Get to know Santa Barbara's newest kids on the block. Fresh ingredients and handmade care - they’re the secret to the homestyle Mexican cuisine available at ALITO’S downtown. Brothers Eduardo, Victor and Juan Carlos Carranza based the menu on the food their mother used to prepare for them while growing up in Mexico City. There’s a big traditional Sunday brunch also. 509 State Street, 805.845.7133, alitosonstate.com Husband and wife team Brendan Smith and Rachel Greenspan, following the success of their mobile pizza catering concept Autostrada, are on a mission to bring the finest Neapolitan-style pizzas and naturally leavened breads to the Santa Barbara community at BETTINA in the Montecito Country Mart. Greenspan describes the fare as “California cuisine with an Italian accent.” Choose from a well-crafted selection of spritzes, amari, digestifs, vermouths and a thoughtful mix of new and old-world wines. 1014 Coast Village Rd., 805.770.2382, bettinapizzeria.com

INSTITUTION ALE CO. is a family owned and operated craft brewery specializing in American style ales. They originally opened in 2013 with a brewery and tasting room in Camarillo, and their Santa Barbara taproom is the first satellite tasting room. The taproom includes indoor seating with ten TVs, an outdoor patio area, and a beer to-go bar. 516 State Street, 805.482.3777, institutionales.com The same folks who brought the instant-favorite Empty Bowl Thai noodle shop to the Public Market downtown, have now opened KHAO KAENG in Montecito, where they are serving equally authentic curries and other Thai specialities. Co-owners Jerry Lee and Emre Balli, both sommeliers, are way into pairing wine and beer with the food prepared by adventurous chef and coowner, Nui Pannak. 1187 Coast Village Rd. The homemade tiramisú is as light as a cloud, but rich! Yes, an espresso, grazie!
TASTE OF HOME:
“Everything is authentic,” says Chef Elisabetta Penso. For instance, the pappardelle Bolognese, with its deep, dense ragú, cooks for two to three hours. “We want to offer a taste of home.”
A FEW PAIRS:
• With the linguine alle vongole (clams): “Fiano, a white from near Naples with medium herbs and a crisp, acidic finish.” • For Elisabetta’s Bolognese: Ripassa Superiore, a bold red made in the Veneto region. • For fresh local halibut with lemon sauce: One of several sparkling wines. “They refresh the palate without overwhelming the fish.”
DUE LUNE: GREAT ITALIAN A STEP FROM STEARN’S WHARF
The Real Deal: Due Lune brings a true Italian dining experience to the watery end of State Street. Sea views flood through walls of windows, and ocean air scents the big patio. Classic dishes and fantastic local seafood are served with a warm welcome that has made Due Lune a favorite of local Italian expats. PAIR IT Elisabetta’s personable husband, Antonio, is the general manager and a certified sommelier. “It’s important to pair food with the right wine because one complements the other. If you choose the wrong wine, you can ruin the taste of the food and you won't appreciate the wine!” 1 State Street • 805.770.3112 • duelunecucina.com

SPICE RACK:
Each of the spicy potions in the tabletop condiment racks goes best with certain dishes. Ask the staff to guide you.
THIS IS CURRY:
With its handmade curry paste and dazzling flavors, the green chicken curry (kaeng keaw wan) epitomizes the made-from-scratch ethos. Team it with Austrian Malat Riesling, a flowery, highacid wine that perfectly balances the curry’s delectable fire.
MEMORY CENTRAL:
“On vacation, people come across these flavors and later think, How can I get that papaya salad or northern Thai curry at home?” Lee says. “We can re-create it for you.”
KHAO KAENG MAKES MONTECITO CURRY CENTRAL
Fresh off their first success - the always-full Empty Bowl Gourmet Noodle Bar in the Public Market downtown - co-owners Jerry Lee, Emre Balli and Nui Pannak (she’s the chef, too) are now serving real-deal Thai cuisine at Khao Kaeng (khao means “rice,” and kaeng means “curry”) in Montecito. PRO HOME COOK An adventurous chef, Pannak grew up cooking with her father in the countryside near Bangkok, always “searching for things I had never cooked before.” That spirit infuses Khao Kaeng. 1187 Coast Village Road, Suite 9 • 805.770.7170 • khaokaeng.com

LOBSTER: THE MAINE THING:
Mondays and Tuesdays, a live 2-pound Maine lobster is $37.95. (Wednesday is dollar oyster day.) Sourced from the same supplier for 40-plus years, the lobsters are steamed, not boiled, to retain flavor and moisture, then served simply, with two sides, lemon, butter and salt. Also available grilled over mesquite.

Enterprise’s happy hour has been voted best in SB multiple times: bargain $4.25 house wines, 20-ounce craft brews for $5, and $5.50 cocktails.

VINE TIME:
Based in the little town of Valdobbiadene, in the foothills of the Dolomiti Mountains, Tom passed through acres of glera vines while walking village to village, 20-plus miles a day.
THE SPRITZ IS BACK:
Once wildly popular in Italy, the spritz aperitivo is a hit again. “It fits into a lifestyle, thanks largely to Prosecco,” Tom says. “With its light flavor profile and affordability, Prosecco is an elegant wine you can enjoy every day something done as easily at Toma as in Valdobbiadene.”
PAIR IT UP:
TOMA: PUTTIN’ ON THE SPRITZ As he has done for many years, Toma proprietor Tom Dolan, spent part of 2018 walking through Italy, tracking down good comestibles to “import” back to the restaurant. This year he visited northeastern Italy, home to the sparkling wine Prosecco.
Says Tom, “Prosecco and the spritely white wines of the Veneto and Friuli region pair wonderfully with our fresh local seafood - like octopus, calamari, ahi tuna cones, seabass and halibut.”
ON THE ROAD:
Tom carries a small backpack filled with only the basics, plus clothes for evenings at gastronomic outposts along the way.

MOLLIE’S: REAL ITALIAN After 25 years in Montecito, Trattoria Mollie has moved to State Street and is now known simply as Mollie’s. Here, the uncompromising, high-energy, Ethiopian-born chef/owner, Mollie Ahlstrand, continues to turn out benchmark examples of classic Italian dishes. CUSTOMER-CENTRIC:
“I love my customers and stand for them,” Mollie says. “We cook with honesty, dignity and pride, and I eat what I serve every day.”
CHEF’S VISON:
“My approach to cooking is similar to my approach to life: keep it simple, eat only fresh foods and vegetables - no processed foods - and get most of your protein from fresh seafood.”
INGREDIENTS ARE EVERYTHING:
Bread, tomato sauce, ravioli, gnocchi, desserts and gelato are made fresh in-house every day. She features mostly wild-caught fish and mainly organic vegetables.
A COUPLE OF CLASSICS:
b PASSION IS THE ENGINE “If you love what you’re doing, it’s not work,” says Mollie, who spends 12 to 15 hours in the restaurant seven days a week - and has since she started.

DINING & DESTINATIONS
Mollie takes special pride in two classic pasta dishes from Rome: carbonara and matriciana. The carbonara has no cream or peas, just pancetta, egg, pecorino and parmigiano. The matriciana is made with fresh tomatoes, pancetta, pecorino and parmesan, and never too much garlic or too much spice.

Mum’s the Word: Ask about Alito’s “secret” menu. Ali won’t say a single word more.
WHAT’S IN IT:
“We always ate well growing up, but at home, not at restaurants,” says Eduardo. “The key is to use fresh ingredients and make everything from scratch.”
MEX AT ITS BEST:
The shrimp cocktail served in a double old-fashioned glass leans a bit toward gazpacho, and the chile rellenos are labor-intensive artisanal examples of their kind.
BRUNCH WITH AN ACCENT:
Sundays Alito’s serves a traditional brunch with Mexican flair: there are omelets, house-made pastries and mimosas, sure, but also huevos rancheros, chilaquiles and sangria.
ALITO’S: AUTHENTIC, UPSCALE MEXICAN FOOD ARRIVES DOWNTOWN
Food Legacy: Alito’s proprietor Ali Ahlstrand inherited a love of ingredientdriven cooking from his mom, chef and restaurateur Mollie Ahlstrand. His new restaurant Alito’s turns that legacy to Mexican cuisine he describes as “love-intensive food.” BROTHERS ACT Brothers Eduardo, Victor and Juan Carlos Carranza have manned the stoves at Mollie’s for 25 years. At Alito’s, they’ve created a changing menu of dishes they learned from their mother while growing up in Mexico City. 509 State Street • 805.845.7133 • alitosonstate.com

TUESDAY THING:
On the second Tuesday of every month, Ducharme features a seasonal seafood-and-drink pairing, such as sushi with sake, roasted oysters with Firestone beer and, in July, the always sold-out New England clambake. She and her crew walk around discussing the combinations with customers.
CATCH THE SUN:
The upstairs deck is the perfect view-filled spot for a bite like local sea urchin or mussels and a Central Coast wine or craft brew from the extensive list.
IN A STEW:
Here, classic cioppino is loaded with local shrimp, Venus clams and house-cut snapper, swordfish or Alaskan cod. The zesty slowsimmered soup oozes bright flavors, evoking a true Italian marinara. A mai-tai makes a satisfying preamble.
BLUEWATER GRILL:
THEY KNOW SEAFOOD
Bluewater Grill is thoroughly anchored to the ocean. It’s located in a converted lighthouse building on the SB waterfront, and some of its super-fresh, mostly local fish is caught from co-founder Richard Staunton’s boat. Chef Chanel Ducharme prepares it all with care and creativity. CHEF’S INSIGHT: Sustainability matters. Ducharme grew up by the water in Ventura and appreciates what the ocean provides. She serves only sustainably harvested seafood and can tell you where every clam, halibut fillet, crab, oyster, etc. came from.

GOING LOCAL Jill Johnson, local creative, SB native, and the owner of LOVEWORN, shares her passion for vintage denim, travel, and the Funk Zone.
ONE-OF-A-KIND
We produce an exclusive line of hand-screened graphic tees, custom-patched Levis, fun denim maxi skirts, couture cashmere sweaters, military punk jackets and more. I recently re-launched my line of mini-dresses, which already have a cult following, probably because they are incredibly flattering.
LOCATION, LOCATION, LOCATION
The store is a mere 132 steps (I know because I counted) from the Pacific Ocean, where I run along the beach every morning. We also have an art studio nearby where new goods are created daily. My little triangle of locations is the perfect coastal trifecta - I love and appreciate every day! The whole Funk Zone, with its energetic vibe, is filled with other artists and all kinds of interesting tourists from all over the world.
CREATIVE JUICE
Other creative and driven people, vintage textiles, art, and couture, among other things, inspire me. I also love to travel, see new things, and indulge in my mad passion for vintage American denim.

Artist, Wallace Piatt and I, both Santa Barbara locals, have collaborated on artistic projects and business endeavors for decades. As the demand for his paintings has grown throughout the country, we are very excited to now have a gallery filled with his contemporary American pop art, right next door to Loveworn. It also serves as a cool venue for exclusive private events, as well as our art shows and gallery openings.
GREEN JEANS
Sustainability is important to us. All of our tees are ethically produced and hand-screened in our nearby studio. My dress line is designed, cut, and sewn in-house from a highly curated stash of vintage fabric from the ’60s-’80s. We are experts in the history and fit of denim and stock hundreds of vintage jeans.

GOING LOCAL Lisa Knutson, the owner of HOME SANTA BARBARA dishes on her design dreams and decor store. FROM BUDS TO BLOSSOMS
After years of raising children and working with at-risk youth, and countless hours spent flipping through magazines, creating mood boards, and dreaming of home design, I finally had the opportunity to follow my passion. Inspired by the home design and renovation show, Fixer Upper, I applied to carry the line and was accepted. It had always been my heart's desire to have a business with my daughter, Lynsey, so we, along with her husband, Jason Trueman, opened one of the first stores in California to offer Magnolia Home Furniture by Joanna Gaines.
MAGNOLIA AND MORE
So many people are after the Joanna Gaines design look, but don’t know where to begin. Shopping from the Magnolia Home collection - which is exclusive to our store in Santa Barbara County makes it easy and the price point is amazing. Plus, I carry so much more than will fit on the store floor. The additional lines are extensive, complement each other, and offer an eclectic range of styles including farmhouse, boho, modern and everything in between. I try to have a little something to represent each of them, and whatever we don’t have in inventory, can be ordered.
IMMEDIATE GRATIFICATION
The wonderful thing about our store is you can buy right off the floor and take it home the same day. Customers don’t always have six to eight weeks to wait for the perfect piece and here, they don’t have to!
WOMAN MADE
I am always on the hunt for specialty items from womanowned small business throughout the country. We have a quality selection of pillows, jewelry, lotions, candles and more from a number of these great companies and I love supporting them.
IN THE FIELD
Most of our customers, both residential and commercial, don’t hire designers, so we offer “in-home” consultations. We visit their homes or place of business and help them decide what will look good and work well within their space.
HIT REFRESH
Every season you can come in and find something that adds that little spark. You don’t have to buy a new sofa - just add a new chair, rug, pillows, or a decor piece that hits on the current trend.

#SHOPSMALL TALK 7quick questions, with 1 thriving local retailer, over 2 cups of coffee. In a world of big box stores and corporate chains, our local business owners are working hard to preserve the distinctive character of Santa Barbara. These independent establishments reflect our community, bring variety to our retail experience, and vitality to our neighborhoods.
DIANA DOLAN
Porch Tell us about yourself and your business. I like to say I’m an artist who’s yet to discover her “real” medium. I am proud and amazed to say that throughout my working life I have generally always done what I love. Beauty and nature inspire and sustain me, and I think Porch represents that. It is literally my artists’ palette where I’m able to create an environment filled with gorgeous furnishings for home and garden, artful accessories and gifts that are layered with texture and time. I am a native Californian who loves to travel, so the shop has a distinct beach aesthetic with global accents. How did you land in retail? By total “accident.” I had been a floral and event designer for years in LA and was relatively new to Santa Barbara when I stumbled upon Island View Nursery back in 2003-ish. I had an “aha” moment – it was so beyond magical, and I instantly knew I wanted to be a part of it. Ultimately, I became their buyer & merchandiser, and eventually, I realized I had a desire to express my own personal version of retail. My former business partner, Christie Boyd, and I opened our shop in 2008. It was such an adult moment! (continued on page 65)

GOING LOCAL Hugh Hayward, the owner of HAYWARD’S 1890, talks family business, his dream patio, and the secret to this local patio furniture institution’s longevity.
FAMILY TIES
I am the fifth generation working in this business which was founded in 1890 – hence our name! Since then we've evolved along with the taste and style of Santa Barbara. For the past ten years, our primary focus has been on the outdoor furnishings world, which we continue to grow.
DREAMSCAPE
Color and comfort are essential, but first and foremost my dream patio is filled with family and close friends eating, drinking, and enjoying a great party. A view of our beautiful mountains is a must as well as comfortable seating, a fire element, and heating to keep the evenings going outdoors.
FORM + FUNCTION
We focus on quality and style. The most important aspect of outdoor merchandise is its durability and ability to perform outside. Our goal is to have happy customers who take pleasure in their goods for years and years.
TEAM SPIRIT
Each of our “team members” has worked at Hayward’s for over twenty years. We’re all locals who grew up here and stayed here. We know and love every bit of Santa Barbara and have built relationships with generations of customers.

Was there a specific moment or event that inspired you to set up shop in SB/ Carpinteria? Not really…it was a given that we would open in Carpinteria. I live in this special beachside community and wanted the business to be a part of it as well. What are you most coveting in the store right now? Hmmm…. So many great things! I love our new garden shed a lot! It has become a cool architectural extension of the garden where we’re able to host workshops, lectures, and even bands! It’s also a great garden shop filled with outdoor furniture, awesome garden vessels and unique gifts such as our bespoke wall pocket planters. How did you develop such a loyal customer base? I believe it’s our connection to the community. I learned an important lesson in retail a long time ago: People have many places to shop, but they usually choose to shop where they have relationships. Since we opened over ten years ago, it has always been our raison d’etre to be more than just a retail shop. We support local artists and makers, we host artist receptions, workshops, fundraisers and various special events and we are proud to say we are part of our special community. What about Porch makes you the proudest? This is an easy answer; Porch is truly a reprieve for those seeking a connection to beauty, nature, and community. All of us on the Porch “team” have an innate connection to nature and beauty, and I truly believe that energy is a visceral experience. It fills my heart when I hear it time and time again from our customers; they come in not only for the beautiful and unique items we carry but to feel uplifted. People even ask if they can live here!

A GIRLFRIENDS' GUIDE TO A WELL-SEASONED CELEBRATION What could be better than a private yoga session with your best friends in a one-of-a-kind Himalayan salt cave in downtown Santa Barbara?
QUESTION:
Having cupcakes and champagne after a private yoga session with your best friends in a one-of-a-kind Himalayan salt cave in downtown Santa Barbara.
ANSWER:
THE VITALS WHO: Kristen Pipes + A Group of Good Girlfriends WHAT: A Birthday Celebration WHEN: After work on a breezy spring evening WHERE: Salt Cave Santa Barbara
W
hen contemplating how to honor a friend’s birthday, I craved a departure from the fun, but somewhat predictable dinner and drinks evening. I wanted to bring balance to our time together by doing something decidedly different - something meaningful, active, and perhaps a little decadent. So, I booked a private salt cave yoga session, which included a lovely post-workout soiree, replete with Champagne, cupcakes, and other tasty treats. The restorative experience began upon entering the Crystal Cave. The massaging effect of several inches of course salt crystals underfoot, combined with the warm, rosy glow of the surrounding Himalayan salt blocks elicited a collective ahhh. Salt manager and yoga instructor extraordinaire, Chava, lead us through an invigorating and ultimately relaxing session, and, as a bonus, Salt owner, Pam McCaskey popped in and gave us a quick tutorial on the many healing benefits of Himalayan salt. From there, the group transitioned to a well-appointed, private lounge where we relaxed, noshed on a delectable spread, and of course, raised a glass to the birthday girl.
Our clients regularly come in for purifying Halotherapy Cave Sessions, which ease breathing by infusing the air with tiny pure salt micro-particles. The negativelycharged, ionized salt particles along with the 84 trace elements and minerals the salt contains, help to clear pollens, viruses, pollutants, and toxins of the lungs and nasal passageways. Salt Owner, Pam McCaskey
As the evening wrapped, and everyone shopped the dozens of locally-made Himalayan salt products in the boutique, we came to a consensus: to book the cave again. Of the many options available - other yoga and healing classes, cave meditation sessions, and salt-infused massage and facial treatments - one of these will definitely be on our calendars. ABOUT: Salt, a luxury health boutique, houses the largest salt cave in Northern America, constructed from forty tons of 250 million-yearold imported Himalayan salt. The Salt team hosts a variety of exclusive corporate events, family celebrations, bachelorette parties, and even movie nights for kids, all designed with the goal of entertaining, nurturing, and educating people about the healing benefits of salt. 740 State Street, 805.963.7258, saltcavesb.com

TAKING IT ALL IN
A SINGULAR SENSATION
ALL HANDS ON DECK
We like to start the floral design process by taking the time to personally meet each client and do a walk-thru with them at the event location. Even if we have seen the venue before, it's always enlightening to see it from our current client's perspective. Whatever the event or location indoor or outdoor, a private estate, or one of the many luxurious properties in town, each project is taken on with a fresh approach.
Taking time to get to know our clients is a top priority, as we gain so much inspiration hearing their stories and learning about their history. This insight allows me to infuse each client’s distinct personalities into the process. We never re-create anything - every event we produce is a one-of-akind experience.
Once we are acquainted with our clients and establish the basics regarding what they want, we offer an in-depth approach, complete with an interactive and hands-on design meeting for the florals and decor. This can include the creation of a table mock-up where blooms and foliage are selected and capture the essence of their vision.

THE JOURNEY AND THE DESTINATION
Details matter and we pay careful attention to them. Every event should have a free-flowing, cohesive feel. We work right alongside our clients and their event planner to assist in the selection of the table top decor and ensure all of the elements pair perfectly with all aspects of the design.
The “big day” should be a sweet series of connected experiences where guests encounter subtle surprises each step of the way. From a spectacular entryway to an adorned ceremony space, lively cocktail hour, and elegant reception our team creates a floral design plan to ensure a beautiful thread of continuity throughout the event.
Ultimately the goal is expertly executing the client’s vision, but we also make sure they enjoy the journey of getting there. We always expect and honestly hope the design concept continues to evolve as we move through the process. A dynamic process always translates into making dreams come true.

MODERN AND FUNCTIONAL When designing this kitchen, Michel Clair Armony’s lead designer, had to achieve two goals - create an open and inviting space with impeccable functionality and incorporate state of the art features to ensure a pleasant cooking experience. No better choice than ARMONY Italian cabinets at Reed Interiors. The client's attraction to modern lines led them to choose an appropriate mix of complementary materials. They started with the floor, a French Oak exclusive to Reed Interiors in Santa Barbara. For the kitchen, they chose to marry a rich wood veneer for the tall units with a soft white matte lacquer for all the lower cabinets. SILESTONE matte white countertops complemented both the cabinet and floor materials. To accommodate family dinners or Happy Hours with friends, they added a comfortable wood snack table. They wanted their open space kitchen to look pleasing to the eye from any corner of the room and allow them to fulfill their passion for cooking. and exterior projects from consultation and conceptualization to installation and completion. It’s also a welcome alternative style to conventional box home furnishings stores. Here, custom is king and the past and present blend effortlessly. The Habitat team scours the globe, primarily throughout Europe and Asia, in search of one-of-a-kind, handcrafted pieces that have both history and soul. Some treasures are left intact, but most are customized, reimagined, and repurposed to meet the unique design needs and whims of each customer.

Habitat team scours the globe, throughout Europe and Asia, in one-of-a-kind, handcrafted pieces both history and soul.
An organic vibe permeates the showroom, as natural materials and finishes are celebrated in the designs. A veritable jungle of living plants emphasizes the art of living green. Decidedly not a “matching set” company, the distinct and deliberate mix of bohemian, vintage, and contemporary textures and styles creates an aesthetic that is unique to Habitat. Owner Lars Kieler defines their customer service as “going out of the way to say yes, we can install this, customize that, and you can have it when and exactly how you want it.” If you can’t get your fill at the Santa Barbara store, then head north to the San Luis Obispo showroom or for a real treasure hunt, visit their 30,000 square foot warehouse. It’s tucked away just off of Highway 1 in Arroyo Grande. The thoughtfully-curated and well-organized space is brimming with thousands of unique handmade pieces, antiques, decor items, custom furniture, and inspiring vignettes. Customers can peruse rows of raw wooden planks, to hand-select the perfect shape, wood grain, and length to create a truly custom table-top. Visits to the warehouse are by appointment only and so worth the beautiful drive.

A Verdant Revision A historic local country club clubhouse gets a fresh foliage makeover courtesy of the hot new green design business, FLORASCAPES.
A
s part of an on-going update, Emma Lauter, plantscape
designer, and owner of FloraScapes, was brought on
board to bring a more lively feeling to the Clubhouse at La Cumbre Country Club with fresh flora. The
clubhouse refresh project under the guidance of GM Eric VanderWerff includes elegant carpeting and upholstery along with a crisp white interior paint that brightens
the space and highlights a collection of paintings from renowned local artists.
The goal was to produce a cohesive look that would both
complement and honor the original vision of famous Santa
Barbara architect, George Washington Smith, who designed the clubhouse in 1908. The existing plants, which included a few past their prime ficus trees, were replaced with a
variety of divine new specimens - fishtail and Kentia palms, fiddle leaf fig trees, salsevieria, and a vibrant assortment of succulents. Large glazed pots full of multihued and
textured succulents now greet guests at both entrances and provide pops of color and add a more contemporary feel. Sconces filled with draping succulents make a statement
in the terrace room without compromising the sweeping
mountain views. The updated flora, both low maintenance
and drought-tolerant, seamlessly blends the indoor with the

WHEN TASKED with defining and greening the newly-built deck space at a client's hidden gem of a cottage, built circa 1920, inspiration was everywhere. In addition to the deck, there is an existing sandstonewalled terrace, a cedar wall with a perfect patina that screams “blank canvas," and a host of other little magical details. After gathering ideas, creating a mood board, and deciding which features to highlight and which to minimize, a plan was in place. The design, which will utilize colorful living layers of plants to create an outdoor room for entertaining, essentially doubles the square footage of the petit cottage. To follow the progress of this project from conception to al fresco cocktail reception for the final reveal, check out FloraScapes.design. ABOUT: FloraScapes, launched in January of 2019 by Emma Lauter, is a natural progression of her local floral design company EmmaRose Floral. Utilizing a variety of unique plants, the FloraScapes team specializes in the creation of intimate and comfortable outdoor living spaces and green installations for the home and garden. 805.455.9507

BEET AND WHITE BEAN HORSERADISH HUMMUS
2 medium beets (cleaned, with skin on) 1 can white beans, drained and rinsed 2 tbsp. beet horseradish 3 cloves garlic Juice of one lemon 1 tsp. salt ½ tsp. cumin 1/3 cup tahini 1/3 cup olive oil
Wrap beets in foil with a drizzle of olive oil and roast on a baking tray at 400 degrees for 60 minutes until soft. Turn oven off and allow beets to cool in the oven. Once cooled, peel off the skin. In a food processor, puree beets, white beans, horseradish, garlic, lemon juice, salt, cumin, and tahini. Drizzle in the olive oil while the blade is running. Process until smooth. Whenever possible, I source local ingredients. These glutenfree bagel beauties are from Oat Bakery on Haley Street, the salmon is from The Santa Barbara Smokehouse, and the produce is from the Santa Barbara Farmers Market.
