Gary’s Greeting
Finding Joy The holidays can be an emotionally charged time for many reasons. They can be stressful, sad, or joyous—and I suppose they can be all three. This has been a challenging year for Southwest Airlines® on several fronts, and I can certainly relate to the wide range of emotions as the year winds down. Earlier this year, our beloved Founder and friend Herb Kelleher passed away. We were all deeply saddened, but even in our time of grief, we found joy in the wonderful memories we all cherished
with Herb—the brilliant advice he so often shared, the hysterical and outrageous stories that resulted in one of his famous belly laughs, and the joy he had for life and everyone he encountered. I feel so incredibly blessed to have known Herb for more than three decades as a mentor, a friend, and frankly, a hero. Not a single day goes by that I don’t feel grateful and joyful to be a part of the Southwest Family. As I look at my desk, I have a stack of letters from Customers and Employees alike sharing wonderful
stories, photos, and memorabilia—all focused on how Southwest Airlines has brought them joy in one way or another. I spend time with our Employees around our system on a weekly basis, and on almost every occasion, each one shares a story with me or expresses their gratitude to be a part of this great Company. And the same is true for so many of our Customers—they are loyal fans and love Southwest Airlines. This time of year, our Purpose of connecting People to important moments with family and loved ones in their lives always seems to mean more. I’ve been blessed to have a tremendous amount of joy in my life and in my heart, and I’m especially grateful for the joy my own family brings me every day. I hope you all find joy this holiday season, and I wish you and your loved ones the very best from all of your friends at Southwest Airlines!

Caring Through Crafts
Repurpose with Purpose is one of many ways Southwest gives back to communities across the nation. Through this initiative and with the help of partner organizations, we upcycle, downcycle, and recycle thousands of pounds of discarded material into useful products. Help Heal Veterans partners with Southwest to provide free therapeutic craft kits to military service members and veterans who are receiving medical care throughout the U.S. By providing physical benefits like restoring motor skills, improving concentration, and enhancing rehabilitation, the kits support the healing process for challenges like traumatic brain injuries. Veterans can also experience psychological benefits, such as relieving symptoms of depression and post-traumatic stress disorder. Southwest supplies Help Heal Veterans with leather from repurposed aircraft seat covers for use in the kits. Through this outlet, more than 90,000 pounds of leather from Southwest seat covers have been given a new life. Help Heal Veterans offers 11 leather kits that use the upcycled Southwest
leather, including ones to make wallets and footballs, with new designs in the works. Help Heal Veterans works with veterans and clinicians to provide the right kits to meet veterans’ needs, and they often become part of rehabilitation treatment plans. For 47 years, Help Heal Veterans has provided 31 million therapeutic arts and crafts kits, produced by veterans and military family members in Winchester, California, to over 18 million service men and women. These volunteers include Army and Air Force veteran John Eddleman (pictured), who works weekly on the kits. Partnerships with VA medical centers, military hospitals, senior living facilities, and veteran’s transitional programs allow the organization to reach 200,000-plus veterans each year. Through Repurpose with Purpose, Southwest is able not only to bring therapeutic craft kits to veterans, but also to work with additional partners to support workforce development for human trafficking survivors and adults with disabilities. I have to tell you what an amazing and kindhearted person Captain Robert O. is! To start off, my folks are in their 80s (Dad is 89) and still driving. They live in Bryan–College Station and wanted to attend a wedding in Dallas. I let them know I was uncomfortable with them driving to Dallas, and they didn’t want to pay the high cost of flying (Southwest doesn’t serve Bryan–College Station). Bob is their new neighbor, and he and his wife have become friends with them. He stepped in and offered to fly them in his personal plane, both dropping them off and then coming back to pick them up. He came to the rescue and offered his personal taxi service without asking anything in return. He made this daughter and fellow Southwest Employee so happy by helping to keep my folks safe (and off the road) as well as getting them to the wedding. I know that First Officer Wendy H. M. puts her everything into all that she does. Just one example is her latest project for Southwest’s Adopt-A-Pilot program, where classrooms “adopt” a Southwest Pilot. She took the essays that her students had written about what they want to be when they grow up and carried them with her on her many flights. These essays were passed out to the Passengers so they could read them and then write down a few words of advice for the students. Then, Wendy compiled all of these notes and made a beautiful bound booklet that she gave to each teacher as an end-of-the-year present. But it doesn’t stop there. She also gave each student their own booklet with their essays and the responses. I know that this was a project from Wendy’s heart, and I’m sure her mark will not be forgotten at that elementary school. —Senior Coordinator Communications & Outreach Janet F.
En route to Phoenix via Buffalo, I wrote Captain Drew V. a note about one of my great memories as a former flight attendant flying in and out of Buffalo. Years ago, while in flight, our Captain would take orders from the crew for chicken wings from Anchor Bar, the alleged originator of the Buffalo chicken wing. Upon arrival, someone would mysteriously appear on the tarmac with our takeout order! (I understand there was a back gate from the bar to the tarmac.) I shared this memory and asked, if that connection was still happening, to put me in for an order of extra crispy wings. Lo and behold, while waiting for the turnaround of the PHX departure, Captain Drew delivered wings for me, my seatmates, and the crew! He did fess up that Anchor Bar now has a location inside the terminal, but he wouldn’t accept my offer to reimburse him. Danielle: I had been divorced for a few years and was trying to figure out how to get back into the dating world. Thank you for sharing Steve Almond’s story [“The Cat That Healed Us,” October 2019]. I, too, had a cat named Greg (Gregory) when I was a kid. He was a long-haired orange tabby. He was inquisitive, talkative, very friendly, and somewhat of a survivalist. He was lost once. We were on a family road trip when he got out of the back of the station wagon after my stepdad pulled off the side of a desolate highway. It was not until we stopped at a motel that we realized Greg was gone. My mom cried all night until my stepdad relented in the morning and took us back to look for him. Somehow, my stepdad remembered where we had stopped the night before, so I got out with him and my mom while my sister stayed in the car to watch my baby brother. I started calling Greg by name when, suddenly, I heard a familiar cry. Lo and behold, there was Greg, huddled beneath a shrub just waiting to be rescued! Each cat is unique and special, just like us. All children should have a Greg in their lives!

When it comes to which sandwich Americans love best, grilled cheese is the big cheese. According to a survey from global public opinion and data company YouGov, the people-pleasing comfort food received the most votes for “really like” and “somewhat like,” beating other lunchtime staples like grilled chicken and turkey. As far as more polarizing picks go, just 46 percent of us are fond of French dips and only 25 percent copped to liking cream cheese and cucumber sandwiches. So, are you starting to feel hungry yet, or is that just us?
DEFINITION DEBATE The survey also asked respondents just what, exactly, counts as a sandwich. Sixty percent gave the thumbs-up to hamburgers, but only 34 percent OK’d hot dogs.

Countdown to Y2K Morgan Sullivan was still a kid on the last day of 1999. She sipped sparkling apple cider and counted down to the new millennium while some adults wondered whether a computer glitch would trigger a global meltdown. Fortunately, the Y2K scare amounted to nothing. And Sullivan, now a bartender at Cure in New Orleans, never forgot the excitement of that night. It was that New Year’s Eve, in fact, that inspired her Countdown to Y2K. Made with apple brandy, Amontillado sherry, sparkling wine, and cane syrup, the refreshing spritz boasts a nutty aroma and tastes like apple pie. Sullivan has long loved the festivities of the holiday season, and at Cure, there’s always cause for celebration. “We have people coming to the bar to celebrate their 21st birthday,” she says. “We also have regulars in their 70s who come in every Saturday night sipping on gin and tonics.” We’ll toast to that.

Here’s how co-founder Sierra Tishgart describes the company: I was a food editor at New York Magazine, so I was immersed in the food scene, but cooking had become less of a priority as I’d gotten busier. I wanted to spend more time investing in that, and the first step was buying new cookware. But when I went to figure out what I needed and why, it was a confusing and antiquated market. The luxurious, beautiful cookware was cost-prohibitive, and a lot of cheaper options came in massive sets that were too much for my small kitchen. There was an opportunity to modernize the space, and so my co-founder, Maddy Moelis, and I started Great Jones. We currently have five products, from a Teflon-free nonstick skillet to an enameled cast-iron Dutch oven. We want to make high-quality cookware more accessible, and to us, that means not only having a lower price point, but also providing knowledge to consumers. Cooking can be a source of joy, but it can also feel overwhelming. If Great Jones can set people up for success at the first step of the process—and continue providing recipes and inspiration along the way—hopefully they’ll feel more confident spending time in their kitchens.

Feeling stuck? Don’t wait around for a moment of clarity. We make our own inspiration, says consultant Allison Holzer. What’s your definition of inspiration? “It’s the intersection of two important things: possibility and invincibility. When someone feels inspired, they are opened up to greater possibilities. All of a sudden, they see things differently and have new and bigger ideas. That’s one piece. The other part is this feeling of ‘I can make it happen.’ It’s a greater sense of confidence. I’ve also found that you don’t have to wait for inspiration to happen, and you can make it last.”

How can you make it happen? “There are those who get inspired by their relationships with people. Others are more inspired by their environment or situation. Unstructured time is important. When our brains are given a break from actively trying to problem solve, inspiration can occur. I’m also affected by what I call emotionally moving environments. I go out in nature, or to a novel environment where I’m going to meet new people. Being outside of my everyday experience really sparks inspiration.”
Why is being inspired so important? “More than ever, people today want to feel a sense of purpose. People want to be inspired in their work. The average person spends around 90,000 hours at work in a lifetime. It’s a huge amount of time, and it’s an opportunity. If someone is prioritizing inspiration, it makes such a difference in terms of their own well-being and the sense of purpose in their work. It also has a positive impact on the people around them.” Holzer, the chief innovation officer at coaching firm InspireCorps, is the co-author of Dare to Inspire, out now.

Now, I’m much more aware of the weight of my words and how my actions set an example for everyone. If I’m afraid of difficult conversations, then I set the tone that we can’t have difficult conversations. At the same time, if I’m encouraging emotions in the workplace, then people feel comfortable being emotional in the workplace. Understanding my impact on company culture took me awhile, but now I’m highly aware of it.

at kumiko, one of the biggest names in Chicago’s bar scene, it’s all about the little things. As creative director and beverage guru Julia Momose puts it, “If there are 100 things in the room, even though one guest won’t notice all of them, over the course of the evening, our guests as a unit will.” Momose, who opened Kumiko with Noah and Cara Sandoval in January, certainly sweats the small stuff when it comes to the West Loop bar’s expansive and innovative beverage menu. She describes each drink as a connection to Japan, where she grew up, whether through its style and feel or a specific ingredient. There are explorative flights that help guests experience Japan’s key sake-producing regions, and comparative spirits flights to help them appreciate nuances in Japanese whisky and shōchū, a distilled liquor made from grains or starches like sweet potatoes and barley. And then there are what Momose calls “spiritfrees,” the zero-proof cocktails she’s been designing since long before their recent rise in popularity. The Hōji-Hai, for example, features hōjicha, a Japanese green tea, as well as pomegranate molasses, Concord grape vinegar, and Q Club soda. Momose wanted to have something on the menu “beyond your basic Diet Coke and soda with a lime” for guests who don’t drink, but it was also for her mom and dad. “My parents don’t drink, and it took me a really long time to tell them that I was a bartender,” she says. “Part of that was because I didn’t know if they would approve, necessarily, but also because I knew that they wouldn’t be able to experience the work that I was doing.” A spirit-free drink menu was one way to give them a view into her world. For Momose, it comes down to creating an experience tailored to each guest, whether they’re searching for a complex cocktail or an artfully arranged drink. “Kumiko is a place where you can dive in and lean forward and ask questions and get smart answers—or a place where you can just sit back and feel special.” —Melissa Flandreau PHOTOGRAPHY BY KEVIN J. achieving the title of master cicerone is no small feat. The designation, which recognizes an individual’s “exceptional understanding of brewing, beer, and pairing,” requires a grueling two-day, 14-hour exam with written, oral, and tasting components. A test-taker might, for example, have 15 minutes to identify which beers in a flight are different from a control sample and explain how. In 2011, Nicole Erny became the fourth person and the first woman to receive the certification. “You don’t really prepare for that exam,” she says. You just know when you’re ready. educational projects coordinator at Alvarado Street Brewery in Monterey, California—in other words, the resident beer genius. And Erny really does take every sense into account. Part of her job involves training the staff to identify different aroma compounds and distinguish them from taste. “Our tastes are limited to sweet, salty, bitter, sour, and umami,” Erny says. “Everything else is an aroma.” She draws on years of experience as a beer bartender to instruct others on creating a positive customer experience. “That’s a big part of where the magic happens,” she says. “It’s about connecting great beer with people who are going to enjoy it.” —Tommie Ethington

erny’s tips for a better beer experience USE THE RIGHT GLASS “There are different glasses for different beer styles, but the shaker pint that so many American bars use is actually a terrible beer glass because it tapers outward, making it harder to capture the aroma and maintain carbonation.”
EYEBALL IT “First, look at the beer. What is the color and clarity? What is the [foam] head thickness and texture? If there are bubbles on the sides or bottom of your full glass, the glass is not ‘beer clean’ and may be impacting the flavor.”
PREPARE YOUR PALATE “I take one small sip to clear my mouth, and then a medium-sized sip that I let linger to warm it up and really assess the tastes, body, carbonation, and other aspects of mouthfeel. When you swallow, breathe out through your nose to get the most aroma charge possible.”
ASSESS THE AROMA “Bread, caramel, chocolate, and anything else that reminds you of a bakery usually come from malt, the sugar source of beer. Citrus, pine, tropical fruit, and herbal aromas typically come from hops, which provide bitterness.”
DON’T FEAR DARK BEER “Color is not an indicator of a beer’s strength and is a fairly poor indicator of its flavor profile. It takes very little roasted malt to color a beer deep brown or even black, and many beers are dark in color but have a thin, light body or a light flavor.”

according to the american distilling institute, women own and operate less than 2 percent of distilleries, but when it comes to tasting spirits, they do have the upper hand. “Women have more olfactory cells and more taste buds, so, in a way, there’s this whole profile of spirits, a whole palate, that’s never been introduced to the world because women haven’t been [involved in] production,” says Jill Kuehler, who began dreaming up Freeland Spirits in 2014. The company’s first spirit launched in December 2017, and the Portland, Oregon, distillery and tasting room opened in July 2018. Kuehler and Molly Troupe, the master distiller at Freeland Spirits, have since developed a coveted gin-making method that preserves fresh botanicals. They also produce a bourbon aged in local pinot noir barrels and have plans to release a rye whiskey. And they’ve done it largely with an all-female team. Many of their ingredients come from female farmers, their teardrop-shaped bottle was designed by a woman, and about 80 percent of their investors are women. Troupe interprets their motto—“She flies with her own wings”—to mean there are no limits. “That’s something we really do live by every day.” —T.E.

Having grown up in the U.S. and Japan, Joly was perfectly positioned to dispel those fears. But a Miss Sake USA is made, not born. a food scientist by trade, Emily Darchuk has worked at NASA, Kellogg, and Coca-Cola developing new products. But when the Oregon native began consulting in the dairy industry, she saw a problem—and set out to solve it. “For every 10 pounds of milk, you can make 1 pound of cheese, so you’re left with 9 pounds of excess whey,” she says. Some producers have outlets to use this whey, like turning it into whey protein powder, but for the most part, it goes to waste. Darchuk came up with the idea of creating a special spirit by fermenting the lactose in the whey and converting it into alcohol. The result was Wheyward Spirit, a smooth, clean liquor with a similar ABV to vodka (80 proof), but more flavor: hints of natural spiciness and creamy vanilla. The lactose is stripped out in the distilling process, so it’s nothing like drinking a glass of milk. So far, Wheyward Spirit is a proverbial drop in the milk bucket when it comes to making dairy operations more sustainable, but as the company continues to grow, Darchuk has big hopes of making a larger impact. “We like to say we do things differently for the right reasons,” she says. “We’re trying to have some fun from an outsider’s perspective.” —Kelsey Ogletree

When Celeste Beatty founded Harlem Brewing Company in 2000, she became the latest in a long line of black entrepreneurs and creative types to flourish in the Manhattan neighborhood. Beatty honors that legacy with her beer—brews have names like 125th Street IPA and Sugar Hill Golden Ale—and her commitment to “brewing it forward.” Through in-kind donations and collaborations with neighborhood institutions like the Apollo Theater, the company has become a part of Harlem’s newest renaissance. But Beatty believes in a community that transcends geographic boundaries. “Beer brings people together. We need to have as many different people at the table—or at the bar— as we can.” —A.M.

nearly 4,000 wineries are sprinkled throughout California, but according to a 2018 study from Santa Clara University, just 10 percent have women as their lead winemaker. And of the small batch of women who lead those operations, only 4 percent also own the winery—compare that to male winemakers, who own the wineries 47 percent of the time. But one woman in Los Angeles has adopted the Sisyphean task of getting women’s finished bottles of wines into the hands of consumers. A certified sommelier specializing in Italian wines— as well as a third-generation restaurateur and certified beer specialist—Coly Den Haan knew exactly what she was getting into when she opened Vinovore in the Silver Lake neighborhood of Los Angeles in September 2017. “The wine industry is a boys’ club,” Den Haan says. “I will admit it has gotten better since I first became a sommelier 12 years ago, but it’s still dominated by men.” To help combat the industry’s skew toward men, Den Haan decided to create a wine, beer, and goods shop featuring natural, organic, and biodynamic wine and beer made by women. Not that you’d know the rotating selection of 150 bottles is made exclusively by women, she says. ale ochoa always knew she’d have a career in whiskey—the only question was how she’d get there. With a degree in food science and technology from Texas A&M University under her belt, she set out to earn her master’s degree in flavor chemistry and sensory science, all while keeping her eye on the goal. “I kept saying, ‘I want to work with whiskey; I want to work with whiskey,’ and that’s how I’d introduce myself.” While completing her master’s, Ochoa met Rob Arnold, the head distiller at Firestone & Robertson Distilling Co. Today, Ochoa works at F&R as a whiskey scientist, where a big part of her day-to-day involves quality assurance, from when the spirit goes into a barrel to when it’s in the customer’s hands. “I sample every barrel when it turns a year old, 2, 3, 4,” Ochoa says. “I track everything, see how things are maturing, and try to develop patterns in our maturation in our barrel barn.” But her favorite part? Smelling the whiskey. “Even with barrels from the same tank, you get some that are super maple-forward, some that are straight fig, and others that are smoky and nutty,” she says. “Not to quote Forrest Gump, but it’s like a box of chocolates—you really never know what you’re going to get with each barrel.” —M.F. 68 Southwest december 2019

thinking of california wine might conjure images of sprawling vineyards in Napa Valley or trendy tasting rooms in Sonoma. But in downtown Los Angeles, 102-year-old San Antonio Winery has weathered ups and downs—including Prohibition—to become the City of Angels’ longest-producing winery. An instrumental part of the winery’s longevity? Ninety-sevenyear-old Maddalena Riboli, who’s been in the family business for more than 70 years. In 1946, Riboli, then Maddalena Satragni, met Stefano Riboli on her family’s farm and married him later that year. Together, they began working with Stefano’s uncle, Santo Cambianica, at San Antonio Winery, and after Cambianica’s death in 1956, Stefano was granted ownership, with Riboli at his side. In a male-dominated industry, Riboli made room for herself. She took over bookkeeping, had the idea to begin sourcing grapes from California’s Central Coast, and encouraged the company to open a restaurant within the winery—one of the first such operations. Almost 50 years later, the eatery, Maddalena, is still open. Today, Riboli remains involved with the winery, with a little help from her children, grandchildren, and great-grandchildren, who are carrying on the legacy she helped build. And her namesake line of vinos at San Antonio Winery—Maddalena—has been carefully crafted with “bold, yet humble flavors,” to honor the passionate woman for whom it’s named. —M.F.

By giving back to their local communities, franchisees are making a global impact. Here’s how these entrepreneurs are spreading their generosity. By Jim Gold

chise owners provide safe, fun environments for dogs and peace of mind for pet owners. Beyond its business model, the company inspires positive change in the world through the Dogtopia Foundation. The foundation raises funds for deserving causes that provide service dogs to veterans with post-traumatic stress disorder, support youth literacy programs, and create job opportunities for adults with autism. “At every level, Dogtopia is full of loving, compassionate people who want to do right by the communities we serve,” says Diane Foos, owner of Dogtopia of Rocklin, California. Her fundraising events have revolved around ticket raffles and seasonal photoshoots for dogs, among other initiatives, Foos says. “Our pet parents love being able to treat their dog while also supporting these very deserving causes,” she says. The foundation is helping Foos match a service dog to a local veteran. “It’s fantastic knowing our efforts are going directly to someone in our own community whose life will be positively changed with a trained service dog,” she says. Since 2017, the Dogtopia Foundation has sponsored
22 service dogs for veterans, says Jeri Kendle, the foundation’s executive director. The foundation supports research on how dogs can help veterans with PTSD and backs a program that prepares veterans to teach puppy training classes. Leading those classes can be a job opportunity for veterans, who are also given the chance to interact with families in their community, Kendle says. Dogtopia has also launched an employment manual that ensures its dog daycare centers are equipped to hire people with autism, Kendle says. Right now, about 20

adults with autism already work for Dogtopia. “When given the opportunity, individuals with autism can bring a unique perspective and understanding to an organization,” Kendle says. “One person’s unique strengths may be a gamechanger for an employer or organization.” For the third straight year, Dogtopia has supported SitStayRead, a program serving about 2,500 elementary school students in Chicago schools. Volunteers in the program teach literacy skills while using dogs to engage students.

Through their “Business Builder Profile” survey and personal consultations, they ask questions that help clients dig deep. The Johnsons want to understand every client’s goals, dreams, and skills. Clients don’t always know the opportunities that are available. The Franchise Insiders helps clients start building wealth. Johnson suggests beginning with a low-investment franchise. That first franchise should be recession-proof and based on something people always need, he says. “It’s not always going to be sexy,” he says. But it should be something stable—something your family can get involved in, that can be passed down to the next generation. Later, you can invest in more franchises and take more chances, Johnson says. The Johnsons constantly monitor franchises and stay on the cutting-edge of industry trends. They learn from clients’ experiences and success stories so that they know what works. “Franchisors seek us out and want to work with our clients,” Johnson says. Once clients are in business for themselves, they can decide how to give back to their communities. The Franchise Insiders puts clients in a position where they can choose how to be charitable. “You want to align yourself with a charity that makes sense with your business,” Johnson says. Most franchisors will cover that with new franchise owners.
