There’s a new option on the block to rival the Vespa at sweeping you off your feet: the Leaos. A bike sporting a carbon-fiber body, it is lightweight and can go up to a speed of 45 km/h. Because its outer surface is made entirely of glass, its interior enjoys a maximum of natural light. Its grand staircase, remiscent of the Acropolis, forms a magnificent entryway that moves visitors from the sea to the yacht's interior. The 61 meter yacht includes a number of rooms and spaces for a variety of functions and occasions including sleeping, dining and children's areas. Its floors connected by elevator, GLASS can simultaneously host 12 guests and a 16-man crew.

The yacht also carries four tender boats of various sizes, and two jetskis, all housed in a spacious garage area. It looks as though future life at sea has just gotten to be a lot more fun, doesn't it?

THE DRAWINGS ON THE DESIGN CARDS OF THE HYBRIS ARTISTIC COLLECTION, the personal work of Janek Deleskiewicz who has been serving for the past 25 years as the company’s artistic and design director, were suddenly in front of us, as was the director himself. He has things to tell us about the design codes of the collection that we are about to see at first hand. He says that he wants to demonstrate the know-how and the skills amassed by the brand name over its 180 year long existence and will do this by showing us 12 different watches. “Each of the twelve watches that comprise the Hybris Artistica series reflects an original design, technical construction and the art of watch-making and perfection of master craftsmanship, exactly as does the Jaeger-LeCoultre name itself.”

While the above is a very big sentence, even its words are inadequate to rightfully describing the very small watches we are about to see. These watches, which are flawless and problem-free in technique, immediately draw the eye with their bold materials and tasteful and aesthetic selections, and with acknowledgement of the kinds of skills required by master craftsmen in their manufacture.

The cases and mechanisms of these watches reflect a combination of beauty and perfection. During the 180 years of its existence, this brand has only clung to one vision, a vision also inherent in this collection, a vision that skillfully integrates tradition and innovation in the best of all possible manners. This small collection is the kind, after all, that serves to tempt the wills of many a global collector.

The Dual Wing concept used in this watch is an original function that comprises two independent movements, each with its own power source, but sharing a common regulating organ. The major feature of the duomètre is its sphérotourbillon, in which an additional axis of rotation achieves a three dimensional rotation.

Duomètre Sphérotourbillon Enamel The dial of this model has been constructed of a technique in which blue paillonné enamel is combined with miniscule silver shavings (paillons) to imbue the dial with a peerless aesthetic.

The dial’s nine-directional staircase plays an important role in the watch as it both showcases the multi-axis tourbillon and also achieves an amphitheater like perspective that frames the scene.

“Hybris Artistica”nın tasarım süreci nasıl başladı?

Sorunuz aklıma Jean Cocteau’nun bir sözünü getirdi: “Gelenek kesintisiz bir hareket halidir. İlerler, değişir, yaşar. Yaşayan gelenek her yerdedir. Onu kendi çağınızın usulleriyle sürdürmeye çalışın.”

Aslında el becerisini emaye, kalem işleme, kuyumculuk gibi nadir el sanatlarıyla birleştirerek, öteden beri ürettiklerimizi yeniden tasarlıyor, sonra da yapıyoruz.

How did you go about the process of creating “Hybris Artistica?”

Your question makes me think of a quote of Jean Cocteau: “Tradition is a perpetual motion. It moves forward, it changes, it lives. The alive tradition appears everywhere. Strive to maintain it with the manner of your era.”

Actually we reinvent each time what have been created associating various savoir-faire and Métiers Rares as enameling, engraving, gem setting. Then we produce them.

Bana göre bu koleksiyon zaten kafamın içinde tamamlanmıştı.

Sadece kâğıda döküp can vermem gerekiyordu. Jaeger –LeCoultre imzalı her parçada yaptığımız gibi, yeni bir saat geliştirirken de kendimizi sınırlamıyoruz. Ustalığımızı nadir el sanatlarıyla (emaye, kalem işi, kuyumculuk gibi) birleştiriyoruz. Saat mekanizmasının yeniden tasarlanması, teknik yenilikler ve ürünlerimizin performansının sürekli artırılması üzerinde çalıştıktan sonra üretim bölümünün sahip olduğu sanatsal güçle kendimizi besliyoruz. Her biri mikro-mühendislik harikası olan ürünlerimize güçlü bir sanatsal kimlik kazandırıyoruz.

I do know that you start each model by creating drawings.

How challenging was it to turn these into the actual models?

For me this collection already existed in my mind. I just needed to give them life by drawing them. As for all Jaeger-LeCoultre timepieces, we do not have limits for the development of a new watch. We use all our expertise and we associate our Métiers rares (enameling, engraving, gem setting).

After having worked on all the technical innovations, on the redesign of the movement and continuous improvement of the performance of our products, we nourish ourselves with the artistic power that can be found within the Manufacture. We add a stong artistic identity to the marvels of micro engineering.

“VENEDIK, SANAT BIENALLERIYLE TANINIYOR. Mimarlık bienalleriyle 15 senedir bilinmekte. Ve şu ana kadar da Türkiye hiçbir zaman mimarlık bienalinde yer almadı.

Bazı mimarlar, mesela ben daha önce Norman Foster’ın yaptığı bir sergi içerisinde şahsen yer aldım. Bu yüzden bir ilk olması çok önemli ve bunun da mimarlıkla başlaması mühim. Yani bir yerde kurumsallaşıyoruz.” İstanbul’da Haliç’e bakan ofisinde, cam kenarındaki uzun toplantı masasının bir köşesinde konuştuğum Murat Tabanlıoğlu, kalıcı bir sergileme alanına sahip olmamızın önemini böyle açıklıyor. 7 Haziran – 23 Kasım 2014 tarihleri arasında gerçekleşecek bienalin Türkiye pavyonunda Murat Tabanlıoğlu küratör, Pelin Derviş proje koordinatörü. İki farklı kuşaktan temsilcilerin bulunduğu bir ekiple yola çıktılar ve vardıkları durak Places of Memory (Hafıza Mekânları) başlıklı proje oldu.

Bu proje aslında bir İstanbul projesi ve Tabanlıoğlu’nun kişisel hatıralarından yola çıkıyor. İstanbul’un –kendi hayatında etkisi olmuş- üç farklı bölgesini odak noktası olarak alıyor mimar. Sonra oralardan çıkarak şehrin geçirdiği değişimi farklı yöntemlerle anlatıyor.

Bu kişisel bir sergi ama Türkiye’de nüfusun büyük bir kısmının İstanbul’da yaşadığını ve hemen her gün bu mekânlar üzerinden geçtiklerini düşünürsek çok da genel.

“VENICE IS RENOWNED FOR ITS ART BIENNIALS, with its architecture biennials gaining much attention over the past fifteen years.

To date, Turkey has never participated in these architecture events, despite the fact that some Turkish architects have been included in various exhibits, for instance I was included in a Norman Foster show.

This is why this first exhibit is so important and additionally important in that it is beginning with architecture. In a sense, it means that we are institutionalizing.”

While seated at his long meeting table next to the window at his Istanbul office, a space that overlooks the Golden Horn, we had the opportunity to speak with Murat Tabanlıoğlu about the importance of Turkey’s acquisition of a long term exhibition space. He will be the curator and Pelin Derviş will be the project coordinator of the Turkish exhibit at the biennial which will be held from June 7 to November 23. They started out as a team representing different generations and then came together in a project called Places of Memory.

This is actually an Istanbul project and begins from Tabanlıoğlu’s personal memories. The architect focuses on three different districts in the city, all of which have had an influence on his own life. The exhibit uses a variety of methods to explain the changes the city has undergone. And while this is a highly personal exhibit, it takes on universality when considered that so many people also reside in this city and each day pass by, and through, the spaces he is highlighting.

“I asked myself whether I could commence from a very private place and then move on to a commonality that all could share. I took this project on as a personal endeavor so I started off from a very personal perspective, but the committee recognized that my suggestions

Duyûn-ı Umumiye binası (ben IMF diyorum) çevresinde eskiden tüm gazeteler ve gazeteciler bulunuyordu. Daha sonra profesyonel hayata başlayınca Milliyet binasını yaptım.

Yani Bab-ı Ali’deki kişileri İkitelli’ye taşıdık. Bu yüzden de Bab-ı Ali ve dönüşümü de önemli. O günkü gazete binaları şimdi hediyelik eşya dükkânlarına dönüştü. Üçüncü bölüm ise farklı; 21. yüzyılın simgesi olan İstanbul’un yüksek yapılarının olduğu bölge. Başlangıcı ise Menderes zamanında yapılan bulvar. İlk önce bankalar oraya geliyor. Daha sonra ise karma yapılar ortaya çıkıyor ve biz de orada Loft ve Sapphire gibi projeleri yapıyoruz. Bunlar benim hatıralarım 6 6 S K Y L I F E B U S I N E S S 5 | 2014

actually touched on the lives of all people. My life began with the Ataturk Cultural Center (his father, Architect Dr. Hayatı Tabanlıoğlu, was the architect of that building), a building that has a place in all of our lives. Next comes the Istanbul Boys’ High School (Istanbul Erkek Lisesi). The environs of the main building called the Duyûn-ı Umumiye (I personally refer to it as the IMF building) used to be the heart of all of Turkey’s newspapers and journalists. When I later started working professionally, I headed the project for the new Milliyet newspaper headquarters. With that we transported district of Bab’-ı Ali to İkitelli. Those former newspaper buildings are now serving as gift shops. The third section goes into a different direction. This time we focus on the district that is home to the city’s new skyscrapers, which have become the symbols of 21st century Istanbul. The start to this new city was the boulevard built during the Menderes government period (1950-1960). This boulevard influenced the move of the banks to this district. The banks were followed by a mix of different kinds

Bu yıl tüm bienalin küratörlüğünü yapan Rem Koolhaas, tüm katılımcıların tek bir tema üzerinde birleşmelerini istemiş ve buna da “Absorbing Modernity: 1914-2014” olarak karar vermiş. Yani mimarinin 100 yıllık bir geçmişi masaya yatırılacak. Tabanlıoğlu, bunun son 50 yılına odaklansa da dönüşümü hâlâ devam eden İstanbul için bu hiç de azımsanacak bir süre değil. Peki, bir mimar olan Tabanlıoğlu’nun dönüşüm konusunda görüşleri nedir ve sergiye gelecek insanlar Türkiye pavyonunda nasıl bir İstanbul görecekler?

“Bizim yaşadığımız kontrast çok az şehirde var. New York, Paris, Londra çok düzenli şehirler. Biz altyapıdan şikayet ediyoruz ama bunun bir cazibesi de var. İstanbul çok katmanlı bir şehir. Bizans’tan beri üzerine katmanlar gelmiş.

The curator of this year’s entire biennial, Rem Koolhaas, asked all participants to unite under a common theme, which he announced as “Absorbing Modernity: 1914-2014.” The aim of this was to the close examination of the past one hundred years of architecture.

Even though Tabanlıoğlu has focused primarily on the last fifty years, this is not a brief period for Istanbul, a city that is still undergoing a transformation process. So—as an architect—we wondered about Tabanlıoğlu’s personal views of this transformation and just what kind of Istanbul will the visitors to the Turkey pavilion be seeing.

“There are very few other cities that evidence the kinds of contrasts we see in Istanbul. Cities like New York, Paris, and London are all quite organized and rational. We complain about our lack of infrastructure, but this lack comes with its own attraction. Istanbul is a multi-layered

A GATHERING OF GENERATIONS The team accompanying Tabanlıoğlu is comprised of two very different groups: The scientific committee is made up of Süha Özkan, Uğur Tanyeli, Murat Gürenç and Arzu Erdem, a 60 year old generational group made up of architects, historians, and academicians with very different perspectives.

The second group is the younger generation, a group of five individuals selected from a larger group of twenty: Ali Taptık, Alper Derinboğaz, Candaş Şişman, Metehan Özcan and Serkan Taycan. The members of this group are in their thirties. And even though each member of this group is an architect, they are also individuals who are acknowledged as artists, photographers, and digital media experts. It is thus that the idea behind the project was formed with the coming together of three different age groups, a clash of generations if you will.

city. Some of these layers date all the way back to Byzantium. When I return to Istanbul from somewhere else I am always affected by the city. It has a very unique atmosphere. The number of tourists has been rising rapidly. In the past tourists primarily came here to see the historic peninsula, but more recent visitors want to become a part of this city and its residents themselves. This city will pique the curiosity of those who have never visited Istanbul. Of course our history and our monuments are very beautiful, but we also have to show our visitors the modern face of our city. We have to show the contrasts.”

This exhibit prepared by Murat Tabanlıoğlu and his team begin with selected spaces in the city to focus on the concept of space and allows each individual to display his or her own unique perception.

This year if you happen to go to Venice you should definitely make time to visit the Turkey exhibit housed in the Arsenale building. Try to know Istanbul from a closer perspective, one that you instill with your own emotional responses.

DAĞ GORİLLERİNİN PEŞİNDE…

Yakın zamana kadar soyları tükenme tehlikesiyle karşı karşıya olan dağ gorilleri, dağların yüksek kesimlerindeki tropikal ormanlarda yaşıyor. Yeryüzünde yalnızca 800 tane kalan dağ gorillerinin temel besini bambu yaprakları. Aileler halinde yaşayan gorillerde her aile yaklaşık on ila on iki bireyden oluşuyor. Gorillerin on yaşından sonra sırt kısımları gri – beyaz bir renge dönüyor ve bu nedenle gümüş sırt adını alıyorlar. Her ailenin “gümüş sırt” adını taşıyan bir reisi var ve tüm bireyler ona itaat ediyor. Goril safarisine günde yüz civarında ziyaretçi kabul ediliyor ve yalnızca belirlenen on kadar goril ailesinin ziyaret edilmesine izin veriliyor. IN THE WAKE OF MOUNTAIN GORILLAS… The mountain gorillas which were close to extinction up to quite recently live in the tropical forests on the high slopes of the mountains. The basic sustenance of these mountain gorillas, of which only 800 are left on the planet, consists of bamboo leaves. Gorillas live together in families, each family being composed of between 10 and 12 individuals. From the age of 10, the back coat of the gorillas takes a grey-white hue giving them the name of ‘silver back’. Each family has a leader which holds the title of ‘silver back’ and all members abide by it. Approximately 100 visitors a day are permitted to circuit a gorilla safari and only 10 pre-determined gorilla families are allowed for observation. This explains the high price of gorilla safari holidays; you have to be prepared for an expense of something close to 750 US dollars per person. If you’re lucky, you may also have the chance to come upon rarely seen forest elephants or antelopes.

FLY OVER THE MOUNTAINS BY HELICOPTER! In Rwanda, you may choose a more comfortable holiday by taking a helicopter trip. Following an exciting gorilla adventure, we take on to the west of the country towards Nyungwe National Park by helicopter. From a bird’s eye view, the beauty of Rwanda is visible in a distinct way and in a wider perspective. From atop, the lakes, isles, banana, tea and coffee plantations interspersed among the mountains of a hundred shades of green seem to spread out under our feet…

After an approximate 40 minute flight, our helicopter lands at the Nyungwe Forest Lodge close to the park. A jeep picks us up from the runway to the location situated among vast tea plantations. The bungalow interiors built of wood and metal in harmony with the environment seem extremely stylish and cosy. A hot water pool set on a slope facing the rain forests captures our attention. Just as we savour the water, we recall the long trek ahead of us the next morning so we have our evening dinner and draw back to rest.

TREKKING HUNDREDS OF METRES HIGH Nyungwe National Park is huge. In the park, forest hikes are organised according to various concepts. Among a selection

After experiencing this highly thrilling trek, my advice would be to avoid it if you have a bad head for heights and better choose a chimpanzee or orchid walk.

AN INCREDIBLE EXPERIENCE Rwanda is a quiet and peaceful country lying on Africa’s green belt. Its people love their country, which explains why they are so keen to keep it clean and live in harmony with the environment. Nature tourism brings to Rwanda the most significant tourism income. Thus, the population is extremely respectful towards nature, wildlife and the whole environment in itself. Anywhere you go will reveal a scenery making you feel like the star of a movie set in Africa. After a brief tour of Milano including the Duomo Cathedral, the Vittorio Emmanuele Arcade and La Scala opera house, we make a pause at Via Torona, the town’s recent spot of attraction. This year, the Istanbul Mineral Exporter’s Association (İMİB) is participating for the third time in the Milano Design Week with a special exhibition: the ‘Marble Across Time’ exhibition held following the concept of ‘Past, Present and Future’ is inviting visitors to the Magna Pars Event Space seen as the place to be for giants of the world of design.

According to İMİB Member of the Board Erdoğan Akbulak, the “Marble Across Time” show has met great interest not only in Milano but almost all over the world and Turkish natural stone, among the best in the world, has stood out even more in the light of design works.

Aiming at becoming the first country to pop to mind when speaking of treated marble, Akbulak also specifies that, last year, Turkey realized a 2 billion 225 million dollar export of natural stone and that it is possible this number may increase across the following years.

Aziz Sarıyer’in dokunuşuyla geçmişte başlayan sergi, Fabio Novembre’nin içinde bulunduğumuz zamanı simgeleyen “Here I am” isimli çalışmasıyla devam ediyor. Minimal işleriyle tanınan Yoshioka Tokujin ise mermeri yerçekiminden bağımsız kılarak özgürleştirdiği ilginç tasarıma “Agravic” adını vermiş.

Tokujin bu çalışmasıyla Türk doğal taşlarına geleceğe yönelik bir imaj biçmiş. Türk mimar ve tasarımcı Erdem Şeker’in küratörlüğünü üstlendiği sergi için Türkiye kokusu bile üretilmiş.

Koleksiyonda yer alan taşların çıkarıldığı bölgelerin ruhuna uygun, özel kokular geliştirilmiş. Mesela Aziz Sarıyer’in “Passage” tasarımının yer aldığı bölümde, ziyaretçilerin nemli ve yosunlu bir kokuyla geçmişe götürülmesi hedeflenmiş. Topraktan çimene, inci çiçeğinden ambere kadar etkileyici birçok kokunun renk renk taşlarla uyumunu, sergiyi gezdikçe fark ediyoruz.

Dünyanın dört bir yanından ziyaretçiler için ince belli bardakta çay ve simit ikramı ise serginin son sürprizi oluyor. Özetle yeni tasarım doğal Türk taşları bizi zamanda bir yolculuğa çıkarmayı başarıyor.

infinity and mystery of time. Beginning in the past with the touch of Aziz Sarıyer, the show carries on with the work of Fabio Novembre named “Here I am” representing the present. Well known for his minimal art, Yoshioka Tokujin has named his intriguing marble design created as a defiance to gravity “Agravic”. In this artefact, Tokujin has moulded an image of the future of Turkish natural stones. Even a special fragrance has been created for the exhibition of which the curator is Turkish architect and designer Erdem Şeker. Particular fragrances have been produced in accordance with the regions from which the stones on display were extracted. For instance, in the section showcasing Aziz Sarıyer’s work “Passage”, visitors encounter a moist and mossy fragrance aimed at carrying them to the past. From the aroma of soil to grass, from lily of the valley to amber, one can’t help but notice the harmony between this variety of fragrances and the multicoloured stones. One last surprise for visitors from around the world coming to the show are the staples of tea offered in fine Turkish glassware and simit, the Turkish bagel. In brief, the new design works of Turkish natural stones succeed at guiding us to a journey in time.

Buben&Zorweg, halihazırda dünyaca bilinen bir kasa markası. Ancak işleri sadece kasa yapmak değil, göz alıcı kasalar yapmak. Hal böyle olunca Şark Saatçilik’in sahibi Mustafa Eliaçık’ın da belirttiği gibi fiyatları bazen milyonları bulan kasaların olması çok doğal. Bazı evlerde, henüz yapım aşamasında projeye dahil olup müşterinin isteklerini karşılayacak bir kasa yapıyorlar. Bu, çoğu zaman görünmez de olabiliyor.

“Recently we have been completing some very intriguing projects; for instance, safes that are room sized...as large as 15 square meters.

Of course this is a very large size and one that is very difficult to manufacture. The real problem revolves around the complete integration of these rooms into the houses and designing and building the safe in a way that it remains concealed. In that sense, the safe has to be indistinguishable from the other elements of the interior design. We carry out many projects every year, with most of these being customized projects for people of renown. As an example, we built a very special safe for a customer who has 500 watches. ” Another very important characteristic of Buben&Zorweg is related to their cabinet and wall-standing time-pieces and precision time mechanisms, time pieces that far surpass any other known time pieces. The company directs its activities by its combined criteria of technology and design. When we asked Buben how his company

We start everything with a drawn design and then our work is guided by our very high level quality control systems. There are other companies in this same business, but they purchase their materials from suppliers. We never do that. And I can say that we are also quite good at design.”

At this year’s Baselworld Fair, the company has accompanied its collection of unique wall clocks and time precision mechanisms with tourbillon time pieces, each manufactured in very limited quantities. Each custom made piece is unique to that particular customer.

Kuzunun antrikot kısmı fileto şeklinde kesildikten sonra bildiğimiz dolma gibi pazı yaprağı ile silindirik bir şekilde sarılıyor.

Karabiber ve tuz eklendikten sonra dolmalar tavaya konuyor. İçine tavuk suyu ve tereyağı eklenerek kısık ateşte pişiriliyor.

Pişirme aşamasında yemeğin suyu bir kaşık yardımıyla ve sık aralıklarla dolmanın üzerine dökülüyor. Son olarak kuzunun kemiklerinden yapılan su da tavaya ekleniyor ki, aroma daha da kuvvetlensin. Et, orta kıvama geldikten sonra ateşten alınıyor. Normalde dolmanın içinde görmeye alışık olduğumuz pirinç, bu yemekte yasemin pirinci olarak, çilav yöntemiyle ve içine sadece limon kabuğu eklenerek pişirilmiş bir şekilde, dolmanın yanında servis ediliyor.

Filleted loin of lamb is wrapped in chard leaves in the traditional style to form cylindrical rolls. These rolls are then sprinkled with salt and pepper, after which they are put in a pan and on low heat with chicken stock and butter. During cooking, this sauce is repeatedly and frequently drizzled over the rolls using a spoon. Finally, a stock made from the lamb’s bones is added to the pan to further intensify the aroma, and it removed from heat after the meat reaches a medium-cooked consistency. The rice traditionally seen inside these kinds of rolls is instead served as a side, jasmine rice cooked using the “çilav” method with the sole addition of lemon zest.

The chef of Tuğra Restaurant, where classical Ottoman cuisine is survived today in the Çırağan Kempinski Hotel using contemporary techniques, Ahmet Kara made his choice from the cuisine of Yozgat province: Potted kebab.

ÇÖMLEK KEBABI

POTTED KEBAB

Kebabın pişirildiği çömlekler Nevşehir’den, kuzunun kol kısmı ise Balıkesir’den getiriliyor. Yemeğin malzemeleri arasında yöreye ve mevsimine göre değişen mantar, keçi sütünden tereyağı, Afyon’dan gelen ve orada Afyon 54 diye adlandırılan patates, domates sosu, taze fesleğen ve arpacık soğan gibi temel malzemeler var. Bu kebap ilk olarak -el yapımı çömleklerde üzeri alüminyum folyo örtülerek- 110 dakika pişiriliyor. Misafir siparişi verdiğinde, testinin üzerine mayalı bir hamur konup 10 dakika daha pişiriliyor ve sıra geliyor servise. İlk olarak masaya ortasında kapak, kenarında pilav olan bir tabak geliyor.

Arkasından şef, fırından yeni çıkmış testiyi misafirin gözü önünde kırıyor, içinden çıkardığı kebabı tabaktaki kapağı kaldırarak pilavın ortasına ekliyor.

The pots in which the kebab is cooked come from Nevşehir.

The shoulder of lamb is brought from Balıkesir. Among the ingredients of the dish, which vary by region and season, are mushrooms, goat’s-milk butter, potatoes from Afyon (known there as “Afyon 54”), tomato sauce, fresh basil, and shallots. This kebab is initially cooked for 110 minutes in foilcovered handmade pots. When it is ordered by the guest, it is covered with a sheet of leavened dough, cooked for ten minutes, and then served. First served to the table is a dish covered with a dish in its middle and with pilaf on the side.

After that, the chef cracks open the pot—just removed from the oven—before the very eyes of the customer and, removing the lid from over the dish, places the kebab he takes out from inside of it there.

Changa Restaurant, first opened in Taksim by Tarık Bayazıt and Savaş Ertunç, also offers its services to customers at its other location in the Sabancı Museum. Tarık Bayazıt chooses baklava, by virtue of the fact that it is one of the fundamental desserts in Turkish cuisine. And don’t picture a syrup-laden, sugar-loaded dessert when we say “baklava” this baklava is truly something else.

Fırından çıktıktan sonra bu böreğimsi baklavanın içine şırınga yardımıyla ayva şurubu sıkılıyor. Ardından tabaktaki -limonla tatlandırılmış ve aslında ayva tatlısından pek de farklı bir lezzete sahip olmayan- ayva püresinin üzerine konuyor ve yanına kaymak ekleniyor. Çıtır çıtır kıvamıyla ağızda dağılan tatlının hamurunda hiç şeker kullanılmamış. Baklava seviyorsanız ve bol şerbetinden dolayı gönül rahatlığıyla yiyemiyorsanız bu tatlı sizin için ideal.

The phyllo dough for the baklava is filled generously with pistachios from Gaziantep, after which it is rolled up. Then, it is baked until it is crisp, but before it darkens too much. Now flaky after it is removed from the oven, it is injected with quince syrup. Then, it is placed atop pureed quince (flavored with lemon and not unlike the traditional quince dessert in taste), with some heavy cream on the side. No sugar is used in the flaky, melt-in-your-mouth dessert’s dough. If you like baklava but feel deprived of enjoying it fully due to excessive syrup use, this dessert is perfect for you.
