I recently spoke at a Sidney-by-the-Sea Rotary Club meeting. A considerable sized group of about 60 plus members were in attendance and I was extremely humbled by all the lovely accolades that Seaside Magazine received. On numerous accounts, in some form or fashion, I was asked the question: "How do you do it?" I spoke from the heart and told them: "It's not just me, it's all of us, it's my team!" We truly believe that the heart of our success is not about good content, but it's about providing GREAT content: it always has been. We have proven this consistently, and our readers and advertisers love us for it. They have remained loyal to us, and over the years they have become part of our family too! Really, our community is our family and Seaside is grateful to have become the storyteller for the community. Stories have existed since the dawn of time but it's the delivery of these ideas and thoughts that should in the end connect us all closer to each other and make our community stronger, and in fact healthier. Collaboration between my team keeps us true to the stories. When you have a few sets of eyes watching and listening, and acting as a sounding board, you have a better chance for success. There is a lot going on when you have a small team, a lot of details to keep track of – story, context, ad production and design, proofing – our collaboration keeps us on the right track. No doubt we are inspired by the stories we find for you, but ultimately our hope is that you are inspired by them as well … not just for a minute, but much more deeply than that. This is why we tell stories: we listen, we learn, rinse and repeat. Then we share these stories, for you, for us, for our whole community. There's plenty to take inspiration from in this month's issue including a first glimpse at Sidney's new Community Safety Building and lots of local mentors in our annual Men to Watch feature.

Sidney's new Community Safety Building is the largest public infrastructure project ever undertaken by the Town of Sidney. Upon its completion, the building will have cost $16.35 million and the project will have spanned 10 years, involving three Fire Chiefs, four different Municipal Councils, numerous municipal staff, professional engineers and trades contractors. The Grand Opening of the building is set to take place on June 21 with a public open house to follow on Canada Day. It is here that people will have the opportunity to see the remarkable, state-of-the-art building designed for our future. The facility has been constructed with the highest modern seismic standards using best practises collected from countless other fire halls. Sidney Fire Chief Brett Mikkelsen toured fire halls in B.C., Washington, North Carolina and Texas because, as he says: "you only get one shot at it. I'm proud of the result as it is most importantly a safe building for our staff, will help attract and retain volunteers, is well thought out in respect to workflow, and is designed with future expansion in mind." The decision to build a new fire hall was made after the Sidney Fire Hall Expansion and Renovation study was completed in February 2009. The study concluded that the current fire hall, which was built in 1989, needed considerable upgrades to bring it up to accepted seismic, architectural, plumbing and electrical standards while providing more training and office space for the growing department. It was decided

that a new facility, rather than renovating the old fire hall, offered a better, long-term option and in the end, would be more financially viable. The first step towards building was finding land, as the current site was not large enough for the required expansion. In 2010, the hunt for a suitable piece of property was on. It would take six years to secure a location. During this time, several options were explored but all fell through until finally in 2016, the site south of the Mary Winspear Centre was secured through a land exchange with the Victoria Airport and an agreement with the Mary Winspear Centre. The ground was broken on the new site on March 31, 2017, and construction began. Fire Chief Brett Mikkelsen adopted the name Community Safety Building to better represent the true purpose of the facility. "The new building will house the Sidney Volunteer Fire Department, along with BC Ambulance Services with capacity for 6+ ambulances. This ensures post-disaster resiliency for paramedic response on the Saanich Peninsula," he explains. In addition, Capital Region Emergency Services Telecommunications Inc. (CREST) is housing an amplifier in the building which will increase emergency communications clarity in the local area for Police, Fire, and Paramedics, particularly when in concrete buildings or underground parkades. Space is also dedicated for disaster supplies and components of Peninsula Emergency Measures Organization (PEMO), and the Town's Emergency Operations Centre (EOC), and to function as a secondary Town Hall ensuring business continuity for critical Town functions in the case of a major incident. As well, the building houses a seismic monitoring system that permits both pre- and post-event seismic assessments of structural resiliency. Inside, the building is designed for response efficiency and workflow. For instance, dorm rooms are adjacent to the slide which exits at the gear room; this exits directly out to the first truck leaving. This will reduce "turn out times" from the time the department receives a page to the time the truck leaves the hall. The slide is an example of one of the Hall's new features.

The new building will house the Sidney Volunteer Fire Department, along with BC Ambulance Services with capacity for 6+ ambulances. This ensures post-disaster resiliency for paramedic response on the Saanich Peninsula.
Slides, rather than the traditional firefighter's pole, are now gaining popularity as they are safer to use and eliminate the fall risk to non-fire department staff. The building was designed to keep the fire department's most valuable asset – their volunteer firefighters – safe and healthy. The Sidney Volunteer Fire Department currently has seven career firefighters, one administrative assistant and 30 volunteers. As well, all career staff are active volunteers after hours. Turn out gear, vehicles, hoses and any product exposed to the carcinogens released at a fire are segregated through design, workflow, and dedicated HVAC systems for "clean" & "dirty" portions of the building. There are two chemical decontamination bike saunas; when fighting a fire, a firefighters skin pores open up permitting cancer-causing chemicals and heavy metals to enter the bloodstream. Research indicates that 14 SEASIDEMAGAZINE.CA | JUNE 2019
vigorous exercise in a sauna environment 24 to 48 hours postexposure can excrete a large portion of the toxins and metals from the bloodstream. The training tower offers several other important training components. The new tower simulates the standpipe-equipped stairwells firefighters work in when responding to buildings four storeys or higher. The tower also has a small room simulating a micro-suite which can be filled with smoke to conduct victim searches in. And finally, the volunteer firefighters are provided with an association office, state-of-the-art gym and recreation room. This demonstrates that the Town values their volunteers and the importance of investing in infrastructure that will attract and retain the volunteers who protect our residents and ultimately save lives.
Meet the Fire Chief • Brett Mikkelsen was appointed Sidney Fire Chief in 2014 after serving 18 years as a firefighter. • Originally from the Fraser Valley, Chief Mikkelsen moved to Sidney in 1984. He worked at Philbrook's Boatyard for over 20 years as a trade's helper, vessel hauling crew, safety officer, lead hand, and finally Project Manager during which time he obtained his PMP certification from Royal Roads University. • In parallel, Brett worked for BC Ambulanceand attained his primary care paramedic with IV endorsement qualification and fire officer and emergency management certifications. He is also a certified Blue Card Incident Command instructor and teaches incident command to Sidney Fire and other departments. • In 2017 and 2018, he was a member of the Office of the Fire Commissioner Command Staff working with the BC Wildfire Service, a role he will continue into 2019. • The Fire Chief and his wife Kathy have a daughter Sofie, 14; and son Carter, nine.

Here on the West Coast we need to be prepared for rain most of the year, but often we don't want a jacket that is heavy or bulky. Some of the biggest changes in outdoor gear have come in waterproofing. The old waterproof jackets would either have been a rubberized, impermeable material, or else a very heavy ply-nylon weave. These jackets were heavy to wear and could leave you extremely hot (not to mention almost as wet inside as you would have been from the rain!). When you took them off they were bulky to carry. Today, brands like Mountain Hardwear and Royal Robbins are producing fully waterproof jackets that are breathable and extremely lightweight. They also incorporate a four-way stretch technology that makes them practical when you need to move. Of course, if you're in the outdoors, you might be thinking about the impact of your clothing choices on the environment. Some jackets are now made with an eco-friendly durable water repellent that reduces toxic byproducts. It's a flouride-free technology that instead uses a microscopic 3D structure which makes water slide right off your clothes. Natural and more sustainable products that you'll find put to good use in outdoor gear are organic cotton, hemp and merino wool. Merino is interesting as it's perfect for our climate: it's warm and provides moisture management. It makes a great base layer but in fact is now being used to make all sorts of clothing. Companies like Smartwool make some stylish merino items including dresses that could transition from daytime explorer to stylish dinner wear, especially when glammed up with a necklace! Outdoor wear and travel wear have a big overlap with outdoor clothing brands designing their ranges with travellers in mind. They are aware of the need to balance having all the necessities, without taking too much with you, meaning many items are multifunctional. Another innovation are items made from ultra quickdry fabrics. ExOfficio is one brand that has excelled in this area, creating underwear and socks made from odour-resistant fabrics that will dry overnight. These are a real boon for travellers who want to be space efficient in their packing. You could literally just pack one change of underwear for a trip, washing them out each night in your hotel room! It's not just rain we need to think about: sun protection is a must whether travelling or at home. Look out for clothing that has a UPF rating; many do. Technical outdoor clothing may carry a higher price tag than some of the fast-fashion we're used to, but it also usually carries guarantees about quality, and cool new technological features. This type of clothing is built to be durable, and take you on many adventures.

Where Do You Get Out on the Island? Seaside Magazine wants to live up to our slogan of being "the voice of the Saanich Peninsula," so, in every issue, we ask people to answer a question. We're looking for responses from all ages and across the diverse neighbourhoods that form our community. As vacation season nears, Island-based holidays are what's in store for many locals.

Whether you're an avid camper, a "glamper" or one who prefers something less rustic and more luxurious, there's likely a spot on Vancouver Island that speaks to you when summer destinations come to mind. On Vancouver Island there are, by my count, 25 provincial park campgrounds, and a multitude of private campgrounds and RV parks. Add to that list the many cabin, hotel and resort accommodations the Island has
to offer, and whether the draw is a particular destination or a specific interest you can easily make your perfect Island vacation take shape. I headed out to the West Saanich location of Red Barn Market to speak with customers about their favourite camping and vacation retreats come holiday time. The first person I spoke with was Vikki, who is 57. Her favourite Island trips include Courtney/Comox, Parksville and Qualicum Beach. Kye Bay Beach, in Comox, is a special place for her, mostly because it's where she watches the Snowbirds airshow with her grandchildren. I see her face light up as she speaks of it. "I don't go camping," said Joan, 90. She does, however, love staying at Pacific Sands Beach Resort, in Tofino. She loves to walk the beach and visit Chocolate Tofino, where they have "the best chocolate." Tofino, Ucluelet, and Parksville top Juliette's list of favourite destinations. She's 47. It's the beaches that are the draw for her. Bonnie, 68, also enjoys Parksville, where she's a hotel-goer rather than a camper. There's a particular antique store she likes to visit when she isn't taking in the ocean, and she says there's also a very nice restaurant (The Bayside Bistro & Lounge) at the Quality Inn. Stephen, 26, has been gradually exploring Vancouver Island since moving here four years ago. He prefers day trips and trail hikes, and his visits to Port Alberni, Botanical Beach and the sand castles in Parksville have been his favourites so far. He notes that eating at My Chosen CafĂŠ,
in Metchosin, is well worth the drive. I learn of somewhere on the Island that is new to me, a place I have to look up: Tahsis. "Located on the west coast of Vancouver Island, Tahsis is a premier ecotourism destination with unparalleled outdoor recreation, stunning coastal scenery and a walkable village … nestled in the heart of Nootka Sound." (www.villageoftahsis.com). Hopefully I'm not the only one unfamiliar with this little gem. This is Brian's favourite "glamping" spot, and he said he visits regularly. Brian is 38. With Brian was Chris, 26. Tofino is Chris's destination of choice, and he goes there for the surfing. He typically camps or rents something via VRBO, and Tacofino is the local food he likes best. Two people in a row mentioned Rathtrevor Beach Provincial Park. The first was Dana, 60, and the second was Heather, 64. Heather is a camper, and Port Hardy is her alternate choice. I ask her if she camps for shorter weekend getaways or for longer periods, and she tells me that they will typically camp for two weeks during the summer. She said that Mt. Washington is another favourite place to visit on the Island, but that it has become too expensive for her liking. I met April, 36, who is in the process of looking for a house on the Island. With such a fresh perspective I ask her what has made an impression on her so far. She and her family have very much enjoyed Butchart Gardens, and look forward to fishing in Sooke. Next there was Ted, 58. Ted, like many others, enjoys Tofino. The Best Western Tin Wis Resort is his accommodation of choice, and eating at the Wickaninnish Inn has been a highlight. Tigh-Na-Mara Seaside Spa Resort is another of his best-liked vacations, which he enjoys for the beach walking. We came back to Rathtrevor as a favoured destination by the last few people I spoke with. Kelly, 42, said she was a tenter when she was younger, but now enjoys an RV for summer vacationing. Mini golf and beach combing keep her busy during her getaways. Deid, 73, is also a Rathtrevor fan, and he camps with his wife, Suzanne, 64, in their small trailer. Suzanne adds that Island View Beach is where she most likes to camp. Thank you for the reminder, Suzanne, that sometimes paradise is in our very own backyard.

asked me if I would consider writing about the value added by the "Men to Watch" shown in the following pages. These are the men who, in their own unique way, strengthen our Peninsula community and economy, helping to make this one of the greatest places on earth to live. While I know some of these men, I do not know them all. But without doubt, they are known in their circles for making our small part of the world better for all. 20 SEASIDEMAGAZINE.CA | JUNE 2019
During what I consider to be a blessed life I have had many men who helped to guide me, sometimes subtly and sometimes not so subtly. Their guidance led me to a career in fundraising, where I have spent the last 40 years helping non-profit organizations make a difference. For many of us, our first mentor was that guy we called "Dad." I was fortunate to have a dad who taught me and my brother several critically important lessons. He taught us that to be our true selves was the greatest gift we had to give. He encouraged us to build and use the talents we had. He also showed us how to share them with

those around us. We lived in a small prairie town of less than 100 souls. While it might sound dire to some, it was a blessing to us. In that little town we learned that community becomes rich and vibrant when everyone comes together and contributes their individual gifts. The next most influential mentor in my life taught me to "dream my dream, and dream it greatly." He shared this lesson with all of us who attended the Athol Murray College of Notre Dame, along with the importance of supporting each other through life's ups and downs. His support helped focus me on the values that have guided my life, friendships and important decisions (and not coincidentally, have led me to write this while I attend the 50th anniversary of my graduation from that influential school). Later, my friend and colleague, Buck, taught me to be courageous
in sharing my dream. His view was that you might be unsure about inviting someone into your dream, but you should never withhold an invitation for fear that it would be turned down. His words were: "Be bold, share your dream and invite others to join you on your journey to make your dream a reality." Whenever I have needed support, it has always been there for me. I wish this for each and every one of you. Read about all the "Men to Watch" in this issue and think about those around you who may not be in this issue. Celebrate them and what they bring to our community. A few years back the Prairie Inn introduced a children’s and family section, and this has helped business tremendously. We have an amazing

Notes on Nature Come join me for another trek down the word trail. Last time we sailed the sea of nautical phrases, but today we venture into the great outdoors where interesting idioms sprout up all over. So off we go; there's nothing like the great outdoors. Being in it can make you feel "as fresh as a daisy." The little flower is attractive enough, but why do we think of it as being fresh? The flower's name is based on the old English dæges ēage or "day's eye" due to the fact that the flower opens in the morning and closes at night. The phrase alludes to being fresh and open to a new day just like a morning daisy. But daisies aren't the only plant along our way. What's this, a four leaf clover? Finding one of those in the clover bunch is like "finding a needle in a haystack." But what does a needle have to do with a haystack anyway? The phrase possibly originates with Sir Thomas More who in 1532 referred to an even more fruitless search when he wrote "looking for one line in all of St. Austin's works were to go to look a needle in a meadow." As we continue along, the views are spectacular. But wait, the path looks fairly steep. Maybe I'm just exaggerating the incline and "making a mountain out of a molehill." It's an old idiom thought to be first used by Nicholas Udall when he described ancient Greek teachers as analyzing so much as to make an elephant of a flye and a mountaine out of a mollehill. I'm sure our path is do-able. This is my favourite part of the trail. It has something you'll want to see. Can you guess what it is? I don't mean to "beat around the bush" which interestingly enough dates back to Medieval bird hunts. Some participants would beat the bushes to rouse the birds and flush them out for capturing. The sight I was telling you about is an eagle's nest nearby! Maybe we could get a better view if we climb that rocky outcropping. But it looks dangerous; I'm not sure the view would be any better. Ah well, "a bird in the hand is worth two in the bush!" Like those 15th century falconers who prized the valuable asset in their hands rather than risking what was out of their reach, we'll settle for the splendid view today. That wraps up today's journey down the word trail. But next time we'll explore what phrases are "waiting in the wings!"

Natural Approaches for Prostate Support
The prostate is an important gland prone to certain conditions because of its location (wrapped around the urethra and near the base of the bladder). When it does become diseased, it can impact a man's health by way of urination, sexual activity and, with cancer, can spread to other organs. The following are ways to help keep the prostate healthy and can support a man if there are any chronic issues such as prostatitis, hyperplasia (enlargement, or BPH), or cancer. Diet. The prostate is located in the lower pelvic region. It also lies just anterior to the rectum. As a result, the health of the rectum is an important link to inflammation and disease in the prostate. People with an unhealthy diet low in fiber and high in inflammatory foods such as red meat, dairy, sugar and alcohol will likely have issues with their prostate. Choosing a diet of fish (omega 3's), nuts and seeds, avocados, whole grains (not processed or white) and fresh fruits and vegetables including cooked tomato, will aid the prostate for longterm health. Probiotics. The pelvic region (rectum and bladder) is flooded with a microbiome (bacterial flora) that has been shown to impact the health of the prostate. Studies are currently being done to identify the benefits of probiotics in both treating and preventing prostatitis, BPH and prostate cancer. This is a good reason to be sure you consistently treat your body with beneficial bacteria from fermented foods, fresh veggies and fruits and consume a multi-strain of probiotics daily. Studies also show that probiotics play an important role in hormonal regulation (androgens and testosterone) that in excess can stimulate prostate cancer growth and aggravate BPH. Exercise. We all know exercise is good for the body, but it also
plays a huge role in prostate health. Men who exercise regularly (including low impact walking) and keep a healthy BMI (body mass index) are less likely to develop BPH. Men who run for more than one-and-a-half hours per week are also less likely to have erectile dysfunction. A study of a group of men with prostatitis reduced their symptoms significantly (including depressed mood) by exercising moderately for three hours weekly with walking, stretching and low impact isotonics. Meditation. Men who suffer with chronic prostate issues, including cancer, can benefit from meditation to alleviate anxiety around their health and reduce stress. Meditation has also been shown to help men become more proactive in their health and thus better their outcomes with prostate cancer treatment, whether that be surgical, chemotherapeutic, radiation or active surveillance (watch and wait). Supplementation. Supplementation for prostate conditions can be confusing and controversial. To date, according to the National Cancer Institute, the supplements that have been shown to have benefit in prostate cancer (and potentially most prostate issues) include green tea, lycopene, vitamin D and Pomi-T (pomegranate, broccoli, green tea and turmeric). It is important to speak with your doctor before considering taking any supplements for your condition. The prostate is a small walnut-shaped organ that in younger years men tend to take for granted. As men age, it becomes a reflection of their long-term wellness. Focusing on a healthy diet, exercising regularly and maintaining a healthy body composition seems not only to be the foundations for all health but also the prostate.

Marsh Farm: Not Your Average Veggie Garden
Many years ago living on the Saanich Peninsula required people to draw their sustenance directly from the land upon which they lived. While most of us today rely on grocery markets and at best tend to backyard gardens, there are still those in our community for whom living off the land is a way of life. This is the fourth in a Seaside series featuring local community members who all share the same passion for the land and love of what they do. On a warm sunny day, there's nothing more delightful than puttering around in your backyard garden. Evelyn Marsh feels the same way, except her backyard garden is two acres in size. … that's a lot of puttering! When Evelyn, owner of Marsh Farm, a U-Pick farm in Central Saanich, became an empty-nester, she decided to carry on in the footsteps of her grandmother and start a vegetable garden. It was a decision that would impact not only her life but the larger community around her. "When the children grew up it became really boring not having them around running and playing. So I said to myself: "I'm not going to be one to sit around and watch the cars go by. I don't quilt, I don't sew, I don't knit, so I'll do what my grandmother did: I'll grow a garden," shares Evelyn. What began as a small area producing enough veggies to stock a couple of picnic coolers is now a garden that produces a dizzying diversity of vegetables, fruit and herbs. Visitors of all ages arrive to pick their favourite foods, but it's the little ones that hold

a special place in Evelyn's heart. She's not only passionate about tending a garden of vegetables, but caring for the next generation of gardeners too. "If you get good food when you're young, your bones grow well, your heart is strong. Children are healthier," she says. "We started the U-Pick, and it's so wonderful you know to see the little children coming and running through and picking their own greens. It's a fulfilling thing." Evelyn's love of children goes way back. She and her husband raised nine of them, many of them foster children. And, her interest and care for young ones continues even now. She grows blackberries that are thornless, so that young pickers don't prick their tiny fingers, and makes each young one feel welcome in her garden. "Visitors come and they park. The little kids carry baskets. I usually have little toys like windmills or bubbles that
they can play with while mom and dad shop," says Evelyn. The kindness and care she extends to young people is often returned. Sometimes they engage in the work of the farm like members of the Saanich Peninsula U11 basketball team "The Grind" who recently helped with weeding crops. The farm also provides a place for the not-so-young to enjoy the bounty of nature, fresh air, friends and community connections. "I do it for the young and the old. The older folks, they used to have gardens, and now they're in wheelchairs or nursing homes or assisted living where there are no gardens," she shares. "They can come here and wheel around and pick berries. It brings back memories." No matter the age, though, visitors are bound to find their favourite produce at Evelyn's farm because the selection is astounding. Just name the vegetable, fruit, or herb, and you'll likely find it here, including rare ones like the marion berry. One customer travels from the mainland every year just for this item alone! Produce is grown in raised beds of sea soil and everything is done organically. "It's all contained in beds. I don't want to lose the sea soil to the earth. We use organic cow manure and kelp-only fertilizer. Grandma did it; we don't need anything else," she shares. Evelyn has always been keen to grow healthy foods and share them with others, but the current spotlight on sustainability and the local food movement has got her thinking about larger issues a little more every day. "If we get to the point that we don't have people growing the food locally, we're going to be in a little bit of a problem. Where is it going to come from? When people come here and pick a strawberry, it's fresh, it's local. They see what a vegetable looks like without a cellophane bag around it," she says. Evelyn's garden is a fair size, so she putters around it in a golf cart. She's just as passionate about her seeds, soil and sunshine, but as the days wear on, she's looking to the future. As far as what this means, well, in Evelyn's own words: "I'm hoping at some point we have a community garden here. Instead of me doing it, everyone can do their own. Getting Outside for Your Well-Being

I wrap my arms around the trunk of the giant Douglas fir, my eyes following its massive trunk skyward. As I exhale I take in all of its majesty. There was something about this tree that had me stop my hike and take up this crazy embrace. I breathe deeply, smelling the sweet mixture of a freshly misted forest, briny air and warm cedar, and feel myself relax. My mind travels to my childhood where I spent equal amounts of my time cradled in the boughs of Garry oaks reading one of my favourite books, The Folk of the Faraway Tree, and dangling precariously from the skinny toppers of the local fir trees. Perched as high as my fear would allow, I would rock back and forth enjoying the vista and the rush of adrenaline as I tested the limits of the tree top. As the memory fades I return to the present and press my ear against the tree. Engaging in a bit of adult make believe, I implore the tree to reveal the wisdom of its years. What have you seen? What have you heard? What do you know that we do not? The people of Tsawout First Nation believe that the four winds, the trees, the birds, the animals, and the fishes were people at one time long ago and that these living things can understand us if we speak to them using special words. Today I haven't found those words and the tree remains silent, its secrets safely tucked away for another day. It's a ritual I've repeated many times; the forest is where I go to ground, to connect myself energetically with the healing properties of the earth. When I feel myself unhinged by the roar of our
technologically driven world nature beckons me and reminds me to just be. When I emerge from my forest forays, I'm focused and in tune with the creative innovator in me. Over the years and as is predictable in a life well lived, puzzles of the heart have emerged. It's during these times that my intuition takes over and Island View beach beckons. The scattered drift and rocks serve as nature's meditation pillows. The wind in my hair and the spritz of ocean mist on my skin is a tonic that simply can't be bottled. I've made many a personal discovery on that magical beach, reconciled relationship struggles and solved entrepreneurial riddles. The smell of the ocean breeze soothing, the repetitive break of the waves hypnotic and calming, the sand and pebbles beneath my bare feet relaxing. Science supports what I instinctively know to be true: ocean air (lakes, rivers, streams and waterfalls too) contains negative ions and oxygen atoms that contain an extra electron useful to treat symptoms such as seasonal affective disorder. Taking these well-being time outs may seem counter intuitive when you're faced with deadlines, bills to pay and a determination to drive yourself to produce results. What these excuses fail to address is the cost and long-term effects of habitually putting our well-being aside. A well-being intervention, a brisk walk to the pier, a walk in the woods or even stepping out into the many accessible parks we have here on our beloved Peninsula is an investment with high returns that far outweigh the cost of time. Evening with Greg Brown American folk musician Greg Brown comes to Sidney on Tuesday, June 25. Greg Brown’s mother played electric guitar, his grandfather played banjo, and his father was a Holy Roller preacher in the Hacklebarney section of Iowa, where the Gospel and music are a way of life. Brown’s first professional singing job came at age 18 in New York City, running hootenannies (folksinger get-togethers) at the legendary Gerdes Folk City. After a year, Brown moved west to Los Angeles and Las Vegas, where he was a ghostwriter for Buck Ram, founder of the Platters. Tired of the fast-paced life, Brown traveled with a band for a few years, and even quit playing for a while before he moved back to Iowa and began writing songs and playing in midwestern clubs and coffeehouses. Brown’s songwriting has been lauded by many, and his songs have been performed by Willie Nelson, Carlos Santana, Shawn Colvin, and Mary Chapin Carpenter.
He has also recorded more than a dozen albums, including his 1986 release, Songs of Innocence and of Experience, when he put aside his own songwriting to set poems of William Blake to music. One Big Town, recorded in 1989, earned Brown three and a half stars in Rolling Stone, chart-topping status in AAA and The Gavin Report’s Americana rankings and Brown’s first Indie Award from NAIRD (National Association of Independent Record Distributors). The Poet Game, his 1994 CD, received another Indie award from NAIRD. His critically acclaimed 1996 release, Further In, was a finalist for the same award. Rolling Stone’s four-star review of Further In called Brown “a wickedly sharp observer of the human condition.” 1997’s Slant 6 Mind (Red House Records) earned Brown his second Grammy nomination. His latest CD, One Night (Red House), is a re-release of a 1983 live performance originally on Minneapolis’ Coffeehouse Extemporé Records.

2010 and many of my teammates trained here on the Saanich Peninsula. They always praised the area so I finally decided to come check it out for myself and was instantly sold. What prompted you to open a physiotherapy clinic here? In 2006, I won the Canadian National Championships at the 10k distance and was set to be a part of the Canadian Olympic Team going to Beijing in 2008. I felt I was at a crossroads in my life at that time. I know

I would have had a memorable experience at the Olympics but I also knew I was not going to win any medals, as the competition was so fierce. I opted for a different path, that of being a father and owning a great business. Can you provide an overview of your practice? We have two locations. One, in Saanichton on Patterson Road, which was our first office, and the second at Elk Lake. We operate both locations with six physiotherapists and three massage therapists. With our location at Elk Lake where many elite athletes train, we do tend to see many athletes. However, our clientele is varied and we treat all types of patients. Our focus with all of our clients is to help them help themselves by giving them the tools to be independent and take charge of their own health. Right now, we are especially excited about a relatively new technology in treating chronic pain; that is shockwave therapy. Can you explain what shockwave therapy is and how it works?
Shockwave therapy is a relatively new, non-invasive treatment that sends mechanical waves through muscle and tendons by applying it externally to the body. It can break down calcification, relieve pain, and quickly

before people will notice results? It is certainly very rewarding to see people who have suffered from chronic conditions, where nothing else has worked, actually get better with shockwave therapy. Each session will last about 30 minutes. This gives us enough time to build good relationships with our clients and to answer any questions or concerns. People can expect to see results after only three visits. What do you like most about your work? I love my work and feel privileged to work in such a beautiful place as the Saanich Peninsula. Our summers in Lake of the Woods were quite challenging. There was one season when I tried to install a new back door, but did not quite finish the job. The following year my wife drove out with our four kids (I was supposed to join them two weeks later) to find that a whole zoo of animals had taken up residence through the winter, and had held multiple parties in the kitchen, spreading from wall to wall dog food, flour, spaghetti, rice and all the other dried staples we had carefully stored. This of course was all my fault, as a proper carpenter would have closed off the doorway hole with plywood rather than mosquito netting. We originally bought the cottage when we lived in Winnipeg, an easy two-hour drive away. Later, we moved to Saskatoon, and the journey became closer to six hours, still not too bad. However, it is a good 30-hour drive from Sidney, if you catch the first ferry, drive non-stop to Calgary, and then drive for what feels like an eternity along flat featureless straight roads across the prairies. This might be okay in a nice modern car, but we were doing it with four kids aged between six and 12, two dogs, and our wretched cat Roo. The return journey was eventful. We were 50 kilometres east of Moosomin, my wife was driving, and the motor literally exploded at 3 a.m. No cell phones to call for assistance. When the sun came up, I managed to hitch a ride into this town of 2,000 inhabitants and find a garage. We were towed into town, and the van was rapidly diagnosed as a write-off. I sold the wheels for $500, and found someone who sold us for the same princely sum his 1972 Ford Country Squire station wagon, "guaranteed to get us home." This wagon had everything. A 460-cubic-inch V8 motor, rearfacing back seats, and even an Esso "tiger in the tank." Perfect. When we loaded everyone, it did scrape on the ground a bit, but only at the back. Off we set. The family deserved a treat after all this ordeal, so we had a full meal deal lunch at the next McDonald's, which was the first non-organic food they had eaten for nearly two months. Big mistake. We were running low on fuel in Kamloops, and pulled in to fill up. In those days, service was all "jump to the pump," and a friendly young chap filled us up. My wife had been driving, and as she leaned over the back of the seat to get my credit card, Ronald got the better of her, and she let out one of the worst explosions I have ever heard. The kids were mortified, but not
Lake of the Woods - Pt. II half as much as the attendant who chose that exact same moment to lean in through the window with the credit card machine. I think she singed his eyebrows. Even worse was the walk of shame, when she had to go inside to the washroom, and there were five sniggering employees lined up as the eyebrowless worker pointed her out to his friends. In England, we call these places petrol stations, but I guess that's why they are called gas stations in Canada.

Whitehouse Stables "We do a lot of things here, but horses are my passion," says Nicky Wylie, greeting me with a warm handshake on my arrival at White House Stables on West Saanich Road. White House Stables is home to Nicky and Norman Wylie, who have by Debra Lewis farmed there since 1984 and where they started breeding thoroughbred racehorses in 1987. Nicky's love of horses began when she was a young girl growing up in England. She worked professionally with horses, eventually riding in three-day events. In 1980, she finished fourth in a field of 40 at the Chatsworth event on the day before she and Norman moved to Canada. "It's a passion that never leaves you," explains Nicky, and while her career has been varied it has always involved work with horses. Shortly after arriving in Canada, Nicky began riding and training thoroughbreds, a career which continued until 1992 when her first 50 SEASIDEMAGAZINE.CA | JUNE 2019
child was born. In 1985, Nicky and Norman purchased Yalocum Chief. With him they formed their first racing partnership, The Brentwood Inn Syndicate, and for two years enjoyed winning races at Sandown Raceway and in Vancouver at Exhibition Park. Nicky and Norman, along with their landlady, Pat Johnson, began breeding horses to race in 1987. With the purchase of Mascaretta in 2001, they began breeding to sell. Mascaretta's first foal went on to become champion in British Columbia, winning over $400,000 for her purchaser. In total, her foals have won their purchasers over a million dollars, earning her recognition and praise. "She's a superstar," says Nicky proudly. In 2018, Nicky and her trainer, Mary-Anne Baumgartner, started Sandown Racing Club to promote local interest in horse racing and to create a racing community that was lost when Sandown Raceway closed in 1992. Today the Club has 100 members who follow the activities of three racehorses: Future Games, who won three races last year; Big Time Louie, a two-year-old in training; and Sprog, who will race this year. Sandown Racing Club provides an opportunity for members to
engage with the sport in an affordable way. "The club members don't own the horses," explains Nicky, but for an annual fee "they have a sense of ownership of all three horses." They get regular updates on their training and progress through members-only websites and Facebook, and have special access to the races at Hastings Racecourse. Club members lease the horses and then apply for an owner's license which gives them free parking at Hastings Racecourse, access to areas not open to the general public, and other benefits. Nicky and Norman have raised "many very good horses" and three champions bred from three different mares and stallions: Ookashada, Herbie D., and Stanz in Command. Nicky attributes their success as breeders and trainers to "luck" and regular handling, to raising the foals "as athletes in fields, not barns or paddocks," and to "excellent nutrition." Nicky's love of horses is unmistakable, but so is her enthusiasm for other aspects of life at White House Stables. Nicky and Norman are passionate about "eating well and not hurting the environment" and grow all of their own food. Their concern and sense of responsibility for all of the animals in their care, horses but also dogs, cats, chickens and cows, is obvious. Nicky loves to teach organic farming. Norman, a farrier, does the shoeing for their horses as well as other metal work. They run the farm store, which sells horse feed and supplies and where they are happy to answer questions on nutrition and other horse management issues. Nicky has been on the board of the Canadian Thoroughbred Horse Society for four years. Before I leave, Nicky takes me to a field and shows me Mascaretta, mother of champions, who is caring for another horse's foal. That foal is sister to Exorbitant, a horse with only one eye who nonetheless won the third race at Hastings on Saturday May 4. In an adjoining field are two other thoroughbred mares and their foals. "The babies," says Nicky, "are born to run," and I watch one of the foals, who is only a few days old, running in circles "just for the heck of it" and squealing with joy. The First of the Season: Enjoying Local Strawberries
What could be more exciting than the season's first ripe strawberries? Perhaps trying to decide how you will enjoy them! Will you put them atop of your waffles or morning yogurt? Maybe you like to pack them as a fresh snack for your lunch? They add a pretty dash of colour, and round out a healthy spinach salad. Perhaps you love to bake and look forward to your first rhubarb and strawberry pie. No matter how you like to eat your strawberries, they are tasty and also healthy. A source of vitamins C and K, strawberries also provide a good quantity of fibre, folic acid, manganese and potassium. Enjoyed since Roman times, strawberries have also been used throughout history in a medicinal context to help with digestive ailments, teeth whitening and skin irritations. What's more, they are weather obliging: strawberries can be available to us throughout the spring, summer and even into fall. Strawberries are grown in every province of Canada and are a member of the rose family. Their clusters of fruit are produced from a single flower. The timing of strawberries' return to our lives coincides perfectly with the seasonal start of the Peninsula Country Market. On Saturday June 1, market vendors will showcase their glorious offerings at the Brentwood Bay Festival from 9 a.m. to 1 p.m. at Pioneer Park. If available, Gobind Farms and Dan's Farm and Country Market will have their first of the season strawberries available. From June 8 to October 12, the Peninsula Country Market will continue every Saturday at the historic Saanich Fairgrounds. But when she moved to Victoria, it was wonderful: we picked up right where we left off and it was wonderful to have my friend back in my life. I had the honour of being able to house and help feed her family during this difficult time. Cooking and gardening both feed my soul. When friends or family are having a difficult time and I don't know how to help, I cook. A friend recently told me: you feed people! So I do. I can spend endless hours in my kitchen or garden, enjoying every minute and then tucking numerous things away in the freezer, dehydrating or canning for times when they are needed. I have cookies, shortbread dough, frozen soup, biscuits, breads, quiche, pizza and an endless supply of dehydrated and canned goods. What a wonderful thing it is to be able to show up with dinner for someone who has had a rough day. To me, it has never been the big things that matter in life: it is all

the small things. My grandmother's baking powder biscuit recipe that I share here is very reliable and can be varied in many ways … the perfect gift for someone who is having a hard time. They are wonderful hot out of the oven with butter, jam or other favourite toppings. Or turn them into a cheese biscuit by adding cheese to the top. I love to make herbed butter: finely chop seven to eight chives, mix with butter and serve on top of these biscuits: amazing. They are foolproof, a delight to bake and freeze easily. I have tried eliminating the eggs and used almond milk (instead of milk) and it works well; they're just not quite as light and fluffy. Mrs. C's Baking Powder Biscuits Makes 15 three-inch biscuits. Bake at 400° 4 cups flour 8 tsp. baking powder 1 tsp salt 1 cup of shortening your choice 2 eggs 11/3 cup milk or almond milk Place flour, baking powder, and salt in a bowl stir together. Add shortening and mix. Beat eggs and add to milk add to dry ingredients and mix. Do not over stir. Roll dough on floured surface and cut into circles with a glass or cookie cutter. Eurosa Farms

If you recently bought or were
the lucky recipient of a beautiful bouquet of roses, gerbera daisies or alstroemeria, those flowers most likely began their life at Eurosa Farms here on the Saanich Peninsula. Three generations of the Bulk family have dedicated their lives to the greenhouses and the flowers that thrive in them. I met with Paul Bulk, Head Grower at Eurosa, to see what goes on behind the scenes to ensure those gorgeous flowers make their way across the province
and into bouquets of all sorts. Paul's parents began by growing roses on the first five acres of Eurosa Farms in 1979. Things went well until the infamous blizzard of '96 stormed in and flattened all of the greenhouses. Lots of hard work went into rebuilding the following year and in 2000, another five acres was purchased for more production land. In total, the 10 acres now produce three varieties of flowers: roses (cut and spray varieties), alstroemeria and gerbera daisies. They also grew bell peppers for a few years, but as the demand for roses

continued to increase, those greenhouses were converted to roses. Roses, the farm's primary crop, begin as cuttings and they're grown in soil-less coconut husks. A single rose plant optimally lasts for five years and in any given year, approximately 20% of the plants will need to be replaced. In total, roses make up 2.7 acres of Eurosa with almost an entire acre dedicated to spray roses, the tiny little roses with several to a stem that can come in a variety of colours. For optimal growing, the rose plants are lit for 16 hours a day, which is why if you drive by on West Saanich road in the evenings, especially in winter, you can see the greenhouses glowing with a soft orangey light. Most of the growing conditions for all the plants are computer controlled, including lighting, heating and irrigation. The finished roses are harvested every day except Sundays and are prepared to head off to the United Flower Growers auction, which is held in Burnaby three times a week. From there, the roses will head as far as Winnipeg and Portland, Oregon, as well as across B.C. and Alberta. As with most farming, pests, mainly thrips, which target the head of the rose, are a constant issue. Paul has tested out all manner of techniques for keeping the harmful insects from destroying the plants, including releasing bags of other insects that will leave the plants alone but feed on the pesky thrips, as well as trying to trap them on the yellow cards that provide an extra splash of colour in each row of rose plants. Thankfully, pests are less of a problem for one of the other flower varities grown at Eurosa: alstroemeria. These plants are grown in soil and like their roots to be kept cool, which is done by tubes of water that run underneath each of the rows. Eurosa Farms was the first farm on the west coast of Canada to grow this variety that boasts a good vase life, a growing life of five-plus years and a lower price point than roses. They come in a variety of colours such as pink, purple, red, white and salmon and have no fragrance. The third and final variety grown under the bright lights are gerbera daisies and gerbera minis, which hail from South America. "We get to harvest them at the most well-developed stage," says Paul, while pointing out the difference between a flower that, to my untrained eye looks ready to pick, and another that is fully formed and ready for harvest. Theses plants have a shorter life span of just two to three years and rather than cutting the flowers, they are instead broken off the plant by hand. If you've seen blue roses and wondered "how on earth is that possible?!" you're not alone. These are dyed roses and Eurosa Farms produces this "variety." They begin as a cream rose and after being cut, they are immediately processed in the cooler where they sit in the dye for 24 hours; as they drink up the dye, the cream rose will soon change colour. They have the same vase life as regular roses. Eurosa employs about 30 staff members throughout a variety of departments. From picking to bouquet making to office administration, it's a busy team that keeps this farm running smoothly. Central Saanich Lions Club Celebrates 50th Anniversary The Central Saanich Lions Club is celebrating 50 years of service to our community. The club was founded in March of 1969 by 28 local men who saw a need for a service club. The Club is part of Lions Club International, whose mission statement is "to empower volunteers to serve their communities, meet humanitarian needs, encourage peace and promote international understanding through Lions Clubs." Over the past five decades, the Club members have upheld their motto of: "we serve." Club projects are all based on serving the community. The Lions Club can be found at many events with its traditional pancake breakfasts and barbecues to raise funds for various projects. The Central Saanich Lions Club has contributed over $1.2 million to the community, plus thousands of hours of community service. Club service to the community includes more projects than can be listed here, but recent efforts such as $20,000 to the Brentwood Bay Performance Stage in Pioneer Park, and $10,000 to the Central Saanich Batting Facility at Centennial Park are two examples. A big project that took over three years and some 40 work parties occurred a few years ago. Funds were raised by collecting, cleaning and selling brass from old used water meters discarded from both Central Saanich and Saanich municipalities. A cheque for $45,000 was presented to the Victoria Hospitals Foundation to go towards purchasing "Green Light" laser equipment to use in cancer treatment. Service to the Mount Newton Centre Society, and a motor scooter program for people with mobility problems, are projects that may not show Club sponsorship, but are greatly appreciated. Funds raised at the annual Christmas Tree Chip, firewood sales, annual Easter Egg Hunt and Halloween bonfire, as well as the many breakfasts and lunches, all go to local student scholarships, and grants to local and regional needs. Lions Club International is best known for its work in ensuring vision for all. In upholding this commitment, The Central Saanich Lions Club, in cooperation with School District #63 and the ȽÁU, WELNEW Tribal School has provided vision screening/testing to more then 2,800 students in the last 12 months and our eye glass program helps to subsidize eye glasses to students in need who require vision correction. The Central Saanich Lions are always open to new members. At present we have 46 members, and lots of room for others to join. Membership is open to women and men of all ages interested in serving their community. Meetings are held on the second and fourth Thursday of
every month between September and June at the Lion's Hall on East Saanich Road. The meetings, which start at 6:30 p.m., include dinner, guest speakers and fun and enjoyment for members while building a sense of teamwork. Local Photographers' Images Compete Internationally

Matt Hardy, English landscape and wildlife photographer, says: "Beauty can be seen in all things; seeing and composing the beauty is what separates the snapshot from the photograph." Three photographers from Saanich and the Saanich Peninsula area – Leah Gray, Mike Wooding and Daniel Rondeau – have developed that special eye. Their images (on this page) are part of Canada's entry in the prestigious Four Nations photography competition with submissions also from Australia, New Zealand and South Africa. Each country enters 80 photographs in four categories: Nature, My Country, Open and Monochrome. Remarkably, Canada has won first place for the last four years running. In a rigorous process, the Canadian Association of Photographic Arts (CAPA) selects the top images from each of its competitions followed by an independent judging panel that re-scores the images to select the very best for submission into the Four Nations competition. Wooding, Gray and Rondeau are all members of the Victoria Camera Club, which Mike describes as a "vibrant" club that offers workshops and the chance to chat with other photographers. For these three camera buffs, their long-time hobby has turned into a passion. Retired for 13 years, Mike Wooding considers himself a naturalist as well as a photographer and has run a nature photography website for the past eight years. His subjects are primarily birds and he loves the wide diversity in the region. During summer's heat, when birds are less active, he turns to photographing insects, particularly dragon flies and damsel flies. These attractive insects like to perch,
which gives him time to compose the shots. His advice to neophyte photographers is to get on the same level as the subject and have the composition tell a story. "You're always looking for the 'Wow' factor." Leah Gray's photographic skills developed 15 years ago when shooting pictures at her son's football games. She credits that experience with teaching her how to anticipate, establish the camera settings quickly and be fast on the shutter. Involved with horses for many years, Leah finds they are a natural subject for her photography. In the selected image, she likes that it captures the white of the horse's eye at the moment it looks right at the viewer. This photograph, entered in the Four Nations Open category, was originally submitted to CAPA's Fine Art competition where it received an impressive 29.5 points out of 30. Daniel Rondeau's passion for photography goes hand in hand with his love of hiking and the outdoors. Even on shorter walks he'll take along his camera "just in case." By being prepared, he was able to capture his photo of a garter snake swimming in duckweed in Swan Lake. "I saw something in the water about 10 feet away and lay on the dock to get an eye level view for the shots." It wasn't until he enlarged the photographs at home that he realized he had caught the reptile with a cricket and waterfleas sitting on its head. He says: "Although I was at the right spot at the right time, it's also about knowing your equipment and how to quickly adjust it to properly capture a fleeting moment." The photos by Daniel and Mike are entered in the Nature category and must follow strict guidelines. Few adjustments can be made to the original "raw" image other than colour saturation and sharpness modifications. These talented photographers see and compose the world around them in images that let the rest of us appreciate the beauty too. We wish them success in the Four Nations competition. Afternoon Tea by the Sea Fundraiser Picture a serene backyard setting with a view of Piers Island across the narrow strait, boats drifting across the panorama, and then add groups of friends enjoying classic afternoon tea at pretty tables set with china teacups and saucers. That's the setting for the third annual fundraiser tea party – this year, for Breakfast2Music – hosted by Lili Jaehrlich and Linda Bristow, scheduled for Sunday, July 28th. Co-bloggers and friends, Lili and Linda, with their respective spouses, moved to this idyllic North Saanich area in the fall of 2011. They met at the Peninsula Newcomers' Club where they found that they both appreciate the local entrepreneurial spirit and the unique shops, restaurants and businesses in the Greater Victoria area. Wanting to share their discoveries with others, they launched their website: https://www.VictoriasSecretGems.ca. Combining this appreciation for their wonderful new community with their desire to support others within that community, Lili and Linda annually host the afternoon tea party as a fundraiser for lesserknown charities in the Greater Victoria area. Last year, the featured charity was KATS, the Kids at Tennis Society (http://kidsattennis.ca/), which provides free tennis lessons

to disadvantaged kids. This year's featured charity, Breakfast2Music, helps provide breakfasts and music programs to schools across Greater Victoria. 75% of their funding supports the breakfast programs, and 25% of funding supports music programs (see https://breakfast2music.com). According to Breakfast2Music, $1 a day helps feed a child a healthy snack. $2 a day helps feed a child a full breakfast. The music programs include musical instruments and technology, tutors and participation in the Victoria Conservatory of Music programs. Donations are welcomed, with gratitude. Guests at this year's afternoon tea party fundraiser are not only treated to beautiful surroundings. Makeup artist and stylist, Erin Bradley, will present her tips to help us "look like ourselves, only better!" Musical performers will be featured throughout the afternoon. Robin Sloan's Sourdough proved to be a fun, quirky and very entertaining read. This in turn led to a really enjoyable Book Club meeting last month – thanks to all of you who came along. I left with a smile on my face, which is exactly how the book made me feel too! The novel's main character, Lois Clary, is living a small, grey life when we first meet her. She's a software programmer working at a San Francisco tech company. It's a life of long work hours and a constant stomach ache. Her world starts to change when she meets some mysterious brothers with a gift for making food that's good for the soul. Their spicy soup, and especially their sourdough bread, open Lois's eyes to how good food can make you feel. They gift Lois their sourdough starter (or culture, and the double-meaning is fully intended) and Lois' adventures in breadmaking begin. Our readers "gobbled" up this story! They found it to be a charming book: quirky, weird and fun. Lois is a spirited and believable protagonist and Sloan surrounded her with sympathetic supporting characters. Several members talked about the "Lois Club" and how they found it a really fun idea (and one reader told me she'd looked it up, and they exist!) Those older Lois' acted as a mirror to Lois Clary, showing us how she blossoms and grows through the story. The sourdough starter becomes a character in itself, leading to some pretty extraordinary leaps of imagination. It's a book that makes you want to bake, or a least eat, bread! It made us want to travel to San Francisco. It provoked thoughts about the importance of culture and travel, and also about artificial intelligence and the danger of losing connection with physical tasks in the rush to automation. There's certainly some elements of satire of the current foodie culture, especially in the section set at the ultimate Farmer's Market the Marrow Fair, but it's a gentle satire, full of lovely images and food ideas. The top tip from several of the group is that Sloan's first novel, Mr Penumbra's 24-hour Bookstore, is even more enjoyable. Next month we will be discussing Michelle Obama's Becoming and exciting news – the library is open again on Resthaven Drive! We will be back to our usual meeting time of 6:30 to 8 p.m. on June 12, in the Nell Horth room.

Outdoor Kitchens: Oh How They’ve Changed!

There's nothing quite like the smell of barbecued food wafting along on a warm summer breeze. How about adding potluck salads and roast veggies, refreshing drinks, chocolate for dipping strawberries, comfortable chairs and good company – doesn't that make you want to host a barbecue this weekend? When it comes to the barbecue itself, small charcoal briquette-burning hibachis and kettle-style barbecues have largely disappeared, making way for an incredible choice of gas barbecue grill carts. There are also flat top grills which feature a large cooking surface that can be used to cook pancakes in the morning, boil water for coffee, and grill steaks in the evening. Add in a pizza oven with a do-it-yourself brick kit, and you are ready to invite your whole neighbourhood over for dinner. So, what is needed to create an out-ofthe-ordinary outdoor kitchen? Well, one way is to purchase a modular kitchen set. The basic set includes a liquid propane gas grill with a pull-out tank drawer, rotisserie burner, integrated halogen lights and a countertop. Other units can include a modular sink with side burners and cabinetry for storing supplies, and a fridge with granite, stone or tile countertops. The beauty of this is that you can buy the set complete with the traditional grill tools and accessories in the morning and be barbecuing that night – or at least that's a possibility. Being mechanically minded and having helpful friends with a pickup truck might make the install a lot easier, and definitely more fun! Today's outdoor kitchens most often use liquid propane or natural gas for fuel. Propane is more portable but it can run out at the most inconvenient cooking moment if you forget to check the gas level. With natural gas, you won't have that problem, but it can be expensive to add a gas connection to your deck if

there isn't one already there. A portable grill barbecue is another option; it has collapsible scissor legs and works just as well in your backyard or at a campsite. If you need a second element on which to simmer corn on the cob or other vegetable dishes you can add a compact dual fuel camp stove that runs on butane or propane; it is easy to transport. However, as in all things you buy, do take the time to consider the quality of the elements that make up your purchase. Low-quality burners and heat deflectors can rust through and trying to obtain replacement parts for them could be an issue that will spoil your summer fun. Who wants to take those rusty pieces and add them to the landfill? Building an outdoor kitchen yourself is a worthwhile idea if you are 84 SEASIDEMAGAZINE.CA | JUNE 2019
handy with tools and have an abundance of free time. Paving stones, concrete, bricks or a deck will reduce your lawn mowing duties. You can add gas, water and electrical outlets for cooking, lighting and entertainment systems. A grill mat will protect your deck or patio from food and grease stains. Another idea to consider is whether you need a roof over the cooking and seating area – it will allow you to stay dry while enjoying a summer downpour – like camping under a tarp, only better! Don't forget the lighting. How many times have you been cooking a delicious piece of fish or a mouth-watering steak on the barbecue and had to bring it inside to check if it's done? The options include string lights, patio lights, stake lights, solar chandeliers, outdoor wall lanterns, LED light pendants, and

You want a cozy atmosphere, not lights that are big enough to light up a baseball stadium! Your neighbours will appreciate your consideration and thank you for not obliterating their view of the stars. If you don't want to balance corn on the cob and a salad on one knee and your drink in the other hand, then outdoor furniture is a good idea. Tables, chairs, and umbrellas range from budget conscious, "sure to rust and break" by the end of the summer to some of the most deluxe and beautiful pieces of furniture that you can imagine. But is it comfortable? Check it out by sitting for a while before you buy. Choose a table and chairs that are stylish, comfy, sturdy, water repellant and colourfast. They must be able to withstand dabs of mustard, splashes of red wine, and the outdoor elements – certainly for longer than one or two seasons! Add a patio heater and you will be able to eat outside on chilly nights throughout the year. Hardware stores stock a three-outlet distribution port that allows you to operate up to three propane appliances simultaneously. An attractive steel tank box can be added, which will contribute an element of design and at the same time will protect and keep your propane tank out of sight.

Picken says: "The tour is always different because artists are constantly exploring new ways to express themselves through their art." She suggests: "Give yourself plenty of time – the full two days – to be able to browse and talk to the artists about their techniques and creative inspiration." The colourful self-guiding brochure can be found at locations around the Saanich Peninsula and in Victoria. A complete list of locales carrying the brochure and an online version are available at www.artsea.ca under "ArtSea Happenings." The brochure contains descriptions, addresses and photos about the artists' work which makes it easier to decide on a route. Bright red and white signs will help visitors find their way to the studios. During the studio tour, visitors can explore the Peninsula and enjoy its rural scenery encompassing wineries, Butchart Gardens, forested parks, marinas, market gardens, country stores and garden nurseries. The ArtSea Gallery is located beside the waterfront pathway that leads walkers into downtown Sidney where they can enjoy its small-town ambiance. Picken especially likes the fact that the studio tour brings the community together, making it "a good way for new residents to be introduced to the Peninsula art community."

taking part in ArtSea's Spring Studio Tour has almost doubled over last year's tour. Thirty artists will open their studio doors to the public on June 8 and 9, from 10 a.m. to 4 p.m. each day. "We're delighted to have a number of new artists involved as well as the return of some artists who have not been part of the tour for a few seasons," says Wendy Picken, artist and lead of the tour organizing committee for ArtSea, the Saanich Peninsula's community arts council. "Anyone who went on last year's spring or fall tours will discover a fresh crop of artists along with their favourites." Visitors will be able to enjoy a wide variety of genres that include paintings, art photography, textiles, metal and fabric sculptures, woodcuts, stoneware, wearable art, jewelry and even a guitar maker. The tour also gives visitors a chance to explore the beautiful semi-rural Saanich Peninsula. The majority of artists on the tour will display and demonstrate their art in their home studios while a few will group their work in one setting, such as at McTavish Academy of Art in North Saanich and Russell's Nursery near Deep Cove. A good starting point is ArtSea's Gallery in Tulista Park, Sidney where self-guiding brochures are available.

The other day, I had the pleasure of paying a visit to Urban Bee Honey Farm's new western town, populated by all manner of farm animals including several baby goats, some peacocks, a pair of ducks and many chickens. We were lucky: owners Lindsay and Jason, and their three children, were on hand to chat a bit with us about their newest arrivals. One of the young girls pointed out a chicken to me. "She's not our chicken," she shared. "We are just borrowing her because our chicken wasn't sitting on her eggs." "A babysitter," I noted, and she agreed. A cute concept, that of a chicken taking care of another's eggs, and one that is of course echoed in the human world with the ideas of wet nurses, nannies and the like, but with Father's Day on the horizon I wonder "what about the guys?" Where are the roosters that are sitting on someone else's nest? Off to Google I went, and it turns out that although rare, there are species that are "stellar stepdads." It appears that the motivation behind this behaviour is usually a bit self-serving, but it does exist in the animal kingdom. Which it does in the human world too, of course, although in my opinion this gets overshadowed much of the time by genetic fathers. Visit a card store and you'll likely be hard-pressed to find much of a selection of cards that don't say "dad" or "father" but still celebrate the holiday and are the right fit for that man in your life who holds neither of those titles. In my family we call him simply "SD" (for stepdad) and he married my mom 10 years ago, filling a spot left vacant by my distant father. Although my SD stepped in once we were adults, there are so many unsung stepdads who are there almost from day one of a child's life, raising them in place of, or in partnership with, the biological father. These are my Men to Watch: the roosters who sit on another's nest without question or accolade, or even a card that has the right title on it. Happy Father's Day to all.
