Cooking has become a true art form and an exalted style of entertainment. However, unlike the subjective allure of a painting, a chef/artist’s masterpiece must not only please the eye of the beholder but also gratify the palate of the food connoisseur. The art of preparing and cooking food is called culinary art, and the culinarian – or chef – is well-versed in the

THE HISTORY OF THE ART In 1879, the Boston Cooking School opened – the first organized school to teach the culinary arts. Along with cooking and baking techniques and household management, the school curriculum included food sciences like nutrition, sanitation and the chemical analysis of food. One of the school’s brightest students was Fannie Farmer, who is still well-known today for writing and publishing a groundbreaking cookbook.

Farmer graduated from the Boston Cooking School and went on to teach at the school; later she became the school’s principal.

At the same time Beard gained fame, the Culinary Institute of America, today based in Hyde Park, N.Y., was established. The CIA is touted as the first career-oriented cooking school, and thousands of chefs throughout the country regularly participate in the school’s continuing education courses.

In 1902, Farmer left the Boston Cooking School and opened Miss Farmer’s School of Cookery. While teaching, Farmer developed a food plan for the ill and was invited to lecture at Harvard Medical School. She ended up teaching convalescent diet information to doctors, nurses and dietitians on an ongoing basis.

Beard’s former residence/school is now the headquarters of the James Beard Foundation, a nonprofit organization for the culinary arts. The foundation recognizes outstanding culinary artists in the U.S. and provides scholarships and educational opportunities for future chefs.

Farmer continued to write, teach and create recipes until 10 days before her death in 1915. She was 57 years old.

TOP CULINARY SCHOOLS In 1973, the College of Culinary Arts at Johnson & Wales University opened with 141 students; in 1993, the college became the first school in the U.S. to offer a Bachelor of Science in Culinary Arts. The college is the largest cooking school in the world, with more than 5,000 students enrolled at any given time. The college is also consistently listed among the top-10 cooking schools in the country, with locations in Providence, R.I.; Miami; Charlotte, N.C.; and Denver.

Child plugged her book on a Boston public television station. With her trademark warbled voice, candid demeanor and jolly sense of humor, Child prepared her first on-air food, an omelet. The audience loved her, and the positive response garnered a regular spot on T.V. for Child.

Eminent chefs like Wolfgang Puck, Emeril Lagasse and Bobby Flay have brought their culinary talents to worldwide audiences via television and the Web. The network is the crème de la crème of shows for “foodies.” The food hype has created an uncanny amount of competitions for chefs, whether they are homegrown, new to the culinary scene or seasoned pros. The art of cooking has generated a following that rivals sports fans.

As a privileged child of a wealthy family, Julia Child never had to cook growing up. The family employed a cook. As a 6-foot-2inch adult, Child said she could eat mounds of food at meals. But Child’s penchant for cooking didn’t begin until 1948. Child became intrigued with French cuisine when her husband, Paul, an employee of the Office of Strategic Services (where he met Child, also an employee at the time) transferred to a job with the OSS at the American Embassy in Paris. She enrolled in Le Cordon Bleu and found her lifetime calling. After six months of training, Child and two fellow students established their own cooking school, L’Ecole de Trois Gourmandes (The School of Three Gourmands).

In a large cast-iron or heavybottomed skillet, heat oil and butter over medium-high heat. Add onion and saute until it starts to soften and caramelizes, 5 to 8 minutes. New DVD Releases for Week of March 12, 2012 PICKS OF THE WEEK “The Adventures of Tintin” (PG) -- Steven Spielberg crams as much excitement perpixel as can fit into this animated adventure. Based on the venerated Danish comic series, “Tintin” follows a young investigative reporter and his dog as they go on dangerous and improbable journeys. The pace will keep the kids glued to the screen, but could leave some grownups feel-

ing exhausted. The rope-swinging, bulletdodging, sight-gag mania of it all brings flashbacks to the golden days of Indiana Jones -- augmented to an inhuman level by Spielberg’s desire to get every drop out of the animated medium. “My Week with Marilyn” (R) -- While working on a not-much-remembered movie, movie darling Marilyn Monroe spent some time with a 23-year-old English production assistant, and apparently revealed her true self and changed the guy’s life. That guy went on to write a memoir of their time together, and now it’s a decent movie propped up by one stellar pillar -- the portrayal of Monroe by Michelle Williams. The story may sag, the script could be repetitive and some of the performances may cloy, but the lynchpin of the whole picture stays strong as Williams puts out the right mix of confusion, excitement and longing that

makes the starlet of yesteryear memorable. Fans of slow, intimate biopics will love it, but this movie isn’t as iconic as its subject. “Young Adult” (R) -- Charlize Theron plays Mavis, a grown woman who just wants to be prom queen again. Mavis is a young-adult fiction writer who returns to her hometown under the delusion that her old boyfriend (Patrick Wilson) and everyone she knew from high school will worship her like in the old days. Reality starts to crush the thick walls of her immature psyche, and Mavis forms an unlikely friendship with one of the guys she used to step on (Patton Oswalt). The script is fresh, and the actors know it. Oswalt has no problem playing the grownup geek still nursing some wounds from his teen years. Theron absolutely knocks it out of the park as an entitled princess too old to think the world revolves around her.

“The Three Musketeers” (PG-13) -- Injecting CGI and brute-force witticisms into old adventure stories doesn’t always pay off. In some cases, the result is a bland, loud, humorless flop with no redeeming characteristics. This most recent adaptation of the Three Musketeers lands squarely in that category. Apparently made from ideas that were too hacky to fit into the last “Pirates of the Caribbean” sequel, this musketeer flick falls on its sword and can’t get up.

Is Your PC Running Slow?

How to get the hitch outta yer giddy-up! Part 1 of 2 Keeping your PC free of clutter can help performance and can also maximize valuable disk space. Here are a few simple tips for maintaining the performance of your PC. 1. Regularly run "Windows Update". This is on your Start menu. If it isn't, then click on "All Programs", then "Accessories", then "System Tools". This will take you to the proper page. Alternatively, try windowsupdate.microsoft.com (not necessary available with Windows Vista). It is very important that you install all available security related updates, Without updates, you are on the mercy of hackers. Always make sure that you have latest security loophole covered. Other updates are less critical, but some are still recommended. 2. Set Windows to Update Automatically. Open System: click Start, click Control Panel, click Performance and Maintenance, and then click System. Then click the Automatic Updates tab. 3. Get Rid of Cookies. These are the little crumbs that are left behind on your computer after you visit a website. You can use any good system & privacy cleaner such as Reginout etc for this. This step may wipe out passwords for sites you visit. Be sure you know your password to these sites as you may be asked to enter it the next time you visit a site. Click on Start>Control Panel>Internet Options. The second row down will say Delete Cookies, click on that. Click on Delete Temporary file; when the little box comes up that says "delete offline," you don't have to click on that. Click on Delete temporary Files. 4. Complete Disk Cleanup. After clicking on "Start", move your cursor on "All Programs", then up to "Accessories", then "System Tools". Click on "Disk Cleanup" from the list that appears. Click the "More Options" tab at the top of the page, and select all three of the following: "Windows Components," "Installed Programs," and "System Restore". Clean up all three by clicking on their respective tabs. You may want to delete all but your most recent system restore point as you

5. Defragment your computer. Defragmenting your computer moves all your files to where they are supposed to be. You may want to download an independent defragmenter (e.g. Defraggler by Piriform). It is small, concise, and more powerful, than the one distributed with Windows. 6. Remove adware, malware, and spyware. Use a search engine to find "Lavasoft AdAware 2010". This will take you to a site to download the software. Download and install this program. You can also use "SpeedingUpMyPC." / "Spybot Search & Destroy." All have easy-tofollow instructions. SUPERAntiSpyware is yet another option. For malware, MBAM is yet another option.

7. Install anti-virus software. There are free products available for personal use, such as AVG, Bitdefender and avast! Anti-Virus. You might also like to purchase such a product; the anti-virus market is fairly competitive, leading to many reasonablypriced products such as McAfee VirusScan, etc. Beware, Norton Antivirus slows down a computer more than help take out viruses. 8. Go to My Computer. Now go to tools at the top. Folder Options... View, then check the box "Show Hidden Files and Folders" then go to Local Disk, Documents & Settings, Your Account, and delete everything in: My Recent Documents, Local Settings History (Do not delete everything in local settings, just delete everything in the history folder of local settings) (and while in Local Settings) Delete everything in temporary internet files.

f you have mortgage problems, parts of a $25 billion settlement could be coming your way. Five of the nation’s largest banks accused of abusive practices have agreed to help 1 million homeowners. The banks are Bank of America, Wells Fargo, JPMorgan Chase, Citigroup and Ally Financial. Allegations included the extensive use of robo-signers (foreclosure documents were signed without even being read), failure to offer foreclosure options and incorrect handling of loan modifications. Borrowers who are underwater (the house is worth less than what’s due on it) but still holding on will get come help in the form of reduced debt, either from lowered interest rates or principal reduction. It’s thought that 11 million borrowers owe more than their homes are worth, which means they haven’t been able to sell or refinance. Lenders will be required to rework loans and reduce the principal for those nearing foreclosure. If you lost your home to foreclosure (as did 750,000 families) between 2008 and 2011, you could receive a payment of $2,000. That’s not to say all the problems are over. For some, the nightmare continues: While the investigations into alleged abusive practices were going on, some lenders just called a halt to the final steps of foreclosures. Families continued to live in their homes without making any payments. Now that the guideline are clear, lenders are likely to press forward with those foreclosures. Neighborhoods that saw too many empty houses due to foreclosure could see many more, as not everyone will qualify for assistance. This could force home prices down even more in neighborhoods hardest hit as more bank-owned properties come on the market and investors pick up properties to turn into rentals -- never a good way to stabilize a neighborhood. Ideally, banks won’t release all the properties at once.

WHY YOU NEED A ROTH 401k

T

here’s an investment product out there called a Roth 401k- it’s been around for several years now, yet it remains quiet on most people’s retirement radar. And we think you should give it serious consideration as a hedge against future taxes. Why? A Roth 401k is a hybrid between a Roth IRA and a traditional 401k- it is a mixture of best practices, if you will, by solving problems inherent in Roth IRAs and 401ks. Roth IRAs grow tax free, that is the main attraction. However, they have relatively

low contributions limits ($5,500 for 2011) and there are income phaseouts making them ineligible to some ($169,000 for married and $107,000 for single taxpayers). 401ks don’t grow tax free, but reduce your tax liability today. And they have much higher contributions limits ($16,500 for 2011) and don’t have income phaseouts per se. A Roth 401k combines the desirable features into one product- grows tax free, higher contributions and no income phaseouts. The one downside is that Roth 401ks do not reduce your taxable income today as traditional 401ks do. So why do you need one? The thought process behind traditional 401ks was that your income and subsequent tax rate

The programs funded with the $25 billion settlement are set to run for three years, but lenders are being given incentives to act within the first year. What to do if your mortgage is in trouble: Call your lender. Ask specifically who is holding your note, as changes might have been made when loans ended up in various secondary-market packages. Take the names of those you talk to. Ask what specific programs will be available to help you. Ask for a time frame and follow up weekly. would shrink during retirement, and to reduce your taxable income during your presumably high earning and therefore high tax rate years made sense. However, many people are continuing to work and have maintained their marginal tax rate into retirement. Therefore 401ks became less attractive as a tax reduction tool over a lifetime. Roth 401ks on the other hand will grow tax free, so regardless of your tax rate the gains are not taxed. Future effective tax rate is something very few taxpayers concern themselves with, but it is important when it comes to your retirement investment strategy. Our advice is to diversify your income streams much like you diversify a portfolio. To spread the retirement tax rate risk, perhaps you should invest in both 401ks and Roth 401ks.
