omeone once said, “The key to happiness is low expectations.” I guess it goes like this: When you don’t expect to accomplish anything, and you don’t, you aren’t disappointed; if you’re not disappointed then you’re happy. It sounds to me like convoluted logic used to justify some serious laziness. I can’t imagine going through life not expecting some really neat things to happen. I wake up every day expecting something good to happen. If I didn’t, I don’t think I would get out of bed…and it works! Last week I went to a meeting at 7:00 am and met a guy who, after the meeting was over, showed me how to save $125 per month and all I had to do was fill out a certain form. Wow! That was worth the effort, wouldn’t you say? A few hours later I made a cold call on a rather large business that has a variety of gatekeepers whose job it is to keep sales people away from decision makers. But when I walked in, the person I needed to talk to was sitting at the desk right in front of me. And best of all, he wanted to talk to me. He had heard of me, he was familiar with what I was selling, and he was ready to buy. I’ll meet with him next week to go over the details and pick up a check. “How did that happen?” you ask? “I thought business was tough, clients were hard to find, and that money was in short supply.” Perhaps it is, but that’s not what I expect to find when I head to my office every day. I expect people to like me. I expect to make sales. I expect my business to prosper. And if it doesn’t, I expect to find ways to take advantage of whatever situation I am in. My “expecter” is always awake. But it’s more than just awake; it is always expanding. I’m always expecting something good to happen to me! Too many people go around all day thinking, “Oh dear, the markets took another nosedive, one more big retail chain announced it is closing, the weatherman said it would be overcast and drizzly, and to top it all off, the cat puked on the carpet. I expect it will be

ARE SLEEPING PILLS WORSE THAN INSOMNIA? DEAR DR. DONOHUE: I am on Lunesta, a prescription sleeping pill for insomnia. The nurse practitioner wanted me to take half a pill every third night, but that didn’t work for me. I have to take half a pill every night. Now she wants me to take half a pill every other night because she’s afraid that it will become habit-forming. What do you think of this medicine? -- S.S. ANSWER: All sleeping pills should be taken for as short a time as possible. “As short a time as possible” implies that the person recovers from whatever it is that’s preventing him or her from falling asleep. In the real world, a correctible cause for insomnia often isn’t found, and then a person is faced with having to stay on a sleeping pill or stay awake for most of the night. I would choose option one, as long as the sleeping pill isn’t causing any trouble, like daytime sleepiness. From time to time, it’s in your interest to try and stop the pill. You might find that sleep isn’t as elusive as it was when you started taking it. Lunesta is one of the newer sleeping pills, tolerated well by most. It starts to work in 10 minutes, so it’s useful for those who find falling asleep difficult, and it has extended action to prevent waking in the very-early-morning hours. Lunesta has caused some users to behave differently. A normally reserved person might become quite aggressive. It also has caused a very few to do things they have no recollection of

1. Line 2 large cookie sheets with foil. Preheat oven to 200 F. 2. In small bowl, with mixer at high speed, beat egg whites and cream of tartar until soft peaks form; gradually sprinkle in sugar, 2 tablespoons at a time, beating well after each addition until whites stand in stiff, glossy peaks. Beat in vanilla extract. 3. Place large star tube (about 1/2 inch in diameter) into large decorating bag. To make stripe effect, with artist’s paintbrush, and using slightly less than 1/8 teaspoon of each food coloring paste, alternately brush 2 lengthwise stripes of red food coloring paste and 2 lengthwise stripes of green food coloring paste inside decorating bag. Carefully spoon meringue into decorating bag. 4. Pipe meringue, about 1 inch apart, onto foil-lined cookie sheets into rosettes, each about 1 1/2 inches in diameter and about 1 1/4 inches high. 5. Bake Meringue Kisses 3 hours. Turn oven control to off. Leave meringues in oven 30 minutes longer to dry. Cool completely on cookie sheets on wire racks. 6. hat can be better than peanut butter and oatmeal, maybe a thin layer of strawberry jam inbetween these scrumptious cookies. • 3/4 cup all-purpose flour • 1/2 teaspoon baking soda • 1/4 teaspoon baking powder • 1/2 teaspoon salt • 1/2 cup butter, softened • 1/2 cup peanut butter • 1/2 cup white sugar • 1/2 cup packed light brown sugar • 1 egg • 1 teaspoon vanilla extract • 1 cup quick cooking oats • 3 tablespoons butter, softened • 1 cup confectioners’ sugar • 1/2 cup smooth peanut butter • 2 1/2 tablespoons heavy whipping cream

ollandaise sauce is a very delicate sauce but is worth the extra trouble to make from scratch. The powdered mixes don’t come close. To make clarified butter melt down a stick on low until only the fat is left. The clearer your butter is the better your sauce will come out. It is important to whip you sauce with a wire whip

because the sauce can break with too much friction. It can also break if you add in the butter too fast or reheat the sauce later on. A trick used by many chefs if the sauce does break is to add in just enough cream to bring it back together. Hollandaise sauce can be used for many different things. You can also take it a step further and turn it into béarnaise sauce by adding in some tarragon and red wine vinegar. I love to eat good French fries with béarnaise sauce. Both sauces can be used on eggs, beef, chicken, seafood and veggies. Next weeks recipe I will be using the sauce with another favorite of mine.

ometimes, when I’m on the small, hectic production set of “The Kitchen Diva!” television cooking show, I think about how far I’ve come in the multimedia field. I got my start as a culinary historian, cookbook author and television chef thanks to my mother, Angeline’s, fabulous recipe for Raisin-Pecan Pie. She created the recipe by experimenting with some of my father’s favorite ingredients -- raisins and pecans. She told us that the first pie was so good that she ate the whole thing by herself. She had to make another pie before my father came home from work.

The Tri-Lakes Music association has been practicing since September and has recruited many volunteer musicians. The Orchestra consists of approximately 60 musicians and the choir will contain approximately 90 singers. The performances will consist of a two hour concert that will feature in the pre-intermission section the Tri-Lakes Community Handbell choir under the direction of Mrs. Betty Jenik, the Tri-Lakes Music Association Children’s choir under the direction of Mrs. Diane Jensen and the Tri-Lakes Music Association’s orchestra under the direction of Mrs. Rose Dunphey.

Preheat the oven to 325 F. Put the raisins in a bowl of warm water to plump. Drain, and set aside. Cream the sugar and butter until fluffy. Add the eggs, one at a time, and combine well. Using a spoon, mix in the raisins, pecans, nutmeg, cinnamon and vanilla extract until well-blended. Scrape down the bowl. Fold in the raisins and pecans to the filling mixture.

“This event is truly a community wide happening, very similar to the very successful annual empty bowl dinner” said Manning. “The group that comes together to perform these musical works do it out of the goodness of their heart and soul. They spend countless hours preparing for and putting on a very professional concert. The groups are not made up of paid professionals but local community members who have a need, a desire to give back to the community in which they live. This year, as in the years past, the proceeds go to help a more than worthy causes – Tri-Lakes Cares and two scholarships. Tri-Lakes Cares has done so many good things in the Monument community and are always in need of additional funding – especially this year with the current economic stress. During our first concert we raised approximately $2600. The last seven raised about $4000 each yielding a total of about $30,000.00. We would love to top that amount this year but need everyone’s help if we are going to be successful”. This event is funded by several local churches and community members and the community is encouraged to contribute if they so desire. Admission to the concert is FREE and is on a first come first serve basis. A free-will offering will be taken up during the concert every dime of which goes to Tri-Lakes Cares and the two scholarships. DEAR BILL: That’s definitely a new method to try. I would exercise caution in using common “human-safe” foods as a deterrent to copraphagia (stooleating). While pineapple is not on the list of foods that are dangerous to dogs, it is a citrus fruit high in sugar, which might upset their stomachs. So, as illustrated above, cut the pineapple into very small pieces and use sparingly. Other techniques that are effective in stopping this annoying habit include sprinkling the stool with hot pepper sauce or spraying with a commercial solution designed to make the stool taste terrible to the dog. Training the dog to “go” in a designated area, in addition to standard obedience training, is another method to deter stool eating. Picking up waste immediately after the dog “goes” is another solution. But it’s likely that most dog owners will need to use a combination of techniques to limit or stop the habit. What should go on your list? Consider the following: Sell your losers. From late 2007 through much of 2008, the stock market has gone through some rough times. Consequently, you may now own some stocks that are worth less than what you originally paid for them. While this fact may not thrill you, there is a bright side: By selling some of your losers, you can offset capital gains you may have realized elsewhere in your portfolio. If you didn’t sell any winning stocks this year — and thus had no capital gains — you can use your losses to reduce up to $3,000 of ordinary income for 2008. And if your losses exceeded $3,000, you can carry them forward indefinitely and use them to offset gains or ordinary income in the future. Observe “wash sale” rules. One drawback to selling your losers is that you may have wanted to keep these stocks in your portfolio, despite their decline in value. Can you buy them back? You can — but you need to follow the “wash sale” rules. If you want to claim your loss as a deduction, you can’t buy the same stock during the “wash sale” period — the day of the sale, the 30 days before the sale and the 30 days after the sale. (See your tax advisor for more information on wash sale

rules.) Put more money into your 401(k). Your 401(k) is a great retirementsavings vehicle — for several reasons. First, you typically contribute pre-tax dollars, so the more you put in, the lower your taxable income. Second, your earnings can grow on a tax-deferred basis. And third, you may have a dozen or more investment choices, so you can build a portfolio that reflects your risk tolerance, time horizon and retirement goals. So, if you haven’t exceeded the contribution limit (which, in 2008, is $15,500, or $20,500 if you’re 50 or older), ask your employer to adjust your remaining paychecks to boost your contribution. Also, if you receive a year-end bonus, see if you can put some or all of it into your 401(k). Add to your IRA. You actually have until April 15, 2009 to fully fund your traditional or Roth IRA for 2008, but if you can avoid waiting until the last minute, you might not have to come up with a big lumpsum payment. For the 2008 tax year, you can put up to $5,000 into your IRA, or $6,000 if you’re 50 or older. Make charitable contributions. When you contribute to a charitable organization — one that has received 501(c)(3) tax-exempt status — your donations are generally tax- deductible, provided you itemize your tax return. Plus, if you decide to donate a stock or other appreciated asset, you can avoid capital gains taxes when the asset is sold. Call all the stores in the local mall. If you catch a manager at the right time (overloaded with holiday shoppers and two employees who called in sick), you could snag a position. Ask local mall management if you can set up a table with holiday baked goods, even if it’s on the sidewalk outside a door. You’ll make more money if you offer hot drinks like cocoa or cider. If there is a rehab center, elderly facility or nursing home near you, ask management about acting as a personal shopper for patients who can’t get out. Set realistic fees. Put up signs offering to baby-sit children whose parents need to shop alone, probably at night. If you have baking skills and are due to go to a meeting of any kind, take samples of baked goods that you can provide. Know in advance what you’d charge and be ready to take orders immediately. If you get stuck having to pay what your former spouse was ordered to pay, you do have a remedy. You can go after your former spouse and make them pay. This process is called “indemnification”. However, you can’t get blood from a stone, and your credit rating can get clobbered. All you may wind up with is an uncollectible judgment against your former spouse. Welcome to the marriage zone! A way to avoid the deadbeat former spouse (DFS) syndrome is to construct your settlement so that as much debt as possible is paid off from the marital assets. Another method is to have the other party refinance the debt to have you removed from it. This often happens with regard to mortgages on homes. Insurance should also be considered for security purposes if you are concerned that the other party won’t be around to make all the payments.

These lights are 80 percent more efficient than traditional ones. Just remember to properly dispose of your tree after having it up for five to six weeks.
