On top of Thunder Mountain in early October 2013.

Thank you!

As upbeat and positive as I for food and beverage, the am in most of my columns, list (ahem) goes on… One of here’s another dose of it! I my favorite lists that I make, love November! The holidays sometimes mentally, sometimes are just around the corner written down, but often verbally and the weather is generally around Thanksgiving is what I stormy which seems to unify am thankful for. The obvious and the community a little bit and most sappy item of my list is my brings some common ground friends and family. I am lucky excitement to everyone’s By Anna Hoke enough to have my family living day-to-day lives. I find myself close by in Juneau. I am thankful listening to Christmas music to get into for my husband, and our cat, Tron. I the spirit, baking more frequently, often will always be grateful and astounded with pumpkin and brewing up some apple by the generosity and support from the cider or mulled wine. It’s also the month communities of Southeast Alaska. You or time of year for checklists. We recently as readers are supporting this publication checked off our fall home maintenance list just by picking it up and reading it; and by having our boiler serviced, checking everyone within the publication; both our gutters and cleaning up the front yard. writers and advertisers are contributing to Other lists may contain endless gifts for make it all possible! I am thankful for the loved ones, wants from Santa, of dates for experiences and memories I’ve been able to parties, holiday cup rosters, ingredients make, due to the outstanding connectivity

of locals, local business, and organizations in our community. I am thankful for all the lovely community events this time of year such as the No Umbrellas Fashion Show and the Alaska-Juneau Public Market, to name a few. I am thankful for this beautiful land that we live in and that I can go online any day of the week and read people’s accounts of seeing bears, porcupines, seals and other Alaskan wildlife and to that note I am also grateful that I can literally walk out my front door and take photos of the beauty that surrounds us! There is so much more I am thankful for but frankly

gratitude AND thanksgiving As we move into the holiday season, and with Thanksgiving Day celebrations this month, I’ve been challenging myself to re-live past blessings and pause in appreciation of those of the present in order to exercise a habit of choosing a life immersed in a spirit of gratitude. The happy moments are easy to recognize and smile through, but what about those bitter sweet memories that bring both a smile and tears, or the truly heartbreaking and painful experiences? Is there space for thankfulness in them too? Laura Story sings in Blessings, “… what if Your blessings come through raindrops/ What if Your healing comes through tears…” and I do know that it is truly a seemingly impossible exercise to embrace that glimmer of good bur-

ied in the darkness of hurt and disappointment. To do so, however, is perhaps vital to our wellbeing and existence.

Religious leaders, philosophers and practitioners of healing arts have long urged us to embrace a disposition of thankfulness and more recently scientists are not only doing the same but also spending a great deal of time and money to provide hard data to support the belief that a grateful soul is in fact a healthier, happier soul. Last year, the John Templeton Foundation provided the University of California, Davis a $5.6 million grant that the school reported would “…support a three-year project, expanding the Science

and Practice of Gratitude, incorporating researchers from UC Davis, UC Berkeley, Hofstra University in Hempstead, N.Y., and California State University, Dominguez Hills. The project will promote evidencebased practices of gratitude in such settings as schools, workplaces, homes and communities, to better understand gratitude and its role in a civil society.” Other researchers are publishing work along the same lines. Just some of their findings report that people, families and communities that embrace a lifestyle of gratitude report the following positive results: • decreased rates of physical ailments • cardio-protective and immune boosting benefits • less stress and fatigue • better quality sleep • increased rates of happiness and

satisfaction

• improved and strengthened interpersonal relationships as well as a sense of belonging and protection in situations of extreme loss and grief • increased likelihood to have achieved not only various personal goals but also milestones in their academic and health endeavors • less focus on materialism • greater empathy for others Recommendations are that you develop this life of thanksgiving with action – the two most common being 1) weekly journaling of positive events and reasons for which you are grateful 2) regular expressions of thankfulness in both written and oral communication to people in your past

and present that are introspective and revealing A third I find useful as a daily practice and in moments of stress is incorporating a simple breathing technique recommended by Dr. Andrew Weil. By Dr. Summer Beattie, ND

My hope is that as I embrace this practice of living gratitude that not only will I personally experience the positive benefits it cultivates, but that my daughters, my husband, my family and friends, and my community will by natural extension reap the benefits as well. May you be inspired to adopt a Gratitude Project of your own this season that makes your home a place where the memories made are steeped in Thanksgiving!

4 – 7 – 8 Breathing Place the tip of your tongue against the ridge of tissue just behind your upper front teeth, and keep it there through the entire exercise. You will be exhaling through your mouth around your tongue; try pursing your lips slightly if this seems awkward. 1. Exhale completely through your mouth, making a whoosh sound.

Dr. Summer Beattie, ND is a graduate of Bastyr University. She has over 8 years experience as a Naturopathic Doctor specializing in women’s health with an emphasis on environmental medicine. Having served two terms on the board of directors for the Washington Association of Naturopathic Physicians, she has also worked in the medical aesthetics field since 2008. You can reach her at onehealingcenter@gmail.com or 907-209-4611.

2. Close your mouth and inhale quietly through your nose to a mental count of four. 3. Hold your breath for a count of seven. 4. Exhale completely through your mouth, making a whoosh sound to a count of eight.

Wortman-Ziel maintains a store, Strictly Local Selections, that caters to the community of Craig and its summertime visitors. “There is a huge demand for made-in-Alaska products, but there is not nearly enough being made.” The problem for crafters, one Wortman-Ziel has overcome through sheer industriousness, is to reach a wholesale price-point that compensates for the time and cost of producing saleable items. “I find it is a lot like commercial fishing,” she observes. “To stay in the business you have to get really good and really fast at what you are doing.” In addition to wholesaling her own products, Wortman-Ziel also

This year, during the weekend of November 29, 28, and December 1, vendors offering such home-worthy products include Darcie Henderson of Ketchikan, Cindy Wortmann-Ziel of Craig, Tanja Cadigan and Laura Martinson of Juneau, and Yaron Lavian of Los Angeles, CA.

he Underside of Construction: Flashing and Caulking

Fall is here and old man winter is knocking. Termination dust is slowly working its way down the mountain. The Ice rink is in full swing and skis are getting tuned. The last thing on anyone’s mind with the temperature starting to drop is flashing. No! Keep your clothes on its cold outside. I’m talking about building flashing, one of the key components of a home’s weatherization. Flashing is used in areas where the weather barrier system, also known as, building paper is penetrated or terminated. A common and widely used example of a weather barrier is Tyvek. The weather barrier

does not cover or terminates at many intersections such as, windows, doors, building envelope penetrations, wall intersections, and roof intersections.

I am often called to homes where water is leaking through a window or door, and when I investigate, the flashing detail wasn’t applied at all or it was

Different building materials expand and contract at different rates. For instance, a vinyl window will expand at a different rate than the wood framing it might be fastened to. This is where proper flashing details are needed. Building flashing material can be galvanized metal, aluminum, plastic, or other moldable materials such as ice and water shield.

applied incorrectly. The only think keeping water from entering a home is a bead of caulk. On the exterior of a home in this climate, a bead of caulk is not the answer. It’s particularly

important in Southeast Alaska with our rainy weather, that flashing details be correctly applied and caulk be used only as a backup. When water By Greg Stopher enters a home, Stopher Construction there is probably a poorly placed or missed flashing detail. Caulking will stop a leak for a brief time but it is not a long-term solution. Different building materials expand and contract at different rates. So if the only thing from stopping water from getting behind the window flange and entering the home is a bead of caulking, one can see that over the course of a season when the vinyl is expanding and contracting differently that the material or framing it is fastened to that water eventually enter. I have seen this fail many times on homes that were less than 10 years old. On a building exterior, flashing is necessary, and caulking should only be utilized as a backup. One of the most common cases of bad flashing detail or lack of flashing is around windows. There are bulletproof ways to apply flashing to windows so they will not leak. The same flashing details hold true for other weather barrier penetrations such as doors, ducting or chimneys, wall intersections, and roof intersections. Keep in mind water usually flows down and if flashing material is lapped properly water will find its way out of and not into your home. On side wall flashing or where a wall meets a roof, it is best to use a flashing that extends fairly high above the roof decking. This flashing is usually L shaped and is commonly called step flashing.

Bauer/Clifton Interiors is an interior design firm located in Juneau, Alaska. Jeremy Bauer and Jason Clifton, the principals of Bauer/Clifton Interiors, are designers that share a passion for creating stylish, organic, and contemporary spaces.

BEFORE & AFTER This project came with quite a list of wishes and needs for what originally started out as a rather small kitchen. The homeowners presented a very detailed and concise list of their desires; ranging from appliance performance to even the proximity of knife storage to their prep zone. Every element was carefully thought out, so it was up to us to transform this enclosed kitchen from the 1970’s into a professional grade kitchen suited for an artistic, modern family.

these circulation patterns was critical to ensure that an open floor plan would not inhibit a chef at work. Tall pantry cabinets were recessed into the wall running along

the hallway and cabinetry at the end of the island faces this bank of storage to create, in essence, a Butler’s Pantry. Not only did this double the storage of the original kitchen and maximize the efficiency of the hallway, but the raised countertop also provides a visual break between the two spaces and signifies where the kitchen zone begins and ends. Along with the layout, a change in cabinetry style and color also assist in visually minimizing this kitchen’s growing footprint. When creating a “great room,” it’s important to take every area into account and not let one or more overpower the other areas of the shared space. Painted cabinetry in a warm, sage hue was chosen for the main kitchen cabinetry. This color

The new layout was determined by analyzing how the space was used, the existing circulation patterns, and the kitchen’s adjacency to other rooms. The arctic entry into the home and the stairwell to the lower level are located right off of the kitchen so paying special attention to

highlights the kitchen area as a singular unit, compliments the existing orange accent wall and furnishings, and the lighter color is also less intrusive to the adjoining spaces than the alternative. Medium stained cabinetry was selected for the accent cabinetry. The dining cabinet and wine storage, while still connected to the

kitchen cabinets, feels more a part of the dining room and less apart of the kitchen due to this color change. We purposely incorporated a tall cabinet to separate the kitchen and dining zones and balanced it out with the tall refrigerator cabinet on the opposite side of the sink. The medium stained cabinetry also ties in with the carbonized bamboo flooring and a few of the furniture pieces in the living room too; helping to unify all spaces.

we paid special attention to specifying appliances that would suit their needs and even surpass their expectations. Since we were tight on space, a 30” Liebherr refrigerator was chosen since this slim model fit in so nicely between the sink and entry door. While this counter depth unit is six inches less in width than a standard refrigerator, it makes up for any lost storage with its height since it’s a foot taller than most refrigerators. Counter space was a premium because we wanted to maximize the amount of prep space for more than one chef to operate at the same time, so a microwave drawer tucks away nicely within

With the room’s layout decided, it was time to direct our attention to the largest components of the kitchen; the appliances! After addressing their cooking routine,

A Bosch dishwasher is so quiet that it can be used at any time and practically disappears all together when installed with a cabinet front! Rounding out the appliances is the main jewel, the 36” BlueStar range. This cooking machine cuts straight to the point and its central location ensures the chef-at-home can continue cooking while entertaining guests at the same time.

was designed and installed into the quartz countertop just to the left of the range for optimal usage.

Additional features of this kitchen include an espresso zone designed to further expedite the homeowners’ morning routine and a tall cabinet full of roll out trays for the remaining small appliances. When needed, the Kitchen Aid mixer can be rolled and used at a moment’s notice since outlets were installed inside this cabinet as well. Last but not least, a custom butcher block with built-in knife storage

As one can see, this unique remodel goes down as one of our design firm’s favorite projects. The clients had such a specific list of needs and wants that the challenge was invigorating to achieve and the appreciation of pulling off more than what was imaginable was the icing on the cake.

Cover pan with foil; roast beets until knife easily pierces center, about 50 minutes. Cool. Peel beets peel and cut into 1/3-inch-thick wedges. Whisk orange juice, pomegranate molasses, vinegar, and remaining oil in large bowl to blend. Season vinaigrette with salt and pepper. Place onion in small bowl; cover with cold water. Soak onion 1 minute, drain, and squeeze dry in kitchen towel. Add beets, greens, onion, orange slices, and pomegranate seeds to vinaigrette in bowl; toss. Season salad with salt and pepper. Africa. The tree was introduced into California by Spanish settlers in 1769. In this country it is grown for its fruits mainly in the drier parts of California and Arizona. You will see them start to appear September through January. Look for deep red fruits that feel heavy, avoid ones with cracked skin or soft spots. Will keep in an airtight bag or container in the fridge for up to a month, fresh seeds need to be used in a day or two.

While only an import here in Alaska to me they still signal a very real and exciting start to the holiday season. I love to float them in cocktails, make homemade grenadine syrup, a little for you (with a splash of gin) and a little for the kids! It’s amazing how wonderful and bright real grenadine tastes compared to the red dyed bar syrups we’ve grown up with. Amber King can be emailed at accereek@gmail.com

¼ cup Organic Sugar ½ fresh Lemon, juiced Dash of Rose water or almond flavoring (optional) Combine juice and sugar in sauce pan on medium heat, stir to dissolve sugar, reduce in volume by half (or boil for about 5 minutes) remove from heat and add lemon juice or flavoring. Bottle and store in refrigerator for up to a month. Enjoy in cocktails, over poached pears, cheesecake and even added to your turkey gravy. To accompany your Thanksgiving feast or take to a fall winter potlucks try this festive salad packed full antioxidants, bright colors and flavors to nourish share with friends.
