Q&A with the owners of SALT, a healing Himalayan salt cave, unique spa and store. Tell us a bit about Salt and how it has evolved since opening in 2012. We are coming up on our 4th anniversary and a lot has changed since then. Initially, we offered sessions in our two Himalayan Salt Caves, standard massage treatments in the spa rooms and primarily sold imported salt lamps and cooking blocks. We now offer a much broader selection of high-quality products made right here in Santa Barbara goods for the home, body and food. We also have more specialized treatments designed to maximize the amazing healing benefits of Himalayan salt. We’ve also added a tea room, which serves as a waiting area. We look at the space based on what we have in our collection at the time, starting with the art on the walls, then moving onto the furniture, and finally the decorative objects. It’s always fun putting it all together, especially hanging the art from all the local artists we represent. In addition to the fabulous local and European art and antiques, what other accessories and gift items do you offer? We have added many new gift lines, such as soaps, perfumes and creams from Italy and France, and my favorite - jewelry! COOL, SLEEK, MODERN - AND WARM Reed Interiors installs a kitchen for the ages in a century-old Craftsman house.

As an interior designer,

Jessica Schaeman knows what looks good. She also likes to support local businesses. So when she began remodeling the nearly 120-year-old Craftsman home she purchased recently in Montecito, she visited Reed Interiors in Carpinteria to look for kitchen flooring. While in the showroom, she became interested in the modern European-style kitchens that are a Reed specialty. Soon after, she was working with Reed’s master kitchen designer, Michel Clair, to create a kitchen that is as functional as it is beautiful, as ergonomic as it is edgy, and as warm as it is cool. "The first thing about the kitchen for me is that it’s extremely functional. Everything has a place and is in the right place," says Schaeman. "You have the right drawer where you need it. When you’re reaching for a pan, it’s in the upper left drawer next to the stove. It’s amazing." Every lower drawer is lit with motion-sensor LED lighting, as are the bottoms of cabinets above counters. Pots and pans fit into slots in one big drawer just below counter height, and knives are neatly aligned and securely held in another. Oils and other indispensable cooking staples are in a drawer adjacent to the range. The kitchen is well grounded on a floor of foot-wide planks in pearl color. That gently toned wood infuses the palette in the rest of the room, which calls to mind driftwood, dove feathers, and bright-white tropical beach sand. A gleaming stainless-steel-topped white-lacquer island loaded with storage anchors the space. Four wood stools line one side. Around the room’s perimeter is a phalanx of ingenious modular components from Armony Cucine, Italy’s premier 56

"I wanted laminate because I have two teenaged boys and a husband who fancies himself a chef and is a good cook but is tough on kitchens," says Schaeman. "It’s beautiful and completely indestructible." One long wall contains refrigerators, a freezer, a wine storage unit, a microwave, a second oven, and a pair of pantries. The main Viking stove and the stainless steel hood above it gleam, while the wall behind the cooking area is covered with small, retro-looking modernist tiles in gray, light blue and white from NS Ceramics of Santa Barbara. "With modern design, you can easily make something look like a lab, so colors and textures are really important," Schaeman says. "The tiles pull everything together, and the taupe gray stool cushions soften the look. It’s modern and sleek but also warm, approachable and comfortable." When setting off on a kitchen redesign, Schaeman says, "There are so many choices that you can get overwhelmed. That’s where a designer is so valuable. He can help you understand what really makes sense. Michel really knows what he’s doing, and it could not have been easier to work with Reed. I’ve used them with clients and will continue to. They do a great job."

The food is authentic. Many of the pastas, including the ravioli, gnocchi, and lasagna, are made in-house. From the bread and olive oil to the fall-off-the-fork ossobuco, Tre Lune delivers. After regular Ellen DeGeneres repeatedly ordered a salad with grilled fish in it, the restaurant added the now-popular “Ellen Salad” to the menu: tomatoes, arugula, grilled shrimp, scallops and salmon and mustard vinaigrette. Wild-boar penne, basil pesto, tuna tartare, lobster ravioli and veal milanese (a pounded, breaded veal chop on the bone) are standouts. You’ll find white truffles

in winter, farmer’s market produce all year, local seafood (sea bass, halibut and stone crab) and imported whole branzino, cooked in the pizza oven or in a salt crust, plus firstrate pizzas. The all-Italian wine list is a yearly Wine Spectator award winner, and more than 40 wines are offered by the glass daily, along with negroni, bellini and other classic Italian cocktails. The restaurant also serves a largely American-style breakfast with Italian twists, and at least once, you should plan to attend the annual Opera Night in spring, when Opera Santa Barbara performers work the room while guests enjoy a four-course dinner.

This December Ca’Dario Pizzeria will celebrate four years of serving some of the best authentic Italian pizza in town in a Soho-style space two doors from the ever-popular Ca’Dario Ristorante. Chef-owner Dario Furlati offers great pizza at great prices, using the best Italian ingredients and local farmers market produce. His goal is always to serve “the original - what you find in Italy.” The pizzeria is its own restaurant with its own bar, but it remains close to its sibling. If Ca’Dario is full when you come for dinner without reservations, you can wait in the pizzeria over a glass of wine or beer, or enjoy a full meal - a pizza, a salad, and maybe one of the nightly entrée specials. The room is also fantastic for private parties. Furlati, who hails from Lake Como, has recently experienced that old “sincerest form of flattery” in seeing imitations of his pizza nera (black) pop up around town. Like the other menu offerings, that innovation - colored with squid ink, topped with mixed seafood and available in an outstanding gluten-free version if you like - is pizza not as a fallback option, but as a leap forward in good taste.

Santa Barbara has no shortage of Mexican restaurants. But since 1999, nobody has done it better than Tony Arroyo, who serves some of the freshest, healthiest, best-tasting Mexican food in town at his two eponymous restaurants, Los Arroyos Mexican Restaurant & Take Out. And he has another in Camarillo. Since opening in 1999, Tony has expanded the tiny (less than 600 square feet) original Figueroa Street location and added another in Montecito. The original has counter service and table delivery; the Montecito site offers table service, plus a full bar with more than one hundred tequilas. Several things unite the restaurants: the always-warm welcome, a dedicated staff (some of whom have been there since the beginning and now work alongside their teenaged children), Tony’s attention to detail and his dedication to healthy, high-quality ingredients. Everything is made on the premises the day it’s served. The kitchen turns out ten homemade salsas each morning and rice is cooked up to five times a day to ensure freshness. Tortillas are handmade and tortilla chips cooked to order. Black Angus beef and free-range chicken are hand trimmed, cooked and shredded (or grilled) in the kitchen, where pasilla chilies are also carefully cooked, seeded and sliced. The staff roast and peel their own tomatoes. There are no shortcuts, and nothing is ever reheated. “It’s like my mother’s cooking, but from my hands,” says Tony, who grew up in the Mexican state of Michoacán, came to the U.S. by bus in 1984 and has spent the past thirty years perfecting his trade. “Our signature dish is quality,” Tony says. It shows up in his enchiladas, pozole, tacos, fajitas, chile rellenos, salads - everything. Wednesdays and Fridays are tamale days, but get there early because the eighty or so handmade tamales are gone by about 6 pm. On Christmas Eve last year, they set a record by preparing 1,700 special-order tamales for holiday celebrations at the homes of loyal customers. They say you can’t go home again. Chicken Pot Pie

Process

Makes 6 individual pot pies or one large pot pie, serves 4-6

In a saucepan, heat up 2 cups of chicken broth with the dried porcini mushrooms and let them rehydrate for 20 minutes, simmering over medium-low heat.

2 slices of bacon, chopped 2 tablespoons olive oil 2 small leeks 1 medium onion, diced 1 clove of garlic 4 small to medium carrots, peeled and chopped 2 celery stalks, chopped with the leaves 8-12 mini red potatoes, halved ½ cup frozen peas ½ teaspoon roughly chopped thyme ½ teaspoon roughly chopped rosemary

In a separate pot, parboil the potatoes for 10 minutes until fork tender.

4 tablespoons butter 1/3 cup flour 1/3 cup white wine

In a saucepan, melt 4 tablespoons of butter. Add in the 1/3 cup of flour, whisking it until it becomes a paste. Gradually add in all the rest of the stock and the 1/3 cup of white wine, and salt and pepper to taste. Cook down until it coats the back of the spoon, making sure to whisk any clumps vigorously. Add in the chicken and vegetables and the frozen peas.

Meanwhile, cut chicken into bite size pieces and blot with a paper towel. Cut two pieces of bacon and render in 1 tablespoon olive oil in a large sauté pan. Add in the chicken. Cook until bacon is rendered and chicken is lightly browned. Remove from the pan and set aside. In the same sauté pan, add 1 tablespoon of olive oil and 1 tablespoon butter. Sauté leeks, onion, parboiled potatoes, carrots, celery, garlic. Strain out the porcini from the stock and chop the mushrooms, then add to the sautéing vegetables. Add salt, pepper, and fresh herbs. Add ¼ cup of the chicken-porcini stock. Sauté for 10 minutes, until vegetables soften and onions are translucent and flavors start to meld together. Remove the veggies from the sauté pan and set aside in a bowl with the chicken.

In oven safe ramekins, baking dishes, or whatever vessel you want to use, put your filling in and lay the sheet of puff pastry over it, crimping the sides. You can fasten the pastry to the perimeter of your container by brushing with egg wash. Pierce a couple of small holes in the top of the puff pastry, and brush the top of the pot pie with egg wash. Bake at 375 for 20 minutes or until the pastry is puffed and golden all the way through. HUB FOR COLLABORATION: The Santa Barbara Center for Art, Science and Technology

SBCAST is fundamentally about communication and a lot of people moving through who can communicate and work with each other in an environment that’s conducive to that.

Garden Street recently became home to a dynamic new enterprise intended to support and nurture collaborative

creativity and expression. The Santa Barbra Center for Art, Science and Technology (SBCAST) opened early in 2016 with inspiration from other live-work collaboratives around the world. “SBCAST is fundamentally about communication and a lot of people moving through who can communicate and work with each other in an environment that’s conducive to that,” says founder Alan Macy, a medical engineer and sculptor. He expects groups of residents to arrive at about the same time and then spend 18 months collaborating on projects before a new group comes in. In late summer, residents included Maiza Hixson, chief curator at the Santa Barbara Arts Commission; a group involved in graphics, website and video production; an LED artist; a movement artist; and local artist Nancy Gifford, who is using a studio to introduce artists she likes in the local community. Macy sees art, science and technology as complementary elements in a shared whole. Science pushes the boundaries of knowledge, generating new ideas for expression. Art addresses the subjective elements of perception and presentation of ideas. And technology whether a computer, a lathe or a painter’s tools - supports expression. Immediately recognizable by the rust-colored steel walls facing Garden Street, SBCAST is organized around focused exhibitions created and coordinated by curator-in-residence Lynn M. Holly. A recent First Thursday show featured wood dresses, the result of a collaboration between a fashion designer and a wood-marquetry expert. SBCAST includes nine live-work studio spaces, two communal exhibit spaces, and a shared industrial workspace. Rooftop solar arrays generate 100-percent of SBCAST’s electricity in the LEED-certified development. A community farm provides produce for residents, while access to downtown, a lumber yard, Art from Scrap, the farmer’s market and bus lines supports sustainability goals. “Some environments are optimal for simulating and supporting the creative process,” Macy explains. “SBCAST is a rich environment that allows people to flower, and a social experiment that supports conscious awareness.”
