The bottom line when it comes to organic gardening is that organic gardeners don’t use synthetic fertilizers or pesticides on their plants. But that’s not the end of the story. Organic gardeners look at the plants in their gardens as parts of a whole system that must work together with the soil, the water, the wildlife and even the insects in the area. The goal is to keep all the parts of the system working in harmony with each other so no part is negatively impacted by any other part.
GETTING YOUR GARDEN GOING To begin your organic garden, you just need to follow a few simple steps.
WHAT YOU NEED TO BEGIN AN ORGANIC GARDEN
• Step 1: get your bed ready. Once the soil is dry enough that it doesn’t clump when you pick up a fistful of it and about three weeks before you are ready to plant, dig down into the dirt with a fork to loosen it up to a depth of about 12 inches. Add about one half inch of compost and rake through the soil to mix it together and make sure there are no weeds, clumps or big rocks. Spend the next three weeks pulling out any weeds and raking to help loosen the soil and bring out any weed seeds that might be hiding in the soil.
Because an organic garden heavily depends on the soil used to grow the garden, special attention must be paid to what goes into that soil. The regular addition of organic matter is key to creating good organic soil. The best way to achieve this is to use organic resources that you have readily available. Lawn clippings, fall leaves and other decaying plant waste, eggshells, Epsom salts, bone meal and vegetable scraps from meals you’ve prepared are perfect for incorporating into your soil. Compost is another great material to add to your soil to provide excellent
• Step 2: dig shallow holes or furrows for your seeds. You can plant in rows or in sporadic holes throughout your bed.
TIP: it’s wise to mix the plants you place in each bed so that if a pest zeroes in on one plant in one bed, you’ll have other plants in other beds to rely on. • Step 3: water lightly. Thoroughly moisten the soil but don’t drench it. Watering before planting your seeds rather than after protects them from being either swamped or washed up and out of the soil. • Step 4: sow your seeds. If you dug a furrow or trench, spreads throughout it. If you dug holes place, two or three seeds in each hole. Read your seed packets to determine how far apart you’ll need to plant them. You can always thin them out after they sprout if they’re too close. • Step 5: cover your seeds with soil. Sprinkle soil over your seeds, pressing down gently so the seed is in contact with the soil; they won’t grow otherwise. Some seeds need light in order to sprout so read the package to determine if you need to cover them less than some of the other seeds. • Step 6: water. Because your soil should be moist at the time you plant your seeds, you won’t need to do anything immediately. But be diligent to sprinkle water on the garden whenever the surface is dry until all your seeds have sprouted. Organic Gardening... Continued on Page 3

TIPS TO ACHIEVING A SUCCESSFUL GARDEN ORGANICALLY • If you’ve got a nasty weed problem or need to clear out a huge mass of weeds from a new bed, use the sun to cook them out. In late spring or early summer, get rid of as many of the weeds as you can and then moisten the soil and cover it with a tight layer of clear plastic. Weigh down or bury the edges of the plastic and leave it in place for about six weeks so the sun kills any weeds seeds left over. • Once your seeds have sprouted, cover the garden with mulch. Spread a layer, about two inches thick, of organic mulch like straw, dried grass clippings or shredded leaves on your garden to keep light from reaching any weed seeds present in your soil. • If weeds do sprout, pull them as quickly as you can. You might find yourself doing this every day but doing so will help keep the weeds from getting out of control. • To control pests, don’t use nasty pesticides to kill them off. Plant herbs and flowers throughout your vegetable gar-
den to lure predatory insects (like ladybugs) to your garden to take care of your pest problem. If the bad bugs are still lurking in your garden, use insecticidal soap or clove oil herbicide to get rid of them safely.

harvesting tomatoes in Colorado very doable. First of all choose the quickest maturing varieties of tomatoes. 55-75 days is preferred because ripening slows when temperatures drop. Determinate varieties of tomatoes are good choices for shorter growing seasons because they do most of their growing before fruit set and they tend to mature early. They are also great choices for containers and small gardens.
THE BENEFITS OF GROWING TOMATOES IN COLORADO

id you know that in warmer climates tomatoes will stop producing because it is too hot? That, as I’m sure you already know, is not a problem we have here. But it is important to note that every climate has its perks and every climate has its problems. One perk for Colorado is that you won’t run into it being too hot for your tomatoes to produce. Our short season on the other hand, while great for cool crops like lettuce, can be a problem for tomatoes. Tomatoes are not fans of frost, and the cool night-time temperatures interfere with pollen formation and fruit ripening. The good news, I think, is that it is easier to create a warmer environment than to drag an air conditioner into your garden. There are several tips that make growing tomatoes, and even more importantly,

Possibly topping the importance of what kind of tomato you choose is where you put your tomato. Tomatoes need plenty of sun and warmth. Choose an area that gets at least seven hours of sun. Planting near masonry or boulders creates a microclimate because the boulders will absorb heat and release it at night, keeping your plants warm. Many varieties will not set fruit until night time temperatures have reached 55 degrees. Using either a simple hoop house or water tubes are an inexpensive and effective way to keep the night-time temperatures high enough for your tomatoes to produce. This can extend your season on both sides considerably.

LONELINESS: THE CONSTANT HEARTACHE THE TOP TEN EXCUSES FOR NOT TALKING TO YOUR MATE - PART ONE By Dr. Ron Ross
W
hat three qualities make for a great relationship? In nearly every survey one word will always appear: communication. Then why do so many couples make every effort to avoid talking with each other? Here are my top ten excuses men and women use to avoid meaningful personal interaction. The list is not in any particular order except excuse #1, which shall be revealed in the next column. Excuse #10: The Smarthone. How often have you seen a lovely couple sitting in a restaurant not talking, but gazing at their Smartphones when all of a sudden one of them rings? “I’m sorry honey I really need to take this call.” But the other person does not care because they are reading text messages on their phone. Any meaningful conversation between the two dies a quiet death. Excuse #9: The job. “I’m sorry, but I have to work late to get these contracts in the mail.” For many couples, the dirty little secret is that one partner is happier at the office than at home so he or she seeks out projects that keep them at work. The person at home can complain, but the job remains an easy, irrefutable, conflict-avoidance alibi. Excuse #8: Exercise. Health is important and a good enough excuse to ignore difficult issues that crop up between people who love each other. “I’ve got to get in my 5k run again tonight or I’ll loose my edge” may really mean, “I prefer the quiet solitude of jogging over the noisy complaining of my mate.” When the runner comes home he/ she has two more excuses for not talking, “I’m out of breath and besides that, I need a shower.”
Excuse #7: Television. No other invention of man has done as much to inhibit human conversation as the TV. The late Ann Landers opined, “Television has proved that people will look at anything rather than each other.” The vital matters a family may need to face can be quickly set aside in favor of Dad’s favorite sports team or Mom’s favorite mystery.
PASSION
Excuse #6: Computer. If someone is at work on a computer it means they are doing something important, right? Interrupt them and you will find out just how unwelcome your invitation to conversation is. “Stop interrupting!” they will snap, “I have 127 unopened e-mails!” Peek over their shoulder and you will find they are probably reading one of 47 old jokes forwarded to them by a college-roommate.

assion is an energy that is misunderstood much of the time. Many may think they are passionate about a topic when they become really excited about it. Many dislike passion because they may see it leading to displeasing behaviors, such as protesting. Many do not really understand passion, its purpose, and why it is important to be passionate.
Excuse #5: Do-Good. Another legitimate excuse to be incommunicado is to volunteer for something more important than everyone in your family; something like world peace, global warming, or assistant coach for the kid’s soccer team. I was able to escape from my family on Saturday mornings for an entire year because I had to attend a men’s prayer breakfast at Village Inn. My wife could not argue with me because it was about prayer and what could be more important than talking to God?
First, passion is an energy that everyone has the ability to feel. It is important to develop a passion for life, living, and growing. That type of passion is not short-lived, such as excitement. Excitement can last for a short period of time and can be easy to destroy or decrease. True passion is an energy that remains intact. It is an energy that a person would activate at will without having to really work at it. Passion can also be misinterpreted for anger.
Well, maybe, talking to your family! But it is much easier to talk to God than to the wife and kids. Besides that, God does not talk back and he does not ask me any of those thorny questions. Next week, the “Final Four” of: The Top Ten Excuses for NOT Talking to Your Mate.
Strong passion can be delivered in a strong method. A person who carries an abundance of passion may demonstrate that with a loud voice, animated body language, strong opinions, and a strong selfpresence. Passion is not anger, nor is it judgment. The person demon-

PAGET’S DISEASE: BONE BUILDING GONE WILD DEAR DR. ROACH: For several years, when I have had blood drawn it has shown an elevation in the alkaline phosphatase. It has been as high as 377 in recent tests. I have had the test to see if it was from the liver, but it was all right. I recently had a bone scan, and the doctor suspects Paget’s disease and is referring me to a bone oncologist. Do you have any comments in regard to this? -- D.C.A. ANSWER: Alkaline phosphatase is an enzyme that, when found in the blood, usually comes from the liver. Conditions such as gallstones or others that affect bile flow are the most likely to increase the level in the blood. However, alkaline phosphatase also may come from the bone, and in this case, Paget’s disease is the most likely cause. Your doctor may have determined where the alkaline phosphatase is coming from by ordering a special isoenzyme blood test. The bone scan is usually diagnostic for Paget’s. Paget’s disease is thought to result from abnormal osteoclasts, the cells that normally remodel bone. The osteoclasts break down bone, and osteoblasts build it back up again. Bone needs to be replaced over time to repair any microscopic cracks that have formed. Without normal bone turnover, the bones become brittle. In Paget’s disease, the bone remodeling in one or more particular areas is excessive, causing bone buildup. The most common sites are the skull, spine, pelvis and leg bones. or years we’ve been told to focus on plant-based proteins (beans, for example) rather than meats and cheeses from animal-based proteins. Now all that may change -- depending on our age. Two studies, released within a week of each other, concur: In middle age, a high-protein diet makes us four times more likely to die of cancer, especially animal proteins like cheese, meat and milk, which increases overall deaths. Yet after age 65, an increase in protein is healthy. One study, reported in the Journal of the American Geriatrics Society, suggests that as we age, we don’t absorb protein like we used to. This lack of protein can lead to a decline in cognitive abilities, as well as how we function in activities of daily living. Researchers studied the diets of over 1,000 seniors with an aver-

t’s about that time of year again for gas prices to skyrocket. It happens every summer. Still, like the year before, people will act shocked and complain that gas has lunged to over $4 per gallon. Then, November and December will roll around and folks will be relieved to see prices dropping to just under $3. Then, the cycle will repeat. None of this really means anything. The fact is that we the people will live with the cost and hope for cheaper days ahead. It does however change one major thing about the summer. In contrast to the ties of my childhood it is often now cheaper for people to fly to their summer vacation destination; which leads me to this week’s rant, airplane safety. I’m not paranoid at all. I’m not one of those people that start shaking when the

Now there are some myths about airplanes we should get out of the way. For example, I’ve heard people speculate about flying with pets a lot. It’s been told that they’re just thrown under the plane and left to survive in an unpressurized, unheated hole. That’s not exactly the case. In fact, at 30,000 feet without heat in an unpressurized cabin, pets would die. In fact, dogs, cats, and other cuddly creatures are left in the hold, where it’s warm and safe. So that’s comforting. What’s uncomforting is the most basic of airline niceties. The coffee and tea are a prime example. While it may seem harmless to have a cup next time you fly, you might want to give it careful consideration. The EPA actually warns people with at-risk immune systems to stay away from airplane water. The tanks that
hold water below the plane are popular breeding grounds for bacteria and other nonsense.

Another concern in the diary of said flight attendant pertained to what is usually the most comforting airplane extra – pillows, blankets, and headphones. Though they may come in a fancy plastic bag, folded and neat, there’s about a 90% chance they haven’t been washed in a long time. The turnover between flights is usually hectic and the staff is forced to get the necessary things done. Those things don’t include washing blankets and pillow cases. So the next time you’re looking to take a nap in flight, you might consider your own pillow as a carry-on.
It’s not as if people who fly are constantly walking off the plane with rare ailments. It’s just a few pointers for your next trip. While you may have more control over the elements when you choose to road trip, you are also subject to a longer journey, wear-and-tear, and the aforementioned high fuel prices. My advice (worth all of two cents) is to take the cheaper, more comfortable route, whichever that may be. Just don’t drink the coffee.

A FAMILY BUSINESS CAST IN IRON
C
ast-iron skillets, pots and Dutch ovens are enjoying a surge in popularity among cookware users all across America, and no wonder: It’s inexpensive, long lasting, eco-friendly, sustainable, versatile and healthy! Cast iron is no longer just for the camper or cowboy -- today, it’s a staple piece of cookware in any kitchen helmed by a cook who loves good food. Traditional cast iron is the original non-stick cookware. It is seasoned with vegetable oil baked onto the iron at a high temperature, creating its natural, easy-release properties. The more you cook, the better it gets. Seasoning also protects cast iron from moisture -- and rust. Because you create, maintain and even repair the “seasoning,� your cookware can last 100 years or more. Chemical non-stick coatings cannot be repaired, greatly limiting their lifespan. Cast iron also retains heat to cook evenly without hot spots. Its ability to withstand and maintain very high cooking temperatures makes it a good choice for searing or frying, and its excellent heat retention makes it a good option for longcooking stews or braised dishes. Cooking with cast iron even may offer health benefits. An American Dietetic Association study found that cast-iron cookware can leach significant amounts of dietary iron into food, which may benefit anemics and those with iron deficiencies. My favorite cast iron cookware is made by the Lodge Manufacturing Company in South Pittsburg, Tenn. (population 3,300) alongside the Cumberland Plateau of the Appalachian Mountains. It was here that Joseph Lodge and his wife, Susan, settled an 1896 and opened his first foundry. Lodge created a legacy of quality that has thrived through two World Wars and the Great Depression, and is still carried on by his family today. In 2002, the Lodge Logic line of pre-seasoned cookware was introduced, eliminating the hassle of its unseasoned counterparts. It was an industry first that has since become an industry standard. With the proliferation of television cooking shows and a rise in consumer demand, Lodge broadened its variety of cookware with its Porcelain Enameled Cast Iron, in which a smooth porcelain surface is bonded to the iron. The product marries the best of both materials: The heat retention of cast iron and porcelain enamel’s beauty and resistance to acidic and alkaline foods, which unlike cast iron, allows it to be used to marinate and refrigerate. A recent innovation is the Lodge Seasoned Steel line features 100 percent carbon-steel skillets that are Americanmade and seasoned at the Lodge foundry. They can hang tough in professional kitchens as well as the campsite. A new cookbook, Lodge Cast Iron Nation, provides 200 recipes curated from Lodge’s network of high-profile chefs and
cast-iron cookware fans from around the country. Packed with classic regional casseroles, soups and stews, new twists on old favorites, plus desserts from the icebox and the oven. This cookbook proves that cast iron isn’t just for cornbread.

CHICKEN CROQUETTES I’ve adapted this family recipe from the Lodge Cast Iron Nation cookbook, doubling the amount of the White Cream Gravy used as a binder in the recipe to serve as a side with the croquettes.

White Cream Gravy: 5 tablespoons unsalted butter 1 tablespoon vegetable oil 1/2 cup all-purpose flour 1 teaspoon salt 1 teaspoon black pepper 1 tablespoon poultry seasoning 1/4 teaspoon cayenne pepper 2 cups whole milk 1 tablespoon Worcestershire sauce

Chicken Croquettes: 2 cups cooked chicken cut into small pieces or 2 cups cooked ground chicken or turkey 1/2 cup finely minced green onions, green tops and white ends 1 large egg, beaten 3/4 cup fine breadcrumbs or Panko breadcrumbs Vegetable oil

1. Melt the butter and add the oil to a Lodge 10-inch cast iron skillet over medium heat. Add flour, salt, black pepper, poultry seasoning and cayenne pepper. Stir for 3 to 4 minutes, without coloring the flour. Slowly pour in the milk and the Worcestershire sauce, stirring all the while, and continue to stir until the white sauce thickens. Pour half of the white sauce into a bowl and set aside. 2. Add the chicken and the green onion to the remaining white sauce in the pan. Place the chicken mixture into a bowl, cover and set it in the refrigerate for at least 30 minutes to cool. To Make the Croquettes: 1. Place a beaten egg into a small bowl. Place the breadcrumbs on a plate. When the chicken mixture is cool, take a rounded tablespoon of the mixture; first dredge it in the crumbs, then coat with the beaten egg, then dredge the croquette with the crumbs again. Refrigerate the croquettes in a single layer in a covered dish for several hours to firm up. 2. In a Lodge 10-inch cast-iron skillet, heat 1 inch of oil over medium to high heat. When the oil is hot, fry the croquettes in batches (don’t crowd them in the pan because they will steam and won’t get crisp), turning often until croquettes are a golden brown. Drain on paper towels. 3. Re-heat the reserved White Cream Gravy and serve it on the side with the Chicken Croquettes. Serves 6 to 8.

Fake Pregnancy Need to buy a positive pregnancy test to push a romance toward marriage? You can, if you hand over $25 or $30 for a fake positive test. Ads apparently are turning up all over the country. Checkmate Do you like to play chess? If so, you could be targeted by the Susan Polgar Institute for Chess Excellence, aka SPICE. The Institute is real, from Webster University; the SPICE scam isn’t, coming from Russia. The scammers will invite you to become an “ambassador” for chess for a year and earn $25 million for that year. Of course you first have to send the scammers some money. If you see an email with the subject line “Chess Contract,” delete it. Don’t download the attachment and don’t fill out the form, which asks for personal information. Spy TV Is your television spying on you with hackers selling the data? Presenters at the Mashable conference produced a video showing what’s possible on the new smart TVs, especially if you’re
