Chef Spotlight: Josh Marling

Located less than an hour from Tunica, Mississippi is one of the South’s hottest casino properties, Southland Casino Hotel. From what was once a greyhound track, the property has been completely transformed into what is today a luxurious casino resort with a 300-room hotel and plenty of dining options to enjoy.

We had the opportunity to catch up with executive chef, Josh Marling, to hear more about what he and his team do to deliver great dining experiences time and time again.

G. Douglas Dreisbach: Casinos are known for having premium dining options and Southland has certainly raised the bar in that space over the last few years. Tell us a little bit about yourself and how long have you been a chef and been at Southland?

Chef Josh Marling: I started with Delaware North in the casino about 20 years ago as a dishwasher in Wheeling, West Virginia, and worked my way up through the ranks with the company. I have been at Southland for about eight years now. The team has worked very hard to get the property up to where it is now, and it shows. We are excited to showcase it.

GDD: How do you ensure the best quality of food for your guests?

JM: We spend a lot of time looking for locally sourced items for Southland. We put a lot of effort into going to farms and making sure their farming practices are where they should be. Then we try to feature those items on the menu on a consistent basis with the seasons and push that quality forward.

GDD: When you are looking at farming practices, what kind of practices and standards are you looking for?

JM: We look for several things when we visit, and really try to use locally sourced product from within an hour of the property. When we look at our pork, we make sure it is humanely raised in a pasture, not in a pen, so we look at those kinds of things as well, and how they’re actually raised and taken care of.

GDD: Can you taste the difference from what you just mentioned, range free, to non-range free or cage kept?

JM: Absolutely. Our thought is that if it’s a happy pig, it’s more tender and more flavorful. We know that they did everything right just to get it to the table.

GDD: The property has undergone many enhancements over the last few years. Tell us about some of the updates and additions that guests will see from a dining perspective and if they haven’t been in a few years, why they should come back.

JM: Well, every restaurant in the building is new, except for one. You can go to the Ignite Steakhouse, which is our upscale steakhouse, and the moment you walk in, you see everything that’s on the menu in a meat display case making for a great first impression and dining experience. Everything is cooked on charcoal. Steaks are cooked on charcoal, which is locally sourced from Missouri. You can also go to the Fry House, and everything is cooked to order, nothing is frozen. Everything is fresh. The buffet, which is called The Kitchens, is also a unique dining experience as everything is cooked to order on the line. We employ that everything stays hot and fresh, so we cook to order based on the crowd and we really strive for freshness and quality in our buffet. We also have The Grind and Seasons Café, which is our coffee bar and our casual breakfast area, as well.

GDD: At Ignite Steakhouse, what are some of the menu items that are popular with your guests?

JM: Our 12-ounce center-cut filet is popular. We have a hickory molasses rub that goes on the steak before it hits the charcoal. We throw a couple pieces of pecan wood on there to get a little flavor into the steak. You can literally cut it with a fork. It is that tender. We really strive for a 23-day wet age for the steak, so it adds an extra flavor to the steak. Also, our chicken is fantastic. It is from a local farm out of West Tennessee, and we serve it with Mississippi grits, also locally sourced, and a pan sauce.

GDD: In your opinion, what is the perfect dining experience, and how do you try to provide that for your guests at Southland?

JM: At Southland, from the moment that you walk in the steakhouse you are welcomed with a greeting, and we show off the meat cooler to familiarize the guests with what they are about to order. When they walk into the dining room, they can see the glass enclosed kitchen and the chefs preparing the food they are about to enjoy from when it goes onto the grill, see it cooked, get onto the plate, and served. So, we try to strive to provide the best experience for guests from the moment they walk in the door.

G. Douglas Dreisbach: How long have you been a chef? And how long have you been at Scarlet Pearl?

Jackson Reichel: I’ve been in culinary operations going on 14, years. I started at Scarlet Pearl as a cook six years ago and worked my way up the ranks to my current position as the room chef for Scarlet’s Steaks & Seafood.

GDD: What do you like about being a chef? What are the challenges of being a chef?

JR: There are several challenges to being a chef. There are staffing issues sometimes, sacrificing time with your family and friends, missing holidays because those are busy times. But I really enjoy it. I tell my guys you have to have passion for the industry, or it will weed you out.

I have a lot of passion for food and hospitality. I really love to put a plate in front of somebody and watching them take that bite and hearing those words, “This is the best I’ve ever had of this dish,” or “This is the best dining experience I’ve ever had. I’ve never

experienced anything like this.” The creative aspect of the job, getting to come up with new dishes and just all of that stuff—it’s a lot of hard work, but it’s a very rewarding profession. I really enjoy it.

GDD: How often do you change the menu at Scarlet’s and what is the process for making those changes?

JR: We are actually in the process of changing the menu to be more seasonal and shoot for three to four times a year now. Usually, when creating the menu, myself, my sous-chef—I even reach out to some of my cooks for ideas, and we test them out, put them on paper and send it to my food and beverage director and we have a little think tank about. We’re used to saying, “Go back. Do some more work on this. Do some more that and come back with another copy,” From there it goes up to the VP and CEO/ owner. So, really, there’s a lot of people that have their hands in the menu creation here.

GDD: When you hear back from the top-level folks, and they approve it and give you the green light to serve it, I am sure it is a great feeling.

JR: That’s what keeps me doing this. I recently gave our VP a tuna dish prior to it being on the menu, he told me that it was the best dish he’s had since he’s been dining in the restaurant, and that really felt good.

GDD: With so much competition, how do you and your team make sure you are at the top of your game and make sure your guests have a great experience?

JR: As far as the culinary standpoint of things, we are really homing in on the quality of ingredients that we use. It has always been a blessing here in the fact

that they have always given me carte blanche to work with. They want me to use the best ingredients, and we spend a lot of time trying to source local, fresh ingredients, all the best steaks, all of the local seafood.

And then, out front, we just try to go above and beyond whenever we can. We had a guest come in the other day I made this coconut cream pie. I made it from scratch and it was delicious. Now he asks about it every time I see him.

GDD: What are some of the more popular menu items that you see ordered regularly from the meat and seafood standpoint, and then of course the appetizer selection?

JR: Our guests really, really love our steak. We use all USDA prime beef and everybody loves our filet. The 16-oz. Delmonico is a big one. We try and—we’ve been doing this thing lately where the chef’s selection wagyu—we have the Japanese A5 on the menu, of course, but we try and—the chef’s selection wagyu—we’ve been trying to bring in different wagyu from all over the world, Australia, America, and to utilize different cuts, and that’s kind of been a hit. We’ve been bringing in these great ribeyes from Castle Rock, Pennsylvania. Their wagyu—they’re a Grade A. They’re a really nice product. People seem to love them.

2023 BREEDERS’ CUP PREVIEW: OUR TOP PICKS

In the world of thoroughbred horse racing, the Triple Crown Series (and its protracted string of “qualifying races”) takes center stage from late February to early June. However, when the scorching heat finally gives way to Autumn’s wintery preamble, every horse player worth their salt starts to pine over an impending occasion known as the Breeders’ Cup World Thoroughbred Championships. Scheduled to unfold on November 3rd & 4th at Santa Anita Park in Arcadia, CA, this year’s 14 race Breeders’ Cup card will ultimately confer a whopping $31 million dollars in combined purse money!

Thus far, 2023 has been a “mixed bag” whereas a different three-year old horse prevailed in each of the Triple Crown Series’ three historic races (i.e., the Kentucky Derby, Preakness Stakes and Belmont Stakes). Another key dynamic

currently playing out is the fact that unlike last year (when Flightline was far and away the best older dirt horse in the country), there is currently no “senior statesman” that overwhelms with regards to the Breeders’ Cup’s “Classic Division”. Moreover, since the Breeders’ Cup offers other divisions which are restricted to: juvenile equines, fillies and mares, sprinters, and turf specialists, we need to evaluate several horses who could help us accrue some extra holiday spending money come November 3rd & 4th.

Mage - Even though Mage entered the Kentucky Derby off an impressive 2nd place finish to Forte (2022 Two-Year-Old Horse of the Year) in the Florida Derby, he still garnered little respect at the betting windows. As a result of rewarding his faithful followers with a $32.40 win mutual (payout based on a

$2 wager), this medium sized son of 2019 Kentucky Derby runner-up Good Magic is consequently on a collision course with the Breeders’ Cup Classic. (Essentially the Breeders’ Cup’s “Main Event”, the $6 million dollar Breeders’ Cup Classic is a 1 ¼ mile contest open to three-year-olds and up.) Although traditional handicapping logic says to lean towards older horses in the Breeders’ Cup Classic, Mage could be a factor if he gets the same solid pace up front that helped him close like a freight train in the Kentucky Derby. Top Three Finish Possible.

National Treasure - This three-year-old Bob Baffert trainee finally lived up to his hype when he went wire-to-wire in the 148th edition of the Preakness Stakes earlier this year. Despite the presence of Mage, this was nevertheless, one of the weaker Preakness fields I’ve seen in my three decades of covering thoroughbred horse racing. A runner

who did manage to secure 3rd in the 2022 1 1/16th mile Breeders’ Cup Juvenile, National Treasure seems more like an “underneath” type whether he contests the Breeders’ Cup Classic or Breeders’ Cup Dirt Mile. Use in Trifectas and Superfectas.

Arcangelo - By virtue of winning the 2023 Belmont Stakes with Arcangelo, Jena M. Antonucci became the first female conditioner to conquer any leg of the Triple Crown Series. Sired by renowned 2023 Hall of Fame inductee

Arrogate, the lightly campaigned Arcangelo has flashed the same sort of brilliance that his father displayed ahead of winning the 2016 Breeders’ Cup Classic as a threeyear-old. One who relishes longer distances, Arcangelo therefore logically figures to be in the mix as they turn for home in the Breeders’ Cup Classic. Win Contender.

Forte - In the cruelest twist of fate imaginable for charismatic owner Mike Repole, this “Morning Line Favorite” for the 2023 Kentucky Derby was scratched 24 hours before post-time because of a hoof bruise. Upon his return, Forte ran a respectable 2nd in the Belmont Stakes behind Arcangelo however much like he did in the Florida Derby, this son of Violence seemed to “run in spots” throughout the Triple Crown’s third jewel. In that he hasn’t progressed speed figure wise since his two-year-old season and will likely be over bet, I will hence leave Forte off my Breeders’ Cup tickets. A “hayburner”

Two Phil’s - Since he punched his ticket for the Kentucky Derby by virtue of a dominating score in the 1 1/8 mile G3 Jeff Ruby Stakes at Turfway Park, Two Phil’s was accordingly labeled a “synthetic specialist” by many prominent handicappers. Alas, a subsequent 2nd place finish in the “Run for the Roses” all but debunked the aforesaid theory. A next out winner

of the Ohio Derby over the highly regarded Bishops Bay, Two Phil’s is exhibiting the kind of ascending trajectory that should concern his competition. Top Contender.

Cody’s Wish - Godolphin Stable initiated a feel-good story for the ages when they named one of their prized purchases after Cody Dorman (a young man who is bravely battling a rare genetic disorder called Wolf-Hirschhorn Syndrome). Your 2022 Breeders’ Cup Dirt Mile Champion, Cody’s Wish (as of this writing) is riding a six-race winning streak and will be extremely tough to run down in the shadow of the San Gabriel Mountains. Top Selection - Breeders’ Cup Dirt Mile

Pretty Mischievous - In the aftermath of upsetting this year’s Kentucky Oaks field at odds of 101, this gifted three-year-old filly gutted out an impressive victory in Belmont Park’s prestigious G1 Acorn Stakes. One who will logically take money in the 1 1/8 mile Breeders’ Cup Distaff, Pretty Mischievous will nevertheless have to contend with a fairly solid “older female” contingent that includes: Clairiere, Nest and Secret Oath. Contender in wide open affair.

Elite Power - A surprise 5-1 winner of the 6-furlong (¾ mile) 2022 Breeders’ Cup Sprint, Elite Power is thus far undefeated in 2023. Looking to become just the third back-to-back winner (Midnight Lute, Roy H) of perhaps the Breeders’ Cup’s trickiest race, this speedy son of Curlin (2007 & 2008 Horse of the Year) will have to fend off the ever improving Straight No Chaser and several other staunch sprinters. Repeat in realm of possibility.

Modern Games - Managed by legendary Godolphin conditioner Charles Appleby (12 Breeders’ Cup wins), Modern Games scored as the 6/5 favorite over Keenland Racetrack’s firm turf course in last year’s Breeders’ Cup Mile.

Guaranteed to be targeted by some top European invaders, Modern Games will similarly have to fend off the likes of: Up to the Mark, Exaulted and Chez Pierre. The one to beat.

In Italian - If there is any horse with an axe to grind in this year’s Breeders’ Cup, it is In Italian. CRAPS: Pass & Come Line Betting

The pass line bet and the come bet are two of the most popular bets in craps. They are both made on the come out roll and they both have a house edge of 1.41%.

The pass line bet is the simplest craps bet to make. You simply place your chips on the pass line area of the craps table. If the shooter rolls a 7 or 11 on the come out roll, you win your bet. If the shooter rolls a 2, 3, or 12, you lose your bet. If the shooter rolls any other number, that number becomes the point. To win your pass line bet, the shooter must roll the point again before rolling a 7.

The come bet is similar to the pass line bet, but it is made after the come out roll. You simply place your chips on the come bar area of the craps table. If the shooter rolls a 7 or 11 on the come out roll, you win your bet. If the shooter rolls a 2, 3, or 12, your bet is “off” and you get your chips back. If the shooter rolls any other number, that number becomes the point for your come bet. To win your come bet, the shooter must roll the point again before rolling a 7.

Both the pass line bet and the come bet are good bets to make in craps. They have a low house edge and they are relatively easy to understand. However, there are some strategies that you can use to improve your chances of winning even more.

One strategy is to make a free odds bet on your pass line or come bet. A free odds bet is a bonus bet that you can make after the come out roll. It has a very low house edge, typically 0.00% or 0.11%. To make a free odds bet, simply tell the dealer how much you want to bet and they will place your chips in the free odds area of the craps table.

Another strategy is to make a come bet progression. A come bet progression is a system that you use to increase your come bet size after each win. This can help you to win more money

in the long run. However, it is important to be careful with come bet progressions, as they can also lead to big losses if you have a losing streak.

If you are looking for a safe and easy way to bet on craps, the pass line bet or the come bet are both good options. However, if you want to improve your chances of winning even more, you can use some of the strategies mentioned above.

BETTING FOOTBALL: Early Season Strategy

Football season is upon us and with all the variables needed to handicap (coaches, players, rules, etc) always changing, there are numerous betting tips that have stood the test of time. Below you will find some of my personal handicapping concepts that I always look at when breaking down the NFL card.

Key Numbers: 3 and 7 are without question the most important numbers when betting football. The secondary ones to remember are 1, 4, 6, 10, 13, 14, with the distant “key number” relatives being 11 and 17. These are the numbers that have the highest probability of being the margin of victory. About 14% (or 1 in 7) of NFL games land on 3 points. It is also important to avoid some traps that people fall into, such as taking a +7.5 -110 underdog on an alternate line at +9 1/2 points but being forced to lay big juice. Games rarely end in an 8 or 9 point victory, so there really isn’t much difference in the two points from 7 1/2 to 9 1/2 points, so be careful not to let the juicier numbers with the high premium tempt you.

Anti-Public: Blanket fading the public will do nothing but make you broke unless you are the one booking the action. Here is why: -110=4.5%. Vegas hopes to hold 4.5% of every single dollar wagered by their players based of the -110 they charge on losers. Let me paint the picture another way: Bears -7 (75% public)/ Lions +7. Lions lose by 3 and the public loses, but (and a big but) the book collects at +110 profit while you are only getting +100.  By taking the side of the book you do so by giving up the almighty -110 that in the end allows them to have an edge over the player. Say the opposite happens and the Bears destroy the Lions. The book pays out at even money while you are paying your loss with an extra 10% tacked on. It may not seem like much, but over the course of a full season of you paying at -110 on losing bets and not -100, the money will start to add up.

Underdogs on Monday Night Football: At one time in sports betting, this was the “golden goose” public betting trend. The trend slowly went south and in 2007 close to 70% of the road favorites beat the number. If there is an edge or flaw in the lines, due to the money involved, the gambling gods will eventually even out their universe. From the 1970’s to around 2000,

following the dog on Monday you would have hit close to 60%. Over the past ten years or so it is a coin flip at best.

Betting Teasers: Based of a -110 vig, a sports bettor will need to hit around 52.4% of their wagers to break even. Using the standard 6-point teaser as our example, each individual teaser side would now need to cover 72.5% to break even. Essentially, those extra 6-points need to boost your win percent an additional 20% to make a teaser worth playing. The first thing is toss out using a total. Even though some may disagree, there is no total worth moving 6 points that will boost your win percentage 20%. Sure a dog to the under or favorite to the over has some correlation concepts, but we are trying to keep it simple in this example. Some basic tips to follow when betting six point teasers in the NFL: favorites of 7.5-8.5 down to 1.5 - 2.5, thus crossing both 3 and 7. Also, move the underdogs of 1.5-2.5 up to 7.5-8.5, thus moving cross 3 and 7.

Parlay Cards: On average, the house edge in Baccarat is 1.06%. Blackjack when playing perfect strategy is around 0.50%. The average street books pays 9-1 on a 4 team parlay card, which results in about a 46% house edge. Even with the best odds offshore at 12-1, the house edge is still 29%, which equals the odds paid out on Keno. The actual odds on a 4-team parlay are 15-1, which leaves the house with only an 11% edge or around the house edge for prop bets at the craps table. The more teams the player picks the higher the payouts are, which entices the junkie in all of us. The house edge actually goes higher and higher with each team you add on, but we tend to be blinded with the increasing payout odds. Hit a nice 8 teamer and get back 100-1, but even at 100-1 the house is still keeping a 65% edge on the player. One Vegas book pays out 200,000-1 on a 20 teamer. House edge? 80.93%.

The majority of people who plan to bet the NFL this season are doing it to have a little fun while watching the games. So despite all the information I have shared above, my best advice is to put aside a bankroll for football season and stick within your means.
