I know that we have all dug deep to assist our fellow Australians - but the reconstruction of properties, rebuilding of businesses and lives of those affected will be ongoing for a long time. Freestyle champion.. DRIVING MARTIN DUNCAN’S EFFERVESCENT PERSONALITY IS AN ENTREPRENEURIAL BRAIN THAT TICKS INCESSANTLY. artin Duncan’s smile lights up a room. He’s a magnet for social snappers and the centre of attention for wannabe restaurateurs and entrepreneurs. Not bad for a Kiwi who hails from Temuka, a tiny pottery town on the South Island and cooked his mother out of the kitchen at the tender age of seven. “My family was either blessed or tormented with me trying different cooking processes but I’ve always had a passion for baking cakes, bread and desserts,” says Martin with a chuckle. “Unfortunately for them I would run with something until I perfected it.” He started a chef’s apprenticeship in a small boutique hotel in North Otago at 16 and it didn’t take long before he’d made his mark and was second in charge. At 21, adventure called and so did Australia. After a stint on Hamilton Island, he settled in Terrigal on the New South Wales Central Coast, managed a deli and this was followed with his first restaurant called the Heaven Beach Café, which he opened with friends. Renowned restaurant critic of the day Leo Schofield visited and subsequent queues were testament to its success. The bright lights of Brisbane beckoned and a new dining/retail concept in Rosalie had the punters totally flummoxed. Freestyle Tout sold desserts, flowers and art. “It took a little while for people to accept the notion of going out for dessert,” recalls Martin whose younger sister and mother followed him to Oz. Customers eventually loved indulging in decadent desserts and the fresh and floral ambience, with everchanging art work by local artists made the café dynamic and interesting.

“The secret to success was that I made all the desserts so they had a homemade feel rather than something mass produced, like most coffee shops serve today. Sticky date and crème brulee were the best sellers and13 years later they sell

just as well.” With the Rosalie site slated for redevelopment, the selfproclaimed dessert king went on the hunt for new premises. He was delighted when approached by the developer of the Emporium in Fortitude Valley. “I could see there would be a cool vibe. Four years later success has prevailed.”

ART WORKSHOPS FOR BUDDING PAINTERS, SCULPTORS AND THOSE WITH A PENCHANT FOR CHARCOAL DRAWING ARE CONDUCTED BY PROFESSIONAL TUTORS

With his entrepreneurial brain ticking away once again, an innate understanding of staffing issues, the fact that passion plus is a required criteria to get over the hard times, it was time to put an end to boring industry functions and dull networking nights. He initiated FBI, an acronym for Queensland Food and Beverage Industry. It started in Brisbane and was launched on the Sunshine Coast last year: “I saw a serious need for local producers, chefs, restaurateurs, wine companies, media and government departments to actually talk to each other in a more informal environment. Three years on, fresh produce is going direct to restaurants, wines are on lists and the media is more focused on Queensland’s talent and products.” In 2006 the Virgoan had another brainwave. After trawling the hinterland within two hours of Brisbane and inspecting real estate agents’ versions of dream properties, Martin and his very supportive partner Tom, found their slice of paradise at Dulong. “I wanted to build a beautiful space where I could run away to, where guests can relax, create, revive, play and do art classes. Friends and I planted thousands of rainforest trees, 250 exotic fruit trees and native fruit trees and we established a splendid herb garden.” Freestyle Escape is a dream come true. There are two luxury houses: ‘Escape, a contemporary-style three-bedder with a fully equipped gourmet kitchen, European appliances, spacious open-plan living area with log fireplace, outdoor dining area on the main deck plus a plunge pool, sun lounges and beanbags for a complete chill-out. ‘Omaroo’, which is Aboriginal for 'beautiful view' is a stunning five bedder secluded family holiday haven which sleeps eight. Features include a large heated saltwater pool and three open fireplaces.

Art workshops for budding painters, sculptors and those with a penchant for charcoal drawing are conducted by professional tutors, accommodate eight to ten people and held undercover in the rainforest. Beauty treatments, yoga and cooking demonstrations are also on the agenda if so desired. Breathtaking views of farmlands, rainforest and the ocean extend to Mt Cooroy behind Noosa to Moreton Island and beyond. The property is 25 minutes to Sunshine Coast beaches, attractions and first class restaurants. With another property at Cootharaba near Noosa, Martin’s new found love of painting and sculpting has to be sandwiched between living there, in Dulong or in Brisbane. Whilst it’s great for the mind and soul, he says it’s not so easy on the diesel bill. In addition, the two acreage properties require constant maintenance: “Luckily I enjoy being outdoors. It’s very satisfying to see things grow and there’s a real sense of pride in harvesting your own organic produce. I’m really into cooking ingredients simply, often on the barbecue. In winter I love tagines and casseroles which are great for entertaining and I’m a couscous and mashed potato addict.” At the Noosa Food & Wine Festival in May, Martin will be ‘starring’ on Saturday, serving Freestyle Tout’s current fave rave of delish brioche dumplings filled with white chocolate and raspberries with a dark chocolate dipping sauce. Although Martin loves Brisbane for its people, diversity of cultures, an ever-evolving river scene and being part of the growing food and art scene, it’s the farmers who tug at his heart strings: “I’m inspired by the people involved in bringing food from the paddock to the plate. Wow, we’re so lucky.”

SWIM Fashion Week at Sanctuary Cove... Guests, buyers and designers were eager to preview the Summer 2009 collections on show at the inaugural SWIM Fashion Week at Sanctuary Cove. You couldn't have asked for a more ideal location - the Hyatt Sanctuary Cove pool area, with its striking white, purpose-built beach huts for collectors to show their collections privately, and a separate parade arena where seating was at a premium, the event was a highlight for the fashion industry. Your daily squeeze

ORANGES ARE THE BEST KNOWN CITRUS CROP IN THE WORLD, AND QUEENSLAND’S GREEN-TINGED VALENCIA ARE AT THEIR JUICIEST NOW. Whether navel, seville, blood or valencia, look out for Australian oranges that are firm and fragrant. Small blemishes do not affect the quality or taste however valencias have a natural greening on the skin. This is a sign of nature’s sunscreen, ensuring it’s ripe, fresh and bright orange inside. Freshly squeezed juice and grated peel or zest can be refrigerated or frozen. Whole oranges should not be frozen, as juice expands and bursts inside cells, leaving the defrosted orange with a dry pulp and mushy peel. Start the day with a refreshing juice. Squeeze fresh oranges and chill overnight. To retain vitamin C content and colour, cover tightly and refrigerate immediately. Add a few tablespoons of fresh juice to flavour fruit salads; for a fresh smoothie, combine the juice of oranges with other fruits and yoghurt; to create a simple dressing with 1 ½ cups of fresh juice, ¼ cup olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon salt and ½ teaspoon freshly ground pepper, and for a zesty marinade try 1/2 cup of juice, 1 crushed

Orange Lamb Tagine

Ingredients: 1 tbs olive oil 4 chicken thigh cutlets, skin removed and trimmed 3 large potatoes, peeled and cut into 2cm wedges ½ tbs sweet paprika powder 300g piece of butternut pumpkin, peeled, cored and cut into 2 cm pieces 1 red capsicum, halved, deseeded and cut into bite size pieces 1 orange, cut into wedges 30g dried apricots, chopped 2 garlic cloves, peeled and halved juice of 1 orange 1/2 cup reduced salt chicken stock 1-2 tbs parsley leaves, chopped Method: Preheat oven to 200°C. Heat half the oil in a large roasting pan and brown chicken pieces. Set aside. Heat remaining oil in roasting pan, brown potato wedges on all sides and toss together with paprika. Add chicken, pumpkin, capsicum, orange wedges, apricots and garlic to the pan. Whisk orange juice of and stock together. Pour over chicken pieces. If desired, season with a little salt. Close lid tightly and bake chicken for 35 minutes, bake uncovered for a further 10 -15 minutes or until chicken and vegetables are cooked through and golden. Before serving sprinkle with parsley and serve

Ingredients: 800g lamb shoulder, diced 2 tbs olive oil 1 red onion, finely chopped 3 garlic cloves, peeled and chopped 3 tsp fresh ginger, peeled and finely grated 1 cinnamon stick 1 star anise 2 tsp cumin seeds 1 tsp sambal oelek (or red chili paste) freshly squeezed juice of 2 navel oranges 400-600 ml vegetable stock 400g can chickpeas, drained and well rinsed 2 navel oranges, segmented salt 1 tbs pine nuts, toasted 1 tbs coriander leaves Method: Place meat and oil in a large heavy-based saucepan. Add onion, garlic, ginger, cinnamon, star anise, cumin, sambal oelek and toss together over medium heat. Pour in orange juice and 400 ml of stock (a little more liquid may be added later). Bring to the boil, reduce heat, cover and simmer for 1 hour, stirring occasionally. Stir through chickpeas and cook for a further 15-30 minutes or until meat is tender. Gently stir through orange segments and season with salt. Serve in a traditional tagine dish. Sprinkle with pine nuts and coriander before serving. Serves 4.

Although in the thick of vintage, winemaker Glenn Barry was thrilled to hear the results, and said "At Starvedog Lane we take pride in the quality of wines from the Adelaide Hills, but the success of our Shiraz Viognier wines has been particularly rewarding. Our ultimate aim is to produce wines showing all the attributes of the Adelaide Hills with complexity and great personality. We are extremely selective in the vineyard and combine new and old world winemaking techniques to ensure maximum fruit and vineyard expression, so it’s great to see these efforts being recognised." “Who knows if it might have a rebirth?” muses Lisa von Zeppelin, Gold Coast-based relative of the man who developed the Zeppelin – Germany’s Count Ferdinand von Zeppelin. Among the enthusiasts behind a planned Australian chapter of the international Airship Association are Lisa’s two sons, Marius and Andi, also longtime residents of the Gold Coast. “The Zeppelin had a grand place in the history of aviation,” Lisa says.

That romance was born out of the passenger carrying Atlantic crossings that arose from Ferdinand’s original plan for the airship developed after a visit to America. A military man, he was sent to the US in 1863 to work as an observer for the Union army during the American Civil War, later exploring the headwaters of the Mississippi River. While in Minnesota he made his first balloon flight, and returned with a keen interest in such flight to launch an airship company, the Zeppelin Foundation, in Friedrichshafen, and devote himself to the design and construction of airships. Luftschiffbau Zeppelin GmbH is a German company founded by Count Zeppelin which, during the early 20th century, was a leader in the design and manufacture of rigid airships, specifically of the Zeppelin type. By the time Ferdinand died on March 8, 1917 his airships had made regular passenger flights and had been used in the First World War. The Zeppelin project was shut down at war’s end and later began a resurgence under his successor, Hugo Eckener. But the romance of airship travel was dealt a wicked blow with the tragic loss of the Hindenburg on May 6, 1937 as it attempted a mooring at Lakehurst Naval Air Station in New Jersey. Fire destroyed the Hindenburg in less than a minute with the loss of 36 lives and shattered public confidence marked the end of travel in rigid passenger airships. Interest in Zeppelins never disappeared, and there are today craft taking passengers on flights over Lake

Every building component from nails to the timber trusses had to be sourced, then transported by semi-trailer from Brisbane and Sydney to Cairns, then barged over to the island. “Cairns is a community of only 150,000 people, so access skilled works and tradespeople was also a headache.”

As the island is part of the Great Barrier Reef Marine Park, the ecological sensitivity of Fitzroy Island was a major issue. Joshua had to manage the standards and regulations of five government bodies. The Great Barrier Reef Marine Park Authority, Cairns City Council, Department of Natural Resources and Water Queensland, Department of Primary Industries and Fisheries and the Environmental Protection Agency were all actively involved during the planning, designing and construction phases on Fitzroy Island. The island meets strict guidelines to protect the delicate environment, including its own sewage treatment plant and recycled water supply. Fitzroy delivers all the natural beauty expected in a Barrier Reef island – the pristine clear water, icing sugar beaches and brooding rainforest – which all provide the ideal setting for resort infrastructure.

Lilies and lotus... A WATER GARDEN WITH PLANTS IN POTS SHOULD USE NO MORE WATER THAN A CONVENTIONAL POTTED PLANT. n decorative architecture, waterfalls and cascades provide a focal point as well as sounds from the water splashing and spilling. Cascades also enhance the perception of a site by providing recreational facilities, an alteration of environmental factors to increase human comfort, a project image, a focal point or captivating views. In interior landscapes, it provides simultaneous tranquility and vitality. The concept of multi-purpose cascades has been re-developed in recent times, for example the grand cascade which surrounded the Olympic cauldron at the Sydney 2000 Olympic Games opening ceremony however with water such a scarce commodity, its utilisation on a grand scale has had to be minimalised. So is it possible or even right to have a water garden? In a landscape it has enormous appeal, however a potted version is a style that is not only interesting but practical. One container opens the door to a palette of plants that you would normally only be able to use in a pond and the bonus is it uses far less water than your average potted plant. A large ceramic pot, bathtub, basin or any container that is watertight is ideal. Half wine barrels are a great, but plants and fish don’t like water with an alcoholic residue, so it needs to be thoroughly cleaned before use. Position the container where it gets at least six hours sunlight a day and give each plant its own pot using bricks or paving blocks as stands to adjust the heights. A good way to start is with White Rush, a strappy plant that grows to about 1.2 metres high and creates great habitat for fish and frogs. Others to consider are schoenoplectus lacustris ‘Albescens’, a sedge with vertical variegated foliage; nile grass papyrus which has mop-heads that can grow to three metres high; plus some irises are true water plants. Use iris laevigata elegantissima or the Japanese water iris ensata‘Embossed. Every potted pond should have a lotus or water lily of which there are two types, a hardy or tropical. Nymphaea ‘June Alison’ has bright green and maroon on its leaves and pink flowers; Nymphaea ‘Tina’ has a bright blue flower unique to tropical waterlilies.

If the pots start to float, weigh them down with gravel or small rocks. Wait for two weeks for chlorine from the tap water to dissipate before adding fish. Australian native rainbow fish are particularly good because they are frog-friendly and won’t eat the tadpoles Azolla filiculoides serves as a nutrient control, keeping the algae at bay and tadpoles are a good sign in a water garden because if the water garden is in balance, they will often come naturally. Tadpoles are algae eaters so they help clean the pond. And when they turn into ‘princes’ they’ll eat the mosquito larvae. Other algae eating animals such as aquatic snails and insects such as 'back swimmers' are particularly valuable because they eat single-celled suspended algae, which if left unchecked will result in a very green pond. Change the amount of light that enters the pond by adding or subtracting the number of plants in both the pond and its surrounding area. Thirty to forty percent of the water surface should be shaded from the sun. Sunnier locations require a higher shade level. Very little needs to be done to maintain a water garden’s fantastic appearance. Just keep growth under control, clean it once a year and forget a pump or any fancy equipment. And let’s not forget you’re also assisting wildlife. When birds drink from the pot, they bring a certain amount of insect control to your garden.

‘Secret Women’ - Orrell Battersby

In May we feature Orrell Battersby an extremely talented thematic artist whose passion is social justice. He was born in the U.K. and moved to Australia in 1993 with his wife and children. Orrell is an ordained minister with a degree in theology and psychology and for many years has been involved in community welfare projects. Orrell now paints full time and has painted a collection of contemporary paintings featuring the faces of Indigenous Australians. The series draws on the artist's own experience of dealing with institutional intolerance and discrimination. The paintings are not portraits; they illustrate an issue rather than an individual. You can be among the first to view some of this series of paintings in the Gallery now (as this is the first time they have been on display). Our April Exhibition features ‘Admiral’ - Ben Stack Sydney based artist Ben Stack. Ben Stack was born in Dublin in 1959. Ben emigrated to Sydney, Australia in 1994 where he now lives and works. “My paintings usually start with a colour idea, then evolve into compositions in which colour is the primary subject. Art is a synthesis of my personality, the subject or colours that inspire me and my materials and techniques. Speed and simplicity are my primary goals” says Ben. The Gallery has a number of Ben's current works on display now.

His celebrity soon spread to parts foreign and requests for printed images and pawtographs flooded in. As each new skill became known
