I moved to the Island three years ago and to the Saanich Peninsula this past September. I love the peninsula. I'm always discovering new walks, beaches, wineries, markets and parks. There is a treasure around every corner and I'm very blessed to live here. When I'm not flying my Falcons, or tending to my small hobby farm; I'm either tucked away in my studio writing, playing in the ocean or running a boutique knitting business which allows me to give back to women and children in need. Being part of a community is important to me and I am thrilled to be able to contribute to this magazine with this month's book review. I look forward to getting to know my wonderful peninsula neighbours and to be involved in this great community.

First, I'd like say I'm not a writer, technically. I contribute the Ignition column monthly, and I love to do so. I've been interested in mechanical things since I was knee high to a grasshopper. As a school aged child, my favourite projects were always science related, and my dad helped me learn to learn if that makes sense. After 17 years in the motorcycle business I transitioned into the car business and haven't looked back. The car business is very exciting, and it's evolving at lightning speed, keeping me and my staff on our toes. So writing for Seaside is a great outlet where I can share little tidbits of great info with you, the readers. I'm passionate about our environment, and culture, and most of all, my family.

first word Are you getting into the spirit of giving this summer? Seaside did! For the second year, Seaside hosted its Taking It To The Street charity event on June 13 at Mary Winspear Centre. The focus of the day's events was for Help Fill A Dream Foundation, a charity that ignites hope in the lives of children who face life-threatening conditions by fulfilling their dreams, improving quality of life, and assisting their families with care and financial support. Since 1986, Help Fill A Dream has supported over 2,100 Island children. Some have asked me, "How can you host your own charity event, manage Seaside Magazine and raise two kids?" Some days I wonder myself, but for the most part when I meet the children we help, it's all worth it. I explain it to my kids and they totally get it. And then there's my team. I couldn't do any of this without them, so I'm really the lucky one, but I guess we all benefit in the end. One thing I've learned through this journey is that dreams do have a ripple effect. The impact goes far beyond the dream child, it touches family, friends, neighbours and the community as a whole. Every dream

is a story of joy and healing and is as unique as the child making it. Some are big, some are small, some are wild and exotic, some are tame and closer to home. On Saturday it was an extra special day, as we announced two 'dream reveals,' one for Coen and one for Emma. Coen suffers from Bilateral Hydronephrosis and underwent a kidney transplant just over a year ago. While he is doing well now, there will always be the potential for challenges in the future. Emma has a form of cancer called Pineoblastoma, an aggressive brain tumor. Both dreams are headed for Hawaii, while Coen wants to swim in the ocean and spend the day building sand castles, Emma's includes volcanoes and luaus. One thing Help Fill A Dream hears consistently from families is that time together becomes scarce and very precious during a child's illness. A trip away gives everyone a chance to relax and rediscover what it means to be a family again. Another very special part of the day was a surprise visit from Kelly Slater, our dream recipient from last year. Kelly suffers from cystic fibrosis and last year we sent him and his family to Sweden to play hockey with his team. He and his Mom shared stories with the group about their amazing trip. How great it is to see a charity event bring together a community of volunteers, passionate hockey players and dedicated sponsors ‌ all for a common cause (see pg 11). Thanks to all who were involved!

In my article in June's Seaside, "Building a Healthy Community", I mentioned the areas of health care on the Peninsula where I had actually interviewed the practitioners. In the process, I inadvertently left out a very important and valuable source of health care in the community - chiropractors. As the weather heats up
we all look to cool down over the summer months, and for many of us that means fun in or near the water. June is Water Safety Month, and Cathy Watts, Panorama’s Aquatic Coordinator, reminds us to take pause when it comes to being around the water this summer, be it at an outdoor pool, beach or lake, especially where kids are concerned. In the four years between 2007 – 2011 in B.C., close to 400 drownings occurred, and over half of those victims drowned while engaging in recreational activity, mostly swimming. Cathy emphasizes that people tend to underestimate the hazards of water. Outdoors, lack of supervision of children around water is the greatest risk to their safety. She cautions parents and caretakers that drowning can occur in less than 10 seconds, and in as little as an inch of water. Drowning is a silent killer. You won’t hear the cries that come with other frightening or dangerous situations because voices are stifled when someone is drowning. Eyes must be on children at all times. The highest at-risk demographic is that of young adults, aged 18 – 35. Contributing factors are usually that the victim is either a non-swimmer, under the influence of alcohol, or engaging in unsafe activity. Where do we begin to educate kids about water safety? In the pool, says Cathy. Every year within School District 63, all third graders participate in the Swim to Survive program, which this year reached about 350 kids. Through this program, funded by The Lifesaving Society, kids learn basic swimming skills that they may not otherwise have access to. The skills of primary importance for kids to learn are treading water for one minute and swimming 50 meters, with or without a PFD. These basic abilities translate into a real-life situation should a person fall into the water. By treading water, they can keep their head up until pulled to safety, and by swimming 50 metres, they can hopefully swim to safety themselves. By 2016, Cathy hopes to have not only third grade children in the pool participating in this very important program, but seventh graders as well. If parents are interested in lessons for their children but don’t know where to start, they can contact Cathy Watts herself, or Miko Heddle, Aquatic Program Assistant, to arrange for a 15 minute swim assessment. Once ability has been established, there are many swim lesson options to choose from to suit your schedule. Lessons run all summer and throughout the year, in both French and English. "What's the best way to
bring Canadians together? Organize a hockey game!" declares Craig Smith, Executive Director of Help Fill a Dream Foundation. Seaside magazine's second annual Taking it to the Street Hockey Tournament, held at the Mary Winspear Centre on June 13, in support of Help Fill A Dream Foundation proves how true this is. Nine teams signed up to battle for road hockey supremacy. This year's tournament raised $11,400, with ScotiaBank and their Sidney branch pledging to match the amount raised, up to $5000. Craig describes the event as "the culmination of a vision by Sue Hodgson." The Seaside magazine owner made a commitment three years ago to become involved in supporting the foundation. "I'm thrilled to work with the foundation and to be able to assist in fulfilling dreams." Since it began 29 years ago, Help Fill a Dream has fulfilled the dreams of more than 2,100 Vancouver Island children (to age 19) facing lifethreatening conditions, and has given financial support to their families when and where it's most needed. At this year's Taking it to the Street event was a guest appearance from Marty the Marmot, mascot of the Victoria Royals, and the Kraft Hockeyville Canada trophy was on display for photo ops. Some great prizes were raffled off, there was a Fun Zone for smaller kids, and a shootout contest for the bigger ones – two players from each team! The highlight of the day is the Dream 'reveals'. At this year's Taking it to the Street event, two children had their dream come true and both had chosen the same destination – Hawaii! Fiveyear old Coen Wallace was born with nonfunctioning kidneys and underwent a kidney transplant at the age of three. He is finally able to travel and his dream is to go somewhere warm and play on the beach. He'll be flying off to Hawaii with his family soon for some quality beach-time.
Eleven year old Emma Smith wants to go to Hawaii to see volcanoes and enjoy a luau. Emma was diagnosed a few years ago with a malignant brain tumour and her struggle continues. It has been an arduous journey for her and the family but a more pleasant one lies ahead when they take off for a week on Oahu. Telus supplied almost half the volunteers at the tournament. Telus vice president Tim Draper says, "They're here as a part of Telus Day of Giving where employees, their families and friends commit a day and give back to the community." Next year, he says, there could be a Telus team in the tournament as well. Over in the food concession area, TD Canada Trust's James Haley Browning grills up hot dogs and burgers. "TD is sponsoring the barbeque and covering the cost of the food so all the proceeds go to the charity," he says. "TD does a lot of charitable donations around children's health and wellbeing so this is right up our alley." Also at the tournament was Arianne Stevenson, a student at Parkland Secondary whose presentation in the Youth and Philanthropy Initiative program won a $5000 grant for Help Fill a Dream. Arianne says she was inspired by the story of 15 year old Kelley Slater who was last year's Taking it to the Street dream recipient. Kelley has cystic fibrosis and his dream was to travel to Sweden and Finland with his hockey team. The generosity of the local businesses and corporate sponsors who gave money and donated prizes made this all possible. Without the volunteers who spent their Saturday directing traffic, helping set up and take down, and keeping game scores, this event could not have happened. The people who bought food, came out to play street hockey, and purchased raffle tickets all helped support a very good cause. "We don't always have to make a big time or money commitment to make a big difference in our community," says Sue. "It's the little things that count."

Ballet Victoria Annie’s Rodeo – Dramatically Different Ballet Ballet Victoria will close out its 11th season with yet another original from the prolific Paul Destrooper. The artistic director is heading to the past to reimagine Annie Oakley into a graceful yet tough-as-nails star of a western show. Annie’s Rodeo will be the highlight of the mixed program ballet on the Charlie White Theatre stage Sunday, July 12 at 2.00 p.m. “Little Sure Shot” Annie Oakley is the star attraction of Buffalo Bill’s Wild West Show, entertaining royals like Queen Victoria and Kaiser Wilhelm II. This it is the premiere of the new story ballet, Annie’s Rodeo. Bethany Le Corre’s first lead will feature a one-act comedic turn incorporating music from Aaron Copeland’s riveting Rodeo score, a dash of rock and roll, and the works of three international choreographers kick off a ballet stampede. The show will also include a primal and physically demanding duet performed by principal dancers, Andrea Bayne and Matthew Cluff to a work by Arvo Pärt. “Andrea and Matthew have paired beautifully for two years now,” Destrooper commented. “An audience favourite, they are elegantly athletic, supremely talented and a joy to watch.” Annie’s Rodeo and Other Works, from classic dance to classic westerns, this program offers above all to be fast and fun!

Loving Rover Back: Groom That Dog by Doreen Marion Gee This is part of a rotating series of articles on members of Sidney Meet Up Women's Networking Group, featuring women in business on the Saanich Peninsula. Dogs love and accept their imperfect human owners no matter what. The people at Groom That Dog are simply returning the favour. They are giving back the unconditional love that dogs offer in abundance every day. A new canine heaven, Groom That Dog, has been operating since April within the Sidney Feed Barn at 10109 McDonald Park Road. Proprietor Janet Anne Lynch is over the moon about her new enterprise: "Groom That Dog provides full-service showquality grooming at pet store prices and convenience catered specifically to your needs. We offer a safe friendly environment to pamper your pooch with head to tail grooming." A healthy mouth is very important: "I strongly support and believe in canine dental hygiene and I partner with Cheyanne Cave of Happy Tails Teeth Cleaning to provide what I feel is an essential service to my clients." Janet brings a wealth of experience to her new venture: "Almost 17 years in one of BC's top kennels has exposed me to virtually any and every situation in canine care." She is passionate about her chosen field: "I love dogs because they give so much and ask so little. They give love, loyalty and devotion unconditionally. Money may buy a lot of things but it won't wiggle its bum every time you come home." Dogs are dependable pals, always there in good times and bad. Canines soothe and comfort children with autism and adults with mental health issues. Janet and her staff are giving that same unconditional love to their four-legged clients, including dogs that have unique challenges: "We have taken on special needs animals that other shops would not and if it takes a little more time then so be it. The needs of the animal are paramount and we seek to enlighten owners on the special needs their pets may have and help them in all aspects of their dog's life – not just grooming." When humans feel safe and nurtured, they can overcome many problems. Rover is no different: "Dogs that have come to us skittish or afraid are now confident and happy because they realize we care and they are safe." We had a great response to our June 'Pets' issue – it's obvious that the Saanich Peninsula is full of pet owners, and pet lovers. Last month's comment piece discussing some of the options for what to do with your pet when you go on vacation didn't have room for a thorough examination of using a pet boarding facility. This month we've asked the experts to share some of their advice just in time for the summer holiday season. The first point they all stress is that a boarding facility is fully dependable. They are professional businesses and have backups and contingency plans in place to cover staffing etc. Once you've made a booking you can be relaxed and confident that your pet will be cared for whilst you are away. They will be licensed and insured which should give you piece of mind. Take recommendations from your vet or from friends with animals. This is the best way to find out what will suit your pet – online reviews can sometimes be misleading. Different facilities will offer different options and you should look for a place that will suit your pet's temperament. In some, animals are kept separate from each other, in others they can socialise. You know your pet best and will be able to find the situation that fits them depending on whether they like interaction or not.
Always arrange a visit. The boarding facility will be happy to show you around and answer your questions. Unfortunately pets can become ill whilst their owners are away – it's a big fear for most pet owners. At a boarding facility there will be staff with the experience and knowledge to deal with this situation. Make sure you leave good contact information and you will be contacted if the situation requires it. Special diets, medications and routines can usually be accommodated, especially if you give all the information ahead of time. Questions you should ask when you visit a new facility include: what vaccinations are required? What items are allowed to be brought with the pet? Is there a cancellation policy/penalty? Are special care provisions offered for a fee or no charge? Should you bring your own food? With some research ahead of time it can be easy to find a pet boarding facility that will suit your dog or cat. Leaving your pet in the safe hands of a professional business should leave you free to enjoy your break. "Growing old is
an immemorial grief of mankind. To lose the striding joy of our racing feet, the fierce, sweet pride in the long swim, the lonely climb, no more to feel the longing and the fear of the young girl going to her early love, are the eternal sorrow of man … We mean to master this business of aging." So wrote Ewan Cameron, the "experimental psychiatrist who employed controversial techniques in attempts to fix or repair perceived mental defects in his patients," according to Richard D. Flavin. Cameron had big ideas about psychiatry, life, death and the whole damn thing. When he died in 1967, he left behind an irreparably tarnished reputation – to say nothing of a great deal of pain and torment. Is growing old really an "immemorial grief?" I put the question to my Facebook friends. Here's how some of them responded:

She hopes that by the time she gets there – in about twenty-five years' time – she'll "be more at ease with who I am, more at peace …" Undine Charlie Downie reports what her dad used to say, "Growing old is lovely, being old is shite!" Bryan Carson says the best thing about getting old is that "you don't have to be nice to old people anymore." Tamara Alferoff asks the provocative question: "What's old?" Some months before he died at age 83, Maurice Sendak, author and illustrator of the children's book Where the Wild Things Are – and many other titles – said he could see beautiful aging trees from his window, which now he had time to watch. "I can take time to read books, to listen to music." At the same time, he cried a lot "for the friends that have gone before me." Some of the wild things older people think about are the things no one wants to talk about: Loneliness, introspection, declining health, death. We examine matters not previously even in the shadows of our minds. Most of us don't care a jot about the terror and thrill of falling in love. Either we're oblivious to matters of the heart or we take vicarious pleasure in watching those in the throes of blossoming romance. Thank God we don't have to endure again the painful aftermath of a relationship gone awry. As for running a mile or climbing a mountain we're just glad we can get out of bed in the morning. If we can walk to the coffee shop we count ourselves really lucky. We grow less physically while we grow more spiritually. "Old age, as the harvest of life, is a time when your times and their fragments gather," writes John O'Donohue in Anam Cara. "…you unify yourself and achieve a new strength, poise and belonging that was never available to you when you were distractedly rushing through your days." I once met a woman of older years but uncertain age who said that, had she known how young an age seventy was she'd have lived more passionately. Maurice Sendak said, "Live your life. Live your life. Live your life." Then clear your desk. O'Donohue gets the last word: "When your time comes may you be given every blessing and shelter that you need." stress. Sometimes these stresses overwhelm the nervous system, causing interference or irritation within it. "This can set up stuck patterns in the nervous system which lead to physical compensations and dysfunctions in the body. This is what brings people to our office." Now to the detective work: "We get in and find where the problem is happening. Once you deal with the underlying problem, the body and the nervous system start functioning at a better level. This is where chiropractic shines!" How do you do that?, I ask. The doctors use an instrumentbased, non-invasive adjusting technique on the spinal column called the Torque Release Technique, rather than manual adjustments. in pursuit of the G olden Y ears Seniors issues are Officially on the table As we settle into the warm bliss of summer we are, once again, grateful for the incredible beauty of our island community and the benefits associated with our enviable lifestyle here – a calmer, more laid-back atmosphere; a culture that encourages spending as much time outdoors as possible; and by Shauna Dorko a more forgiving climate year-round Owner, Sidney SeniorCare than our Eastern counterparts. It is not surprising that residents of BC have the longest life expectancy in Canada or that our province has the fastest growing senior population in the country. By the year 2031, our population in BC will be comprised of 24% seniors with an estimated 1.35 million seniors – 56% will be age 65 - 74, 30% will be age 75 - 84 and 14% will be 85+ years old. Now that BC is finally sitting up and taking notice of the current statistics, advocates of seniors have identified what they feel to be the most pressing challenges that seniors face these days. Housing: There is a definite need for more financial support to meet basic housing needs for seniors. The high cost of renting and home ownership is prohibitive for many seniors living on low to modest incomes, and there are even fewer housing options in rural areas. Transportation: Impaired mobility, remote living conditions and the increase in complex-care seniors are issues that need to be carefully considered when determining suitable transportation options for seniors to get to their appointments and even run daily errands. Low Incomes: The misconception that today's seniors are wealthy, affluent and don't need any financial assistance is beaten down by hard facts – 50% of BC's seniors live on $24,000 per year or less and more than 52,000 seniors are living on $20,000 or less. Lack of Awareness of Services: Many seniors are simply not 'inthe-know' when it comes to their awareness of programs, services and assistance available to them. Information is not clear, forthcoming or shared appropriately with seniors and their families. Ageism: Seniors are typically seen as weaker members of the community and are often diminished and taken advantage of. By partnering together we can help seniors take their rightful place as respected elders and mentors of our community. Top-Class Arts in an Intimate Setting by Hans Tammemagi
Tucked away in one
of the prettiest corners of Vancouver Island lies little Muse Winery. The elegant three-acre vineyard is secluded, almost lost, at the north end of the Saanich Peninsula, buried in lush greenery near Deep Cove. An eagle pair tends their chicks high atop one of the soaring, stately Douglas firs at the property's edge. "Many people come just to watch the eagles while sipping wine on the patio," says Jane Ellmann with a broad, friendly smile. Jane and her husband, Peter, own and manage the winery. Peter Ellmann is the winemaker, having learned the trade in California's Napa Valley. Jane, who formerly worked in the hospitality trade, is responsible for promoting the winery, attracting visitors and, most importantly, making them feel welcome. We sat on the patio, a little Garden of Eden, beside rows of vines and tasted an Ortega and then a Pinot Gris, both dry, crisp and with floral aromas. "We make Bacchus, Ortega, Pinot Gris and Marechal Foch wines from our own grapes, and those from nearby vineyards," explained Jane." Red wines include Cabernet Sauvignon, Merlot, and Syrah, but these are made from imported Okanagan grapes. Production is 3,500 cases per year. Most popular are the whites made from local grapes. I found the labels particularly attractive, featuring a mermaid and a catchy saying, for example, the Syrah has the subtitle "big, bold & bodacious." The Muse philosophy is to make highquality wine, and after the tasting, I agreed, they do! What makes Muse unique, I discovered, is the broad spectrum of arts they present. "We want people to have a great experience when they come here" said Jane. Large painted sheets draped from the sloped ceilings of a spacious art gallery give it the exotic feel of a Bedouin tent. Paintings line the walls. The gallery also hosts performances and weddings. An adjacent outside performance
area is used during warm weather. While other wineries display art, very few, if any, also have ballerinas pirouetting across a stage, chamber musicians fiddling, or thespians dramatizing. Bistro Muse serves mouth-watering dishes like Salmon Rillete, Crabcakes, Wine Maker's Ribs, and Cocont Pana Cata. Not surprisingly, the food is excellent. Judi Garbala from Starfish Catering and Inspired Fare does all the bistro food and event catering and Peter, who was formerly an executive chef, takes care of the ribs; and all the wine of course! Jane explained, "My favourite part of this business is meeting people from around the world. It's satisfying to see how even well-travelled people are impressed by the beauty of Deep Cove and our winery."

Life's Better At the Beach: Seaglass Waterfront Bistro by Lara Gladych
This is the third in a six-part series of profiles on some of the Saanich Peninsula's wonderful restaurants and pubs. Ron and Maureen Vincent had not planned on being restaurant owners at this time in their lives. However, one day, just over two and a half years ago, they stumbled upon the vacant property at Van Isle Marina that just happened to have been owned by Ron's mother when he was ten years old. They decided to take the plunge and open
a restaurant, and here they are now, a great success known as Sea Glass Waterfront Grill. Ron has been a chef almost his whole life. Sea Glass, for him, is the culmination of both his good and bad experiences in the restaurant world, and his goal is to be extraordinary. "People too often settle for mediocrity, " says Ron, as he, Maureen and I sit and talk on a private back-patio just off the restaurant dining room. Ron wants people to know that what separates Sea Glass from other restaurants
is that customers won't be disappointed, and that they can expect excellence from the food, service and overall experience. When you walk into Sea Glass, Ron and Maureen want you to feel that you've arrived at the beach. The name and the feel of the restaurant have been in Ron's mind since he was a boy growing up in Sidney. The inspiration comes from Glass Beach of days gone by, which he says was quite different when he was a kid.

The colours and décor are transporting, with every shade of aqua, sea grass and sand you can imagine surrounding you. They have achieved their desired setting, there's no doubt about it. Dining at Sea Glass is what Ron would call upscale casual. Yes, there are white tablecloths, but there's no need to dress up unless you feel you'd like to. "We serve everybody, and every style of dress. Just wear something, it doesn't matter what," says Maureen. We laugh. Ron is behind the entire menu, "with the input of a few very important people," he adds. He is a West Coast-trained chef with 25 years of experience in Vancouver restaurants. That is where he developed his affinity for, and skill with, Asian cuisine, which you'll find influences many of his dishes. He identifies with both the style and flavours. Sea Glass is open all day, for breakfast, lunch and dinner. That being said, getting
the couple to narrow down their favourite dishes is close to impossible, as they love everything that comes through the kitchen throughout the day. The dishes I pin them down on, if they had to choose, are the Huevos Italiano and the Sea Glass Omelette, the Quarterdeck Burger and the Sea Glass Caesar Salad, and finally, the Espresso Braised Boneless Short Ribs. Ron's son Zachary brings out two appetizers for me to sample: the Black and Blue and the Deconstructed Spring Rolls. I devour the Black and Blue, a tuna tataki dish, which is blue-seared local Albacore tuna encrusted in black sesame seeds. Beneath is a bed of house-pickled vegetables dressed with citrus vinaigrette and wasabi pea dust. It's both artistic and delicious. Next are the spring rolls. I now see why they are "deconstructed," as the components are served stacked high in layers, making the dish very visually appealing. I see the Asian

BBQ pulled-pork, along with the sesame hoisin dressed vegetables, and separating each layer, crispy wonton skins that would normally encase the rest. It's a creative dish. The pulled-pork isn't too saucy or sweet, and it is balanced well with the vegetables and the crispness of the wontons. I love it! To round out my sampling, I finish with one of the desserts prepared in-house by pastry chef Katie Lohnes. It's a flourless chocolate torte topped with blackberryginger compote. It's not too rich, and the tartness of the blackberries and warmth of the ginger blend deliciously with the chocolate. If you're yearning for a getaway and an exceptional food experience, look no further than the short trip to Sea Glass, because life really is better at the beach. Enters Beacon Bed Races the
The 100.3 The Q’s Bed Races are back on Beacon Avenue for the second year with 30 teams competing on August 16th to raise funds to support palliative care at Resthaven Lodge. Joining this year, the Bayshore Home Health team is led by Sidney’s own Stasia Hartley. Giving back to the community has always been a focus for Stasia who said, “Bayshore has a long history of fundraising for palliative care across the country so the Beacon Bed Races are a great fit with our national goals for community support and for me personally to give something back. I attended last year’s races and it was a great experience all around. We’re looking forward to putting our feet on the ground this time around!” Bayshore is holding a raffle as part of the fundraising efforts. The winner will receive: An orange bucket full of eco-friendly cleaning products along with either 90 minutes of Reiki OR Two hours of house keeping OR Two hours of meal preparation. Tickets can be purchased at the Bayshore community office at 9840 Fifth Street across from Monks for $2 each, 3 tickets for $5 or 10 tickets for $10. All proceeds will be donated to the Resthaven Foundation.

Alan Mayfield travelled
In 2003, Alan began participating in Sidney's Thursday night many miles to find his roots. Born markets. "I loved everything about the market," Alan says. "I knew in the UK, Alan came to Canada in I had to bring my lavender farm to the Peninsula." The petting zoo includes 20 peacocks, a variety of chickens, and two lovely border collies who are the unofficial greeters to the farm. "The petting zoo just grew naturally out of my love for animals," Alan says. "I started taking in rescue farm animals, creating a safe haven for them, and now I've got a lovely family of happy creatures who thrive here. I never planned for a petting zoo but love sharing them with visitors. It's great fun!" Alan does almost all the work on the farm himself, helped by volunteer students and seniors who can no longer have their own gardens. Alan also works with a number of local craftspeople who help him turn the lavender into the sachets, oils and other products sold at the farm and Sidney shop. Coming back from the SCAA show in Seattle I was all excited about what was new, however, my enthusiasm was somewhat muted because Canadians are so relaxed when it comes to adopting new trends, and sometimes they take months to appear. I am excited, perhaps highly caffeinated, to report that 'Cold Draught Coffee' is here in Victoria at a few select cafes in time for the upcoming hot summer. On the Saanich Peninsula, Fresh Cup Roastery Café in Saanichton has a great version on tap and I really like that they've brewed the coffee double strength for a little more caffeine than the other ones I've tried, and added a small amount of honey to make it really smooth and very enjoyable black over ice. What makes 'Cold Draught Coffee' unique is the nitrous gas that's used to dispense the coffee from the keg. The nitrous gas mixes with the cold coffee, making for tight micro-bubbles that enhance the aroma of the coffee, but more importantly … creates a nice textured velvety-head similar to that of what you would see on the top of a pint of Guinness. Yes … I said Guinness, actually I think it tastes more chocolaty than Guinness! The category of 'Cold Draught Coffee' will be to craft coffee roasters in Victoria, what the refillable 'growler' and the unique beers that local craft brewers offer have become. Based on the fact that there are already three cafés offering a great personalized version, I suspect that other craft roasters in Victoria will not be far behind. Coffee lovers all over Victoria will soon be able to sit on a hot patio and drink some of the coolest coffees of all time. Soon, there will be 'Café Crawls' happening with busloads of overly caffeinated college students jumping from café to café chugging back sweetly caffeinated cold draught coffee. You need to try some soon on the next hot afternoon … Steve out.

New Development for Sidney Meridian Residence to Transform Downtown The Baby Boomer generation is a massive group that is now in the midst of retirement. The youngest Baby Boomers turned 50 in 2014 and oldest turned 65 back in 2011. A number of Boomers built or bought houses for their families in Saanich Peninsula areas such as Dean Park, Ardmore and Lands End Road back in the 1970s and 1980s. I discover, before I arrive, that the owners bought the property four years ago, but apart from minor changes their efforts have been focused almost entirely on redesigning their enormous garden. "Most people start with
improvements to the house, and the garden is last on the list," Jan says. "We began outside and are only now thinking of changes to the house." There is a pause. "Oh yes, and we've just had a new roof." I was intrigued. Jan and Albert are the proud owners of an attractive 4,200 sq. ft. luxury home set in a large lot on a quiet, rural development perched on a hillside with fine views of Mount Baker and glimpses of the ocean. Ahead is, what appears to be, a large attractive single storey house with cream walls, a double garage on the right, and a complex roof design that boasts gleaming new shingles. A wide exposed concrete drive leads up to the artistic glass front door with its white trim, protected by a covered entry supported by two huge pillars. There are no steps. "That was a major consideration when we bought this house," says Albert. "We wanted a house with space, light, a fine view and definitely no stairs. We're in our early seventies, and although active, we wanted to plan for the future, when we might not be so spry." "My previous house in Oak Bay had low ceilings," Jan says, gazing up at the 12 foot ceiling in the spacious kitchen. "This house has very high ceilings. It took some getting used to." The kitchen has beautiful bright oak cupboards and drawers, with modern stainless steel appliances, and oak and granite surfaces. It is a modern kitchen set in the grandeur of a 24-year-old house. A very large, angled island dominates the cooking area. "That is our next project," Jan says. "We want to move this and create something less obtrusive."
This large room, with its dark grey and blue tiles, has many windows and incorporates a dining space for six and a family area with arm chairs, small tables, a flat television and lots of reading matter. An eye-catching, woven graypatterned carpet covers much of the area. "We bought one of our carpets when we visited Turkey last year," Jan says. To the right of the kitchen, a door leads to a laundry room, a powder room and into the double garage. At the other side, a glass door opens onto a full deck overlooking the back garden, and is ideal for large gatherings. The main hall, and much of the house, has pristine old oak floors with inlaid trim along the edges. It is a house that flows: with the kitchen area to the right, leading to a comfortable lounge with its traditional fireplace, deep chairs and settee, and fascinating views of the garden and glimpses of the Islands. Throughout the house are magnificent antiques: tables, cabinets, chairs, oil paintings and fine china, best exemplified in the formal dining room, and in the guest bedroom that they call the Library. "We both inherited our parents' houses, and all their antiques," Albert explains. "This chair, for instance, belonged to my Grandfather." It seems a good reason for having a big house. Also on this level is another two-piece washroom, and at the end of a corridor is their master bedroom suite. and flowering at different times," Jan says enthusiastically. To the right of the short drive a new garden is being developed: topsoil has just been laid." I get excited when I think of choosing the plants to go there." We move to the left along a wide, level grass area with high hedges, where a tall, old fir is a reminder of earlier times. "When the house was built, great amounts of fill, from a farm below, was used to level this area," says Albert. "It's ideal for bocce ball." The lawn slopes around an extensive stone wall, complete with a wall fountain, and with elegant flowerbeds. It is my first real view of their enormous lawn. "We use Peninsular Lawns to manage the grass and Bird's Eye View Tree Service for the hedges," he says. "And I have regular visits from Jane Tice who helps me with the gardening," Jan adds. The lawn slopes down towards a picturesque pergola, surrounded by wide well stocked gardens, and with a statuesque Empress tree overhanging a traditional birdbath. "This tree has the most gorgeous blue flowers," she says. "You've just missed them." Meanwhile, two wild rabbits cavort on the manicured lawn. Jan and Albert were married last year in the beautiful garden they have both created. I hope this enchanted place brings them continued happiness.

Whether you like to cannonball, swim laps or just lounge on an inner tube, swimming is one of summer's perfect pleasures. Traditionally, when thinking of a water garden, people think of small ponds with plants and fish. However, with the growing popularity of "staycations," more and more people are looking at enhancing their property. The swim pond is a great way to have a by Mike James Wildwood Outdoor beautiful water feature that also offers the Living Centre functionality of your own place to cool off on hot summer days. Originating in Europe, natural swimming pools are growing in popularity in North America. Swim ponds use far fewer materials to build and no chemical additives, and can be designed to blend into the natural landscape. Depending on design, swimming zones typically comprise 50 percent of the total water surface area; the rest is dedicated to filtration. Water is pumped to shallow areas with abundant plant life and aggregate that act as natural filters, keeping water pure and clear. Plant life is essential in swim ponds. They help to enrich the water with oxygen, support beneficial bacteria and give habitat to frogs, birds, dragonflies and other wildlife. Creating a habitat for these creatures can actually help to reduce the population of pests such as mosquitos. Swim ponds can be comprised of many different plants that help regulate the water. Floating plants provide shade and protect microorganisms and fish from UV rays. Oxygenating plants absorb nitrates and phosphates and help slow the growth of algae. Biological filters remove contaminants and excess nutrients from the water. Plants range from decorative to functional and can be used in regular ponds and water features as well. Some decorative plant options include Tropical waterlillies, and 'Nymphaea' waterlillies. While they don't provide much oxygenating, they shelter fish and other wildlife. Other decorative plants such as 'Iris versicolor' are excellent border plants providing height, texture and visual interest. Another great decorative option is the 'Zantedeschia aethiopica' or Crowborough which is a hardy lily that is striking when planted in groups. Some great functional plants for swim ponds and other water features are the 'Myriophyllum aquaticum' commonly known as Parrot's feather. This plant is a great oxygenator and also provides a protective place for fish eggs. It has a lush, textured foliage and helps create a transition along the pond edges. Other great oxygenators include the Water Plantain, or 'Alisna plantago-aquatica,' as well as Marsh Marigold, or 'Caltha palustris,' which has beautiful buttercup-like flowers. A swim pond is a great landscape centrepiece for any home and can be a great investment in family fun time right at home in a much more environmentally friendly way than a traditional pool. Most roofing products in our area last 18 – 22 years depending on installation, maintenance, conditions and type of materials used. Shingles curling and buckling, roof valleys that are unable to channel water into guttering, missing shingles, worn chimney flashing, shingle granules in the gutters, and daylight showing through the roof boards (when you look from inside the roof space) are all signs that your roof may need replacing. Are all roofing materials basically the same? Will the cost be significantly different with different materials? There are a variety of products available some more expensive than others and depending on location and conditions of the property can dictate which is most suitable. One of the most common roof coverings consists of individual overlapping elements; shingles have over the years been made of various materials such as cedar shakes/ shingles and most commonly "asphalt shingles" which consist of tar paper saturated with asphalt and coated with granules. Due to increased fire hazard, wood shingles and paper-based asphalt shingles have become less common than laminated fiberglass-based asphalt shingles. For this review I was given the choice of various books to choose from. Being a lover of fiction I chose Quintin Jardine's, Mathew's Tale and trundled off to Tanners Book Store to pick up my complimentary copy (thank you Tanners!). I wasn't disappointed. Mathew's Tale is Jardine's 40th book and I'll admit the first one I have read by this author. reviewed by Kristine Marshall I am particularly impressed with Jardine's ability to create characters that come to life. Solid, authentic and robust characters; each one quickly and vividly makes a lasting impression telling the story through their unique voice. From the war-hardened solider of the Napoleonic Wars, to the sweet, broken-hearted young woman left behind, Jardine's characters are perceptively descriptive. Set in Scotland in 1818, Mathew's Tale is a suspense-filled page turner. After the death of his father, Mathew joins the beleaguered Scottish Army fighting at Waterloo. Accepted by his fellow soldiers as competent, fair and vicious, Mathew gets his first taste of corruption and injustice and is unsympathetically jolted into manhood. Trekking across Europe to earn his keep and return to his homeland with pride, Mathew finds the Carluke of his childhood gone and his peaceful, pastoral ideal replaced by a foreign territory, as changed and unfamiliar as the weathered Mathew. True to his tenacious nature Mathew quickly re-establishes himself, becomes a successful and respected business man and learns to live with the lies that took his young bride-to-be away from him. Finding new love and settling down to life in increasingly industrialized Scotland, Mathew begins to lose the demons that haunt him. Everything changes when his best friend is wrongfully accused of murdering the Laird of Carluke and Mathew discovers the deep seated corruption of the Scottish Justice System. July 1st is a national holiday in
Canada. Formerly known as Dominion Day, it initially commemorated the confederation of Upper and Lower Canada and some of the Maritime Provinces. This year it is Canada's 148th birthday – certainly not a great age when compared to other countries and other cultures. However, back in July 1867, the country's hopes and dreams were founded on a belief in a nation's unity and a strong commitment to the future. July 1 has also seen some other important events. Did you know, for instance, that on July 1 1862 President Abraham Lincoln signed the first income tax bill in the US and on July 1 1863, the battle of Gettysburg began during the American Civil War? Back here in Canada, John McDonald was signed in as Canada's first Prime Minister on July 1 1867, and the following year on July 1 the first Dominion Day was formerly announced. The holiday was officially proclaimed in 1878 by the Governor General, Lord Monck, and was established by statute in 1879 under the name Dominion Day. In October 1982 the name was changed to Canada Day. On July 1 1871 British Columbia joined Confederation and on July 1 1881 the Toronto Stock Exchange moved into its first permanent
headquarters at 24 King Street East. More recently, another Kennedy family tragedy occurred on July 16, 1999 when a small plane piloted by John F. Kennedy Junior took off from New Jersey heading for Martha's Vineyard, Massachusetts. His wife, Carolyn Bessette Kennedy and her sister Lauren were passengers aboard the plane. Five days later on July 21, following an extensive search, their bodies were recovered from the plane wreckage in 116 feet of water approximately seven miles off Martha's Vineyard. The next day their cremated remains were scattered at sea from a US Navy ship near to where the plane had crashed. Perhaps one of the most momentous July events occurred on July 20, 1969, when Apollo 11 astronaut, Neil Armstrong, took his first step on the moon. As he stepped onto the moon's surface, he proclaimed: "That's one small step for man, one giant leap for mankind." But did you know that he omitted an "a" before "man" by accident, thus slightly changing the meaning? July was named to honour Julius Caesar. But did you know that when Caesar died, Quintilis, his birth month, was renamed July? Quintilis meant "fifth month" in Latin which was where July originally fell in the Roman calendar. It's Hot Times at the Country Market Climate change is always a hot topic and perhaps no more so in the local farming community than this spring when we've seen everything come up very early. Most notably, our big red juicy Peninsula June strawberries were actually May berries this year! Raspberries, and quite possibly blueberries, will already be at the market in June. And we expect to see corn available much earlier in July than usual. When the Peninsula Country Market first started in the early 1990s in didn't open for the season until the third week of June when farmers had enough product to bring to the market field! Kids and dogs are welcome at our market. Kids love the market on grass – it's great fun to watch them bop to the beat of our market musicians. Free face-painting is offered weekly by teens from Beacon Community Services' Youth Employment Program. Youth have always been an integral part of the market. 4-H groups operate a food trailer at the market (I like to start my market day with a 4-H breakfast bun – and watch for the new BT sandwich) and when work needs
to get done, there's no one better to call on than the hardworking 4-H. We host our annual Family Day at the market on August 15 complete with bouncy castles and other games in partnership with the Saanichton Village Association. This year we'll be joined by the Central Saanich Lions for a yummy Pancake Breakfast. We're happy to welcome back Peninsula wineries for a second season on the market field. You can sample and buy quality local wines and ciders every week. We also have a great music lineup for July, starting with one-man band Dave Harris on July 4, followed by bluesman Bill Johnson, guitarist Brad Prevedoros and the popular Water In The Crawl Space. Our weekly Facebook contest continues throughout the month – you could win $50 in Market Buck$ by simply 'Liking' our weekly contest post. Two weeks ago I sat cradling a beautiful glass of crisp Sancerre wine while overlooking the Mediterranean Sea, in what was one of the most stunning restaurants I have ever seen, and I have seen a few. It had seemingly effortless decor of driftwood sculptures and muted natural tones that mimicked the colours of the beach, in hazy blues and sand tones. I felt as if I had landed in my paradise. It was a little hamlet you may have heard of – Cannes, France. I fell in love with three things in France: the baguettes, the seafood, and the coffee. The baguettes were nothing short of heaven and a staple in France. Their crusty exterior and soft insides were like no other bread you will ever have. They held the top spot in my foodie heart until we arrived in Cannes for a seaside lunch and I ordered the most incredible, and simple, dish – moules-farcies. These fresh mussels were 'stuffed' with a heavenly concoction of parsley, garlic, lemon and breadcrumbs and baked until just golden. The restaurant claimed on the menu that they were 'papa's' recipe and they were absolutely incredible. As soon as we got home we got to work recreating the recipe, and I think we have come as close as we can without flying papa over to show us his secret! Here's the recipe for your enjoyment.
Moules-Farcies (Serves 2 as an appetizer) 12 very fresh mussels 1/4 cup good white wine 1 bunch parsley 1 1/2 cups of fine breadcrumbs
2 cloves minced garlic 2 tablespoons olive oil 1/4 cup melted butter Zest of 1 lemon
Preheat oven to 375°F. In a food processor, pulse the parsley and garlic until fine. Add the breadcrumbs and olive oil and continue to pulse until finely chopped. Add the zest, some salt and pepper and pulse again, slowly drizzling in the butter until the crumbs just begin to bind – you may not need all the butter. On the stovetop, heat a skillet and add the (washed) mussels and the wine. Once the wine begins to bubble, cover and steam for 2-3 minutes, or until all the mussels are opened – discard any that don't open. Drain and cool the mussels and then carefully remove the top shells. With a teaspoon, spoon some of the breadcrumb mixture onto each mussel so they are covered with a small mound. Place on a baking sheet, and bake for 10 minutes, or until just golden. Serve with a squeeze of lemon and a nice glass of French wine. Bon Appetit!

the Chocolate Chunk Cookie (alias CCC) Local resident Linda Beller decided to have some fun seeking out the absolute BEST of the best chocolate chunk cookies, her personal passion. So after three and a half years of collecting recipes from award winning chefs and bloggers she decided to have a cookie contest to find the most addictive cookie of all. This idea grew into reality when she asked a group of well-travelled women, with globally sharpened palettes, to participate. Here's what happened. This chocoholic, originally from the woods of Northern Ontario, opened up her kitchen to her Newcomer's hiking group. The group of 14 gathered on her deck in the sun to chat while taking in the ocean views as they awaited seven different types of freshly baked cookies. They were to judge cookie recipes chosen from Linda's vast collection. Recipes designed with by Moira Gardener

unique ingredients meant to stretch the palate beyond the basic CCC. The doughs were created a few days earlier. Guidelines were established for quality control and to even the playing field. There is to be only one baker, the same type and quality of ingredients are being used, and these ingredients must be obtained locally. The chunk chocolate is a combination of Callebaut and Lindt. The main goal though is to have fun. The judges, with their combined experiences as travellers, have refined taste-buds. Some have frequented places like Switzerland, Britain, South Africa, and Belgium. On the Canadian front there are transplants from Toronto, Saskatchewan, Calgary, the Fraser Valley, and a former Salt Spring Islander who grew up enjoying Harlan dark chocolate. They were all there to help find the ultimate in Chocolate Chunk Cookies. The hostess is ready to begin. Everyone is welcomed and commended for being people who know what they like. She extolls chocolate for its ability to "calm fears, soothe nerves, and create a sensual experience." So with the aroma of freshly baked cookies wafting from the kitchen and judging sheets in hand the contest begins in earnest. The best smell, touch, and taste are scribbled down. The judges dutifully rinse with water between tastings, while I listened to the comments. "They all smell wonderful." "This will be enough chocolate for me for six months." "This is quite a sugar rush." Finally the results are in and the numbers tallied. The winner is – Smokey Bourbon chocolate chip cookie*, minus the liquid smoke ingredient. This leaves bourbon as the recipe's unique quality. Some words used to describe this cookie were 'distinctive' and 'interesting'. A final indication it deserves first place – the empty plate, as some come back for seconds. Before the group dispersed I ask if this might become an annual event. The unanimous answer, NO, or we'll all weigh 250 pounds! "But I have brownie recipes yet to test," cried the hostess. Looks like it's time for more hikes up the hills in North Saanich and beyond. *Readers wishing to taste this bit of cookie heaven can google "Smokey Bourbon chocolate chip cookie" for the recipe.

Eco-Tourism on the West Coast by Julian Sale
The west coast of BC is a unique and beautiful place. We enjoy mild weather in our rain forest climate. Look around and you'll see vast shorelines, beautiful mountains, trees galore, big parks, amazing sunsets and the list goes on. Tourists love visiting the west coast, whether from Canada or abroad. Some come for the lakes, some for our world class roads. Some come for the fishing, hiking, sightseeing, and a hundred other reasons. But something that's relatively new is the eco-tourism market. Further, the Salt Spring Island eco-tourism market. Salt Spring Island has the highest density of Electric Vehicle owners per capita in Canada. As a result, their local powers that be have initiated incentives for B&B owners to install charging stations for EV drivers. This is great for a couple reasons. First, it lets the rest of the world know that Salt Spring is a great destination on an environmental front, second, it's super convenient for the EV drivers who want to explore new places, and stay at cozy little cottages with vehicle charging stations available. Unlike big municipalities, who use government funding to install infrastructure for EV's, Salt Spring Island has done this largely on their own, mostly with private money. A few key players including a group called Salt Spring Transition are pushing for the "greenification" of Salt Spring. Their tag line: "from oil dependency to local resilience". I have
taken particular interest in Salt Spring lately, as the local residents are such a tight knit community. This reminds me of how Saanichton was in the 1980s. It's great to see how a local group can mold the future of this island community by actively seeking alternate energy sources like solar, for home and commercial use. Noteworthy: Salt Spring Island is hosting an electric car show weekend, with events starting Friday night, July 24. Transition is holding a fundraising BBQ at Country Grocer Saturday morning, and there's an Eco home tour happening on Sunday July 26. Traditional insured plans can be an option but aren't a good fit for all. As more and more services are being de-listed from our provincial medical plan, the cost burden is shifting to the individual. last word What do your summer plans look like? Are you camping on the island? Having a Gulf Island getaway? Perhaps you're venturing further afield. When summer arrives, and it seems to have arrived early this year, I find I get itchy feet. With the peninsula full of tourists eating ice cream and lazily strolling the waterfront, it becomes more and more difficult to get up and go to work each day. Now that the kids have finished school it's even worse. Perhaps it's a relic from school days that my body wants to switch into slow motion once the weather gets hot. I love long, lazy days in the garden or on the beach, but I especially love to pack up and go somewhere else. I'm lucky because I have actually had a break already this summer with a quick trip to New York. In some ways it wasn't a break as I came home exhausted! But it was certainly a break from the routine, a complete change of scene. I found the buzz and the bustle revitalised part of me even though my poor body needed a rest after five days of walking and not sleeping and indulging in all the things I try to avoid in my real life. That trip was made extra special
because I met up with friends from home, visiting a place I've always wanted to go. Usually my summer holidays are a very different pace. Last summer we road-tripped down to Central Oregon. Four bikes on the car, loaded to the roof with camping gear. We swam and biked and hiked and biked (a lot). It was one of my best ever holidays: the weather and the fantastic scenery but most of all the complete sense of being away from everything. When it got dark at night it felt like it was just us, removed from the rest of the world. The landscape so vast it could swallow you up. I think there's a similarity between those two types of trips; where you can lose yourself in your surroundings. One so busy you'd never stand out, and one so vast and empty there's no need to brush up against anyone. I'll be looking for a few more days like that this summer. Camping near Whistler and enjoying many of the same activities (I know there will be bikes involved). It's an important family time as well as the good it does me personally. I don't think you have to go far afield, but breaking the routine is important. Make sure you take some time out of your life this summer, even if it's just for an ice cream by the ocean.
