few months back, I took a bread-baking class with my mother-in-law and since then, we have both discovered a passion for cooking and baking. Admittedly, her passion has much more skill to back it up but I enjoy baking and creating food even if it’s not always the most appetizing once it’s done. Perhaps you’ve tried your hand at baking something from scratch only to have your creation come out inedible. periment with using less sugar, leavening or fat, or adding a little more liquid and flour to your recipe to see what works best for your altitude. Too much flour can make the cookies tough so be careful with that ingredient. Sometimes the answer is simply to increase your oven’s heat by 15°F or 25°F. • Muffins, scones, biscuits, cornbread, etc – with baked goods such as these, a common problem is that the batter doesn’t rise properly. To combat this, you’ll want a more acidic batter so use less baking soda which neutralizes acid. If your batter keeps collapsing, use less sugar and increase the flour you add. To prevent your creation from being too dry, you can substitute buttermilk or yogurt for water. As with pies, the top may cook faster than the batter underneath so using foil to cover the pan loosely can help. • Yeast breads – breads of this sort tend to rise much faster at our high altitude so ingredient or technique adjustments are often a must. Some people reduce the amount of yeast or use ice water instead of warm water in their recipes. Others will punch down their dough more often and allow for a longer rising time to balance it out. “Over-proofed” bread dough (one that has risen

too much) is a common problem and can cause the dough to warp, collapse or droop during baking. To prevent over-proofing, allow the dough to rise about one third of the total volume rather than doubling in volume before baking. And salt is a must; never leave it out. Salt slows down the growth of yeast and the expansion of gases, hampering the rising process to an acceptable speed. Include a pan of boiling water in the bottom of the oven when baking to achieve a good rise and crisp crust.

• The middle rack of the oven provides the most even heat. It will remain moderately heated throughout the baking time while the bottom rack can get overly hot and burn your creation.

• Instead of filling pans 2/3 full as usually indicated by a recipe, fill it 1/2 full to prevent overflowing.

• Increase the amount of whatever liquid you need by 3 to 4 tablespoons for each cup the recipe calls for. • Increase your oven temperature by 25°F. Remember that all of the above suggestions are just that: suggestions. The absolute best way to determine what will work for your area is to try different techniques and adjustments. Only adjust one thing at a time or you won’t know what adjustment was the correct one! And above all, HAVE FUN!

I

imagine myself on at every major music festival and sporting event annually. My wife imagines a big house with a pool, garden, and library. My dad probably imagines himself on a Harley, eating steak whenever he wants. We’ve all had the thought before; what if we were to become a billionaire – with a B? A billion dollars is hard to comprehend, actually. It means doing literally whatever you want when you want. It means never having to worry about money again. Heck, it means that your grandchildren will likely never have to worry about money again. It’s beyond the American Dream; it’s a flat out fantasy. Only few will ever live such a fairytale. Maybe, you could be one of those few. Multi-billionaire Warren Buffet has recently made and offer no one can refuse. Apparently, Buffet is a basketball fan. Through his company, Berkshire Hathaway, he is offering the unimaginable grand prize of one billion dollars! The task? Pick a perfect bracket in this year’s NCAA March Madness Tournament. The 68-team bracket is almost impossible to nail perfectly. There are actually over 9 quintillion combinations that could happen. Is that even a number!? Which is why the wealthy company is willing to bet a small billion that you can’t guess right. Of course

if you’re a sports fan, and you actually know something about the game of college basketball, experts estimate your odds are closer to 1 in 128-billion. So there’s that comforting news to all you sports fanatics. Filling out brackets has become something of a tradition for American sports fans. Throughout the years though, the bracket has thrown many curveballs towards gamblers and sports enthusiasts. Who can forget last year’s incredible run by unknown underdogs Florida Gulf Coast? The young school made a run into the Sweet Sixteen as a #15 seed in the tournament; no #15 seed had ever advanced that far before. That’s what makes a perfect bracket near impossible, anything can happen. You never know what team will make a run. But if I’m wrong and you happen to know which underdog will blow up this year’s brackets, by all means, make it happen. If you do, you will have a lottery-type option of choosing to take a lump sum payment of $500 Million, or you can receive payments of $25 Million for the next 40 years of your life. Suffice to say, I think you won’t be running out of cash anytime soon with either option. Berkshire Hathaway’s impressive offer is by far the largest prize up for grabs in this year’s tournament. But Fox Sports is also offering $1 Million, while Yahoo has upped theirs to $5 Million for a perfect bracket. Put quite simply – your odds are bad. Really, really bad. But why not try. Unlike the lottery, it cost nothing to enter a bracket. I suggest you do your research on this year’s tournament. It could end up being the most important work decision of your entire life. Likely, it’ll be another small waste of time. Either way, I wish you luck. You’re going to need it.

LONELINESS: THE CONSTANT HEARTACHE

WHO ARE THE LONELY? By Dr. Ron Ross

M

ore than one out of three adults 45 and older reported they were chronically lonely, according to a survey done by the AARP in 2010. The definition given for “chronically lonely” makes the report even sadder; chronically lonely means they have been lonely for a long time. This loneliness persists in a Facebook world of a few authentic and an excess of fantasy friendships. In May, 2013 Facebook had over 1.19 billion active users worldwide with 4.5 billion “likes” generated daily with 78 million people logging on to it every day sharing 4.5 billion pieces of content, yet one out of three are still lonely.

Outsiders: The stranger, foreigner, outcast, and the recluse are lonely. Anyone whose parents moved them from one state to another in the 7th grade knows about outsider loneliness.

The elderly: This ever-growing demographic is becoming increasingly lonely due to fractured families, isolated living conditions, lack of mobility and decreasing health. If you have visited an elder-care facility lately you know this is true.

The less educated: The better educated are not as lonely as the less educated; a good reason to make sure your children get a good education.

African Americans: They are lonelier than whites though I couldn’t find evidence as to why. Retired people are lonelier than the employed: Work is good for the soul and for abating loneliness; a good reason to NOT retire.

The unemployed: They feel disconnected and useless as they waste their days watching TV and wander streets searching for meaning and purpose in life. Their despair intensifies with each employment application rejection and successive unemployment check.

Just because you’re not on the list does not mean you don’t feel lonely from timeto-time. You don’t have to live alone in a high-rise apartment, be isolated on a deserted island, or have all forms of communications cut off to be lonely. You can be lonely in the midst of a throng, at the top of your profession, and lonely even as you

receive voluble accolades from a fawning audience. He loves Kool-Aid and calculates that in a year he drinks 150 pounds of sugar in Kool-Aid alone. A friend told him if he continues this habit, he might develop diabetes. Can a skinny, athletic person develop diabetes from consuming sugar? -- S.B. ANSWER: Although “sugar” is half the name of sugar diabetes, sugar doesn’t cause diabetes. It’s a popular belief that it does, but it doesn’t. People with diabetes are careful to watch their sugar intake, and they watch their total carbohydrate intake, but diabetics don’t have to eliminate sugar completely from their lives. Careful monitoring of sugar and carbohydrate intake is essential for their control of blood sugar. Type 1 diabetes, the kind that requires insulin for control, often has its onset in younger years. It’s due to a destruction of the insulin-making cells of the pancreas. The destruction is believed to be the work of the immune system. Sugar has nothing to do with it. Type 1 diabetes accounts for 5 percent to 10 percent of all diabetes cases. Type 2 diabetes, the much more common kind, comes about from a decline in insulin production along with a decline in the effectiveness of insulin. Ninety percent of Type 2 diabetics are overweight, and weight loss helps them control their blood sugar. Physical inactivity also contributes to Type 2 diabetes. So do genes. Again, it’s not the sugar intake that produces this common type of diabetes. But monitoring the intake of sugar is important for control of this variety of diabetes.

Seglem explained that the grant was awarded to HAP because of the many programs to assist senior citizens and to help HAP continue efforts to support local seniors to live independent, healthy lives. Well, I can’t help with the travel, but I sure can help with a delicious dessert that will make you feel like you’re basking in the sun on a tropical island ... at least while you’re eating the pie! 1 cup (1 medium-size) diced banana 1 (6-ounce) purchased chocolate pie crust 2 (4-serving) packages sugar-free instant chocolate pudding mix 1 1/3 cups nonfat dry milk powder 2 1/4 cups water 2/3 cup fat-free whipped topping 1 teaspoon coconut extract

2 tablespoons flaked coconut 1 tablespoon chopped pecans

1. Evenly arrange diced banana in pie crust. In a large bowl, combine 1 package dry pudding mix, 2/3 cup dry milk powder and 1 1/4 cups water. Mix well using a wire whisk. Pour pudding mixture evenly over banana. Refrigerate while preparing topping mixture. 2. In same bowl, combine remaining package dry pudding mix, remaining 2/3 cup dry milk powder and remaining 1 cup water. Mix well using a wire whisk. Blend in whipped topping and coconut extract.
