My favourite season - Winter. h to live in S.E. Queensland now that Winter's here. Almost every day the sun shines. If you're on holidays or living life to the fullest - you can laze on the beaches each day taking in the beautiful blue water and softly crashing waves, before dining al fresco at one of the many fabulous restaurants and cafes. You can wander around the boutiques checking out the latest designer fashions, or visit one of the beautiful interior design showrooms, whilst anticipating the latest colours, lighting and furniture offerings that will help you to reinvent the overall look of your home or apartment. Even if you're still part of the workforce, you can enjoy the season, as you drive along the shoreline on your way to - or home from, the office. Just looking out the window at the beautiful sky brings a smile to your lips. At night, you can cuddle up under the doona with a glass of hedonistic red wine, muscat or port (with or without company) and read your copy of LUXURY Style, your new book, or watch a good movie; maybe your favourite chef will be on television cooking up a storm and inspiring fabulous culinary inspirations. Over the past few years celebrity chefs have made their mark on the social fabric of our lives. As a society, we have never been so interested in fresh, wholesome and inventive food preferably created by a personable chef, who is more than happy to pass on a few secrets of the trade. Channel Ten's Master Chef has proved the point. Move over Jamie Oliver, Gordon Ramsay and the like - now we want to see 'real' cooks in the kitchen. Master Chef was a surprise winner in the audience stakes. It may have started out a little slowly, but momentum built and we were hooked. It became almost compulsive watching. Hands up those who didn't tune in to see which of the home cooks would take out the overall prize. Maybe we didn't all agree with the final winner - but technically, it was another 'game show' - so you had to play the game and eventually, someone had to win. All the contestants seemed to have a fabulous time, and the highlight for me was their trip to Hong Kong - where poor Julie had to catch and kill her own fish. Better her than me! I could never have accomplished that task. And, if she does open her restaurant on the mid-coast, we will definitely drive down to sample her dishes. In keeping with our food lust, this issue we bring you a bountiful array of food and wine, wonderful chefs and spectacular ideas to build upon in your own kitchen. We also bring you the latest plays, arts, books, theatre - interesting people and places, motoring magic and perfect properties.

Runway to the stars N e w Yo r k F a s h i o n W e e k a n d B r i s b a n e ’s M e r c e d e s Benz Fashion Festival are premier fashion events where the hot frocks of tomorrow are shown off by a fantastical fashionista duo. he ever-designing Italian-born Nick Scalisi and his Canadian-born wife, Ilona Karme-Scalisi are former New Yorkers and no strangers to being at the pinnacle of the fashion industry, having shown their former US label Cheap Thrill at New York Fashion Week. The label was much sought after by mega stars such as Madonna, Christine Aguilera Susan Sarandon, Gwen Stefani, regularly used in sitcoms such as Friends and Dharma and Greg as well as numerous movies, TV shows and music videos. Nick and Ilona met in New York City in 1996. Nick was a designer of both men’s and women’s fashion with offices in Los Angeles and New York. After completing her schooling at UCLA with BA in Economics and Liberal Arts and Fashion Centre, LATTC, with AA in Fashion Design, Ilona became a model and swimwear designer with Sirena of California and Anne Klein Swimwear. She designed for top California women’s label La Belle and created her own children’s wear label, Widgin Originals. Together they went on to establish Karmic Niche with several labels and world wide distribution, plus create sassy corporate uniforms and apparel lines for Disney and the Universal Studios’ brand, House of Blues. After 9/11 the couple opted for a serious sea-change to Australia, the country that Nick had never visited, but had been Ilona’s second home since her childhood years, when her mother had moved to Port Douglas from Vancouver. They left behind a major fashion career and now call Australia, more specifically Sunrise Beach near Noosa, their home. It is also

their design studio where sketching and pattern perfection is accomplished for their label Tulipani which means ‘tulip’ in Italian and is Ilona’s favourite flower. Conceived in 2004, the label evolved from a desire to create sexy, edgy designs to appeal to Australian women seeking fashion that can take them from work to lunch, drinks, after five…wherever Nick’s original artwork prints feature heavily each collection, Ilona has an incredible eye for detail and pattern-making, both work together to create pieces that are distinctive, and all the cutting and sewing plus most of the fabric printing, is proudly manufactured in south-east Queensland. Fabrics are imported from all over the world including Italy, France, USA, New Zealand and Peru. Tulipani Nero, their evening wear range which was launched at Mercedes Benz Fashion Festival in 2008, has the same rock and roll edge as Tulipani, and makes use of Nick’s quirky artwork and Ilona’s flattering silhouettes.

Apart from Nick’s signature prints, both ranges continue to win fans courtesy of a skilful use of cut and drape with beautiful fabrics and unusual combinations. Nick is adamant that at a time when most Australian designed garments are being manufactured overseas, it is more important than ever before to fly the Australian flag. “Fashion is the fibre of any community and we believe there can be a fashion-led economic recovery if only people think before they buy a garment.” Ilona concurs: “Everyone from the designer to the sales agent, manufacturer and the independent retailer plays a part in this process. Seeking and buying only Australian designed and manufactured fashion labels not only stimulates the fashion economy, it benefits the wider economy. And it’s not about sacrificing style – far from it. If anything, it’s the perfect opportunity to be more individual with your personal style. Plus the end product is of a higher standard and is better reflection of our lifestyle and climate.” The emphasis is on elegant casual for the 2009 spring/summer collection with inspiration from the ocean and the latest cotton metal poplins contrasting with silks and jerseys “Elegant casual is so much a part of the Australian lifestyle,” comments Nick and Ilona whose daughter Tatiana is nearly 11. “This collection includes great pieces which can be coordinated to obtain just this effect, all with a splash of colour for added impact. We wanted to make essential wardrobe pieces for a pictureperfect endless summer. “With these garments, everything has been perfectly finished on the inside and we have used a lot of French seaming,” says co-designer Ilona. “The fabrics are soft to the touch but almost sculptural in the way that they ply the body, creating a sort of shabby chic effect. The pieces look lived in from the moment you put them on. “The cotton metal pieces layer beautifully with the collection’s tencel lycra jersey knits or silk kimono tops. Or for a show-stopping effect, team with a midriff corset.” This season the pair revisits the nautical theme in their special way, by blending colours and forms and using indigo striped cotton that washes down like a favourite pair of jeans.

For the original print fabrications, Nick has drawn inspiration from sketches in a journal he kept while travelling around the Caribbean and Mexico some years ago. The result is whimsical, abstract and individual. The dress is still strong this season either short and flirty or long and sexy, with comfort and allure being the keys to the collection.“Silhouettes are straight, almost minimalist, and the knit tops offer an ease of fit without sacrificing sexiness or impact,” describes Nick, adding the Tulipani ranges are stocked in 65 outlets throughout Australia including Brisbane, Gold Coast, Sunshine Coast and Cairns. For the third year in a row Ilona and Nick have been invited to the Mercedes-Benz Fashion Festival Brisbane which runs from 23 to 28 August and is a key event for designers and retailers, providing a boost in potential sales. Tulipani will be starring alongside other fashion luminaries such as Easton Pearson, Juli Grbac, Rebecca Manning swimwear and Colin Heaney.“The 15 looks on the runway are from the Tulipani Nero collection of after-five wear and will have an emphasis on black and white, maybe with silver, a splash of pale pink or a play on champagne,” says an excited Nick, who loves the freedom and slower pace of Noosa, not having the distractions of frenetic New York and taking time out to enjoy a glass of Pinot Grigio with his “sexiest pasta,” a spaghettini with chilli, purple garlic, walnuts, frilly parsley and a splash of lime juice.

Senka Thwaites

Spoilt for choice... wenty years ago in Perth, Senka began her retail career. After working in various stores she opened her own shop in the Margaret River called Memories. It looked like an upmarket mini department story, its best sellers were expensive yet very affordable jewellery, handbags and sunglasses and during her eight year tenure, she won a Telstra award for small business and the seed to success was well and truly sown. “You spoil me Senka” became such an oft-used phrase, that ‘Spoilt’ seemed a logical brand name, so was trade marked. After four months of ‘me-time’ in Noosa, Senka, master builder hubby Darin, sons Adam and Brandon, and two poodles Mocha and Latte, her “stress relievers”, made the bold move to the east coast. “Wholesaling is totally different to retail but I dabbled in it years ago and imported various items, mostly jewellery. I started out of a small warehouse in Noosaville and it grew quickly so after three years I now have two warehouses based in the funky area of Gateway Drive.

When it comes to dynamism, super savvy Senka Thwaites has bags of it.

“I import mainly from China, but have jewellery and accessories from Hong Kong, pearls from Spain, Swarovski crystal jewellery from Korea and Paris, wallets from Japan and winter bags from India.” Senka is hands-on with all aspects of her products, especially handbag design. “We have a factory in China and a member of staff looks after quality control. Too many wholesalers buy off the shelf and it all becomes very similar, plus it’s a very cut throat industry.” Spoilt products are distributed to 600 stores nationally and in New Zealand, a resort in Brunei and a fashion store in London, plus her first concept store in Noosaville. Senka is aiming for a Spoilt concept shop in every major shopping centre in Australia. Her current estimate of lines is about 350 in jewellery, leather handbags, fashion handbags, shoes and evening bags. “I have the best value for money handbags in the market because I go for turnover not huge profits. They look expensive but are so affordable.”

Breast feeding.. Taking time to make it right... Breastfeeding can be a special bonding experience shared by mother and baby, but like any new skill it can take time to master. he new Queensland Health breastfeeding campaign, 12+ months on the breast, aims to help mums prevent or overcome many of the barriers to successful breastfeeding and support them to feed for longer. The most common problems mothers face are attachment and latching difficulties, perceived low milk supply, engorged breasts, sore cracked nipples and mastitis. Worrying about how much milk their baby is receiving is a common concern as many women find it hard to gauge exactly how much milk is being provided. Good signs are an alert and happy baby, at least 6 heavily wet nappies a day, feeding 6-12 times a day and appropriate growth for baby’s age. While it is very rare for a woman to be unable to produce enough milk, supply can be boosted by increasing the frequency of feeds. Eating a range of healthy foods, drinking plenty of water, and getting adequate rest will also contribute to increasing supply, while supplementary feeding with formula will reduce it. Swollen, tender, uncomfortable and full breasts are a natural symptom for women in the days following birth and should subside within a few days. Ways to alleviate the discomfort include wearing a supportive, well-fitted bra, breastfeeding often and applying cold packs to breasts after each feed. Another common problem is sore or cracked nipples, usually a result of the baby not attaching properly. To assist

To help treat mastitis, continue to breastfeed often or express, massage any lumpy areas while breastfeeding and apply heat packs to the breasts before feeds. To avoid mastitis, good attachment in addition to getting plenty of rest and eating a variety of healthy foods is vital. The more run down, stressed and exhausted you are, the more vulnerable you are to an infection. To ensure a happy and comfortable feed for both mother and baby, how baby is positioned and attached to the breast is important. While there is no correct position to breastfeed, it needs to be comfortable and pain free so mum and bub can both relax and enjoy the experience. Breastfeeding for as long as possible gives babies the best possible start in life. With the correct advice, support and a little time, breastfeeding can become an easy and enjoyable activity. I loved it so much (sun, surf, girls, etc), I got a job as a kitchen hand – the perfect scenario of surf-workpub.” And so began Ben’s culinary journey. Cooking became his passion and a reflex and it never ceases to give him pleasure or stimulate his imagination. He unequivocally believes that food should be simple and distinctive, technically and culturally correct. After working in a number of top class Australian restaurants, Ben moved to London in May 1996 on his 26th birthday. For four years he worked at The River Café.“This was the most inspirational place I’ve ever had the pleasure to work. The genius of Rose Gray and Ruthie Rodgers, their ideas, philosophy and approach to Italian food provided the backbone for my own style of cooking,” recalls Ben who started at the River Café a few days after Jamie Oliver. Pineapple passionfruit upside-down cake

Quintessentially Queensland It may be roughlooking but the pineapple is adorably juicy and sweet. riginally a native of Brazil, the pineapple was grown in West Indies, Mexico, northern South America and cultivated by the Indians long before the arrival of Christopher Columbus in 1492. Columbus reportedly took it to Spain where it became known as pina de indies he pine of the Indies, because it was thought it looked like pine cones. In Europe I was known as arana which is a South American Indian word for ‘excellent fruit’. The name ‘pineapple’ was first recorded in England in the late 17th century. The Portuguese introduced it to India in the 16th century and Lutheran missionaries from India brought it to Australia. It’s an excellent source of Vitamin C, small quantities of other vitamins and minerals. It has dietary fibre, some fructose and glucose but most of the sugar is sucrose with 100g of fresh pineapple equals 160kj. The rough-looking, spiky, oval pine cone is actually a group of smaller fruits fused around a central core with a tuft of short, sharp, grey-green leaves rising from the top. Skin colour varies from creamy-green to yellow-orange with flesh colour from pale

yellow to golden yellow. Once picked it doesn’t get any riper. It becomes juicier, not sweeter. Select plump fruit with fresh-looking skin and leaves and a sweet, pleasant aroma. Store in a cool place. Once cut, cover and refrigerate. Use within two days and be aware that the enzyme bromelin, can prevent some dishes from setting or cakes and breads from rising. Add at the last minute or cook before use.

PINEAPPLE PASSIONFRUIT UPSIDE-DOWN CAKE Ingredients: 340g butter 325g dark brown sugar 360ml pineapple juice 380g self raising flour 200g castor sugar 6 eggs 6ml vanilla essence 1 pineapple, thinly sliced 300ml passionfruit syrup Method: Preheat oven to 180c. Melt butter. Brush a little bit of the butter on the inside of a 9 inch cake pan. Mix 5 tbs of the butter with the dark brown sugar and ¼ cup of the pineapple juice. Place this mixture in the bottom of the cake pan. Arrange the pineapple rings on

the brown sugar mixture in a decorative pattern (be creative). Set the pan aside. Stir together the flour, salt, white sugar and self raising flour. Separate the eggs. Beat the whites until stiff but not dry. Beat the egg yolks until lemony yellow. Whip the egg whites. Stir in the remaining pineapple juice, vanilla and remaining melted butter. Add this mixture to the flour mixture. Gently fold in the egg whites. Pour batter over the top of the brown sugar and pineapple rings. Bake at 160c for 30-40 minutes. Let the cake cool in the pan for 10 minutes then cover pan tightly with a serving dish and invert so that the pineapple side is up. To serve: Serve on cake stand or as individual wedges. Drizzle passionfruit syrup over and serve with a dollop of double cream, ice cream or both. Variation: Add 100g of chopped crystalised ginger folded into the batter at the end or omit passionfruit and have just pineapple

A VEXATIOUS GLOBAL FINANCIAL CLIMATE DID NOT INTIMIDATE BRIDGET AND DUGALD WOODS’ DREAM OF OPENING AN EDGY-STYLE INNER-CITY HOTEL THAT WOULD APPEAL TO THOSE TRAVELING ON A BUDGET FOR BUSINESS, PLEASURE OR BOTH. hotel was never an alien idea for the Woods. Dugald was running a backpacker’s establishment and his brother Andrew and wife Georgina had set up Brisbane’s famous Tinbilly’s backpackers’ accommodation. It was a runaway success so much so, Dugald and Bridget moved to Brisbane and together it became a family-run affair. In 2006 the couple became the sole owners. Tinbilly’s reputation as a safe and clean hostel with excellent service and the crazy Tin Bar, went on to achieve world-wide recognition.

The quaint former Astor private hotel in Astor Terrace Spring Hill, had faded from glory to a home for the homeless, when developers Rick Bird and Scot Hutchinson saw its potential and approached the couple. “We felt the location wasn’t right for a backpacker’s hostel, so asked if they’d reconsider the concept of a hotel,” says Bridget who acknowledged that the original plans differed greatly from the end result. The exterior design by Cottee Parker Architects was in place before they came on board, the builders were Hutchinson, Dugald designed the bar and restaurant and Bridget used her interior design skills on the 84 standard queen and twin rooms, executive king rooms and two suites. “We wanted the four-star Portal to be swanky yet affordable and totally focused on service plus provide an alternative to the larger chain hotels, which lack personality,” explains Bridget who went to great lengths to ensure all inclusions were above par, especially the

With the Portal’s proximity to the beautiful Roma Street Parklands, we offer the services of a trainer so guests can enjoy the outdoors and train at the same time. “Regarding massages, I’d contacted Ripple a few years ago as a gift for Dugald. He was so impressed with the professionalism, Ripple ‘the day spa that comes to you’, was the obvious choice to recommend to our guests who can enjoy various massages, also beauty treatments and even a body rub with warmed chocolate oil. Surely that’s the ultimate pamper for chocoholics.” The O Bar and Restaurant have been given a different look and vibe so

Andrew and Georgina, financial whizzes and fellow entrepreneurs, are also involved in the business with the super energetic duo. Bridget is also the operations manager as well as a busy mum to Angus 8, Ethan 7, Hamish 5 and Claudia 9 months. “Until a few months ago Claudia was bought up in the hotel, in the store room out the back,” says Bridget who doesn’t live on site as the boys love the outdoors and they have no understanding of the word quiet. “In the winter it’s rugby and summer it’s Nippers. As a family we love playing in the backyard, cooking and heading to the coast as often as possible. Since the first vintage of this wine was released in 1995 this McLaren Vale Shiraz has boldly made its’ presence felt and is acknowledged in the excellent category of the 2005 Langton’s Classification of Australian Wine. As usual, this wine has been tendered with loving care from vineyard through to bottling. The fresh and lively intensity of the 2006 Reserve Shiraz is a true expression of the vintage characteristics. Some years ago Tania Hindmarsh put Charlie to the test when she designed a house for herself at Elanora on Sydney’s northern beaches.“Charlie, who had previously built and renovated many upmarket homes from ritzy suburbs such as Palm Beach, Clontarf and Mosman, did a fabulous job,” says Tania. “He had great insight and never said it couldn’t be done. We hit it off straight away and now work as a fantastic team.” The partners in business as well as life, made the sea-change to Noosa eight years ago and built Namale (meaning ‘to live with passion’), a magnificent Balinese-inspired home and gardens in Doonan. Their next project was moving and melding two original Queenslanders on a large site also in Doonan. The task was monumental; the result was sensational. The dream

And what an amazing journey it’s been.” For this project, the design savvy trio is Charlie Moore, Tania Hindmarsh and Scott Rippon of Arango Designs Pty Ltd. The result is luxury and glamour personified. “Each apartment has been masterfully designed to encapsulate an individual mood,” explains Tania Hindmarsh about the two residences at Weyba One Four and the two residences at 20 on Weyba. “Vibrant colours, gleaming finishes, plus furniture and fittings sourced from around the globe, shriek of splendour - an impression complemented by premium-quality natural materials such as stone-stacked feature walls and red cedar flooring. Koi ponds, splash pools and spas - natural additions to the tropical gardens, bring the outdoors in.” Scott, inspired by the legendary architect Frank Lloyd Wright, has translated time-worn design principles by presenting outstanding lineage and instant architectural appeal. Charles’ attention to detail and the fusion of various material required during the building process has been described as “knockout”. Tania has an innate understanding of maximising space to achieve a seamless flow. Her choice of features and accessories add allure to the design brief. Tania says she draws inspiration from life:“There are so many beautiful places even nature itself to admire, touch and smell – lots of memories that fuse. Whenever we go to another country we look at the architecture, how it's put together and the materials used. I take everything in and let the ideas evolve from there. “My dad was also a huge inspiration. He was a designer/ builder who was constantly coming up with great new ideas. I've been around building sites all my whole life so it’s quite natural to me. And with Charlie’s father being an engineer and his grandfather an architect, it's in our blood. We live and breath design.” Tania and Charlie’s favourite holiday destination is Bali where they feel so relaxed and enjoy being indulged in what is their idea of heaven, however it’s the finer aspects of Asia that can be seen in the detail of

FROM THE DESERTS OF MEXICO TO THE RAINFORESTS OF SOUTH AMERICAN, COME THE EXOTIC ‘PINEAPPLE’ OR ‘VASE’ PLANTS WHICH ARE IDEAL IN DRY CONDITIONS AND LOOK SPECTACULAR INDOORS OR OUT.

here are over 3,000 native species of bromeliads with an additional 6,000 hybrid and cultivars developed globally. They vary in size from small tillandsias no bigger than your finger and often hung on walls, logs, ornaments and water features, to large puya and vrieseas, which are more than two metres across. Bromeliads are distinguished by their distinctive structure of a single rosette of leaves which often create a vase-like water store. Many such as aechmea fasciata have striking flowers, maybe an elegant form, are unusually variegated, striped, spotted or spiky foliage or have dramatic colours from bright green, yellow, pink, purple and intense reds to sometimes a spectrum of them. The hardiest have relatively thick hard leaves or leaves covered in silver ‘scurf’. Landscape architect Phillip O’Malley collects robust landscape varieties especially the sun-tolerant vibrantly coloured ones such as the giant orange aechmea blanchetiana, the big red centred neoregelia McWilliams, the white-edged neoregelia sheba, and the dwarf red

neoregelia fireball. “Bromeliads grow well in low soil as they don’t take up much moisture through their roots,” explained Phillip. “They need filtered light with no harmful midday sun as they will burn. I think they look fantastic when mass planted, in small urban-style gardens where space is limited or by placing them in tree branches or palm trunks, forming a vertical gardening thus extending the planting space.” “Bromeliads are addictive,” said Ian Goatham who with business partner Bob Gunderson grow about 200 types at their Pacific Paradise nursery and sell them via the Eumundi and Noosa Farmers Markers. “Indoors or out they are low maintenance, rewarding and so versatile with blooms lasting from three to six months. ‘Pups’ can be removed when they are one-third of the ‘mother’ plant.” Pop the ‘pup’ into the ground with material that drains readily such as fine pine bark or in a pot using potting or orchid mixture with lots of organic matter in it. In the garden, bromeliads can perform an important ecological function attracting frogs, lizards and insects to their water ‘tanks’. Needless to say rainwater is the beverage of choice. Did you know that the pineapple is one of the best known bromeliads and by cutting the rough end off and planting it, you too could be on your way to becoming another bromaddict?

Water bomber attracts interest world-wide FIGHTING FIRES WITH FIRE POWER COULD SAVE LIVES THANKS TO JASON SCHELLAARS’ INVENTION. Writer: Helen Flanagan s a teenager in Melbourne, Jason Schellaars convinced

his parents Tina and Arnie he was serious about becoming a pilot. He succeeded with a student’s

license at 16, chose marine engineering as a career and inbetween times tinkered away hoping to come up with an invention that would make a difference. In 1998 and now living in Noosa, he went for a trial instruction flight with Becker Helicopters and was immediately hooked, so joined a Sunshine Coast aerial water-bombing company. He mulled over the idea for a more compact and user-friendly firefighting tank and went into the development phase in the garage at home. Today Helitak is assembled in a large shed on his parent’s 10 acre tomato farm at Doonan. “The Helitak fire tank is constructed from fibreglass, aluminium and fabric,” explains Jason, who has already sold his tanks to private operators in Canada, USA and Australia and has fingers crossed for an order for 150 from the US National Guard. There’s also been interest from Spain, Turkey, Asia and Europe. “Helitak consists of an expandable fabric bag that is attached to fibreglass housing and connected to the aircraft on the existing hard point so no structural modifications to the aircraft are needed. With the Black Hawk helicopter crew can be fighting fires in half an hour.” Tanks, which can take from 1000 to 4000 litres of water, are quick and simple to install making them ideal for an emergency. “The tank expands down the centre of gravity unlike other brands of tank making it faster and more efficient than tanks now used is aerial firefighting. Also we design and manufacture our own pumps which have flow rates up 150% higher than other manufacturers. “We do all our R&D here at Doonan, have seven models in production to suit different aircraft, and once testing is complete the components are mass produced elsewhere, leaving only the assembly. Currently we’re looking at a 10,000 litre tank for use on the US National Guard’s Chinook aircraft.” Sky-crane water-bombers such as the Elvis helitank have a larger capacity, however the Helitak used with say Black Hawks are faster and unlike Elvis, can be used for evacuation, carrying up to 15 people. “Simply strap on the Helitak and depending on the emergency it either lands, gets people on board, takes them to safety then returns to throw the water on, or the water can be thrown first.” Jason, who is 38 and has two “great” kids Emily 10 and Riley 7, recently worked on helicopter operations for the Moreton Island oil spill clean-up. He appeared on ABC TV’s New Inventors, impressed the judges so much he collected the trophy for his Helitak invention and heads straight to the finals.
