Host of local and International VIP’s join the celebrations for Hotel Missoni Kuwait Grand Opening The exclusive Grand Opening event for Hotel Missoni Kuwait, attracted a host of local fashonistas and VIP’s from around the world. Three generations of the Missoni family flew in from Italy; including Rosita Missoni, Rosita’s daughter Angela, Creative Director of the iconic Missoni fashion brand and Teresa Missoni, Rosita’s granddaughter. They were joined by Kurt Ritter, President and CEO of the Rezidor Hotel Group, his wife Lara Ritter and Mr Adwan Al Adwani, Vice Chairman of CRC. The event started at 6 pm with Dr. Amani Buresli Minister of Commerce and Industry officially opening the hotel with a ribbon cutting ceremony. Guests then enterted the lobby to the sounds a string quartet. Party goers were then taken on a journey around the hotel, discovering the different elements that make this hotel uniquley Missoni. The grand ballroom was the hub of the action with internationally renound Chef Giorgio Locatelli showcasing a sample of his signature dishes alongside live food stations. The crowds moved through the hotel sampling the different food and beverage outlets on offer. At the heart of the hotel, Cucina the popular Italian resturant, then down to Choco Café to sample the sumptuous chocolate fountains. The guests were then treated to the first glimpse of the newly opened Presidential Suite on the 17th floor, before moving onto Luna restaurant on the 18th floor which has sweeping views of the Araian Gulf from its terrace. The last stop was Six Senses Spa for a tour of the soothing treatment rooms. Hotel Missoni is a collaboration between the Rezidor Hotel Group, one of the fastest growing hotel companies worldwide, and world renowned Italian fashion label Missoni. World Music Day: Heal the World Music expresses that which cannot be put into words and that which cannot remain silent. - Victor Hugo

Music aficionados, can you visualize a life void of music? Absolutely NOT! Whether you accept it or not, music affects our daily life, weaving its beauty and sensation through our thoughts, activities and memoirs. Music is harmony and music is beauty. Music has the impact of conveying the ineffable. One cannot approach music with one’s own peculiar likes, dislikes or tastes, which are all a part of one’s own conditioning. Music is something both astoundingly complex and unbelievably simple at the same time.

The genesis of World Music Day World Music Day, also known as Fete de la Musique, was a music festival that began in France in 1982. The idea was conceived by French Minister of Culture, Jack Lang, in 1981. Since then June 21st has been celebrated every year as the World Music Day. On this day, the musicians perform for free in open areas. Free concerts are organized in parks, museums, train stations, castles etc. This helps in making all sorts of music accessible to the public. It gives an opportunity to commune and share a special bond through music. There is no restriction for noise on this day. The term ‘World Music’ includes both traditional as well as non-Western music. It is folk music of any culture, played by indigenous people. It is also a classical music along with traditional ethnic instruments. Some of them are – Japanese `Koto` music, Indian `raga` music, Tibetan `chants` and South African `township` music. World Music Day is celebrated in Argentina, Australia, Britain, Luxemburg, Germany, Switzerland, Costa Rica, China, India, Lebanon and several other countries. This is done to promote peace and spread goodwill through music. Musicians from across the world are also invited to perform on World Music Day.

Genres of music India being a land of diversity with varied cultures, traditions and art forms, every region has its own unique musical form. While there are various genres, Indian classical music has been divided into North Indian traditional known as Hindustani music and Carnatic music belonging to South India. Apart from these, there are wide-ranging forms such as Bhangra, Bhajans or Devotional, Ghazals and Qawwalis, Indi-Pop, Folk, Tribal, Film Songs, Remixes, Fusion etc. While Bhangra is a dance oriented folk music, Bhavageete (devotional song) is a form of expressionist poetry and light music. Qawwali is a Sufi form of devotional music based on Hindustani classical. In the West, we have Metal, Punk, Rock, Hip-Hop, Hard Rock, Alternative, Experimental, Country, Disco, Funk, Classical, Progressive, Trance, Techno, Ska, Reggae music. Trance Music was developed in the early quarters of 20th century and is usually played in club houses and dance floors. Indigenous Country Music born of the US is in form of folk, Celtic, church, gospels and tribal music, while pop music is both classical and folk. Reggae is a music genre developed in late 1960s. Its lyrics deal with faith, love, sexuality, relationships, injustice etc. Hip-hop is both a cultural movement and genre of music developed in New York City in 1970s by African Americans and Latin Americans.

Ups and downs Music is a vital form of communication. It’s a manifestation of society in a particular time and place. Music needs no restrictions, boundaries; it bonds us irrespective of who we are, and where we are from. It’s a source of entertainment as well as platform to put across past, present and future messages. Music also helps socialize and meet new people. Music can do wonders on overall well-being of the mind and state. It is said, listening to music has positive effects on us. One can ease off mental illness by listening to soft, soothing music. Bid adieu to depression and anxiety by tuning in to your favourite track. It promotes sound sleep as well. Music helps us unite for a good cause. Various artists jointly raised money for the quake-struck Haiti by recording MJ’s song ‘We are the World’. It sounds beautiful as

well as inspiring, as it echoes noble thoughts. John Lennon`s song `Imagine` can be cited as a sweet remedy in this trouble-torn world: `Imagine there’s no countries It isn`t hard to do Nothing to kill or die for And no religion too Imagine all the people Living life in peace` Music grants us the freedom of expression. Like in the late 1980s and 90s, young black Americans coming out of the Civil Rights Movement used music to show the limitation of the movement. They used hip-hop to voice their opinion about issues and let the world notice. But inspite of these social impacts, there are negative aspects as well. Some of the songs, lyrics in hip-hop genre portray violence, drugs, alcohol, sex which is damaging to people’s minds. Youngsters fail to differentiate between reality and entertainment, and seem to idolize and follow their footsteps. Heavy metal and rock bands also do have intense lyrics and fixation with death. Rappers like Tubac Shakur, Notorious B.I.G` are known for their violent images, drugs, murder, gunfights. This leaves a negative impact on the youngsters. The more we keep a track on the lyrics, the more we become habituated to it and can become a prey to it.

A good dollop of Hommous spread down the central channel of a stick of celery. I bite down and the full and earthy flavour is followed by a burst of cool freshness. This has got to be my favourite snack. This particular batch was brought to me from London by my upstairs neighbour Zoe. She knows that I’ve spent time in the Middle East and she hits the mark with her choice. It’s the proper stuff in a plastic pot wrapped in cling film bought from the Lebanese market. None of this pretentious supermarket wrapping. This Hommous is very good. It makes me happy because sometimes hommous can be very bad. I have literally said goodbye to Zoe, closed the door and cracked open the pot. Not much can stand between me and a pot of good Hommous. A thought occurs to me as I reload my celery stick with a fresh splodge. When was the first time I tried Hommous and is this the best hommous I have ever tasted? Then a split second after... should I have cracked it open and offered Zoe some? Oh well...

Hommous

James Sandham I can't remember the first time I tried hommous, but it must have been around the time we arrived in Kuwait from England. It is undeniably a slow and steady wins the race kind of food. Only after years of consuming it in various shapes, forms and situations have I realised how fond I am of it. But it has to be good. Not so sloppy it drips and not so dry it tumbles, but a good dollopy texture. Zoe's hommous was definitely the dollopy kind. And I was happy to eat it all by myself. Yum. Am I the only one who has given hommous a second thought? It appears not. Some people take Hommous very seriously. Even more seriously than me. A quick search on the internet and I've already found blogs entirely dedicated to this tasty glop. I feel like such a part timer. There are people out there that have surveyed all the restaurants within a 50K radius of where they live for the quality of the Hoummous they serve. Taste TO is a Canadian blog based in Toronto that lists various Hommous crimes: 'Too garlicky, too lemony, too gluey (??), among others. This blogger describes the perfect hoummous as: 'It should have a slight lemon tang, a bitter back beat from the tahini (sesame paste, dontchaknow), and garlic overtones without being over-powering; all of this resting on the chickpea foundation. The texture (I refuse to say “mouth feel”, it’s like “mouth-watering”, just ask me sometime) should be somewhere between creamy and coarse. This describes a perfect hommous, the uber-hommous...' Inspired by this lucid description and a suggestion from a genius friend of mine, I decided to make a tick sheet pro forma for the aspiring hommous enthusiast. Perfect hoummous looks like this: Chickpea Garlic

Tahina x Lemon Hommous that has too much garlic with the end result drowning out the subtle flavour of the chickpeas looks like the example below. (In this case I wouldn’t bother even considering tahina or the lemon.) Feel free to use this handy table so you can keep a record of your search for the perfect hommous. Or save it for later and read on (don’t worry not long now)...

Lemon I didn’t have this table at the time to record my overall impression of Zoe’s hommous, so I’ll not pass unfair judgement. Perhaps the table could be improved? Additional factors may include, ‘Are you really hungry?’, ‘Are you happy with your life right now?’, ‘Did the wrapping annoy you and taint your taste buds?’ etc etc... The perfect hommous needs the perfect situation. For example, reunion dinner with long lost family members or the dinner where you propose to your future spouse etc., etc. So, if you want to appreciate hommous, make sure you get the good stuff and then consume it on a momentous occasion. First bungee jump= H not recommended. Save it for after. Delish!

Improving the mother-daughter relationship

‘Side by Side’ examines how to openly communicate with one another For many, motherhood is one of life's greatest joys, but getting along with your children, particularly daughters, isn't always a piece of cake. In “Side by Side: The Revolutionary Mother-Daughter Program for Conflict-Free Communication,” author Dr. Charles Sophy examines this family dynamic and how moms and daughters can have an open, loving relationship. An excerpt.

With

all due respect, I often compare the mother-daughter relationship to being on a roller coaster, the big, scary kind that you’re able to see from the next town over and whose passengers can be heard shrieking from miles away. Parts of that ride can certainly be thrilling and crazy fun, much like the way you may feel when you and your daughter are really getting along. There may be other stretches of that same ride that leave you feeling anxious, fearful, or nauseated — much like the way you may feel when you and your daughter are in the midst of an argument. There’s one big difference, though, between these two rides. Unlike the experience at the amusement park, the ride you are on with your daughter will never come to a halt, automatically release its safety bar, and allow you to exit. No matter how scary or intolerable the ride may get with your daughter, there’s not even a chance of getting off. This ride is forever. And there is no safety bar. The truth is, most moms don’t really want to get off this ride. They’d just prefer a slower, smoother, more predictable journey, a ride with fewer upside-down loops or steep, heart-stopping drops — one that doesn’t include, for example, your fifteen-year-old getting pregnant or your thirty-year-old becoming addicted to drugs. Nobody wants that ride. But it’s a given that every mother-daughter pair faces challenges, and it’s inevitable that at some point, there will be a challenge that will test the strength of this relationship and the ride will change. Variables like genetics, personality, socioeconomic status, and family history will certainly inform the way moms approach these issues, how heated these potential conflicts become, and of course how they’re resolved. However, aside from these variables, there is one significant factor that will give you and your daughter the best chance of negotiating these inevitable issues while maintaining an overall healthy and loving relationship: communication that is respectful and honest. This will not only ensure a safer ride, but will strengthen the bond between you and your daughter. This is our goal. All mothers and daughters want the same things: love, understanding, respect. And they want them from each other. Mom wants love, respect, and understanding from the child she brought into the world. And daughter wants the same from the woman who gave her life. Many moms seek professional guidance because their daughter is acting out in some way — such as getting a tattoo, dressing inappropriately, or dating someone the rest of the family deems undesirable. The specific behaviors may be age related, but they are simply the manifestation of the underlying desire to be understood, respected, and loved. The only real way that the mother-daughter relationship can evolve in a healthy, loving, and sustainable way is to satisfy these needs. And it boils down to communication, which is something that mothers and daughters are doing constantly, just not as effectively as they could. The fact that mothers and daughters often struggle is certainly not a novel premise; a vast number of books and periodicals have been written on the topic, all in an effort to comprehend this potentially volatile dynamic. But none of them have offered the straightforward approach found in this book. The truth is, there is something you, the mother, can do to improve your relationship with your daughter. You have a chance, a really good one, to make it better. A lot better. It is up to you. Why? Because you not only are the designated driver of your family, you are essentially the one responsible for the existence of your daughter in the first place. Whether conceiving a child was a conscious choice, a mistake that you ulti-

mately chose to celebrate, or a journey through fertility medicine, you made it happen! You hungered to have a child and create a family, took the steps necessary to become pregnant or to adopt a child, and committed yourself to that mission. This in itself is a huge achievement. You may very well have a significant other who was part of that accomplishment — a husband, a boyfriend, a partner, an ex—and who remains part of your family unit as you journey through motherhood. If so, that person certainly has a role in the dynamic with your daughter. However, your relationship with your daughter must now be your exclusive focus. It is your responsibility to fully embrace the next challenge and figure out a better way to communicate with your daughter. Most moms, due to fear or lack of resources, feel as if there is nothing they can do to improve their relationship with their daughters. Yet there is a technique you can use that draws on resources you already possess. With this technique, I have been able to make a difference in the lives of thousands of mothers and daughters. I call it the Chair Strategy. This simple and effective mom-driven tactic begins with a visual image of the position of two chairs. Imagine that these chairs represent the way you and your daughter are communicating. Are they situated back-to-back, with the two of you in a deadlock, unable to see each other’s point of view? Are the chairs face-to-face, enabling each of you to share respectfully opposing viewpoints? Or are the chairs side-by-side, with the two of you working collaboratively to sustain your relationship? The answer to this question will enable you and your daughter to begin to understand how your communication efforts are succeeding or failing. The Chair Strategy will provide you with insight and tools to change the dynamic between the two of you, to more effectively resolve the conflicts that occur, and to emerge with an even stronger bond. Whether your daughter is an infant or turns fifty years old tomorrow, whether the two of you talk several times a day or only sporadically, it is you, the mom, who must create an environment conducive to openness and true sharing. At this point, it doesn’t matter whether the two of you fight with harsh words or clenched fists. All that matters is that you begin the process of working toward a healthier and more loving dynamic with your daughter. It is in your hands. I hope you appreciate the power and importance you have in the relationship with your daughter. This fact informs my basic philosophy: Parenting begins with you. Not your child. But You. To explain this concept, I often use the analogy of the oxygen masks on an airplane. How many times have you heard a flight attendant utter the reminder that in case of emergency, you must first secure your oxygen mask and then your child’s? In that context it makes perfect sense, right? When you’re thirty thousand feet in the air and there’s some kind of mechanical malfunction in the flight gear, you need to put your mask on first so that you can keep breathing; only then can you help your child put on hers. So it is the same with moms and daughters here on the ground. Only after you are a balanced and secure woman can you model that kind of strength and security for your daughter. And as you embrace this philosophy, you will have an even more successful outcome with the Chair Strategy. As medical director of the Los Angeles County Department of Children and Family Services, the nation’s largest child welfare organization, I have treated this country’s most vulnerable population. In my private practice as a child, adolescent, and adult psychiatrist, I have treated the nation’s most privileged. I’ve seen, heard, diagnosed,

and treated just about everything: infant malnutrition, depression, phobias, panic attacks from weight gain, addictions, and many more. My work is not limited to a traditional office setting either. I guide countless families on the spot by intervening on airplanes and playgrounds, on beaches and in parking lots — anywhere it seems appropriate. My family contends that I’m a crisis magnet, but I am drawn to this work because it is about making families stronger and, in my opinion, nothing is more important than family. My professional training — I’m triple board certified in Child & Adolescent Psychiatry, Adult Psychiatry, and Family Practice — enables me to care for my patients’ physical and emotional wellbeing, including their most pressing emotionally based issues, the kinds of concerns that parents, children, and blended families face most often. Twenty years and thousands of patients later, I can unequivocally say that of all the parent-child dynamics I’ve witnessed, none is more fascinating or frightening to me than that of a mother and daughter. The breakneck speed with which the exchanges can travel from loving to toxic is even more intense than between most married couples in crisis. The collective power that fuels the intensity of the emotional extremes of mother and daughter is like no other. And the successful outcomes I have witnessed time and time again — regardless of the socioeconomic status or severity of the issue — are among the most rewarding and meaningful of my professional experiences. In many ways, this book mimics the process I use with any mother and daughter who come to me seeking guidance. So as we begin our journey together, and I share my professional ideas and techniques, I ask of you the same as I would of them. Please embrace three concepts: 1. Commitment to learning about yourself and your daughter 2. Honesty when you are asked to participate 3. Trust in the process to bring you a positive result If at any point you feel confused, frustrated, or downright angry at any insights, suggestions, or exercises in the book, know that you aren’t the first person to question the process. Doubt and anger are common and sometimes necessary responses in order to move forward. But try to keep an open mind. The idea of no pain, no gain applies here. If you reach a point where you entertain the notion of stopping, don’t! Instead, take a moment and remember: Commitment. Honesty. Trust. Not coincidentally, these are the three crucial ingredients needed to create and sustain a healthy and loving connection with your daughter. Finally, before we begin, there are two specifics you should know about me. First, as a psychiatrist, my approach is (and always will be) strength-based. When I begin treatment with individuals or families, my first task is to help them identify their personal strengths, areas in their

lives that are strong. By making the initial focus on the positive and the strong, the negative elements naturally and quickly begin to dissipate. In strength, there is hope. And within hope, I believe, there is tremendous power to guide you forward. Second, I am a realist. I believe the particular circumstances of your life are what they are, and something you have to deal with every day. Many factors are beyond your control. That said, measuring the reality of your life against something you saw at the movies last week or on a rerun of Gilmore Girls is unproductive and pointless. These relationships, whether portrayed on the small or large screen, have been dramatized for entertainment purposes. The relationship with your daughter, no doubt entertaining at times, is real. And no matter what your reality is now, your goal of a stronger, healthier, and more loving connection with your daughter is within reach. As a realist, I can’t promise that you and your daughter will always be riding on that roller coaster together with entwined hands, joyfully shrieking in concert. But I can guarantee that your ride will be more pleasurable and that moments like these will become a distinct possibility. Thank you for committing to take this journey. Make your health a priority Your health should always be an important part of your life but it can suffer and affect all areas of your life if you are working long hours, stressing out about work and not getting enough sleep. Make your health a priority by going to sleep at a reasonable hour, choosing healthy options for meals and snacks when you are at work, and taking time out to exercise at least three times a week. Get a life If you have hobbies and interests outside of your normal working day, this will encourage you to leave the office at a reasonable hour and it will also put your colleagues and manager on notice that you will need to leave work at a certain time. This may involve exercising at the gym, doing a course at a community college, joining a club or learning a new skill. Sadly, sometimes people fall into a routine of working extra hours because they simply don’t have other things to do. Follow these tips and you will be happily on your way to tipping the scales in favour of a work life balance. Finding time for work, life and play is very important. If you discover that it is a constant challenge to find a workable balance between the three, then you may want to even think about changing your work role, finding a job in a different location or even changing your career to help in achieving a work life balance.

REMEMBER: keep moving forward, even if you take only a few small steps at a time. Better progress is made by small, steady steps than huge single leaps. Enjoy!

From a persuasive standpoint, social media can be used to surface engagement opportunities and increase participation through building new social norms :) that’s for sure... especially with us women. In other words, social media can increase the visibility of opportunities to engage, and influence actions. The visibility of the engagement acts as a catalyst for increased involvement. Companies looking to reach women, whether as consumers, entrepreneurs, employees, or advocates have an unprecedented opportunity through social media to engage them. For women, social media presents abundant opportunities to lead, effect change, innovate, and build relationships across sectors, locally, nationally, and globally. Khaleej Times Online reports that according to a recent study conducted by YouGovSiraj and commissioned by anaZahra.com , online has definitely become a women’s space in the Middle East. Figures reveal that 71 per cent of Arab women belong to a social networking site, 66 per cent connect with friends online on daily basis, 83 per cent access the internet from home and 34 per cent spend at least 10 hours a week online. The survey also provides insight into the preferred activities of Arab women online

Woman online by Numbers: Arab women are highly involved in the social networking space, with Facebook ranking as the leading social networking site among Arab women: 91 per cent in Lebanon, followed by 80 per cent in Egypt, 78 per cent in the UAE, 70 per cent in Jordan, 68 per cent in Kuwait and Qatar each, 66 per cent in Bahrain, 64 per cent in Saudi Arabia, 55 per cent in Oman, and 45 per cent in Syria. If we ask the classical question: Why do women blog? We would perhaps receive the answer: because blogs are a platform that enables Arab women to freely speak out against oppression and injustice in their communities with no censorship whatsoever. In the many conferences and meetings on Arab women representation in conventional media, comments about women being ‘objectified’ and ‘commoditized’ in the media sphere have been most agonizing. It has been erroneously claimed that women receive negative media treatment because they are under-represented in media institutions. But a study by Leila Nicolas Rahbani, from the Lebanese International University, titled “Women in Arab Media: Present but Not Heard” suggest that although the number of Arab women working in media outlets has increased, “there is still lack of gender sensitivity in media policies and programs, and women continue to be portrayed in a stereotyped manner by the media, as well as an increase in violent and pornographic images of women.” At the personal level, a study on Arab women bloggers that I have conducted as part of my Master’s degree requirements suggests that women tend to use blogs as a public diary to discuss personal and public issues bearing on their life and development. Women use storytelling to introduce their thoughts in the blogs, covered by my study has been incredibly amazing. Tell us more about your clinic in Kuwait? I always dreamed of operating a boutique dental clinic that provides high end dental care services in a very unique set up and relaxing environment. BMS dental clinics started at the ground floor of Royale Hayat Hospital in a smaller cozy and nice space. During the same time, we were executing our actual clinic located on the first floor which took around a year of hard work and exceptional design that meets our vision. We are currently operating in 6 dental rooms each of them having different themes and scoop of practice.

I see that you have selected different colors for each clinic. What is the philosophy behind this? The philosophy is reflected in the diversification of colors, design and small details for each operating room.

Tell us about your team? What are your criteria for selecting them? My team consists of highly experienced highly educated and specialized doctors for each dental care service we are providing. This will always be the first criteria in how to select the members of my team because we, at BMS Dental Clinic, won’t accept mistakes and frauds with our dental treatments.

How has technology improved cosmetic dentistry? The improvement in cosmetic dentistry consists primarily in the techniques of dental preparations and specially the innovation and quality of the dental ceramic products. I mean by that, now we are becoming more and closer to give in our Cosmetic dental treatments 100% natural, very strong and highly esthetic results exactly like our normal teeth.

What is bonding and how is it different from a veneer? Bonding is a direct application executed with the use of esthetic products called “Composites” which can be applied in the same session to the teeth of our patients for enhancing the beauty of their teeth and smile. This technique can be used for treating problems such as gaps and spaces between the teeth, highly teeth discoloration… the difference between bonding and veneers consist in the fact that bonding won’t be a permanent solution because their color might change with time due to the attack of acids, food colorants, nicotine and caffeine that human beings takes and absorb differently one from the other,

which explains the reduced cost comparing to veneers.

A Miami native of Latin descent, this passionate culinaire has dazzled diners and almost no other Miami chef has made as big a splash on the national culinary scene as Chef Michelle Bernstein. Chef Bernstein, a James Beard Award winner (Best Chef South 2008) and author of Cuisine a Latina, has two successful South Florida outposts: Michy’s, her cozy, haute neighborhood haunt on Miami’s Biscayne Corridor, and SRA. Martinez, her eclectic tapas restaurant in the burgeoning Miami Design District. In 2001, she joined the Food Network as co-host of the show Melting Pot, where she introduced many Americans to the art of Nuevo Latino Cuisine. Bernstein would return to the Food Network years later to battle Bobby Flay on Iron Chef America, from which the Miami chef emerged victorious. Most recently, Bernstein launched the Miami chapter of Common Threads, an after-school program dedicated to teaching underprivileged kids ages 8-11 to cook, socialize, and eat healthy one recipe at a time. In addition, Chef Bernstein is anticipating the fall 2009 launch of her fourth restaurant – Michelle Bernstein, an upscale, seafood-driven concept located at the gorgeous Omphoy Ocean Resort in Palm Beach, Florida. I’ve been interested in cooking since I was four years old. The smell of my mother’s cooking would entice me and I’d have to go learn what she was doing.

When you started, did you want to specializing in preparing something in particular? No. I wanted to learn as much as I could about the art and science of cooking.

What according to you is one magical ingredient in your cooking? Shallots do wonder for everything.

What does the process of inventing a new recipe involve? It could be a dream; it could be a beautiful product, like the most perfect vegetable and how to make its flavor even more robust. Much trial and error and experimentation.

What is the toughest part in inventing a new recipe? For me it’s always about the ascetics. I have no problem creating a flavor, it just never looks the same on a plate as it does in my head.

What do you mean when you say that: “My food is luxurious but approachable”? We’re using the best ingredients we can source -- locally, nationally and internationally; yet, we don’t go in too many directions with the flavor combinations.We love when people find a beautiful memory in our recipes.

Tell us about your book “Cuisine a Latina.” I named it that for my French base and my semi-Latin heritage. It has some recipes inspired by my mother, some of my first recipes as a chef and some dishes I created at my first restaurant, Michy’s.

Any new books on the way? Lots of ideas but nothing in the works yet.

Besides your cooking, what other foods do you enjoy? I actually don’t eat my own cooking very often. My husband and I crave everything Asian and everything raw.

Tell us about your achievements and awards that you have won? James Beard 2008 – Best Chef of the South. Numerous dining awards, res-

Tell us about your restaurants. Why did you come up with two different brand names? Michy’s, my nickname, is my go to food, my go to restaurant. It’s very approachable and satisfying to the pallet. Sra Martinez, which is my husband 's last name (and I want people to start calling me Mrs. Martinez), is a tapas restaurant where we serve not only Spanish but tapas from all over the world.

What is your role in running these two restaurants? To successfully employ an amazing group of people and give them a great place not only to work, but to call home.

What are your future plans? Are you looking at expansion of existing restaurants or starting something new? We just started something new, Crumb on Parchment, a café/bakery where we feed people that work and live in the Design District neighborhood.My new line of cookware launched on Home Shopping Network a couple of months ago.

What new experiments you would like to do? I don’t like to talk about experiments, because if they fail I don’t mind showing people that I made a mistake, but I don’t want anyone trying what doesn’t work.

Have you ever been to the middle-east and what do you feel about the food of middle-east? I absolutely love it. It’s some of my favorite food. I could literally live on raw kibbeh, mejadarah. If I could out labneh on everything I would. Tahini crusted fish with pomegranate seeds is my go to wow dish.

Tell us about Common Threads? Common Threads teaches children to cook and eat healthfully while learning about the importance of socializing. Common Threads originated from Chicago but I loved it so much I brought it down to Miami.

What according to you is the best age to start learning to cook? As soon as your child can safely help in the kitchen get them involved.

Cooking is a life skill, not just a hobby.

Your message for us at CityPages magazine? I think traveling is the best way to learn and to truly learn a culture you need to deeply embed yourself in its cuisine.

Diva of Real Estate Marketing “It’s really not something a woman can do,” or at least that is what they used to tell Mai. Ever heard of her? I would like to introduce you to Mai Al-Faraj, one of the first female in Real Estate marketing in Kuwait. She is an accomplished business woman in the domain of commercial real estate marketing in Kuwait and Egypt. Her success comes as a result of advanced adoption of innovative technologies, an entrepreneurial spirit, and a far-reaching commitment to service – all uncommon for the industry. Sprinting beyond the antiquated systems common in the tradition-bound world of real estate, Mai is a leader in introducing new marketing systems using the latest tools of the internet and social networking. In addition, Mai is a real estate speaker and independent property consultant to several clients. Mai is currently on a career break and busy raising her 3 boys who are a true source of inspiration for her and she is trying to cultivate rich values in them and helping them develop a very balanced personality. I was really honoured to interview Mai this month for our readers:

Please introduce yourself to our readers? I am a Kuwaiti with a passion for media and marketing. Please tell us about your education? After completing my Bachelors degree in Public Relations and Advertising from the American University in Cairo I continued my education and completed my Masters Degree in Mass Communication specializing in TV Production and Journalism. What led you to choose Marketing? I actually wanted to be a genetics engineer and I had a scholarship from England to study at one of the leading university. However, my father did not want me to travel that far. He was a great lover of art and history and instead wanted me to study in Egypt where I could be close to him and also exposed to the rich culture and history. Marketing is a very interesting field. You learn new things every day. This is exactly what I like. I believe learning never ends. Moreover at that time it was a belief that it was not something for women to do and I wanted to prove that I could do it. Tell us about your work experiences? After completing my Bachelors degree, I worked for the Kuwait Information Center in Cairo as a consultant for the international foreign media department. Later in 1993, I joined the Arab Radio and Television (ART), Cairo as a producer and reporter. I wrote several scripts and reported events such as Cairo International Film Festival, Art Exhibitions and I also interviewed film stars and celebrities for the film channels. I had produced many video films on selected topics and assisted the production team on various assignments.

I also anchored the sports channel and worked a film critic for the movie channel. Wow, that is amazing. So, how come you shifted to real estate and tell us about your experiences in Real Estate marketing? Well, after returning to Kuwait, I joined the National Real Estate Company as the Marketing Manager and was mainly responsible for the Kuwait Free Trade Zone (KFTZ) area. It was a new concept in Kuwait and I am lucky that I worked on it and made several successful marketing strategies and plans, advertising campaigns, which lead to generation of hundreds of leads within a short span. In 2006, I joined ERA-Kuwait Real Estate Company as the Acting General Manager and Director of Marketing and Business Development. This was a great experience as I was involved in all aspects of a Real Estate Company. Later in 2008, I was appointed as the SVP for Marketing and Business Development for Mayadeen Company which had over 150 million KDs is assets. I then founded my own company in 2009 and was an Independent Property Consultant. I worked with a Spanish company and provided Marketing and Business Development advisory for their projects in Asyut (Egypt) and Chad (Africa). Can you imagine that I travelled both these places? I was later hired by Mena Holding Company as the Regional Marketing Manager for their projects in Egypt. I t was a great experience and after 2 years working with them, I just took a break last month. Why Real Estate Marketing? In fact, I am the first Kuwaiti female to be in the Real Estate market-

ing business. I like challenges and I believe Real Estate marketing is a big challenge especially for a woman. “I love marketing…. I am always working with something different and that really keeps me on my toes. I love to get up every morning and get right to work. I love pitching story ideas to the media and seeing the story come to life. Watching companies get more business from the work I have helped them with is very exciting to me.” If you could invite a personality to dinner, who would it be, and why? My father. I really admire him. Is having a Blackberry a curse or a blessing? It could be either, depending on how you use it. What do you think are the 3 Keys to Success? Knowledge; faith in yourself; and having no ego. What exciting plans and developments does the future hold for you? I am currently taking a break from my professional life. Although, I am providing consultancy to a few firms. I have not decided yet as to what will I do once I start again but I am considering different options. What are the best pieces of advice you can offer to aspiring Marketing professionals in the real estate business? Real estate marketing is not magic. It also does not require the mind of a rocket scientist. Smart real estate marketing is about observing the world around you, making a study of living patterns and population trends, identifying values based upon supply and demand, and then taking an action to prepare a marketing plan. So, I would advise that learning is very important and does not end with your degree. You regularly need to update yourself with what’s happening and what’s new. What is one thing you believe is missing these days in people? According to my sense, 'true essence of love' is mssing. People are busy in materialistic things which have affected their attitudes as well. Do you enjoy any kind of sports? I love all water sports but I am more into scuba diving. Which is your favourite place for a holiday? I usually have working holidays and my favourite place is New York.!!! Do you have a favourite food? I am not a foodie person but as long as it tastes good, I eat anything. What is more important taste or environment? Both I guess. Can you name something you never forget before going to sleep? Prayers. I have my own way of communicating to God and I thank him for giving me the energy to accomplish my tasks. Is there anything you can never leave your house without? My Misbah !!! Who’s who on the rugby pitch?! Rugby Positions Part 1 Forwards

A rugby union team is made up of 15 players: eight forwards, numbered from 1 to 8; and seven backs, numbered from 9 to 15 and depending upon the competition, there can be up to eight replacements, 16 to 23!! Each player has a fixed role with specialist positional skills and each team uses the same formation. So it is different from both football with its various formations (4–3–3, 3–5–2, etc.) and cricket, where players are commonly moved from one field position to another (e.g. from silly mid-on to deep cover point). The game developed quickly and “Forwards” (1-8; the big guys) and “Backs” (915 the smaller quick guys) were established. Backs being the fast runners with complicated game plans and the forward with their strength and straight forward game plan. In part one we will concentrate on the “Forwards” as this is where the grunt work is done and if you are big this is where you would be placed. As we go along you will find that different positions have different names. I will attempt to explain what each position does and where they fit in to the magical game of rugby! Sam Wigg

The role of both the loose- and tight-head props is to support the hooker in the scrum and to provide effective, dynamic support for the jumpers in the line-out. Along with the second row, the props provide the main power in the push forward in the scrum. For this reason they are usually the strongest and heaviest players in the team. Under modern rules non-specialists are not allowed to play as props (or hooker) as specialist skills are required to ensure the scrum does not collapse, a situation which can be very dangerous sometimes resulting in crushing or breaking of the neck and spine. If there are not enough props or hookers on either team (and no replacements are available), uncontested scrums will be set, where no pushing is permitted, and the team putting the ball into the scrum has to win it. A tight-head prop is so called because they pack down on the right-hand side of the scrum and so (because the players engage to the left of their opponents) their head fits between the opposing loose-head prop and hooker. In contrast, the loose-head prop packs down on the left-hand side where their head is outside that of the opposing tight-head prop. Although it may look to the neutral observer that the two positions are quite similar (and some players have the ability to play on both sides of the scrum), the technical challenges of each are quite different. Props are also in the position of being able to direct the movement of the scrum in moving side to side to prevent the other team's scrum from "wheeling" the set scrum and forcing another "put in" from the opposing side. Outside of the scrum and line-outs, props use their great strength and weight to win rucks and mauls for their teams and to make large drives forwards with the ball. Props in the International Rugby Hall of Fame include: Jason Leonard (England and Lions), Syd Millar (Ireland and Lions) and Wilson Whineray (New Zealand). Millar and Whineray are also members of the IRB Hall of Fame.

Hooker 2 The hooker is a key position in attacking and defensive play. The name is derived from the fact that hookers use their feet to 'hook' the ball in the scrum; because of the pressure put on the body by the scrum it is considered to be one of the most dangerous positions to play. They also normally throw the ball in at line-outs. Hookers have more in common with back row forwards, with many being used as ball carriers, despite the fact that they are often the smallest of the forwards. The hooker is typically a key player in the scrum generally being regarded as its leader. A hooker will not allow his forwards to engage until he feels that the binds are right and all players are ready. In addition, hookers may act as an extra prop in the scrum and, instead of contesting the feed, they aim to wreak havoc on opposition feeds. Often the hooker and the loose-head prop will combine to attack the opposition tight-head, as disrupting the no. 3 is often the key to gaining the upper hand at scrum time. Hookers tend to control the forwards and are often the players who direct the forwards in mauls. Hookers in the International Rugby Hall of Fame include: Sean Fitzpatrick (New Zealand) and Keith Wood (Ireland and Lions).

Locks (second row) are almost always the tallest players on the team and so are the primary targets at line-outs. At line-outs, locks must jump aggressively, usually being lifted by team mates, to catch the ball and get it to the scrum half, or at least get the first touch so that the ball comes down on their side. In scrums the two locks (second row) slide their heads between a prop and the hooker on either side so that each of their shoulders is directly supporting the upper thigh of those players in order to drive and support the front row during the scrummage. They bind tightly together and enter the scrum simultaneously, generally as directed by the hooker once the front row is set. They are also responsible for keeping the scrum square and the front row together, while providing the supportive power to drive the scrum forward. (This position is referred to as the "engine room".) “Tight five" refers to how tight these players must be bound together in order to be effective in a scrum. Locks are very tall, athletic and have an excellent standing jump, along with good strength. They also make good ball carriers, bashing holes in the defence around the ruck and maul. They are the main figures of rucks and mauls, often directing how a ruck or maul moves by pushing them. Locks in the International Rugby Hall of Fame include: Bill Beaumont (England and Lions), Gordon Brown (Scotland and Lions), Frik du Preez (South Africa), John Eales (Australia), Martin Johnson (England and Lions), Brian Lochore (New Zealand), Willie John McBride (Ireland and Lions), and Colin Meads (New Zealand). Flanker is a fairly dynamic position with the fewest set responsibilities during the game. It is their responsibility to clear up messy balls to start a new phase of play, meaning they play a major role in maintaining/gaining possession after handling errors.

In the scrum, flankers do less pushing than the tight five, but they have to break away quickly and attempt to tackle the opposing backs if the opposition wins the scrum; and to cover their own half backs if they win the scrum. Due to their role in the scrum, flankers should be fairly heavy whilst still having speed and power. The blindside should be the bigger, more destructive defensive player whilst the openside should be the quicker of the two. Considering how dynamic this position is, flankers can adapt slightly to their own style of play; for example, they can become big figures in tackling and mauls, or use their pace to run with the backs for tactical manoeuvres and get through the opposition's defence. Flankers are renowned for their stereotype of cheating in the scrum, a stereotype that may be justified due to their inescapable ability to break off early and intervene with other aspects of the scrum, due to their positioning on the extreme sides of the pack (thus the name "flanker"). Number eight is the only position that does not have a specific name in English and is simply referred to as "number eight" or "eighthman". The modern number eight has the physical strength of a tight forward along with the mobility and pace of other loose forwards (he is often the fastest loose forward in the pack). The number eight packs down at the rear of the scrum, controlling the movement of the ball to the scrum-half with his feet. The number eight is the position where the ball enters the backline from the scrum and, hence, both fly-half and inside centre take their lead from the number eight who, as the hindmost player in the scrum, can elect to pick and run with the ball like a back. As a result, the number eight has similar opportunities to a back to run from set plays. They are normally tall and athletic and used as an option to win the ball from the back of the lineout. Like flankers they do less of the pushing than locks or props, but need to be quick to cover opposition half-backs. A number eight should be a key ball-winner in broken play, and occasionally a 'battering ram' at the front of rucks; he should also be able to break the opposition's line like his blindside flanker counterpart and the centres. Grabbing

a fistful of almonds every time hunger throws a tantrum, is my favorite part of following a diet, with still pampering my taste buds. Almond is a nut that has a rich and creamy taste, along with a high nutritional value. Talking more about this nut, it is actually the seed of a fruit. Due to its health benefits, it has always been recommended as a healthy snack. One of the many benefits of almonds that may interest some sweet buds is that, it has a special blessing to tame and be able to treat the most rapidly growing disease in the world, that is diabetes. Diabetes stands as a disease that defines high sugar levels due to very little or absent insulin secretion in the body. Insulin is vital for processing glucose as fuel in the body and also balance the level of glucose. For those affected with diabetes, following a diet and maintaining the sugar level becomes very important in order to keep the disease in control. Among the list of foods to eat in diabetes, almonds have been most successful in taming sugar levels. Several researches and surveys have been conducted to study and prove the role of this nutritional snack in controlling diabetes. More on almonds and diabetes has been compiled below. About Diabetes Let us learn a little more about diabetes, so as to understand the role of almonds in diabetes better. There are three types of diabetes. Mainly, type 1 diabetes, that is usually detected in childhood, where little or no insulin is produced. Type 2 diabetes is the most common and rapidly growing type. This affects adults due to decreased production of insulin in the body, and also due to the poor response of the body to insulin. This type is usually triggered by obesity factors. The third type of diabetes is called gestational diabetes, it usually occurs when glucose levels rise above normal, mainly in pregnant women. Another study conducted, proved that along with controlling blood sugar, almonds also helped diabetics to tackle high blood pressure and triglyceride levels. n According to many studies, people with diabetes may have a deficiency of manganese and magnesium. Almonds are rich sources of these minerals that can make up for this deficiency. n Almonds were found to stimulate insulin sensitivity in diabetics. Due to the ability of almonds to tackle obesity issues, by lowering LDL cholesterol (bad cholesterol) levels in the body, it is helpful to treat people with a pre-diabetic condition (condition where the sugar levels are high, but not so high to make the minimum that falls in the diabetes bracket) due to high cholesterol. n The sudden rise in blood sugar level after a meal is another major cause that leads to diabetes. It is studied that having almonds in the diet contributes to controlling the sudden steep rise in sugar after meals. They help in reducing the GI (glycemic index) of the meal, to maintain the blood sugar levels. When a survey was conducted to study this effect, blood samples of the people on an almond rich diet showed better results for decreased insulin resistance and better sugar control.

With so many health benefits for diabetics, almonds are the most recommended and revered nut for treating diabetes. Yeah! We spared the doctor! Okay, jokes apart. Seriously, I am here to talk about the health benefits of apples, espcially green apples – why not follow the green revolution here. Numerous diseases and ill health conditions like Alzheimers, heart, lungs, cancer diseases and many more are being kept away and cured by green apples. In fact, apples and some other fruits are known to alone prevent cancers like breast cancer, colon and prostrate cancers, etc. Almost all fruits, and especially the apples, are well known for their fiber content. In today’s world of junkies and fast foods, the digestive system is in grave need for fiber- rich foods that could ease the bowel movements. Thus, green apples also reduce the risk of colon cancers. Also, avoid ingesting caffeine, sugar, chocolate or too much alcohol just before bed. They may upset your intestines in such a way that you will have a very light sleep that doesn't recharge you at all.

Sleep environment: Your sleeping en-

vironment needs to be of refreshing and recharging nature. The quality of air you breathe in your sleep is far more important than most people realize. Bad quality air can lead to headaches, stuffy noses etc. Leave

the window a little bit open. This will allow poisonous carbon dioxide to float away and let new oxygen to float in. It is also important to find a balance between clothes and bed cover so that your body temperature remains consistent and you do not feel too hot or cold. Also, invest in a mattress and pillow that suit your comfort needs.

Go to bed early: If you want to get up ear-

lier, you have to go to bed earlier. The benefit to waking up early is that you'll perform better and be more alert at the time of day that you need to be.

Deep breathing: Clear your mind before

falling asleep. Practice some deep breath-

ing techniques and if you can spend a few minutes meditating you'll have maximum results.

Go to the toilet: Your kidneys continue

to work when you are asleep and by the morning your bladder will be full. If your bladder fills up early, you might feel the need to go during the night and this disturbs your sleep. Therefore, it is important to go to the toilet before sleep even if you feel no need.

Get enough sleep: Allow enough time

to get the amount of sleep your body needs. The average recommended amount of sleep is 6-8 hrs but everyone is different. Notice

and Happy? the difference between six and eight hours of sleep and how it affects you. Know how much you need.

Avoid sleeping pills: Unfortunately, many people turn to sleeping pills and other medications to solve their sleeping problems. By doing this, they are just treating the symptoms and not the cause. You should have them for short periods and only when prescribed by the doctor.

Put your alarm away from the bed: Never keep your alarm next to your bed. Always keep it a bit far which will cause you to wake and walk for a while. This will stop you from just hitting the snooze button and diving back under the covers.

Get up straight away: The best things you can do to wake up early and feel alert and fresh is to get up straight away. You may feel that you are getting a bit more rest by hitting the snooze button, but hitting the snooze button awakens your brain so it can never fully go back to sleep as it is anticipating the next alarm sound. So you will feel more tired than if you had just got up straight away.

Wake up with a Smile: As soon as you wake up, smile. There are opportunities and blessings waiting for you. Open up your heart to receive them. Look on the bright side of the day.

Let the sunlight in: Opening your curtains to let the sunlight in is a great way to make you feel more awake. Your mind will respond to light and bring you out of sleep.

Have a glass of water: Your body loses fluid overnight which can make you feel a bit tired when you wake up. Having a glass of water on an empty stomach will kick start your metabolism and as such you will wake up faster and feel more alert.

Stretch and Exercise: When you are groggy in the morning, a nice stretch in the fresh air can wake you up fast. Also, doing physical activity releases endorphins making you feel good. The more you exercise the more energy you will have as you become fitter and healthier.

Eat a high energy breakfast: Skipping your first meal of the day affects your energy level. You need to eat breakfast to get your metabolism going and making energy for your body. Have a heavy healthy breakfast and feel energized throughout the day.

Get up at the same time everyday: You need to get out of bed at the same time everyday, even on weekends. If you change times everyday you will irritate your body clock and find it extremely difficult to get out of bed.

Take a Nap in the Afternoon: The primary reason why people find it extremely difficult to wake up refreshed and happy is because they are not getting enough sleep. Try to take a nap for 20-30 minutes at day time. It helps reduce stress and you will feel refreshed. If you want to be a morning person follow the above tips mentioned. Although all of them may not work for you, but some of them definitely will help.

The more common causes of allergies in Kuwait are dust and pollen. Allergy sufferers are willing to try any remedy to ease their sufferings but common misconceptions can keep you from getting the right treatment. ALLERGIES MYTH 1: Flowers are a leading allergy irritant. FACT: Though you can see pollen in the flowers but those typically are not allergenic.

Trees and grass on the other hand tend to be the primary culprit as they use wind which contains those nasty allergy causing pollens. So next time when you pick up a bouquet for a seasonal allergy sufferer, don’t worry too much!

MYTH 2: Eat the locally grown honey and you will not get allergies. FACT: The reason why people think that honey gives you resistance against allergy is

that pollen causes allergy, and honey is made from pollen. Perhaps if you ingested the pollen, then it might somehow buildup a tolerance…but the fact is the pollen that the honey is made out of, flower pollen, is not the pollen that causes the allergies. So if you want to eat honey, well and good, but don’t even think that it will give you protection against allergies.

MYTH 3: Over the counter allergic medications (antihistamines) can eliminate your allergy. FACT: Over the counter allergic medications act as Band-Aid for allergy symptoms

and don’t address the allergy itself. They can help control symptoms such as sneezing and watery eyes but they can not fight the inflammation that triggered the symptoms in the first place, for that you need anti inflammatory medications.

MYTH 4: Natural supplements are not effective at combating allergy symptoms. FACT: Studies have shown that some natural supplements are very effective for example Butterbur. It was used by Native Americans for the treatment of headache and inflammation. Butterbur is an effective treatment for hay fever without the drowsiness of an antihistamine. However, in the plant form it does contain certain toxins that can cause liver toxicity so it is better to buy a commercial product with words ”UPAfree” on the label. Another natural supplement, stinging nettle is also found to be effective in controlling hay fever symptoms. But always consult your doctor before using herbal supplements especially kids, pregnant women and people taking medications.

MYTH 5: You can outgrow your seasonal allergies. FACT: you can not really outgrow your allergies though your symptoms can come and go. There is tendency for some people to become less sensitive over time but that does not mean allergy is completely gone.

I had the opportunity to visit Australia for business. I always wanted to see Sydney as I had heard that it is a City of Dreams. That still leaves all the historic sites, colonial buildings and cobbled streets, tourist precincts, the 2000 Olympics site, cosmopolitan nightlife, harbour and river cruises, inner city monorail, world class aquarium, museums and art galleries...Sydney has it all and there is no shortage of great sightseeing tours for visitors. I have captured so many memories from my trip that I would like to share with our readers through these pages. Sydney is a city in New South Wales, Australia, and the largest and oldest city in Australia (discovered in 1788). With a population of 4.3 people at a density of population of approximately 345.7 hab / km ² as Sydney is the largest center of economic, commercial and cultural in Australia. Sydney is the areas that have a tendency to local and international tourist, and is also one of the most beautiful cities in the world and the best goodness of living. Sydney is located between the Pacific Ocean in the east and the Blue Mountains in the west. It has the largest natural harbor in the world, Port Jackson, and more than 70 ports and beaches. There is no shortage of things to do in Sydney. The city offers every activity imaginable with watersports being very popular. Swimming, surfing, sailing, boating, cruising, windsurfing, diving, jetskis....if it can be done on water, you can do it in Sydney. Many major sporting events take place in Sydney so there is usually a range of choices from the sporting calendar. In 2008, it was named best tourist city in the world for the second year in a row. The Taronga Zoo is famous Zoo in Sydney. The Park is located on the peninsula and is best accessed by ferry from Circular Quay (about 15 minutes). Ferry will land at the bottom of the garden where the cable car to reach the top. Gondola offers a beautiful view of the entire zoo to the Gulf as a whole. Taronga Zoo Sydney occupies an area of 29 hectares, acting animals are more than 2600 (more than 350 species). The most popular section is of course part of Australia, where all animals known local. One of the wonderful attractions that are characterized by the city of Sydney is the Opera House, where an instance of this building in any of the parts of the world in terms of its external appearance. In addition to the fact that this building represented the city of Sydney, it is also one of the key features of Australia

in the world. The opera building is located in charming spot, overlooking a gorgeous Sydney Harbour. The idea of construction of the building in 1950 and designed by architect John Utzon, and suggests the general shape of the design that shows the advanced ages for the period that established it. In a grand opening ceremony under the theme "War and Peace", was opened by Queen Elizabeth II in this magnificent structure October 20, 1973. As a tourist, you will never have a hard time finding something to entertain you. For one, there is usually an ongoing festival or sale in Sydney. The extensive wildlife of Sydney can be seen in the different parks and zoos in Sydney. There is more to Sydney than a kangaroo. Hopefully you have a better idea of Sydney now.

I have decided to concentrate more on Marketing and PR (Public Relations). Serves 4

Pistachio Cake (makes one cookie sheet) INGREDIENTS:

Passion Fruit Sauce INGREDIENTS:

r 10 oz. pistachio flour r 7 oz. powdered sugar r 2.5 oz. all-purpose flour r 2.5 oz. melted butter r 10 eggs r 10 egg yolks r 7 egg whites r 2.5 oz. sugar

r 4 oz. passion fruit puree r 4 oz. mango puree r 1 mango, small dice r 6 strawberries, small dice r bananas, small dice r 4 oz. blueberries

METHOD: Put passion fruit and mango puree into a bowl and mix well. Add fruit.

METHOD: Sift the pistachio flour and sugar together. Combine the flour and melted butter; add this mixture into the pistachio mixture. Whip the whole eggs and the egg yolks for 10 to 15 minutes then add to the flour mixture. Whip the egg whites and sugar to a soft peak and fold carefully into the mixture. Pour onto a buttered cookie sheet. Bake at 350 degrees until cooked, about 20 minutes.

For the Sauce INGREDIENTS: r 1 cup sugar r 1/3 cup water r 3 egg whites r 1/8 tsp. cream of tartar r Pinch salt

METHOD: Combine the sugar and water in saucepan and stir well. Cook over medium-high heat but do not stir. Instead, swirl pan by the handle. Continue swirling pan and bring mixture to boil. Let it boil until the liquid becomes completely clear. Reduce heat; cover pan and continue to simmer while beating whites. Beat whites slowly until they become foamy. Then beat in cream of tartar and salt. Increase speed and beat whites until stiff peaks form. Uncover sugar syrup; insert candy thermometer and boil until the temperature reaches 238 degrees, the soft-ball stage. Remove from heat; start to beat whites at medium speed and slowly pour boiling syrup into whites, beating all the time. Continue to beat until the mixture forms stiff peaks, about 8 minutes. The meringue is the proper consistency if it does not move when a spatula is run through it. Cut a piece of the pistachio cake using a round or square 2.5-3 inch cutter/mold. Scoop your favorite dulce de leche ice cream with an ice cream scooper and place on the cake. Have the meringue ready in a pastry bag with a large star tip. Working quickly, squeeze meringue around and around the ice cream/cake in circles, starting larger around the bottom and obviously getting smaller as you work up the ice cream (it’s not easy and takes some practice), then either quickly torch it with a blow torch made for kitchens or place it in the freezer until you are ready to do so.

Shrimp Tiradito with Corn Nuts & Popcorn METHOD:

12 large (U12) shrimp 1 heaping Tbsp. Old Bay seasoning or Zatarain’s Shrimp/Crab Boil

Add the Old Bay seasoning to the boiling water; then, bring the water down to a simmer. Add the shrimp to the water and cook for 1 minute or until the shrimp turn pink. Use tongs to transfer shrimp from the water to a plate and immediately place in the refrigerator until the shrimp has cooled.

For the Sauce INGREDIENTS: r 1 Tbsp. canola oil r 3 Tbsp. red onion, minced r 2 cloves garlic, minced r 2 Tbsp. aji Amarillo paste r ½ cup evaporated milk r 7 ounces cream cheese r 4 saltine crackers r Pinch of salt

METHOD: Heat a sauté pan over medium heat; cook the onion and garlic until soft. Pour the contents of the pan into a blender with the aji Amarillo, evaporated milk, cream cheese, saltines and salt. Puree until smooth.

For the Garnish INGREDIENTS: r 1 Tbsp. olive oil r ½ cup diced celery r 1 Tbsp. soy sauce r 8 cilantro leaves r 2 Tbsp. corn nuts, crushed r ½ cup popped popcorn (no butter)

To Plate/Serve Place 3 shrimp (with tails) onto each of the 4 plates; top each shrimp with some of the aji Amarillo sauce and then drizzle with olive oil, soy, cilantro, corn nuts and popcorn. Enjoy!

Cinema's

feast pirate has returned. Jack Sparrow, he of the gold teeth, hoop earring and soiled bandana, once again takes centre stage in this long-running and fabulously lucrative movie panto. And he takes it with that distinctive camp gait: smirking, wincing, each step a daintily uncertain curtsy. For their producers, the box-office-busting Pirates of the Caribbean movies have been the most extraordinary milch cow, and since the first film came out in 2003, the executives at Disney and the megastar Johnny Depp have been wading around in milch up to their thighs. By the time this is all over, it could be up to their armpits. Well, it's a zany, muscular spectacle with a witty and sprightly lead performance and, frankly, there's no sign of it ending any time

soon. Without ever being billed as such, the POTC brand has turned into a multi-episode franchise like Harry Potter or 007, though unlike Potter, inexorably turning from moppet into loping teen as he did, Captain Sparrow does not change very much and in this movie is specifically tasked with uncovering the legendary fountain of eternal youth. Like Potter, however, Sparrow is evidently chary of committing himself too soon romantically. In this lengthy episode, our Jack is discovered evading the hangman's noose in Ye Olde London by various confusing and nefarious impostures, and then having one of his many uproarious chase scenes through the CGI landscape. He finds himself confronting an old rival, or possibly an old flame: fiery buccaneer Angelica, played by PenĂŠlope Cruz, who has been trying to pressgang a crew of

ne'er-do-wells among the city taverns to set sail with the terrifying Blackbeard – who she claims is her father. He is played by rumbling-voiced Ian McShane, whose face here attains the texture and consistency of a leathery old boot heel. Their mission is to find the waters of the legendary fountain of youth, an Indiana-Jonesish objective shared by a couple of other maritime powers. One is the King of Spain, who is enraged at the thought of the English getting it; another is the King of England (Richard Griffiths) who is enraged at the thought of a Catholic getting it. So our own stately George II engages a notorious rival pirate, Barbossa (Geoffrey Rush) to head up the official Team GB effort. A deadly contest ensues. Once again, Keith Richards gets his cameo as Sparrow's dad, Captain Teague, and he gets

one very nice line. Asked if he knows where the magic elixir is, Teague points to his ravaged face and snarls: "Does this look like the face of a man in possession of the spirit of eternal youth?" There has long been a view that Depp's pirate is based on 60s Britrockers in general and Keef in particular. This isn't entirely true. Of course, the Depp/Sparrow look is loosely based on Keith Richards, but his voice and comedy shtick is taken from one person and one person only: Paul Whitehouse, in whose television comedy, The Fast Show, Depp appeared in 2000. Listen to Sparrow's voice with its ironic tone, throwaway gag delivery and occasional Smashie-slur and you'll hear the eerie similarity. It's Whitehouse who deserves the iconic cameo, in my view, as well as a handsome copyright-royalty. However,

perhaps it is my Brit-centric view that sees also a debt to Eric Morecambe in the scene where Sparrow finds himself face-to-face with a skull, which turns menacingly to face him, as if about to ask what he thinks of it so far. On Stranger Tides, to give the film its specific title, is really quite long at just over two and a quarter hours, and some fans might feel that they are getting an awful lot of a good thing. But director Rob Marshall keeps the hellzapoppin' atmosphere bubbling and gives you plenty of cannon-bang and cutlass-slash for your buck. There is less of a showcase for young, pretty people in this movie – the Orlando Bloom/ Keira Knightley contingent – though there is a fetching young padre on board ship, who has a tendresse for a lovely mermaid, whose hair curls over her nipples in the traditional way.

The emphasis here is on age and weatherbeaten experience. Of course, it is difficult to discern this or anything else clearly, given that the plot itself is so chaotic. There is sometimes a sense that what you are watching is a kaleidoscopic, two-hour-plus trailer. In the midst of the sensory assault, the shipborne battles and jungle-strife, I kept expecting the action to be interrupted with the booming gravelly voice "This summer ‌" Some might find their enthusiasm for the Pirates films sinking. I have to say that mine is still there, just about. Depp's Sparrow is a genuinely funny character and Depp still puts the ho-ho into yo-ho-ho.
