Signs of Spring

Letter from the Publisher Hello May! It’s finally that time where we are spending more of our time outdoors. There are a couple signs of spring in our household that I’m sure are common in yours too, so please take a moment to relish with me. Window Cleaning: by the time spring rolls around, our house windows are filthy. Tron, our cat, is usually outside pawing the windows to get our attention to be let inside. Our toddler is usually on the other side, face pressed against the glass, wanting to get out. When the sun finally shows up and shines through our windows, boy do we see the dirt. We see the dust, finger and paw prints, forehead and nose marks and it’s a clear sign that it’s time to clean those windows! I grew up using Windex but I’ve heard of vinegar concoctions that do wonders. They are nontoxic and better for the environment, so we will be trying that this year. Driveway clean up: When we finally get

“warm” weather, I try my best to busy myself outside. Sometimes it’s not quite warm enough to wash the car, so instead I get out the broom. I sweep the dirt, dust, pine needles, and gravel that collects on our driveway every winter. This year we got a miniature broom so that our kiddo could expend some energy with us. We make sweeping into something fun with cheering, sound effects and races. Budding branches: If you need some spring inside the house, it’s fun to find some branches and “bud” them indoors. They smell great, and will give your home a spring feel. Simply find your favorite deciduous tree, preferably one that may have taken a tumble during the winter that is still clinging to life so that you’re not stripping the branches of a healthy tree, unless you must. Bring them inside and place the branches in a vase full of water. Sometimes said branches can have bugs so watch out for that. Taking down lights: I’m ashamed to say

that we are usually pretty bad about taking down our Christmas lights in a timely manner. We usually unplug them so they are unseen to someone passing by, but we don’t actually take them down and store them until spring time.

Yard work: I know I’ve talked about this before but I love yard work on a rainless day! Thatching, raking, planting, water, mowing… you name it, it’s an enjoyable spring and summer time activity. Foraging for wild edibles. I had a good friend and roommate who’d bring home wild fiddleheads, spruce tips, mushrooms, and make a mean stir fry. I am going to try and be adventurous and forage when the timing is appropriate for said plants and fungi and see what I come up with. Whatever your spring traditions or rituals may be, happy spring to you and yours!

SUNLIGHT Spring has finally arrived and in Alaska that means not just warmer days, but longer more light filled days! Yeah! I am a huge fan of more sunshine! It’s easy to take the rising of the sun and its presence in our daily lives for granted because most of us have never experienced anything other than that predictable rhythm. Many scientists would argue that the sun is the single most important piece of our physical world; that without it, all life on earth would literally cease to exist. The sun provides the entire planet with not only the energy required to sustain life, but its warmth, radiation and light influence our atmosphere, climate and weather patterns. As far as impacts of sun exposure on human health, our culture has mostly focused on the potential harm caused by too much UV radiation (UVR). There are also very powerful positive impacts on our health due to appropriate and sufficient exposure to sunlight. That is a topic for another article. What I want to focus on in this writing is the impact light has on your sleep. Sleep quality and quantity is a foundational determinant of health. A healthy home is a home that is designed to support your ability to sleep and sleep well. I’m going to give you a very simplistic overview of how light exposure impacts sleep and just 10 basic rules you can follow to make sure your home’s sleep environment encourages good sleep. We have very photo-sensitive cells in the retina of the eye and even in our skin that send signals to our brain that help set our circadian rhythms. A Circadian rhythm is roughly defined as a 24 hour cycle that regulates the physiological processes of most living organisms – including humans. These processes are all encompassing in that they manifest in physical, mental, emotional and behavioral ways. In fact the impact of our circadian rhythm on our health and the ways it can be altered are so complex that a whole field of study, called chronobiology, is devoted to just the study of circadian rhythms. Disorders of the circadian rhythm have been linked to serious disease states and most notably sleep disruption. Circadian rhythms vary with our age too – which is one reason teenagers actually are more naturally inclined to function well later and

should be allowed to start their day (and school) later in the morning. Circadian rhythms are known to most strongly respond to light and dark exposure. The most basic way to explain the influence of light exposure on sleep is that when light hits the photosensitive cells of the retina, it signals areas of the brain, many of which are housed in the hypothalamus. The hypothalamus can be thought of as a “gate keeper” of sorts, releasing and inhibiting its own hormones, neurotransmitters, etc. as well as signaling other parts of the brain in order to maintain homeostasis or balance of body functions. It essentially is the connection between the endocrine and nervous system. Anyway, the light signal causes a rise in body temperature, raises the release of the hormones like cortisol and histamine as well as the neurotransmitters that stimulate arousal. It conversely inhibits the part of the brain that house and release melatonin, the hormone primarily responsible for inducing sleep. Sunlight also stimulates the release of serotonin, a mood enhancing neurotransmitter, which is why periods of darkness seem to be associated with a type of depression known as SAD (seasonal affective disorder).

One example is that we know melatonin has been shown to be important in supporting the immune system (including suppressing auto-immunity, cancer and inflammation). Lack of sleep is linked to increased rates of diabetes, obesity, cognitive impairment, mood disorders and more. Adequate sleep on an appropriate cycle keeps the body healthy both short and long term. So what to do for better sleep? Here are just 10 basic rules for a better sleep environment: 1. Make sure to expose yourself to bright sun light first thing in the morning and throughout the day. Ideally, you want to get up with the sun. Daylight exposure only from a window is likely not sufficient. Make sure to get outside and let the sun hit your eyes and skin. Consider a light therapy devise if necessary. These vary greatly, so ask your physician for their recommendation for a safe and effective type. 2. Get to bed early as well. Start a ritual of moving toward relaxation about 2 hours before bed. The body is known to get the most restorative work done while sleeping between 10pm and 2am. So, be in bed and asleep in time to hit that natural cycle if possible. 3. Your bedroom should be clean and clutter free with a good mattress and pillows that are non-toxic and supportive of good sleep posture.

organic, stemmed 1/2 cup powdered sugar (use that blender and make fresh!!) 1 (6-ounce) can frozen limeade concentrate, partially thawed 1/2 cup tequila (I like Casamigos, Corralejo, or Amigos) 1/4 cup orange liqueur (Cointreau, Grand Marnier, Curacao, Tripple Sec etc) Garnishes: lime rind curls, fresh whole strawberries, pretzels

the month of Mother’s Day I always end up cooking way too many deserts, fresh fruits coming into season, gardens underway, and we are on the tip of summer! I thought putting together a few of my favorite boozy sweet treats for the month with a South of the Border feel might be fun and two of them incorporate a ton of alcohol. I

love cooking and especially baking with lots of booze! That is where most of my liquor cabinet regularly ends up, in the oven, or on the stove, you just can’t duplicate the flavors and depths that it adds. I have half a bookshelf of boozy food recipes, beers, wines, from all continents and ethnicities. As long as humanity has been brewing and concocting cordials we’ve been adding

it to our food as well. Enjoy this Tres Dessert collection. From my Maypole to yours.

Kahlúa Brownies Recipe 1 ½ pounds of 60% cacao chocolate 1 cup of butter, cut into pieces and at room temperature 6 eggs, room temperature 2 cups of sugar 1/4 teaspoon of salt 1 tablespoon plus 1/4 teaspoon of Kahlúa 1/4 teaspoon of vanilla extract 1 1/2 cups of all-purpose flour

Method: Lightly grease a 9x13 pan. Preheat the oven to 350 F. In a double boiler or using a bowl over a pot of simmering water, melt the chocolate and butter together. With an electric mixer, beat together the eggs, sugar and salt. Add the chocolate mixture and the vanilla extract and Kahlúa. Mix until smooth. Slowly sift in the flour. Bake for 45-55 minutes or until a toothpick comes out clean. Place on a wire rack to cool for thirty minutes

Spiked Strawberry-Lime Ice-Cream Pie Freeze Time: 3 hrs. This pie will soften quickly due to the alcohol content, which lowers the freezing temperature of the ice cream. Yield: Makes 10 to 12 servings 4 cups pretzel twists 1/2 cup butter, melted 2 tablespoons granulated organic sugar 1 (1/2-gallon) container premium strawberry ice cream (super important to find organic strawberry products they are one of the most heavily contaminated and sprayed with pesticides 1 (16-ounce) container fresh strawberries

Method: Process first 3 ingredients in a food processor until pretzels are finely crushed. Firmly press mixture onto bottom of a lightly greased 10-inch spring form pan. Bake at 350° for 10 minutes. Cool completely in pan on a wire rack. Let strawberry ice cream stand at room temperature 20 minutes or until slightly softened. Process strawberries and powdered sugar in food processor until pureed, stopping to scrape down sides. Place ice cream in a large bowl; cut into large (3-inch) pieces. Fold strawberry mixture, limeade concentrate, tequila, and orange liqueur into ice cream until well blended. Spoon mixture into prepared crust in spring form pan. Freeze 3 hours or until firm. Let stand 10 minutes at room temperature before serving. Garnish, if desired. Strawberry-Lime Ice-Cream Pie: Omit tequila and orange liqueur, and add 1 (6-ounce) can frozen orange juice concentrate, partially thawed. Proceed with recipe as directed. Let stand 15 minutes at room temperature before serving. Garnish, if desired. Continued on page 16

Bake in preheated oven for 45-50 minutes, until a toothpick comes out with some loose crumbs on it.

Method: Preheat oven to 350 degrees F.

Let the cake cool completely.

Grease 9x13” baking pan with butter or cooking spray.

Once cake is cooled, combine condensed milk, evaporated milk, and chocolate milk and stir well to combine.

Combine hot coffee and butter in medium bowl, stirring until butter is melted. If the butter doesn’t melt all the way, microwave for 30 seconds.

1/4-1/2 teaspoon cayenne pepper (depending on how “spicy” you want the cake - I used 1/2 teaspoon) 3 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 8 ounces semi-sweet chocolate chopped

For the milk mixture: 1 cup sweetened condensed milk 1 cup evaporated milk 1 cup chocolate milk For the whipped cream topping: 2 cups heavy whipping cream

Recipes

In a large bowl, combine eggs, milk, vanilla, and sugar, stirring until well combined. In a medium bowl combine flour, cocoa powder, cinnamon, cayenne pepper, baking powder, baking soda, and salt, stirring until well combined. Add flour mixture to egg mixture, stirring until about halfway combined, then add coffee mixture, stirring until well combined. Stir in chopped chocolate. Pour batter into the pan.

Poke lots of holes in the cake with a toothpick or a fork - the more the better, so it soaks up all the milks! Pour the milk mixture over the cake. Refrigerate at least an hour. Make whipped topping by combining heavy cream, cocoa powder, cinnamon, and whipping until stiff peaks form. I use my electric mixer for this but if you want a good arm workout - use a whisk and your arm! Spread whipped topping over chilled cake. Dust with powdered sugar, cinnamon, and a sprinkle of more cayenne, if desired! Slice and enjoy!
