sk anybody out there what they consider salad to be and they’ll probably tell you that it’s lettuce, tomatoes, cucumbers, carrots, dressing or something similar to that. But there’s so much more to salad than just those common ingredients. Salad can be an entrée or an appetizer. It can be a side dish or it can be a snack. It’s versatile, relatively healthy (yes, even the Jell-O and banana version is pretty good for you) and can be the perfect way to combine all the elements of a well-rounded meal into just one dish. And of course, Snippetz just had to investigate the ins, outs, ups and downs about salad.

WHAT IS A SALAD?
• Larb salad – a spicy meat salad made with chicken, beef, duck, turkey, pork or fish and flavored with fish sauce, lime juice and herbs. This salad hails from the Isan region of Thailand.
The word “salad” comes from the French term “salade” which, in turn comes from the Latin “salata” meaning salty. Why? During ancient Roman times, salads were often salty because they were seasoned with brine or salty oil-and-vinegar dressings. The word “salad” first appeared in the English language in the 14th century although it was sometimes spelled “sallet.”
• Lyutika salad – a vegetable salad made from roasted peppers, tomatoes, garlic, onions, vegetable oil and is usually crushed in a pestle with a mortar. This salad hails from Bulgaria. • Mesclun salad – a vegetable salad that is traditionally made with a mix of chervil, arugula, leafy lettuces and endive all combined in equal amounts. More modern takes on the Mesclun salad include less precise mixes of fresh lettuces and greens that are available during that particular season. This salad hails from Provence, France.
Asking the question, “What is a salad?” is almost like asking, “What is a bug?” There are so many different right answers that it’s almost impossible to get it wrong. Salads can be green salads, vegetable salads, pasta salads, grain salads, fruit salads and seafood salads, just to name a few. They can be hot or cold or a bit of both. Often the definition of salad depends who you’re talking to and what part of the world the salad comes from. We’ve rounded up some salads from different parts of the world to give you a literary taste of what these salads have to offer.
• Naem khluk salad – a meat salad made from crumbled, deep-fried balls of sticky rice and naem (a type of fermented sausage made from pork skin and sticky rice) that are mixed with sliced shallots, dried chilies, fish sauce and lime juice. Raw vegetables and fresh herbs round out the dish. This salad hails from Thailand.
• Acar salad – a vegetable salad made from yardlong beans, carrots and cabbage that are pickled in vinegar and dried chili peppers. The ingredients are mixed and tossed in ground peanuts. This salad hails from Singapore, Indonesia and Malaysia.
• Poke salad – a seafood salad typically made from cubed yellowfin tuna sashimi that is marinated with sea salt, soy sauce, inamona (roasted and crushed candlenut), sesame oil, limu seaweed and chopped chili pepper. This salad hails from Hawaii.
• Insalata Caprese salad – a tomato and cheese salad made from slices of fresh buffalo mozzarella, tomatoes and basil and then seasoned with salt, pepper
hard boiled eggs, green peas, pickles, meat or sometimes fish or seafood all mixed together with mayonnaise. This salad hails from (wait for it . . .) Russia! • Taramosalata – a salad made from taramas which are the salted and cured roe of the carp or cod, mixed with either bread crumbs or mashed potatoes, lemon juice, vinegar and olive oil. This salad hails from Greece and Turkey. • Wurstsalat – a meat salad made from sausage, vinegar, oil and onions. This salad hails from Germany, Alsace, Switzerland and Austria. • Yorkshire salad – a vegetable salad made from lettuce, cucumber, chopped onion, chopped fresh mint, a bit of sugar and malt vinegar. This salad hails from Yorkshire, England and was created to accompany a roast or Yorkshire pudding. • Waldorf salad – a fruit salad made from julienned apples and celery, chopped walnuts, grapes and mayonnaise. This salad hails from the Waldorf Hotel in New York City. • Yam thua phu salad – a vegetable salad made with winged beans, salted eggs, toasted coconut, shallots, fish sauce, lime juice and chilies. Squid is sometimes added. This salad hails from Thailand. • Urnebes salad – a cheese salad made from pavlaka which is a dairy product made by souring heavy cream

This salad hails from Serbia. • Wedge salad – a vegetable salad made from cutting a solid head of lettuce into a wedge shape and topped with blue cheese salad dressing and pieces of cooked bacon. This salad hails from the United States (didn’t the bacon clue you in to that one?). As you can see, there is no standard salad. They vary greatly from region to region and from country to country. Sometimes the name says all you need to know about what’s in the salad and sometimes you’re left scratching your head, wondering how in the world it ever got its name. Speaking of names, have you ever wondered how some of the most famous salads in our region got their names? If you haven’t, maybe you should . . . and if you have, then keep reading!
HAIL CAESAR . . . SALAD (the publishers choice)
If you’ve ever been to a restaurant (and we’re betting you have!), you’ve probably seen Caesar salad on the menu. You’ve probably read through the ingredients to see if you can discern where the name “Caesar” came from. You might’ve even assumed it was named after Julius Caesar, the famous ancient Roman emperor. Well, if you did, you were wrong.
As is the case with the Waldorf salad, the Caesar salad is named after the salad’s creator, Caesar Cardini. The story of the birth of the Caesar salad says that Cardini, an Italian immigrant who lived in San Diego owned a restaurant in Tijuana. On July 4, 1924, he found himself low on supplies. Some hungry friends stopped by for a bite to eat and, not wanting to disappoint his friends, he tossed a few of the ingredients, he still had hanging around, into a bowl and mixed the whole thing together table-side. These ingredients included romaine lettuce, garlic, croutons, Parmesan cheese, olive oil, eggs and Worcestershire sauce.

Some claim that Caesar’s brother Alex threw in the anchovies that, more often than not, accompany the salad today while others claim that Caesar took the credit from some other chef whose name has been lost to oblivion.

I
’m telling you upfront – this is a pro-America article you are about to read. No, it’s not one of those pieces that sites history and raves about our hero’s, the flag, and melting pot mentality. Those are all great, but I’m here to tell you what you’re missing out on right now. After watching the Winter Olympics in Sochi, Russia the past couple of weeks, there were many takeaways. The first was the incredible talent displayed worldwide and specifically by the United States. We’re excited with all we accomplished there. We watched Shawn White and Bode Miller break down, for very different reasons. We shattered records and took home a blanket of medals. Welcome back, dear athletes, you’ve done us proud. Those were the headlines; as they should have been. But what was over reported, but under acknowledged was the vast difference in U.S. and Russian culture. There was an incident last Wednesday that defines this difference in living more than anything else. It was a small thing, so no one took too much notice. A Russian punk band (who I won’t name for two mysterious reasons) took to the streets and played an impromptu protest concert. They were, how shall we say, not a fan of Russian leader Vladmir Putin. Now, this sort of thing has happened all throughout our own countries history. The 60’s music explosion centered around peaceful protest as famous artists created musical riots against the war in Vietnam – they called them albums. And what did our often-criticized government do about this antiwar, anti-Capitol Hill, anti-politician
musical movement? Nothing. They simply rode out the storm, got out of the war (after quite some time) and let history write itself. The police force in Russia acted quite differently. The government ordered that this Russian display of light treason be stopped, by any means necessary. Early last week, the police attacked the band with horse whips, leaving each band member somewhat injured. This band is no small time act. In fact, it’s as if a police force in America started beating Beyonce with metal sticks in the streets. Safe to say, that would not go over well with the general public. This punk band (still unnamed) had actually been filming a video at the Olympics, trying to show everything wrong in Russian society and government today. They were detained several times throughout the week, before the ultimate showdown on ‘Horse Whip Wednesday’. It makes you appreciate free speech. Heck, I could tell you right now in this article everything I find wrong with this country. I could rant and rave about dirty politicians and bad investments. I could tell you about inequality, disadvantages, and a suffering middle class. Nothing would happen to me. People would read the article and I would never hear about it from any government agent or police member. So, today, I’m telling you the opposite of what you normally hear. Be proud of your country and your government. No matter where you stand and what you believe, we’ve still got the best chance in the world for true freedom and happiness. I’m not denying there are problems; just pointing out how small they often are. We will be okay. We always will be, because we live under the greatest government in the entire world; a government that doesn’t mind when we claim they are the worst.

LONELINESS: THE CONSTANT HEARTACHE
DANGER AHEAD: EXTREME RESPONSES TO LONELINESS By Dr. Ron Ross
E
veryone endures bouts of loneliness from time to time. They are usually short-lived because the causes are either social (broke up with their girl/boyfriend, got a divorce, had a fight with their best friend, etc.), or geographical (moved to another job, town, school, etc.). Mentally healthy people adapt quickly to new situations and are able to establish constructive relationships. Sometimes, however, loneliness can trigger either one of two extreme reactions: isolation or obsession. ISOLATION: Some lonely people will cut themselves off from the rest of the world. They lose all motivation to get involved with anything; even things that once fascinated them. They sit in corners, hide behind books, or sit alone in the lunchroom with their back to the crowd. You can almost hear them singing, “Nobody loves me, everybody hates me, guess I’ll go eat worms.” If they do develop a relationship it doesn’t take them long to sabotage it so they can prove to themselves their own worthlessness. To ease the pain of their solitude they will often anesthetize themselves with food, alcohol, drugs, etc. OBSESSION: Others deal with loneliness by getting overly involved with an individual or an activity. More than one recently-divorced individual has become compulsively obsessed with a new person (lover), probably to numb the pain of their separation. They jump body and soul into a new relationship only to discover they have made some very serious mistakes (remember Fatal Attraction?). Others get over-involved with some cause or activity that keeps them so busy they forget about their loneliness until night comes on and they are finally alone. I know one lady who was ignominiously dumped by her

husband so she went out and purchased an expensive SUV to prove to him she could make it on her own. It felt good until she couldn’t keep up with the payments and the bank re-possessed it. Oftentimes obsession with an individual or an activity will result in unforeseen negative consequences.

Chronic loneliness, whether manifesting itself as isolation or obsession, can be dangerous to mental and physical health and can result in life-threatening conditions. Heart disease, hypertension, stroke, high blood pressure, etc., have been linked to chronic loneliness.
PATHWAY PARENTING
In 2005 the U.S. Framingham Heart Study demonstrated that lonely men had raised levels of interleuken-6 (IL-6), a blood chemical linked to heart disease. Dr. Eric Loucks of the Harvard School of Public Health said in his report on the study, “Typically, socially isolated men have an over two-fold higher risk of mortality compared to socially connected men.” You might be interested to know that the same was not found to be true in women.

PUNISHMENT VS. CONSEQUENCES
I
’ve read many comments in online news articles, Facebook posts, and now recently the controversial Kansas bill about how kids are out of control because they aren’t spanked or punished enough. Several times I’ve read or heard, “I was spanked and I turned out fine!” or “My mom knew how to discipline me!” I’m curious as to why many people think that causing physical pain to a child teaches anything other than the expectation that life is painful.
Depression often accompanies loneliness. Some of the symptoms of depression (withdrawal, anxiety, lack of motivation, sadness, etc.) are similar to the symptoms of loneliness. People being treated for depression need to give consideration to the possibility that loneliness may be contributing to their condition. Other consequences of loneliness are sleep disorders, chemical abuse, anti-social behavior, and self-destructive behavior.
I’ll admit that there have been a couple of times that I have argued with fellow online article commenters on the effectiveness of physical punishment. When it comes to children and their right to be respected at all times, I’ll argue. I’ll argue a lot. I’m not afraid to walk down that road of being told ‘I’m wrong.’ I’m not afraid because there are too many children who are in pain, and too many adults I have worked with that continue that state of pain in their lives.
Extreme irrational responses to loneliness can threaten health, inhibit the ability to respond appropriately in social situations, and interfere with the ability to make good decisions. It’s simple: for good mental and physical health you need friends.

The common misperception I see is that many people assume that consequences and punishment is the same thing. They are very different. Here’s an example: About four or five years ago, I was in the mall and sitting near the public bathroom. I saw a mother drag her small crying child into the bathroom, heard her yell at him, and then I heard a few loud slaps. I cringed. I wanted to cry. I wanted to bang on that door. But, I did not.

I saw her come out of the bathroom with her child who had a tear streaked face, while the expression on her face was full of pride. I assumed she was proud that she had effectively punished her child. She must have felt she did the ‘right’ thing.

some experience around consequences to offer. Could she have not simply gone in the bathroom and firmly spoke to her child, while making eye contact? Could she have not simply said, “Ok, we’re leaving,” and then followed through to demonstrate that the behavior was not acceptable? Or was slapping her child easier? It set the tone, the expectation that ‘if you don’t do as I say, I’ll cause you pain now and in the future.’ Sure it might stop the immediate behavior, but what of the long-term consequences? What if the punishment (corporal punishment in this case) continues and her child develops anger towards her? What if he simply learns to hide his ‘unacceptable’ behavior while he’s around his mother? What if, later, he takes his understanding of punishment and creates a cycle of self-punishment as an adult? That selfpunishment can be in the form of selfsabotage, self-denial, depression, anger, painful relationships, self-worth issues, and multiple other examples. Offering consequences to your child can take more time and effort than punishing. Punishment is delivered with ‘you’re wrong and/or bad’ because ‘you did this’. It’s delivered with negative judgment and a sense of condemning, while consequences are respectful actions that are in response to challenging behaviors. In delivering a consequence, it’s offered with respect to the child as an individual. Many times, children act out because they’re feeling misunderstood, tired, or bored. Many teenagers act out because they’re just angry at that point. Always offer respect to your children; they’ll remember it for the rest of their lives and they’ll offer it to their children and that positive pattern will continue down the generational line. are chilblains? Did my mother make up the word? -- D.G. ANSWER: “Chilblain” is a real word. It’s a cold-weather injury that most often strikes the toes, and less often the fingers. It comes about from intense and prolonged spasms of blood vessels. Blood circulation is greatly decreased. This mostly happens when weather is cold but not freezing.
HOW TO COMBAT DRY WINTER SKIN DEAR DR. DONOHUE: I have extremely dry skin. Is there anything I can take orally for it, rather than applying moisturizing lotions? -- J. ANSWER: I don’t know any oral medicine for dry skin. I can give you some tips on how to lessen your skin’s dryness. Dry skin becomes a problem for many people in the winter, when furnaces are pushing out hot, dry air. Those people, and possibly you, benefit by increasing the humidity of the house to between 40 percent and 60 percent with a humidifier. Use only mild soaps like Dove or Cetaphil Gentle Skin Cleanser. Don’t take long baths or showers, and keep the water temperature warm but not hot. After bathing, pat yourself with a towel, but leave the skin somewhat damp. That’s the time to use a moisturizing product. Petroleum jelly is cheap and effective. If a moisturizer leaves your skin greasy, first rub a small amount between your hands and then apply it to the skin. It’s not so much a matter of oil returning to your skin as it is water. Your skin needs hydration. *** DEAR DR. DONOHUE: When I was a little girl, my mother used to warn me about chilblains. I think it was her way of frightening me into dressing the way she wanted me to dress for winter. These days I never hear that word. What

And it might surprise you that some of the best weapons to help cure crankiness and boost energy can be found in your local grocery store. The following foods will help your mood in two ways. First, they deliver some key nutrients that help support brain chemistry to reduce the risk of depression and help improve the quality of your sleep. And they do something equally important: Powerful combinations of vitamins, minerals and antioxidants help you build up your energy and capacity to handle life from your body’s deepest levels (your cell’s metabolic and energy pathways). This is what we all should aim for, not the quick burst of stimulation from a sugar or caffeine fix that ultimately leaves you feeling cranky or tired. Dark Chocolate Not only is it delicious, dark chocolate is high in magnesium, a mineral that calms your muscles and reduces anxiety. Green Tea? It’s full of theanine, an antioxidant that acts as a calming agent.? Berries Blueberries, strawberries and raspberries contain anthocyanidins and anthocyanins -- nutrients that help reduce stress and depression.? Chia and Flax Seeds They have about the same amount of protein per ounce, at 4.4 grams and 5.1 grams respectively. However, chia is one of just a few plant sources that is a complete protein, meaning that it contains all of the needed protein-forming amino acids. Both of these seeds are a great way to get more fiber in your diet, but chia has the edge: an ounce gives you 10.6 grams of fiber, or 42 percent of your recommended daily intake, versus 7.6 grams and 31 percent for flax. These seeds also provide different types of fiber. Mistaken classifications have spurred renewed action by the Department of Labor with their misclassification initiative. Armed with a $14 million dollar budget, and a new team of 100 auditors, the initiative aims to crack down on companies wrongfully classifying employees as independent contractors- Intentional or not.

A DIFFERENT LOOK AT LIFE INSURANCE There is a lot of confusion surrounding life insurance. Given the variety of products, it can become an arduous task to determine which is best. An approach I prefer is to first understand the needs. If there is no financial need, in most cases, there is little reason for owning life insurance. However, if there are people or organizations financially dependent upon you, life insurance is the cheapest way to meet those obligations.
Permanent Life Insurance
Permanent life insurance, such as whole life and universal life, is designed to be there when you die. It is effective at providing for those more permanent needs. Initially, it is more expensive than term insurance; however the cost does not increase with age, and as long as the premium is paid, it will stay in force, never expiring. There is also the added benefit of building a cash value which can be used for other needs supplementing retirement income or long term care expenses. If I Die
There are two types of needs that can be effectively funded with life insurance. The first are the “if I die” needs; those immediate and often temporary obligations that need to be met if you die today. Needs that could include paying off the mortgage, credit card debt or auto loans, or even providing for college. Often the largest “if I die” need is the replacement of income for the surviving family. “If I die” needs are financial obligations that would have otherwise been paid for through your income.
When I Die
The second are the “when I die” needs. These are of a much more permanent nature. Will pension, annuity or social security income need to be replaced? Is there a dependent adult child that needs to be cared for? What about final expense, the cost of settling the estate and taxes? Are there legacy plans for your church, a favored charity or school? “When I die” needs are those that are with you throughout your life, oftentimes increasing as we get older. Life insurance, when used effectively, will provide the cash when money is needed most. Unfortunately, far too often, many choose the wrong insurance for their purposes. To guarantee that the funds are available when money is needed, it is primary to pair your needs with the right type of insurance.
Term Life Insurance
Term life insurance has been designed specifically for those “if I die” needs. It is cheap and it is finite. Cheap at least in the early years, but, as we get older, it becomes more and more expensive. Finite in that it is purchased for a fixed period, 10 years, 20 years, even one year. For a family, a 20 year term policy could well provide affordable financial protection until the youngest child is well into college. The term would end about the same time as the need.
