set aside in separate medium-sized mixing bowls. Each juice should yield between ¼ and ½ cups. Put 1 cup of white masa and 1 teaspoon of Kosher salt in each of the separate bowls. Then pour ¼ cup veggie juice and ¾ cup warm water into each mixing bowl, and knead the dough for about 5 minutes, until the flour is fully incorporated and the dough feels like Play-Dough but is not sticky. Add in a little more masa if needed. Make your tortilla dough balls by pinching off a bit of each color so that the ball is about the size of a ping pong ball when combined. Place in a tortilla press between two plastic sheets, remove and place in a very hot cast iron griddle or skillet and cook on both sides for one minute each until cooked. It should easily release from the pan. Repeat with each masa dough ball.

Taco Fillings

Kabocha Squash: Preheat the oven to 400 degrees and line a baking sheet with parchment paper. Cut kabocha squash into ½ inch slices and remove all seeds. Mix the squash in a bowl with 1 tablespoon sesame oil, 2 tablespoons olive oil, 2 heaping tablespoons of Gochujang (red chili paste), and 1 clove of minced garlic. Place on a baking sheet and roast for 30 - 40 minutes or until the squash is cooked through and golden brown. Set aside. Zucchini: Slice 4 zucchinis in half lengthwise, then cut into half-inch half-moons. Saute with 1 clove of minced garlic, a pinch of salt and 1 teaspoon of fresh thyme in 1 tablespoon of olive oil in a nonstick pan over medium-high heat. Set aside. Mushrooms: Chop or tear mushrooms into 1-inch pieces. I used maitake and King Trumpet (eryngii) for the recipe shown here. Saute over medium-high heat with 1 tablespoon of olive oil and 1 teaspoon of butter (add salt and garlic if desired) until golden brown. Set aside.

Sauces

Cilantro Yogurt Crema (paired with the kabocha squash filling): Mix 1 bunch of chopped cilantro, 1 cup plain Greek yogurt and the juice of 2 limes in a blender until smooth. Pibil Sauce (paired with the mushroom filling) and Tomatillo Salsa (paired with the zucchini): I recommend storebought versions as there are some excellent ones out there. Optional Garnishes: roasted pepitas, sliced limes, fresh cilantro, sliced watermelon radishes, and pickled onions.
