Getting down to Earth or clearing your head!

I recently went to the Canadian West for a visit to a few wonderful properties that offer spa treatments. One can never miss the great Pacific Ocean. There is something to be said for being by the water: it is soothing, and even healing. Who knows better about that than Diane Bernard, who is known as the ‘Seaweed Lady’. So: here I was on a cool April morning, geared up in rubber boots, heading down for the low tide to learn all about seaweed and its benefits. There is something to be said about trudging around in boots listening to the water slop against my boots, too! It reminds me of my of puddle-jumping days when I was a kid. However, this puddle was much bigger. I really enjoyed feeling, seeing and even tasting the different kinds of seaweed that Diane was showing us. Did you know there are over 500 kinds, off of Canada’s coast? Diane’s company, Sea Flora, harvests and makes seaweed into benefiting creams and lotions. It was fascinating. Who would think that yucky green stuff that washes onto the beach, could be so full of nutrients and minerals? Even edible, and so good for you! As I walked carefully along with my walking stick, trying not to stumble on the ocean bottom, I picked up a super huge piece of seaweed, to put in my bath. I was really enjoying the outdoor connection to nature - the breeze, the air, the water and its offerings. I think this on its own could be a spa treatment -I think my mother would call this, ‘clearing your head’! Not sure if that would be a big seller on a spa menu, but it certainly was working for me!

hen you think you have life figured out, that’s when it can throw you a curve! It did just that for Mylisa Henderson when she and her family relocated from Boston to Ontario’s Blue Mountains, in the Collingwood area, in 2000. Her relocation included her becoming a stay-at-home mom after working for one of the largest North American wine manufacturers. So, literally at home, she thought what could they do? Mylisa had been introduced to the Scandinavian spa experience as her www.spalifemagazine.com

sister married a founder of Scandinave Spa and Mylisa thought the unique spa concept would work at Blue Mountain. She was smitten – so much so, that she contacted her friends from her winery life, Robert and Lesley Cederberg from Calgary, and they all went to Quebec’s Mont Tremblent for a visit in February 2004. As they sat in the hot baths they pictured their dream at this point, and realized, “We can bring this concept to Blue Mountain!” They could capture the Scandinavian experience and locate it right beside the Intrawest Blue Mountain Ski Village.

The rest was fate: the Cederberg’s moved from Calgary. It took an additional year and they found and bought the perfect 50 acres to build their dream spa. In January 2006 the project really began as the plans were drawn, and in June they started to build. Six months and seven million dollars later, the spa opened, in December 2006! Mylisa laughs as she says, “I stained a lot of this wood here”! Not only did friends and family invest, but also the partners worked hands-on, building, staining and doing anything that needed doing until the doors opened. ‘Luck is when you mix friendship with a shared vision’

Keeping things rustic was important, “We didn’t want it daunting and intimidating, we wanted men to feel comfortable here, too!” says Mylisa Henderson.

“It was a rough start as our first winter was slow,” Mylisa explains. “The snow didn’t really come ‘till February. And then, in August of 2007, the concept turned on like a switch - people started coming and they have never stopped!” It is the best deal – for only $48 you can spend the entire day. For the full treatment, add a massage: for both cost starts at only $121. The extension of the main building houses 13 treatment rooms that offer a variety of sublime massages with options of Swedish and pregnancy massages, or a duo massage for couples. There is a variety of packages and even yoga for those looking to de-stress even further. The spa offers three hot baths and three plunging pools, hot and cold waterfalls, and three solarium lounging areas. Mylisa told me the most advantageous way to experience the Scandinavian bath is to heat up first. So I changed into my bathing suit and donned my robe and began my journey in the eucalyptus steam room located in the authentic silo, brought from Saskatchewan. Ten minutes in there and I was VERY toasty. I ventured to the cold plunging pool and even though I cringed getting into the cold

pool, I had to admit it was refreshing. I put on my cozy robe and lingered by the woodburning fireplace in a comfortable Muskoka chair and took in the great outdoors.

Afterwards I changed and I wandered into the enormous post-and-beam barn style lounge and bistro. I enjoyed a wonderful salad with a glass of wine, while enjoying the view. It is a perfect place to meet a friend and get caught up while enjoying some relaxing time together. They are always keeping the integrity of the property, clean and as natural as it can be. Guests should know there is no loud talking and ‘quiet’ is the atmosphere here. Be forewarned: many times there is a wait list to get in.

There are three relaxing solariums that offer lounging chairs. To be quite honest, I could have had a nap, I was so relaxed. This type of detoxification is an ages-old tradition of hot - cold that promises you will end up feeling rejuvenated and renewed - and it really is true!

he Scandinavian Style spa experience is energizing and relaxing and afterwards your body feels like it has had a good workout. The circulatory system has worked hard to warm up the body and pump the blood around and it also gets a great workout! Drinking water is really important. Drink at least one to two bottles of water while visiting the spa. Refilling water stations are throughout. Guests can bring their own water bottles.

Cold water dipping is really important as it closes your pours and it makes your heart pump harder thus warms the body up and is a good work out for your heart and produces endorphins that stay with you long after the experience. It is a good idea to rest in between the hot and cold sessions to get the full benefit.

On a recent visit to West Coast Canada, I met with a few spa owners that shared with me that business was down and in fact, worriedly down. They were asking me if I thought that spas had had their day? Are the days of pampering over for many people? If so, what could they do to revive their business? My eyebrows went up - I had never considered this even a possibility. So I asked some pointed questions about tourism and discovered what was really affecting these spas. It turns out that tourism has been dwindling. Many spas are dependent on hotel and B&B guests, coming from all over. Being in a smaller area it is harder to maintain a regular client base. So, the decline in visitors matched the decline in spa treatments. So, what do you do if you are a spa reliant on tourism? Le Sooke Spa, owner Michelle Bohn had a solution for dwindling business: “This year has had it’s challenges,” she says. “I wanted to create some new pricing and packages to attract more local clients. I never thought

I would be lowering prices after 10 years of being in business, but 2012 has been demanding!” So, Michelle has created the 20 - 12 (Twenty Twelve) card. Spa guests pay $20 for the card which entitles them to get 12 percent off any regular priced services and products for the entire year of 2012. Dear Mary, I am a larger woman and my friend took me to a spa for the first time. I loved it, but I am very hesitant to go back. The robes provided at most spas are small and don’t fit me. It makes me feel self-conscious. Do you know of any spas that cater to larger people? Ann D., Ontario Ann, I appreciate you sharing your dilemma and you are not alone. I have a great idea: why don’t you take your own robe with you and then you will never be without one that fits you. Spas welcome people of all shapes and sizes - don’t be self-conscious. If you like, buy a white robe and that will fit in with most spas and hotels that offer robes, white is a universal color. Go and enjoy yourself and never look back!

arm breezes, green leaves, and flowers have arrived. Summer! Oh how we have looked forward to these days during the long winter months. This change in season also brings a change in physical activity. Whether we are walking, biking, gardening, running or - yes - even shopping more, we often increase our physical activity as the weather turns warmer and we are drawn out by the fresh air and sun.

It feels great to get out and exercise, instead of being cooped up working out at home or the gym. We feel energized by the sunny outdoors, so we increase our levels of physical activity. Then it begins: slight discomfort in the shin, or pain in your heel when you get out of bed in the morning, or maybe your knee starts to bother you. Your first thoughts here might be, “I need to push through and it will get better,” or “I’m just not in shape yet.” While this may be true for a lot of the aches and soreness following increased exercise, when it comes to your feet these are red flags that you need to pay attention to. Firstly, stretching and increasing your activity level gradually are the best ways to go at your spring and summer exercise. If you do start to notice pain in your shin, heel, or knee, you need to assess your shoes. Are they old? Too flexible? Are the soles worn at the heel or the forefoot? Proper footwear goes a long way in reducing the stress on your feet. Generally speaking, a brand name pair of shoes will serve you better. A lot of time and money has been put into researching and building that shoe, so you are going to end up with a shoe that is better equipped to support your feet. If after acquiring proper footwear you are still experiencing foot strain or related symptoms (shin splints, heel pain or even an occasional twinge in your knee) you may need some professional help with your feet. Nordic Walking

Once just an off-season ski-training practice, Nordic walking has graduated to a highly recognized fitness training activity all its own. A form of fitness walking, this wonderfully aerobic activity adds poles to the regular activity of walking. Fitness walking is a more rapid, energetic walk designed to strengthen cardiovascular health, as well as to control weight, and to reduce stress.

If you are in pain and aren’t able to see a professional right away, there are some things that you can do in the meantime to help alleviate some of your symptoms. Firstly, cut back on your activity level and frequency. Secondly, wear your ‘supportive’ shoes as much as possible - even in the house. Thirdly, you may want to try wearing a tensor bandage when you are active, or purchase an over-the-counter arch support. If you are in pain, these methods do not replace seeking professional help, but are meant to temporarily relieve some of your discomfort. Do what you can to enjoy the season. Get out there, take in the fresh air, and be active. Just remember to get help if you need it.

Walkers grip the poles, and use them rhythmically to help propel the body forward. Adding poles redistributes the physical effort that is used, involving the upper body for a more thorough workout, symmetrically balancing the muscles used. abundant substance in the body - up to 70% so we need a substantial intake of water daily for optimal cellular function. Water is the medium in which all cellular reactions occur. Dehydration reduces cellular function reducing our overall energy. Unfortunately, most of us are having too many liquid calories like sodas, lattes, cappuccinos, and alcohol. is! In the meantime, try adding lemon, lime, orange, or cucumber slices to your water and include herbal teas such as Green, Fennel, Dandelion, Ginger, Peppermint, and Cinnamon. Body composition is your ratio of fat to lean muscle. According to the US National Institute of Health, body weight is not an accurate measure of body composition. Waist circumference, waist-to-hip ratio and Bioelectrical Impedance Analysis (BIA) are the best methods in assessing your body composition. BIA determines fat-to-lean ratio by utilizing modern electrical frequency science. Lean muscle tissue uses more calories to maintain itself than fatty tissue. Therefore, people who are more muscular (and have a lower percentage of body fat) tend to have a higher metabolism than those who are less muscular or who have a higher percentage of body fat. Also, people who are more active and exercise daily have a higher metabolism and burn more calories than someone who is sedentary. It is a high fat-to lean ratio that leads to numerous health risks. Unhealthy body composition is associated with chronic health conditions like diabetes, heart disease, high blood pressure, sleep apnea, low energy and high cholesterol. Whether you are overweight or of normal weight you should be aware of the impact body composition has on your health.

I believe the body can heal itself and while massages and hands-on therapies are quite effective, they are also expensive and costs can add up quickly. I recommend trying to do some simple exercises using your own body weight with techniques using a lacrosse ball to relieve pain and to let the affected area start to heal and get better. Judge how your body responds, as it will tell you. Sometimes you have to grin and bear it - It will hurt but the area will start to respond in a short amount of time. For many of us it took years to get in the state we are right now, so it will take time to undo. Be patient.

Why should you do it? It decreases pain, increases range of motion (ROM), improves our quality of movement, and helps us feel better. Cost? $2 - $5

Self-Myofascial Release (SMR) is, simply, a way for you to accomplish soft tissue therapy and massage by yourself. We should all have the ability to care for OR prevent general aches and pains. Why a lacrosse ball? It allows you to massage areas with better accuracy. For example, when dealing with the upper back, this is very important. Often, we get a knot but have no idea how to target our efforts in relieving the pain, short of asking a possibly unwilling partner to massage it out for you. Don’t worry though, you don’t need them! For the Tea: 2 quarts water (16 cups) 5 bags green tea and two bags lemon tea For the Simple Syrup: 1/2 to a 1 cup sugar or maple syrup, to taste 1 cup water

Method:

In a large pot, bring 16 cups of water to a simmer. Turn off the heat and add the tea bags. Cover with lid and let sit for about 15-20 minutes. While steeping make the simple syrup. To make the simple syrup, add 1 cup of water and 1 cup of sugar into a separate pan. Stir the sugar into the water and bring to a boil until the sugar has completely dissolved in the water. Let cook and the mixture should thicken. Add the sugar mixture to the tea and combine slowly and taste as you go for preference on sweetness. Makes 2 quarts of iced tea Store the mixture in the fridge, perfect for a large container with spout. Decorate with limes and lemons and serve cold over ice!

The luxury suite at Inn at Laurel Point

I

A visit to three British Columbia Resorts that offer spa treatments share why they didn’t build a spa nn at Laurel Point is a 200 room hotel in the heart of Victoria British Columbia, situated right on the bay, and offers one of the best views of the inner harbor.

After arriving late at night from Ontario, I was shown to my suite in the Arthur Erickson Wing. (He was a famous Canadian Architect who designed the hotel’s expansion in 1989.) Even Arthur would have to agree, by today’s standards and 23 years later my suite was still drop dead gorgeous! I felt a little millionaire-like. I sat and enjoyed the sweets that were waiting for me with a lovely cup of tea, while gazing at the twinkling lights reflecting off the water of the bay. Believe me, it just got better. The inn offers in-room spa services, which range from pedicures, to manicures to couples’ side-by-side massages. It is a limited but concise menu that travelers find very effective, Avril Matthews Director of Marketing and Sales for Inn at Laurel Point, tells me. “Our guests like this selection to choose from – they’re looking for relaxing treatments,” she says. “We partnered with

D’Lo Mobile Spa and they facilitate all our spa requests.” With the inn being full capacity with rooms, restaurant, outdoor areas, building a spa would have been impossible. “Most of our rooms are large enough to offer treatments, and guests really like the convenience of not going anywhere. Guests book their stays and spa treatments here with us and we look after the rest,” says Avril. That is so true! I enjoyed a massage by owner Diana Lopez of D’Lo Spa, while in my suite. It was a real treat: I was really relaxed and probably more so that I didn’t have to leave my lovely suite. After my wonderful massage I even had a nap! A true testament to a good spa experience! Scallops: Ingredients:

2 U10 scallops Salt, kosher, to taste 2 tbsp Canola oil, for searing

Method:

Heat a small pan to medium-high heat, ladle 2 tbsp. of canola into pan, season scallops with kosher salt, when pan starts to smoke, place scallops in pan and sear for 2 minutes on one side or until there is a deep golden brown crust on the flesh, remove from heat and flip scallops finishing them on the other side for 30 seconds.

Ingredients:

1 cup, Quinoa 2 cups, water 2 tbsp extra virgin olive oil 1 tsp salt 1/4 cup, chopped herbs 1 tbsp, lemon zest 1/2 tsp ground pepper

Method:

Bring water to a boil with olive oil and salt, pour quinoa in, and stir occasionally. Cook for 15 minutes, take off heat, and strain. Cool down in a container or rinse with cold water. Finish with chopped herbs, lemon zest, salt and pepper.

Soy-truffle emulsion:

Combine Dijon, sherry vinegar, soy sauce, and honey. Blend with a stick hand held blender, to start the emulsion, and slowly add canola oil until it is thick and sauce-like consistency. Finish with olive oil, truffle oil, salt, and pepper to taste. Garnish: To finish, julienne a Âź pear, and set aside. Chives, and any sprouts, or micro greens work well to finish off the presentation. To Finish: Sear scallops and set aside. Lay down on a large white plate 2-3 tbsp of quinoa in a central location on the plate, place scallops on quinoa, spoon the soy truffle emulsion around the quinoa, and garnish with shaved pear, and your choice micro greens, chives or sprouts, Enjoy!!!

Soya Milk Ice Cream of Viceroy in Anguilla (courtesy of Resort to the Best) Pastry Chef Jean L’Etang This tropical paradise overlooking Meads Bay on the island of Anguilla offers temptations galore. But basking in sun and sand doesn’t have to be entirely decadent. Try this variation on a sweet theme, courtesy Executive Pastry Chef Jean L’Etang. Jean was born in Mauritius, in the Indian Ocean, and found his love of pastry while working in a tea shop, after graduating secondary school. During his training, Jean found himself working with some amazing mentors, particularly Chef Richard Ekkebus.

Soya Milk Ice Cream Ingredients: Soya milk Heavy cream Sugar Egg yolks

500 ml (17 oz) 350 ml (12 oz) 150 gr (1/3 lb) 12 each

Method:

Place soya milk and cream in a sauce pan and bring to boil on medium heat. Mix egg yolks and sugar in a bowl for 3 minutes. Add milk and cream mixture to egg yolks and mix a little. Return mixture to sauce pan and stir with a spatula. Cook for a few minutes until mixture coats the spatula. Strain mixture into a stainless steel bowl and place in ice water bath and leave to cool. Mix mixture in an ice cream machine. Place ice cream in a container and keep in freezer until ready to serve.

Ingredients:

1/3 cup black olives, pitted 1 cup mushrooms, quartered 1 cup celery, cut in large dice 1 ½ cups tomato, cut in large dice 1 red pepper, cut in strips 1 yellow pepper, cut in strips 2 green onions, thinly sliced 1 ½ cups regular tofu, diced 1 garlic clove, chopped 1 ½ tsp dried oregano 2 tbsp balsamic vinegar ½ cup olive oil Salt and pepper to taste

Method:

Combine vegetables and tofu in a large mixing or salad bowl. Add the rest of ingredients and mix gently to combine. Marinate at room temperature for 30 minutes. Add seasoning and serve.

and the vegetables starting with the carrots, onion, peppers and celery. Add as much of the sauce as you like, and then the broccoli. Cover stir-fry to steam your broccoli. At this point, add the miki noodles and the tofu. Keep cooking until noodles are warm. Finish the dish by adding the edamame. Serve with rice. Serves up to 4 people.

Vegetables

1 carrot sliced on a bias red or white onion julienne 2 ribs of celery cut on a bias red pepper julienne yellow pepper julienne broccoli crown cut in florets 2 oz marinated extra firm tofu 1 oz edamame 4 oz fried miki noodles

Stir Fry Sauce

1 clove garlic chopped 1 tsp chopped fresh ginger 2 oz soya sauce 1 oz teriyaki sauce 1 tsp honey 1 tsp sesame oil 1 tsp corn starch Finish with 1 tsp chopped cilantro

Method:

Begin by making the sauce for the stir-fry. Then cut the tofu into 1 inch square pieces. Use some of your sauce to flavor (marinate) the tofu and set aside. In a hot pan, combine sesame oil (or vegetable), www.spalifemagazine.com
