AS HIS DESTINATION this year was Umbria, often referred to as “the green heart of Italy,” Tom's daily walks - up to 18 miles over rolling hills and through dense forests and vineyards held the promise of diamonds from the dirt: black truffles. IN THE FAMOUS truffle town of

Norcia, located high in the Apennine mountains, he found plenty. Back in Santa Barbara, Toma executive chef Nat Ely has created a signature dish that celebrates them: house-made gnocchi with black-truffle butter, dried tomatoes and fava beans. It’s the next best thing to a country walk through Italy.

MEZCAL MAINLINE: SANTO MEZCAL OFFERS UP REGIONAL MEXICAN FOOD WITH FLAIR SANTA BARBARANS love their Mexican history and heritage. Not surprisingly, they also love Mexican food, and there is a lot of it here — uptown, downtown and everywhere in between. A few years ago, the Luna family, who own three hugely popular Los Agaves restaurants in the Santa Barbara area, went a bit upscale when they opened Santo Mezcal a block from the beach in the now very hot Funk Zone – adjacent section of lower State Street. Hipper and a bit more dressed up than its siblings (but still decidedly SoCal casual), Santo Mezcal reflects its “family” heritage in a menu of delicious, carefully prepared authentic regional dishes, along with a casual, friendly vibe and the customer-centric service the Lunas are known for. These folks care, and they know how to do things right. So, on a night when you’re ready to take your Mexcian culinary indulgence up a couple of notches, Santo Mezcal awaits. You’ll know it when you find it, because it always sounds like a party you want to attend, as friends and families chatter happily and share tastes of as many dishes as possible. There’s a best way to “use” a given restaurant. The secret at Santo Mezcal is to start with one of their handcrafted mezcal-based cocktails. If you’re waiting for a table, grab a stool at the bar and take in the grand multi-tier spread of mezcals along the back wall. Mixed with other spirits, flowers, nuts, seeds, and fruit and vegetable infusions, these cocktails do a delightful devil’s sweet, sour, salt, spicy — and because mezcal is involved — smoky dance on your tongue. You might try La Flor Ahumada (the smoking flower) mezcal with honey-lavender syrup, lemon and a lavender bud; or the Peruvian, made with Fresno chile and cilantro pisco, grapefruit, ginger cordial, lime, a Fresno chile wheel and spicy salted Inca nuts. You can figure out your next move while enjoying complimentary tortilla chips and a trio of homemade salsas.You might try the Camarones al Mezcal, Mexican shrimp in a creamy mezcal sauce; or the Pulpo a Las Basas, octopus in an adobo sauce with house-infused chile oil. Ceviches are a specialty, and for meat lovers, the Filete Antiguo is a rib-eye steak served with a cheese-stuffed pepper, an enchilada, nopal and more. The chile rellenos, the moles, the Cazuela Pibil (pork marinated in adobo sauce and slow-cooked in banana leaves) — it’s all delicious, so whatever you choose, get ready to love what you get. STEP INTO MONTECITO’S ONLY TASTING ROOM Given the amount of wine tasting available around Santa Barbara, it’s a little surprising that Folded Hills, which opened at the corner of Coast Village Road and Olive Mill Road last April, is the first ever - and still the only - tasting room in Montecito.

T

he cozy, comfortable, welcoming space has since become a magnet for locals, who stop in after work, after the beach, before a movie or while waiting for a table at a local restaurant, and for visitors, especially those staying at the Montecito Inn across the street, or the nearby Biltmore, Miramar or San Ysidro Ranch hotels. In their unpretentious, pet-friendly setting, proprietors Kim and Andy Busch - of the St. Louis brewing family - offer estate-grown wines from their cool-weather vineyards up the coast, the southernmost plantings in the Santa Ynez Valley. Knowledgeable staff pour the family’s boutique wines, which include a collection of six fresh, light “heritage” Rhône varietals (white, rosé and red; each with a multi-generational family name); several reserve wines, including a few Syrah varietals and an estate Grenache; plus a quickly sold-out “Lilly” sparkling wine. Winemaker Angela Osborne, whom Kim refers to as “the guru of grenache” (she has dedicated her winemaking life to the grape), makes French-style wines that have a light touch and are true expressions of the local terroir. The grapes are crushed by foot, and the wines are made with exactly none of the 76 commercial additives that a bottle of wine may legally contain. And while sulfites may be legally present at levels up to 356 parts per million (ppm), no Folded Hills wine has more than 18 ppm, and most are from 5 to 12 ppm. They also make a Beaujolais-style carbonic (whole-cluster) wine, but with a difference. In France, the grapes are picked in August and then heavily manipulated to be made into pourable wines in time for the November Beaujolais release. The Busches eschew additives, waiting until November and then another full year, before releasing their smooth, light, lovely Beaujolais equivalent. “Here at the tasting room, we’ve brought a bit of the ranch to Montecito to introduce it and the Folded Hills brand, knowing that people who pop in here might not otherwise find their way to the winery,” says Kim, even though it is just a fortyminute drive away just off the 101. “So, they come in here and maybe buy some wine or get more interested and then find their way to the estate tasting room at the winery.” 50

GOING LOCAL Meet Steven Tiller, shoe designer, entrepreneur, and the man we have to thank for resurrecting the original, classic California cool sneaker brand, SeaVees. We recently popped into the Funk Zone-located flagship store for a chat about the brand’s storied past, the SeaVees secret, the new SeaChange Collection, and more. Tell us a little about the history of the brand.

It all started in 1964. SeaVees was the “original way to go casual,” leading the transformation of the sneaker from gym shoe to casual shoe. In 1971, the brand was forced to close its doors in response to complaints that its parent-company was holding a monopoly on the American sneaker market. SeaVees would remain dormant until 2005 when I ventured into a second-hand clothing store in Tokyo and came across an original pair. Fast-forward to 2008 when we relaunched the brand, and again to April 2019, when we opened our first flagship store in Santa Barbara, California.

After successfully resurrecting the brand, how did you decide on the Santa Barbara Funk Zone location for the flagship store?

Opening up a flagship store, a place that embodies all things SeaVees has always been a dream of mine. The right space, at the intersection of the sea and the city’s arts district in the heart of the Funk Zone, eventually presented itself. The building had amazing bones to start with – it was an old surf shop outfitted with concrete floors, a tin roof, and origins steeped in history.

What sets SeaVees apart from other fashion sneakers out there?

Our products are intentionally simple, purposefully timeless, and consciously crafted. We pull a great deal of inspiration from our heritage – looking back at the original SeaVees ads from the 1960s is a regular touchpoint for us. In every shoe lives the SeaVees secret - a contoured, cushy footbed, with perforations, airflow channels, and washed cotton lining, making SeaVees the most comfortable sneaker you’ve ever worn.

You will most often find me in the Legend – the silhouette featured in the original SeaVees ad campaigns from 1964. We recently launched our spring/summer collection, and I’m really excited about our SeaChange Collection – our first, almost completely recycled capsule collection made from recycled, post-consumer plastic, metal-free stitched eyelets, and outsoles made from recycled rubber.

Honestly, how many pairs of SeaVees are in your closet right now?

I tend to stick to a dozen pairs, which I keep on heavy rotation. When it’s time for an update, I drop off my used pairs at our retail location to be added to our Recycling Program, which accepts all non-athletic sneakers in any condition.

Amy Cooper opened her conscientiously-curated, sustainable lifestyle store Plum Goods over a decade ago, and it remains Santa Barbara’s go-to for handcrafted, upcycled, and local goods. The selection of gifts - home decor items, jewelry, accessories for men and women, and sweet toys, books, and goodies for wee ones - keeps the giving green. Here she shares a bit about merchandise with a mission, perfectly "Plum" playlists, and a few of her favorite things for the summer season. What inspired you to launch Plum Goods nearly ten years ago? Santa Barbara was missing a gift store focused on handcrafted, eco-friendly, local gifts, and goods. My passion was less about selling things and more about creating an environment and an experience people would connect with.

How do you go about curating such an eclectic cache of "eco-chic" goods? I am always on the lookout for new artists and makers at gift shows and online. I also browse through a variety of blogs and resources that have a similar focus on the goods we want. The focus is on items that have the right look and feel and are better for people and the planet.

Tell us about yourself and your business. I love living in Santa Barbara and being a small business owner. I moved here 11 years ago, and my “someday” place became home. I have two amazing grown sons who inspire and support me daily. When I’m not in the store, I am practicing hot yoga. This April, I will be celebrating the first birthday for ShineUP Men’s, and I couldn’t be more thrilled and proud. How did you land in retail? I am a FIDM graduate and worked as an assistant buyer for a big retailer at the beginning of my career. I took some time away from retail to become a wife and mother, and then my focus turned to fitness. I went from studio owner to fitness trainer and, after a long career in fitness management, which had me traveling all over L.A., I eventually landed in Santa Barbara. I understand people and believe in superior customer service. People want to feel genuinely welcomed and appreciated regardless of the industry. What is the best part of owning a business in Santa Barbara? Every day I meet new people, both residents, and visitors, who are discovering the Funk Zone. The vibe on Helena Avenue is so unique, and my retailer “neighbors” all support each other in the Funk Zone, and that feels like family! Was there a specific moment or event that inspired you to set up Shop in the Funk Zone? I live in West Beach and dreamed of being able to have a store near the ocean that I could walk to every day. After months of searching and not finding the right space, I gave up and just waited for it to find me. 14 Helena Avenue came to me one rainy January day in 2019 when a very good friend asked me to come and look at an available space. I knew right away that I was standing in the new home for ShineUP Men's. My customers always comment on what a cool space it is, how good it feels, and the unique clothing and goods I have curated for this cozy spot. My focus has always been on creating a place where people want to come and hang out, have a beer or glass of wine, and take in the good vibes! What are you most excited about offering your ShineUP Men’s customers right now? I love everything in the store right now because I handpicked it! When I travel to shows, I like meeting the makers, learning about their product, how it’s made, and the inspiration behind it. My goal is to bring in brands unique to Santa Barbara, that offer quality-crafted goods, at an affordable price point. I want everyone who walks through the door to be able to shop here and feel like they are getting something different - from Raw denim, that is made in L.A. on antique Singer sewing machines to knives and hatchets handmade in Europe. I also carry jewelry, bags, sunglasses, and so much more.

I N S P I R AT I O N P O I N T: Santa Barbara's close proximity to the Santa Ynez Mountain Range makes for some great hiking opportunities. The most popular trails are found in the front country. Try a local favorite, Inspiration Point via Jesusita Trail. At around 2.5 miles round trip, this hike is doable for most hikers and rewards with one of the most stunning views of the city and Pacific. Take Tunnel Road all the way to the end - parking is limited. The trail begins on a paved fire road and at the end of this road, head straight up the dirt road. We recently sat down with Samantha Eve, the Artistic Director of Out of the Box Theatre Company, at Center Stage Theater, where she's deep into pre-production mode for the 2020-2021 season. She took a few minutes out of her busy schedule to share a bit about the past, present, and future of Santa Barbara's cutting edge musical theater company. Tell us a little about yourself and the history of Out of the Box Theatre Co.

I grew up here in Santa Barbara and then moved to New York, where I attended New York University and got my BFA in Drama from the Tisch School of the Arts. The contemporary musicals Out of the Box stages are usually lesser-known and less frequently produced, often picked up just after their Broadway or Off-Broadway runs or other workshops. When I moved back to Santa Barbara, I wanted to bring these shows back with me - introducing our theatre community to new works and providing more performance opportunities for local actors. Ten years later, Out of the Box Theatre Company has produced twenty-one fully staged musicals at Center Stage Theater.

Is there a "typical" Out of the Box Theatre Co. production, and who is your target audience?

What all of our shows have in common is that they have a story we passionately want to share with our audiences, something not just entertaining, but also relevant and real. Our shows focus on themes like politics, loss, love, abuse, mental health, and human connection. We aim to select shows that go above and beyond what people tend to expect from musical theatre (although who doesn't love a good song-and-dance number) to inspire conversation and thought. One of the things I love best about our audiences is that they're an impressively eclectic bunch. We've never wanted Out of the Box to be "exclusive." Instead, we aspire towards inclusivity and accessibility. We want people to see more theatre. We want it to be as simple and commonplace as going to the movies or out to dinner.

As Artistic Director of a small theater company in Santa Barbara, what are the most significant challenges and most blissful rewards?

As in any business, many of our challenges involve organization, like making rehearsal schedules that can accommodate 20+ people's availability. For me, the two most significant rewards always come at the end. The first is to be watching the production from the audience or the wings, awed by how we've taken something on paper and turned it into something new and wonderful on the stage. The second is hearing from audience members after the show, receiving letters and notes from them in the weeks afterward sharing their thoughts and their thanks.

When did you first become interested in theater?

I wish I could say, but I honestly don't even remember. It's always been a part of my life. I grew up watching movie musicals like Peter Pan and Mary Poppins on repeat. When I was about five, I had a doll that tap danced. I was in my first theatre production when I was six. By eight or nine, I was singing songs from Phantom of the Opera and Les Miserables as my mother played the piano to accompany me.

Out of the Box is now in its 10th year. How do you maintain your motivation and continue to nurture your creative spirit?

I've found that seeing other productions and other shows is a great way to stay creatively inspired for my own work. I love to see what other people are doing. I also try to stay in the loop when it comes to new musicals being written and workshopped and love to return to NYC whenever I can to see as many shows as possible.

What's on the Out of the Box production horizon?

Land & Sea of Plenty

These Thai-inspired lettuce cups not only celebrate the fruits of the land and sea that we are blessed to have here in Santa Barbara, but they also make for a fun and interactive dining experience. Guests will love creating and customizing their own cups around the table. The bold flavors and fresh elements in this dish make it the perfect casual meal to serve while enjoying a beautiful Santa Barbara summer sunset. And almost every ingredient can be sourced locally at the Santa Barbara Farmers Market and the Santa Barbara Fish Market.

PREPARATION Start by making the noodles, Marinated Sliced Cucumbers, Turmeric Sunflower Sauce, and preparing the additional garnishes. Finally, prep the ingredients for the Salt and Pepper Ridgeback Prawns. The prawns are the last step and should be served warm. INGREDIENTS Lettuce & Fillings • 1 head butter lettuce, washed and left in whole leaves • 1 package of dried glass noodles or rice vermicelli Cook the noodles per the instructions on the box. Rinse with cold water and toss with 1 tbsp. sesame oil to prevent the noodles from sticking together. Marinated Sliced Cucumber • 5 small Persian cucumbers or 1 large English cucumber • 1 handful of fresh mint leaves • 1 handful fresh cilantro • Juice of 1 lime • 1 tbsp. rice wine vinegar • 1 tbsp. coconut sugar or brown sugar • 1 tbsp. fish sauce Thinly slice the cucumber with a mandolin or knife. Chop the mint and cilantro and combine in a bowl with the sliced cucumbers. Add rice wine vinegar, lime juice, sugar, and fish sauce, mix, and let marinate while preparing the remaining recipe components. Tumeric Sunflower Sauce • 1 small knob of fresh turmeric • 1 small knob of fresh ginger • 2 garlic cloves, sliced thinly • ½ Fresno chile • ¼ cup of water • ¼ cup sunflower butter • Juice of 2 limes • ½ tsp. ground turmeric • 1 tsp. honey • 1 tsp. Sriracha • 1 tbsp. fish sauce • 1 tbsp. tahini

Salt & Pepper Ridgeback Prawns • 1 lb fresh prawns • ½ cup of corn starch • ¼ cup sunflower oil • 1 knob of fresh ginger, peeled • 2 cloves of garlic • ½ a Fresno chile • 1 tbsp. coarse salt • 1 tbsp. coarsely ground pepper • A squeeze of lime juice Source the freshest prawns available. Rinse and leave the heads and shells on. Toss in corn starch for a light coating. Discard excess corn starch. Thinly slice the ginger, garlic, and Fresno chile. Heat a heavy-bottomed pan with the sunflower oil. Add prawns to the hot sizzling oil and drop in the ginger, garlic, and chile. Toss in the pan for about 5-7 minutes until the prawns are pink and cooked through. Finish with coarse salt, coarsely ground pepper, and a squeeze of lime juice.

To assemble, use the butter lettuce leaves to contain the noodles and prawns. De-head and peel the prawns, adding 2 or 3 to each lettuce cup. Add some cucumbers, sauce, garnishes, roll them up, eat, and enjoy!

6 1. PEDAL IN PARADISE Call up your most adventurous sidekick and cruise to Wheels4Fun to rent a tandem bike. Plot a course along the coastal bike path from West Beach to Montecito, and plan for a few pit stops- think food, drinks, and shops. 2x the fun and a guaranteed workout. *Insider tip: they have a local's discount. 2. GET YOUR SWEAT ON AT SEA I prefer to skip the gym on perfectly sunny days and instead get my exercise by circling the sea lion buoy and paddling up the coastline to capture the best views of the city! 3. FARMERS MARKET INSPO This intimate market packs a serious punch and not just regarding flavor! Only in Santa Barbara will you find a farmer's market nearly every day of the week. Here, I score everything from tropical fruits to heirloom vegetables, and it's a great place to stock up on house plants. Remember to bring a reusable bag or three!

4. BOTANICAL BEAUTY Bask in the beauty of Lotusland's gardens and admire aloes, water lilies, cacti, and palms. You can book a tour in advance, but I recommend becoming a member so you can pretend it's your backyard! Bring a good book and read beneath the shade of the lemon trees for a perfectly relaxing afternoon.

5. GET OUT OF TOWN For instant vacation feels, I head over the pass to Los Alamos, where the population is only 1,890, but the possibilities are endless. I like to relax in the open-air wine and beer garden at Bodega to enjoy natural + organic wines from near and far. Walk across the street to Bell's for bistro classics and bites. I always order the mussels and French fries! When night falls, and you aren't quite ready to leave, make it a mini-getaway and stay at Alamo Motel or Skyview Los Alamos. Whenever you do decide to head back to SB, take the coastal route, preferably at sunset! 6. SIPPING ON THE SEA From wine country to the water, I can catch all my go-to local wineries and breweries aboard the Double Dolphin every third Thursday of the month. Everything seems to taste better when enjoyed at sea during sunset. I always gather my mates and toast to the good life! 7. FRESH CATCH Check out the only floating fish market on the west coast, where a handful of salty and sweet local fishermen have become my fast friends! They can be found on the city pier (in front of Brophy's) every Saturday morning selling crab, shrimp, urchin, abalone, and other fresh catches of the day. For a few extra bucks they will filet the fish and even provide some cooking tips!
