ho doesn’t love a doughnut? Whether a purist who believes that the only real doughnut is made of raised dough and deep fried or one who thinks anything even resembling the original is just as good – cake or jelly style, baked or fried – doughnuts are inarguably pure and simple comfort food. They’ve been around in some form or another for centuries. Archeologists in southwestern parts of the U.S. have actually found petrified fried cakes with holes in the center. Native Americans apparently knew the value of these little gut bombs long before they became a popular delicacy.

WHERE THE MODERN DOUGHNUT AND ITS HOLE BEGAN One of the more common theories is that the doughnut hit the shores of North America with the Dutch settlers and were called olykoek, a word that meant “oil cake.” The Dutch were very generous with their calories as they also introduced cobblers, cream and apple pies and cookies to the North Americans. A common theory is that the doughnut hole came about when an American sea captain, Hanson Gregory, became disenchanted with the raw center of doughnuts that his mother made for him to take on one of his trips in 1847. Rumor has it that he grabbed a tin pepper box and used it to cut a hole in the middle of the doughnut. Another story is that he needed a place to set his doughnut while steering the ship and popped it onto the spoke of the steering wheel. After that, the cook was ordered to make the doughnuts with a hole in the center. Yet another story purports that Gregory simply did not like the nuts that his mother put in the center of the doughnut (dough…nut) and punched them out.

In 1872, John Blondell invented and patented the doughnut cutter and by the 1930s, huge quantities could be made by new doughnut-making machines. Not long after that, in the 1940’s and 1950’s, Dunkin’ Donuts, Krispy Kreme and Canada’s hockey player Tim Horton were mass producing doughnuts all over North America.

REGARDING THAT HOLE • Some say that you can judge the condition of the economy by the size of the doughnut hole – the bigger the hole,

the tougher it is out there. • Dunkin’ Donuts named their holes “Munchkins.” • Tim Hortons’ named his “Timbits.”

DOUGHNUT OR DONUT? Both are correct and are interchangeably used. However, doughnut is the original spelling and thought to be first recorded in a short story in 1808 that talked about “fire-cakes and dough-nuts.” In Washington Irving’s 1809 “History of New York,” he describes “balls of sweetened dough, fried in hog’s fat, and called doughnuts, or olykoeks.” The shorter form, donut, started showing up in 1900 when George W. Peck used it in “Bad Boy and His Pa” and in a 1929 “Los Angeles Times” article by Bailey Millard who complained about American’s spelling skills: “can’t swallow the ‘wel-dun donut’ nor the ever so ‘gud bred.’” The “New York Times” also used the donut spelling in 1939 when covering the World’s Fair. The Mayflower Donut Corporation, no longer in business, was the first known commercial enterprise to use the donut version. Dunkin’ Donuts followed in 1950.

OH SO SIMPLE Raised doughnuts have few ingredients – flour, sugar, milk, eggs, yeast, butter and salt. After mixing the ingredients, kneading the dough and allowing it to rise, the dough can be rolled out and cut with a doughnut cutter. Or, a doughnut can be formed by hand with a piece of dough, stretched

On a diet? You can have baked doughnuts. They are lighter in calories because they are not fried in oil, and they have a different texture and taste. Doesn’t sound much like a doughnut, though.

NOT FOR THE LITE CROWD Those raised delights have about 25 percent oil while the cake version weighs in at 20 percent fat. Cake doughnuts are surprising lower in calories because they cook in only about 90 seconds, so they absorb less oil than their yeasty cousins. TAI YI DENIAL OF LOVE

D

enial of love is quite common, not normal, but common. Many individuals have a perception of love that is off, incorrect, sideways, or bent out of shape. This can occur for many different reasons. One example can be, that perhaps, as one was growing up, he or she did not bond with one or either of the parents. Perhaps one parent left or simply did not know how to bond. Sometimes, both parents may have left or did not know how to bond. We learn how to bond by bonding with our parents. Even in the animal kingdom, many animals have the basic need of bonding with the mother. If the mother is not available for whatever reason, that young animal can bond with another animal that has replaced his or her mother. As humans, we have the same basic need to bond. If that need to bond has not been met, by one or both of the parents, pain is the result unless the child learns to bond with another person. The difficulty that emerges in individuals who have not bonded with their parent or parents is that they begin pushing away love. They may develop the false belief or thought form that they do not deserve love and then anger develops. That anger creates a wall that pushes and pushes. Sometimes this is done consciously and sometimes unconsciously. Many times, this can be seen in children or adolescents who are labeled “troubled” or “out of control”. In this example of not bonding, a child can grow into an adult who misunder-

stands love. He or she may assume the false belief that love equates pain. That person may then act through the false belief by saying he or she wants love or a loving relationship, and then pushes away opportunities to experience love. That person may jump from one relationship to the next and may even think he or she is in-love in several of the relationships. Then, that person may realize he or she was simply in-love with the idea of love, but did not really experience it. Within the individual, there are usually attempts to push away others who offer love, because the recognition is not there in regards to what love looks like or feels like. The attempt from another to offer love can trigger the belief that love is painful and then that person runs.

A Tai Yi treatment for this is called Lost Love. Lost Love is for people who do not understand love and as a result, they push away love and misinterpret “taking care of someone” for love. People want to hold onto external experiences as a form of love. They have misinterpreted what love is. This is a good exercise for ones who want to feel and understand their ability to love and want to understand the difference between “taking care of someone” and love. This is good for those who place obstacles in their pathway, and they run in the opposite direction of what they say they want. This treatment brings awareness and assists the person in understanding why he or she makes the same old painful choices in regards to love.

• On June 9, 1772, the British vessel Gaspee runs aground off the coast of Rhode Island while pursuing the Hanna, an American smuggling ship. That evening, John Brown, an American merchant angered by high British taxes on his goods, rowed out to the Gaspee with a number of other colonists and set the ship afire. When British officials attempted to prosecute the colonists involved in the “Gaspee Affair,” they found no Americans willing to testify against their countrymen. • On June 13, 1905, pitcher Christy Matthewson of the New York Giants throws the second no-hitter of his career to lead his Giants to a 1-0 win over the powerful Chicago Cubs. That year Matthewson won 31 games to just nine lost. • On June 12, 1920, Man O’ War wins the 52nd Belmont Stakes. His only career loss came in 1919 when his back was to the starting line at the beginning of one race. The audience called Williams out for six encores and had to be implored not to call him out for more in order to allow the rest of the show to go on. • On June 8, 1968, James Earl Ray, an escaped American convict, is arrested in London, England, and charged with the assassination of civil-rights leader Martin Luther King, Jr. Ray claimed he was innocent of King’s assassination and had been set up as a patsy by a mysterious man named “Raoul.” • On June 7, 1976, an article called “The Tribal Rites of the New Saturday Night,” by journalist Nik Cohn, is published in New York magazine. The article detailed the struggles and dreams of an ItalianAmerican disco dancer in Brooklyn. The blockbuster movie “Saturday Night Fever” was based on the article. Low-Cost Remodeling Projects 1. Add or Replace Tile

Replacing Tile is an inexpensive project, and will make your Kitchen and Bath look clean and fresh! You can find many big box stores that offer 12" x 12" tiles for only $1 or $2 each. Save even more by purchasing the grout, spacers and adhesive mix and do it yourself!

2. Install Granite Tile vs Slab Granite

Everybody is hot for granite kitchen countertops, but that can be a $5,000 upgrade. Instead, install 12inch granite tiles for about $300 in materials and get very high impact for little money.

6. Replace Light Fixtures

A quick updated look can easily be attained by replacing overhead light fixtures in the foyer, bathrooms and kitchens. If the kitchen has track lighting, replace it with recessed canned lights on a dimmer switch to add ambience. Also, install pendant lights over a kitchen island or peninsula.

3. Freshen up a Bathroom

Update your bathrooms with a new medicine cabinet for $100 to $150, light fixtures for about $100, a faucet for $50 to $75, and a vanity for $200 to $300. You can also bleach or regrout existing tile to make it look brand new. Installing glass shower doors adds elegance. Also, replacing the bathroom door with a French door for $250 can make all the difference.

Seriously -- they learn, pretty early on, what “buttons” to push to get you to give them food or treats, let them out, pet them or stop typing a pet column and pay attention to him or her. But you can have the last laugh and train your cat to respond to commands or signals. Remember that cats are very different than dogs in their approach to the world and in how they respond. Gets along well with other dogs and doesn’t seem to mind the company of cats. She is a very sweet puppy! Her entire face is black and the rest of her coloring is a beautiful dark golden brown with some black. Her coloring is very unusual.

If you’re training a cat to specifically do something on command, you need to use positive reinforcement almost exclusively. This is rewarding the cat with a treat, a stroke or a kind word immediately after it responds to the movement you’re trying to teach. The cat needs to develop a positive association with the activity.

This sweet little kitty is about 10 weeks old and her name is Cinder. Cinder came to SAINT a very shy little girl. She is now more outgoing. Cinder will need a loving family that wants her to be an inside cat. Now is the time to start introducing kittens to the many different things life has to offer. At this age she is very open to new things. As a kitten matures the more they really don’t care about being introduced to new things.

Keep training sessions short and somewhat spontaneous. Most cats don’t last more than five or 10 minutes per session. And don’t get discouraged if your cat doesn’t “get” it after days or weeks. Instead, be patient and look for new ways to make the connection with your cat.

Use red, white and blue potatoes to make these delicious kabobs. You also might substitute your favorite protein for the chicken sausage or try an all-vegetarian version of this dish. Lemon-Herb Drizzle: 1/4 cup extra virgin olive oil 3 cloves garlic, minced 2 tablespoons chopped fresh herbs (such as basil, rosemary, marjoram and sage) 1/2 teaspoon sea salt Juice of 1 fresh lemon Freshly ground pepper to taste 12 to 16 wooden or metal skewers POTATO KABOBS: 1 pound (total) red, white and blue potatoes, scrubbed 1 (12-ounce) package pre-cooked chicken sausage, sliced 1/4-inch thick on the diagonal 2 ears fresh corn, cut into 1-inch pieces 1 zucchini, sliced 1/4-inch thick on the diagonal 1. If using wooden skewers, soak them in a pan of cold water for 30 minutes to prevent them from burning. Heat olive oil in a small saucepan until very hot; remove from heat and stir in garlic. Let cool, then stir in herbs, salt, lemon juice and pepper; set aside. Place potatoes in a medium-size microwave-safe bowl and cover with a lid or plastic wrap. (Note: If using plastic wrap, make sure wrap is not touching any ingredients, and poke one small hole in cover to vent.) 2. Microwave on high for 10 to 12 minutes or until the potatoes are tender (cooking time may vary depending on microwave). Use oven mitts to carefully remove the potatoes from the microwave. 3. When cool enough to handle, cut the potatoes into large chunks. Thread potatoes, sausage and vegetables onto skewers. Wrap the exposed ends of the skewers with foil to prevent them from burning. Grill over medium-high heat for about 10 minutes, turning frequently and brushing with a little of the herb mixture during the last few minutes of cooking. Remove from grill, discard the foil and place the skewers on a platter; drizzle with remaining herb mixture. I used regular ham in this recipe but traditionally you should use mortadella ham. Capicolla will also work. I couldn’t find either here in Monument. The Muffaletta should always be served at room temperature. Never toasted. This is really good after it has sat a little while because the juices soak into the bread. Because of this, the Muffaletta is great for parties. If you wanted to make this sandwich vegetarian, try grilling eggplant, mushrooms, zucchini, and/or yellow squash. The olive salad is what makes the sandwich. I found several recipes for it. Some had chopped carrots, chopped cauliflower, red onions and/or anchovies.

hat’s right, I’m a GRIT (girl raised in the south) from S.C. I grew up next to my mama’s knee watching and learning to cook. I get my love of cookbooks from her also. Like her, I read a cookbook from cover to cover like a novel. I currently have over 200 cookbooks in my stash dating from the early 1900’s. If you want to know if you are a true southern cook – here’s a little test……… 1. Do you have a cast iron skillet that’s been passed down from generation to generation? 2. Do you have butter versus margarine in your refrigerator? 3. Do you have real grits versus quick cooking grits in your pantry? 4. Do you have a slab of pork fat in your refrigerator? 5. About number 10, I’ve tried unsuccessfully to get green peanuts in Colorado, but because of our short growing season, they are no where to be found. Luckily, I’ve found a place in S.C. that will ship canned boiled peanuts (not a bad substitute). I have them shipped in by the case. My husband has not acquired a taste for them but my two sons and my grandsons (I’m happy to say) love them. Speaking of my husband, he dislikes them so much, he will not kiss me for a week after I’ve eaten a can of them.

Crumble up cornbread and white bread and pour broth over it. Let stand until softened. Add the remaining ingredients; pour into pan and bake @ 400 degrees until brown.

The recipe I would like to share with you is one of my mom’s best ever. Mom would start saving any leftover cornbread in November. She would freeze it so that when it came time to make the dressing, she already had the cornbread made. With Christmas nearly here, you have to try this for an authentic southern dinner. MARTHA’S MOM’S SOUTHERN CORNBREAD DRESSING 1 Pone cornbread (recipe follows) 2 Stalks Celery (chopped fine) 1 Small Onion (chopped) 3 Slices White Bread Sage to Taste Broth (from boiling the turkey pieces – neck,

The secret to this recipe is to use enough broth to make the dressing soft. MARTHA’S MOM’S CORNBREAD ½ Cup self rising corn meal ½ Cup self rising flour 1 Egg ½ Tbs sugar ½ Cup milk 2 Tbs shortening melted If you don’t have self rising flour, add ¾ tsp of baking powder and 1/8 tsp salt to regular flour. Mix all the ingredients together except shortening; when combined, add the melted shortening. Bake @ 400 degrees until brown. Even better, if you have a cast iron skillet, preheat the skillet with a tablespoon of butter and pour the cornbread mixture directly into the skillet and bake as directed above. New DVD Releases for Week of June 7, 2010 PICKS OF THE WEEK “Shutter Island” (R) -- Set in the 1950s, Leonardo DiCaprio stars as Federal Marshal Teddy Daniels. He and his partner (Mark Ruffalo) are investigating the mysterious escape of an inmate from an asylum for the criminally insane, a facility that’s more escape-proof than Alcatraz. Daniels is a man filled with inner torment: He watched while his wife died tragically in a fire, and during

the war he was present at the liberation of the Dachau concentration camp. The memories plague him in the form of hellish hallucinations, hampering his ability to investigate the escape -- which appears to be a conspiracy involving the psychologists on staff -- and the possibility that the inmate may have been the victim of foul play. As the investigation and the hallucinations intensify, Daniels (and the audience) discovers there’s more than meets the eye about Shutter Island. The great thing about Martin Scorsese is that you go to his films expecting to see a masterpiece of cinema and more often than not, that’s what you get. But even if the film isn’t a masterpiece like “Taxi Driver,” “Raging Bull” or “Goodfellas,” you know that Scorsese’s second-tier movies (“Kundun,” “The Aviator”) are still 10 times better than most filmmakers’ best works. This is the case with “Shutter Island.” It’s not up to the standards of his greatest films, but it’s a pretty good psychological thriller.

“The A-Team: The Complete Series” (Unrated) -- To cash in on the release of this summer’s “A-Team” motion picture, the complete series is being released on DVD. For about a hundred and forty bucks you can get the whole shebang -- all five seasons on 25 discs -- packaged in the shape of the ATeam’s black van (with Mr. T at the wheel). I guess if you’re a diehard fan of the show who likes kitschy packaging, you won’t mind ponying up $140; but considering that only the first two seasons were any good, I seriously pity the fool who falls for this crass, gimmicky cashgrab. “Caddyshack” (R) -- This movie’s been out on DVD for about 10 years, but I believe this is the first time it’s gotten a high-def Blu Ray release. I don’t know about you, but if I’m gonna watch a lowbrow comedy about golf featuring a stuffed gopher puppet, it better be at 1080p resolution.

ot all households have two wage earners. By choice or circumstance, either you or your spouse may be out of the work force for an extended period of time. But that doesn’t mean you can’t make progress toward your joint ďŹ nancial goals, such as a comfortable retirement. It does mean, however, that you need to carefully review your situation and make the right financial moves. For starters, consider one of the best retirement-savings vehicles you have available: an Individual Retirement Account, or IRA. Even if your spouse isn’t earning income, he or she can open a “spousal IRAâ€? to which you, as the income-earning spouse, can contribute. Depending on your income level, you can designate a spousal IRA as either a traditional IRA, which grows on a tax-advantaged basis, or a Roth IRA, which can grow tax-free, provided your spouse has held the account for at least five years and is at least age 59½ before taking distributions. And a spousal IRA has the same contribution limits — $5,000 in 2010, or $6,000 if your spouse is 50 or older — as a traditional or Roth IRA. his may sound like heresy coming from a lawyer, but a lawsuit in the courts is not the only and perhaps not even the best way to resolve a legal dispute you are having. The courts permit, and even encourage, what is referred to as ADR or Alternative Dispute Resolution. ADR can be faster, cheaper, and more effective at resolving your dispute. And attorneys – together with their high fees and costs - may or may not necessarily be involved. ADR runs the gamut from formal to informal, expensive to inexpensive. While certain forms of ADR are very common, ADR really is limited only by the imagination and agreement of the parties involved. Some forms of ADR are engaged in as part of the litigation process before the law courts; some forms of ADR are engaged in in lieu of the litigation process. One of the most common forms of ADR is arbitration. Arbitration may be either: (1) mandatory (i.e., required under the terms of a pre-existing contract between the disputants); (2) optional (again, under

ith more and more people falling behind on bills, it makes sense that the number of debt settlement companies is on the rise. Unfortunately, the incidence of consumer fraud from those settlements also is increasing. The Government Accountability Office did an investigation of debt settlement companies and reported that: • Consumers are being told to send payments to the debt settlement company instead of the credit-card company -- even on accounts that are still current. This destroys the consumer’s credit rating even more than it already is.

Arbitration is, in effect, a private trial. Instead of a judge or jury, an individual or panel of arbitrators will decide the dispute. The disputants may or may not be represented by attorneys, and the arbitrator(s) may or may not be an attorney, a judge (retired or active), an “expert” in the subject matter of the dispute, etc. The arbitration hearing may or may not be structured like a trial; however, usually the rules of evidence and the rules of civil procedure do not apply. This makes things easier (all evidence comes in), but also results in the loss of the protections of those rules of evidence and procedure. Each side states its case and presents witnesses and evidence; the arbitrator then makes a ruling as to the facts, the application of the law to the facts, and the results of that application of law. Arbitration may or may not be binding. If it is binding, the parties must abide by the decision of the arbitrator(s). If it is not binding, any party may decide to proceed with litigation before the law courts and ignore the decision. Even if arbitration is binding, it may or may not be appealable. If it is appealable, and a party is not happy with the decision, that party can appeal the decision of the arbitrator to an appellate court. In an appeal, the “case” is not retried; rather, the party unhappy with the decision is asking the appellate court to rule, as a matter of law (not fact) that the arbitrator(s) incorrectly applied the law to the facts of the case. The facts as found to be true by the arbitrator(s) are not reviewed.

• Upfront fees are required, and most of that money doesn’t go toward the debt.

• Consumers often end up in worse financial situations, and much further in debt. There’s no reason you can’t call your debt holders yourself. If you’re truly in a financial hole and they see that you won’t be able to pay the debt as originally agreed, they might agree to settle for less and reduce your payments. Warning: If you do get a credit-company to settle for less than the original amount owed, that money could become a tax liability to you. In other words, if the forgiven debt is more than $600, it becomes taxable

With arbitration you are able to get a faster resolution of your dispute; litigation before the state district courts can take one year or more to get to trial. Because it is a faster process, any legal fees are considerably reduced. Because the rules of evidence and the rules of civil procedure usually do not apply, you do not necessarily need the assistance (or expense) of an attorney. income. (This applies unless you are truly insolvent -- your debts are greater than your assets. Other situations apply, so research yours before you agree to settle a debt.) In most cases, you’ll get a 1099-C tax form in the mail at the end of the year, and the Internal Revenue Service will get a copy of that same form. It’s expected that you’ll add the forgiven amount to your income for that year. Senators Charles Schumer (D-N.Y.) and Claire McCaskill (D-Mo.) have sponsored The Debt Settlement Consumer Protection Act of 2010 in the hope of reining in debt settlement companies that are abusing consumers. In part, the legislation asks for more disclosure for consumers, a limit on the fees the companies can charge and more enforcement at the state and federal levels. ed by someone who really knows and understands the subject matter of your dispute (an expert in securities or admiralty law, for example), rather than a judge who really only knows criminal law or family law. Finally, if arbitration is binding and non-appealable, you do get finality very quickly. The disadvantages of arbitration are that you lose the protections of the rules of civil procedure and evidence (anything can come in and be considered), and that it may not be appealable. Further, if your opponent is, for example, a large insurance company, which regularly engages in arbitration, you can guess whose side the arbitrators may be biased towards (the repeat customer, of course).

Frankly, I admit I am not a fan of arbitration (I really like the protections of the rules of evidence and civil procedure); however, it has its place, and may be the best option in certain circumstances. As one certain retired judge is fond of saying, “If you are looking for justice over there (pointing at the courthouse), you’re probably not going to find it.” In my next article I will discuss another form of ADR: mediation.
