Editors Letter Welcome to the second edition of Scenic Road Magazine, a lifestyle publication showcasing the very best of what the Scenic Rim and Hinterland areas have to offer. We wish for you to take this magazine home, read it once, read it twice and read it again. Like all good things, they take time to perfect, and we hope we are heading in the right direction. Your feedback as readers is always welcome.
Our advertorial pages interview a number of thriving businesses within the region, with a better understanding of what drives these passionate business owners. I’m honestly in awe at the level of detail and thought that goes into sourcing the products and services provided. It makes our region hold its own with the best regional destinations in Australia. It is this community that makes this region most special.
In this edition we took advantage of the spring blooms and shot the story of Emma Lang, a wonderful creative who has just welcomed her first baby into the world — dressed by our very own boutiques from around the Scenic Rim. Carin Garland was the talent behind the lense, her career milestones held in high esteem having photographed for the now well known Outland Denim. Our photoshoot location was greeted with open arms, by Caroline and Rob, the owners of luxury accommodation venue, Glenloch Gatehouse and Gardens. Their article goes into detail about the journey of their well planned grounds and renovated luxury guesthouse. The images photographed by the talented Hannah Puechmarin.
We take a look at the Magic Millions on the Gold Coast which has a direct impact on one of our most prominent industries in the Scenic Rim, the racing sector. Polo is of course always close to our hearts, so you must get along to the Magic Millions polo day on the Gold Coast. Our close proximity to the Gold Coast and Brisbane based events means we can enjoy the buzz of Summer.
We talk with Hobbs building, Luke and Nikki, a gorgeous young couple making some seriously bold eco-build statements in the often reproduced world of new builds. Our front page and feature spread on food from the Scenic Rim, photographed by the extremely talented Sabine, was a very successful collaboration of the senses. The Canungra Butchery providing the whole Rib Eye on the bone, Kate from The Vintage Pickle pulling together a simple yet very impressive salad using local produce from Summer Land Camels and Chantilly Farm, and my input, well that was the execution of the cooked beef. Having never cooked a whole Rib Eye before, I seriously pondered the idea of letting the professionals execute this project, however I knew for this piece to be an authentic achievement. I had to demonstrate that even an amateur chef like myself could pull off a perfect celebratory meal. Under the direction of Jen and Jo from the butchers, it was a complete success and cooked to perfection. And yes, it was as tasty as it looks. The Overflow Estate 1895 surprised us with their selection of wines, I really thought I was Pinót forever. However, their selection of grape varieties has us raving to our friends that they must visit the cellar door and sample for themselves. The combination of beautiful food, fine wine, architecture and the waters edge, make The Overflow Estate a destination not to be missed this Summer.
Which brings me to Eat Local Scenic Rim. A huge part of our region has been celebrated during the winter months, however with this new accreditation program, funded by local council and federal government, we can celebrate and beat the EAT LOCAL drum all year round. Our visitors to the region will enjoy piecing together their food trail, following the EAT LOCAL Scenic Rim “locavore” champions — these are the businesses who display the logo and can be identified as partners. What a great time to be doing agricultural tourism in the Scenic Rim. Finally our very own sister company Scenic Road Properties, having launched our two businesses which sit side by side the magazine and our real estate sales arm, we are very proud to present feature property Milford Country Cottages. We truly believe this is a region that families can come to and make a life in. We also believe the founding families need to be recognised and celebrated. The pages on Providence Farm is a story that warms my heart to the absolute core. There are so many families who love this area, who have loved it and will continue to live here. We are now one of those families and with our youngest taking her first steps as we go to print, I am reminded these are the memories I will look back on so fondly in years to come. I hope you enjoy this edition. My heart has definitely settled in this beautiful region we now call home.

Horses and landscapes are the language of my heart. I have been captivated by the beauty and majesty of the horse my entire life. Their intensity and purity of spirit speaks directly to me, and inspires me wholly. It brings me great joy and content sharing the beauty I see, through my creative process.
I find my best work comes forth immersing myself in a moment, a scene, an environment, observing and understanding it, and creating a piece that encompasses all of those elements—a visual translation of the beauty I feel. My work has recently taken on a new direction, while I’m still creating my energetic, refined, minimalistic responses to a subject, I am also working on some more complex and layered pieces which focus on a recurring macro to micro theme for me, creating worlds within worlds, built over time, in response to some formative experiences in Argentina and Spain 'Lita—You Learn' is a piece created specially for my equineinfused label Pony Ink, and will be on offer in large, soft wraps, light silk scarves, and over a range of products and surfaces. The piece contains a translation of a poem which holds great meaning to me by one of Argentina’s most revered poets and philosophers Jorge Borges. The poem serendipitously found its way to me at just the right moment, bringing an intricate unfolding of events, involving the poet, to beautiful full circle. I am delighted to offer this work with words in a world so close to my heart, to many.

What new products do you have for the SPRING SUMMER season? What a crazy ride we have had with the weather leading into Spring and Summer. Firstly, a hot dry drought and then rain up to our knees. Queensland should be the land of layering. We seem to be swinging from one extreme to another and I am very pleased that our ranges moving forward reflect that. As always, we have exciting new brands dropping in store. My new favourite is Ladli which means Loved Child… I feel like labels are catching up with what the customer wants — ethical fashion using sustainable hand printed fabrics. It’s such an exciting time as the new summer prints flow into the store. Not forgetting our old favourites, like Humidity, Namastes, Boom Shankar, Hut and of course Imagine. We still have a sprinkle of the gorgeous Feather and Find left for that little bit of boho luxe. Buying gifts for the men in our lives is always hard, do you have this covered? There is no other way to say it except we have the coolest men’s goodies and gentleman’s hardware. You know you are doing something right when men come in and go straight to their special table. Quirky, different and fun.
What goodies do you have that the ladies always love receiving as gifts? Jewellery, scented candles, body and skin care products, fashion or homewares, we always have the most beautiful personal gifts that speak from the heart. We take the stress out of gift giving and are happy to wrap for you. We have an extensive range of cards that cover every occasion. Where can people find out about your workshops that you run? As we head towards Christmas and the warmer weather, the Mezzie and Frank chalk paint workshops slow down but it does not mean we stop. Some of the other classes we have run this year have included Wreaths, Jewellery, Lino cutting, Printing, Alcohol Ink printing and Children’s workshops. And we are already in the plaining for next exciting season of classes. You have been busy with your social media activities and website, tell us more about Facebook, Instagram and website changes? If you follow My Country Escape on social media, you will have noticed a few changes over the last six months. We have been very busy and as the website grows, our social media will change accordingly. This is all very exciting, and we hope to add more and more of the shops clothing and products over time. -9Scenic Road Living

What do you love about country living and how do you enjoy time away from your business? It’s the people of Canungra and the community that continue to be the inspiration behind the store. It has also given me a chance to start to explore this beautiful region a bit more. So often we don’t know what is in our own back yard. We are loving this time and as our own children have grown and flown the coup, the shop has become my new baby and in a way the town has become my extended family. Small business is never easy. Our business is people first and I’m sure this is why we are still here. We will continue to keep changing and growing as long as the town and the region will have us.

Where did the name Pickers’n Co. come from and what made you fall in love with this particular spot? When we had an idea for the business we started ‘picking’ for old treasures to use as décor for the espresso bar, the shop, the venues space or to hire out. This trend has continued since the business has opened and we are always on the look out. These old treasures also add to the charm of the 120 year old Cobb & Co, where Pickers’n Co. is home. There are not many old buildings on the coast, so to be situated in the old Cobb & Co is really special! What do you love most about living and working in the hinterland environment?
for the shop? We shop for things that we would like, always sourcing things that are different and have an international yet local flavour. Our influence has come from the two countries that we call home. When you come to Pickers you could be in outback country Australia or on a little farm in the Klein Karoo in South Africa. We like to keep things rustic and unique. Let’s talk coffee…. What is it about your café bar that sets you apart? One of our customers said that when they come to Pickers, it feels as if they are sitting in Annie and Ursh’s rustic kitchen. This is exactly the feel we wanted to create, your home away from home.
Fourteen years ago we moved from South Africa as a family, to the Gold Coast. We came straight to this area. It’s so beautiful and laid back. It has a real local, small country town vibe, but is still very central. We have always lived near water, so living and working on Sea Eagle Lagoon suits us perfectly. It’s so relaxing sitting on the patio at Pickers, having a coffee overlooking the water.
We serve an amazing 100% certified organic and free trade coffee blend from Seven Miles Coffee Roasters, called Leaf & Berry. The coffee beans are grown in the cool mountain climates of Latin America and Papua New Guinea. It’s a slight /medium roast profile of delicate citrus notes, with sweet caramel and hazelnut characteristics.
What is most important to you when sourcing products
We source local suppliers that are purely unique to our espresso bar. Meals ranging from gourmet
brekkie parcels; gourmet savoury and sweet muffins; savoury slices; cakes; Acai bowls, juices; vegan banana breads as well as gluten free options. Not your regular run of the mill café options. We like to be unique! We feel people in the local area a happy they have an insirational place to work from where they can bring their kids and dogs, have a coffee and catch up with friends.
We also offer our space to host workshops, weddings, baby showers, bridal showers, special events and farm house high coffee. We have a gift shop available. For private events after hours and intimate boutique style gatherings, this place really lights up! Who can we find working at Pickers’n co? It’s a family affair. Ursh (Mum), myself Leigh-Ann / Annie, Dad (Don), my husband Geordie and baby, Evelyn all pop in to help us out. Our newest addition is Sabie our little sausage dog!

How long have you both owned this business and what made you want to start a Café? We have owned and run the café now for two and a half years. We have been in business before and enjoy working for ourselves so it came about that we decided to continue on with a café that was operating after buying the land its on - it certainly is not something we would have thought of operating otherwise but have been happy getting into our own business again and growing it. The Canungra Hub is a great meeting place for so many local residents and passing tourists, what wonderful delights do you consider to be your main focus? We wanted to recreate the older style, home-made, wholesome food we knew as kids. We want people to come in as if they were
coming into our home, sitting on our veranda or in our garden. Our creative team specialise in wholesome, fresh, local (where possible) produce. We have a large selection of gluten free options and look after those who enjoy meat meals, vegetarians, vegan and dairy free options. We hand make our meat and veggie patties for our burgers, and offer a selection of breads to suit. Our garden is full of citrus, herbs, a bay tree, a fig tree, passionfruit vine and lots of other interesting plants we use in our cooking as they become available As business owners you are active members in the Canungra Chamber of Commerce, what events have you participated in and what have you got coming up? We have participated in the Scenic
Rim Eat Local week with cooking demonstrations and talks on gluten free and will continue with different topics each year. We also work with a Nutritional Therapist, who is very informative on many health and food topics. People can stay updated on these workshops through our Facebook page. Does your menu reflect the local produce and what is in season? Canungra Hub has just been accredited as a ‘Eat Local Locavore’ through Scenic Rim Regional Council for our efforts in supporting the region in using as much produce as we do. Herbs, honey, lettuce, eggs, mushrooms, milk, cheeses, macadamia nuts, jams made on local fruits and any seasonal produce we can get hold of from the area to make another delicious treat. We are very lucky to live where we do, in the Scenic Rim where quality food and beverage is grown.
You also do take-away options now with the curries, tell us more about that? We have just started take away curries on a Friday and Saturday, with the curry selection changing weekly. We have an exceptional Chef who is renowned for her curries here in Canungra so we are very lucky to have her working with us as another option.
We wanted to recreate the older style, homemade, wholesome food we knew as kids. We want people to come in as if they were coming into our home, sitting on our veranda or in our garden. We noticed you did your first wedding at a few weeks back, how does this space work for private functions? We have done several functions after hours in our garden now and are happy to do more in the future - functions are my favourite! Birthday celebrations, leaving town get together, business meetings, Christmas parties, Melbourne Cup lunches and our latest, a wedding reception, seating 50 in the garden area. Under the fairy lights, the area is beautiful at night. We have function packages (buffet style, home-made selection) and can work the packages to suit the occasion. This year we had 2 fundraisers. Our staff gave their time, we gave the venue and all money made went to the cause. One cause being Oz Harvest (collecting quality excess food to support people in need), and another, Burrumbuttock Hay Runners (donations of hay to those in need in drought affected areas of Qld and NSW).

Holli Dolli is fairly new to Canungra. How long have you been in this location? Tell us how it all started?
I’m so very blessed to have my mum, Gina, who also happens to be my best friend as my helper at Holli Dolli. The locals love my mumma bear. In the little down time I do get, I like to be with my family. If I could choose to do anything, it would definitely involve my family, enjoying our horses, relaxing and maybe‌. cheese...feta cheese!
What specific things have you got coming in this Spring Summer season? Summer is well on its way... and we will have all the very latest range of prints and styles to keep you cool and looking on trend this season. I love my shop full of vibrant colours and fantastic prints. Florals are huge in this season and LACE... I so got a thing for lace. Soft lavender colours will dominate the whole summer season, romantic and elegant. Your Mum, Gina, also helps out. Does that mean you also cater to women of a mixed aged bracket?
I am engaged to the love of my life. Together we have 4 beautiful kids. I have truly amazing parents and a big family. They have backed my dream and supported me every step of the way and I am so grateful beyond words. Glenloch & the Gatehouse Luxury accomodation and gardens
The Garden It was some 16 years ago that Rob & Caroline Tolmie decided to make a ‘tree change’ from their waterside property on the Gold Coast. They chose Tamborine Mountain because they’d fallen in love with the village atmosphere and sense of community that the beautiful Mountain enjoyed and they wanted to be part of it. After searching for the perfect location, their imagination was captured by a 2.7 hectare property at the end of a leafy lane and only a short walk to the main village.
“It was bigger than we’d imagined,” Rob recalls. “It was a sunny day and the driveway was lined with blossoming jacarandas, so it was love at first sight.”
Caroline explains “Glenloch is a planned garden. We were definitely amateurs, but we sat down and drew out the ‘bones’ of what we wanted to create, with the avenues, terraces and ponds - the waterfalls and fountains. Whilst a few new features have been added here and there, we look back at the original plans with fondness, as the garden hasn’t changed much from our initial drawing.” Glenloch feels like a European inspired garden, with its central avenue of Pin Oaks, it’s structural rock walls and its Buxus hedges. The Tolmies have added grand bronze fountains, secret garden ‘rooms’ and wonderful ‘walks’ to explore this picturesque estate. The Mountain enjoys four very distinct seasons and this magnificent property shows each one off to the full, whilst continuing to be a haven for birds and wildlife. Rob & Caroline open the garden once a year to raise funds for local Mountain charities.
“Most of the property was given over to rough horse paddocks and scrub, but there was the existing avenue of jacarandas down the drive, lots of citrus that thrive so well on the Mountain and several rose bushes.”
The Gatehouse
Little did they know at the time, that this decision would lead them to design a garden on a grand scale. Many years of labour and love were ahead of them, to bring their dream to reality.
In the early days of the Mountain, the old cottage had been home to the local Post Master and General Store Keeper and was actually located in Capo Lane - about a kilometre away in another street.
When Rob & Caroline Tolmie bought the property that is now Glenloch, the sad two bedroom house at the top of the driveway had seen better times.

“It’s hard for us to imagine that back in the 1940s when it was sold and relocated to Yuulong Road, that the local men rolled it on giant logs, over the fields to its final home. It now sits behind the wrought iron gates at the entrance to Glenloch - and it just seemed fitting to call it ‘The Gatehouse’ …” Renovating this lovely old lady was an inspiring work of love, as whilst the Tolmies wanted to bring her into the 21st Century, they also wanted her to retain her original cottage character. “She had been neglected for some considerable time and the roof leaked badly! In fact the roof was so far gone, that daylight could be seen through the holes when the ceiling was removed! - so that seemed a great place to start” Caroline remembers those first finds well. ”When the wall cladding came down and revealed that the sturdy Ironbark framework was in great shape – we were impressed. The ‘bones’ were still in good shape, and when the many layers of floor lino were removed, it uncovered old newspapers from 1943. Sadly, as fascinating as they were, with their enlightening history of the Gold Coast, their condition was so bad that they disintegrated when touched. It was still interesting to see the advertisements and names of the pioneering families that are still around today, both on the Mountain and the Gold Coast. It was an insight into the wonderful history that this old lady had lived through”
It is clear a lot of love and consideration went into the cottage restoration. A slow process however rewarding ‘The Gatehouse’ finally came to life, complete with a pretty new front entrance, a full modern kitchen, bathroom and laundry, as well as a large veranda and spa, from which guests can view the garden. And finally those luxury finishes such as plantation shutters, fireplace and high quality appointments were chosen and installed to make her the luxury cottage that she is today. The Gatehouse has been ‘home’ to many Mountain families over the early years, but happily now welcomes guests for luxury short breaks and holidays on Tamborine Mountain. When did you first decide to make art a focus in your life? When I got back from living overseas I really struggled with trying to get back into a normal life, i.e working, renting.. the normal day to day stuff. I really needed an outlet. I had been following a fellow ceramic artist on Instagram and thought, that looks amazing, I want to give it a go. That was almost 4 years ago now! It took me about 3 years before I thought my work was at a quality where I could actually sell it! You got married last year - Congratulations!!! You just had your son, Leo, only 8 weeks ago. How do you think these life changes will impact your work? Maybe new inspiration? Thank you, very exciting times! Motherhood was definitely a life changing moment for me. Harder in so many ways then I had anticipated but so much more rewarding in so many other ways! I’m not too sure at this stage what I will draw inspiration from, my little man takes up most of my time. I definitely can’t wait to get back into the studio. Tell us about the style of ceramics you do and where did the name Olive Ceramics come from? My style has changed a bit over the years, but I mainly sell functional tableware. A lot of my tableware is slab rolled and put into a mould, where as my mugs and tumblers are wheel thrown. I have been so lucky to have a wonderful teacher in the past year who is an amazing thrower and has taught me so much! I’m really enjoying throwing larger amounts of clay and making vases and larger vessels. The name "Olive ceramics" came about because I love the name Olive. If I had a daughter I always wanted her name to be Olive. Now I think I would have to reconsider that If I was to have a girl! You have lived on Tamborine Mountain since early childhood, how do you think that has contributed to your creative side? I love Tamborine so much. It’s such a magical place. I feel so lucky to have grown up here! There are so many wonderful creative people up here to draw inspiration from. My first job was "Marks and Gardner Gallery" a beautiful space where they would showcase amazing artists, whilst stocking the most beautiful books. I definitely think living up here has been a huge creative inspiration for me. We are so lucky to have so many beautiful organic growers on Tamborine, I thoroughly enjoy going to the green shed, getting an abundance of organic fruit and veg, coming home and cooking up a big vegetarian storm! I like to have quite neutral coloured tableware — off whites and speckled mattes are my favourite! If I had big colourful plates I think it would take away the beauty of the beautiful homegrown produce! You are 24, and have also done some modelling is that right? Are you interested in this still or have you changed your focus a little. I love the creative freedom modelling can give. I also just love playing dress up and getting my make up and hair done! It’s not something I would persue on a professional scale however, I found it to be highly competitive but sometimes a little negative. My focus has definitely shifted since wanting to start a family, and I am so enjoying this new chapter.

Well, we are glad you found ceramics. Is there anyone else creative in your family? My beautiful mum was a leadlight artist and created the most beautiful pieces in the home we grew up in. She no longer practises but I can still appreciate what she did. What are you dreams and aspirations for Olive Ceramics? For Anthony and I, we would love to buy a big block of land in the Northern Rivers, set ourselves up a and be totally self-sufficient. I would love to run my own pottery workshops. Even just a space where other creatives can come and enjoy the space, not narrowing it down to just potters. Anyone looking for a place to just create. Firstly let’s get to know who this talented wedding specialist is and what makes the wedding industry one of the most thriving sectors in the region. What is the essence of Scenic Rim Bride? After returning to the Scenic Rim earlier this year, and seeing the bridal buzz in the region, I felt it was my duty to share it with couples planning their dream wedding day. There is so much that has changed, with many beautiful new venues emerging. The wedding industry experienced a big movement over the years further South, now it’s time to shine the light on the Scenic Rim. Through Scenic Rim Bride, I hope to showcase all the known but also hidden beauty spots around the region. What has been one of your favourite shoots of late? Summer Land Camels without doubt. Working with camels was fun, exciting and an amazing experience. To top it off we had an beautiful sunset, open landscape with local produce and genuine country hospitality. A warm, exotic feel was achieved, yet keeping that country theme. It was definitely something a little different - It was a memorable day for all our team involved that day. What do you enjoy most about helping brides and grooms through the process? The first thing most people ask is ‘Do I deal with many Bridezillas?’. When I answer no, people are quite surprised. Having dedicated my life in the last 20 years to living, breathing and talking all things weddings, planning a wedding is second nature to me.

Meet Nikki Hobbs Interior Designer In the heart of the Scenic Rim Luke and I love to travel! In fact, our wedding vows highlighted my gratitude for Luke entrusting that around the world sabbatical was non-negotiable. Upon our return in 2012 to family and friends in Australia, and following a flooding incident in a girlfriend’s Coorparoo rental apartment, we stumbled upon our slice of paradise in the picturesque Scenic Rim. Our affinity with acreage homesteads, rolling hills, organic produce and a grassy paddock for my 38-year old childhood pony, Rosé, seemed to fit like a snug glove on Lamington National Park Road. Sustainable building and interiors The variation of our Hobbs project portfolio has been incredibly diverse including many eco-extensions, fully off-grid new builds and award-winning commercial projects. Often our buildings and interiors share common attributes — natural materials of recycled timbers, stone cladding, energy efficient gadgets and earthy colour tones. Additionally, each project employs cohesive design practices that embrace the Australian lifestyle and environment. We also strive to surround
ourselves with a local database of talented suppliers, contractors and creative folk, who respect and align with our eco-ethos and Hobbs family values. I am a proud tourism professional, however I have recently re-trained to attain my QBCC Builder – Low Rise (Site Supervisor) license. It was important for me to support Luke and our clients throughout the entire build process.
I fondly recall telling my mum (at a very early age) that I’d be an interior designer when I grew up. It’s ironic how passions often come full circle. Now I receive a real buzz by helping our clients through their selections.

Excitingly, we will soon launch an exclusive software system designed by me to assist our Hobbs customers with their extensive (and often daunting) selections process. Building a house may be the biggest investment our clients will make in their lives and I’m proud to highlight that this software will elevate the Hobbs selections process and bring it to life. Clients will be able to peruse customised selections from the comfort of their own home (all while watching Grand Home Designs Australia) and make crucial design and colour decisions all in their own time. I envisage I will still maintain my role of helping curate all our projects. The software will allow clients the privacy and space to explore in their own time.

Next year’s program includes more fully off-grid homes and local tourism projects, set to enhance the region’s product offering.

Meet Luke Hobbs Builder Carpenter turned business owner Daydreaming out back in the Bunnings landscaping department while planning my Saturday night’s social calendar seems a lifetime ago (‘cause it was). Fast forward twenty odd years and in hindsight, my Carpentry apprenticeship alongside brother, Greg, followed by almost one decade working with steel frame, has clearly carved the path for Hobbs Building & Interiors as you see it today. We chose Canungra as it’s central to our families and friends, yet far enough away to feel somewhat remote. Reflecting on Nikki’s vision boards (in which I reluctantly participate) you’ll note magazine clippings steeped in green rolling hills, deciduous trees and outdoor bathtubs with views over farm land – almost all of which are a Scenic Rim reality. I am chuffed to share both my brother turned Carpenter Mark and dad, Eric, who’s fresh from retirement, (cheers to a recent Government employment grant) round out our family team. Not to mention, Robyn, who is my mum and avid support or cleaning-guru on call when needed.

We have built an industry reputation for our steel frames – both in design and complex construction techniques – and hence promote industry leader TRUECORE Steel by BlueScope Steel. It’s also a new era for responsibly sourced and certified timber which has proven health, happiness and climate change benefits, including storing carbon and reducing carbon emissions. Partnering with a mindful builder’s designer or architect is one of the biggest build decisions you’ll make (and we can help you here). Passive design, including the orientation of your home, thermal mass elements (such as polished concrete or stone walls) and the placement of windows and doors are crucial in achieving an energy efficient home. Understanding compliance requirements such as wind, bushfire attack level, and off-grid components at the deisgn stage is also helpful.
Colour palette consciousness
Living in South East Queensland we experience extremely high temperatures and it boggles my mind that dark roofs are in vogue. They look beautiful, however, the practicality of baking under a black tin or tile roof doesn’t sound enticing to me. Throughout the Hobbs selections process, my ‘go to’ Custom Orb colour options include Zincalume, Surfmist or Dune. We are also very interested in green garden roofs popular on high rise buildings.

Breeze easy and add timber Avoid stifling moments which tempt you to opt for air conditioning or electric heating with ample cross flow ventilation. This can be easily achieved with expansive french doors (and fly screens), gas strut or louvre windows and sklights (such as Velux). It’s also proven that certified timbers within the home assist to create a happier and healthier environment. Choose timber or bamboo flooring, laminate timber bathroom vanities and benchtops, and DIY oven rangehood cladding, rustic shelving or picture frames.

The Overflow Estate 1895 Great wine, delicious food, stunning location Sitting in the heart of Lake Wyaralong, delicately positioned on an island, The Overflow Estate 1895 commands views of this most scenic of lush valleys within easy striking distance of Brisbane and the Gold Coast. It truly is a boutique business venture of inspired creativity. For many years I have been one of a myriad of travellers who have passed this historical grazing property, along the road between Beaudesert and Boonah – and even paused a number of times and admired the magnificence of the landscape, the homestead and the majestic Mt Joyce beyond. The extraordinary Wyaralong Dam Project has now created a reflective image of this entire ecosystem on its glass like surface.
Given the long association between this property and its’ industrious creative pioneers, I am pleased to report that the new custodians of the land are equally motivated to leave their own mark on the region. The Usher and Morgan families, who purchased the holding in 2006, have generously unmasked a part of their beautiful property and feel both honoured and privelaged to be able to share this region of barely describable beauty with you. S O M E FAC T S The Overflow Estate 1895 is a Boutique Vineyard and Cellar Door hand crafted into the surroundings of Lake Wyaralong. David Morgan, part owner and creative genius behind the venture, said it best when describing how they achieved such a collaborative result mixing business with landscape and history – “Everything has an origin. Things we can see, smell, taste, hear and touch have survived. Those that we cannot, have not. We are here to see that everything else remains”. The facility offers a wonderful select menu of local delights from the gourmet cafe and proudly offers wine — exclusively produced from the vines of the estate. The Vineyard which was established in 2010, is home to over 2500 vines of select varieties ideally suited to the local climate and soil types. The results I can attest after ample sampling, are a delicate pleasure to consume and complement locally grown produce perfectly. The history of the property is fascinating. The Overflow Estate 1895 is just a small part of a larger working rural property venture set upon 4000 acres within the Scenic Rim, only 60 minutes by car from the city or the coast. THE CELLAR DOOR A visit to the Cellar Door is an experience in itself. With nothing left to chance the building has been designed by celebrated architect Con Zahos, of Loucas Zahos Architects. The brief was: “to be startling, new, modern and edgy but similarly to complement the history of The Overflow 1895. It had to sit comfortably with the post and rail fences, the grids, the barbed wire and the cattle loading ramps.” The result is a building integrated with the surroundings allowing visitors to regard the ever changing landscape whilst enjoying the bountiful crop of the estate and local producers. The entire experience has an ethereal quality. It will consume you both physically and emotionally. The Overflow Estate 1895 is open to unannounced visitors Friday through Sunday. Food and wine available 10am till 2pm from the Cellar Door. The facility caters not just to the public but is the ideal location for Corporate and Private Functions. This cut, without the bone, you already know as the tasty Rib or Scotch Fillet It has a seam of fat and precious marbling. It comes from high up the beasts back, helping it turn side to side but not worked very hard contributing to its tenderness. The Ribeye is renowned for its true beefy experience. To do this spectacular cut justice, observe some basic steps. Salt it and salt some more with large crystals such as sea or kosher salt. Try a salt/herb or dry rub. Some ingredients to mix and match include freshly cracked black pepper, thyme, parsley, coriander, smoked paprika, garlic, rosemary, lemon rind and seeded mustard. Well-matched these build a scrumptious crust. Avoid heavy, rich sauces. To ensure an even and successful cook get the meat up to room temperature, all of it! You’ve heard it before and its true, fat is flavour! It also protects the meat during cooking. Keep it on for cooking. Individuals can trim it to their taste if desired when served. This is a “dry heat” cooking cut. Baste the meat with high smoke point oil and barbeque on the heat, a hot or very hot oven or very hot clean BBQ grill. Give it time to make a nice char or crust, then take it down to moderate heat and finish cooking. Hooded BBQs are great for this. Times will vary between weight and the degree of “doneness” desired. Keep in mind a multi rib roast will take a few hours. The final and often skipped step is rest! Rest the meat and let the juices redistribute throughout the cut and tuck into a juicy delectable steak. Add a knob of herbed butter to the caramelised juices from the rest for a final indulgence. It teams well with cold sides like leafy greens and mixed salads that can be made ahead of time. To partake in this satisfying hands-on-bone-gnawing experience, organisation is the key. Organise your meat, your heat, someone to bring the salads, someone else to bring the beer and wine and organise them to arrive nice and early!

Roast pumpkin, charred mandarin & camel feta salad Ingredients 500g butternut pumpkin cut into 2cm cubes 100g camel persian feta 6 small mandarins, cut in half 50g roast pecan, halved mixed salad leaves Nigella seeds edible flowers 1 tbsp Bunjurgen verjuice 1 tbsp Scenic Rim Olives blood orange olive oil 50g butter Method Preheat oven to 180° degrees. Drizzle pumpkin with olive oil and season well. Roast for 15 - 20 mins until cooked through and coloured. Leave to cool. Melt butter and a little olive oil in a large heavy based frypan. When it starts sizzling, add mandarin halves, place open side down. Cook for 3 - 4 minutes until charred. Remove from pan and cool. Arrange mixed salad leaves on a large platter and place pumpkin and mandarin randomly. Dot chunks of camel feta throughout and scatter over pecan pieces. Drizzle blood orange olive oil and verjuice over salad to dress. Finish with Nigella seeds and edible flowers.

Providence Farm Nestled high on the lush green Beechmont plateau sits Providence Farm, with glorious views sweeping across Numinbah Valley, out to the Gold Coast and the sea. When Greg McKenzie’s parents were ready to retire, Greg and his wife, Wendy, took over the traditional dairy farm, which has been in Greg’s family since 1880. Greg and Wendy made the decision to go it alone: to produce bath milk and shower cream from their cows’ milk, and soap made from the milk of their goats. They sell their products from their roadside stall, and via direct delivery to their regular customers. The McKenzies also own the charming Providence Farm Hall, next door, built in the 1940s, and available for hire for weddings and events. Quark, fennel & macadamia nut cheesecake Quark originated in Northern Europe, where it is called ‘kvarg’. It’s made by warming soured milk until it curdles, adding cultures and then straining to form a solid curd. Quark tastes like a combination of Greek yoghurt and cottage cheese. It is high in protein and low in sodium, and doesn’t contain animal rennet, so it’s suitable for vegetarians. Ingredients - serves 10 200g quark
60g cornflour
(We used store-bought quark for this recipe.)
40 ml lemon juice
250g cream cheese
1 teaspoon vanilla paste
300ml cream
4 eggs
2 lemons, zest only
120g golden caster sugar Base 2 teaspoons fennel seeds 200g Greenlee Farm unsalted roasted macadamia nuts
50g golden caster sugar 120g plain or spelt white flour 80g unsalted butter, melted

To make the filling, place the quark, cream cheese, cream, sugar, cornflour, juice, zest, vanilla and eggs in a food processor, and process until creamy. Refrigerate until required. To make the base, grease and line a 36 cm long x 8 cm wide x 7 cm deep cake tin with baking paper, leaving an overhang on each side of the tin — this will assist in removing the cheesecake when set. Place the fennel seeds in a small cast-iron skillet and toast over a medium heat until fragrant, about 3 minutes. Pound the seeds to a coarse texture using a mortar and pestle or spice grinder. Process the nuts in a food processor to a coarse crumb consistency, add the ground fennel, sugar and flour, and pulse to incorporate. Add the melted butter and pulse again until the base forms a ball. Divide the mixture in two. Press half the base mixture into the base of the cake tin. Divide the rest in two and press it into the sides firmly using an off-set spatula. Refrigerate the tin for 30 minutes so the base and sides firm up. Preheat the oven to 150°C. Remove the tin from the fridge and pour in the filling. Place on the middle rack of the oven and bake for 40 minutes. The cheesecake is ready when the filling is set. Turn the oven off and leave the cheesecake in the oven to cool. This will help to prevent cracks from forming on top of the cheesecake. Remove from the oven and set aside to cool. The biome; the fungi and the bacteria, thrive in that nutrient rich barrier. Those bacteria, fungi and viruses living on our skin actually work very closely with our body and with our immune system. The skin biome produces metabolites (chemicals) that direct the amount and quality of the new skin produced by the dermis.
A healthy skin biome means healthy skin. There are many ways that people damage their skin biome but one of the most common is the use of antibacterial products. Our modern society has become obsessed with being “clean” but that is often at the cost of good health. If you kill all the bacteria and fungi on your skin it will affect your dermis and epidermis, your immune system and lead to skin thinning, wrinkles and blemishes as well as skin conditions like eczema and psoriasis. Avoiding products that destroy the essential skin biome is a great first step but it’s also really important to use products that encourage growth of a healthy skin biome.

What could we say about the Gut and the Brain? By Morgane Dean from M.D. Healing “Nutritional Therapy Practitioner & Remedial Massage Therapist” Nowadays, people are realising that the gut is the root cause of so many diseases. There is definitely more awareness about how food, diet and lifestyle have an impact on our health. From my personal health journey and professional experience as a Nutritional Therapy Practitioner and as a Remedial Massage Therapist, I believe that diet has an impact on at least 70% of our health. Almost 80% of our immune system sits in the gut. A healthy gut will protect you from foreign invaders like viruses, bacteria and parasites and much more. We can’t underestimate our good bacteria. They make 90% of our body as a human being. What is more important is that our bacteria makes up to 99.9% of our genes.
Diet is one thing, but digestion is as important. We are what we eat but we are also what we can digest and absorb. It is said that the gut is the “mother” of the body because of how it feeds everything from our brain to our skin, in the same way a mother feeds a child. When I first learnt about digestion, which I believe is the number one foundation for healing, I realised that it started in the brain. When we see and smell the food, our body is already releasing digestive enzymes before the food gets into our stomach. I also learnt that it is a north to south process. If the chain further up is not functioning properly the bottom line is impacted. For example: if there is no stomach acid released, we can’t

have protection from parasites. Bacteria and Protein can’t be broken down properly which can set you up for a damaged gut (leaky gut) along with food allergies and sensitivities.
To be able to digest, we need to be in a relaxed state called “parasympathetic”. This will allow production of good saliva, stomach acid and many other enzymes to break down food so nutrients are available for the body. We can all recall the elders of the family saying “sit down & chew your food properly!”
Here are some tips below of how you can improve digestion: Eating should be done in the most relaxed and social environment. Chewing your food is vital. Stay hydrated. Our body uses 1.5L of water for each meals. Do not drink while eating. Choose low carbohydrate and possibly limit starchy food. Choose good quality grass fed organic free range meats, plenty of green vegetables so stomach acid production is stimulated. Ensure that your meals have a generous amount of good quality animal fat, so your liver and gall bladder can learn to do some work there and be nourished to be able to detoxify. Don’t overeat. Don’t skip breakfast, mornings are when our stomach acid production is at its best. Breakfast should be your main meal, with a medium sized lunch and a small dinner. Good quality salt like Himalayan or Celtic are vital for stomach acid production. Eat many different types of fermented foods like sauerkraut, apple cider vinegar, kimchi and natural yogurt. Fermented food have many enzymes to support digestion, there stimulate stomach acid production, there are packed of beneficial friendly bacteria and they give amazing flavour to our food. Digestion is like “Use it or lose it.” Eat protein to digest protein and eat fat to digest fat. Nature has provided all the necessary nutrients in whole food.
When we eat what is right for us, when our digestion is working well and the gut bacteria are balanced, the body can be nourished. Without the integrity of the digestive system, the body cannot support the other foundations of health. In our small intestines, 95% of the water, nutrients and electrolytes are broken down. Proteins are properly broken down into amino acid, which is very important for our hormones and particularly our neurotransmitters. Our neurones use neurotransmitters to communicate within the body and this is why our gut has a huge connection with our brain. The gut has been described as the second brain. The gut makes use of more than 30 neurotransmitters, most of which are identical to the ones found in the central nervous system, such as acetylcholine, dopamine, and serotonin. More than 90% of the body’s serotonin lies in the gut, as well as 50% of the body’s dopamine. That is why digestive dysfunction can have such a dramatic impact on mood due to its impact on neurotransmitter synthesis. You know when you have butterflies in your stomach? This is actually real, the belly has emotions like our brain. The brain and the gut are continuously talking to each other. Moreover, profound nutrient deficiency can be the root cause for mental illnesses. For example, it is common to see vitamin B3, B6 and zinc deficiencies in schizophrenia and people who suffer from depression. All cells of the body need nutrients to function adequately. A healthy gut and brain run only on good quality food and a powerful digestive system. Digestion is by far the top healing priority of the body. When the gastrointestinal system can’t properly digest and absorb nutrients, it affects the vitality of the entire body. Knowing how to optimise digestive function is one of the most powerful tools. We have seen how the gut interacts with our feelings but it is also true that you cannot heal a distressed gut without considering the role of stress and emotions. Remember, digestion starts in the brain!
Avoid sugar and processed packaged food. Overconsumption of alcohol, chemicals such as pesticides, drugs and medication all contribute to low stomach acid production. These simple suggestions can make a huge difference to your gut health and absorption.

The Yes Project Scenic Rim photographers Kate Higgins of A Little Life Photography and Samantha Daly of Style Pose Click have teamed up and launched a not-for-profit organisation that brings together their love of photography, the great outdoors and a desire to help others improve their mental health and they’d love you to get involved! Founded in early 2018, The Yes Project is a registered charity that runs programs (in person and online) with one simple purpose – to bring joy and happiness. It’s all in the name of helping people improve their mental health and everyone is welcome – whether depression or anxiety are ongoing concerns, you are feeling lonely or you just want to be part of something special and meet other like minded people. The Yes Project mantra is simple. Just SAY YES (when you would usually say no). Go on a community walk, sign up for a more adventurous hike or contribute to online collaborative art projects. Free group yoga classes and photography meetups are also soon being added to their program. Samantha explains, “We started walking the trails of the Scenic Rim and South East Queensland for our own mental health after advice from our GP and soon realised the power of reconnecting with nature and regularly clearing our minds combined with regular exercise. We then started inviting friends and family that we knew were struggling with anxiety,
depression and other mental health concerns to walk with us. It didn’t take long before we realised people everywhere would benefit and so our YES WALKS were born.” Yes Walks range in length and complexity and are regularly advertised on The Yes Project Facebook page @theyesprojectlimited and www.meetup.com. Walks take place around the Scenic Rim, Brisbane and the Gold Coast every 6 to 8 weeks with the occasional child (and scooter) friendly community wander added to the program. Some Facts The Magic Millions isn’t exclusive to the Gold Coast. Every year there are sixteen sales and nineteen races held throughout the country. This includes six Black Type Group Races, including the $2 million The Star Gold Coast, Magic Millions 2YO Classic and the $2 million Gold Coast Magic Millions 3YO Guineas. In 2018 at the Gold Coast Sales 1,108 Lots were prsented for sale across 5 days. The top sale exceeded $2Million and the clearance rate was 89.83% for a Total of $168 million in Gross sales. Magic Millions is the world’s richest sales based incentive race series. To compete in a Magic Millions Race a horse must have been purchased at a Magic Millions Sale. Co-Owner, Katie Page-Harvey and Zara Phillips MBE (inaugural Magic Millions Racing Women Ambassador and Patron) launched Magic Millions Racing Women
in 2012, an initiative that champions the participation, recognition and development of women in the thoroughbred horse racing industry. As such The Star Gold Coast Magic Millions 2YO Classic offers a prize of AU$500,000, which is distributed between the first four ‘all female owned or leased’ horses in finishing order of the race. Huebner Motors Where we started to now...
Huebner Toyota began in 1973 on the banks of the Brisbane River, South Brisbane and traded on this site until the Queensland Government resumed the land to create Expo 88 and later the Southbank we know today. Klaus Huebner moved to Beaudesert Toyota in 1978 and quickly set about creating a new showroom and workshop employing local staff on the site we now know as Coles Beaudesert. After the closure of Beaudesert’s Holden in 1983 GMH and Klaus Huebner teamed up to bring Holden back to the Scenic Rim. In 1985 Klaus constructed a new showroom and workshop right next door to Toyota. It was at this time that Neil Dagan joined the Holden team, 26 years later and Neil is still a part of the team as the Toyota Parts manager.
Huebner Toyota moved to its current location, 189 Brisbane Street in 1986. It was at this time that Beaudesert Holden moved next door into 191 Brisbane Street and was sold on a couple of years later. It was then moved and 191 Brisbane Street became home to the St Vincent De Paul Society. Mark bought Huebner Toyota from his father Klaus in 1988. It was in December 2002 that Mark acquired Beaudesert Mazda and became a second franchise. Now Huebner Motors employs 36 staff and services the Scenic Rim, Logan and Gold Coast areas selling over 900 vehicles per year. Over the past 40 years Huebner Motors has supported many local sporting teams some of which include the Beaudesert Soccer Club, Beaudesert Golf Club, Jimboomba Juniors Soccer Team, Tamborine Golf Club, South East Queensland

Polo Club and Little Athletics. The team have also worked with the Royal Children’s Hospital, the Cancer Council and Turning Canungra Pink to raise vital funds. Huebner Motors also supports the Boonah, Beaudesert and Canungra Show Societies and the Scenic Rim’s Eat Local Week. It is with great excitement that Huebner Motors embarks on its next chapter and welcomes Isuzu Ute to the family. From November 19th Isuzu Ute will trade from 191 Brisbane Street after the block was purchased back recently from the St Vincent De Paul Society.
It is the support and patronage of this amazing community that has built this company to where it is today. Beaudesert has changed a great deal over the past 40 years and we have ridden the highs and lows that came with that change to the amazing, growing community it is today.
