t’s that time of year again, when we anxiously await the warmer weather that we see glimpses of occasionally throughout the day. New blades of grass peek through the brown blanket covering our yards. Flowers start blooming, a physical reminder of our hopes that another freeze isn’t on its way. The Easter holiday prompts retailers across the country to begin stocking droves of egg paraphernalia. THE 100-YEAR OLD EGG

Chickens and eggs have been around much longer than recorded history. East Indian history dates the domestication of wild fowl to as early as 3200 B.C. Records from Egypt and China indicate that man has been collected eggs laid by these domesticated fowl since 1400 B.C. Although some evidence points to the existence of fowl in America prior to Columbus’ arrival, it’s generally believed that, on his second trip in 1493, his ships carried the ancestors of our modern egglaying chickens.

In today’s “fresh is best” mentality when it comes to buying food, the idea of an egg that has been aged for several weeks, months or even years might be somewhat off-putting. But the century egg or 100year old egg, while not actually aged for that long, is a delicacy in several cultures like the Chinese culture. Here’s how the preservation process works: the eggs is coated in a mixture of clay, wood ash, salt, lime and rice straw. That’s it. Not much to it. But the result is a dark greenish grey yolk that has become creamy and smells strongly of sulfur and ammonia. The white of the egg becomes a dark brown, transparent jelly. Some have likened the process to a type of fermentation.

WHAT A GOOD EGG! In most cultures around the globe, chicken eggs feature in some way. The most common type of chicken egg that humans consume is from the Gallus domesticas. There are almost 200 breeds and varieties of chickens worldwide but the most common type used for egg production in the United States is the Single-Comb White Leghorn.

Painted eggs are a part of the Persian New Year, called Norouz that occurs before the spring equinox. Since the 16th century, many cities in Spain have celebrated the feast of Corpus Christi, traditionally observed 60 days after Easter Sunday. On this day, they celebrate the tradition of the dancing egg, which consists of emptying an egg and positioning it over a water jet from a fountain. The egg will remain atop the jet and spin but won’t fall.

EGG-DYEING AND OTHER EGG-RELATED TRADITIONS While most people associate egg-dyeing with Easter, the tradition can be traced back further than the advent of Christianity. In cultures all over the world, the egg symbolizes new life, fertility and rebirth. Iranians have used dyed eggs as a way to celebrate their New Year, which falls on the spring equinox.

WORLD EGG DAY Did you know that there is a World Egg Day? Well, if you didn’t, you do know. It’s celebrated on the second Friday in October. The first World Egg Day was celebrated in 1996 and countries all over the world celebrate the day in different

• If you don’t know if an egg is hard-boiled or raw, spin it. If it spins easily without a lot of wobbling, it’s hardboiled. If it wobbles and doesn’t spin smoothly, it’s raw. Or just break it open to find out . . . but that method can end in a mess. • Howard Hemler is considered the Omelet King. He holds three Guinness World records for omelet making: fastest omelet maker (427 omelets in 30 minutes); fastest single omelet made (42 seconds from whole egg to omelet); and omelet flipping (30 flips in 34 second). • Eggs can have two yolks. Or they can have no yolk at all. Typically this occurs when the hen is young and her egg production cycle hasn’t fully regulated itself. • Meringue is a type of is a type of dessert made from whipped egg whites and sugar, and sometimes other ingredients like cream of tartar or vinegar to add a bit of acidity. The name comes from a pastry chef named Gasparini from the Swiss town of Merhrinyghen who, in 1720 created a small pastry from dried egg foam and sugar. • It’s rumored that Marie Antoinette enjoyed meringue so much that she even prepared the dessert herself.

grasses like buffalograss or blue grama grow better in the summer. This being said warm-season grasses can be successfully planted between April and July and like any seed will need consistent moisture to germinate. Because warm season grasses tend to go dormant in cooler weather they are not generally recommended for higher altitudes by themselves, but because of their tolerance to heat and drought many homeowners choose to plant a mixture of both cool and warm season grasses to green-up natural and non-irrigated areas.

f your lawn has been looking less than ideal, the best time to perform lawn rehab is either in the spring or fall when we can take full advantage of any moisture we might receive coupled with the cooler temperatures. Planting grass seed is an easy way to bring your lawn back from the dead and a great way to treat bare spots around your lawn. Many of us will have lawn rehab on our to-do lists this year and if Mother Nature feels like lending a hand with watering than we should all welcome it, even beg for it! Cool season grasses like fescue, ryegrass or bluegrass can be seeded anywhere from March through September and with any luck this spring will be moisture rich. These grasses grow better in the cooler weather of both spring and fall while warm season

Occasional rehab may be needed because of prolonged drought, pests, wildlife damage, increased shade or just plain neglect. Unfortunately, I’m guilty of the last one. Lawn maintenance has not been on my top priority list! Good thing it’s a fairly easy fix. Start by either aerating or at least giving the area a very good raking, removing thatch and dead grass and bringing the soil to the surface. After applying the seed using a spreader, you might want to consider using pelletized straw mulch to help keep in the moisture and avoid losing seed to our heavy winds. You can also apply a starter fertilizer which is usually high in both nitrogen and phosphorus. For the first three to four weeks you will need to keep the seed moist until the grass is well established.

LONELINESS: THE CONSTANT HEARTACHE

HOW TO ENTER THE FRIENDSHIP ZONE AND HAVE ALL THE FRIENDS YOU WANT AND NEED By Dr. Ron Ross

L

oneliness ends when friendship begins, right? So, how do you go from all alone to all the friends you want and need? The solution, though not quick and easy, begins with you, within your own heart and mind. Here are five steps you must take to enter the friendship zone and create and maintain as many real friendships as you desire: Step 1: Show up. You form relationships most frequently from the people you see most frequently. That means if you want to find a friend you must get out of your shell and show up someplace where people you might like to meet can be found. Get active in a cause you support, go to church, volunteer, or search for clubs or other organizations that interest you. When we moved from San Diego to Colorado we moved to a town where we knew almost no one. When the political season started I went to a caucus meeting and met some of our neighbors. Now we have new friends with common interests because I showed up. Step 2: Speak up. It is easy to interact with people who like the same things you like. When I went to the political caucus meeting, I was confident I would meet people who agreed with my political ideas. In the process I got to know a couple with whom I shared much more than a common political position. We asked questions, listened politely, shared personal histories, and were drawn together by what we saw and heard. We spoke up! Step 3: Open up. You move from being buddies into the friendship zone as selfdisclosure increases. A few weeks later

our political friends dropped by for tea on the patio and our friendship deepened. In the comfort and privacy of our patio, we shared even more of our personal lives. We opened up. This important step into the friendship zone is usually gradual and must be reciprocal. Here is how it works: one friend takes a risk and reveals something personal followed by the self-disclosure of the friend-to-be. If the reciprocity continues, the entrance into the friendship zone advances. Experience will teach you when to step into the friendship zone and when to hold back. You can be quite certain the friendship zone is open wide when someone says, “Can I talk to you for a minute?” It is an invitation to intimacy (familiarity or closeness). As time passes, the act of self-disclosure and reciprocity become the glue that binds a friendship. Step 4: Listen up. Good friends know when to talk and when to listen. People who make every conversation about themselves do not stay long in anyone’s friendship zone. Those who know how to listen with skill and empathy have many long-term and meaningful friendships. Good friends listen to each other and by doing so provide emotional support and unconditional acceptance. Step 5: Shut up. Good friends tell us the truth about us, but those who have too many opinions about our mate, golf game, wardrobe, religious convictions, etc., become tiresome and eventually unwelcome in our friendship zone. Another aspect of the “shut up” principle is confidentiality. Someone who broadcasts to others titillating tidbits of confidential conversations, is not a friend but a gossip. To enter the friendship zone, take these five steps and will have the exact number of real friends you want and need.

SEEKING APPROVAL

eeking approval and becoming invested in what other people think are concepts that are very common. Many assume it is important to seek approval and to have an investment in other people’s opinions, but is it really important? Seeking approval means placing power outside of yourself for the very purpose of being validated. That validation can be in your appearance, career, associations, physical activity (sports), �inances, education, religion, or other area in life. Seeking approval is the act of hindering self-respect and self-empowerment while you’re waiting for someone else’s approval, even if that ‘someone else’ is deceased. When people carry a belief that they need to gain approval before moving forward in life or a particular area in life that belief does not simply end because someone has passed on. The belief remains until it’s examined. How was the belief formed? How does it function in the mind? How does it create painful choices, choices that lead to self-disempowerment, self-doubt, and fear?

If the adolescent is seeking approval, he or she might choose the college the parents want and lose the opportunity to enroll in the program of his or her choice. Depending on the intent and depending on the adolescent’s life pathway, that choice can create pain. It is the adolescent’s responsibility to determine a life pathway. Seeking external approval many times leads to suppressed passion, creativity, and self-respect. Having a lot of passion for life and living in general is natural, but it’s not ‘normal’.

EXERCISE CAN CAUSE ASTHMA ATTACK DEAR DR. DONOHUE: I have a 13year-old boy who’s having asthma attacks. At least, that’s what they sound like to me. It started early this year when the weather was still cold. He plays or practices baseball three times a week. When he’d run the bases, he’d start coughing and wheezing. Now that the weather is warmer, he still has attacks, but not so bad. Does this sound like asthma to you? I don’t know that he’s allergic to anything. -- W.O. ANSWER: Asthma is an inflammation of the airways, the bronchi. They become very sensitive, and suddenly narrow and fill with mucus when provoked. Both the constriction and the mucus make it difficult to get air into and out of the lungs. Included in the definition of asthma is reversibility. The constriction and mucus buildup are not permanent, in most cases. The signs of asthma are a feeling of chest tightness, shortness of breath, wheezing and coughing. In your son’s kind of asthma, exercise-induced asthma, the attack comes on five to 10 minutes after beginning an activity. Exercise-induced asthma is not so dependent on allergy triggers. It comes on because cold, dry air irritates the airways. The warmer, moister air is perhaps the reason why his attacks are not as pronounced as they were. You need to have a doctor examine the boy to be sure if this is exercise-induced asthma. Even if he has no symptoms at the time of his doctor visit, the doctor can induce them in a number of ways. He or she also can put an end to them. If exercise-induced asthma is proven, a multitude of medicines are available for control. Most can be taken as mouth sprays.

And that’s what brings us to today’s topic. In a somewhat recent event, the federal government is requiring all auto makers to install backup camera systems on every new vehicle starting in 2018. In a response, auto makers are petitioning NHTSA in hopes to replace traditional rearview and side mirrors with camera systems. As most of you know, currently three mirrors are mandatory with specific magnification requirements on new vehicles. This has long been the standard. But now auto makers are making a good argument that they’re unnecessary.

If that weren’t inaccessible enough, there are only 250 models scheduled to be built and it is currently illegal to drive in the United Sates. What I’m saying is basically that there is no camera-exclusive motor vehicle that we can test to accurately gage what this new no-mirror concept would drive like.

The case is being made that vehicles with no mirrors will be more aerodynamic, fuel efficient, and safe. By replacing the large mirror cases on the outside of vehicles with tiny cameras, car buyers will receive a more proficient product.

I think the automakers have a good point. My only issue lies with the cost. While back up cameras only cost about $150 per car, how often would they need to be maintained or replaced? What if automakers installed cheap camera systems to force the consumer to constantly repair and replace them? It certainly raises some eyebrows. It can also lead to a dan-

gerous situation if people’s camera systems unexpectedly go out on them in the middle of driving. There are obviously some big questions to be answered in this seemingly small change. However, if given until 2018 to fully develop the idea and force the change, I think I’m on board. It would be nice to someday buy and affordable vehicle with a full-fledges camera system installed. No longer will the video mirrors be for luxury vehicles alone! Maybe, thirty years down the road, we can all feel like technological royalty while taking a Sunday drive. LAMB - A UNIVERSAL SYMBOL OF SPRING

L

amb is a symbol of spring, and also has been an important religious symbol for both Jews and Christians. Lamb often is served during the Easter holiday and during some Jewish Passover Seder meals. The Jewish Passover is an historical festival, commemorating the exodus of the Hebrews from slavery in Egypt. The origin of Passover, or Pesach, goes back more than 3,000 years as told in the Book of Exodus. God commanded Moses and the Jews to eat slaughtered and roasted paschal lamb with bitter herbs and matzah to symbolize the Passover sacrifice. God also instructed them to spread the blood of the paschal lamb on the doorposts and lintel above the door of the houses in which they will eat the paschal lamb. This act was God’s sign to “pass over� the Jews’ homes during the 10th plague, which killed the firstborn sons of the Egyptians as a punishment for enslaving the Jews. Passover also celebrates spring and the new growth and harvest season, particularly the earliest barley and cereal harvest. Serving lamb is a central part of both Easter and Passover. Lamb is the oldest domesticated meat species. In many countries, lamb is the major source of meat. Many Americans think of lamb as a springtime food, but it can be enjoyed year round. According to the USDA, each American eats almost a pound of lamb yearly. Lamb is meat from sheep less than a year old, making it especially tender. Most are brought to market at about 6 to 8 months old. If the phrase “Spring Lamb� is on a meat label, it means the lamb was slaughtered between March and October. When selecting lamb, look for good marbling (white flecks of fat within the meat muscle), and meat that is fine-textured and firm. The meat should be pink and the fat should be firm, white and not too thick. The USDA quality grades are reliable guides. Chops can come from various primal cuts. “Loin� chops and “rib� chops are very tender. Less expensive “blade� and “arm� chops (from the shoulder) and “sirloin� chops (from the leg) can be just as tender, but they are not as visually attractive because the meat is separated by bands of connective tissue. This recipe for Spiced Lamb Shanks is a flavorful but simple way to prepare lamb in the slow cooker, and is the perfect dish for your holiday celebration.

1. Place the marinated lamb shanks, onion and garlic in a large slow cooker. Pour in 1 can of low-sodium chicken broth around the edges of the slow cooker. Add the tomatoes, vinegar and agave syrup. Cook on low 8 to 10 hours. 2. Serve lamb shanks with the sauce over whole-wheat noodles, couscous or brown rice. Makes 4 servings. Oven Variation: 1. Preheat oven to 350 F. Heat olive oil in a medium Dutch oven until smoking. Sear shanks until golden brown, about 4 minutes per side. Remove to plate. Add onions and garlic and cook until caramelized. Add chicken stock, tomatoes, vinegar and agave syrup and bring to a boil. Turn off heat and add lamb shanks. Cover and bake in oven for 2 hours or until tender. 2. Remove shanks. Turn heat to high, bring sauce to a boil and reduce the liquid by half. Serve sauce over the lamb shanks. Serve over whole-wheat noodles, couscous or brown rice.

MEDICAL VS. RECREATIONAL USE OF MARIJUANA: DO MEDICAL USERS HAVE MORE RIGHTS? © March, 2014 by Lisa Welch Stevens, Attorney at Law P.C.

I

n my previous article, I discussed recreational use of marijuana, and the ability of property owners and others to restrict such use in certain situations. Recreational use has been legal in Colorado for only a few months, but it is clear from the amendment to the Colorado Constitution that certain restrictions on such use are permissible. Given that medical users of marijuana are consuming it for treatment of medical conditions, one may wonder if third parties are more limited in what restrictions they can place on such consumption on their properties, in their businesses, etc. Based upon a plain reading of the language of the constitutional amendment legalizing medical use of marijuana, the answer appears to be that they may be. As I cited in my previous article, the constitutional amendment legalizing recreational use of marijuana specifically provided that any “person, employer, school, hospital, detention facility, corporation

or any other entity who occupies, owns or controls a property from prohibiting or otherwise regulating the possession, consumption, use, display, transfer, distribution, sale, transportation, or growing of marijuana on or in that property.” Colo. Const. art. XVIII, §16(6)(d). Thus, such persons could include lease restrictions, or rules or regulations, prohibiting anyone from any recreational marijuana related activities on their property. However, it was a different constitutional amendment that legalized medical use of marijuana in Colorado. That amendment did NOT include any such specific provision regarding owners, managers, or “controllers” of property. See, Colo. Const. art. XVIII, §14. It appears from the face of the amendment that if a person has a medical marijuana license third parties cannot simply contractually or by other agreement automatically or preemptively restrict his or her possession, use, consumption, etc. of marijuana on their property. The only applicable restriction set forth in the amendment is that “[n]o patient shall: (I) [e]ngage in the medical use of marijuana in a way that endangers the health or well-being of any person; or (II) [e]ngage in the medical use of marijuana in plain view of, or in a place open to, the general public.” Colo. Const. art. XVIII, §14(5)(a). Therefore, if one’s property is open to the public – used as a store, restaurant, or office, for example –one can prohibit even medical use of marijuana on the property. If one’s property is a multi-family residential property, and a person’s use

or consumption of medical marijuana endangers the health or well-being of a particular third person on the property – such as with second-hand smoke causing or exacerbating a medical condition – one could possibly then prohibit even medical use on the property. Unlike the constitutional amendment permitting recreational use of marijuana, the amendment permitting medical use of marijuana has been in effect long enough that there is some case law interpreting its provisions. For example, the Colorado courts have ruled that employers may terminate employees who test positive for marijuana use, even where such use was permissible medical use under Colorado law. Beinor v. Indus. Claim Appeals Office, 262 P.3d 970 (Colo.App. 2011). And, in such cases, the terminated employee may be denied unemployment compensation benefits. Id. The Colorado

Court of Appeals ruled that the constitutional amendment protected such persons from criminal prosecution for medical use only; it did not give them a right against termination from employment for such use. It is not clear if this reasoning would be carried over to lessor/lessee relationships; for example, permitting lessors to evict tenants using medical marijuana.
