WINE MAGIC BY THE COASTAL MOUNTAINS
Talk to folks at Folded Hills Winery, and they might just mention the “magic” of the place. They’d be referring not to talking-trees or dancing-cows magic, but more to the sense of peace and harmony, the beauty, that hard-to-describe feeling of things being somehow right, that pervades the winery and the historic Homestead. It’s the kind of real-life magic that transports you from the everyday to what feels like an elevated way. Here, on 600 organically farmed acres located just four miles from the ocean and a short drive from Santa Barbara or Solvang, the fog rolls in over the coastal mountains, and the grass shoots up after winter rains. The air is fresh and crisp, the sky broad and blue. Hawks and eagles soar, deer roam and the sounds of city life give way to the soothing rhythms of this working farm and ranch. For the Busch family, Folded Hills is all about connecting to the land and honoring stewardship as a bedrock value, a legacy from the beer-making family’s St. Louis origins. Grenache, Syrah and Rhône grape varieties are grown organically and vinified with little fuss to create small batches of organic, low-sulfur, lowalcohol, low-sugar wines that are delicious, eminently drinkable and true reflections of the local terroir. They’re all available at the relaxing and welcoming Homestead Estate Tasting Room and at the tasting room in Montecito.
Rather than using machinery, the Busch family lets their sheep, chickens, and New Zealand Kunekune pigs “mow” and “till” the vineyards, while enriching the soil in an increasingly self-sustaining agricultural system run largely in keeping with the earth-friendly biodynamic calendar. This is a place for families. Kids love the animals and can pick strawberries and see how food is grown on fifteen acres of seasonally changing organic row crops and fruit orchards. The Farmstead is open weekends, selling produce from the Folded Hills fields, baked goods, chocolate chip cookies, lemon loaves, honey, sausage and charcuterie from local organic producers. The property also offers an array of wonderful tour experiences, including an Escape to the Lake; the Whole Shebang, which includes meeting a zebra named Zazu and George the camel at the owners’ private ranch; and the Sip & Saddle experience, a partnership between Folded Hills and Alisal Guest Ranch. Back in Santa Barbara, don’t forget to stop in at the Folded Hills tasting room — the first and still the only one in Montecito. The tables at its comfortable outdoor space are perfect for grabbing a few bottles of Folded Hills favorites or meeting for a glass or a tasting before or after dining or shopping along Coast Village Road.

After attending Parsons the New School of Design, I worked in the corporate side of the fashion industry for a number of years in NYC. I was pining for a return to the west coast and all the glory that is Santa Barbara (I’d completed my undergrad at UCSB), but I knew I still wanted to work in fashion. I started researching the retail landscape of Santa Barbara and noticed the boutiques largely hosted more mass-market brands or were 100% California lifestyle driven. I felt compelled to fill a void in the marketplace, introduce a tight edit from independent designers and fashion industry favorites who didn’t have representation in the area and create a highly-curated space that would lend itself to building community and helping women get dressed with confidence and ease.

Owner and Buyer Rebecca McKinney Blair founded her smartly curated boutique, Whistle Club, with the vision of bringing a fresh perspective to the Santa Barbara shopping scene, one that would introduce the local community to designers, both emerging and established, like Rachel Comey, No. 6, Lauren Manoogian and Re/Done. With roots firmly planted in the heart of Montecito on Coast Village Road, her initial concept continues to evolve as not only an antidote to fast fashion but a place to truly sharpen one’s sartorial sensibilities. We recently caught up with this busy mom-boss between bug-hunting missions with her two young boys and buying sessions at the store. Here she shares the origin story of Whistle Club, the challenges and gifts of the past year, her current faves and more.

1) The Product: I have to be drawn to the product and likely the story behind it. Our edit focuses on quality, integrity and design, so these are all factors at play when considering a new collection. 2) The Consumer: Is it right for our clients? Will it be of value for them? 3) The Edit: Will it hang well with our existing designer matrix? What can it uniquely contribute? But with all that being said, I don’t overthink it! Fashion is often intuitive, and I’ll run with it when it feels right.

I’m the mom of two little boys (ages 2 and 4), so personally, the silver lining was getting to spend extra time with them searching for slugs at the Mission Rose Garden, roaring like a dinosaur, and fine-tuning our Lego skills. Professionally speaking the fashion industry continues to take a hard hit but seems to be embracing this crisis as a catalyst for change. Ideas about how fashion can become more equitable and sustainable are at the forefront of conversation. Collectively we are all digesting 2020 as best we can and (hopefully) using it as a reset for a better future. I believe a “buy less, buy better” ethos will increasingly be the way forward.

I’m a Rachel Comey gal and am always inspired by her aesthetic point of view. Also, the dresses from Christian Wijnants are total knockouts. He’d previously designed for Dries Van Noten, and his prints are often indicative of his background there. And then I’ll definitely be updating my closet with a new jumpsuit and clogs from No. 6.

When the first designs I made were embraced, it set me off on a path I knew I needed to fulfill. So I kept going. How has Waxing Poetic evolved since then? Along with my husband John, sister Lizanne, and our incredible team, we have learned to steer by heart, managing to grow (quite literally) from my dining room table to being represented in over 500 stateside boutiques and online. What are you most excited about at the moment? To celebrate our 20th year, we are launching a line of locally made Poetic tees, ceramic giftware crafted by economically disadvantaged and at-risk women, and anniversary packaging featuring Colette Cosentino's artwork. Any plans for an in-person celebration? Yes! We hope to celebrate at The Shopkeepers as soon as we can be together, with live music by John's band, The Doublewide Kings! What has WP taught you? The first thing customers usually notice when they walk through the door is my love of color. The shop is filled with at least 90% vintage and handcrafted goods and so many one-of-a-kind items, and that creates a certain energy I think people can feel when they walk in. I often hear customers say that “this place just feels good,“ and I think that’s what they are experiencing.

Over the years, I’ve tried to get better at only buying what I truly love instead of buying what I think other people want. That helps to make it feel like the pieces all belong in the same space. And then, there’s my Mom. She’s always been a master at merchandising - our home when I was little and her shops throughout the years. I’m so grateful to have her help. We have so much fun merchandising together.
MOVING FROM the 1957 Boles Aero trailer, home to her once-tiny shop, into an expansive 2,000 square foot location wasn’t exactly on Folly owner Alyssa Remington’s radar. However, this bit of serendipity, met with a bold move, appears to have paid off in spades. The additional space has allowed Remington to spread her wings and flex her creative muscles in a way that wasn’t possible in her former digs. Folly’s Santa Claus Lane location is curated with vintage wares, handmade goods from well-established local artisans, beautiful botanicals and other singular surprises. The textile shop-within-a-shop, Indian Pink, offers a dreamy selection of pillows made from exquisite vintage fabrics, cotton voile p.j.s, ceramic pottery and other enticing items. Monthly Open Air Markets, featuring locally handcrafted treasures, are held in the back garden space. We recently popped into the store and chatted with the owner, and here’s what she had to say about Folly’s humble beginnings, her beachy location, conscious curating and more. THE GOOD FORTUNE OF FOLLY
Moving from the tiny trailer into this space happened very quickly, but the great thing is that it unexpectedly turned into a true family business. Of course, my Mom is on board with merchandising, but my husband and sons have also been instrumental with everything from construction and gardening, to furniture making and deliveries. And my son’s fiancé, Amiyo, has been an absolute lifesaver. She’s here with me several days a week and manages everything I can’t - she keeps me sane. And she’s also an artist and always comes up with brilliant creative ideas of her own.
SHARING THE LOVE and SPACE
My Mom’s friend had a business here at Padaro Beach Village in the ’70s, and I remember hanging out here as a kid. It’s a great community, and I love my neighbors. But, what I really love about my specific location is the yard. We host Open Air Markets every month, and I feel incredibly fortunate to be able to share this beautiful space with other local artists and makers.
My Mom, Lynn, and I started Folly as a collective with two other women in 2015. When that location closed, I moved my merchandise into a 22 x 8-foot trailer and set up shop in the garden of one of my all-time favorite shops, Porch. About four years, Porch moved to Summerland, and Diana offered me the keys to this beautiful space. It was super intimidating to expand so much, so quickly, but now that I’m settled, I couldn’t be happier. her new kitchen in the heart of Santa Barbara wine country. She and her husband both love to cook and wanted a family-friendly kitchen that maximized the space while beautifying their new home. REED Interiors designer, Sophie Paolino, developed every detail of this beautiful kitchen in collaboration with the homeowners to ensure the overall design would more than meet their needs. E ASKED LOCAL CHEF AYDA ROBANA to show off her culinary acumen with a showy seasonal dessert. A few days later, she wowed us with this heavenly Cloud 9 Pavlova. Of course, to make a meringue, you’ve got to break a few eggs and have some superfine sugar on hand. And for this recipe, a whopping nine different fruits. (See what she did there with the name?) We’re not going to lie. This show-stopping confection takes a bit of effort, okay a lot of effort, but is totally worth it. So whip up those egg whites on a sunny, dry day (more on that below) and remember, fortune favors the bold. In this case, the bold will end up with one of the most delectable and magical desserts ever. Good luck, and may the froth be with you.
THE MERINGUE
8 egg whites (or 6 if using XL eggs) 1 ½ cups caster sugar (superfine sugar is essential) 1 tablespoon corn starch 1 ½ teaspoon white vinegar OR 1 teaspoon cream of tartar 1 teaspoon orange blossom water (an optional but a divine addition) Separate egg whites into the bowl of an electric mixer and whisk on medium speed until soft peaks form. Add superfine caster sugar, 1 tablespoon at a time. Whisk until each addition is dissolved before adding the next tablespoon. (Patience is required for this step.) Scrape the mixing bowl sides and whisk for another 10–15 minutes or until the mixture is thick and glossy. Mix the corn starch and vinegar or cream of tartar (whichever you are using) in a small bowl until incorporated. Add the corn starch mixture to the egg white mixture. Also, if using, add the orange blossom water. Whisk until well-mixed. The meringue should hold stiff peaks, and be thick and glossy like marshmallow fluff. Use a regular baking tray lined with parchment paper to prep the meringue base. Draw an 8-inch diameter circle on the parchment paper and flip it to the other side so that you have a guide for the shape of your meringue. Spoon the mixture in the center of the circle, working toward the outside edge. Preheat oven to 300°, and once the meringue is in the oven, reduce the temperature to 250° (225° if your oven runs hot) and bake. Peek through the oven glass after about 60 minutes. If the meringue has puffed up and turned from a glossy to matte white it is done. Turn off the oven, keep the door closed, and let cool completely in the oven - at least 4-6 hours or overnight. It should be crisp on the outside and soft on the inside. Don’t worry about cracks, they add character and you can cover them with whipped cream later. This bears repeating: do not open the oven while the meringue is baking or cooling. Keep moisture in the air to a minimum, and don’t even think about attempting this on a humid day. Cherimoya Whipped Cream 1 pint heavy whipping cream 2 cherimoyas 1 lime 2 tablespoons agave nectar Peel and seed the cherimoyas. Place the pulp with the juice of one lime and 2 tablespoons of agave nectar in a blender and puree until smooth. Whip one pint of heavy cream into soft peaks, gently fold the cherimoya mixture and top the Pavlova.

This tropical Pavlova has nine different toppings: dragon fruit, orange blossom water, kiwi, peaches, passion fruit, pineapple, guava, cherimoya and toasted coconut flakes. Slice, dice and adorn with amounts to your liking. To take it over the top, drizzle with honey. Try this exotic take or keep it simple and use some seasonal berries.

1. HOMETOWN TOURIST
The staycation vibes are strong at Santa Barbara Harbor. Secluded beaches, sundrenched docks and seaside eateries are just a few of the things that make it an endless summer spot.
2. ROCKIN' VIEWS
For me, the ideal outdoor adventure always involves escaping to a mountaintop vantage point. My go-to hike for out-of-town friends is the Rock Garden up above SB. You can't beat the dramatic landscape, and it's the perfect place to enjoy golden hour with views up and down the coast.
3. LIVING FRESH & BLESSED
Accessibility and well-roundedness are what keep this town fresh. Not only are there countless culinary and social delights, but we are geographically blessed to a tee. Mountains, beaches, vineyards, ranches, lakes and islands are all just a short walk, drive or (if you're lucky) sail away from each other.
4. BEST SUNSET SETTING
My favorite place to watch the sunset is at the Douglas Preserve. From high up on the bluff, you get sweeping views of the setting sun, and it's a great place to bring the dog. Stroll all the way to the western end for views looking out over Hendry's Beach below.
5. FAMILY-FRIENDLY FAVES
Santa Barbara offers up so many great places and activities for families - from the Moxi Museum to Lotusland and the zoo. My favorite, though, is cruising the friendly seas and taking in those "Riviera" views. If you don't have access to a boat, head over to SB Sailing for the best rental and charter options around.
6. SCENIC SWEAT BREAKER
I like to grab my electric bike and ride the oceanfront path between Butterfly Beach and the Mesa. Try early morning or late afternoon for crisp light and views of everything Santa Barbara.
