Sometimes lives intertwine and this is the case with Patricia Robertson and me. I first met Pat as the teacher at Countryside Co-op Preschool when my oldest son started there in September 1980. Two more sons followed and Pat gave them all a great start to their school careers, as she did for many children during her 20 years at Countryside. Now our paths have crossed again with Pat directing the Blue Heron Singers, including me in the soprano section! This month, I'm pleased to write about Pat's many contributions to this community – some of which I have been fortunate to experience first-hand. James W. Foley speaks to the impact that one person can have in this quote from one of Pat's favourite poems: "Drop a pebble in the water: just a splash and it is gone; But there's half-a-hundred ripples circling on and on and on … " karen morgan
I hate exercise and I love my wine-paired dinners. Bad combination, right? For many years I had a dog who dragged me out in rain or shine. Sadly, we're dog-less right now and struggling to lose weight. OK, now you know more about me than you wanted to. Wait – one more thing – I moved to the Island 14 years ago, and it was the best decision I've ever made. I get to live in paradise, work with amazing people and talk (a lot!) about the great things our hospital does. Oh, and occasionally, Tim (my husband, who I fell in love with here) and I dress in clown costume and make balloon animals. Now you know way more than you wanted to… but if you want to read more, please read this month's Inside Out column. steve sheppard
Steve Sheppard is the monthly columnist of Smell the Coffee. Steve transitioned from Barista to coffee roaster to finally the waters off Vancouver Island, where he now calls home. His coffee journey started in his 20s, and he "went deep," as they say, into the world of coffee, continuing to learn about coffee 20 years later because it's a complex thing! He believes in the movement of supporting local roasters in all the towns and urban centres where you can find them. He loves sunshine, and the unique perspective living offshore brings because Vancouver Island appears much different when you're looking land-ward. When life gets hectic, Steve pulls anchor and heads out to enjoy some freshly roasted coffee in a paradise that he knows all too well … the Pacific.

f irst word I know I've said it a thousand times, but I love my job! For most of my career, I've worked for someone else and just over two years ago, my dream of having my own business came alive with Seaside Magazine. There's no question that owning your own business is a risky proposition. But, with risk comes reward. Said another way: the better you are at managing risk, the more rewards you can reap. And consider the flexibility that comes with it, along with a better work/life balance, whether that entails working from wherever you want, setting your own hours, wearing your PJ's all day or even sitting next to your pet while you work. I may still have to endure the long hours that help invest in growing the business, but it also doesn't feel like work because I'm having fun while I'm doing it. And how great it is that I make a living doing

what I love; it's my passion. It's promoting and supporting something I truly believe in. But likely the best part, and the most rewarding for me, is having more time with my two kids. We are celebrating "Small Business" in this issue and you'll meet many local business owners who also take great pride in what they do. Someone asked me the other day "what's a definition of a small business in Canada?" Here are some interesting facts. One to four employees: micro-enterprise; five to 100: small business; 101 to 499: medium-sized business and 500-plus: large business. And get this – the total number of registered employer businesses in Canada (businesses with at least one employee on payroll) as of December 2010 – the most recent figure available – is 1,138,761. And, 1,116,423 of those were small businesses, comprising 98 percent of all employer businesses in Canada. (Source: Industry Canada calculations using data from Statistics Canada) I think at some point every factory worker and office drone has surely imagined what it would be like to turn their true passion – be it floristry, beekeeping or model trains – into a small business. Those who've done it caution that it can require great sacrifices, but the personal payoff is ultimately worth it and you shouldn't wait until you're 65 to try your hand at a second career!

While in Sarlat, France we ran out of reading material and
happily found an English novel in our gite. Inside was a stamp from Amoré by the Sea Bed & Breakfast in Victoria B.C. We thought it was interesting to be the ones to find this Victoria book since we are also from Victoria. After reading the book, we left it in Paris. Hopefully someone else might pick it up and it can become the travelling Sidney book. I tried to contact the owners, but their B&B and email contact has closed. Perhaps someone will recognize the owners and tell them our story. A bit like a note in a bottle! Linda Powell

Run by the Community Arts Council of the Saanich Peninsula (CACSP), the show is not for profit, and staffed totally by volunteers. Show hours are 9 a.m. to 9 p.m. October 18th and 19th and 9 a.m. to 5 p.m. October 20th. There will be artist demonstrations every day. Saturday, October 19th from 7 to 9 p.m. is " Meet the Artists" night with more artist demonstrations and refreshments. Admission is $6 per day or $10 for a three-day pass. is one of the largest and most anticipated juried art shows in British Columbia, and a highlight on Vancouver Island's cultural calendar. The 2013 show takes place at the Mary Winspear Centre in beautiful Sidney-by-the-Sea from Friday, October 18th through Sunday, October 20th, and promises to continue a tradition of showcasing excellence. In September, three independent jurors selected approximately 380 pieces to be included in the show, based on creativity, originality and technical achievement. Visual artist and author Sheila Norgate, artist Janice Robertson and sculptor Debra Sloan had their work cut out for them viewing artwork that included paintings, sculptures, fabric, jewelry, photographs and mixed-medium pieces. Show Designer Sandy Bligh says that along with many established artists, "this year we are seeing a lot of first-time submissions from emerging artists." All of the pieces in the show are for sale, ranging from small prints in the $300 range to more imposing pieces from master artists. This year, the show features eight master artists: Dale Dziwenka, Noah Layne, Craig Benson, Tara Juneau, Clement Kwan, Johannes Landman, Leonard Butt and Marion Evamy. This group of artists has been presented with a SFAS major prize at least twice, and new this year is a prize for best master's work. The show begins October 17th with an opening night gala reception for sponsors and patrons who have the first opportunity to view and purchase the artwork chosen for the show. An awards ceremony follows in the Charlie White Theatre. Prizes are awarded in categories such as Best in Show and Best 3-Dimensional. There are also six Jurors' Choice Awards, the Colin Graham Award for Innovative Work and the Show Designer Award. Following the ceremony, there is a show preview and reception for sponsors, patrons, artists and volunteers.

lived on the edge, artistically and intellectually. Keith Davies' remarkable career began at the age of four. "I saw a neighbour taking pictures using a tripod. For whatever reason, I was hooked," Keith tells me. "I knew then that I wanted to be a photographer." Until he got his first camera, an Instamatic, at age 15, Keith used to "borrow" his brother's and run around "taking pictures" even though the camera had no film. Keith laughs as he tells the story. Keith's parents offered him piano lessons, but Keith said no. He wanted to play guitar. Like most things Keith tackles, he quickly became proficient enough to play with local bands and actually opened for Eric Clapton. "Yes, I loved the music," Keith says, "but what I truly loved was taking pictures of musicians." Keith has photographed Clapton, Carol King, Mark Knopfler of Dire Straights and many others. For a while, Keith worked as a musician. But, as he says, "Life on the road isn't fun. Aside from the lousy hours, you are constantly revving yourself up to perform, then calming yourself down to sleep. It wasn't the life I wanted." When he announced that he was quitting the music business, his uncle suggested, "Why don't you join the police?" Keith says it took him about two minutes to consider the idea and make a decision. "Why not?" he laughs. " Going from one extreme to the other sort of appealed to me!" Indeed. For more than 20 years, Keith worked as a detective with the Regional Crime Squad in the U.K., dealing with all the gritty issues that come with police work. However, even here, photography played a key role in his life. Keith became the squad's surveillance photographer, "getting the photographic evidence that is often central to a case." Keith earned licentiateships with the British Institute of Professional Photography and The Master Photographers' Association. His primary focus is landscape. "I love the textures, tones, contrasts, and the potential of landscapes," says Keith. " I want the viewer to feel the place and the moment." To do that, Keith tells me: "I take all my pictures 'RAW,' which means I do not allow the camera to do anything to the information I gather. That's all done by conversion after I take the picture." Keith always visualizes the picture he wants before he shoots. As he describes it: "The camera (currently a Canon full frame with Zeiss lenses) is only a vehicle to capture the basic image – it has no soul. That's my job." Keith spends up to 40 hours on each photograph to create the image that will be evocative of what he actually experienced – visually and emotionally. Keith works in beautiful layers of colour and black and white and fully acknowledges the influence of Ansel Adams on his work. can we tal k publisher sue hodgson talks with susan simosko, of Susan Simosko associates, inc. an authority in learning, assessment and organizational development You are the author of eight books and dozens of articles and a widely recognized leader and facilitator in education, training and communication across many platforms of business, from non-profit to small business to all levels of government. You cover ground from Canada and the U.S. to the United Kingdom, New Zealand, Australia and elsewhere. Could you give us a glimpse of one or two of your esteemed accomplishments?? I've been so fortunate in my career. I've had the opportunity to work with highly creative, smart, and passionate people around the world who are dynamic change agents in their fields and nations. Many are lifelong friends. That counts for a lot. Personally, I am very proud of the contributions I've made to competence-based assessment and training nationally and internationally and to the quality assurance programs of several health care regulatory bodies in Canada. You have done a lot of research and writing on PLAR (prior learning assessment and recognition.) and the significant benefits of PLAR to individuals and organizations. Can you expand on this and give us an example of how it works?? Most of us learn so much from our work, community activities and hobbies, but some of us, especially those without formal education credentials, are quite dismissive of our skills and knowledge. PLAR helps individuals receive credit and recognition for what they already know and can do—whether at a college, university or with an employer. This enables people to earn a credential more quickly or
qualify for advancement at work more easily. The PLAR movement has grown steadily since the 1960s and last year UNESCO issued a set of guidelines to help organizations globally implement good practice standards for assessment. I have hundreds of stories about people who have benefited from PLAR! Organizations benefit too because they don't need to spend time (or money) teaching folks what they already know and can do. Yes, as you can tell, I am proud of my contributions to this field and am still passionate about its development worldwide. You were born and raised in New York City, travelled the world for business and now reside in North Saanich. What prompted you to move to the West Coast? In the mid-1990s my husband, Graham Debling, and I worked in the U.K. on national initiatives in the fields of work-based training, education and certification. As a very senior civil servant, Graham was on the policy side, while my company focused on implementation. We were part of a national team tasked with developing and implementing innovations to enhance Britain's workforce.
Because of this work, and my earlier work in the States, the Advanced Education Ministry of the day and B.C. Labour Force Development Board invited us to work in B.C. for two years. We enjoyed it so much, we decided to stay! We came to the Island in 1997 and became Canadian citizens in 2004. . Locally, you have worked on a number of projects, including the revitalization of Sister Cities, the Save Star Cinema campaign, the Crystal Awards, a consultation exercise for the improvement of the Sidney Street Market, and a sign bylaw consultation for the Town of Sidney. You serve on the SBIA Board and on the Sidney Community Development Committee. You support other causes too. Everyone strives for a healthy work-life balance. With everything you do locally and internationally, how do you manage it all? I am very fortunate: Graham is extremely supportive and helpful; I was born high energy – thanks to my parents – and basically thrive on new challenges. I love connecting with people. That contributes a great deal to my sense of well-being. I also love learning (I am currently learning to sing!) and often take time out to read, listen to music, enjoy the theatre, exercise and walk in the woods – literally and figuratively. Graham and I share many of the same interests so I think we help to keep each other in check. You've just finished the Collaborative Framework for Professional Practice with the Pharmacy Examining Board of Canada (PEBC). It's recently been presented at an international conference in Dublin to pharmacists and pharmacy technicians. What does this sort of collaboration mean for the industry? Health care is changing dramatically. As we, and the Canadian population more generally, grow older, the demand for quality health care will only increase. Research shows that health practitioners who work collaboratively across disciplines in patientcentred practices not only enhance health outcomes, they reduce costs. The work I completed with PEBC was a collaborative effort with several health professions. We hope the Framework influences not only health-care practice, but the education and training of health practitioners across Canada.

She and her husband, Graham, came to Canada in 1995. Since then Susan has contributed to professional development and organizational change initiatives across North America. inside out each visit to the ER renews my gratitude for this valuable community resource Have I told you lately that I love my job? You've probably heard this from me before, but I have to tell you that a wonderful by Karen Morgan job doesn't protect you from the Executive Director, Saanich effects of stress. I found that out Peninsula Hospital Foundation last year. At a weekly Rotary meeting I started to feel distinctly unwell, with pain in my arm that radiated up into my neck. Apparently I looked as bad as I felt (not due to our 7:15 a.m. start!) and my husband Tim insisted on going to the Saanich Peninsula Hospital's ER. I spent the day, in standard-issue hospital attire, getting a variety of tests to determine the health of my heart. The next day, Dr. Ray Seigo administered a treadmill stress test, which I apparently "aced" (he told me I was above average for my age group – thanks Doc!). The verdict? Nothing wrong with my heart. I was told; however, to do two things: lower my stress levels and get more exercise. I added a third: lose some weight. It's had a positive effect and I'm feeling better. This was the first time that I have used the hospital's ER. My daughters have both had visits, and one of my first dates with Tim was spent helping him breathe through an attack of kidney stones (although the well-timed application of some morphine did more to help him control the pain than me teaching him childbirth breathing). Each visit to the ER renews my gratitude for the existence of this valuable community resource, and the exceptional people who care for us. I think it's also important to say a regular thank you to the people
who contribute to make the Saanich Peninsula Hospital the amazing place it is. It's because of those donors who believe in this place of healing that Jamie, one of the hospital's gardeners, is outside my office, trimming the roses and cutting the grass in the Len Barlow Rose Garden. It is because of those donors that families of palliative patients stop by to tell us how the beautiful Palliative Care Unit and its gardens and Music Therapy program helped them lower their stress levels at a difficult time. I'd like nothing better than to tell our donors "Well done. Our mission is complete." Alas, raising money for health care is a bit like housework. The job is never really done. This year our priority is to replace the CT Scanner. I know, it seems like just yesterday that we raised funds for the hospital's first brandnew CT Scanner, but in reality, it's been nine years. The machine has served us well, but it has been used heavily. The speed of change in CT technology is unparalleled in medical imaging. The equipment is becoming faster, revealing more detail. Dr. John Mathieson, Head of Medical Imaging for VIHA, says that the new technology also results in a significantly lower exposure to radiation. Since its introduction in the 1970s, CT has become an important tool in medical imaging to supplement X-rays and ultrasound tests. Along with the advances in technology, there's been an explosion of use of the CT Scanner in diagnosing illness and injury. Many donors have visited Lesley and me to let us know that they benefited from the machine's availability at SPH. However, it's time to replace our aging machine. If you don't currently donate to the Saanich Peninsula Hospital Foundation, please take some time to think about it. It's an investment in your own health, and that of the whole community. And it may just help reduce your stress levels!

The market season
has really flown by this year, I must say. We're getting to that time of year where the leaves turn colour and the smell in the air changes to fall (you know the smell I mean). For the past 13 seasons out of the 22 that the Market has operated, I've had the pleasure of being a vendor at the Peninsula Country Market and I've made a lot of great friendships and community connections along the way. I wondered the other day briefly … what would our community look and feel like without the Peninsula Country Market? The thought not only made me uneasy and sad: it brought me crystal clear on the value the Market brings to our community every Saturday from June to Thanksgiving. Thanksgiving is a time of year when food and family become our focus. Not that these things aren't important daily; it's just that we take a few extra moments to ponder the important things in life a little more. For me, I'm thankful for being a part of a great community. A community that works hard to maintain its identity and quality of life. However, I have noticed over the past 35 years that we've not made it an easy place for young families to exist financially, and I hope that everyone takes a moment
to ponder when they came to the Peninsula and how fortunate they've been to have a great life here. Our market is strong and our membership worked hard this season to encourage young families to come and enjoy the locally grown food and artisan crafts that are made here, in the hopes that we could inspire a more meaningful buy-local theme and to ensure sustainability for our future. I would like to thank our members, the District of Central Saanich for their ongoing support, the North and South Saanich Agriculture Society, and most of all you … our customer. Without you, there would be no need for us. common cents Succession strategy: ways to maximize the after-tax value of your small business You've built a profitable business and you want it to continue that way when you hand it on. Succession planning is one of the key elements in reducing the tax burden on your successors by maximizing the after-tax value of the business. That's why your succession plan should encompass a "normal" transition – when and how you intend to exit the business – and a "forced" transition in the event you suddenly become incapable of carrying on. In either case, tax planning is critical, otherwise your successors may be faced with an unexpected – and unaffordable – tax bill. Here are some strategies to consider: Identify your "successors." Know who you want to replace you and their personal tax and financial situations. Identify your assets and liabilities. Include both family and business-related assets and any other investments that can affect your overall tax situation and liquidity. Unless you plan properly, lack of liquidity at succession time can lead to business failure because tax bills can't be paid. Insurance can be a good option here. Identify tax reduction alternatives. You have a wide range of strategies to choose from: Capital gains exemptions. In 2007, the lifetime capital gains exemption was increased from $500,000 to $750,000 on qualified small business shares – that may help you and other stakeholders. Spousal trusts. These can help to minimize the amount of tax a surviving spouse will pay, while also deferring the capital gains tax on the asset held by the trust until the death of the surviving spouse. Freezing company value. This limits tax implications come transfer time. Transferring ownership over time. Selling the business to family members (or other buyers) over time may help to spread the tax bill out over a longer period and ease the transition. Be sure all your paperwork is in order – wills, contracts and so on – and available. Revisit your plan – and tax strategies – as frequently as necessary to account for changing business and family/stakeholder circumstances. Valerie and Paul Woodley fell in love with their seafront property eight years ago. It came with an interesting history – once the site of a home owned by the British actor Sebastian Cabot. Although not available when they first looked, and while life took them in a different direction for a time, they didn't forget that little piece of paradise and when it went up for sale they

Here is a home where there is an innate appreciation of natural materials. Flexibility in the use of space was also on Paul and Valerie's wish list. "We're not formal people," explains Valerie when describing the placement of a large dining table extending from the kitchen island. Alternatives exist should they wish to create a separate dining area in the future. In the meantime, the see-through gas fireplace, framed within a floor-to-ceiling wall of natural stonework, provides structure to the open concept design, offering a cosy entertainment space on one side and an informal seating area on the other from which to enjoy panoramic views of forest, islands, sea and sky. The fireplace mantel was custom built to provide front row centre for "Sol," a jovial face carved from birch wood that makes its benign presence felt even when viewed from the lower patio on the edge of the sea cliff, "beaming serenely down," according to Valerie. Brazilian cherry flooring running throughout the main level " ‌ creates wonderful patterns," enthuses Paul, connecting the various communal spaces in variations of colour like dappled sunlight on the forest floor. An earlier visit to a kitchen appliance centre proved serendipitous when it came to furnishing the couple's dream kitchen – they knew exactly what they wanted, from steam and convection ovens

Paul chuckles when he recalls that he is one of Lee Valley's original customers. In addition to the workshop another room doubles as a backup bedroom, exercise and hobby room, with warm cork flooring and plenty of natural light. A little alcove at the base of the stairs showcases Valerie's auction find—a lovely antique rocking horse. Perhaps Paul will use this as his template for another project! Valerie and Paul's home, clad in Sikkens Cetol finished fir that preserves the natural beauty of the wood, accented with black trim and natural stone, generously endowed with windows and skylights, lays its footprint lightly on the landscape of curving borders filled with deer-resistant plantings, expansive lawn, a cliffside patio and even a putting green. Whimsy and sculpture throughout the garden reflect an artful playfulness, while an Inukshuk pays tribute to the human presence along these shores from time immemorial. For Valerie and Paul, their new home is an evolving process. "There's no rush to put up all the artwork," says Paul. "We'll wait and see--it's all about the light."

Earthquakes and Your Home Are you ready to "drop, cover and hold?" With the annual Great British Columbia Shakeout on Thursday, October 17th at exactly 10:17 a.m., it's a good time for us to consider how we can protect both our homes and ourselves. "We have had six earthquakes over magnitude 7.0 in B.C. in the last 100 years," says Alison Bird, Earthquake Seismologist with Natural Resources Canada. Although four of these events happened near Haida Gwaii, "we experience small earthquakes on a regular basis," and Geologist John Clague is quoted as saying a magnitude 9.0 earthquake will eventually hit this coast. It was not until last year that the domestic building code for B.C. included reinforcement against earthquakes. "Most owners of older houses are unaware of the benefits of upgrading," says Marney Mutch, owner of Shear Seismic of Victoria, which retrofits houses. She is concerned that the majority of homeowners are "not aware that the worst earthquake damage to wood-framed homes is easily preventable." Marney became a "passionate advocate" after the devastating earthquakes in Japan and New Zealand, when she realized that there had been a lack of attention to "the structural needs of residential homes in B.C." Retrofitting your home is a process that involves reinforcing the supporting structure of the house. Marney explains that "older homes, built on raised foundations with short stud walls that bear the weight of the house, are most prone to collapse under strong by Barry Mathias

vibrations." These are called "cripple walls" and, while strong enough under normal conditions, "are the weakest parts of the house when subjected to the horizontal force of a strong earthquake." (as shown.) "There is more to retrofitting than merely bolting the structure to the foundations," Marney says. It is important to use "sheets of 5/8inch five ply to add strength and lateral resistance to basement and crawlspace cripple walls," together with metal shear transfer ties to reinforce the connection of the floor joists to the newly braced and bolted walls. This system prevents seismic forces from shaking the house off its foundations. Until recently, governments have mainly focused on public buildings, including schools and hospitals. Marney is concerned: "There is a great need for people to recognize that they can prevent catastrophic damage to their own houses by applying retrofitting techniques." While Alison Bird's studies show that "buildings that are almost entirely wood structures do well" in comparison to brick and concrete homes such as existed in Haiti, there is a strong argument that retrofitting wood structures adds further to their strength and ability to withstand earthquakes. Susan Bigelow, project coordinator for Seafirst Insurance Brokers of Brentwood, confirms that the industry does not reduce the deductibles on houses that have been retrofitted, and the average deductible for earthquake insurance is between five to 10% of the value of the property. "Almost all earthquakes are followed by electrically ignited fires," says Ian Bowman, President of Softac Systems Ltd. His firm has invented "Quaketrip," a system that provides early warning detection of earthquakes, automatically shuts down a building's electrical supply, and can also control gas valves. It is suitable for residential use, and can detect earthquakes of magnitude 5.3 and over, which according to Alison Bird is the level at which damage to houses begins to occur. "Earthquakes and Your Home," a seminar taking place at Sidney's Mary Winspear Centre on Wednesday, October 16th from 5:30 to 9:30 p.m., will feature guest speakers Alison Bird, Marney Mutch, Ken Greenwood talking about seismic window film, and Wade Roberts, who will speak about gas shut-offs. Everyone is welcome: "I want people to know how they can retrofit their own houses themselves," Marney says. "I think it's important."

The landscaper's role can involve many aspects: driveways, patios, walkways, arbors, fencing, irrigation, soils, lawns and plantings, to name a few. Granted, in some instances the building cannot be constructed without some of these features being destroyed, but in some instances and with a little planning these valuable features can be incorporated into the final layout, resulting in aesthetic appeal and cost savings, Most properties have valuable top soil. During excavation for the building that top soil is usually lost when it is mixed with the clay or rock. A skilled equipment operator can separate the valuable soil from the waste and, if room permits, stockpile the soil for use in the landscape phase. This prevents the owner from incurring the cost of disposal of the contaminated soils and then trucking it back in for the landscape phase. In one instance, blast rock created from the excavation of a building was trucked out early only to discover this rock was required for extensive retaining wall construction for the landscape phase. In another instance, what was thought to be waste soil mixed with clay and rock was trucked away only to find out later that hundreds of yards of backfill was necessary to create the levels in the landscape requested by the owner. Both mistakes cost the client thousands. The location or size of the intended building structure can restrict equipment access at a later date so planning ahead before the access is cut off can result in considerable cost savings. The landscaper you choose should have extensive experience building and maintaining landscapes and that experience is invaluable at an early stage of the building construction. There is something very enticing and romantic about The Spitfire Bar and Grill at the Sidney Airport. Sitting there eating "Prawns Gratine" and gazing at all the airplanes drifting in from faraway places, I could easily fantasize that I was in between flights on a hot hazy airline tarmac in Morocco or just saw Humphrey Bogart in the final scene of Casablanca. The wonderful ambience at Spitfire is matched only by the top quality fresh food and excellent customer service. The result is a memorable dining experience. However, when all is said and
done, the only people really qualified to give an opinion are the ones who know – the customers. Wally Boctor emanates a visceral warmth during our interview: "I love what I do and I love people." He and his wife, Barbara, have owned The Spitfire Bar and Grill for 16 years, building it into a very successful enterprise on the Peninsula. If the "Prawns Gratine" is any indication, their food is fabulous. Looking at his menu, I am quite surprised at their very reasonable prices on high-end items such as prime rib ($18.95).
Absolute freshness and high calibre food are priorities for Wally: farm fresh local produce, fish fresh out of the water, Triple Grade A beef. With his soft accent peppered with wide smiles, Wally tells me about one of their daily dinner specials: $3 off pasta and burgers on Mondays and Tuesdays. Their famous roast beef served with mashed potato and fresh veggies comes in a giant Yorkshire pudding bowl on Sunday nights at $15.95. and the "Spitfire Curry" has been pleasing palates for 16 years. A huge selling factor at Spitfire is the large spacious dining area with lots of booths, some of them hidden away for extra privacy. That extra space to move around is a powerful relaxant. Wally says it all: "We have big portions, great quality, good prices and service and free parking. I want to stress the location: Mount Baker in the distance, small crafts flying in and out." Graham Rendall from Sidney is a regular at Spitfire, coming six days a week for a year and a half. Tod Inlet's Hidden Past A gentle trail, lined with trilliums in the spring, leads from Wallace Drive to an open terrace, featuring wonderful views of Tod Inlet. It is difficult to believe this peaceful scene, part of Gowlland Tod Provincial Park, was once the site of a dusty cement plant built in 1904. Robert Pim Butchart was the managing director. The
plant had hundreds of employees, ships and scows docking at the wharf and even an aerial tram. A full community developed at Tod Inlet to support the plant, a hamlet that lived on into the early 1960s. In 1905, engineer R. Parsell arrived to help install the plant's machinery. His wife Mary described how they lived

during the cement plant's construction. The family had a tent 12 by 20 feet with a wooden floor and boards forming the sides. Each time blasting occurred, rocks rained down on the tent, so the supervisor would tell Mary of an impending blast and the family would move out of harm's way. The residents received groceries from Victoria once a month; recreation consisted of card games, fishing, rowing and picnics. One of Mary's children was born in the tent. Out of necessity, Mary became an informal nurse for the community. When the limestone deposits declined, the plant moved to Bamberton and Robert's wife Jennie gradually transformed the barren quarries adjacent to the plant into spectacular gardens that are world renowned today. While researching his film Beyond the Gardens' Wall, focusing on new immigrants working at the plant, David Gray produced several maps of the early settlement. These show the former location not only of the plant buildings, such as the bunkhouse and blacksmith's shop, but clusters of two-storey residences and labourers' shanties. David depicted a darker side to pioneer life in Tod Inlet: the hardships of Chinese and Sikh immigrants living in poor conditions. Sidney Councillor Marilyn Loveless grew up in Tod Inlet. By that time, the boat traveling to Bamberton from the Inlet twice a day governed their lives. Tod Inlet had its own post office, electricity and water supply. There was a tennis court. Like many rural communities, delivery trucks brought vegetables, meat and milk. Children could play freely for hours on the surrounding lands. It was a friendly, safe community. "Those were joyous years," Marilyn reflected. "Our house foundations are still there." Currently early succession ecosystems dominate the site and the main goal of BC Parks is ecosystem preservation and restoration, although cultural values are recognized. Recent removal of invasive species has once again brought the residence foundations to light, turning back the pages of history and demonstrating the intricate melding of culture and nature in Tod Inlet.

caribou, and trees so old they pre-date the Boston Tea Party? None of these sound like the Appalachian Mountains I've read about. Besides, I'm in Quebec, at Gaspésie National Park. Anyone who's hiked America's iconic Appalachian Trail knows the Appalachian Mountains don't stop at the Canadian border. They keep going, through New Brunswick and into what may be the best part of that ancient mountain range – Quebec's unspoiled Gaspé peninsula. In Quebec, the Appalachians are called the Notre Dame Mountains and sub-ranges are known as the McGerrigles and the Chic-Chocs, the latter a Mi'kmaq name meaning "impenetrable wall." And that's exactly how the steep forested mountainsides appear on the September morning we arrive. Low-hanging clouds completely block our view of the mountain tops; rain is on the way. A park guide suggests we abandon plans to spend the whole day hiking one of the highest peaks and settle instead for a half-day hike on Mont Olivine. It means we won't see any caribou, the only surviving herd south of the St. Lawrence River. Fewer than 200 animals remain and they prefer the tundra atop Mount Jacques Cartier, the second-highest mountain in the province. However we might see moose, deer, golden eagles and spruce grouse. And we'll be walking on one of the prettiest stretches of the International Appalachian Trail, which meanders from the tip of the Gaspé to the northern terminus of the original trail in Maine. According to the local tourism office, the 12-kilometre Mont Olivine loop offers "the best ratio of beautiful vistas [for] required effort!" This being September, we'll also get to enjoy some fall colour.

The gradual climb takes us through a forest of balsam fir, white and yellow birch, and black spruce. The moody weather seems to match the rugged geography and for once, I'm glad it's not sunny. We pass a large lake that's slightly sinister looking, but maybe that's because it's called Lac du Diable (Devil's Lake). Further along, a rushing sound alerts us to a boulder-studded river that's frothing with white water. As we near the summit, the trail often crosses exposed rock. "It's really easy to identify serpentine by its colour," says Francois Belanger, our park guide, pointing to a patch of smooth yellow rock with grey streaks. "It's toxic to flora," he adds, explaining that the soil around serpentine rock contains high levels of heavy metal and low levels of essential elements such as calcium. Only 14 plants have been identified that can tolerate the serpentine soils on these mountain tops. Except for the simple huts that provide shelter for hikers in summer and for backcountry skiers in winter, the landscape appears exquisitely wild. Virgin pockets of ancient trees still survive, including 260-year-old white spruce. On this foreboding day we meet very few other hikers. But we do see one cute fellow – a spruce grouse that blends into the thicket of moss and ferns. The rain cooperates too, holding off until we're steps from our van, before pouring down with a fury that suits this wild place. PET FOOD PLUS

ever wondered what it would be like to sit down and talk with some interesting characters from Greater Victoria's past? If so, by Valerie Green wonder no more. Although these conversations are merely creative figments of my imagination, they are all based on fact. Adelaide and Henry Simpson were the pioneer entrepreneurs on the Peninsula who built the first Prairie Inn, initially called the Prairie Tavern. It would have been interesting to talk to Adelaide about life for a woman in that wilderness of long ago. Mrs. Simpson, we know of your husband's achievements, but rarely do we hear about your life in those early days. Well, I simply worked hard alongside my husband. We arrived aboard the Norman Morison, in 1853. Henry was a baker and I was a laundress. And you first came to work for the Hudson's Bay Company at the Fort? Yes, but Henry was a man full of ambition and he wanted new challenges. By 1859, we decided to strike out on our own. We set off on foot from the Fort with our first-born child and headed out to the wilderness of Central Saanich. It was tough going, following native Indian trails all the way until we reached Little Saanich Mountain. Eventually we arrived at the foot of Mount Newton where the land was good.

Soon we saw a need for some kind of tavern in the wilderness; a spot where a weary traveller might stop and rest. We needed money to build such a place so Henry placed a mortgage on our land for 83 pounds six shillings and eight pence with John Schmidt of Esquimalt. Henry was the first businessman in Victoria to raise a loan! We began building the Prairie Tavern in 1860. Was it a success? Oh yes! It soon became very popular. We offered good food and hospitality and even the loan of a horse if needed; the only condition was that once the traveller reached his destination, he had to water and feed the horse and then set it free. The horse would always find its way back to the Tavern. And later you became involved in other things? Yes, with the coming of the railway, we opened a general store and post office and operated a mail service. Emma, one of our daughters, helped to deliver the mail. And then tragedy struck in 1893? Yes, sadly the old Tavern burned to the ground that year, but we were able to rebuild a new, far more elaborate inn for $2,200. We entertained a great deal and my home-baked bread made from a recipe my husband used at the Fort was very popular with our guests. It was a lot of hard work for me in those early years but well worth it. Following the death of Henry Simpson in 1903, there have been several owners of the Prairie Inn, a place which remains a legacy of hospitality started by Adelaide and Henry. Many present-day families on the Peninsula can also trace their roots back to Adelaide Simpson and her 14 children. If you snore at night then read on; there may be more to your snore than you think. We often think it's just the person who shares a room with the snorer not getting a good night's sleep. Snoring has often been associated with a good sound sleep, when in fact it may be just the opposite: it may be a symptom of something called obstructive sleep apnea (OSA). Obstructive Sleep Apnea (OSA) can be a potentially serious condition that occurs when the muscles in the upper airway (including the tongue) relax, obstructing the airway which prevents proper gas exchange. Oxygen levels begin to fall and carbon dioxide levels begin to rise. OSA can occur at any age, but the incidence is significantly higher in the older population and is divided equally among men and post menopausal women. Health issues associated with OSA can be threefold: 1) The frequent obstructions can interrupt sleep, preventing the individual from getting through all of the sleep cycles. It is thought that these sleep cycles are restorative and help with proper cognitive function. 2) Increased stress response ("fight or flight") causing increased heart rate and blood pressure. 3) There can be significant drops in the oxygen level; this can be especially dangerous for individuals who have a cardiac issue or other medical conditions. If you check two or more of these you may be at risk for OSA. These are a few of the most common symptoms: • Loud snoring • Excessive daytime sleepiness • Choking, gasping or pauses in breathing during sleep • Restless sleep • Morning headaches • Irritability, difficulty coping • Frequent urination at night • Issues with memory or concentration A few of the risk factors associated with OSA include high blood pressure (with or without medication), Type 2 diabetes, weight gain, cardiac disease, stroke, depression, pain medication or sleeping aids. Diagnostic testing through a sleep lab or at-home testing can assist in determining if you have sleep apnea and its severity, and talking with your doctor or a healthcare professional who deals with sleep apnea can help determine what the appropriate treatment is for you. Fathers landed on American shores in November 1620, you can bet every passenger and his dog had something to be grateful for: no more seasickness; being on terra firma after four months at sea; wide open space instead of a bit of floor the size of a single bed. The following year, it's believed these Founding Fathers gave thanks for a good harvest of corn, beans, squash, pumpkin and other fall crops. With the addition of some sort of fowl roasted over an open fire and washed down with apple cider, it was probably the first American Thanksgiving. It has long been supposed that we Canadians hold our Thanksgiving earlier than our neighbours because we're further north and our harvest comes in sooner. Its origins are hard to trace. The explorer, Martin Frobisher, may have held the first Canadian Thanksgiving in 1578 – not for harvest bounty, but for dodging icebergs and other perils – giving thanks with prayers and Communion for his safe arrival in what is now Frobisher Bay, Nunavut. The first French settlers brought their tradition for celebrating successful harvests when they came with Samuel de Champlain in the early 1700s. Soon joined by Irish, Scots, Welsh, English and others from European nations, their festivals were part religious, part secular. They thanked God for the bounty of the harvest, with much feasting, drinking, singing, dancing and games to follow. But harvest celebrations go back much further.
The Bible mentions harvest in Isiah: " … they joy before thee according to the joy in harvest," suggesting a celebratory time when farmers brought in the crops, echoed in Exodus: "At the end of the year when you gather in your labors out of the field" feast and celebrate. Sukkot originates as both a biblical and agricultural festival. In ancient Roman times the Great Goddess Ceres – Kore or Core in Greek – who corresponded to the Goddess Demeter as Mother Earth, was revered by "farmers as the source of all food and her rites kept faithfully for fear of crop failure." Ceres' greatest annual festival, the Cerealia or Harvest Festival, is observed to this day in many churches and homes across the British Isles. Sheaves of corn, bread and vegetables form the centrepiece of church altars. Historically, then, gratitude is at the heart of what is now largely a secular rather than a religious holiday. What are you giving thanks for this year? Here's a sampling from neighbours and coffee shop acquaintances: "Friends and family." "My twin grandsons." "Food on the table." "For being here." "Being able to acknowledge and appreciate the gifts I inherited from my mother … the silver lining to her often irrational behaviour." "Being alive and healthy." And for prayers, here are a few lines taken from a long prayer written in 1791 by Archbishop John Carroll, cousin to one of the signatories of the United States Declaration of Independence, for use at Thanksgiving. They seem particularly apt at this time: " … assist with Thy Holy Spirit of counsel and fortitude the President of these United States, that his administration may be conducted in righteousness, and be eminently useful to Thy people over whom he presides … by a faithful execution of the laws in justice and mercy … Let the light of Thy divine wisdom direct the deliberations of Congress, and shine forth in all the proceedings and laws framed for our rule and government, so that they may tend to the preservation of peace." May your Thanksgiving be happy and peaceful.

How many of you know someone who owns a Lexus RX350?
If you're over 12 and under 87, it's very likely someone you know owns one. I said "owns," not "OWNED," because people who bought an RX350 years ago have learned that it's a superb car with a near cult-like following. More than 75 percent of RX owners buy the same model again. With a pedigree of that calibre, Motorize decided that the RX should put its money where its mouth is. So, we bought a 2012 RX350 (built in Cambridge, Ontario) with 15,000kms on the clock, and set out for the village of Beiseker, Alberta to deliver the unit to one of our valued clients. We loaded our luggage into the well carpeted trunk. Somehow I had a massive suitcase and my partner had a conservative duffel. You push the button and the trunk closes. The engine starts with a crisp, clean, refined note. Lexus is alive. But really not audible. The cockpit is contemporary with refined gauges, sharp lines and real wood inlays. You can't see the hood unless you're over six feet tall. Its shifts when merging onto the highway are effortless and nearly undetectable. An hour goes by without a glitch; the Lexus is like an old friend by your side, and I realized the car has sparked absolutely zero emotion. We are "CAR GUYS!" so I ask "what's wrong with it?" "Nothing" we reply in unison without hesitation. "This is the best seat I have ever sat in," I suggest. We have sampled some fine automobile seats over the years, from Aston Martin to Bugatti to Porsche to Mercedes. The

Lexus seats cradle you and allow you to nestle in and actually avoid fatigue for ANY amount of time. The comfort of the seats was my favourite part of this midsized Lexus All Wheel Drive SUV. Oddly, that's all I could find to love about it. Don't get me wrong, this is the #1 selling luxury SUV in North America, not by a small margin – but why? Lexus built success over the years with the RX series by building everything to perfection, literally. But nothing to amaze and where is the wow factor? Is this a great SUV? I'm not sure – but what I can tell you is that it will outlast any other SUV your money can buy. It will never, ever wear out, and no matter how fast, great sounding, terrain conquering and well equipped the competition in this segment impresses you, it's not going to be the last man standing. We arrived safely after 1,120kms of non-stop driving and, while we can appreciate that bulletproof Lexus ride, there was just a little something missing for the guys at Motorize. Dont let this stop you from sampling one of the best SUVs available, we are convinced that once we drive the F Sport Lexus RX350 our opinion may sway the other way.

Going Old School With the Aeropress
Over the past couple of years there's been a movement towards the single cup coffee brewer, a movement bigger than I would have ever predicted. In past Smell The Coffee issues, I've talked about the negative by Steve Sheppard environmental impact of those stale coffee K-Cups, with billions of the leftover small plastic containers making it to the landfill. For those of you who have not yet purchased a reusable filter for your Keurig and started using locally roasted coffee as an upscale alternative to the plastic K-Cup … shame on you! By the way: using the reusable filter and fresh coffee is half the price.
When Great Taste Matters ! Means the Freshest Coffee
Now, let's talk about my new favourite coffee maker: the Aeropress. This is a new/old school alternative to making great coffee at less than half the price of the Keurig single cup coffee brewer. The Aeropress combines the process of single cup brewing with the vintage method, similar to that of the Melitta coffee making process of the '70s. For those of you who don't remember the Melitta system, it was a simple cone-shaped filter system that sat atop your cup of coffee; boiling water was then poured over the coffee grinds. The water filtered down through the grinds into your cup. What was key to this old school method was the boiling water, a key fundamental to the Aeropress method. What's different about the Aeropress method is … it uses a little bit of pressure through the use of a plunger to press out some great flavours. The Aeropress makes a cup of coffee more flavourful than a standard drip cup, but less intense than a shot of espresso. Adjusting the amount of coffee used in the cylinder will affect the strength of your coffee. The Aeropress kit comes with everything you need to make a great cup of coffee, including a 12- gram portion scoop to ensure a consistent cup every time. It's easy to clean and, for those of you who have not yet splurged to buy a single cup brewer and have a kettle lying around, you could get into the single cup brewing game for under $30! Remember, the key to great coffee is a combination of three very simple things: freshness of the coffee from the time it's roasted, the quality of the water you use, and always using boiling water when brewing. Standard drip coffee machines do not heat the water enough to extract all the great flavours from the coffee, which is another shortcoming of the Keurig. The other upside of owning an Aeropress? It can also go camping, and on the West Coast this matters … Steve out.

Daksha's Gourmet Spices by Susan Simosko This is the second in a four-part series on some of the unique and local shops the Saanich Peninsula has to offer. The Saanichton-based company, run with meticulous care by Daksha and Bhaskar Narsing, offers more than 30 quality products, all of which are 100% pure spice. Lessons for Learning by Doreen Marion Gee My introduction to ice skating as a child was not ideal: trying to stay upright on jagged uneven ice on a pond covered in rocks and branches where any second I might hit water. With no formal lessons under my belt, I stood frozen on the sideboards while my graceful friends flew across beautiful shiny-blue ice on "Teen Days" at our local rink. But after a talk with a local athlete, I realize that ice skating promises more than glamour and glitz. It is an effective way to develop valuable life skills – the ones that keep us strong, fearless and successful. A highly-skilled hockey player, Courtney MacMurchy loves her job. As team leader of Panorama Rec Centre's Learn to Skate lessons, she enjoys watching little people blossom in the sport of ice skating

and seeing firsthand how skating changes lives. Courtney reveals the first step in skating lessons: gently helping kids conquer their fear of falling with fun activities. At an early age, these kids learn how to achieve their goals, despite being afraid. That is a skill for life: successfully dealing with fear forges strong resilient adults. Courtney enjoys seeing kids grow from fear to confidence on the ice – eventually jumping on the ice with ease and comfort. To her, this I can do it attitude is invaluable for "whatever comes up in life." It is very empowering for children and teens to see themselves meeting the challenge of skating on ice where the risk of falling is always there. This builds self-esteem and a strong belief in their own abilities, giving them a firm foundation for success in adulthood. Ice skating builds social skills and friendships. Courtney reflects on "the friendships and sense of community I have gained through my passion in skating. Some of my closest friends today were made at the skating rink." During the tough teen years, kids "know that they've had lessons and can get out there, have fun, and not have to worry about what is going on in their lives." It was important to Courtney to have something she did well – to fall back on "during those rough patches in life." Panorama has the same standard program of skating lessons as across the Capital Region: 10 levels of skill, from pre-school to preteen, with children progressing according to their age and ability. Adult Learn to Skate lessons and private lessons are also offered. Panorama has two beautiful ice rinks and their instructors are dedicated top notch athletes. "Come Sing a Song With Me … " These words from one of the favourite songs of the Blue Heron Singers issue a warm invitation to come along, sing a song, and have some fun. Everyone welcome! For those who think they can't sing or can't read music, not to worry. There are only two rules in this choir. Rule #1: Everyone should sing the same piece at the same time; and Rule #2: When everyone else has finished singing, you should be finished singing too! In 2008, a group of 20 would-be singers got together as part of the Cordova Bay 55+ Association (www.cordovabay55plus.org). They wanted to sing but had no leader. What to do? One of the group, violinist and music teacher extraordinaire Dorothy Evans, said: "I know just the person to lead this choir." And so her former student, Pat Robertson, was asked and after some hesitation, agreed to take on the directorship for a three-month trial basis. "Although I've sung in several choirs," says Pat, "I never imagined leading one. I didn't think I could. But when Dorothy asked, what could I say? She was my music teacher 59 years ago in Grade 7 at Central Junior High school when I called her Miss Hopgood. She changed my life by introducing me to the joys of making music with others. She changed my life again by asking me to lead this choir and what a gift it is to still be learning so much at this time in my life!" Truly, the gift is to the Blue Heron Singers who now number about 70 and meet once a week on Thursday afternoons at Cordova Bay Elementary School to harmonize and socialize. To have Pat as the director is a coup for the choir. She brings a lifetime of musical experience to this volunteer position which includes playing piano, violin and viola, and choir singing. Pat accompanies the choir on piano along with her mentor Dorothy Evans on violin, and arranges in four-part harmony most of the music that the choir sings. Along with raising a family and a career that included being an elementary school teacher, the teacher at Countryside Co-operative Preschool for 20 years, and co-ordinating a respite service at Queen Alexandra Centre for Children's Health, volunteering has always been a big part of Pat's busy life. She was the accompanist for the Saanich District Youth Choir for 14 years, and continues to play the piano for evening sing-a-longs at Broadmead Lodge as she has since 1975. Just starting their sixth year, the Blue Heron Singers continue to thrive under Pat's leadership and quirky sense of humour. Rule #3: Sing, laugh, and learn something new!

The Bucket List
In Medieval times,
when swift justice reigned and you were to be hung for stealing a crumpet, they would place a noose around your neck and stand you on a bucket, then boot it out from under your feet. Hence the term "kicking the bucket." From this morbid trio of words came the more playful "bucket list" by Michael Forbes which as we know, is a list of things you'd like to do before you die. A survey told me that overwhelmingly we'd like to travel before we kick it, to places like the Great Wall of China or the Egyptian pyramids. Personally, I would rather watch people lining up in the sweltering heat waiting to see Tut's tomb in the comfort of my living room in HD. Life can, however, hand you those little gems that you don't realize are on your bucket list until you experience them.
Recently I partied like it was 1889 and rode a Penny Farthing bicycle. For those of you that may not be privy to the ways of our backward ancestors, it's one of those contraptions that has a huge wheel on the front and a tiny one on the back. Oh, and it doesn't have brakes. I guess Mother Nature had a couple ways of thinning the herd back then … influenza and the penny farthing bicycle. Will Arnold of Duncan's Experience Cycling has a passion for them and he hooked me up with one for Bike To Work Week. He also graciously offered to give me a "crash" course on how to ride one. It kinda looks like a bike, but it steers more like a Sherman tank. Also, did I mention they don't have any brakes? The trick is getting on it while shoving it at a high rate of speed and, most importantly, getting off while screaming down the Goose. Once you are high up on your perch though, you suddenly morph into some sort of rock star in a bowler hat. People love you and want to wave at you and dart in front of you and grab you and make you die. The look on my face must have been a mixtutre of concentration, exhiliration and terror. It may have also been partly my old timey trousers and the bike's bedpan-shaped seat which sculpted just about the perfect wedgy. I learned two things from that ride: it really was a lot of fun and my last panicked expression on earth would probably include the words Jesus and crap. Oddly, the Penny Farthing experience kind of prepared me for my other bucket list adventure that was never on my list: flyboarding. Island Flyboarding takes you to a lake, attaches a bendy fire hose to a jet ski and then pumps copious amounts of water into some Herman Munster-like clod hopper boots. You are then launched 20 feet in the air and you literally zoom around like Iron Man. Once in a while though, I would gracefully plunge into Elk Lake in such a way that it would create the most perfect wetsuit wedgy. Did I mention the flyboard didn't have any brakes?
