Letter from the Publisher Welcome to November! This time of year I usually find myself writing about the holidays, parties, dinners and family time. The theme is usually upbeat and jolly. I am going to deviate from that a little bit so be forewarned. Almost 5 years ago our house was robbed and with the increase in criminal activity and burglaries I’ve read about this year, I just cannot get it out of my mind. Five years ago in December, I came home from the gym after only being gone from the house for an hour, short gym day, I know. I burst through our unlocked front door and went directly into the shower. A family member arrived shortly after for a preplanned shopping trip, and before we left we spent a good half an hour looking for my wedding and engagement rings. I chalked it up to being in a rush and vowed to look for them after we went shopping. I arrived home and as I walked into the living room, I realized all the wrapped gifts from under our tree were missing. I
immediately tried to call the police and in my haste, shock and
revelation that my missing rings were probably with the missing gifts, I actually opened my calculator app on my phone and typed the number in while staring blankly waiting for it to ring. I realize that sounds very odd but it is a testament to how shocking and violating it is to realize someone has been in your house, perhaps while you were showering or doing other various

My husband and I just bought a house and had used every single penny we had on a down payment, we lived for months with empty rooms because we couldn’t afford to furnish them. I’d recently left my secure state job and started this magazine and anyone who’s started a business knows that in the beginning it can be rough, stressful and those ends don’t always meet. My husband had been laid off from his prior job and was months into a new one that didn’t pay as much and the final blow, he’d just had knee surgery the month before and we were paying off medical bills. We were in debt, like use-thegiftcards-from-your-wedding-tobuy-peoples-christmas-presents type of debt. I finished up my phone call to JPD and started to make my way around the house. I discovered that every single room had been sifted through. Odd doors were left open, an iPad that had been under a bed was gone, my professional camera and lenses were missing... Tools, purses, keys, were gone. Now, the moral of my gloomy article. We prepared our house and ourselves after this incident and you should too with these relatively inexpensive and easy tips.

Dogs: We don’t have dogs but luckily we have neighborhood dogs that alert us to any suspicious activity, bear or otherwise. This isn’t always a blessing when a bear decides to stroll around at 4am but at least you know something is going on. Awareness: An unfortunate part of this burglary is that it has changed me in ways I cannot revert. I watch every car that drives down our street from my home office window, sometimes getting up, grabbing my camera and watching them to the end of our cul-de-sac. If I get spooked, I look around for the nearest object I can use to project myself and the most efficient escape route. On the rare occasion that my husband is out of town, I will check the house over before bed even if the doors have been locked for hours and when I am in my room I will lock the door and wedge a chair under the door handle to insure I am safe while asleep. I realize most of the paragraph seems like overkill, and it is but that’s personally how I think after this incident. Again, I apologize for this window into the not so glamorous parts of life and the holidays but it’s smart to be safe, and it’s a perspective into what a nonviolent “materialistic” crime can do, burglaries do create victims, not only with a monetary or material loss but also a loss in the feeling of being safe. SHOES OFF PLEASE With the holiday season starting, you likely will have a lot more traffic through your home. Prepare now to make room for all those shoes and boots! It’s common practice in many countries (like Japan and Sweden) to remove your shoes when you enter a home. Somehow this tradition has not become well rooted in American culture, but it should be. One of the things I love about my girls Montessori school is that their outdoor shoes are removed at the entry to the classroom and only indoor shoes or slippers are worn while inside. This is great re-enforcement of a habit we have for our own home. As a child, my mother had a rule. Shoes were not to be worn in the house. We had a “mud room” at the back door entry - that was where they belonged. If we came in the front door or through the shop, we were still supposed to remove them at the door. Guests, who most commonly used the front entry, were also asked to remove their shoes there. I don’t actually remember her specifically requesting people to take their shoes off, unless they asked if they should. The pile of shoes was a pretty good indicator of the preference. I remember as we got older, this rule became one that was more and more often broken by us kids, especially if no adult was present to make sure it was enforced. Some how, Mom, still seemed to know we were not consistently removing our shoes. Now, as a mother and homeowner, I know exactly how she knew. Shoes are dirty! Shocking revelation, I know. Most of us probably think of “dirt” as fairly benign, however the world most of us walk around in is not just simple, good ol’ fashioned organic top soil consisting of disintegrated rock and decaying vegetation. Believe it or not, studies have actually been done to evaluate just what sorts of things are coming into your home via your shoes; it is not appealing. Here is some of what they found: 1) Bacteria: a shoe company sponsored a very small study at the University of Arizona with the intention of determining if washing shoes as recommended by manufacturers would reduce the levels of bacteria on the shoes. The study showed that bacteria were prolific after only 2 weeks of being worn and included such notable strains as “E. coli, known to cause intestinal and urinary tract infections, meningitis and diarrheal disease;

7) Infants on floors: Some health experts estimate that children under the age of two put their hands in their mouths on an average of 80 times an hour. This is especially true for infants and children whose feet are still growing. It remains true for most adults considering that many foot pain syndromes and disorders are caused or exacerbated by our footwear. Being barefoot or in sock like slippers allows all the muscles and bones of the foot to move through their more full and natural motion. Bare footedness also makes stimulation of the bottom of the foot by the ground or floor possible, encouraging a type of reflexology caused simply by the act of walking. One of my very favorite biomechanist, Katy Bowman, M.S. at Nutritious Movement has a couple resources she has written that address the idea of freedom from footwear and the anatomy of a shoe. The first one to read is her newly updated:

Sharing this woman’s work is the real health pearl in this article, so please make sure to look up her website and read through her work – it will dramatically challenge the way you think about your body shape and function in relation to movement or lack thereof. 9) Mental & Emotional Health: Lastly, I want to remind you that your home should be a haven for peace, especially around the holidays. There is so much to the psychology of creating space for a healthy mindset by removing your shoes. It can symbolize leaving your days troubles and embracing relaxation. A dedicated area to neatly put them will help contribute to the zen that a less cluttered living area creates. So consider taking the time to implement a new healthy home tradition this holiday. Create the space and initiate the request that all who enter leave their shoes and their cares at the door.

quite completes a house like custom-designed furnishings — a dining room table made from an amazing slab of wood, kitchen cabinets designed to your specifications, or a unique set of corner shelving no furniture store offers. Such choices will be on prominent display in the main lobby and the Hickel Room of Centennial Hall during the 34th annual Alaska-Juneau
Public Market over Thanksgiving weekend. The two Juneau-based custom wood craftsmen participating in this year’s Public Market are Reid Harris of Northern Edge Craftworks and Dean Graber of Rainforest Custom Woodworking. “The only consistency with my customers is they each want something different,” says Dean Graber. “Everyone here is used to the mass-produced products found in furniture stores. The

people who come to me want higher quality, not the ordinary, something that fits their personalities and their homes. My customers get involved as much or little as possible, just depends. I look at their house, get a feel for what they want, draw it up, set a price, maybe tweak the design.” Graber will display an intricately designed office desk, a variety of tabletops, as well as turned items and cutting boards. He uses local woods like spruce, yellow cedar, some hemlock, but also a variety of difficult to find hardwoods that he gets from suppliers in the Midwest where he once lived. “We also use reclaimed materials like wormy chestnut from barn wood — we get it, clean it up and re-use.” Graber is especially fond of the Asian mahogany he recently reclaimed from Boeing crates that come in 1.5-inch thick strips of finger-jointed, 17-foot lengths. “Just gorgeous when you put a coat of oil on it.” Reid Harris, born and raised in Juneau, is dedicated to using regional lumber, and one of his favorite raw materials is the Chichagof yellow cedar that he gets
from Wes Tyler of Icy Strait Lumber in Hoonah. “Yellow cedar is the best. It is one of the hardest and longest lasting of the softwoods, and has a lot of character,” he says, referring to the grain, knots, and color that can produce compelling patterns. On the Northern Edge Craftworks website video he narrates, Harris says, “Every tree tells a story; we accentuate the natural beauty of regional lumber, the design inspired by the raw material. We aren’t so much crafting the wood as interpreting it.” Harris prefers timber from selective harvests. The most sustainable timber he uses is dead standing yellow cedar that is becoming all too common due to climate change. “Cedar is declining throughout the region,” he says, “but it is so resilient that dead standing cedar, some of which may have been dead for 100 years, is often great, easy to mill wood.” For a local corporation Harris recently produced a 14-foot long boardroom meeting table of straight-grained, book-matched Sitka spruce (book-matched means two mirrored, joined slabs from the same cut).
Reid Harris heats a brand he’ll apply to the underside of a coffee table. Next to the brand he will then inscribe the exact GPS coordinates of the selectively harvested tree that produced the wood. Using Google Earth, it is possible to view the exact location where the tree grew.
Another table he produced can be seen in Kindred Post at the corner of Front and Franklin — this one six-feet long and made from reverse matched red alder cut from a 30-inch wide trunk, one of the widest cuts of local alder Harris has ever worked with. Northern Edgeworks is co-owned by Reid’s sister Heather, a trained and skilled industrial designer. Adam Dimmitt of Eight Zero Technologies fabricates many of the metal parts Heather designs. Adam of Eight Zero Technologies and Kindred Post’s Christy NaMee Erikson will also participate in this year’s Public Market.

The choice of materials, design, and finish is entirely up to the clients of Northern Edge Craftworks and Rainforest Custom Wood Working. A visit to the Public Market will be an opportunity to see and handle excellent examples of black walnut, Asian mahogany, and reclaimed chestnut at Graber’s location in the main lobby, and the many variations of regional raw materials in the Hickel Room where Harris will be set up.

Both will have products that range from easily affordable cutting boards, coasters, pencil holders, to… well, the sky’s the limit when choosing super-select hardwoods that can cost up to $40 per board foot. Harris and Graber will join about 150 vendors from throughout Alaska and the Pacific Northwest, all of whom will be on hand to sell products ranging from the practical, to the wearable, to the many crafted items suitable for household décor. The Public Market begins Friday, November 25, and will be open from noon to 7 pm; and on Saturday and Sunday, from 10 am to 5 pm. Holiday entertaining tips guaranteed to help hosts impress guests (BPT) - The holiday season is packed with social events big and small. What makes some more memorable than others? The extra thought and special touches from the host or hostess. Cookbook author and entertaining expert Gaby Dalkin recently teamed up with the Paper & Packaging - How Life Unfolds campaign to share how you can make a big statement this season with surprisingly little effort. These five entertaining tips are guaranteed to help you create a one-of-kind party, leaving guests impressed and full of holiday spirit.
Conquer holiday stress with to-do lists To reduce stress, stay organized
and ensure you maintain a merry attitude, use printed templates to create handwritten holiday party to-do lists. “I start my to-do lists weeks before the celebration and break them down by day,” Dalkin says. “A few days before the big event, I stock up on beverages. Two days before I buy all the shelf-stable ingredients. The day before, all the produce goes into the fridge, and I make any sauces or appetizers that can rest in the fridge overnight without being affected. And then, the day of the party is broken down by the hour. If you’re making a roast, start it in the morning. A salad can be prepped ahead of time and dressed before serving.”
Elevate gifting with personalized presentation
Nearly half of Americans feel that gift presentation enhances the gift they give or receive, according to a Paper and Packaging Board survey. That means if you want to impress, don’t skimp on gift presentation. “I grab a few rolls of brown kraft paper and make it special,” Dalkin says. “If I’m sending a present to someone
who loves food, I’ll grab some stamps with fun food on them and stamp the paper so it’s customized for that individual. If it’s my younger niece, I’ll stamp it with some hearts. These small gestures make a big impact.”
Use a creative approach to assigned seating
Assigned seating is particularly helpful when entertaining large groups. It takes the guesswork out of sitting down to dinner and keeps the evening flowing smoothly. It’s also an easy way to add festive style to the tabletop. “If I’m entertaining for more than 10, I’ll make little fold-over name tags out of cute cardstock,” says Dalkin. “I’ll punch a hole in the paper name tag and weave in a bit of rosemary, paper ribbon or a fresh flower to give it an extra pop.”
Add pizazz with a Champagne bar
The survey also found that for approximately half of Americans, a cocktail bar stands out as a key component for an unforgettable holiday party. Add an easy yet elegant touch to any holiday gathering by setting up a Champagne bar. Simply chill a few bottles,
place on a bar cart and add bowls of fresh berries and carafes of fresh squeezed juices. Include handwritten cardstock labels near each ingredient so your guests can mix and match to their hearts’ content. This no-fuss station encourages guests to make their own cocktails at their leisure, giving the host extra time to catch up. Plus, Dalkin adds, “I’ve found that Champagne bars are often one of the most photographed elements of the night.”
Send guests home with a little something homemade
Frozen cookie dough is one of the trendiest homemade gifts of the year. Just whip up your favorite batch of dough, tightly wrap it in parchment paper and freeze. Then add some holiday ribbons, a personalized paper label and handwritten baking instructions. “Recipients can slice and bake at their leisure and file the recipe card for years to come,” says Dalkin. “You can make the same thing for everyone, or perhaps a few different batches to suit any sweet tooth. I think of it as a gift that keeps giving.”

While few things make me happier than spending the holidays cooking with my family, few vegetables come to mind with less importance at the Plymouth thanksgiving than corn. Maize was ruler of the three sisters (beans, squash and corn) ruled North, Central and South Americas for many generations before the Pilgrims landed. Iroquois legend says that the three are inseparable sisters who only grow and thrive together. They were the first crops domesticated by ancient Mesoamerican societies and corn was
the primary crop. There were ceremonies to mark planting and first harvest. Corn provided a natural bean pole for the beans to climb. Beans fixed the nitrogen on their roots to improve nutrient absorption and fertility and also stabilized the corn making them less vulnerable to the elements with a strong base of roots. Shallow roots of squash kept weeds down and the mound moisturized by the ground shade. Nixtimalization or the process of soaking and cooking maize in limewater and hulling into hominy and
ground into maize was how the Americas thrived. A traditional fest would have centered on these three sisters. Nowadays our sisters have a different story to tell. And while corn production in the United States is roughly 39 million HA, we are the first in the world in corn production, and 20% of our annual yield is export. Our American corn is 92% genetically modified, and is primarily used as animal feed. Estimates of 75% of processed foods on supermarket shelves from sodas to soup, crackers to condiments are contaminated with genetically engineered ingredients. By removing genetic material from one organism and blasting it into the cut leaves of a damaged young plant and inserting it, the biotech industry has created an astounding number of organisms that are not produced by nature and have never been seen on our plates. Monsanto’s “Bt corn” is equipped with a gene from the soil bacteria Bacillus thuringiensis (Bt), which produces Bt toxin—a pesticide that breaks open the stomach of certain insects and kills them. It also continues at rapid multiplication of

the gene inserted in a bacterial host prior to insertion into the crop plant. So if it’s fed to the cow that becomes your hamburger, popcorn at the movie theater or the high fructose corn syrup in your gummi bears it is designed to continue to produce this genetic code and insert itself into it’s host. Now you can drive from Pennsylvania to Oregon and see corn fields, in mega farming operations, it is our monocrop, it’s lost it’s sisters and our nutrition and health as a nation is failing. Directions To prepare the cornbread: Heat oven to 425 degrees. Melt ¼ cup butter and set aside to cool slightly. Butter an 8-inch square pan with a little softened butter and set aside. Combine the flour, cornmeal, pepper jack cheese, baking powder and salt in a large bowl. In a second bowl, whisk together the eggs, milk and honey. Add the egg mixture to the dry ingredients, stirring just until combined. Add the melted butter and stir into the mixture. Pour into the prepared pan and bake until a toothpick comes out clean, about 20 minutes. When cool enough to handle, cut into 1-inch cubes. To prepare the pudding: Reduce the oven temperature to 350 degrees. Put the cornbread cubes in a buttered 9-by-13-inch baking dish. 4. Heat 1 tablespoon butter in a sauté pan over low heat and cook the onions very slowly until soft and golden brown, at least 20 minutes;
stir occasionally. Remove from the heat. Scatter the onions, cheese and herbs over the cornbread. Whisk together the cream, eggs, salt and pepper in a mixing bowl and pour over the cornbread cubes. Let sit for 10 minutes so the cornbread absorbs some of the custard. Bake until set and golden, about 40 minutes. Serve hot. Note: You can make the cornbread and store it in the freezer, covered tightly in plastic wrap, for a few weeks until you are ready to make the pudding. The onions can be caramelized a day ahead and stored, covered, in the refrigerator. The pudding can be baked a day in advance and stored in the refrigerator, covered. Before serving, reheat the pudding, covered with aluminum foil, in a preheated 375-degree oven until warmed through, 35 to 40 minutes. Enjoy with a Fezziwig Ale or Alaskan Winter Ale
