he scenery changes constantly as you move through the Central Coast, and the landscape is lovely no matter where you look. Of course, California’s bounty of seafood and locally grown or produced fruits, vegetables, nuts, olives, wines and beers is evident everywhere. You’ll find honey makers and lavender farms, u-pick-'em apple orchards and cool pizzerias, gelato and gin fizzes, oyster shooters and beer-steamed clams and mussels, steak houses and burger joints. There are farmers’ markets and backyard fruit stands, impressive high-end wineries and cozy boutique operations. The Central Coast’s Mediterranean climate means ideal weather for most of the year, with beautiful sunny days even in mid-winter. Summer brings long days on the beach, where no child ever needs a screen to be amused. Whales cruise the coast, seals and sea otters hunt closer to shore, cyclists pedal the pavement, and families hit the beach or the hiking trail. Multiple golf courses await, as do hot springs, spas, antique shops and galleries where you can purchase a local artist’s powerful depiction of the green or golden (depending on the time of year) oak-studded hills that are emblematic of the area. California cares for the natural environment. Wild animals and wild places are protected, and visitors reap the benefits in pristine landscapes and sightings of the creatures that belong to them. The easygoing acronym for San Luis Obispo - SLO - sounds like “slow” and evokes the same easygoing approach to good living. This is a place to relax, pull out of the fast lane and enjoy life at a soothing smell-the-roses pace. A good strategy for a day is to plan a little and then follow whatever grabs your interest. This Central Coast city of 50,000 is beautifully situated about ten miles from the coast in a valley surrounded by oak-studded hills and dominated by Cerro San Luis Mountain, one of about nine ancient volcanic plugs in the area. You’ll find miles of cycling, walking, horseback riding and hiking trails. You can golf or go wine tasting at a vineyard, and stay in anything from a B&B to a luxury hotel. The intimate downtown has everything: galleries, movie theaters, and restaurants of all kinds, microbreweries, and wine-tasting rooms serving the Central Coast’s famous vintages. With so much in such close proximity, you can SLO down and still miss nothing.

PASO ROBLES Paso Robles has become a major wine center, with more than 200 wineries in two American Viticulture Areas spread throughout the gorgeous rolling countryside. With the vineyards have come great restaurants, cheese and charcuterie, cool coffee houses, bakeries, detour-worthy boutiques, microbreweries and a lovely mix of unique lodgings that includes some truly elegant country options. Grab the best produce at three weekly farmers’ markets, chill in the freshwater waves at Ravine Water Park, carry a picnic to the lake in Barney Schwartz Park, soak up some aviation history at the Estrella Warbird Museum or recall the Old West at the Pioneer Museum.

Named for 576-foot-high Morro Rock, this seaside town of 10,000 is a natural outdoor playground. You can kayak in the harbor, with the rock looming above you, go surfing or SUPing, go on a whale watching trip or cast your line from a day boat (but not close to shore, as the entire bay is a notake state marine reserve). Some 20,000 migratory birds winter here, and 30 percent of California’s endangered snowy plover population lives here. Morro Rock itself supports a pair of nesting peregrine falcons.

AVILA BEACH

The little town of 1,500 on San Luis Obispo Bay is an easy place to spend a few days. Natural mineral hot springs are a main attraction, as are Hartford Pier, the nine-hole Avila Beach Golf Resort and the Point San Luis Lighthouse, built in 1890. But the big draw is that broad, sandy beach and the boardwalk behind it, with its wine-tasting rooms, restaurants, ice cream parlors 18

and shops. Pedal or stroll along the three-mile Bob Jones Trail, or just settle back and soak it all in, because there’s nowhere to go; you’re already here. Naturally, fresh fish and Central Coast wines are on the menu.

PISMO BEACH

Yep, here on the Central Coast’s own version of Daytona Beach, you can cruise the sand in your car and camp right beside the waves. Pismo Beach is a small town with a big pier and a singular coastal strand. It’s ideal for spotting whales, seals, seabirds and the occasional sea otter — and then to settle in at night for some fresh clams, crab or other local ocean delights. The vibe is easygoing, the preferred footwear is flip-flops and the shopping is old-time easy. Pismo is an oceanside classic.

Asparagus Fritti undersells itself. The delicately prepared, corn-meal-encrusted treat offers subtle curry hints, and pairs nicely with a Chamisal Chardonnay. ARK 1039 BRINGS TOGETHER owner Steve Goodale’s passions: gastronomic delights focused on artisan quality and customer service in a team environment. San Luis Obispo’s newest boutique dining option doubles down as market, bottle shop, wine club and takeaway smörgåsbord of international flavor sensations. “My goal here is to celebrate small-production, passionate, artisanal people who get up every day and put their heart and soul into what they do,” Goodale said. At about 1,000 square feet, Park 1039’s Downtown Historic District location showcases the focus on quality over quantity. Landscaped outdoor seating provides for up to 20 guests. The daytime deli counter can be converted to a chef’s serving bar to nearly double capacity until the city sunsets the COVID-induced outdoor dining arrangements embraced by customers.

Chef Brendan Collins, Sous Chef Sarah Carlisle, Certified Sommelier Jenna Isaacs and Goodale have traveled the world in their quests for unique, superb, hand-crafted offerings which include in-house meals to gift baskets, fine glassware to gourmet picnic essentials. They’ve foraged the hills and coastal valleys for natural, seasonal flavor, and relish in bringing their findings to discerning customers. Nothing goes to waste as wild nasturtiums, elderberry, wood sorrel, mugwort and rabbit tobacco find their way to plates where offcuts of meats are tous les jours. “I like being in a town where I can showcase beautiful things and there’s no pretentiousness,” Carlisle said. Indeed her favorite menu offering this spring has been ’Njuda Toast: locally crafted artisan bread spread with offcuts of meat ground with prosciutto, jamón ibérico, topped with snap peas, asparagus, mint, parsley and a sprinkling of house-made green onion powder served with vermouth. “Eighty percent of that dish would be thrown away, but we reuse it into this amazing product. It’s clean, simple and fresh,” Carlisle said. Collins offers the perfect end to any meal: the flan of cheesecakes. His deeply caramelized, light and airy, Basque-style cheesecake pairs with a sweet or off-dry sherry, a pastry stout Collins has hand-picked from the beer case, an orange wine or, among his favorites, a 2005 La Vingne Tondonia.

“Growing up in L.A. with diverse cultures and restaurants, you don’t have to travel far to find foods from all over the world. I draw from that in developing my style because, cliché as it may sound, what it all boils down to is New American food, this is the melting pot,” Collins said. As the rollout of Park 1039 continues, Goodale and his team will offer custom events, cooking classes, and specialty experiences including caviar evenings or champagne sabering lessons paired with dinner at the chef’s table. Recently, SLO Stills and SLO Brew have enhanced and extended the distillerybrewery connection with the new Barrel Series. The line of limited-release beers includes a Barrel Aged Chocolate Banana Stout and an Imperial Churro Stout, both of which were aged in used whiskey barrels for three to six months, raising the alcohol level to about 10-12 percent while imbuing them with depth and flavor that unite the beer and spirits brands. Gunning for more? Sign up for the exclusive Barrel Club, where members craft their own personalized batch of whiskey right in the tasting room. Head Distiller Paul Quinn provides an interactive look at the distillation process, allowing members to customize their spirit. After the whiskey ages for three to six months in small-batch barrels, members get to take home 28 individually labeled bottles direct from their five-gallon barrel. It’s almost more fun than should be legal. But then, this is how California does whiskey. A BRIEF HISTORY OF WINE In PASO ROBLES - AND THE 11 SUB-AVA S

THE SPRAWLING PASO ROBLES AMERICAN VITICULTURE AREA (AVA) traces its origins to the late 1800s, when Franciscan missionaries planted the first vineyards at what is now known as the Santa Margarita Ranch. As they were then, the hills around “Paseo de Robles,” which means pass of the oaks, remain dotted with the namesake trees. The local wine industry really got started in the 1980s, when the 556,765-acre Paso Robles AVA was established. By 2000, it hosted 40,000 acres of vineyards planted with 60 grape varieties in 11 newly established sub-AVAs.

Early 1920s Polish concert pianist Ignace Paderewski plants the first Petite Syrah grapes.

1790 As they did throughout California wine regions, Franciscan friars planted the first wine grapes in the Paso Robles region.

VARIETIES More than sixty grape varieties are cultivated in the Paso Robles AVA. Reds dominate, with Cabernet Sauvignon (49%), Merlot (11%), Syrah (7%), Zinfandel (6%), Pinot Noir (2%) and other red varieties (16%) accounting for about 90% of the total. Chardonnay (4%) and Sauvignon Blanc (1%) make up nearly all the rest. Along with those well-known varieties are some truly exotic grapes from around the world, including Alicante Bouschet, Graciano, Negro Amaro, Picpoul Blanc, Touriga Nacional and many others. 52

LAY OF THE LAND

The Paso Robles AVA is defined by the proximity and modulating influence of the Pacific Ocean and the Santa Lucia mountains. Vineyards in the 11 sub-AVAs grow at elevations from a few hundred feet to more than 2,000 feet above sea level. A key factor is the “Templeton Gap,” where a 500- to 700- foot drop in elevation between the Paso Robles region and Estero Bay causes cool ocean air and with it, fog, to cool the vines at night. Summer high daytime temperatures between 85 and 100 degrees give way to nighttime temperatures that are usually 40 to 50 degrees lower, the largest diurnal temperature swing of any California wine region. Those conditions extend the growing season, allowing grapes to ripen slowly, achieve excellent balance between sugars and acid.

The EDNA VALLEY AVA (3,000 acres of vineyards) is situated in an east-west-oriented valley just southeast of San Luis Obispo and bounded by the Santa Lucia Mountains to the west. It abuts the Arroyo Grande AVA (1,200 acres) along its southeastern edge. Grapes were first planted here by Spanish missionaries, but then row crops took over for many decades. The Edna Valley AVA was established in 1987 and Arroyo Grande in 1990. The two AVAs are often talked about as if they are one, with good reason. Both share features found in other California winegrowing regions — most notably a Mediterranean climate and the moderating influence of the nearby Pacific Ocean, which extends the growing season — Edna Valley has California’s longest growing season — allowing grapes to experience longer hang time, resulting in greater balance and complex flavors. Both AVAs are favorable to grapes that prefer the cool weather typical of the area, and the Burgundian varieties Chardonnay and Pinot Noir dominate in both AVAs, with some of those grapes being made into sparkling wine. MCCLAIN CELLARS: 5 STAR LUXURY WINE TASTING BLENDS INTO BUELLTON

McClain Cellars, which built its first tasting room in Laguna Beach in early 2019, has opened a new location in Buellton, near Solvang. Perfect for these days of social distancing, the new outlet includes a 5,000-square-foot “outdoor adult playground,” with sofas, cornhole, and other amusements — including McClain’s killer artisan vegan popcorn — to go with exquisite blended wines. PROPRIETOR AND MASTER BLENDER Jason McClain rode the initial dotcom wave. He got rich quick, lost it all, learned some hard lessons, recovered and went on to build and sell fourteen companies during his years as a tech entrepreneur. A few years ago, he walked away from a lucrative second career as a motivational speaker to make wine, a passion he and his wife, Sofia, had developed during deep-dive wine-tasting getaways around California. When they decided to open McClain Cellars, they chose the Santa Ynez Valley. “Because the valley gets so hot in the day and so cold at night, you get richer, juicier grapes that release more flavor and tannins than you can get in almost any other California locale,” Jason says. In blending, McClain likes to add an unexpected grape to a famous varietal to make “a wine you can’t get anywhere else.” He identifies with wine lovers who go tasting “hoping to find the hidden gem,” and he wants to provide those gems, along with what he describes as “a significant emotional experience. The winery is not just about the wine. It’s about behind what’s behind the bottle.”

Look at any bottle of McClain wine, and you’ll see what he’s talking about. “F4” appears on each one, a reminder of what matters most to him: faith, family, friends and freedom. Each blend also has its own name reflecting a significant event in McClain’s life, and a label made from a commissioned painting that reflects it. The summer blend of Grenache Blanc, Viognier and Loureiro is called “Summer Breeze,” after the Isley Brothers song that was playing the first time he fell in love. “Sacred Love” Cabernet Sauvignon honors Sofia. “Hope and Faith” Petite Sirah recalls what it took to get up again after failing early in his career. “Life Saver,” a wholly unusual blend of seventy-five percent Tempranillo and twenty-five percent Petite Sirah is indicative of McClain’s approach. “Nobody ever puts those together,” he says, “but it changes your palate, so that we’re not just comparing Tempranillo to Tempranillo. It’s Tempranillo with whatever makes it taste great.” With multiple 90+ scores from the first few vintages, the proof of his approach is in the bottle. And with a limited production of three thousand cases, you’ll need to get to the tasting room or join the wine club to score.

Talk to folks at Folded Hills Winery, and they might just mention the “magic” of the place. They’d be referring not to talking-trees or dancing-cows magic, but more to the sense of peace and harmony, the beauty, that hard-to-describe feeling of things being somehow right, that pervades the winery and the historic Homestead. It’s the kind of real-life magic that transports you from the everyday to what feels like an elevated way. Grenache, Syrah and Rhône grape varieties are grown organically and vinified with little fuss to create small batches of organic, low-sulfur, lowalcohol, low-sugar wines that are delicious, eminently drinkable and true reflections of the local terroir. They’re all available at the relaxing and welcoming Homestead Estate Tasting Room and at the tasting room in Montecito.

Rather than using machinery, the Busch family lets their sheep, chickens, and New Zealand Kunekune pigs “mow” and “till” the vineyards, while enriching the soil in an increasingly self-sustaining agricultural system run largely in keeping with the earth-friendly biodynamic calendar. This is a place for families. Kids love the animals and can pick strawberries and see how food is grown on fifteen acres of seasonally changing organic row crops and fruit orchards. The Farmstead is open weekends, selling produce from the Folded Hills fields, baked goods, chocolate chip cookies, lemon loaves, honey, sausage and charcuterie from local organic producers. The property also offers an array of wonderful tour experiences, including an Escape to the Lake; the Whole Shebang, which includes meeting a zebra named Zazu and George the camel at the owners’ private ranch; and the Sip & Saddle experience, a partnership between Folded Hills and Alisal Guest Ranch. Back in Santa Barbara, don’t forget to stop in at the Folded Hills tasting room — the first and still the only one in Montecito. The tables at its comfortable outdoor space are perfect for grabbing a few bottles of Folded Hills favorites or meeting for a glass or a tasting before or after dining or shopping along Coast Village Road.

EL MORO ELFIN FOREST Just adjacent to the Morro Bay estuary, this 90-acre natural area is home to more than 200 species of plants, as well as 110 kinds of birds, 22 species of mammals and 13 species of reptiles and amphibians, including rare plants, butterflies, snails and birds. THE PIEDRAS BLANCAS R O O K E RY Head seven miles north of San Simeon on Highway 1 to find the only elephant seal rookery in the world that is easily accessible, free, and open to the public every day of the year. E ASKED LOCAL CENTRAL COAST CHEF AYDA ROBANA to show off her culinary acumen with a showy seasonal dessert. A few days later, she wowed us with this heavenly Cloud 9 Pavlova. Of course, to make a meringue, you’ve got to break a few eggs and have some superfine sugar on hand. And for this recipe, a whopping nine different fruits. (See what she did there with the name?) We’re not going to lie. This show-stopping confection takes a bit of effort, okay a lot of effort, but is totally worth it. So whip up those egg whites on a sunny, dry day (more on that below) and remember, fortune favors the bold. In this case, the bold will end up with one of the most delectable and magical desserts ever. Good luck, and may the froth be with you.

THE MERINGUE

8 egg whites (or 6 if using XL eggs) 1 ½ cups caster sugar (superfine sugar is essential) 1 tablespoon corn starch 1 ½ teaspoon white vinegar OR 1 teaspoon cream of tartar 1 teaspoon orange blossom water (an optional but a divine addition) Separate egg whites into the bowl of an electric mixer and whisk on medium speed until soft peaks form. Add superfine caster sugar, 1 tablespoon at a time. Whisk until each addition is dissolved before adding the next tablespoon. (Patience is required for this step.) Scrape the mixing bowl sides and whisk for another 10–15 minutes or until the mixture is thick and glossy. Mix the corn starch and vinegar or cream of tartar (whichever you are using) in a small bowl until incorporated. Add the corn starch mixture to the egg white mixture. Also, if using, add the orange blossom water. Whisk until well-mixed. The meringue should hold stiff peaks, and be thick and glossy like marshmallow fluff. Use a regular baking tray lined with parchment paper to prep the meringue base. Draw an 8-inch diameter circle on the parchment paper and flip it to the other side so that you have a guide for the shape of your meringue. Spoon the mixture in the center of the circle, working toward the outside edge. Preheat oven to 300°, and once the meringue is in the oven, reduce the temperature to 250° (225° if your oven runs hot) and bake. Peek through the oven glass after about 60 minutes. If the meringue has puffed up and turned from a glossy to matte white it is done. Turn off the oven, keep the door closed, and let cool completely in the oven - at least 4-6 hours or overnight. It should be crisp on the outside and soft on the inside. Don’t worry about cracks, they add character and you can cover them with whipped cream later. This bears repeating: do not open the oven while the meringue is baking or cooling. Keep moisture in the air to a minimum, and don’t even think about attempting this on a humid day. Cherimoya Whipped Cream 1 pint heavy whipping cream 2 cherimoyas 1 lime 2 tablespoons agave nectar Peel and seed the cherimoyas. Place the pulp with the juice of one lime and 2 tablespoons of agave nectar in a blender and puree until smooth. Whip one pint of heavy cream into soft peaks, gently fold the cherimoya mixture and top the Pavlova.

TOPPINGS

This tropical Pavlova has nine different toppings: dragon fruit, orange blossom water, kiwi, peaches, passion fruit, pineapple, guava, cherimoya and toasted coconut flakes. Slice, dice and adorn with amounts to your liking. To take it over the top, drizzle with honey. Try this exotic take or keep it simple and use some seasonal berries.

4 1. BOARDWALK WALKABOUT

My recent haunt is Cambria and Moonstone Beach, where I spend the afternoons wandering the long and gorgeous coastal stretch of boardwalk. In the springtime, wildflowers make the experience all the more magical, and the sunsets are stunning. There's plenty of space on Moonstone beach or other nearby benches to take in the soft Cambria haze at golden hour.

2. TOP TACOS TO GO

I'm always looking for great fish tacos; they breathe life into my soul, and one of my favorite places to stop on my way to Big Sur is Ruddell's Smokehouse in Cayucos. Show up early as the line piles up and spills onto the sidewalk. Don't bother with the seating next to the restaurant; take your tacos to go and enjoy them on a blanket at the beach a mere fifty feet from where you order.

3. BUCKET LIST MUST

Kayaking the Morro Bay estuary is an essential Central Coast bucket list rite-ofpassage. I love toting my own (or renting) a kayak and launching from the state park, paddling around, viewing the native wildlife and taking in the coastal scenes from new perspectives. Tip: Rent a two-person kayak for a shared experience and half the work!

4. MAKE EVERY DAY A VACAY

As a strong advocate of the mantra: Live where you want to vacation, so I lived in Pismo Beach for over a decade. I love the changes the city made to its beachfront

corridor and boardwalk. If it seems there's a good sunset in the making, you'll find me putting miles on the coastline with my camera bag looking for scenes, exploring coastal caves and taking in the local color.

5. DAWN PATROL

One of my long-standing weekend traditions is to kick off my R&R on solid footing with a hike at dawn. My favorite sunrise hike is Cerro San Luis Obispo. It's a quick 4 miles out and back to the car, and sometimes you're greeted at the top with a view of SLO shrouded in a cloud inversion, which makes the rest of the Nine Sisters appear as an archipelago stretching to the coast. If I'm feeling extra endorphin-laden, I'll follow Cerro San Luis with the Avila Ridge Trail, then snag a breakfast burrito from Lincoln Deli.

6. CLIMB EVERY MOUNTAIN

Cerro Alto is not only the tallest mountain in SLO County, it's also one of the best for mountain biking, hiking, and trail running. The whole Cuesta ridgeline offers all sorts of opportunities for viewing the SLO valley with commanding and unique perspectives. When the sun approaches golden hour, one finds blades of light presenting the County in surreal atmospheric layering as far as the eye can see.
