Letter from the Publisher It is with great pride that I announce the birth of our son, Dylan! What a wild month it’s been, he’s already kept us on our toes. Dylan came into the world too fast for his own good. Like his sister, he just couldn’t wait to see the world. Because he was born a preemie, and needed some additional help,

it was decided that he and I would be medevac’d to Providence Medical Center in Anchorage twenty hours after his birth. I know I’ve written a lot about this before, but get your medivac membership, better yet get multiple! In our particular situation, though we are AirLift Northwest members, Providence wanted to send their own specialized NICU team, partnered with LifeMed. Lucky enough for us, we were able to sign up “bedside.” Not all Medevac companies offer this, which is why I say get at least one membership in advance. Upon our arrival, we were whisked away to the Critical Care wing of the NICU and the process of letting little Dylan grow and heal began. I cannot say enough

wonderful things about this facility and staff. I am eternally grateful for the way they treated us, explained everything to me, usually more than once as I was exhausted. The community of parents I met in the NICU was also amazing. There are so many miracle stories I’ve heard, and when other parents heard my story about staying in the NICU solo while my husband stayed in Juneau to tend to our three year old, they jumped at the opportunity to offer me help. I was asked several times if I need anything by many moms who lived in Anchorage, who also had a baby admitted. I am lucky enough to have family here and they also jumped in and took great care of me. I know I am painting a rosy picture of this experience, and some of it was. But let me tell you, being in the NICU was also very tough for me. On top of the worry you have for the baby, there is always that lingering lack of control you have or feel over what’s happening at home. Because I can be a control freak, especially when it comes to my kids and their wellbeing, being away from my daughter was very difficult for me. Up until this experience, I’d spent one night away from her, and now that number is eleven, which actually felt like a month. Missing her, and also letting go of the reins and handing over the day-to-day tasks to my husband was hard. Even though I had no doubt in the world that he would do an amazing job, it still made me feel helpless when she wanted me, needed me, needed something. On top of being in my own self-centered worry bubble, there are also sad situations in the NICU that are hard to avoid either seeing or hearing. There are very critical babies of varying gestations, babies born that have to withdrawal from narcotics, parents who have nowhere to go after discharge, or people who don’t get to take their baby home with them. Going through this experience was thick with

emotion, not to mention the shift in hormones after giving birth, lack of sleep, and worries of the unknown. I will never forget the feeling of walking down the hallway and hearing babies excessively crying, alone in their rooms until the nursing staff could get to them. I felt helpless and sad and wanted to run into every room, gather up the babies and hold them all. Other experiences of the NICU included “scrubbing in” every 6 hours which entails washing all the way up to your elbows with surgical soap for two minutes. Two minutes doesn’t seem like a long time until you try to wash your hands or brush your teeth for that long. Hair must be worn up unless it’s shoulder length. When you enter or leave your room you “gel

in” with more antibacterial soap. This is all done for good reason. There are babies with varying levels of immune systems, ailments, gestations and one cannot be too careful. This experience has opened my eyes to what a NICU parent experiences, both triumphant moments when milestones are reached, and disappointing moments when you feel like you are taking one step forward and two steps back. Lucky for us, Dylan rebounded relatively quickly without a whole lot of interventions. We did have to tub feed, and “snip” a tongue tie plus many glucose level checks. We were discharged early on Easter Sunday and flew home just in time for the Easter egg hunt. Anna Hoke is the graphic designer and owner of Southeast Living Magazine. Primarily, I’m offering regenerative injection therapies – prolotherapy and platelet rich plasma (PRP). What makes my use of these injections so different from many standard medical clinics doing similar injections is that I still see and treat the person as a whole. You are not your pain alone and your pain is most often not the result of a simple joint dysfunction. negative impact on our bodies, including joints. It’s easy to think sugar consumption is not a problem for us if we are not diabetic, dealing with metabolic syndrome or obesity. What you may not know is that research links sugar consumption to conditions as varied and serious as cancer and heart disease to mood disorders and immune suppression, just to name a few. The list of ill effects of sugar on the body is incredibly lengthy. Cancer is the “Big C Word” that grabs everyone’s attention. However, this isn’t necessarily new information about the role of sugar in cancer. A review of studies in this area was published in the journal Integrative Cancer Therapy in 2003 because mounting evidence between insulin and the etiology as well as the prognosis in colon, prostate, pancreatic, and,

particularly, breast cancer were becoming apparent. Not only were they finding that sugar may contribute to cancer growth, but it was interfering with treatment. What else is sugar interfering with? Sugar is highly addictive. Sugar raises our neurotransmitter levels: dopamine, serotonin, and norepinephrine. I first became aware of this claim during college when I read the dietary classic by William Dufty, Sugar Blues. It was published in 1975. The years since his publication have only confirmed that Americans can’t seem to get enough and are paying the price with their health. According to the Centers for Disease Control, in the last 30 years, obesity in children has more than doubled and in adolescents rates have quadrupled. These children then go on to have a nearly 90% rate

o f becoming obese adults. Over one-third of adults in the United States are currently obese. Alaska ranks 24th highest adult obesity rate in the country. Texas is finally bigger than us in this category – coming in at # 11 in the nation for the highest percentage of obese adults. For once, we should just let Texas keep that “bigger” title. This is an epidemic with serious health consequences.

Switching to a “-Free” Diet in Southeast Alaska Editorial By: Meg Frances-Grunow Hartley

You’ve

heard the tales. People all over seem to be proclaiming the benefits of learning how to eat for your body, making elimination diets all the rage; cutting out things like gluten, dairy, sugar, nightshades, and other potential allergens and toxins to see how it affects their health. Many are reaping exciting benefits, feeling better than they’ve felt in years. When it comes to diet, it seems things aren’t as simple as food groups and calories. Personally, I was faced with a health crisis before I finally took the leap. After some research on what my condition might be, I cut out gluten and was stunned with the results. It felt like someone took weights off my body and cotton out of my brain, it was a

revelation. (Apologies to anyone I initially teased for it. You win.) I later learned that I have a couple of MTHFR mutations, which are actually pretty common, and would likely benefit from cutting out dairy as well. I did indeed. I also try to keep my diet clean, avoiding weird chemicals and ingredients I can’t pronounce as often as possible. Sugar got largely axed, as did alcohol and other carbs. I watch my nightshade consumption. Caffeine’s gone. Though I’m still very challenged by health issues, the benefits reaped from these changes has helped worlds – and also resulted in dropping 40 pounds, so that was nice! And though the transition wasn’t nearly as hard as I thought it would be, I certainly could have used the following advice:

Buy ingredients, not packages. The idea of switching how you eat is always intimidating, but can feel all the more so in Southeast Alaska; where there’s no Whole Foods filled with “-free” items. But worry not – you don’t need them. The key is to focus on ingredients that you can have, and taking advantage of all the combinations they can create. (And I promise, there’s more than you think.) Prepackaged food is expensive and often just as toxic as the things you’re avoiding. If you do buy a package, read the ingredients. Sometimes there’s no time to cook, or it’s just not an appealing option. Be sure to look at the ingredients first when considering a packaged purchase, just because an item advertises that it’s healthy or “-free” doesn’t

The taste of red gummi bears, once a top favorite, now reminds me of cherry cough syrup. Your palette will adjust to your diet changes, making things yummy that were once, “eh,” and former treats positively vomitatious. Watch the condiments and sauces, they’re not so innocent. Things like

ketchup and soy sauce may seem like an innocuous afterthought, but they often contain surprising allergens and high amounts of sugar. (Also, F o l l o w Your Heart ranch is sugar and dair y-free w h i l s t also being delicious and available in many Southeast Alaska cities.)

Don’t be afraid to ensure that you’re not being served the things you’re avoiding. People who aren’t familiar with your needs may not take them very seriously. A server who’s numb to caffeine may refill you with only 72% confidence that it’s really decaf. (And then your nervous system turns into chaos! Just me?)

But herbs usually are. Work that spice rack! Adding herbs and spices helps to add variation to a limited diet. Dill today, thyme tomorrow.

There’s more available in restaurants than you think. When dining out, don’t fret about a lack of “-free” labeling on menus. Look for items that naturally don’t contain the things you’re avoiding.

Hot tip: Mexican, Chinese, and sushi menus are usually full of non-offenders. I’m not going to lie, the sight of a grilled cheese sandwich still makes me want to weep. But it really is so much better than I thought it would be. Finding out what diet choices actually benefit me has changed my relationship with food completely; though I’m now more limited than I’ve ever been, eating gives me more satisfaction than I’ve ever gotten. Fueling my body with what it needs just feels better than guilt-laced treats taste. Ill health makes life so much less delicious, making changes really is worth it. You got this.

Summer Solstice Party Favorites

(Tip use your Vitamix to blend regular sugar into powdered sugar, you’ll be smitten!) Combine half the liquid with the gelatin and the vanilla extract in a small saucepan. Heat over low heat to dissolve the gelatin in the liquid and keep heated. Stir in the vanilla extract.

Solstice

is always a reason to celebrate, and probably not the first article I’ve written regarding celebratory seasoned foods, and surely won’t be the last. I’m fortunate enough to be close to the best Solstice party on the west coast, the Fremont Arts Council Summer Solstice Parade! If you happen to be in the area or looking for amazing inspiration to start in your town I highly suggest it! Along with an amazing display of color and sun-themed artwork, parades are the reason for the season, food. Traditionally all seasons were celebrated with food, dance, music, and reverence for changing of routines. Celestial foods that were bright and round are always favored at Summer solstice and I wanted to celebrate our local Alaskan bounties with a few warmer climate additions. I hope you find celebration during this solstice and reasons to gather with friends, eat, drink and be merry.

Avocado Smoked Salmon Soup

Can be prepared in 45 minutes or less but requires additional unattended time. Makes about 5 cups, serving 6. 2 avocados (preferably organic) 2 tablespoons fresh lemon juice 1/2 cup sour cream 3 to 3 1/2 cups chicken broth 1/4 teaspoon Tabasco 2 ounces smoked salmon

Peel and pit the avocados and in a blender blend them with the lemon juice, the sour cream, 3 cups of the broth, and the Tabasco until the mixture is smooth, adding enough of the remaining 1/2 cup broth to thin the mixture to the desired consistency. Transfer the soup to a bowl, season it with salt and pepper, and chill it, its surface covered with plastic wrap, for 1 hour, or until it is cold. (The soup will discolor if kept for more than 6 hours.) Stir half the salmon, chopped, into the soup, divide the soup among chilled bowls, and garnish it with the remaining salmon, cut into strips.

1 14 oz, can artichoke hearts, drained and rinsed well

Using a #60 scoop or a tablespoon slip the batter gently into the oil. Do not overcrowd and do not let them brown too quickly. Reduce the heat if necessary.

16 to 20 fritters

1/2 medium sized onion, skin removed and trimmed 3 garlic cloves, peeled 1 1/3 cup garbanzo/fava flour 1 large egg kosher salt and fresh ground black pepper 1/2 teaspoon baking powder 1/2 teaspoon white truffle oil (optional) 3 teaspoons salted capers, rinsed and minced vegetable oil for frying

Add all the ingredients, except the capers, to a food processor and puree until you have a smooth paste. It should still be loose, not stiff. Stir in the minced capers. I like to use a wok to fry them but a deep pot would work well here too. Put enough oil into the pot so the fritters will float without touching the bottom of the pan. Just make sure the pot is no more than 1/3 full of oil. Preheat the oven to 250 degrees. Heat the oil to 350 degrees or if you do not have a fry thermometer drop a little dough in and if it pops right back up

When they have finished cooking remove them to a paper towel-lined plate or ovenproof dish to drain. Slide them into the oven to keep warm while finishing. Repeat the above step until all the batter is gone. Serve immediately.

Earl Grey Marshmallows

1 tbsp Cream of Earl Grey tea leaves (or strong London Fog, seep earl grey in cream but not too long to bitter) 1 ½ cups boiling water 4 tbsp gelatin ½ tsp vanilla extract ¾ cup tea 2 cups organic sugar 1 tbsp honey ¾ cup tea 2 egg whites, at room temperature

Pour the boiling water over the tea leaves in a strainer and let steep for 5 minutes. Remove the leaves and discard. Divide the liquid in half.

Combine the remaining water, sugar, and honey in a large saucepan, preferably one with high sides. Heat until the sugar dissolves, and attach a candy thermometer to the side of the pan. Boil until the thermometer reads 250°F. Do not stir—disturbing the mixture will encourage it to re-crystallize, which will result in a rock hard clump of sugar that will be really hard to clean up. The syrup will hold at boiling, 212°F, for quite a while before heating further as all the water evaporates off. While the sugar mixture bubbles away, beat the two egg whites in a clean glass or metal bowl until they form medium-stiff peaks. When the sugar mixture reaches 250°F, whisk in the gelatin mixture. Be careful when doing this, as the temperature difference will cause the mixture to bubble up like mad. You need to work quickly at this point. With the beaters running, slowly add the sugar/gelatin mixture to the egg whites, beating until the mixture is thick and silky—it’ll take a while (at least 5–10 minutes). Quickly transfer the marshmallow mixture to the icing-sugared pan, spreading it out with a silicone spatula. Leave to set for at least 2 hours, and then cut into cubes with a lightly greased knife. It’s a good idea to cut some big 1in cubes, suited for s’mores, and some smaller ½” cubes for cocoa. Clean up is pretty easy—just boil everything, and the marshmallow goo will dissolve. Best enjoyed warm with organic fair trade chocolate and graham crackers, late into the night as you sing and dance by the fire. From my Solstice Party to yours, enjoy
