Chef Amanda’s love for cooking began at a young age. She launched her professional training at the Academy of Culinary Arts in Mays Landing, NJ. She then completed the chefs’ training program at the Natural Gourmet Cookery School in New York City, a professional chef’s training program that focuses on vegan/ vegetarian cooking. Amanda graduated with a silver medal and an Associates degree in Applied Culinary Science (A.A.S). Amanda’s most recent venture is her own radio show “Gourmania,” which airs on 1400 AM WOND. “One of my goals for the show is to highlight local organizations that use food/ cooking for a cause. Manna is one example. The other is a program whose purpose is to teach the young kids at The Boys and Girls Club in AC how to cook.” Throughout her career, Amanda has been known for her charitable works and was the Noogieland Chef for Gildas Club, South Jersey. She has also taught nutrition workshops in Atlantic City to mothers who are on government assistance (T.I.P.S. Program) and has done work with the Atlantic County Womens’ Center. True to Amanda’s charitable spirit she recently teamed up with Ugly Baby Marketing founder Sherrii Brentari and together the philanthropic duo created the Lil’ Chef publication series. “We wanted to provide local non-profit groups and schools with a fund-raising program that makes sense, is easy to manage and gives supporters something they can actually use for a reasonable price.” Sherrii and Amanda are proud supporters of the Mental Health Association in Atlantic County and are pleased that the Lil’ Chef publication’s preview edition made it’s debut at An Evening of Wellness. Kix Chix This recipe is easy and tasty your kids are sure to love it! I use Kix cereal instead of breadcrumbs‌and it makes all the difference! The best part is you can use boneless skinless chicken breasts, or chicken tenderloin to make chicken fingers. 1. ADULT: Remove chicken from packaging and rinse off. Preheat oven to 375 degrees. 2. KIDS: Place the flour in a shallow dish and season with salt and pepper to taste, about a teaspoon each. Set aside. 3. KIDS: In another shallow dish, add the beaten eggs. 4. ADULT: Put the cereal in a bowl of a food processor. Grind the cereal until it is a fine meal. Place the ground cereal in a third shallow dish. 5. KIDS: Line the 3 dishes up in the following order: flour, eggs, ground cereal.

Shopping List: 4 boneless skinless chicken breasts 1 cup all purpose flour Salt and epper to taste 2 eggs, beaten 1 ½ cups Kix cereal Non stick cooking spray 6. BOTH: Dredge the chicken, one at a time in the flour, shake off excess flour, then put it the egg dish to coat. Finally place it in the dish with the ground cereal, pressing down to make sure the whole piece is covered. Put chicken on a plate and set aside. Repeat with the remaining chicken. 7. BOTH: Spray the inside of a baking dish with cooking spray (it is also okay to use a baking sheet). Put the chicken in the dish and put it in the oven. Bake for about 20 minutes or until the chicken is fully cooked to an internal temperature of 165 degrees.

Quinoa Burgers This is a recipe I developed late last summer. It is very easy, and extremely healthy! I designated steps for kids and adults to do, and “both” means do it together! This is a great alternative to hamburgers, and you can also turn it into a meatloaf for something different. 1. ADULT: Place all ingredients EXCEPT the olive oil in a food processor. Blend until mixture is thick and forms into a mass, about 5 seconds. 2. BOTH: Preheat oven to 400 degrees. 3. KIDS: Form mixture into patties, about ½ inch thick and 3 to 4 inches in diameter (or whatever size you prefer) 4. KIDS: Chill formed patties for 10 minutes in the refrigerator. 5. ADULT: Preheat a large oven safe sauté pan over medium-high heat. 6. BOTH: Add the 2 tablespoons of olive oil.

Shopping List: 1 cup cooked quinoa (follow package instructions) 1 cup cooked, canned chick peas 2 teaspoons cumin 2 teaspoons cinnamon 3 small garlic cloves 2 scallions, green parts only Salt and pepper to taste 2 tablespoons of olive oil 7. BOTH: Place the patties in the heated oil and brown on one side for about a minute. Turn them over and brown the other side for another minute. 8. ADULT: Transfer the sauté pan into the preheated oven and finish the quinoa burgers in the oven for about 6 minutes or until golden brown. 9. Serve with black bean salsa recipe or your favorite condiments. 10. ENJOY!!

Mediterranean Burrito This is a new way to create a “burrito”. Feel free to substitute ingredients, because the method will be the same. I indicate who can do what by noting “kids” and “adults”. It is a very hands on recipe so have fun with it!!
Equipment: Pastry Brush, Baking Sheet 1. BOTH: Preheat oven to 375°. 2. ADULT: Open filo dough and roll out flat to thaw. 3. BOTH: Chop the peppers and the olives. 4. KIDS: Mix ¼ cup of cheese, jar of roasted peppers, ½ cup spinach, 2 tablespoons of pine nuts, 3 tablespoons of olives, 1 tablespoon of Italian seasoning and salt and pepper to taste. Set aside. 5. KIDS: Melt the butter in a bowl in the microwave. 6. BOTH: Take one sheet of filo dough and place it in front of you on a clean flat surface. Brush one whole side with butter using your pastry brush, making sure to get the corners and edges. Or, if you are using spray, spray the entire

sheet, completely covering it. Take another sheet and place it directly on top of the other and brush a layer of butter on it completely or spray it. Repeat 3 times, so you have a total of 5 sheets layered on top of each other. 7. BOTH: The dough will resemble a square. In the middle of the square, spoon the mixture in a straight line, vertically across the dough. Leaving about 2 inches away from the right and left sides. 8. BOTH: Fold both right and left sides toward the middle, then fold the bottom up, rolling until it is tight. Brush the top with butter or use spray. 9. BOTH: Place on a baking sheet and bake for 10 minutes or until golden brown.

Shopping List: 1 package filo dough (in frozen section) 1 tub feta cheese 1 4-6ounce jar roasted red peppers, chopped 1 10 oz package frozen spinach 1 small jar pine nuts 1 small jar kalamata olives, without pits 1 jar Italian Seasoning Salt and Pepper 1 stick of butter OR non stick cooking spray, butter flavored
Black Bean Salsa This is a great alternative to traditional salsa and gives you an extra dose of protein. Adults and kids can do it together, and you can whip it up in no time at all! Eat it with whatever you want, chips, raw veggies, or pita. Leave out the chipotle for less kick, especially for kids. 1. BOTH: Place ingredients in a food processor or blender. Mix to combine. Taste and adjust seasonings to your liking. 2. Serve with Quinoa Burgers or anything you like!
