Letter from the Publisher As I sit here and write this column I am filled with excitement and joy for the holidays. Ironically, I am planted in front of my SAD light as Christmas music fills the air and my Christmas cactus is in full bloom. I am also sitting here sniffling, and sneezing from the third cold I’ve gotten this fall turned to winter. The holidays mean something different to everyone and I can certainly appreciate that, diversity always keeps it interesting. For me, the holidays start with Christmas music, decorating and gift buying. It’s been fun to experiment with Do-it-yourself (DIY) decorations such as wreaths made of burlap or stockings made by hand. This type of crafting activity reminds me of the things we’d do to prepare for the holidays and the joyous countdown to
Holiday Blues of course there was always writing letters to Santa. This year my husband and I have crafted a completely different decorating style. Because of our love for Halloween, we are doing a “Nightmare before Christmas” type of theme. We bought Costco out of these decorative, crystal-like glowing trees. They’re going to be teeth. You get the picture? Hopefully we can pull it off. And hopefully our neighbors will appreciate our “special” sense of humor.
Christmas. In school we’d construct a chain out of red and green construction paper. Each link would represent a day on the journey to Christmas and each day we’d remove a link. We also would have a little calendar at home with windows that could be opened with a little piece of candy inside which my brother and I would share. And
The holidays can also be somewhat stressful, and sometimes I find that this time of year with the extended darkness (and sickness) can bring out some less than stellar behavior in people. I certainly have to remind myself sometimes to practice patience and maintain a level head. After all, tis the season to show the best characteristics of yourself no matter how slow someone is driving in the left lane, or how long you are on hold with tech support trying to set up your new toy you got for Christmas. Please remind yourself that you don’t know what is going on in a stranger’s life or even the life of your peers. This is the season to be sincere and respectful, and for good measure throw in a dash of compassion and empathy. I for one am affected by the darker days of winter and the lack of vitamin D. I take supplements, and as I said before, sit in front of my SAD light. Still, most days that isn’t enough. I may find myself depressed, low energy, anxious, all the good stuff. Sometimes getting outdoors helps, or having coffee with a friend. As a chronic sufferer of anxiety I will tell you I have plotted when my anxiety is usually the worst and what can help it, and also what triggers it. It took me a very long time to discover that I was in fact suffering from anxiety and that the overwhelming feeling of fear and guilt following me around like a dark cloud wasn’t actually normal, and there are people who don’t experience this. But that there are methods and medications to cope.

Know that you are not alone. There are people out there feeling the same things, thinking the same thoughts and there is help if and when you need it. I know for me, since I’ve had kiddos, who are my pride and joy -- my SAD has gotten worst. I attribute this to not being able to climb mountains or ski valleys at my leisure. Being outdoors, having adventures, or looking forward to an experience perks me right up. With small children, lets be real. Even in the perfect weather conditions, being outside doesn’t last that long. Someone’s hungry, they’ve got to go to the bathroom, their foot itches, they’ve submerged their mitten in a mud puddle, they’re too cold, they’re too hot, they’re upset because the cat doesn’t want to play... Yes, I think I heard all these complaints in the span of one outdoor session. I know this won’t last many years as my kids grow older and have a longer tolerance for the outdoors and longer attention span to learn new things, so I am trying to take it in stride. The other element to this time of year, and to having little ones at home is sickness. Oh my god, kids are so germy. Nose picking, lack of personal space, sneezing/coughing into the open air spraying as much space as they can like their lives depended on it. I have had a perpetual cold since mid-October because sharing is caring, right? Not feeling well can also contribute to winter blues. Practicing healthy habits and staying home when contagious are so important. Load up on vitamins, eat nutritious foods, drink enough water, get enough sleep -- you know, all the good stuff we’re supposed to do regardless to time of year, stress level or general busyness. So take a deep breath with me, and remember the good times, say goodbye to the bad and move forward to a new year. Karen led the glove drive on her own the first three years, then invited the other REALTORS® in her office to participate. With the assistance of her Broker, Debbie White, and the other REALTORS® in her office, they have collectively been able to facilitate donations to include over 1,000 pairs of gloves. Wright said, “I would like to expand the glove drive to include donations to middle and high school students throughout Southeast Alaska.” Past donations have included gloves, hats, scarves, and monetary donations to purchase additional gloves. Juice of 1 lime 8 leaves mint 1 tablespoon sugar 2 tablespoons white rum 1 tablespoon coconut rum 1/4 cup canned coconut milk sparkling water for topping pomegranate perils for serving
1-2 teaspoons honey or organic sugar (optional) 1 lime, quartered 6 fresh mint leaves crushed ice juice of 1/2 a grapefruit 2 ounces Cachaça or white rum sparkling water, for topping.
In a large pitcher, muddle the lime juice, sugar and mint leaves until the leaves have broken down.
In a glass, muddle 1-2 teaspoons sugar or honey (if using), the quartered lime and mint leaves. Add the ice, the grapefruit juice and the Cachaça, gently mix to combine. Pour sparkling water over top.
In a blender, combine the white rum, coconut rum, and coconut milk and pulse until smooth. Pour over the mint/ lime sugar mixture and stir to combine. Chill until ready to serve.

5 TIPS TO HELP KEEP KIDS HEALTHY DURING COLD AND FLU SEASON (BPT) - It's here again - that time of year when everyone seems to unwittingly pass colds and other illnesses around. As every parent knows, kids can bring germs home from school and share them with the entire family, spreading illness at warp speed. In fact, 60 million school days are missed every year by children nationwide due to preventable illnesses like cold and flu. What can you do to fight the spread of illness and help keep your kids and you - healthier during cold and flu season this year? It's all about practicing healthy habits and making sure you have the right tools. Lysol's Here for Healthy Schools campaign is working with schools, educators and parents to help reinforce healthy practices and curb the spread of illnesses in the classroom. As part of the program, Here for Healthy Schools spokesperson, actress and parent Sarah Michelle Gellar shared five tips for keeping
your kids healthy during cold and flu season, and beyond:

"Your children pay closer attention to smaller things than you'd expect," says Gellar. She advises modeling the habits you want your children to follow. Demonstrate how you use a tissue to cover your mouth and nose when you sneeze. And be sure that they see you washing your hands often, especially before eating a meal. Actions do speak louder than words, so practicing what you preach can go a long way to instilling these healthy habits in your kids.

Holiday Cocktails and Duck Dinner
down, and roast for 10 minutes. Prick the duck skin again, cover the pan with foil and reduce the oven temperature to 275°. Roast the duck for about 3 hours longer, until the meat is very tender and most of the fat has rendered. (never throw away)
Meanwhile, in a large skillet, cook the backbone, neck and wing tips over low heat until well browned all over. Add the remaining chopped onions and cook over moderate heat until browned, about 4 minutes. Pour off the fat from the skillet and add the tomato paste. Cook, stirring until it begins to brown, about 3 minutes. Add the white wine and bring to a boil. Add the water, chicken stock, and sugar and simmer until reduced to 1 cup, about 1 hour. Strain the stock and skim the fat from the surface. Save this fat strained in a jar, it can be kept for weeks sealed and used to flavor dishes and sauces, or to cook your breakfast eggs in. It’s liquid gold! When the duck is tender, transfer the halves to a work surface. Halve each half; remove any vegetables, pockets of fat and loose bones. Transfer the duck pieces to a rimmed baking sheet, skin side up. Contributed by Amber King

Roasted Holiday Duck with Green Olives and Herbs de Province
(Serves 4: 2 light meat breasts and 2 dark portions of thigh and leg)
Freshly ground pepper Herbes de Provence (savory, thyme, basil, marjoram, lavender, parsley, oregano, tarragon, and bay powder with the rosemary and fennel) 1 tablespoon tomato paste 1/2 cup dry white wine 3 cups water
Canard aux Olives
1 cup chicken stock, preferably homemade
2 large onions, coarsely chopped
Dash of organic sugar
1/4 cup plus 2 teaspoons coarsely chopped flat-leaf parsley
1 1/2 cups pitted French green olives, rinsed (can substitute Spanish olives also just don’t tell a Frenchman)
1 tablespoon plus 1 teaspoon chopped thyme 8 garlic cloves, halved 2 bay leaves 1 large celery rib, sliced 1/4 inch thick One 5 1/2-pound duck, halved, with backbone, neck, wingtips, neck and gizzards reserved and legs tied. (while enjoying a cocktail in a ninja elf suit) cook more if you need, it’s amazing the next day also Kosher salt

Preheat the oven to 475°. In a small roasting pan, (you want the meat proportionate to the pan) spread half of the chopped onions, 1/4 cup of the parsley, 1 tablespoon of the thyme and the garlic, bay leaves and celery. Prick the duck skin all over with a fork and rub the duck with 2 teaspoons of salt, 1 teaspoon of black pepper and 1 teaspoon of herbs de Provence. Set the duck halves on the vegetables, cut sides
Strain the juices from the roasting pan into a saucepan and skim off the fat; boil the strained juices until reduced to 1/4 cup. Add the strained stock and the olives to the saucepan and simmer for 10 minutes. Season the sauce with salt, pepper and herbs de Provence. Broil 10 inches from the heat for about 5 minutes, or until the duck is hot and the skin is crisp. Spoon the sauce onto a platter and set the duck on top. Sprinkle with the remaining 2 teaspoons of chopped parsley and 1 teaspoon of thyme and serve. The recipe can be prepared through Step 4 up to 2 days ahead. Cover and refrigerate the duck and sauce separately. Allow the duck to come to room temperature before broiling it. Also delicious with Goose and Turkey or game hens, but really just get the duck, it’s incredible. Enjoy with a Cotes de Provence wine or Oregon Pinot Noir, because you’ve already had cocktail hour ;) Season’s Greetings from my table to yours!
