“I don’t know why men like to barbecue so much. Maybe it’s the only thing they can cook. Or maybe they’re just closet pyromaniacs.” – Cecelia Ahern, author of “P.S. I Love You”

lose your eyes and think back to those summers from your childhood. You probably remember swimming with friends. Maybe you went to camp or just lazed around the house on those long, hot days. Now think about the food you ate. You probably spent an evening or two gathered around the grill as the mouth-watering ribs or steaks or chicken breasts were cooked to perfection. The tangy yet sweet sauce that was slathered over your meat of choice probably got all over your face, too. It’s okay to admit it; we’re all friends here.

Barbecue truly has a place in just about everyone’s fondest summer memories. But when did it become such a mainstay in American summer cuisine? Snippetz takes a look back at the history of barbecue so read on…unless you get too hungry and have to rush out to Broken Bones BBQ, in which case, hurry back!
Often, true barbecuing is a slow process, requiring the meat to be cooked for a long time at a low temperature. It’s said that in America in the late 1800s, Western cattle drivers used the barbecue cooking method to tenderize the tough, stringy meat they had available. Brisket was usually one of them, as was pork butt, pork ribs, goat and venison.

The word “barbecue” itself is said to be traceable back to the 1600s on the island of Hispaniola in the West Indies. It comes from the Taino word “barbacòa,” which the native Arawak Indians used to refer to a frame made of wooden sticks constructed over a fire that was used to dry meat. Although the original term described the frame on which meat was dried, it eventually became to mean the process itself. And from there it morphed into both a noun and a verb, usually referring to a method of cooking rather than drying meat. The construction of the barbecue changed over time as well and included roasting an animal

KEEP YOUR COOL THIS SUMMER
N
ow that we’re fast approaching the hottest part of summer, it’s even more important to take steps to guard against becoming overheated. The Centers for Disease Control and Prevention has released a special report on seniors and the heat. It has suggestions that make sense -- especially since we seniors are slower to sense changes in temperature. That means we can become overheated before we realize it. Here are some suggestions: • Drink more water than usual, and don’t wait until you’re actually thirsty before having a drink. By then you’re actually overdue for water. Call your doctor’s nurse to ask how much water you should be drinking, and make a chart to be sure you get as much as you should. • Don’t cook with the stove or oven. It makes the house hotter.
• Check the news for heat alerts. In some cases, cooling stations might be opened in your area, such as in schools. Or call the health department and ask if there are air-conditioned shelters near you. Libraries, movies and malls are good places to go during the heat of the day. • Keep an eye on friends and family, and ask that they do the same for you. • While fans are helpful at lower temperatures, they won’t help in extremely hot weather, and only blow the hot air around. • Watch for heat-related symptoms, such as nausea or vomiting, headaches or muscle cramps. Look for heavy sweating, clammy skin, weakness or fainting, which is heat exhaustion. Those are medical emergencies. For more information, go online to www.cdc.gov/extremeheat/seniors. html and www.cdc.gov/extremeheat/ warning.html. Matilda Charles regrets that she cannot personally answer reader questions, but will incorporate them into her column whenever possible. Write to her in care of King Features Weekly Service, P.O. at the past to relive mistakes and review missed opportunities. That kind of constant backward look is truly hurtful. Here’s why: when you dwell on the past too much it clouds your vision of the future and inhibits personal growth. Your future has two possibilities: it will be decided either by design or by fate. If your future is by design that means it’s up to you. If it’s by fate it means you’re willing to allow your peers, parents, or worst of all, the government, to run your life. How fun does that sound?

MOMENTS IN TIME THE HISTORY CHANNEL
• On July 14, 1789, Parisian revolutionaries and mutinous troops storm and dismantle the Bastille, a royal fortress built in 1370 that had come to symbolize the tyranny of the Bourbon monarchs. This dramatic action signaled the beginning of the French Revolution, a decade of terror in which King Louis XVI and his wife Marie Antoinette were executed. • On July 12, 1861, special commissioner Albert Pike completes treaties with the Choctaw and Chickasaw tribes, giving the new Confederate States of America several allies in Indian Territory. Many of these tribes had been expelled from the Southern states in the 1830s and 1840s, but still chose to ally themselves with those states during the Civil War. • On July 8, 1918, author Ernest Hemingway is severely wounded while carrying a companion to safety on the Austro-Italian front during World War I. Hemingway, working as a Red Cross ambulance driver, was decorated for his heroism.
• On July 13, 1930, France defeats Mexico 4-1 and the United States defeats Belgium 3-0 in the first-ever World Cup football matches, played simultaneously in host city Montevideo, Uruguay. The World Cup has since become the world’s most-watched sporting event.

• On July 9, 1941, crackerjack British cryptologists break the Enigma secret code used by the German army to direct ground-to-air operations on the Eastern front. Various keys would continue to be broken by the Brits over the next year, each conveying information of even higher secrecy and priority. • On July 11, 1979, parts of Skylab, America’s first space station, come crashing down on Australia and into the Indian Ocean five years after the last manned Skylab mission ended. The cylindrical space station was 118 feet tall and weighed 77 tons.

THE HEAD AND THE HEART By Nick Yanez
“These philosophers, whose hands seem only made to dabble in dirt, and their eyes to pour over the microscope or crucible, have indeed performed miracles. They penetrate into the recesses of nature, and shew how she works in her hiding places. They ascent into the heavens; they have discovered how the blood circulates, and the nature of the air we breathe. They have acquired new and almost unlimited powers; they can command the thunders of heaven, mimic the earthquake, and even mock the invisible world with its own shadows” -Excerpt from Mary Shelly’s Frankenstien
E
very day, we as a species evolve. That’s why I find myself writing about some crazy new technologies or discoveries every couple of weeks in this column. It is constant progress; perhaps not by the true definition of the word, but by the opinions of those looking to broaden mankind’s knowledge of life and the universe. Those who dedicate themselves to science have good intentions, I am sure. All too often though, new discoveries lead to question’s of faith, ethics, and human rights. Such is the case in a new claim by Nueroscientist Sergio Canevero, who claims that full head transplants are now a very real possibility.

he Palmer Lake Historical Society and One Nation Walking Together are sponsoring a one-day Native American Festival and Traditional Powwow on Saturday, July 20, 2013, at the Freedom Financial Services EXPO Center, 3650 N. Nevada Avenue, Colorado Springs, Colorado 80907. This event is a celebration of Native history and culture. We will be collecting nonperishable food donations to help feed needy Native Americans. The event includes Native drums and dancers, Native art and artisans, a live wolf exhibit, and plenty of Native vendors and food.
Dr. Canevero, a member of the Turin Advanced Neuromodulation Group, claims that the barriers previously preventing a full human head transplant can now be overcome. He cites new technologies in spinal surgery

as a key component. Previously, the reason human head transplants could not be achieved had a lot to do with the spinal chord (reconnecting it, specifically). Today, due to relatively new technological advances in medical equipment, surgeons are able to recover severed spinal chords at a positive rate. He also cites legendary Neurosurgeon Robert White, who has successfully completed head transplants in living monkey’s. While the human body does operate differently than that of an ape’s, the procedure would entail similar methods. Add the fact that over the last 40-years head transplants have been done to thousands of different types of animals, and you’ve got yourself quite a head-scratcher. Some of those animal transplants were successful. Others were not. The mere fact that it is now an extremely real possibility for humans is something to pay attention to. It solidifies our standing as an ever evolving species; one filled with knowledge and ambition. Then come the moral questions. Are we ready? Is this “playing God”? Is it worth the risk? All of these questions will and should be asked. There are laws to be debated, too. Medical practice will be put on trial before the world’s eye, as high ranking officials will have to determine the legal status of such an operation. We may never see the procedure succeed. We may never see it at all. But the fact that a respected neuroscientist is convinced it could happen is a wake up call to us all. Perhaps we are capable of performing miracles. Maybe we can alter life and death. Maybe even, someday, we can create life with nothing more than a test tube and a microscope. A real Human life-form. But the question you should really be asking is - would we ever want to?

mericans celebrate July 4th, also known as Independence Day, often without knowing the fascinating history about how this celebration came into being. “Taxation without representation!” That was the battle cry of the 13 colonies in America that were forced to pay taxes to England’s King George III with no representation in Parliament. As dissatisfaction grew, British troops were sent in to quell any signs of rebellion, and repeated attempts by the colonists to resolve the crisis without war proved fruitless. On June 11, 1776, the colonies’ Second Continental Congress, meeting in Philadelphia, formed a committee to draft a document that would formally sever ties with Great Britain. The committee included Thomas Jefferson, Benjamin Franklin, John Adams, Roger Sherman and Robert R. Livingston. Jefferson, who was considered the strongest and most eloquent writer, crafted the document. (Nevertheless, a total of 86
The following day, copies of the Declaration of Independence were distributed, and on July 6, “The Pennsylvania Evening Post” became the first newspaper to print the extraordinary document. The Declaration of Independence has since become our nation’s most cherished symbol of liberty. On July 8, 1776, the first public readings of the Declaration were held in Philadelphia’s Independence Square to the ringing of bells and band music. One year later, on July 4, 1777, Philadelphia marked Independence Day by adjourning Congress and celebrating with bonfires, bells and fireworks. The custom eventually spread to other cities and towns, where the day was marked with processions, oratory, picnics, contests, games, military displays and fireworks. Observations throughout the nation became even more common at the end of the War of 1812 with Great Britain. Congress established Independence Day as a holiday in 1870, and in 1938 Congress reaffirmed it as a holiday, but with full pay for federal employees. Today, communities across the nation mark this major midsummer holiday with parades, firework displays, picnics and the playing of the “The StarSpangled Banner” and marches by John Philip Sousa.

NOTES: To pit fresh cherries: A handheld cherry pitter is the right tool for the job, and it also works for olives! Or pry out the pit with the tip of a knife or vegetable peeler. To toast walnuts: Cook in a small, dry skillet over medium-low heat, stirring constantly, until fragrant and lightly browned, 2 to 4 minutes. ***
1. Set aside 6 or 8 cherries and 6 or 8 blueberries for garnish. Combine remaining cherries and blueberries, 1/2 cup sugar or sugar substitute, 1/4 cup water and the lemon juice in a large saucepan and bring to a boil. Combine cornstarch with 4 teaspoons water, then stir into the berry mixture; return to a boil. Reduce heat to medium and cook, stirring constantly, until the liquid thickens and looks syrupy, about 1 minute. Remove from heat. 2. Process graham crackers in a food processor until finely ground. Add walnuts and pulse until finely chopped.

New DVD Releases for Week of July 8, 2013 PICKS OF THE WEEK “Admission” (PG-13) -- Tina Fey and Paul Rudd star in this dramedy about college admissions and taking chances and boring audiences. Fey plays Portia, a Princeton admissions officer who lives life by the book and avoids risk. Things kick off when she gets back in contact with John (Rudd), an old friend who runs an alternative school. John introduces Portia to an oddball teen named Jeremiah. He would be a perfect fit

for Princeton ... oh, and he might be the son Portia gave up for adoption 16 years ago. With just a few chuckles here and a couple sighs there, it’s not much for drama or comedy. The pacing and one-dimensional characters make all things charming come out annoying. “Temptation: Confessions of a Marriage Counselor” (PG-13) -- In twists and turns, this film explores the allure of forbidden love and human desires to reach a certain moral conclusion: Adultery is bad, you guys. Judith (Jurnee Smollett-Bell) is a career-minded young woman working at a matchmaking business. She gets pulled into the seductive web of Harley (Robbie Jones), a handsome billionaire who flaunts his wealth in the usual ways. With a million warnings and reasons she should have known better, Judith still makes her mistakes and takes her punishment for them. Arguably, this punishment includes starring alongside Kim Kardashian. If you
can handle a little bit of soap opera and a lot of moralizing, you might be enticed by this temptation. “The Host” (PG-13) -- In the near-ish future, little body-snatching aliens take over Earth. One of these critters crawls into the back of your neck, next thing you know, you’ve got silver eyes and a robotic monotone voice. Now, imagine that this premise was used to make a “Twilight”-style supernatural young-adult thriller -- and it was engineered in a high-tech lab to be the most boring thing ever. That’s what you get from “The Host,” roughly 90-minutes of a teenage girl talking to a snotty alien living in her brain. Eventually, she kisses a hunky young lad in the rain. You’ll miss that part because you’ll be asleep. “Spring Breakers” (R) -- To fight off boredom, four college girls (Selene Gomez, Vanessa Hudgens, Ashley Benson, Rachel Korine) play around with a little bit of armed robbery so they can afford a spring-

break vacation in sunny Florida. Once on the beach, the girls get into their bikinis, and then it’s off to more crime. They become entangled with a clownish rapper named Alien (James Franco, really pushing it here). Alien seems like a bit of edgy, jokish fun, but turns out to be a real-deal drugdealing criminal.

“Uncle Sam” due to his jovial manner and ethical business practices. During the War of 1812, Sam won a contract to provide meat to troops stationed nearby. To keep track of which crates of meat were destined for the troops, he stamped “U.S.” on them, even though that abbreviation for United States was not yet in common use. When his packing plant was inspected in October of 1812, a government inspector asked a nearby worker what “U.S.” stood for. Unsure of the abbreviation himself, the worker replied that it must stand for the name of the owner, Uncle Sam. Though the answer was in error, it took hold, and soldiers soon began calling military rations “bounty of Uncle Sam.” • If you remember the early-1960s TV series “Route 66,” you might be surprised to learn that the show was actually shot in Florida and Oregon, nowhere near the fabled highway.
