THE LAW OF RETURN by Deborah Stumpf
ISSUE 445 • MAY 10, 2010
“And when your back stops aching and your hands begin to harden...You will find yourself a partner in the Glory of the Garden.” - Rudyard Kipling
H
igh grocery store prices and media reports of food-related illnesses and harmful food ingredients have led thousands of people to organic gardening, and many in their own backyards. The small farm is making a comeback. And the larger farms are also cashing in. In 2007, U.S. sales of organic food and beverages grew from $1 billion in 1990 to an estimated $20 billion. From 2007 to 2010, organic food sales were expected to increase 18 to 20 percent each year.
HOW IT ALL SPROUTED In the early to mid 1900s, British botanist Sir Albert Howard, after observing the farming practices of the people in India, became a staunch opponent of chemical fertilizers.

The Law of Return... Continued from Page 1 His studies concluded that the remains of dead animals and plants returned to the soil enriched it by producing organic matter (humus). The natural process recycled the minerals to stimulate new growth. Calling the process “the law of return,” Howard became a vocal advocate of returning organic waste materials back to the farmlands. However, conventional farmers were pessimistic. During World War II, chemical fertilizers and pesticides like DDT were introduced, heightening economic gains for traditional farmers. Pesticides warded off insects and disease.

The two different methods of farming polarized the agricultural industry; notably so when American business man Jerome Rodale published the first magazine on organic farming in 1942. Fast forward 20 years, when well-known naturalist Rachel Carson published “Silent Spring.” Many have credited the best seller with spawning the environmental movement and contributing to the ban on DDT, which nearly wiped out a number of bird species. Another 20 years later, the U.S. government began regulating organic production and adopting certification standards.
ORGANIC DEFINED The simple explanation of organic farming: the natural production of food, without synthetic chemical fertilizers and genetically modified organisms. At the same time, methods used in organic farming have no impact on the earth’s resources and provide safe, healthy food.
Organic farming also means raising livestock without hormones or other additives. According to federal government standards, “organic farming prohibits the use of genetic engineering, ionizing radiation and sewage sludge during production. Organic crops must be raised without pesticides and petroleumbased fertilizers. Animals raised in an organic operation must be fed organic feed and have access to the outdoors.” No antibiotics; no growth hormones.
BENEFITS OF ORGANIC GARDENING • There are many more nutrients in organic foods. • Processing vegetables and food in general decreases the nutrient value. • The jury is still out on the adverse effects of pesticides and the use of antibiotics and hormones in livestock. Organic might be a safe alternative. • Organic foods stay fresh for longer periods. • Growing your own food is cost efficient. • Organic gardening is easy on the environment. • Gardening in general is good exercise and a great stress reliever.
FIRST – COMPOST Organic farming and gardening requires composting methods to enrich the soil for successful crops, small or large. Whether it’s Colorado or Florida, composting materials are the same: a mixture of decaying organic (all natural) substances, from orange peels to dead leaves to horse manure.

This process usually takes two months to one of Inserts yearNumber – and is the preferred method among diehard organic gardeners. Total of ads COMPOSTING HOW TO’S • The best recipe for composting is combining two to three parts brown materials (dead leaves, shredded newspaper, wood chips) with one part green matter (fresh grass clippings, green leaves and fruit and vegetable peelings). • Do not use wood ashes or lime for composting in Colorado. They increase salt and alkalinity, leading to a loss of nitrogen.

• When enough of the materials have accumulated to create at least a volume of 27 cubic feet, layer (burying the food scraps in the center to stave off the animals) the ingredients as the recipe calls for until the pile is 3 feet x 3 feet x 3 feet – or 5 feet wide at the base and 3 feet high. • The microorganisms will start composting, releasing heat. The interior of the pile will reach a toasty 120 to 150 degrees.

Spraying compost teas on garden plants and vegetables can block funguses and stimulate growth. One of the most popular teas today is worm tea. Worms help decompose matter and improve soil structure, leaving behind a rich fertilizer. The proof is in the pudding … or the plants.

Although it’s a simple process, cold composting can take up to two years to “finish.” Cold composting is the collection of grass clippings, leaves and weeds, and it normally takes six months to 24 months for the microorganisms, earthworms and insects to break down the material. Turning the pile and adjusting the moisture level speeds the process.

Not interested in raising worms? No problem. Worm farming has obviously taken hold. Worm tea for purchase is plentiful, as well as worm castings for the soil. Check your local nurseries or the Internet for many sources. Note: worm tea is not for human consumption!
• Use mulch to cut back the weeds and retain moisture in the soil. Mulch also protects the garden from pounding rain and disease organisms. Hay, straw and shredded leaves make great mulch.
GARDENING IN COLORADO Hard-packed clay soil, dry winds, dry weather and varying temperatures – they are all factors that impede the gardening process in Colorado and frustrate newcomers. To weed out (pun intended) the negatives, start by changing the soil texture. Adding just three to four inches of organic compost is enough to change the soil, according to the Colorado State University Cooperative Extension. Although it’s not necessary for composting, adding cow, llama or horse manure can create the perfect storm for gardening in Colorado; however, be careful of the cow manure. Some of it contains E coli bacteria. Also, if the cows are penned in, their urine collects on the manure; the urine is often laden with salt, which is detrimental to soil.
• There are dozens of organic commercial products to aid the garden. Seaweed (kelp) is one. The same goes for disease control. Know the ingredients!
• Never add sand to clay; it makes adobe soil.
• To block weeds, old newspapers work well, too. • Try raised beds, layering compost and manure. Use only very dry manure, prefer-

THE INGREDIENTS
Numero uno in the wall-to-wall carpet world, nylon is the defending champ due to its ability to just say “no” to stains, static electricity and wear. Nylon is a continuous filament or a yarn that starts out as chemical stew and is then extruded, stretched into fibers. Its nature reduces shedding and it absorbs dyes well.
Carpeting, no surprise, is indeed fabric. And, as in the fabric world, there are different ingredients that go into it, either natural or synthetic.
Olefin/polypropylene is great—if you happen to own a professional baseball team: it makes great indooroutdoor carpeting.
NATURAL FIBERS
Polyester is another staple yarn that wears well and won’t make you sniffle. It handles sun well but is a bit more difficult to clean than nylon or wool. It is not as resilient as those mentioned above and has a tendency to lie down on the job. In other words, it crushes underfoot and doesn’t bounce back as well as the others.
eed to replace that worn, stained carpet in your house. Carpeting has changed drastically over the past several years. In fact, the options can be a bit overwhelming. Here’s what you need to know.
Wool is top of the pops natural fabricwise, in terms of wearablity, holding dyes well—and it cleans up in a jiffy. Wool is a staple yarn (small strips spun together) so it can fuzz up a bit and pill (think of your favorite old wool sweater). It’s not hypoallergenic, which means you might sneeze a bit if allergic to wool.
SYNTHETIC FIBERS Synthetic fibers can be broken down into four categories: Acrylic is made to replicate wool but, fooled you, it’s not. Acrylic is also a staple yarn and can pill and fuzz. Acrylic is color fast and resists stains and sun bleaching. It won’t give you the hives as wool can, but is a bit harder to clean.

into one piece don’t require backing.
Padding is primarily meant to keep your carpeting from disintegrating on contact with air and comes in many type and thicknesses. Since padding will have an impact on how long your carpeting lasts, it pays to find the right kind for your carpeting.
Invented by the Berber of Seville (joke), Berber carpeting is made up of rows of fabric loops that can all be one length or different lengths. It’s tough stuff, too. Keep in mind that you will see the seaming in Berber more than in other styles. It also crushes underfoot and doesn’t rebound well from foot traffic.
Rebond is recycled urethane leftovers scrunched together. It’s available in your basic plethora of thicknesses and you should shop for it as you do for urethane foam. In other words: squeeze away.
Backing is generally made of either natural fiber such as jute, or polyester. Woven carpets that are made by weaving the top and backing together

BERBER
Urethane foam is the most common form of padding and comes in many densities. When shopping for it do the Mr. Whipple and squeeze the Charmin out of it to check how dense the product is. If it flattens easily between your fingers, there isn’t much there but air.
Carpeting is tufted, meaning its unceremoniously punched through something called primary backing. A secondary backing is then applied over this to make sure those little fabric buggers don’t escape out the back way.

PADDING
Felt padding is made of animal hair or jute (the glossy fiber of certain Asian plants—Corchorus olitorius and C. capsularis—for all you botanists). It is quite pricey and works well with woven carpets.

CUT-PILE Cut-pile is created by lopping the tops of carpet loops and creating two separate yarn tufts. There are a variety of cut-pile styles: Plush, Saxony, Velvet and Cut and Loop. Velvet is thick and cushy but it shades, or leaves footprints after having been walked on. Saxony fibers (twists of fiber) behave as unruly split ends and have to be heat set (ouch) like your perm. Plush is what is probably under your feet at the moment (a common flat cut) and Cut and Loop is just what it says. For more information, please visit www.FlooringandDesignCenter. com.

TAI YI FEELINGS
M
ost people have the ability to feel, but not all individuals allow themselves to feel. There can be many factors involved in the decision for a person to shut down the feeling state. Family structure or dynamic, childhood abuse and/or neglect, and society expectations are among some sources of suppressing feelings. In some family units, it is not acceptable to share feelings, aspirations, or desires. In some families, pathways have already been chosen for the child by the parent/s and it is expected that the child will grow into an adult and follow that pathway. Any desire on the child’s part to leave or avoid that pathway may then be shut down. This will also shut down the child’s creativity and feelings. The child may think that he or she does not have a voice, so why bother saying anything? In some people’s childhood, abuse was present. Whether it was mental, verbal, spiritual, physical, or sexual abuse does not matter. The energy of abuse within the family can, and many times will, shut down the child’s feelings. The child will choose to shut down his or her own feelings out of survival. The child thinks that it is simply easier to hide feelings than be punished for them. Unfortunately, in some abuse cases, the need to survive is stronger than the need to feel. However, as an adult, that can change. The child can grow into an adult who simply decides he or she wants to feel again and wants to learn to love. That can be a remarkable step for some.
Depending on location in our American society, some people are taught not to search feelings or ask too many questions. Some are taught to simply ‘do as told’ and meet one’s obligations. Whether that obligation expectation is raising a family, earning an income, or entering into a certain profession. Those individuals may feel like a fool for searching too much or feeling too much, so they may shut feelings down out of desiring acceptance and looking for approval.
FREE!
These are only a few examples of why one would shut down feelings and become numb and simply move through life in automatic motion. When ones desire to stop surviving and to start living, one of the first steps is to start feeling. When one begins to feel again, he or she can then start searching, asking questions, gaining clarity, and identifying additional steps to heal. One Tai Yi treatment for this is called Intelligence of Feel. Intelligence of Feel is a psychological treatment and is good for those who need and desire assistance in the energy of feeling, more deeply understanding those feelings, and the source of those feelings. Many attempt to separate or compartmentalize feelings. All this does is suppress, compress-which turns to anger, fear, and depression. This works with the mind to better understand feelings.

MOMENTS IN TIME THE HISTORY CHANNEL
• On May 14, 1796, Edward Jenner, an English country doctor, administers the world’s first vaccination as a preventive treatment for smallpox. Scientists following Jenner’s model developed new vaccines to fight diseases such as polio, whooping cough, measles and tetanus. • On May 10, 1877, President Rutherford B. Hayes has the White House’s first telephone installed in the mansion’s telegraph room. Hayes embraced the new technology, though he rarely received phone calls. The White House phone number was “1.” • On May 12, 1932, the body of aviation hero Charles Lindbergh’s baby is found, more than two months after he was kidnapped from his family’s Hopewell, N.J., mansion. Kidnapping was made a federal crime in the aftermath of this high-profile crime. • On May 11, 1947, the B.F. Goodrich Company of Akron, Ohio, announces it has developed a tubeless tire. While Goodrich awaited approval from the U.S. Patent
Office, the tubeless tires underwent highspeed road testing. Within three years, the tubeless tire came standard on most new automobiles. • On May 13, 1958, during a goodwill trip through Latin America, Vice President Richard Nixon’s car is attacked by an angry crowd and nearly overturned while traveling through Caracas, Venezuela. President Eisenhower dispatched U.S. troops to the area to rescue Nixon, and the vice president left Venezuela ahead of schedule. • On May 16, 1968, Donald E. Ballard, U.S. Navy Corpsman, is awarded the Medal of Honor for action in Quang Tri Province, Vietnam. While directing the removal of a wounded man, an enemy soldier tossed a grenade into the group. Ballard vaulted over the stretcher and pulled the grenade under his body. The grenade did not go off. Nevertheless, he received the Medal of Honor for his selfless act of courage. • On May 15, 1982, “Ebony And Ivory,” a duet by Paul McCartney and Stevie Wonder, takes the top spot in the Billboard Hot 100. This continued the pop-music trend of pairing successful duos, such as Barbra Streisand and Neil Diamond, and Diana Ross and Lionel Richie. (c) 2010 King Features Synd., Inc.

To create your budget online for free, check out: www.Mint.com and www.Wesabe.com Wesabe provides free online communities dedicated to financial makeovers, forums for advice, and excellent money management tips and tools. Budgets are actually pretty easy to put together and to maintain. All it takes is a little upfront organization and a few minutes every week for updates.
Cut up the Credit Cards
You may want to keep one line of credit (highest available balance and lowest interest rate with no annual fees) for emergencies. I seriously recommend that you freeze it in a bucket of ice, which will take several hours to melt, giving you time to think before spending.
Re-Allocate some of your Money
Are you drinking away $700 a year in morning lattes! I'm not saying you should deprive yourself of everything that makes you happy but to find things that make you happy that are less expensive or free. Make it a game to see how much extra money you can reallocate each month. Using 10% of your income to re-pay debt is a good place to start, but if you can afford more, it will get you out of debt all the faster. Also allocate any work bonuses, tax refunds, or other non-budgeted sources of
income to Debt Reduction.
How to Make the Payments

This is very important! Use all of your debt reduction allocation (extra money) to pay off one card at a time, not extra payments to each card. The goal is to eliminate credit cards one by one. All of the other credit cards should receive their minimum monthly payment. Pay all of your extra re-allocated money toward the account with the highest interest rate until it is paid off. If all your interest rates are about the same, funnel the extra money to the account with the lowest balance. Each time you pay off a line of credit, add that monthly payment amount to your debt reduction allocation, increasing your “extra money” with each paid off card. You will be surprised at how quickly this amount becomes a considerable sum, and how quickly your debts begin to disappear! Remember that any line of credit is a debt to eliminate. Once all credit cards have been paid off, move on to vehicles and house payments. By the time you pay off your car, you will have a considerable sum of extra money every month enabling you to really chip away at your monthly mortgage payments. You can cut a 30 year mortgage down to 12 to 15 years or even less!

t’s an astounding statistic: 80% of Americans suffer from back pain at some point and time in our lives. Although injury is a primary cause, many people needlessly suffer back pain due to poor posture and lack of flexibility due to inappropriate stretching.

PEACE IS JUST A THOUGHT AWAY By Cathy R. Deschaine, M.A. LC

he warning signs of Stroke have been put into a mnemonic device in order to help people remember the most important signs of stroke. Dr. Jill Taylor-Bolte, a brain scientist, experienced the same type of Stroke I had sixteen years ago. Both had been caused by an AVM- Arterial Venal Malformation, something a person is born with yet can lie dormant for many years. Below is the mnemonic: S = Speech, or problems with language T = Tingling, or numbness in your body R = Remember, or problems with thinking O = Off-balance, or problems with coordination K = Killer headache E = Eyes, or problems with vision Clearly, no one would chose to have a stroke anymore than one would chose cancer. What resulted for me was this idea that peace WAS literally just a thought away! At any given moment we can chose our state of mind and being in the world. We need not be slaves to our emotional reactions flitting from elation to rage in an instant. When my right brain is engaged, I respond to beauty, and creativity, and a euphoria I would never experience through the structured, linear, left brain. I appreciate music, the theatre, art exihibits, smells and fragrances of Spring! I am uninhibitted. Dancing to the music I hear, responding to Shakespeare with passion, and loving all the peace that surrounds me. I am content.
Bringing balance into our lives is the ultimate goal where we capitalize on the unique gifts of each of the hemisphere’s. Do you practice Yoga or meditate? How do you step to the Right of your left hemisphere’s brain chatter to live a life filled with more peace and tranquillity? Do you ever wonder why God won’t go away? The Franciscans attribute the palpable presence of God seems to be hard-wired into the human brain. [Andrew Newberg, Eugene d’Aquili, and Vince Rause’s Why God Won’t Go Away (2001)] I encourage you to take responsibility for your own person, your mindset and attitude. The energy you bring into a room is up to you! Overcoming adversity and societal expectations is truly the gift I want to use to inspire others. My gift to myself is chosing Peace in any given moment!

Posture can easily be corrected if you are keenly aware of how you sit, stand and sleep. Observe how often you slouch forward during routine activities. When you pick something up, observe if you are bending over at the waist rather than bending your knees. When seated, do you keep your shoulders rolled back, chest lifted, and neck lengthened, or do you sit in a bent over and twisted position? Good posture is designated by maintaining a neutral position of the spine: A neutral position is characterized by having a slight inward curve at the neck and low back, and a slight outward curve of the thoracic spine (upper back). Shoulders should remain back and away from the ears. Hips should remain squared. You should also avoid hyper-extending or “locking out” a joint, paying particular attention to the knees. If you sleep on your side, take care to keep your spin aligned. The proper pillow height will keep your neck in a neutral position and a pillow placed between your knees will keep your hips even. If you sleep on your back, placing a firm pillow under the legs (calf or knee height) can also help to keep your back in spinal alignment.
FLEXIBILITY Several methods can improve flexibility and increase joint range of motion, but nearly all of them require some
The same individual can be observed to use one or the other of two distinct approaches of mental strategies, much like to different people, depending on whether right or left hemisphere is in use. Left hemisphere thinking is “in the box”, compartmentalized, structured, and online. These unique gifts of the left brain help us with planning, carrying out and completing tasks. It likes closure on events, functions and even relationships. The right hemisphere is all about fun, friends, and frivolity. Enjoying fantasy appeals to it’s creative frame of mind. Life outside the box is what genius is made of after all.

form of stretching. There are generally three types of stretching that can be performed to improve flexibility: Static, Dynamic and PNF. Static stretching is very safe and can be performed actively or passively by combining slow movements with a hold, or pause, at peak tension. The ideal time to hold a stretch at peak tension is 10-30 seconds before returning to the starting phase. Target each area in the neck, shoulders, back, hips, legs and arms, setting a goal to stretch at least three main muscle groups per day. Dynamic stretching should only be performed as active stretching. These types of movements are built into every mode of exercise and physical activity. Consider a typical “warm-up” phase of exercise: Five to seven minutes of light, rhythmic movement prior to more vigorous work. Although static stretching is often combined in a warm-up phase, it is best to save deep stretches for the end of your workout. The goal is to get the muscles warmed up (blood flow increased to the working muscle) prior to any stretch. PNF involves both active and passive stretching designed to elicit a relaxation response from the neuromuscular system. When used, a PNF stretch is slightly forced and held beyond a normal level of comfort prior to being released from a tension phase. This form of stretching requires an experienced trainer and a cooperative client. You should not do this on your own.

SNIPPETZ® HEALTH AND WELLNESS glands and a sluggish thyroid gland are other causes for a lowering of blood sodium. Restoring the body’s sodium content is not too difficult. Tracking the reason why it dropped is. Has your friend’s mental function normalized now that his sodium level has returned to normal? If it has not, then his doctor has to look for explanations of his erratic behavior that have nothing to do with his sodium.
LOW SODIUM LEVEL CAUSES MANY SYMPTOMS DEAR DR. DONOHUE: What can you tell me about a low sodium level? My visiting friend (from England) was refused embarkation on his cruise because he was acting belligerent and confused. The ship’s doctor sent him to a hospital. He had scans, an EEG and numerous blood and urine tests. Everything was normal except he had low sodium. His insurance carrier sent a doctor from England to accompany him on a flight back to London. He has since seen his own doctor. His sodium level has risen. What happened to him? -- B.L. ANSWER: Sodium has many functions. It keeps body fluids at the right level. It maintains blood pressure. It’s essential for muscle contractions. It participates in generating the heartbeat. It carries a positive electric charge, so it balances the negatively charged body substances. A drop in blood sodium leads to fatigue, nausea and weakness. If the level dips farther, people become confused and dizzy. At very low levels, they could have a seizure and lapse into a coma. Your friend’s doctor has the task of finding out why your friend’s sodium level fell. In quite a few instances, it comes about from an inappropriate release of a body hormone called ADH, antidiuretic hormone. This hormone stops kidney urine production. The result is too much water in the body. The extra water dilutes sodium and produces a low reading. Liver diseases, troubles with the adrenal

*** DEAR DR. DONOHUE: I have been eating ice cream and cookies sweetened with Splenda for about four years, enjoying them very much and not experiencing any bad side effects. Then someone told me that Splenda is really bug poison and that it has made a lot of people sick, so I stopped using it. I have noticed no improvement, but I didn’t have anything wrong in the first place. I miss Splenda foods. What is your opinion? -- N.B. ANSWER: Splenda is not bug poison. It’s made from sugar. It’s a product that is 600 times sweeter than sugar. It is not absorbed, so it contributes no calories to those who eat it. It’s FDA-approved, and I trust the people at the Food and Drug Administration more than I trust your informant. There’s no reason for you not to use it.

here’s another study out comparing seniors with younger age groups. This time the research was on social dilemmas and conicts, and predicting how they would turn out -- in other words, wisdom. Researchers broke participants into three age groups: 25-39, 40-59 and 60-plus. Subjects then read fake newspaper articles about different types of interpersonal conict. Then they were asked questions like, “What do you think will happen next?â€? Later, the participants were called back for more tests. This time they read letters from an advice columnist and were asked questions such as, “What do you think should be done?â€? The results were broken into wisdomrelated categories, such as searching for compromise, recognizing change, taking into account the perspective of others and searching for a resolution. The researchers worked blind when they tabulated the results: They didn’t know the subject’s age group.
what we already knew, that we seniors are able to take information we’ve accumulated over a lifetime and make wise decisions, especially when it comes to conicts. We’re better able than our younger counterparts to compromise, admit it when we just don’t know something, take into consideration the viewpoints of others and make accurate predictions about how situations will turn out.
So, what do we do with our wisdom, now that it’s been acknowledged? A few ideas come to mind: • Act as mediators for divorcing couples or squabbling families. • Work with groups of schoolchildren, the younger the better, on understanding the viewpoint of others. • Work as advisers to young couples with unhealthy spending patterns, or in culture conict resolution in companies. While some of us already work in roles such as these, what we really need now is for more “wisdomâ€? positions to be developed.

DINING GUIDE
SWISS CHARD ROLLS
BEYOND CABBAGE ROLLS
A
garden bed full of hardy greens and heads of cabbage flecked with reds and purples from the stems to the leaves is a lovely sight. I enjoy using greens and cabbage leaves in unique combinations and unusual ways. A cabbage roll is common to the peasant cuisines of Europe and Western Asia. As those populations traveled to America, so did their recipes for cabbage rolls. The filling is traditionally ground meat -- usually beef, lamb or pork -- mixed with spices, rice, eggs, mushrooms or vegetables. Because the largest leaves are typically used, the smaller leaves are blanched, chopped and mixed in with the filling. The toppings or dressings that are served with cabbage rolls are as varied as the countries where the dish has been served. In Eastern Europe and America, a tomatobased sauce is served on top of the rolls. In Sweden, cabbage rolls are served with a sweet-yet-tart lingonberry jam. In the Middle East, small, cigar-sized cabbage rolls similar to dolmas are served with yogurt and an olive oil and lemon vinaigrette seasoned with mint and garlic. From time to time, I like to add a new element to the traditional cabbage-roll recipe. I was introduced to the many uses of the leaves and stems of the Brussels sprout plant by Carol Ann Sayles, owner of Boggy Creek Farms in Austin, Texas. She explained that the fibrous stems that are usually discarded when preparing greens should be used like celery in recipes. The stem transports the nutrients that feed the plant and are much more nutritious than celery. I’ve used Brussels sprout leaves as a substitute for cabbage leaves in my cabbage-roll recipe and used the sautŽed stems in the filling. If you can’t find Brussels sprout leaves, there are numerous types of greens that all work well in this recipe. Swiss chard, kale and collard greens are delicious substitutes for cabbage. Swiss Chard Rolls are a new variation on an old tradition. Try it with a ground lamb filling and don’t be afraid to take your traditional recipe beyond cabbage.

Preheat oven to 350 F. Fill a large pot with water and bring to boil. Wash greens thoroughly, remove any brown spots or blemishes, and wash the greens in cold water approximately 3 or 4 times to ensure they are clean and free of insects. Place the leaves in the boiling water. Remove from the heat, cover and let stand 15 minutes to soften the leaves. Drain well. Dice the stems into small pieces and set aside. 2. In a large pan over medium heat, sautŽ the onions and stem pieces, and 1 teaspoon of the salt, black pepper and garlic powder. Add the tomato paste, sugar, nutmeg and cayenne pepper and sautŽ for 5 minutes. Add rice, one can of tomato sauce and Pickapeppa or Worcestershire sauce, and simmer for 5 minutes. 3. Place 3 tablespoons of the meat mixture near the top (large end) of the blanched leaf. Place a heaping tablespoon of ricotta cheese on the meat mixture. Roll the leaf over the meat mixture once. Fold the two opposite ends of the leaf over to the center. Continue folding the leaf over and over until it makes a tight roll. Using a lightly greased 16-by-9-inch pan, place the roll, seam-side down, in the pan. 3. Combine the remaining can of the tomato sauce with the red wine vinegar and salsa. Pour mixture over the rolls. Cover with foil paper and bake for 1 hour. Remove foil and sprinkle rolls with Parmesan cheese. Serve immediately. NELLIE’S CUSTARD BREAD PUDDING
his recipe was a winner in our Mother’s Day Cooking contest.

finished off right before service. I prefer mine on the rare side so I just sear it quickly and finish it in the oven.
8 oz Tenderloin Blue Cheese Crumbles 5”x5” Puff Pastry Sheet Egg Water
1. Preheat oven to 4000F. 2. Sear the tenderloin on a grill (inside or out). 3. Place the blue cheese crumbles on top then wrap with the pastry sheet. 4. Mix the egg and water and apply lightly to the pastry. 5. Bake in the oven until golden, about 20 minutes.
W
hen searing the tenderloin you should cook it to rare or medium rare so the steak will come out medium rare to medium after baking it in the oven. Everything can be done earlier in the day or the night before and then
Of course the blue cheese can be replaced with other cheese, grilled mushrooms, crabmeat, asparagus, green chilies or a combination of things. You can also leave it plain. You can then top it off with a nice sauce such as a demi-glase, which is a rich brown sauce, some hollandaise or béarnaise sauce or a rich cream sauce. Any will do quite nicely. If you want to add a little more flavor you can add some type of seasoning such as a blackening seasoning to the steak before searing. That would be great with a green chili cream sauce and the blue cheese. Yum!!!

DOG LIFE VESTS, SAFETY BELTS
S
everal years ago, a frightening incident inspired automotive safety specialist Christina Selter to found BarkBuckleUP, a program that promotes pet safety. “We had a near-accident with our dogs in the car. (We were) only traveling about 2 mph from a stop sign, when a car ran a red light and our little Betty fell off the seat. (She) wasn’t hurt, but didn’t want to be on the seat or in the car. It took some time to get her confident again.” Selter, who has an SAE (Society of Automotive Engineers) certification, created BarkBuckleUP to remind owners to restrain their pets properly in the car, using safety belts specially designed for pets. She travels the U.S. throughout the year, promoting the message and working with police and fire departments to support the safety program. BarkBuckleUP also focuses on other safe-

ty issues, and Selter wants pet owners to stay aware. May is National Water Safety Month, and she reminds owners to keep a close eye on their pets while playing near or in the water. While explaining that most dogs love water, she warns, “Dogs get tired just like us. They need to take breaks.” Dogs also should wear a pet life vest when on the water with owners -- in a boat or other watercraft, for example. To keep dogs healthy, wash them off after they’ve finished their swim. “A few years ago in California at a pet event, there was a huge breakout of hot spots (on dogs) after going into the ocean,” Selter says. “Clean their fur thoroughly and their feet. Clean them off every time.” The BarkBuckleUP website (www.BarkBuckleUP.com) features safety products for pets, including restraints for dogs and for pet carriers, life vests, first-aid kits, and more.

The DVD includes all five seasons of the show, plus the pilot episode and both made-for-TV movies. Special features include interviews with the cast and crew, two Mystik Spiral music videos, Daria Day intros and a Top Ten Video Countdown hosted by Daria and Jane.
New DVD Releases for Week of May 10, 2010 PICKS OF THE WEEK “Daria: The Complete Animated Series” (Unrated) -- “Smart and funny” aren’t two adjectives you normally associate with MTV programming, but “Daria” is one of the few exceptions. Debuting in 1997 as a spin-off of the popular “Beavis & Butt-Head,” “Daria” centered on the life of sardonic teenager Daria Morgendorffer, as she and her bestie Jane skewer pop culture
“M” (The Criterion Collection) Blu-ray (Unrated) -- Iconic director Fritz Lang’s chilling story of the hunt for a child murderer finally gets the high-def, Criterion Collection treatment. Peter Lorre stars as “M,” the child-killer who is so expert at eluding the police that the criminal underworld takes it upon themselves to hunt down the psychotic monster. Two versions of the film are included in this edition: The original German production and the long-lost English-language version. Both have been restored using a hi-def digital transfer process. Among the tons of special features are: audio commentary by German film schol-
ars Anton Kaes and Eric Rentschler, a one-hour conversation with Fritz Lang by “Exorcist” author William Friedkin, a commemorative booklet and a 1963 interview with Lang. “Toy Story”/”Toy Story 2” (Special Editions) (Rated G) -- Coinciding with this year’s release of “Toy Story 3,” Disney/Pixar are re-releasing the first two classic adventures featuring Buzz Lightyear, Woody, Slinky Dog, Rex and all the rest. There are no new special features on these editions (except for some “Toy Story 3” marketing stuff), so if you already own the films, there’s no need to rush out and grab these. I have a copy of the now-discontinued threedisc “Ultimate Toybox” DVD set, which includes both films and a third disc packed with special features. What I’m hoping is that Disney will do a similar release for the holidays that will include all three films and perhaps a fourth disc of features. So yeah, wait a while. I’ll bet that’s what’ll happen.
18
DOG OF THE WEEK “Legion” (Rated R) -- If you were suckered by the trailers for “Legion,” you probably went in thinking it was going to be a tongue-in-cheek horror comedy, a la “Drag Me To Hell.” Sadly, it wasn’t. Instead, “Legion” is a mindless, CGI poopfest about Angels and Demons slugging it out at a remote diner because some pregnant chick might be carrying the messiah. Knockknock. Who’s there? Armageddon. Armageddon who? Armageddon outta here and goin’ to watch a better movie.

J
oin the Palmer Lake Historical Society for a fascinating evening and learn about the history of the Manitou and Pike’s Peak Railway. Author and photographer Claude Wiatrowski will explore the history of this fascinating 9-mile wonder through his illustrated presentation, “ All Aboard for Pikes Peak.” Claude has been a resident of Colorado since 1975 and has photographed thousands of historic places and artifacts. He is the author of “Historic Colorado,” “Railroads of Colorado,” “Railroads Across North America” and “All Aboard for America’s Mountain”. The Pike’s Peak Cog Railway is the highest cog railroad in the world and the third highest railway of any kind. The railway is located in Manitou Springs and was founded in 1889 by Zalmon G. Simmons, inventor and founder of the Simmons Beautyrest Mattress Company. The railway provided limited service to the
Halfway House Hotel in 1890. Trains first reached the summit of America’s Mountain in 1891. A number of steam locomotives were built for the line by the Baldwin Locomotive Works - all rack-only locomotives with steeply inclined boilers to keep them level on the average 16% grades. Operating steam locomotives on such a line was back-breaking work and expensive, so when more modern forms of traction became available, the railway was eager to modernize. A gasoline-powered railcar, believed to be the first rack railcar in the world, was constructed in 1938. Later railcars ran on diesel fuel, while present day railcars on the Cog Railway operate on biodiesel fuel. The Palmer Lake Historical Society is a non-profit 501(c)3 organization located in Palmer Lake, Colorado. This program is free to the public. Refreshments will be served. The festival and APPR 2010 are collaborating in response to findings from the 2009 Quality of Life Indicators Report, Operation 60ThirtyFive, and Dream City 2020. “Thankfully, there are many people in our community that have been dreaming and scheming and counting and analyzing. Their findings indicate that we need to collaborate more, build on our assets, and continue to attract more talent,” said Deborah Thornton, Executive Director, Imagination Celebration. “A group of creative people from the business, education, technology, media and the arts communities in our region are posing the question, “what if?” We invite residents and businesses to submit proposals on how they will participate in a day showcasing creativity and innovation in the Pikes Peak region and engaging residents in a day of “wows.” All Pikes Peak Reads 2010 will explore human innovation in both an historical and very current sense. “What is the catalyst for periods of intense innovation and growth? It is a question that Pikes Peak Library District and its partners will seek to answer in this year’s read,” said Dee Vazquez, Community Engagement and Outreach Officer at PPLD. Dr. Michael Larson, El Pomar Endowed Chair of Engineering and Innovation, will be present with community leaders dedicated to innovation and community development. Larson will make opening remarks. Innovative exhibits will also be on display.

n life, you can’t avoid all risks — and you shouldn’t try, because endeavors that carry risk also bring the prospect of reward. And it’s certainly the same in the investment world. So instead of trying to invest risk-free, which is impossible, learn to recognize the different types of investment risk while becoming familiar with your own risk tolerance. To start with, let’s quickly look at some of the most common forms of investment risk: • Risk of losing principal — This is the type of risk most commonly associated with investing. You could lose some, or even all, of your principal if you sell an investment, such as a stock, whose value has dropped lower than the purchase price. You can’t eliminate the risk of losing principal, but you may be able to reduce it by buying quality stocks and holding them long enough to overcome short-term market drops. • Ination risk — With an investment that pays a fixed rate of return, such as a certificate of deposit (CD), you run the risk of not keeping up with ination, which means you could lose purchasing power over time. Consequently, it’s a good idea not to “overloadâ€? on these types of investments. • Interest-rate risk — When you own a bond, your investment is somewhat at the mercy of changing market interest rates. For example, if you buy a bond that pays four percent interest, and market rates rise so that
• Concentration risk — This type of risk occurs when you have too much of your money concentrated in one area, such as in a particular stock or in one industry. If a downturn strikes that stock or industry, your portfolio could take a big hit. To combat this type of risk, you need to diversify your holdings among stocks, bonds, government securities and other investments. While diversification, by itself, cannot guarantee a profit or protect against a loss, it can help reduce the effect of volatility. In addition to understanding the above types of risk, you also need to be familiar with your own risk tolerance and how it affects your investment strategy. If you are constantly worried about “the market,â€? you’ve probably got too many investments that are at risk of losing principal. At the other end of the spectrum, if you’re always concerned that your portfolio won’t grow enough to generate the income you’ll eventually need for retirement, you may be investing too conservatively — and, as a result, you’re inviting ination risk. Ultimately, you need to match your own risk tolerance with a strategy that allows you to achieve your goals. This will require self-awareness, patience, discipline — and, at times, a willingness to move outside your own “comfort zone.â€? By learning to balance and manage risk, you can ultimately put yourself in a position to pursue your investment strategy. THE LAW ACCORDING TO STEVENS by Lisa Welch Stevens, Attorney at Law P.C.
MEDIATION: WE HAVE WAYS OF MAKING YOU TALK!
B
efore the court will allow you to actually go to trial, all parties are REQUIRED to participate in MANDATORY ALTERNATIVE DISPUTE RESOLUTION (“ADR”), usually mediation. This is required even if there is absolutely no chance of settlement, and you have to pay for the privilege of doing it. As the plaintiff it is up to you to arrange for and schedule mediation (unless the defendant is represented by an attorney, in which case the attorney will do this). The cheapest way to mediate is to use the services of the Office of Dispute Resolution in the basement of the courthouse. You can also use any private mediator; just look them up online or in the telephone book. They charge by the hour, and the cost is equally divided between the plaintiff and the defendant. Once you and the defendant have agreed upon a mediator, and mutually cleared a date and
However, there’s a new book out that talks about strategy, and it’s one you can trust: “Debt-Free Forever (Take Control of Your Money and Your Life)” by Gail Vaz-Oxlade (Collins, $14.95).
STRAIGHT TALK ABOUT DEBT
A
nytime somebody talks about having a “strategy” to get out of debt, it pays to be leery. There are scams galore, including those that promise (for a fee) to take your payments and make arrangements with lenders to accept a smaller amount each month. (Unless you send the check yourself, you really don’t know where it’s going.)
There’s a lot of no-nonsense tough love in VazOxlade’s plans, and there should be if a strategy to reduce debt is going to succeed. After all, the average consumer has $16,000 in credit-card debt. But under the humor (yes, there’s that, too) is a sound plan. She tells you upfront that it’s going to be hard work, right in the first line of Chapter One, then moves quickly into the all-important first step: Find out where your money’s going (spreadsheets are provided in the book). Step two, facing your debt, is where Vaz-Oxlade takes things beyond the typical “get out of debt” book. Not only are debts written down and categorized, they’re critiqued and analyzed for what they really cost. There is plenty of hands-on help. Focus on longterm goals. Decide what you really want, because with debt control, it matters. Write down your core values, prioritize and set a goal. Find friends who are compatible with that goal (spending less to have fun). Swap bad habits for good ones.

time with him (the mediator will provide the location, whether at a private office or at the courthouse), the mediator will send you each a letter confirming the date, time and location, reciting his hourly rates, setting forth terms of payment, and including, in most cases, a consent form to sign and return. Before mediation you should (and may be required to) draft and send to the mediator a Confidential Settlement Statement. In this document, you list and describe the parties, list and describe the claims and defenses, and describe the strength and weaknesses of your case. You also set forth a brief legal argument for why you will or should win. You can include copies of any evidence you will use. At mediation, the plaintiff and the defendant (together with their attorneys, if any) are usually kept in separate rooms, and the mediator goes back and forth between the two rooms. Usually, the mediator talks very briefly to each side about his procedure (this may take place with all parties together, initially, in one room). The mediator then usually talks to the plaintiff first, then the defendant. He asks each side what they want, and what they are willing to settle for. He discusses with each side the weaknesses of their case, and probable outcomes at trial. He will not disclose any information you give him to the other party without your specific agreement. He tries to move each side to some sort of middle ground – an imperfect settlement can be preferable to the uncertainties as to a trial outcome, and can avoid the expense and hassle of trial.
The Law According to Stevens Continued on Page 23...
“Debt-Free Forever” explains how to get a handle on disappearing money (what happens when the pocket monster eats all the change when you break a $20), 401(k) plans, insurance, credit cards and more. There are worksheets, guidelines, instructions on how to make a budget -everything you need to become debt free, except for a pencil, piece of paper and a calculator. Vaz-Oxlade has a television show called “Til Debt Do Us Part” (about couples in debt) on CNBC and has written 11 books on finances. As she says on her blog: “Money is only a tool. You can use it to your advantage or you can misuse it to your detriment. You decide.”

THE LAW ACCORDING TO STEVENS CONTINUED FROM PAGE 22
Mediators can be very good at coming up with solutions to the dispute that the parties or their attorneys may not have thought of, including solutions a court would not have power to order, but to which the parties may agree.
If no agreement is reached, the plaintiff drafts and files with the court, serving a copy on all other parties, a Certificate of Completion of ADR, stating that mediation was held, identifying the mediator and the location of the mediation, reciting the date and time, as well as duration of the mediation, and stating who was present. The certificate also states whether the mediation was successful.

If an agreement is reached, the mediator will draft a very brief memorandum of understanding which the parties will sign; the parties will later draft a stipulated settlement agreement setting for the terms of settlement in detail. After the settlement agreement is executed, the plaintiff drafts a stipulated motion to dismiss the lawsuit with prejudice, which is signed by all parties and filed with the court. The court then vacates the scheduled trial date.

ESTATE PLANNING Important information on important issues Monument, CO: Is estate planning important? Consider the fact that too many times, we have experienced a tragic loss within the family, where the fate of the family estate has been left up to the discretion of a judge, or an executor of an estate who does not know the applicable laws or assets within the estate. Moreover, there are many complicated medical matters which require a personal representative or executor to have the appropriate level of legal authority to act upon one’s medical desires. Finally, there are changes to the tax code which will cause estate taxes to go back to their pre2001 levels: any estates over $1M will be taxed at 55% starting 1 Jan 2011 under current law. Estates include houses, personal property, life insurance, retirement plans, etc, so this $1M level is easy to attain. The significance of this cannot be overstated as it is estimated that $41-$136 trillion will be transferred from the older generation to the younger generation between 19982052.
