n this day and age, we all want something we’ve never seen before. It’s gotta be new and it’s gotta be better than before. Whether it’s the newest phone or the next hybrid car, we want something that’s innovative and different. That mentality doesn’t stop when we sit down for a meal. Fusion cuisine is our answer to the same old menus at the same old restaurants. But what is fusion cuisine, anyway? It sounds cool, kind of scientific and mysterious. And above all else, is it any good? To figure out what all the “fusion” fuss is about, Snippetz decided to take a closer look at this style of cooking. And to help educate all those curious palates out there, we decided to break it down for you . . . and it’s all right here!

Aken, who is thought to have borrowed the term from the music world. He said it was a perfect descriptor for the type of cooking he was doing, which was heavily influenced by Spanish, Cuban, African American, Native American, French and West Indian flavors and techniques.

One of the earliest documented forms of fusion cuisine is from the ancient court of the Ayutthaya Kingdom, which existed from 1350 to 1767. They combined Thai red curry, Chinese roast duck and Persian grapes to create a dish called “kaeng phet pet yang” or Thai roast duck curry.

The term “fusion” pretty much sums up what fusion cuisine is all about. It’s about merging two or more forms or styles of cooking to create something new. Sometimes it involves combining two different regions’ styles of cooking, such as foods from two different parts of Asia to create Asian fusion cuisine. Different regions of Asia are merged into one meal to create a new breed of food. Other fusion cuisine involves bringing together food from completely different areas of the Earth. For example, bringing together traditional ingredients from Mexico or France with pizza to create a brand new form of a typically Italian dish.

Wolfgang Puck opened his first fusion-inspired restaurant in 1983 in Santa Monica, California. It was called Chinois and featured Asian cuisine, merged with the fresh, bright tastes of California cooking. He said he got the idea because he wanted to do Chinese food the way he wanted to, not necessarily in the textbook Chinese manner.

Modern day fusion cuisine is usually considered to have started in the 1970s even though it’s clear that it wasn’t the first time in history that the idea of combining strange cooking styles or ingredients occurred to humans. The fusion cuisine movements started with a group of French chefs who put together traditional French food with Asian food, especially that of Vietnam and China. Apparently, the outcome was a success because the concept took hold and spread throughout Europe and Asia and eventually emerged in California.

Fusion cuisine isn’t limited to just the use of ingredients from different areas merged together. It can also be the use of different cooking techniques that aren’t typically used in a certain style of cooking can be considered fusion cuisine. For example, using typically Greek ingredients like spiced lamb and capers rolled together with Greek-style rice and grape leaves, mimicking the way Chinese eggs rolls are prepared can be termed fusion cuisine.

The fusion idea took hold and chefs around the world began trying different flavor profile and style combinations. Although fusion cuisine had been widely used for at least a decade, it went mainstream in the 1990s. Chefs like Nobuyuki “Nobu” Matsuhisa, who brought together Japanese techniques with South American ingredients, helped spread the word about successful fusion cuisine.

THE HISTORY OF MODERN FUSION CUISINE

Nobu Matsuhisa opened his first fusion restaurant in Beverly Hills in 1987. In 1992, the restaurant, The Cheesecake Factory jumped on the fusion bandwagon and began serving fusion cuisine, which featured the successful Spanish-Italian combination

chicken chipotle pasta. That same year, Jean-Georges Vongerichten opened his restaurant Vong in Manhattan which featured a French-Thai fusion. His menu highlighted entrees like sautéed foie gras with caramelized mango and ginger sauce. In 2010, chef Danny Bowien opened Mission Chinese in San Francisco. By then, people were concerned with the care with which fusion restaurants were creating their dishes and Bowien had to defend his idea by claiming it wouldn’t be a strange Mexican-Chinese food truck but instead termed his dishes “Americanized Oriental food.” Three years later, Bowien opened Mission Cantina in Manhattan which featured dishes similar to those at his San Franciscobased restaurant. Both have demonstrated successful fusion cuisine.

CLOSE BUT NO CIGAR Not all fusion cuisine works. And history has shown us that, even though it can work when done well, it can also work to the detriment of a restaurant when not executed properly. Critics of fusion cuisine, as we mentioned before, claim that too many chefs or restaurateurs have attempted to merge styles in a manner that just doesn’t quite fit the bill. Some claim that it cheapens the food because the fusion isn’t being done in an intelligent, thoughtful manner. It’s used to bring customers in and that’s about it.

In the early 2000s, fusion cuisine critics began hammering careless cooking. In 2001, Albert Sonnenfeld, co-author of “Food: A Culinary History” claimed that fusion cuisine often combines too many elements together, confusing ingredients with flavor. In 2002, Felipe Fernandez-Armesto wrote “Near a Thousand Tables: A History of Food” and said that fusion cooking should be called “Lego cookery” because it haphazardly combines ingredients without care.

To make fusion cuisine truly work, the masters of this cooking technique say that the food shouldn’t seem forced. Rather, it should be an organic, seamless extension of what they know to be successful. It should include elements of their experiences, interests and often their unique heritage as well.

While it seems that fusion cuisine may have lost some of its steam in recent years, it appears that it is here to stay. With thoughtful execution and cooking shows like “Chopped” that require chefs to combine elements that typically wouldn’t be used together, it’s likely that we’ll see more fusion-inspired restaurants in our future. And let’s not underestimate the influence we consumers have on the food industry. We want new, different, unusual and above all, we want options. As long as it’s tasty, we’ll keep coming back for more . . . but we’re also going to want to try the next big thing so chefs had better keep fusing or we might lose interest!

While it’s not as easy as just having a tomato grow as a perennial there are several tips that make growing tomatoes, and even more importantly, harvesting tomatoes very doable! First of all choose the quickest maturing varieties of tomatoes. 55-75 days is preferred because ripening slows when temperatures drop. Determinate varieties of tomatoes are good choices for shorter growing seasons because they do most of their growing before fruit set and they tend to mature early. They are also great choices for containers and small gardens.

COMMUNICATING TO TEENAGERS

o one every said parenting a teenager was easy. But then, no one ever said being a teenager was easy. There are few teenagers out there who do not experience strong hormonal changes, fluctuation in moods, friendship issues, teacher issues, a feeling of not belonging at some point, or a general feeling of inadequacy. But that is part of growing up. It’s a fact of life for many teenagers. The question is how do you, as a parent, maintain a positive relationship with your teen so they’ll want to be around you after they’ve moved out and are living their own lives? It can be said that most parents argue with their teens about something. Maybe it’s about curfew, money, cell phone bill, sports, friends, clothing selections, drugs, smoking/drinking, or something else. Teenagers want to feel independent and safe at the same time. What becomes difficult for many is how they communicate that desire. Effective communication is a learned skill. It’s not usually something that is learned overnight. We either learn it through continued practice with our own parents or we proactively learn how to communicate through another source, such as later counseling. Either way, effective communication is key to a healthy relationship, especially with teens.

But if that safety, love, and nurturing are not routinely and unconditionally offered, in the younger years, it makes it difficult for the teen to trust you now. But it’s not impossible.

How many times do parents interrupt their teen before he or she is done speaking? Strawberries like their soil and weather just so. It also appears they have suffered from our loving them too much. This oncedelicate fruit is now commonly grown on Ponderosa-sized farms. What were once tiny jewels are now bright red golf balls (all the easier for field hands to pick). It’s widely believed that this attempt to bring mass quantities to a demanding public has compromised the strawberry’s irresistible sweet-tart flavor. While it’s not impossible to find a ripe, honeyed berry in your grocery, when late spring comes, I suggest you hit the road and head either to a farmer’s market or small farm stand.

for is mold. Strawberries are highly perishable, don’t travel well and are known to start spoiling even as they sit there looking attractive. When you get home, refrigerate them, and then wash as needed. In addition to strawberry ice cream, shakes, pies and jams, or a bowl of fresh strawberries and cream, there are other ways to accentuate these treasures. Strawberries pair well with many herb and citrus flavors, such as mint, lemon verbena, the juice and rind of lemons and oranges. You also can experiment with herbs such as tarragon, basil and lemon thyme. A little sugar or a great honey also will enhance the flavor of even the most perfectly ripe berry. Whipped cream, creme fraiche or a good quality Greek yogurt pair perfectly strawberries. Strawberries also go well in savory dishes, and can be used in salads and sauces to add a bright dimension of flavor. Like so many foods, the essence of strawberries will intensify when roasted, either for desserts or as a surprising and attractive addition to side vegetables, such as carrots or beets. Try my recipe for Roasted Strawberry Jam, and be adventurous with strawberries!

Roasted Strawberry Jam When cleaning strawberries, be sure to avoid soaking them in water. Strawberries are very porous and will become waterlogged and lose some of their flavor.

4 pounds ripe strawberries 1 cup granulated sugar 2 tablespoons lemon juice or orange juice 1 teaspoon vanilla extract 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper 1. Preheat oven to 350 degrees F. 2. Rinse the strawberries thoroughly. Cut off tops and carve away any discolored or mushy parts. Quarter or dice each berry. 3. Place berries on foil or a parchment paper-lined roasting pan. Mix the berries with the sugar, juice, vanilla extract, salt and pepper. Spread berries evenly across the surface of the pan. 4. Roast for approximately 2 hours, 15 minutes, stirring every 20 to 30 minutes to prevent burning and sticking, making sure to scrape the sides of the pan.

5. Remove strawberries from the pan. Allow to cool slightly before using. Pour into an airtight container and refrigerate overnight to firm. Makes 1 1/2 cups.

Their imaginations run wild. But what if I told you not all of these wild illusions were completely out of the realm of possibility? Therefore, these cultures encountered a lot of bones they had no explanation for. With a lack of historical and scientific knowledge, this led to people creating the Dragon as a means of explaining the fossils.

In this age of never ending information it may be hard to realize that back then there was virtually no form of communication between cities and towns, much less nations. How is it then that almost every continent on Earth has Dragons in their ancient tradition? It seems it would take an enormous coincidence for thousands of different people all living on different parts of the Earth to create the exact same mythical creature. Too much of a happenstance for this humble writer.

I know what you’re thinking - what a weak argument DD’s. I totally agree. Based on my third and fourth paragraph it should be clear to everyone that Dragons did exist, long ago. But if you need a little more evidence, consider my seventh paragraph. Dragons exist right now! It’s true. Though the creatures I’m referring to are quite tiny, they are a doppelganger to the common image of Dragons we’ve seen throughout our lives in paintings and movies. They’re called Draco Volans (which is science-talk for Flying Dragon). The thumb-sized rare

So then, wouldn’t it make sense that Dragons really did at one point live? Not necessarily. Some historians point to confusion and misunderstanding as the source for the Dragon’s origins. We’ll call these folks DD’s (Dragon-Doubters). The

species is capable of flight and is a carnivorous reptile. While it doesn’t breathe fire, the tiny creature is great evidence for the all the believers out there who choose to believe that Dragons are/were real. I hope you’ll carefully consider the facts from both sides that have been clearly laid out in this non-partisan article. Perhaps I’m crazy. Maybe I’m one of those who live in a “fantasy world,” I don’t know. Either way, the DD’s out there won’t be ready if/ when the Dragons invade. I on the other hand will have my shelter, weapons, and army prepared. Whose side are you on?

ANSWER: I take night sweats seriously. Tuberculosis is the classic cause of night sweats, which is of immense concern in a nursing facility, where most people are tested for TB yearly. But other chronic infections, high thyroid levels and even blood and marrow diseases like lymphoma can show up with night sweats. Most of the time, a chest X-ray and blood tests, along with a careful exam, can make the diagnosis. Other times, it’s harder to find. More often, it goes away as mysteriously as it came. But it is worth another look.

GETTING OUT OF BED LEADS TO HICCUPS DEAR DR. ROACH: I have a strange question to ask and hope you can answer it in your newspaper article. Every time I stand up from being in bed, I get hiccups that last about a minute or so (at least a dozen hiccups). I was wondering if there is a medical reason for this, or is it something that is just a fluke that happens to me? -N.C. ANSWER: It’s not just you; I have heard of several cases, and I suspect it’s not that rare. It’s thought to be brought on by a change in position of the stomach, which causes a reflex in the diaphragm. Esophageal irritation, especially from reflux disease (stomach acid going backward into the esophagus), also might be a cause. The booklet on heartburn explains reflux disease. *** DEAR DR. ROACH: Several months ago, I developed a hernia on my right side, but with no pain. My doctor said I do not need an operation, because there is no pain. Do you agree? I am 74 and in exceptionally good health. ANSWER: A hernia is a weakness or defect in the abdominal wall, through which abdominal structures can pass. Watchful waiting is a reasonable choice for an asymptomatic hernia -- one that causes no symptoms -- since only a minority of people with a diagnosed hernia will need surgery due to development of symptoms. The biggest risk is part of the intestine coming through the hernia and becoming stuck, which is called a strangulated hernia, and is a surgical emergency. Since most people do very well with surgical repair, many surgeons recommend surgery even on hernias with no symptoms in order to prevent this complication.

NOW IT’S ISTANBUL, NOT CONSTANTINOPLE: BUT ISN’T IT STILL THE SAME THING? ALTER EGOS OF BUSINESS OWNERS AND PERSONAL LIABILITY Part 2 of 2

ast week, I discussed how merely changing a business’ name does not insulate the resulting “Company #2” from being liable for debts of and legal judgments against “Company #1”. No, business owners, it is not that easy for your business to wiggle out of its obligations. A rose by any other name DOES smell just as sweet (yikes, mixed metaphors). As most business owners know, from a legal and financial move, to reduce personal risk it is smart to operate your business through a registered limited liability entity, such as a corporation, LLC, etc. A properly formed, currently registered, properly maintained entity in good standing with the Secretary of

State is, legally, its own, separate legal person (yes, it is a “person”, although not a natural person). So, any debts of or judgments against that separate legal person can’t be enforced or collected against the natural person owners. The owners have no personal liability for that separate entity’s debts or judgments. The owners’ personal assets are safe. But it is not enough simply to do business under a name different from your own. Let’s assume “Constantinople” is a natural person, a human being, who starts running his business under the name “Istanbul”. It is not enough for “Constantinople” to start calling himself “Istanbul”, to avoid having personally to pay any debts and judgments entered against Istanbul. First, as I said, Constantinople has to incorporate or organize Istanbul as a separate legal person, buy registering “constituent” documents with the Secretary of State (articles of incorporation, of organization, etc.). It has to get Istanbul its own taxpayer identification number to use, instead of Constantinople’s social security number. It has to get Istanbul its own, separate, bank accounts. Second, if it wants the courts and debt collectors to treat Istanbul as its own separate legal person, Constantinople has to do so too. This means no using Istanbul’s money and accounts to directly pay Constantinople’s personal debts and obligations. This means no commingling of both Constantinople’s and Istanbul’s money in the same accounts. This means keeping corporate records, and keeping Istanbul in good standing

FIVE QUICK STEPS TO STRONGER SELF-CONFIDENCE By Ron Ross

A

wkward, shy, indecisive. Do those words describe you? Do you often interpret non critical comments as critical? Are you perpetually pessimistic about people, places and events? What you need is stronger self-confidence, a more honest sense of your own self-worth. Here are five quick steps you can take that if implemented over time will create within you a stronger selfconfidence. Step 1: Emphasize your strengths and minimize your weaknesses. Low selfesteem starts inside your own head. It is a result of what you focus on, what you think, say and feel about yourself. Start applauding yourself for the things you accomplish, even if they are modest; and stop focusing only on the mistakes you make. You tend to get what you think about. Step 2: Get out of your cocoon and take some risks. Life is full of possibilities unless you are sitting in the closet of your bedroom gazing at your navel thinking “woe is me.” See change as good, look for opportunities to get involved in something where you could win or lose. All kinds of possibilities will come your way once you look beyond your miserable self and take a few chances. Fail a couple of times, get back up again, and you will discover even the best of folks flop from time to time and they are still alive when it is all over. Step 3: Change your self-talk. Most of the stuff we say to ourselves is negative. I am over 70-years-old and I play bas-

he Gleneagle Sertoma Club hosted another successful Wine and Food Tasting event at the ProRodeo Hall of Fame on May 17th in Colorado Springs. Appropriately titled “Spirits of Spring,” over 300 guests enjoyed gourmet food and samplings of many great wines and beers. Eleven restaurants and 14 wine and beer vendors offered their best to

ketball twice a week. The problem with senior basketball is that making improvements in our skills is well nigh impossible. However, because of some positive selftalk last week I played the best basketball I’ve played for 5 years! And everyone noticed! It was fantastic. So whatever the bad language you are using to talk to and about yourself needs to change. Encourage yourself. Be nice to yourself.

Step 4: Protect yourself from critics. Do you have a friend, parent, child, husband, wife, boss, etc. who criticizes just about everything you do? Two words: avoid them. Did you read the news item the other day that said people who are nagged constantly tend to die younger? Perhaps they want to die because it is the only way they can get out from under the barrage of depressing criticism. Well it isn’t the only way. Stay away from critics. Step 5: Evaluate yourself first. If you suffer from low self-esteem you may rely too much on the judgments and opinions of other people, never confident in and of yourself about anything you say, think or do. The problem is those “other people” may not have your best interests at heart and their judgments may be flawed or just plain cruel. So start with your own evaluation first and don’t let other people’s assessment always trump yours. Is any of this easy? Of course not. If it was easy, everyone would be walking around with a great sense of confidence and poise. Can you do it? Of course you can. Pick out any one of the steps and start working on it until you see some progress. Don’t be in a rush, take your time but do not give up. Then take another step and before you know it you will be Mr. Confidence or Ms. Self-reliance and won’t it feel good!
