What’s the difference between club tournaments and international games? Both these international club championships are very prestigious and every team‘s dream is achieving a triple, i.e. winning the highest league, the national cup tournament and the Champions League. This doesn’t happen very often but FC Bayern Munich accomplished the feat last season. Their opponents in the Champions League final were Borussia Dortmund, the runner-up of the previous Bundesliga season. This all »German final« was a remarkable occurrence because the English Premier League had previously been considered the best league in the world, followed by the German Bundesliga and the Spanish Primera Division.
Every national football association has a representative football team comprised of the best players in each country, their national selection, or national team. Appointments to this team are made by a national team manager. In Germany this task is assigned to the coach of the national team, the Bundestrainer, Jogi Löw. Apart from the top tier teams for men and women (sometimes referred to as A-squat) there are many youth teams for which a player is only eligible up to a certain age, like the U15 or U17 (»u« being short for »under«).
There are many more small and big competitions for league clubs but these are the most important one. Women’s football teams and leagues in Germany are organised in a very similar way.

Who is allowed to play at the World Cup or the European Championship?

Every four years, the national teams in Europe, Asia, Oceania, South America etc. play tournaments against the other countries in their region. The World Cup, hosted by the world football association FIFA, in which teams from all over the world compete, also takes place every four years. Since there are six regional football associations with 222 competing national teams and only 32 teams can play in the final round of the World Cup, qualifiers are played from up to two years before a tournament. Regional championships in Europe and elsewhere also follow this system.
Who is better – clubs or national teams? That’s hard to say, because it’s hard to test. The top players are part of a club team as well as a national one and can’t play against themselves. The top clubs are supposed to have the edge though as they play and train together all the time and therefore make better tactical units.
The system leads to the interesting fact that the European Championship is actually harder to win than the World Cup because the level of competition between the countries is much higher in Europe. Countries with a very good national league don’t automatically make World or European Championship favourites, because many of the best and brightest in leagues like the English Premier League are actually foreigners. The current Arsenal London first eleven for example is made up of only one Englishman and 10 »foreigners«.

The strings are usually pulled by betting cartels, but football betting is nonetheless very popular, despite its risks even for seasoned gamblers. For many millions of people football is their life, not just a pass time. It is their substitute for religion and the protagonists (the players) are adored and worshipped with a deadly seriousness – at least until they go to play for another team. But the players don’t take it any less seriously: Lionel »Leo« Messi, the Argentine superstar currently playing for FC Barcelona is said to enjoy playing football on his Play Station in his free time. His favourite player in the video game: Leo Messi.

Actively playing football improves your social skills and compatibility. You meet people from different social backgrounds and work with them to win the game. I seem to remember that back in school there were far fewer sleazebags among those people who pursued team sports like football than among those who played individual sports like tennis. Off the pitch you can draw insight from football quotes. Many footballers have said truly legendary things. Here are some of my favourites (see above).

But I usually watched football on the telly, as the tickets are quite expensive and it takes a lot of time and effort if you don’t live in the city in which the game is taking place. But I have been to the stadiums in Hannover, Stuttgart, Freiburg and Leipzig.

My first game as a player in a club was a very nice experience, too. The team played in a league that was too high for its abilities and lost every game. I started my career as a goalkeeper and we lost our first match 0-14. I was commended after the game because I had conceded fewer goals than the opponents had scored in the first 32 leg, which was high praise.
would you share a piece of football trivia or a particularity in the rules of football we can use to show off?
We had to draw the markings on the pitch ourselves before our home games and I was usually put on that duty. If you managed to draw them reasonably straight, that was really something to boast about later. Also, »after the game is before the game« sounds very wise.
What makes football special to you?
Football brings people of all nations and backgrounds together. It’s a varied experience for the players as well as the spectators. You have to succeed as a team and be able to rely on every single member of the squad which creates a great atmosphere and exceptional solidarity. Also, they’ve got the best sausages at the stadium.

Since I ‘won’ the Europan Championship with my football-crazyDutch-grandmother in 1988. I have been completely hooked ever since, first on Oranje, then on the German national team and much later – since 2012 - on Borussia Dortmund.

I last played when I was about 10 years old – and I was not very talented.
why?
After the 2010 World Cup friends started asking why I was only a football fan every other year - and I had indeed never watched an entire Bundesliga match. I thought it was boring. Because of the banter with friends I decided to start a blog about becoming a Bundesliga fan (the original blog was hosted at Posterous and does not exist anymore, but the posts are still live at Torszenen.com). Due to a Dortmund-leaning environment I paid special attention to that team. In November of 2010 I went to the stadium for the first time in my life and I was immediately hooked. It wasn’t even the exhilarating football the team offered during the 2010/11 season in which they won the championship – it was the South Stand and the entire experience at the stadium that made me a fan.

how often do you go to see games live?
I try to see between eight and 10 Dortmund matches per season, which is usually doable. I sometimes go to see other teams play too, especially in Hamburg, where I live. do you go to away games, too?
Yes - so far I have only been to away matches in Germany, but I want to change that this Champions League season. I try to go to away games close to where I live in the north of Germany. Also, travelling to see Dortmund play at home always feels like going to an away game for me.

My best football experience was the Champions League semi-final against Malaga. Being there and watching your team turn the match around in injury time and go through to the next round… it was simply unforgettable. It was the first time I cried tears of joy at a football match.
My worst moment was as a supporter of the German national team. I lived in England in 1998 when Germany crashed out of the World Cup in the semi-finals after their match against Croatia. England had been eliminated in the previous round but that didn’t stop the English fans from gloating. Suffice to say that England has not exactly been my favourite team since. 35
what makes football so special to you?
Football creates a synergy between the spectators and the men or women on the pitch. Seeing the supporters and the team become one is an experience you don’t ever want to let go off once you’ve been part of it at the stadium. Watching football on television can be anything from intoxicatingly brilliant to shockingly bad. The simplistic rules and very few goals can make it a quite boring experience. But watching football at a stadium is never ever boring – I still can’t believe I didn’t dare go and see a live match until I was 29.

It all began in the 1990s when I started school. A lot of my friends in class were boys and football was their main topic. But I completely fell in love with it when I first visited the Westfalenstadion. I was under the weather and felt completely beat, but it all still made me so incredibly happy, and couldn’t wipe the smile off my face for days.

I have never asked myself that, I have just always been fascinated by the sport. I grew up in the North of Hesse and wasn’t influenced by a predominant regional team. Once you started primary school it was easy – as things tend to be in childhood: You either supported Bayern Munich or Dortmund. That wasn’t a question in my case either: Dortmund every time! Frankly, I don‘t understand how anyone who sees the stadium, and especially the South Stand, cannot fall in love with the club.

No, unluckily not. I am impressed by the players’ abilities and would love to be able to do some magic ball work myself, but I have no talent for it.
Actually, I can’t go that often. I lived in Hamburg until recently and only managed between five and 10 games per season. But whenever there was a chance I would immediately hop a train. Since I am currently on a trip around the world, and will be until the beginning of December, I won’t be able to go until then (which is really the only draw-back about travelling). But quite soon after I have returned my next destination will be Dortmund, Westfalenstadion. 37
do you go to away games, too?
I would love to go far more, until now it hasn’t happened very often. While I lived in Hamburg, I would of course see them play the local Bundesliga team, HSV. I also went on a very amusing trip to a cup tie against the small club of Oberneuland in Bremen and spent two afternoons at the Liga Total! Cup. Next year I want to go to a proper away game, probably against Mönchengladbach so we can win there for a change. ;) official fan club

That’s hard to say as there are just so many. My top three would have to be the following: my first, rather impromptu visit to the South Stand with a good friend and his family; the semi-final against Real Madrid in Dortmund in 2013 and when I met the team and the team coach Jßrgen Klopp through a work project in 2011. The meeting not only showed me that the players and coach are great guys off the pitch too, I got to see how all the people working behind the scenes put their heart and soul into this very likeable club.

a piece of trivia, we can use to show off?
You couldn’t really call it a bad experience, as it was a great success for the team, but my heart still sinks when I remember how I missed seeing the Champions League match against Málaga live because of a work project. I still understand that circumstances back then just didn’t allow me to go, but the thought still hurts and always will. I was happy for the team, of course, but these are moments you just can’t recreate, and the Málaga match in particular was a once-ina-lifetime moment.
Two of Dortmund’s players have won the award for German Football Culture for coining the phrase of the year. In 2011 Roman Weidenfeller’s quote »I think we have a grandios Saison gespielt!« won and in 2009 (less well known) Neven Subotic secured the award with his remark »Well, he didn’t have to run to the exact same spot where I tackled, did he?« what makes football so special to you?
That’s hard to put into words: It’s a fast-paced game, it’s exciting, intense, tactics and strategy are paramount, it’s unpredictable and even a team that is supposedly worse can always beat a better one. But what makes it particularly attractive to me is the emotion, the raw, unadulterated love, the special atmosphere at a stadium and the involuntary smile you just can’t help from spreading across your face when you look at the South Stand. It’s an incredible feeling to hear an entire stadium sing »You’ll Never Walk Alone« from the bottom of their hearts. You can’t imagine the kind of goose bumps this gives you, you just have to be there.

I watched the Champions League final in Munich right in front of the TV set in a room full of Bayern Munich supporters which was pretty cruel.
The football culture, of course! It’s a proper celebration in Germany and it’s about having a great time together. Enthusiastically supporting your team together is such great fun. That’s why I have stuck with it.

Since I moved to Munich I only go once or twice in each half of the season. A sixand-a-half hour train trip is a bit much to make a season ticket worthwhile. But I go to the matches whenever I can combine it with a trip home to see my family. It’s a family tradition. Many of my parents’ friends have season tickets so I just go with them. The best way to experience a Dortmund match is on the South Stand.
I have not yet been to a Dortmund away game in Munich as tickets are extremely hard to come by. But if I were to go I’d definitely want to be with the other away team supporters. 43

THE SKIN’S AGING PROCESS The skin’s aging process sets in between the ages of 20 and 30. At first it affects the outer layer, later on the Dermis and Hypodermis. Modern research differentiates be tween extrinsic (influenced by external factors) and intrinsic (influenced by internal physiological factors) aging. The former is caused by environmental influences such as UV light, environ mental toxins, dust, nicotine, stress and

At first one notices an increasing loss of humidity and elasticity which leads to small or mid-sized wrinkles. Later, the subcutaneous fat layer thins and causes the formation of deep wrinkles, skin sagging (especially in the midface), hollow cheeks and tear sacs. The skin in general becomes much thinner and more transparent and sensitive than at a younger age.

COSMETIC TREATMENT Further methods used against wrinkling are for example a treatment with botulinum toxin, anti-wrinkle injections, laser treatment, peelings and surgical procedures. All of these treatments are considered as cosmetic surgeries and should be carefully planned and carefully thought out.
Botulinum toxin is a neurotoxin which is also used to treat movement disorders such as dystonia of the eyelid. Much smaller doses are also commonly used against facial wrinkle formation. Anti-wrinkle injections, also called LIQUID FACELIFT, reshape the face by injecting substances right under the skin surface. CV-substances – called fillers – are nowadays absorbable substances such as hyaluronic acid and collagens.
Laser stands for light amplification by stimulated emission of radiation. Laser treatment depends on the laser choice and results from the interaction of laser light and human tissue. In the field of cosmetics, laser light is used for the removal of pigmented marks and visible blood vessels but also for skin resurfacing by removing skin layers. Chemical peels only remove the top layer of the skin using acids such as fruit acid or tretinoin (vitamin A acid) instead of laser.

First of all, it was a really long time ago (I was born in 1952) and second, the aging of the skin is a very slow process that always gives you plenty of time to come to terms with changes in your appearance. Let us assume I had reacted with shock to the discovery of my first wrinkles when I was 30, so in 1982. Back then, many people happily puffed one cigarette after another without thinking it would do any harm. Microdermabrasion is not my cup of tea, I would prefer a Fraxel laser treatment instead—it is a matter of taste. Botox is a difficult story. I have tried it because I have some nasty expression lines on my forehead, although it was weird not being able to make a grim face. I approve of a targeted use (i.e. for frown lines). Those who want to look uncreased forever look

It has had an influence on me from a very early age on, because I started to have very blemished and oily skin during puberty and my family always tried to comfort me by saying because of that I would have less wrinkles later—which of course was only a crumb of comfort at the time. My skin problems sparked my interest in the topic at a relatively early age, and I started experimenting with different products and developed a cleansing routine. There are two things that I particularly remember from that time: I read somewhere that the skin reaches its biological peak at the age of 25 and that this is the time to start doing something against the aging of the skin. So I not only did that but I also tried to pass it on to the people around me.

There is another feature of the flower, however, that is often overlooked and that is its taste. While there are some flowers that are widely known as being edible - such as lavender - there are a plethora of others whose flavor palettes are still waiting to be explored. I have listed the most common ones here, along with a brief taste description, and have also included some recipes to inspire you to incorporate more flowers into your repertoire. The recipes used here are all sweet, but do not assume that flowers cannot find a place in savory dishes, as well. Squash blossoms, for example, make for fine stuffing vessels for ground meats and herbs and taste delicious when lightly breaded and fried. Also, the common pansy has a slightly bitter flavor and tastes marvelous incorporated into savory salads.

for 8 portions
1/2 cup honey
12 oz evaporated milk
Petals from 3 organic roses Popsicle sticks Popsicle mold
PREPARATION 126
To make the creamed rose and honey popsicles, place the rose petals in a large bowl and set aside. Bring the honey and the evaporated milk to a boil in a medium-sized pot over mediumhigh heat. Pour the boiling hot mixture into the bowl over the rose petals. Allow the mixture to steep until it cools to room temperature. Pour the mixture into a blender and blend at high speed for 30 wseconds. Pour into popsicle molds with popsicle sticks and

Garnish each with a cornflower bud and serve.

Viola Miniature Pavlovas INGREDIENTS 3/4 cup superfine sugar
To make the candied pansy and viola
miniature pavlovas, start by candying
1 egg white, lightly whisked
2 dozen organic panisies
the flowers. Lightly brush the petals
2 dozen organic violas
of a flower with the egg whites.
6 egg whites
Sprinkle the superfine sugar over
2 cups granulated sugar
the flowers until coated. Place on a
1 tsp corn starch
wire rack to dry. Repeat this process

until all of the flowers are candied.

scoop the meringue into a pastry bag fitted with the open-star tip and fold the top several times. Secure the folded top in place with a small clip. Starting at the outside edge, spiral your way towards the center as you apply pressure to the bag to make a 4-inch in diameter spiral. Repeat this until you have used all of the meringue. Place the baking sheet in the oven and bake for 40 minutes.

Turn off the oven and leave the door ajar to allow the pavlovas to cool slowly (this prevents cracking). Once cooled, remove the tray from the oven. To assemble, place the pavlova on the serving surface and spread a dollop of whipped cream on top of it. Place several of the candied pansies and violas on top of the cream and serve.

My love story begins in September 2012 when my sister gives me My Berlin Kitchen – the novel written by Luisa Weiss – as a birthday present as well as a Welcome gift to Berlin. She knows about my yearning for
heartache and a painful breakup, Luisa decided to take the plunge and move back to Berlin. »The day I saw the apartment we ended up taking, it was yet another gray day in a very long string of gray days in February (…). It was on the top floor of an old building near Schloss Charlottenburg in a leafy, sleepy part of the old West where old Turkish ladies in black coats shared the sidewalks with what was considered the center of the city, but since the city’s reunification, Charlottenburg and its palace felt further and further away from the ›new‹ Berlin. Which is precisely what made the neighbourhood appeal to me. Given that I’d partly moved back to Berlin to reclaim my childhood, I wanted nothing more than to be in the part of the

Rogacki is an institution in West Berlin. It has been around since 1927 and it was the first big-time delicatessen. During the war the house was damaged and they had to close for a few years in the post-war period. They were still operating out of a drive-way next door. Then they rebuilt bigger and better and it has been operating ever since. What is really special about Rogacki is the selection of fish. First of all the smoking: they smoke everything themselves and have a huge variety. I haven’t

seen such a variety anywhere else in the world, not even in New York. They’ve got every kind of salmon, special things and they are all delicious. Plus they have a really amazing fish selection: Häppchen, pickled herring, appetizers and also a really big sausage department. You can also come for lunch, so at noon the whole place is crammed.

From Kantstraße we head in the direction of Ku'damm, but stop in the more quiet part of Bleibtreustraße. Here in the midst of little boutiques and restaurants, Jens de Gruyter opened a lovely concept store called »Paper and Tea«. The space is not just a shop selling tea over the counter, but rather a showroom with little samples of each tea for you to see and smell. »Teaists« will explain the characteristics of the offered selections. The packaging is equally divine: simple materials and colours are embellished

150 g butter 100 g Rice Crispies 400 g chocolate 1. Chop the Mars Bars, chocolate and butter and place in a heat proof bowl. 2. In bain-marie style, place the bowl over a pot of boiling water and mix

Take the popcorn off the heat and shake in the salt and chilli - shake around a bit to make sure it is properly distributed. 4. Serve while still warm!

2 sheets of puff pastry
200 g minced lamb meat
2 onions
2 cloves of garlic
3 tsp olive oil
3 small potatoes

1. Preheat the oven to 180째C 2. Chop the potatoes into very small cubes and boil until cooked in a pot - then drain. 3. Place a pot on the stove at medium heat. Add the oil and onions and allow to cook until the onions begin to go slightly golden. Add the garlic and the lamb - stir and allow the meat to brown. 4. Add the stock cube to boiling water and then both to the lamb. Now add in the boiled potato, paprika, salt, pepper and rosemary. 5. Once the lamb is cooked through turn the heat off and leave to cool slightly. 6. Using a cookie cutter or circular shaped

Whisky Ginger Ice Cream
300ml whole milk

Heat the cream and milk in a large saucepan until just below boiling. While it is heating beat sugar and egg yolks in a large bowl – best with hand held electric beaters. Beating the eggs and sugar with one hand, slowly pour in the hot cream and milk. Once it is combined, pour back into the pot and return to a gentle heat with half of the crystallised ginger. Stir with a wooden spoon until the custard has thickened and when you run your

Pour custard and the rest of the crystallised ginger except 1 tablespoon into icecream machine. Churn until almost frozen, then stir through the whisky, pour into a freezer safe container and sprinkle with the rest of the ginger. Freeze for at least 6 hours or ideally overnight. Do not whizz it in a food processor or you will whizz the crystallised ginger into little gritty bits. Serves 8-10. Great with any hot chocolate or apple pudding, and pretty amazing with quick Boozy Chocolate Sauce (see next page) too.

180g 70% dark chocolate, broken into chunks

Banana Zuccotto with Whiskey Wet Walnuts FOR THE ZUCCOTTO:
2 frozen pound cakes
FOR THE WET WALNUTS:
1 cup sugar
4 cups of banana ice cream
1 cup light corn syrup
1 cups chocolate chips
1 cup water
1 ripe banana
1 cup chocolate buttercream
½ cup syrup from whiskey wet walnuts
2 cups vanilla buttercream
2 cups chopped walnuts
2 ounces whiskey FOR THE CHOCOLATE TOPPING:
¾ cup half and half
1 ½ cups chocolate chips

FOR THE ZUCCOTTO 1. Defrost frozen pound cake. Remove ice cream from freezer to soften slightly. Use plastic wrap to line two large cereal bowls and leave enough to extend a few inches beyond the rim. 2. Fold 1 cup chocolate chunks into the ice cream. Cut the banana into ¼ inch slices. 3. Carefully cut pound cake horizontally into ¼ inch slices. 238
4. Cut browned edges from slices. Cut slices diagonally. Place half of the triangle pieces of cake into each of the bowls with the points at the bottom. Keep them close together and fill any spaces with a bit of leftover cake. Spread ½ of the chocolate buttercream over the cake with the back of a spoon. 5. Fill each of the cake-lined bowls with ice cream to about ½ inch from the rim. 6. Using a serrated knife, cut off excess cake using the rim as your guide. Place half of the banana slices on top of the ice cream in each bowl.

7. Use the remaining pieces of cake to cover the bananas and ice cream. Cut pieces to fill any gaps. 8. Use a piece of plastic wrap to tightly cover the bowl and place in freezer for at least 2 hours or overnight. 9. Remove from freezer and remove top plastic wrap. Brush a bit of wet walnut syrup on the cake. 10. Invert mold onto plate and remove bowl and plastic wrap. Brush on more wet walnut syrup without soaking the cake. Place the cake on a wire rack over a baking sheet. 11. Heat vanilla buttercream in a small saucepan over medium heat until pourable. Pour over the top of the cake. Scrape excess buttercream from baking sheet back into pan to warm for other cake. 12. Return cakes to the freezer for 30 minutes. Make chocolate topping by heating milk just to boiling point. Add chocolate chips and leave for 5 minutes. Whisk until smooth. Remove zuccotto

Add walnuts and return to boil. Cook for 2 minutes stirring constantly. 18. Remove from heat and stir in whiskey. Allow to cool. Store in an airtight container.
