eptember is National Honey Month! Honey, and the creatures that create it, are a complex and ancient source of much debate. Not only has honey been utilized in many different ways by mankind over many thousands of years, it continues to be a very important part of our society, used for much more than just a source of sweetener for our palettes. HONEY AROUND THE WORLD

NATURE’S PERFECT FOOD

Honey has been used by mankind for over 40 centuries. The earliest illustration we have of honey being gathered is around 15,000 years old, and appears in a painting on the walls of a rock shelter in Eastern Spain. It is referred to in the Bible as “the heavenly food.” Ancient Egyptians paid their taxes with honey; and in early Greece and Rome, honey symbolized fertility, love and beauty. The ancient Greeks minted coins with bees on them. One could surmise that the endearment “honey” still used today may have been “coined” in those ancient times.

• Honey is used for much more than a substitute for sugar. It contains all the substances necessary to sustain life. Made up of fructose, glucose and water, honey contains complex carbohydrates, enzymes, antioxidants and amino acids. There are records of hundreds of Ancient Egyptian medicinal remedies and honey was used in over half of them.

• To the ancients, honey was a source of health, a sign of purity and a symbol of strength and virility.

• Honey has been used for centuries to treat skin burns and infection.

• Early man considered bees mysterious and magical creatures because their amazing organized labor resulted in a seemingly miraculous product - “nectar for the Gods.”

• It is thought that the relative acidity in honey prevents bacterial growth.

• In Greek mythology, it is said that Cupid dipped his arrows in honey to fill his targets’ hearts with sweetness.

Because honey can contain clostridium botulinum spores, to which infants have very little resistance, honey is not to be given to children under one year of age. After that, kids have generally developed enough immunity to the spores and it is then usually safe to

HONEY IN AMERICA In the 16th century, conquering Spaniards discovered that the natives of Mexico and Central America had already developed beekeeping. A distinct family of stingless bees (not true honeybees) was native to these regions. European settlers introduced European honey bees to New England in about 1638. The Native Americans referred to them as the “white man’s flies.” Honey wasn’t just used to sweeten food back then; it was also used to make cement, to preserve fruits, to concoct furniture paste/polish, to make varnish, and also to make many different kinds of medicines. In 2007, United States honey bees nearly became a complete casualty. Fully one third of the population died after several deadly viruses ripped through the colonies across the country. Very little is known about this natural disaster, referred to as Colony Col-

THE LIFE OF A BEE Bees are insects that live in colonies with around 50,000 of their closest friends. Their hives are selfconstructed and are made out of beeswax, which is excreted from many of the worker bees’ glands. Each honeycomb has six sides. Honey bees don’t sleep, but they sometimes rest in empty honeycomb cells. Each hive has one queen bee that typically lives for three to five years. The hive will not survive without a queen, as she is the only bee who procreates. In fact, she does little else, producing 1,000-1,500 eggs per day. She is impregnated by drone bees that die shortly after their one and only encounter with the queen. The queen remains fertile for all of her life.

When the queen bee sickens, ages or dies, the worker bees choose several larvae to be potential new queens and begin feeding them royal jelly exclusively. The best candidate continues to be fed this powerful, milky substance made from digested pollen, honey and a chemical excreted from a gland on the nursing bees head. It takes 16 days for a new queen to emerge from her egg. The hive also contains worker bees that can live only six weeks in the summer months, literally working themselves to death. However, they can live longer through the much less productive months in fall and winter. All of the bees have very specific duties throughout their lives, including nursing, guarding, “shopping,” housekeeping, constructing, royal attending and even undertaking. Very civilized insects.

A few years ago I had to rent one of those storage units to store stuff that was left over from a business I closed. I paid the rent for six months and then realized the stuff in the mini-warehouse was worth less than the six months of rent I had paid. How dumb is that?

A few years ago at an adult Sunday School class in another state the teacher asked the students to each stand up and tell about the person who had the greatest impact on their lives. Someone who was there told me that four or five of the students named my father as the man who inspired them the most.

Some of the stuff we own we only pretend like we own it…like our house that has a 30-year 95% mortgage on it or our car that has a 60-month loan on it or our new 55” LCD/HDTV sitting so proudly in the middle of the living room which won’t be paid off before the next generation of television technology sweeps the land. My grandfather who died over 50 years ago owned a small farm implement factory in Julesburg, Colorado. In his factory were all kinds of welding and fabricating equipment. He also owned a fishing boat, a nice car, and a lovely house with some pretty nice furniture in it. But you know what? All of his stuff is gone except his house; some other family lives there now. The stuff my dad left behind is rapidly diminishing. My mother tells me that she wants me to “do something about your father’s stuff that is out there in that shed” the next time I come to Florida. She’s tired

One day (hopefully not too soon) all our stuff will disappear at an estate sale run by our kids or grandkids. Your stuff too. That’s what happens to stuff. Here’s a thought that might help us put all that stuff in perspective: What is left of your life or mine after we are gone is not the stuff we owned but the good we did while we were here.

The wife and I, we have our own stuff. In fact, our house is filled with stuff our kids will never want. Our walls are lined with art and artifacts from around the world, shelves are filled with hundreds of books, the storage room in the basement has stacks of files, trunks of memorabilia, and boxes and boxes of slides, photos and videos. We don’t even know what’s in some of the boxes.

It wasn’t the stuff he owned that inspired them. It was the wisdom he shared, the example he showed, and the bigheartedness with which he lived his life. Give your life away for something more than stuff. Someday all your stuff will fade or rust or break or somehow just disappear and the only thing left will be the gifts of wisdom and love and joy you gave to those about you. There’s no better way to prepare for the boom than to learn to give generously. Start with the person closest to you. Then help someone far away. ast year, medical researchers said dark chocolate was good for lowering blood pressure. It’s the antioxidants that do the trick, they determined, by increasing nitric oxide and opening blood vessels. Now there’s even better news: Chocolate can reduce the risk of dying from cardiac problems, according to an article in the Journal of Internal Medicine. Researchers in Sweden studied men and women between the ages of 45 and 70 years old, tracking them for eight years after they had a heart attack, with special emphasis on their diet -- and how much chocolate they consumed. Both men and women had the good results. Specifically, chocolate can cut the risk of dying from heart problems by almost 70 percent if you eat chocolate regularly. Snacking on chocolate only once a week can cut the risk in half. Eating chocolate only now and then still has an effect and cuts the risk by 27 percent.

If chocolate is on the list of foods you must avoid, there are other ways you can get beneficial antioxidants in your diet. A U.S. Department of Agriculture study lists foods having the highest levels of antioxidants: small red beans, blueberries (wild and cultivated), kidney beans, cranberries, artichokes, blackberries, prunes, raspberries, strawberries, apples (including Red Delicious, Granny Smith and Gala), Russet potatoes and plums.

DEAR PAW’S CORNER: Twice this year already, I’ve had dogs left on the doorstep of my farmhouse, including a new litter of puppies. People must assume that my few acres are perfect to let these dogs roam free, when in fact this is a working farm with little extra time for taking care of other people’s pets. Sadly, I’ve had to take most of these dogs to the local shelter. Can you remind readers that pets are not simply problems that can be dumped when the going gets tough? -- Shirley in Putney, Vt. DEAR SHIRLEY: Pet abandonment, especially of dogs, has become much more common in these difficult economic times. But that doesn’t excuse the act. Abandoned pets are exposed to all sorts of dangers from both nature and man. Dogs are not wolves -- they do not thrive in the wild. Dogs have developed a symbiotic relationship with hu-

mans, meaning they rely on us for food and care. They’re also devoted pack animals, so when they are left by the side of the road -- essentially kicked out of their pack -- the psychological damage is devastating. An abandoned dog, even if lucky enough to be adopted by someone else, is never the same dog that was left behind. If you’re going through tough times economically and caring for your pet is straining your finances, don’t go it alone. Tell someone you’re having trouble -- a family member, your pet’s veterinarian, a friend. Contact the local Humane Society (or your shelter) and ask for advice. There are low-cost pet care resources available in most communities. If the dog’s behavior is a problem, there are also resources available. For the best results, use regular olive oil, or combine it with vegetable oil. Use this basic recipe for mayonnaise, and then add your favorite combination of herbs, ingredients and spices to create a spread that will add a special zip to your sandwiches.

Mayonnaise is made by creating an emulsion, in this case, oil and egg yolks, two ingredients that normally don’t combine. Egg yolks provide a rich, creamy base and are a key ingredient when making an emulsion for mayonnaise. Using the highest quality eggs, like Eggland’s Best, ensures that safety concerns are reduced to a minimum. The company has one of the strictest quality-assurance programs in the industry and conducts more than 30,000 laboratory tests each year to maintain the superiority of its eggs. Adding lemon juice or vinegar to the mayonnaise emulsion also helps deter any bacteria growth. The lecithin in the egg yolks also helps to stabilize the emulsion ingredients. The key to making an emulsion is adding the oil in a slow, steady stream. The type of oil used in the emulsion changes the flavor of the mayonnaise. Do not use

BASIC MAYONNAISE For best results, avoid making mayonnaise during wet or humid weather, as it will affect the emulsion and the mayonnaise will have a greasy texture. For a richer mayo, use only the egg yolks. 1 egg yolk 1/4 teaspoon salt 1/4 teaspoon dry mustard 1/4 teaspoon sugar 1/2 cup vegetable oil 1/2 cup olive oil 3 teaspoons lemon juice or white-wine vinegar 2 teaspoons hot water Using a food processor or blender or a mixer set on medium speed, combine the egg yolk, salt, dry mustard and sugar until well-blended and a pale yellow. With the motor running, slowly drizzle in the oils (1/4 cup at a time) into the yolk mixture in a slow, steady stream. Drizzle in one tablespoon of the lemon juice and a teaspoon of the hot water. Continue to alternate mixing in the oil and the lemon juice until all the ingredients have been combined. The finished mayonnaise will be thick. If a thinner consistency is desired, whisk in 1 or 2 teaspoons of hot water. Cover and refrigerate for at least an hour before using to let the flavors blend. Mix 2 Tbs flour, yeast, and sugar together then mix in milk. 3. Set aside in a warm place. 4. Cut butter into remaining flour and salt. Set aside. 5. Dice bacon and Julian the onions. 6. Add milk mixture into the flour mixture and mix until it forms a ball. 7. Cover and set aside in a warm place.

8. Sautee bacon and onions until the onions start to caramelize. Let cool. 9. Mix remaining topping ingredients in a separate bowl and add the onions and bacon. 10. Place dough into the bottom of a greased spring form pan and top with onion mixture. 11. Bake in oven for about 30 minutes.

hen we visit family in Germany life stops at around 4:00 pm so we can eat cake or pastries. I will watch my watch to make sure I don’t miss out. In the fall there are about 2 weeks that you can get new wine and the Zwiebelkuchen is often served with it. …So at 4:00 pm we stopped and had some Zwiebelkuchen and new wine in one of the small towns. It was one of the most memorable meals I had in Germany and I will often crave it. It isn’t easy to find new wine here so I serve it with a nice Riesling. I created a warm place to let the dough steps rest by placing a container with about 2 cups of water in the microwave and heating it for about 3 minutes. I then place the dough in the microwave with the container of hot water the door shut.

I have seen the ads on TV where a woman and her grandson discuss this. The boy asks her if she has it. She says she doesn’t know. That’s where I am. I don’t know, but I think I might. -N.O. ANSWER: Peripheral artery disease, PAD, also called peripheral vascular disease, means that arteries in the legs -- the periphery -- are clogged and leg muscles aren’t getting enough blood. The proof comes from walking. People with PAD get leg pain when they walk a certain distance, and they can tell you almost to the inch when the pain will start. The pain leaves when they take a rest, but returns after they have resumed walking The site of pain depends on where the blockage occurs. Pain in the buttock or thigh indicates a blockage high in the leg arteries. Pain in the calf comes from a block from midthigh to knee, and pain in the foot comes from a lower blockage. PAD is a common malady. Five percent of men and 2.5 percent of women over 60 have it, even though some have no symptoms. A doctor can make the diagnosis in the office. ne way to help you prevent bingeing is to think about how much time and money it costs you to binge. Keep track of how much time and money you spend on purchasing binge food. The next time you begin to think about making a trip to the grocery store to buy junk food, start timing yourself. Time the whole process of deciding if you should run to the store, convincing yourself it’s ok to binge on unhealthy snacks, planning on what to buy, getting ready to run to the store, making the trip to and from the store, spending time shopping for your binge food, and the time spent during a binge. Stop the clock after you have swallowed that last bite of salty, fatty food.

Next calculate how much your binge food costs you each year. Take the cost of this last binge and multiply it by the number of times you typically binge in a month. Then multiply this result by 12 for the number of months in a year. The result will be an estimate of how much you spend in one year bingeing on food that can harm your weight loss efforts. Imagine the nice clothes, flowers, spa treatments, concert tickets, etc. that you could buy yourself with that money. Since your grandchildren are young, they have many decades ahead of them to take advantage of this retirement vehicle, which offers tax-free earnings, provided your grandchildren don’t make withdrawals until they’re 59-1/2. To qualify for a Roth IRA, your grandchildren just need to be old enough to earn some money. They would have to establish the Roth IRA in their names, but you could contribute to it. The contribution limit is the lesser of $5,000 per year or the amount of annual earned income. Helping your grandchildren pay for college or save for retirement will bring you great satisfaction during your lifetime. But once you’re gone, you can still provide valuable financial resources that may help your grandchildren achieve other goals, such as furthering their education or making a down payment on a home. Specifically, you might want to pass on some of your assets to your grandchildren through a living trust, which can avoid probate and gives you great control over how — and when — you want your wealth distributed. And if you name your grandchildren beneficiaries of a life insurance policy owned by a trust, the proceeds will not typically be subject to estate or income taxes. B

efore your next auto insurance renewal date, check rates from competing insurance companies. All policies aren’t the same, and you could save hundreds of dollars per year. To get your best possible rates: • Consider bundling your homeowners insurance with your auto. You could get a lower rate for the additional business. At the same time, if you have a bundled policy and only want to change one of them, the remaining policy premium could go up. • Be sure you get all your discounts. Passenger and side-curtain air bags, auto club membership, low annual mileage, professional group affiliation and other

Colorado does recognize, and has always recognized, valid holographic wills. A holographic will is a document drafted personally by the testator himself or herself. In order to qualify as a valid “holographic” will, a document must meet certain requirements: • the document must be signed by the testator; • the signature of the testator must be in the testator’s own handwriting; • the “material portions” of the document must be in the testator’s own handwriting; and

bviously, the surest way to know that your will shall be self-proving and thus subject to informal probate, and that your wishes shall in fact be observed, is to have a licensed Colorado attorney draft the will and supervise its proper execution. For many reasons, however, a particular individual may not be able, or may not wish, to follow that course. The alternatives are then to either: (1) elect to have one’s estate distributed as provided under the intestacy statutes; (2) complete and sign a form will; or (3) draft and execute a holographic will. If you do not wish your estate to be distributed in a manner any different from that provided by the intestacy statutes, and if your estate is not large enough than any estate tax mitigating mechanisms are necessary, a will may not be necessary, although your estate then will have to go through the legal expenses, and time, of formal probate proceedings. Those expenses, if the assistance of an attorney is required, can and usually do exceed the cost of having an attorney draft and supervise the execution of your will to begin with. Until the 1990s, the State of Colorado did not recognize form wills, primarily because of the concern that, in the absence of the assistance and counsel of an attorney, and in the absence of the dispositive portions of the form will being in the testator’s own handwriting, the form will’s provisions might not reflect the actual intent or wishes of the testator. Such form wills may now be recognized by the probate court, but there is no certainty that they will be admitted in any given particular situation. In

addition, such wills are rarely “self-proved”, and as such must often be probated formally. Finally, many such wills are not properly executed by the testator, as required under Colorado law, and thus may not be entitled to be admitted to probate at all.

Your rates will go up. • Keep your credit scores high. It used to be that insurers would check the year and make of the vehicle, your age and gender, your driving history and your ZIP code to determine your auto insurance premiums. Nowadays they also check your credit worthiness. They’re not looking for whether you can pay the premiums -- they want to know about the rest of your life. Insurance companies believe that if you have a low credit score, you’re more likely to file a claim. Additionally, if you have longstanding

• it must be clear, by the testator’s words or actions, that he or she intended the document to be his or her last will and testament. Some strange and varied documents have been found to be valid holographic wills, and admitted to probate, in various states. For example, in one case a person was assaulted and, while dying, wrote, in his own blood, on the wall of the abandoned house in which he was dying: “All to [Name]”, with his signature. This was found to be a valid holographic will. Another case found a holographic will in a writing written on the bottom of a dresser drawer (the bottom of the drawer was cut out to present the will to probate). Valid holographic will have also been written on a nurse’s petticoat, an eggshell, and scratched on a tractor fender. That being said, most if not all attorneys strongly advise against relying on holographic wills; they are not “self-proved”, and therefore must be formally probated; in addition, lay persons are often ambiguous in their wording of their directions. Because of the uncertainty regarding the admissibility to probate of form and holographic wills, the best course of action is really to have a licensed Colorado attorney draft your will for you. Please consult your legal advisor regarding your particular circumstances.

How To Reduce Debt Stop Spending the Way you Have in the Past.

Clearly, the same old games aren’t going to work. Your spending habits are likely what got you into debt in the first place. Changes must occur if you are serious about getting your finances back on track. Those weekday morning lattes may feel like a necessity, but imagine either drinking away $700 or putting it toward your debt each year! I'm not saying

that you need to deprive yourself of everything that makes you happy but, rather, that you should try to find things that make you happy that are less expensive or, even better, free.

Build a Lean Budget and Stick to It.

Don't let the "B" word scare you. Budgets are actually pretty easy to put together and to maintain. All it takes is a little upfront organization and a few minutes every week for

Have an Emergency Fund.

Many perfectly good budgets have fallen apart due to unexpected vehicle repairs, doctor’s bills, etc. And remember that an emergency is an EMERGENCY. A great sweater on sale at J. Crew is not an emergency, no matter how you try to justify it.

Strategize.

Pay the minimum on every account, then funnel any extra money toward the account with the highest interest rate until it is paid off. If all your interest rates are about the same, funnel the extra money to the account with the lowest balance. See if you can take discretionary income and extra savings you've got each month to add to the minimum payments!

Don’t Procrastinate.

The sooner you pay off those accounts, the sooner they will age off of your report, and the sooner you can move on with your life.
