We were fortunate enough to sit down with the wonderfully optimistic and engaging Fiona Hughes, Founder of Green Heat. Originally from New Mexico, Fiona has experienced firsthand the extreme weather conditions of the high desert, with blistering summers and freezing winters. She says, ‘Nowadays, it’s impossible to ignore our environmental issues,’ and she is ready to step up to the challenge.

Her journey into the sustainability industry began in the US, studying for her undergraduate degree in mechanical engineering; upon completing her course, she worked on projects developing advanced engines to generate electricity using concentrated heat from the sun and later made the move to the UK to study for her PhD in engineering at the prestigious Cambridge University. As a woman, going into the engineering industry isn’t always easy, but it seems there is never a challenge Fiona can’t take on without a smile on her face. Her glasshalf-full attitude helps her to see the benefits of being a woman in the industry. Fiona says, ‘Women often believe they don’t know how to make their homes more efficient, but they are actually experts on their own homes.’

When working with her clients, Fiona often finds that it’s the women who know where the draughts are coming from or whether certain windows get more condensation than others. These are all clues to what your home needs to become more energy efficient.

When moving to the UK, Fiona noticed that many homeowners seemed to have very low expectations of what their homes could offer them. She said that many of her new friends seemed to simply accept that their homes were cold and draughty and, with a very

determined British attitude, would put on an extra jumper rather than pay the extortionate heating prices. While that might seem very British, there is another way. Fiona wants homes to be comfortable and affordable for everyone. And making the right changes can undoubtedly lead to a cosier and more costeffective home.

Fiona met her husband in Cambridge, who is also in the industry, meaning energy efficiency is a constant hot topic (pun intended) in their household. They now have two young children, and while they will unavoidably teach them about climate change and air source heat pumps, it’s not something Fiona wants to pressure them with. She shares that, as much as we want our children to understand what’s happening in our environment, it’s really not on their shoulders to make the changes.

The current state of the world can seem overwhelming, but the actions we take today are critical in shaping the future of the planet. Fiona remains optimistic. She believes that taking steps in the right direction can lead to significant change, and her expertise in making homes more energy-efficient creates an empowering vision for the future.

The Creative Mind Behind STONES

Meet Steve, Head of Design at Sanders and Jay and lead creative of STONES Magazine. With over 15 years of experience in the design world, Steve Eggs has carved out a reputation for thinking outside the box. From his early years, Steve’s admiration for Apple's iconic designs and the legendary Dieter Rams shaped his approach, leading him to achieve his degree in art and pursue his career in design.

In his early career, he worked with major clients such as NatWest, Unilever, and The Mayo Clinic, consistently pushing the boundaries of what’s possible in the digital space and gaining invaluable experience.

Fast-forward a few years, and Steve took the plunge to join his long-time friend, Josh Murphy, at Sanders and Jay Marketing and Branding Agency. Steve’s creativity and relentless passion quickly set him apart, driving innovative ideas that helped elevate the agency’s work. His vision and dedication didn’t go unnoticed, earning a place as a partner in the business. With Steve as part of the leadership team, they’ve worked together to transform Sanders and Jay into the thriving agency we know today, building a portfolio that spans from large-scale global campaigns to niche local projects—exactly the variety he loves.

However, Steve’s design spirit never rests, and with overflowing creative ideas, he decided to launch STONES as a passion project in 2021. Not only was this a way to try out some of his many designs, but Josh was also looking for a way to celebrate the community and all it has to offer. Throughout the last three years, STONES has been on the lookout for incredible businesses, stories and tips to share with our avid readers in a magazine that is bursting with creativity.

Steve continues to challenge himself to create designs and brands that truly reflect the story behind the business and to push his clients’ boundaries so they stand out in their unique way. His designs are incredibly varied depending on the project, but one thing is certain: they are all beautiful!

A hidden gem of a school Sandon JMI School

Sandon JMI is a small, nurturing village school situated just ten minutes from Royston, Buntingford and Baldock. On our quest to find out about the sustainability-focussed action that is being taken by our local authorities, we sent Hunni Haynes; local journalism student, to investigate. It’s reassuring to discover that there are many active initiatives in place to improve sustainability in our local counties.

In recent years, there has been a growing recognition of the importance of supporting sustainable initiatives for the well-being of communities and the environment. We’re proud to be living in an area that is increasingly prioritising ways to make our environment greener and more sustainable. And there’s a breadth of ways to impact our local community sustainably! Read on for some of the great initiatives taking place in North Hertfordshire and Cambridgeshire.

Funding for Wildflowers

Wildflowers play a vital role in natural ecosystems. They provide habitat and food sources for a variety of pollinators, including bees, butterflies, and other insects. These pollinators are essential for the reproduction of many plant species - including the crops that feed our population!

The Biodiversity Strategic Action Plan was produced in response to continuing declines in species and habitat, both locally and nationally. As part of their efforts to increase local biodiversity and wildlife habitats, The North Herts Council has allocated £10,000 in 2024/2025 to develop more bee corridors in the district and to plant more wildlife flowers around the local areas.

Protecting Green Spaces Time to go Paperless

The ’Green Space management strategy’ is a motivated endeavour aimed at enhancing the natural environment in the region. This project’s primary focus is on the creation and maintenance of green spaces, reducing carbon emissions, and improving overall sustainability. These green space areas provide valuable habitats for wildlife, promote biodiversity, and offer recreational opportunities for residents. The eventual goal is to achieve a net zero carbon district by 2040. This would be an amazing step forward and progress in becoming a better local community. Together, we need to team up to make their plans possible over time.

Reducing Waste

North Herts Council has also joined an urgent crusade to save five common packaging items from being rubbished and keeping them out of the bin and living the circular life, through recycling.

UK households are wasting over one billion items every year that could be recycled. Billions of recyclable bottles, sprays and toilet roll tubes are facing incineration, or landfill instead of being transformed into new products.

Britain’s most binned items include:

• 7.4 million yoghurt pots

• 845 million cleaning product bottles

• 6 million aftershave and perfume bottles

• 526 million aerosols

• Toilet roll tubes

North Herts Council’s new campaign focuses on encouraging us all to recycle these common items, which will lead to a reduction in our overall waste.

Cambridgeshire has also been actively working towards improving the environment with a huge initiative towards the reduction of paper use. The East Cambridgeshire District Council have planned to make further reductions in its paper use and expect a massive 70% reduction by 2031. Tim Phillips & Co. Accountants have already taken the lead in this step by becoming a paperless office and making all information 100% digitalised!

Green Celebrations

Often big celebrations can lead to big waste. From wrapping paper to single use decorations there are many improvements we can make to make ensure our impact is positive. One brilliant example of this is the East Cambridgeshire Council celebrating King Charles III’s Coronation and 75th birthday by donating  75 trees. This timeless gift was shared between parish councils, community groups, and schools. Leaving behind a beautiful, memorable and very green trail.

There are many more things we can do as a community to ensure we protect our beautiful environment and as Councillor Steve Jarvis, Executive Member for Environment and Leisure, states “If we do it individually, it has very little effect, but if we all do it together, it has a big impact. It is all about the contribution.” So whether you’re inspired to plant a tree, reduce your paper trail or start a whole new green initiative, your change will make a difference and it’s never too late to start!

The environment is the most important thing. Earth is one thing that we all have in common, and we should all help to cherish and protect it. Never doubt that each person’s contribution can help protect our world.

The holidays are nearly here to deck the halls, gather with our loved ones, and celebrate the warmth and magic of Christmas. But as we bring out the lights and gifts, we sometimes forget about the impact this season can have on our planet. This year, how about we add a little extra love and care—not just for each other, but for our beautiful earth too?

Let’s talk about how we can make this Christmas more sustainable, so we can keep the magic alive while making a positive difference. Here are our top 5 ways to celebrate a greener Christmas—and trust us, you won’t be missing out on any of the fun!

Sustainable Toys 01.

There’s nothing quite like the joy of watching kids open their gifts on Christmas morning—their faces light up with pure happiness! But behind all that joy, many of those brightly coloured plastic toys often end up broken or forgotten in just a few weeks, creating unnecessary waste. This year, let’s try to pick some more sustainable toys that can be loved and treasured longer and teaches our kids about the importance of taking care of our planet.

Wooden Toys: Beautiful, sturdy wooden toys are perfect for little hands, and they last for years. They’re not just kind to the environment—they’re often free from harmful chemicals and look lovely.

Secondhand Surprises: There are so many amazing finds at vintage stores, charity shops, and online marketplaces. A lovingly chosen secondhand toy can be just as magical as a new one, and it’s also a great way to reduce waste and save you money.

Creative Gifts: Gifts that spark imagination—like gardening sets, bee feeders, or art supplies—are not only more sustainable, but also create lasting memories. They offer endless hours of fun without adding a lot of plastic clutter.

02. Sustainable Gift Wrapping

There’s something so special about a beautifully wrapped present, but so much of that shiny wrapping paper ends up in the bin. Let’s make the wrapping part of the gift this year with some more creative and sustainable options:

Reusable Fabric Wraps (Furoshiki): Using fabric to wrap gifts is not just practical; it’s also absolutely gorgeous! Fabric wraps can be reused year after year, and you can even pick patterns that suit each person’s style.

Brown Kraft Paper and Recycled Wrapping: Plain brown paper is underrated—it’s simple, elegant, and perfect for personalising. Add a little string, a sprig of greenery, or some hand-drawn doodles, and you’ve got a beautiful and eco-friendly gift.

Cloth Gift Bags: Investing in a few reusable gift bags makes gift-giving so easy and stylish. Plus, they’re a fun addition to the holiday tradition—imagine pulling out your favourite cloth bag year after year!

Remember, the best part about wrapping isn’t the paper itself—it’s the love and thought that you put into the gift.

Opt for a Sustainable Christmas Tree

We all love the magic of a Christmas tree—the twinkling lights, the smell of pine filling our homes. But choosing a tree that’s kind to the environment can make that magic feel even more special:

Rent a Living Tree: This is such a fantastic idea! You can rent a potted tree, enjoy it throughout the holidays, and then return it to be cared for until next year. It’s like adopting a little bit of nature to join in your celebrations.

Replantable Trees: If you have a garden, why not get a potted tree that you can replant after Christmas? Imagine how lovely it’ll be to watch your tree grow year after year as a reminder of all the wonderful holidays you’ve shared.

By being mindful of your tree, you’re helping preserve our forests while still bringing that wonderful festive atmosphere into your home.

Christmas is all about sharing delicious meals, but sometimes we end up with so much more than we can eat. Let’s keep the feasting fun while also being kind to our planet:

Plan Ahead: Before heading to the grocery store, make a list of what you actually need. It helps to plan your meals and portion sizes to avoid buying too much. Plus, it takes the stress out of shopping!

Get Creative with Leftovers: There’s something comforting about transforming Christmas leftovers into new dishes. You could turn that leftover turkey into a warming soup, or mix the roasted veggies into a hearty breakfast hash. The possibilities are endless!

Compost food scraps: Not everything can be eaten, but food scraps still have value! Starting a compost pile can be a great way to give back to your garden and reduce waste.

Reducing food waste makes sure we enjoy every last bite of our holiday spread—and it’s a great way to honor the effort that went into preparing all that delicious food.

There’s something truly magical about gifting an experience— something that makes memories that last much longer than any material item ever could:

Cooking Classes, Shows, or Workshops: Giving someone the chance to learn something new or enjoy a special outing can be so much more meaningful than another item on a shelf. Think about what they’d love—maybe a cooking class, tickets to a play, or a relaxing spa day.

DIY Experience Coupons: Make your own coupon book! You could offer a movie night at home, a day of hiking together, or even a homemade dinner date. These personal, thoughtful gifts can be more touching than anything you’d buy at a store.

Eating out: Why not invite friends and family for a delicious meal? Plenty of restaurants are becoming more sustainable in their practices and trying new foods might inspire you to learn a new recipe.

A Feast for the Senses

Tucked away near Cambridge's bustling train station, the exclusively plant-based restaurant; Stem and Glory offers more than just food—it’s an experience. Walking into the restaurant, you’re immediately met with an inviting atmosphere, where every detail, from the soft lighting to the rustic decor, feels carefully curated. But the true stars here are the dishes themselves, which are as beautiful as they are delicious.

The food at Stem and Glory is nothing short of art. Each plate arrives as a delicate masterpiece, but it’s the bold flavours that make you pause and savour every bite. Their mouthwatering ‘Bang Bang Broccoli’—with its sweet, sticky glaze—was an unexpected showstopper. The brilliant contrast of tastes had us double-checking what we were eating.

It’s dishes like these that make dining here such a pleasure, with surprises lurking around every corner of the menu. The staff were incredibly helpful in offering spot-on recommendations based on the flavours we enjoy, sharing their own favourites with us too, which include their comforting Tuscan Sunblush Gnocci and the Tempeh Tikka Masala.

And then, of course, there were the desserts. We sampled the trio of the Blackberry Cheesecake, Key Lime Pie, and Malai Cake, each one distinct and delicious. Each of them mouthwatering in completely different flavours, and as the executive chef shared with us, ingredients are naturally sweet and made with a healthy balance in mind - not that you would know from the taste! My personal favourite was the Key Lime Pie, with its mix of sharp and sweet, and a chocolatey, coconut base was nothing short of heavenly.

Tempeh Tikka Masala
Indian spiced marinated tempeh & red pepper cooked in a rich cashew based makhani sauce, served with pulao rice

Executive Chef Ed Subaei is the creative mind behind the menu, and his passion for experimentation shines through. We had the pleasure of speaking with him, and his stories were just as captivating as the food.

One tale that stood out was the creation of their signature ‘sea bass’ dish—a happy accident. A sous chef tasked with making mashed potato, went about it by blending raw potatoes before squeezing out the water and cooking them, resulting in an unusual texture. Rather than dismiss it as a mistake, Ed saw potential. He mixed the potato mash with tofu and wrapped the mix in nori, creating a fish-like dish that has since become a menu staple. It’s this openness to new ideas and playful creativity that sets Stem and Glory apart.

Stem and Glory is, of course, strongly committed to sustainability. Not only do vegan choices have a lighter environmental impact, but the restaurant also actively avoids ingredients that weigh heavy on our planet. For instance, they’ve completely cut avocados from the menu due to the difficulty of sourcing them sustainably. Instead, they’ve developed a pea-based guacamole that is just as tasty, if not better. On top of this, they source as much as possible from local suppliers and many of their ingredients are organic.

They have also been working closely with chefs at Cambridge University, running workshops

aimed at helping the university achieve its ambitious goal of an 80% vegan menu. Ed’s involvement in teaching and mentoring speaks to his larger vision of making a positive impact on both the local and global food scenes.

By the end of the meal, we left feeling inspired—not just by the food, but by the ethos behind it. Stem and Glory is a place where health, sustainability, and creativity come together in every dish. We can’t wait to return and see what they come up with next. In the meantime, we’ll be getting more experimental with our dishes at home with the help of their wonderful cookbook!

Our trail leads into Royston’s beautiful memorial gardens, which have been awarded multiple Green Flag awards for their excellent use of green space - a fitting place to be for this volume of STONES!

The gardens are filled with plants to create seasonal displays of perennials, mature woodland and bedding plants. Large trees provide greenery year-round and shade in the summer when the park is always filled with families enjoying the playgrounds and spash park. But now that autumn is setting in, there is a clear change of season, and the benches offer the perfect spot for some fresh air, connecting with nature and meeting with friends.

Proudly positioned in the heart of the gardens, Royston’s striking red marble pillar memorial stands amidst vibrant flower beds, offering beauty throughout the year. This tribute honours the brave men of the 91st Bombardment Group (Heavy) of the

Priory Gardens Memorial

U.S. Army Air Force, who flew B-17 Flying Fortresses from the Bassingbourn and Nuthampstead airfields between 1942 and 1945. The Group, home to the renowned Memphis Belle, also bore the heavy weight of being the bomber group with the highest casualty rate in WWII.

The gardens themselves, designed by local architect Arthur Whydale and opened in 1948, were purchased through public subscription. In the early 1990s, the churchyard was incorporated into the gardens, all of which sit on the historic site of the medieval Roys Cross Priory. The grounds, originally laid out as ‘belt’ and kitchen gardens when the priory became a private home in the late 18th century, have retained elements of this heritage in their mid-20th-century design.

Once you’re ready to move on, head over to the stairs located behind the Church, which will lead you to the next stop on the trail.

The Boy Who Harnessed the Wind

The Boy Who Harnessed the Wind is a heart-warming memoir of William Kamkwamba and his journey to build a windmill to save his village from famine in the harsh country of Malawi.

14-year-old William is thrown out of school when his family can no longer afford the fees. With his passion driving him more than his fear, he sneaks into the library to learn how to build a windmill and the parts he will need.

He uses scrap yard parts to build a prototype that works, but what he really needs are the parts from the villages only bicycle. His father refuses and destroys the prototype in an attempt to stop the project. However, after William's dog dies, his mother convinces his father to reconsider.

With his Father’s permission, and an even more critical situation for the village, William and his friends throw themselves at their project to build a full-size windmill in the hope to power their community. We won’t spoil the ending, but this inspiring tale shows how even with limited resources, we can create real change when we put out minds and hearts to it - a great watch!

Plus, with our on-site greenhouse and herb garden, we even grow some of our own produce, with additional fruit and veg supplied exclusively by the Cockenach Estate, just down the road.
