Two new stars at Dreamworld

Two cute Tiger handlers at the Gold Coast’s Dreamworld were all agog when two, four weeks old, male Bengal tiger cubs joined the park’s renowned tiger program from a private exhibit in NSW. Like doting new parents they watched in awe as the cubs pounced, napped and enjoyed bottles of warm milk. The cubs will join Dreamworld’s Bengal tiger program and become ambassadors for tiger species around the world.

The diverse genres of David Hobson Surprisingly Ballarat-born David Hobson’s forte was in rock bands before being discovered as a classical singer, who went on to make his name with opera Australia. He became a major recording star with eleven best-selling albums to his credit, has appeared frequently on television including It Takes Two and Dancing With the Stars, and has headlined his own sell-out concerts at venues such as the Sydney Opera House. These days the country’s favourite tenor thinks nothing of taking the lead role in Die Fledermaus for Opera Australia and is completely at home entertaining fans at an AFL Grand Final or in the intimate surrounds of berardo’s restaurant and bar in Noosa, where he was accompanied by musical director David Cameron. PROFILE Genial Andrew Lofthouse’s on-air persona is super cool, however away from the television studio, he reveals to Helen Flanagan, his fast pace revolves around sport, motorbikes and playing in a rock band.

I

t was a very proud Andrew Lofthouse, affectionately known as Lofty, who shared the stage several weeks ago with fellow Nine news presenters Peter Hitchener and Peter Overton, collecting the Logie for Outstanding News Coverage of the Queensland Floods - just one of the heart-wrenching news stories from last year. “When Cyclone Yasi hit, we did a story in Tully with a woman who, along with her family, was rescued from her home by a neighbour, moments before it was completely wrecked,” recalls Andrew, whose media career began after years as a teacher followed by a stint in the music industry, then community radio on the Gold Coast before being snapped up by the ABC eventually replacing Rod Young. He joined the Nine news team in 2009 as weekend presenter and moved to weekdays when Bruce Paige retired six months later. “She was distraught but took us through the ruins trying to find anything she could salvage. “They’re difficult stories to do when you want to get people to talk but you don’t want to add to their distress. It’s something we try really hard to do sensitively.” After Yasi it was off to Christchurch to report on the earthquake aftermath. “Driving into the city seeing the level of destruction – everything crumbled to the ground, the loss of life, sniffer dogs at the recovery site, finding another body, people looking for answers – just awful, so awful. It was difficult to report, I had to push emotions to one side and steady myself.” There was also a huge outpouring of grief when three generations of the Taufa and Lale families were killed after fire gutted their home at Slacks Creek, however when the slab was laid and later when survivors received keys to their rebuilt home in an emotional ceremony, it was a heart-warming time for Andrew, who gets a buzz every night presenting the news with the “cool calm” Melissa Downes.

Let’s Go Naked... In the ‘80s music buff Andrew and two university mates started an alternative rock band with the idiosyncratic name of Lets Go Naked. “We actually got the name from a documentary we saw one afternoon when we were having a break from rehearsing,” explains Andrew with a laugh. “It was about the ‘Naturists’ (Nudist) movement in the USA and it was called ‘Let’s Go Naked’. It was hilarious…lots of old black and white film of people playing volley ball in the nuddy and getting all philosophical about why they like get their gear off…all that kind of thing. So we started using the name and it kind of stuck. A high point was supporting New Order when they played Brisbane in 1985 and most recently we released an album called Insides.” LuxuryStyleLiving

The family followed health and physical education lecturer dad and school teacher mum around before finally settling in Caboolture, north of Brisbane. Naturally they shared a love of sport, boating and fishing plus great

years so that it now has great facilities, top restaurants and more, but it still has that ‘country town’ kind of laid back attitude to life. “The move five years ago means lots of commuting to Brisbane but it’s well worth it, and the family won’t budge now. “We share a love of the great outdoors, cricket and rugby and I have some favourite running tracks near where we live in Caloundra. “I’m a motorbike fan too so I ride up into the hinterland to get away from everything whenever I can. I also love to cook - getting into the kitchen at weekends when I have the time or eating out. Our favourite place is Domenico’s at Kings Beach. Great Italian food and hospitality.” The early riser says he feels blessed with such an exciting job and “going on the telly every night gives me a buzz plus it can take you just about anywhere from day to day. We do quite a lot of reporting and presenting away from the studio so you never really know where you might end up. EKKA is a great way to stay in touch with our audience, similarly the Brisbane Festival and being involved with the Starlight Children’s Foundation is a great way to help out in the community.

Wife Allysa, who he met at teacher’s college and their sons Tim and Jez, aged 12 and 14, lived in Brisbane, yet spent weekends and every summer on the Sunshine Coast with other family members, so a wise lifestyle decision was made. “We loved Brisbane, the climate and the houses, the way the city has ‘grown up’ over the

“I don’t have a bucket list as such but I’m keen to do more travelling to show the family a lot of the places I’ve been lucky to get to. I’ve always liked the idea of getting to Everest Base Camp so perhaps that’s my bucket list goal,” concludes Andrew, who obviously loves life and believes, as his parents taught him, to seize opportunities as they come along and remember you can be anything you want to be..

Shades of the nineties Eyewear designer, Paul Taylor, has re-released Michael Hutchence's favourite frame from the nineties. Michael Hutchence was with Paula Yates, his partner at the time, when he bought the original frames from Paul Taylor's shop in Sydney’s Paddington, however Taylor only realised that later when he saw photographs of Hutchence wearing them. The frames became part of the rock star's signature look and were captured in famous moments such on the Champs Elysees in Paris, which was painted by Harry Borden and hangs in Canberra’s National Portrait Gallery. Australia's Original Wild Man Before Warwick Capper was wowing the footy crowds with his short shorts there was Alby Mangels - Australia's original wild man, decked out in his short shorts scrambling into tiny boats on crocodile infested waters with his trusty dog and a beautiful female companion. Since that time others have joined the ranks of intrepid wildlife campaigners - but as our editor and lover of all animals great and small, Kaylene Murray found out - Alby still holds the crown of 'original' in every sense of the word.

lby flies back to Australia occasionally to fulfill commitments with his philanthropic and social activities. He is based in Micronesia, where he is providing building programs and feeding projects for the homeless and hungry. On this occasion, his visit was to put the finishing touches on his newly released and digitally remastered “Adventure Bound” range of films, comprised of over seventy titles, more than half of which have never been seen in Australia before. Gold Coast based Bookland has secured the distribution rights for this range, which is being produced at Gold Coast based Sherwell Studios and managed by Gold Coast based biographer and conservationist Lynn Santer (who is also Alby’s professional manager). Mindful of being responsible for Alby’s entire life’s work, owner of Sherwell Studios, Simon Sherwell, moved in and slept at his studio until all the original masters were safely digitised, copied, and backed-up off site. During this time Simon’s wife went into labour with their fourth child several weeks earlier than expected, leaving Simon to care for his three other children. The children were duly dispatched to the studio where they became glued to Alby’s films. The next thing Simon knew – his three children had gone missing!

Frantically searching for them he discovered they had taken their sleeping bags outside and were “being Alby Mangels”! Simon has also produced the tribute video clip on the home page of Alby’s website and has plans underway to produce an MTV-style music video to highlight Alby’s passion for wildlife and environmental causes while introducing Alby to a new generation. The release of Alby’s “Adventure Bound” series has come about due to the resolute demand from Alby’s die-hard fans around the world, in conjunction with the announcement that Award-winning Hollywood-based film producer, Paul Mason is working on a new TV series for the man who fans call 'legend'. “I first heard of Alby through reading his biography Alby Mangels Beyond World Safari by Lynn Santer and found his story utterly compelling,” says Peter Adams. “It was a fascinating story and one that I felt needed to be told again to a younger generation. Before Bear Grylls, Steve Irwin, and Paul Hogan, there was Alby Mangels – he was the original, the person who paved the way for everything that was to follow. Here he is again to show the young pups a few new tricks or two.” New-York based robo-technician, entertainment lawyer, and ardent Mangels fan, Ash Kalb, is also organising screenings of the ratings-busting series (that aired on the US Discovery Channel to the highest ratings ever achieved) in Aussie bars in NYC and other cinema venues in the Big Apple. In addition, early in 2012 Alby will be undergoing a complete make-over with Melbourne-based style consultant, Cindy Newstead. This is in no way an easy challenge for Cindy, as she will have her hands full trying to transform this

It was an impossible task so after days of relentless tantrums, my father disappeared into his shed for a few days and returned later with a standing frame mounted onto a wheelbarrow type contraption. They pushed me around on the wonky green pram-like thing for up to six hours every day. It worked, I walked at three and my parents had their sweetest taste of success. Exercise did work and maybe, just maybe I could do more than just walk, maybe I could live. In fact my father told Ray Martin in my documentary ‘if she is only going to be here for a short time, let’s give her the best possible time.’ And that is how I’ve lived my life. I’m always the last woman standing at any party, I dance more than anybody else, travel more and laugh more. My journey has been challenging, phenomenal, tremendous, unfair, miraculous, fortunate and enviable. But most of the time it has been because I have chosen to fight.” Fighting turned Karni into a Golden Girl. She’s competed at many Paralympic Games, won medals, broken world records, been the Sydney 2000 Australian Paralympic team captain, raised $1million for the Australian Paralympic team to go to Athens in 2004, is paid to be a broadcaster and on the speaker circuit plus she’s the only person in a wheelchair who’s been on the cover of Inside Sport. FACE TO FACE Pinching her mum’s lippy, Helen Flanagan reveals, was Stephanie Shepherd’s genesis to creating luxury spas.

S

tephanie Shepherd is arguably the Queen of Pamper Domes in Australia, however convincing her parents she wanted a career in beauty therapy was another thing. Not unexpected when you consider she and her brother grew up in Broken Hill where their father was in the mining industry and mother was a TAFE secretarial teacher, who happened to have a lipstick collection that proved irresistible to Stephanie. “I remember at 12, mum letting me have a facial and get my eyebrow waxed which was a big deal in those days,” recalls Stephanie who at 13 washed hair in a hair and beauty salon on Thursday nights and Saturday mornings for pocket money. “Then I discovered Yves Rocher which I sold to friends and used for mini facials and manicures.” After leaving school in year 10, a 12 month secretarial course appeased her parents before venturing to Adelaide to study beauty therapy. She was nearly 16 and the youngest applicant the academy had ever accepted. With qualifications in place, it was back to Broken Hill but at 18, she made a bold move to the ‘big smoke’ in Brisbane, her determination paying off with a position as a beauty therapist and at 26, learning a few invaluable lessons along the way, she opened the very modest Stephanies Natural Beauty in Camp Hill, soon to be outgrown so she relocated to the more upmarket Bulimba and rebadged it as Stephanies Urban Spa. “I had a vision and desire to combine beauty therapies with peaceful places of harmony and balance,” says Stephanie who was beginning to fulfill her childhood dreams and always gives credit for her parent’s and husband Desmond Plaisted’s support. “I wanted to design spas where people could cocoon themselves from the outside world and enter another world, if only for a short time.” Stephanies Urban Spa with 12 treatment rooms continued its loyal local following and Stephanies Spa Retreat with its Opal Rasul Temple, located on level three of Sofitel Brisbane, which she opened several years later after two years of dedicated planning, became a welcome city escape for locals-in-the-know, visiting celebrities and hotel guests. “Sofitel was a dream spa for me and a big investment. Over the years the other spas have happened organically. Doors have opened for me but when you consistently strive to create and maintain a premium product, opportunities do present themselves. “I launched Stephanies Ocean Spa in Noosa in 2010 at Outrigger Little Hastings Street Resort & Spa. Last year Stephanie was presented with another opportunity and Stephanies Mountain Spa at Clear Mountain was launched. “We created the concept and design for this exquisite boutique spa which is within the Mercure Clear Mountain Lodge & Spa and has breathtaking mountain views.” Stephanie says she is inspired by other award-winning spas she has visited around the world, takes her hat off to spa owners and therapists who work in such a competitive world, and feels blessed that after 27 years in the industry, she loves it implicitly, similarly Des, the love of her life. “He is my rock, mentor, IT master, voice of reason and barista,” extols Stephanie with a laugh, recalling the night they met in a Brisbane bar and Des spilt his drink, ostensibly to get her attention. “We love cooking for friends and family, travelling somewhere new every year although miss our family of three very special four-legged friends - Max 13, a Maltese Shitzui, Mille 11, a mixed breed and our little princess Faith 2, a Russian Blue rescue kitten. They are a massive part of our lives, rule our home and make me laugh every day.” Whilst always on the look-out for new business ideas, concepts and different spa treatments, Stephanie says “you can ever be complacent or take anything for granted.”

This is the type of restaurant the Gold Coast has been crying out for. With its quality decor in muted tones of chocolate, leather and wood, huge windowscapes affording sweeping ocean views from every table - day and night; balcony dining for those wonderful breakfast and luncheon occasions; intimate cocktail bar area with backlit, yellow-toned onyx bar and pendulum lights; private dining room for intimate gatherings and a climate controlled wine room, where diners can sample before choosing the perfect wine from the extensive wine list with the assistance of an expert, or book for private wine tastings with matching petite food matches. Also, sitting pride-of-place just outside the open view kitchen area, is an old, red and silver Spanish Jamon slicer, and guests can request Iberico ham to be sliced as one of their menu choices. We did and it was exceptional. We started our night in the bar, I couldn't walk past its welcoming embrace. Of course, the fact that the house Champagne is Ruinart possibly had some bearing on my taking a seat as well. Restaurant Manager, Sam Maddox offered just the right amount of assistance in taking us to our window table after a couple of Champagne cocktails. He possibly realised that I was happy to stay in the bar. Seaduction's contemporary menu is not large but it covers all the bases with fresh local seafood, meats and seasonal produce, and the prices are surprisingly inexpensive. That is probably why the restaurant is proving so popular with local and destination

diners alike. The menu reflects admirably an array of tantalising dishes that showcase Steve Szabo's philosophy of food. Choose the right ingredients at their optimum and work gently with the elements. Steve and his good-looking, young kitchen team are hypnotising to watch as they work in unison - each one taking a role and working with speed, efficiency and talent. We started the evening by savouring the specialty shaved Spanish Iberico ham with a few tasty slices of crusty bread, Then I followed with an entrĂŠe of velvety smooth Foie Gras parfait presented with a gingerbread crumble, a Jamon (that was exciting) and tiny, little cubes of port wine jelly. Amazing. My partner chose the Seared Diver Scallops, served with braised pork cheek, sweet corn custard and mushroom foam. A marriage made in heaven. For my main course I chose the Twice-cooked Pork with crispy Pig's Ear (that was a challenge- I like little piggies), accompanied by cannellini bean puree, white asparagus and Guinness bubbles. It was tender and delicious - sorry little piggy. My partner chose the Line-caught Snapper served with tempura of baby vegetables, red pepper crumbs and shellfish epuma. He said it was wonderful. Everyone loves dessert - so diners will be thrilled to know that Zorica Szabo has joined her husband at Seaduction. Zorica is one of the best pastry chefs we have ever met. And, her take on desserts for Seaduction is a dream come true for those with a penchant for the decadent. My Passionfruit Marshmallow with pistachio powder, popping candy, passionfruit essence, jelly and ice ream made from passionfruit juice was so much fun. Heston eat your heart out. I did also try the Lemon Curd Tart with gingersnap biscuit, olive dust and berries, which was delightful. Steve and Zorica are adding elements of the bizarre and molecular athletics to their dishes - foams, miniature additions which obviously need little elves to prepare them; essences and pure passion. Ingredients 1 kg red onions, thinly sliced 2 tablespoons olive oil 25 g butter 1 teaspoon brown sugar 100 ml balsamic vinegar 1 tablespoon fresh thyme leaves 1 sheet ready-rolled puff pastry rocket salad, to serve Method Preheat the oven to 180°C. Put the onion, olive oil, butter and sugar in a heavybased ovenproof frying pan and sauté over a low heat

until the onion is very soft and beginning to caramelise (about 15 minutes). Add the balsamic vinegar and sprinkle over the thyme. Remove the pan from the heat. Cut the pastry into a circle that is slightly larger than the top of the frying pan. Place the pastry over the onion mixture, tucking it in around the sides, and make a few fork holes in the pastry so the steam can escape. Transfer the pan to the oven and bake for 15–20 minutes until the pastry is golden-brown and puffed. Remove from the oven. Place a large plate over the frying pan and invert the tart onto the plate. Cut into 4 wedges and serve at room temperature with a fresh rocket salad. Serves 4

FISH TACOS WITH FRESH MANGO SALSA TOBIE PUTTOCK'S Mango Recipes will lead you on a journey of culinary discovery, unveiling the delicious mango as the perfect ingredient in both savoury and sweet dishes. In addition to the traditional uses of mangoes in smoothies, salads and desserts, the hero fruit goes great with chilli and salty flavours like prosciutto or fish sauce, and it works beautifully with sweet ingredients like maple syrup and ice cream. Tobie’s mango-inspired recipes are sure to make any season a tasty one!

Serves: 4 Ingredients: 600g flat head fillets 1 lime, juiced 1 tbsp of extra virgin olive oil Small handful of coriander, washed, dried and roughly torn 1 tsp of freshly chopped green chili Pinch of salt For Mango Salsa 1 ripe mango, skin removed and roughly diced 2 teaspoons of chopped jalapeno chili (or normal chili) 1 handful of coriander, washed, dried and roughly chopped 2 tablespoons of lime juice Other 8 corn tortillas 2 handfuls of shredded lettuce 2 tomatoes, washed and diced 2 small handfuls of picked coriander, washed and air dried Method: 1. To marinate the fish combine all ingredients in a mixing bowl except the fish, stir to combine,

then add the fish into the marinade and leave for at least 20 mins at room temperature. Once marinated grill the fish over a high heat on both sides, then allow to rest for a moment and prepare the remainder of the ingredients. 2. To make the mango salsa, combine the mango, chili, coriander and the lime juice and stir to combine. 3. To assemble - warm tortillas in a pan over a medium heat until warm, alternatively this can be done in the oven by wrapping them in foil and gently heating until soft and pliable. 4. I normally serve everything individually in separate bowls on the table to allow guests to put them together themselves, however if you wish to assemble them it’s a simple process of scattering the cooked fish over the warm tortillas followed by the lettuce, diced tomatoes, coriander and a dollop of the mango salsa. he Accademia Italiana Della Cucina meaning ‘Italian Academy of Cuisine’ is a leading international association dedicated to preserving and promoting authentic Italian Cuisine around the world. The Accademia’s Brisbane Delegation was officially launched in 2010, and has since been reviewing local Italian restaurants. The renowned Academy reviews and then provides a summary of each event to the organisation’s headquarters in Italy for inclusion in its monthly publication. Ristorante Fellini was presented their Certificate of Recognition following a convivial dinner hosted by the restaurant late last month, where the Brisbane founding members of the Accademia and their guests convened at Fellini to review every aspect of the dinner - from the environment and service to the food and wine offered. The guests received a specially designed menu featuring a variation of courses complemented by fine Italian wines. The ‘highlight of the dinner’ was one of

n support of Queensland burns victim and celebrity chef, Matt Golinski and burns research organisation, The McComb Research Foundation, Plates for Mates is a national fundraiser conceived by a group of Australia’s leading chefs as a way of expressing their care, concern and support for friend, celebrity chef and caterer, Matt Golinski. Matt tragically lost his wife, Rachael and their three daughters, Starlia, Willow and Sage Golinski in a home fire on Boxing Day 2011. Matt sustained third degree burns to over 40 per cent of his body and continues to receive treatment at the Royal Brisbane and Women's Hospital where is condition is now listed as stable. Funds raised will be in aid of the Matt Golinski Recovery Fund Trust, a financial trust fund set up to assist Matt’s emotional and physical recovery, and shared via a donation to The McComb Research Foundation, a charitable organisation set up by plastic and reconstructive surgeon and former Australian of the Year Dr Fiona Wood along with friend and scientist, Marie Stoner to aid burns research. Plates for Mates spokesperson and executive chef of Brisbane’s Bretts Wharf and Tank restaurants, Alastair McLeod said that Plates for Mates was developed in conjunction with fellow chefs including George Calombaris, Manu Feildel, Damian Heads, Gary Mehigan and Janelle Bloom. All are friends of Matt. “After initially feeling powerless about how to help our friend as a result of this tragedy, we had the idea to combine our love of cooking with our love for Matt and his family and so Plates for Mates was born,” explains Alastair. “George, Manu, Damian, Gary, Janelle and I call on our fellow restaurateurs and eateries to join us in devising fund raising activities to be held during the month of April. It is up to the individual business to determine how they wish to participate, for instance, they can hold one event, stage several events or do something every day. Some ideas include inviting every customer to donate one dollar, creating a special dinner event, asking staff to donate their tips and the restaurant matching that, or a simple competition or raffle. We of all people know how tough the restaurant game is, so we want this to be as simple as possible for all types of food and beverage related industries to be involved - it might be as simple as adding 20 cents to the price of a cup of coffee or a glass of beer, and donating that. There is no pressure as to the value of the donation. “As an industry we are ‘hospitable’ by nature and one of our own has had this terrible tragedy happen.

I hope that as an industry we can band together with the help of our loyal customers and really get behind this concept. “Matt’s injuries are severe and his physical and emotional recovery will be a long one. We are hoping that some financial support will help to ease the burden and at the same time assist the needs of other burns sufferers.” Alastair said that sharing the proceeds of Plates for Mates with the McComb Research Foundation by way of a donation in Matt’s name would mean that other burns victims would benefit from funds raised. Dr Fiona Woods of The McComb Research Foundation was delighted about the initiative. The response so far has been outstanding with the most recent being utterly inspirational and overwhelming. Justin Miles, former executive chef at Noosa Springs who these days is executive chef and general manager of the three star rated Windy Point Restaurant and Cafe in Adelaide, organised a degustation for 110, with all wine donated as well as the staff’s time plus about 90 per cent of the food. USM’s Andrew Saunders was the games show hoststyle MC and Matt Schwab who was Matt Golinski’s sous chef at Ricky’s, flew from Beechworth in Victoria to assist in the kitchen. “We had a silent auction and raffle with 30 plus items such as magnums of wine, accommodation, dinners, a specially made glass platter, sporting memorabilia, 365 days of coffee and a dinner at Icebergs in Sydney with Layne Beachley and Kirk Pengilly,” says an elated Justin. ‘It was an amazing success due to the generosity of so many and the commitment of individuals and businesses. We have great pride in announcing that $21,044.63 was raised from the dinner, auctions and raffles with 100 per cent deposited into Matt’s fund to assist his physical and emotional recovery. Coming up locally is Bistro C’s Plates for Matt fundraiser organised by executive chef Dayle Merlo, offering yummy tapas platters with all proceeds going to Matt plus Noosa MV Queen owners who are organising a fundraiser lunch. So was the case when host Tony Percuoco invited a few special media types to the launch of his Autumn menu and showcased the restaurant's new shared plates. After a welcoming glass of Prosecco we ventured to a 'long table' setting, so indicative of true Italian dining. From there the day became exciting - as Tony produced plate after plate of fabulous dishes all paying homage to his hometown of Naples, Tuscany and Umbria. Platters of jamon and freshly baked ciabatta, olives, pickled vegetables, arancini, baccala fritto, penne e salsicce and so much more. When we thought that we could eat no more, Tony appeared with Sous Chef Shane Vievers who presented a dessert that he personally designed while on a culinary escape in Italy last year. It was an artwork on the plate A clear ravioli encompassing a rich chocolate mousse, surrounded by petite flowers and berry gel dots, crumbled almond nougat which was then drizzled with a luscious berry coulis. To die for. And Tony has assured us that the recipe will feature in his next cookbook under Shane's name. Well done.

amie Oliver is renowned for having a passionate love of good food. Everyone embraced his hugely successful television series from The Naked Chef, Jamie's Kitchen, and Jamie's School Dinners to Jamie's Ministry of Food, and more recently Jamie's 30 Minute Meals and Jamie's Food Revolution. His cookbooks have been translated into over 30 languages, are bestsellers all around the globe and are packed with absolutely delicious family recipes that has been created by the chef whose philosophy to food and healthy eating and enjoying everything in a balanced way, inspires so many around the world. The Ministry of Food is a six-year-old project targeted at children’s obesity epidemic and a general decline in basic cooking skills. Its first Australian centre was opened in south-east Queensland’s Ipswich with Jamie, assisted by his mate, fellow celebrity chef and healthy food crusader Ben O’Donoghue, demonstrating a practical way for people learn the simple cooking skills they need to feed themselves and their families’ healthier food. An outreach truck will visit other parts of the state to conduct demonstrations and classes. Jamie said there might be a "bronzed Aussie" image but Australia is in the top four fattest nations worldwide with 50 per cent of adults and 25 per cent of children being overweight or obese, making diet-related disease the country’s biggest killer. To experience Jamie’s approach to healthy eating, hot foot it to Jamie’s Italian which opened in Sydney late last year and is a welcome addition to 20 Jamie’s’ Italian restaurants in Britain and Dubai. Another is slated for Brisbane and similarly the Jamie’s Italian brand will come under the auspices of the Pacific Restaurant Group. The Martin Brudnizki-designed 200-seater mega buzzy restaurant looks amazing. Upstairs the walls are covered in graffiti; downstairs is a tad more subdued; the bar has been converted to a deli station where you can sit and watch all things cured being prepared; there’s an eclectic mix of booths and colourful chairs to complement Jamie’s modern twist on classic Italian elements; and passers-by who peer into the front window will see two junior chefs making 100 kilos of pasta a day. The menu has a variety of pastas, authentic Italian mains and delicious antipasti made with well-sourced, quality, fresh and organic ingredients. Every dish has something to make it different such as the bellissimo antipasti platter that seemed to stretch forever and was propped on two cans of Italian beans. The fritto misto is also a show stopper with delectable seafood framed by brown paper and almost ‘veiled’ by fried angel hair pasta with a plump king prawn sitting cheekily on top. Little buckets of house-made breads, funky chips or posh chips with “insanely good” truffle oil and parmesan are just the best. The rustic, authentic Italian ambience is perfect as is the service and the prices; Italian wines are predominant; plus it’s child-friendly with the mouthwatering spaghetti bolognaise and authentic tiramisu sure to please. Jamie's Ministry of Food Truck on the road... Jamie Oliver's Queensland Ambassador, celebrity chef and restaurateur, Ben O'Donoghue took great pleasure ensuring everything was ready for the road, when he helped to launch Australia's first, Jamie's Ministry of Food Mobile Kitchen in Logan recently. Logan was chosen as the first community in Queensland to offer nutritious cooking classes for locals, who are eager to learn more about healthy, easy to prepare, and nutritionally balanced meals for their families, using fresh ingredients.

These 5 week, basic cooking classes of 90 mins per week are designed to break the 'fast food' mentality, and were welcomed by Logan Mayor, Councillor Pam Parker as a great confidence builder for local families. Jamie's Ministry of Food Program Director, Alicia Peardon said that the Mobile Truck program has gained great interest from other Queensland communities, and had a long journey ahead of it, with the ongoing support of The Good Foundation.

FISHY PEOPLE AT SANCTUARY COVE...

V

eteran prawn trawler and fisherman, David Patane has just celebrated a year of operation at the Sanctuary Cove Marine Village. The northern Gold Coast’s favourite prawn trawler has been a fisherman since he was 17 years old - and more than 30 years later, he shows no sign of slowing down. Mr Patane said his prawns are a hit with the locals because they were the freshest in the area. “We don’t have freezers on board, so we trawl late at night and bring the prawns in fresh every morning,” he said. “We usually dock on Friday, Saturday and Sunday mornings, and we’re here until we sell out, which doesn’t take long.” He said his family had been in the fishing business for generations, dating back to his European ancestors. “It really is in my blood and I couldn’t imagine doing anything else.” Like many other small businesses on the Gold Coast, Mr Patane is struggling under economic pressure but remains hopeful for the year ahead, and he said that fuel prices were his biggest concern at the moment, but as he has a good local customer base, he's confident that they will pull through these tough times. In October 1998, Mr Patane was lost at sea 40 kilometres off the Queensland/New South Wales border. His trawling vessel rolled over after colliding with an unidentified object in the middle of the night, and he wasn’t rescued until 9.00am the next morning. “If that didn’t put me off trawling, fuel prices certainly won’t,” he said.

CHEERS There is a growing international demand for sweet wines, with many countries producing an array of high-quality dessert wines in a range of styles and from many different varietals. Here in Australia demand has also increased, lead in part by the ever-increasing popularity of new Italianesque Moscatos.

T

he Riverina is a region underpinned by an Italian community with a passion for food and wine, and home to Australia’s premium sweet wines, from wineries such as De Bortoli, McWilliams, Nugan Estate and Westend. With these impressive sweet wine credentials, the Riverina created the International Sweet Wine Challenge six years ago, to highlight the quality of all sweet wines, including their own, and allow Australian dessert wines to be judged alongside their international cousins. Riverina Winemakers’ Association president Les Worland said, “The aim of the International Sweet Wine Challenge is to bring the various styles together to compare and contrast, and to promote greater understanding and awareness of sweet wines, as well as to obviously judge and inform wine-lovers which are the best”. The Challenge is open to any non-fortified sweet wine and the wines are judged in several categories, showcasing the diversity available, including Best Young Sweet: Floral styles, Best Young Sweet: Semillon Predominant, Best Young Sweet: Other Varieties including Moscatos, Best Mature Sweet: Floral styles, Best Mature Sweet: Semillon predominant, Best Mature Sweet: Other Varieties and Best Ice Wine. There is also a separate Museum Class for wines five years or older, with the aim of this class to show unusual or rare styles.” Nearly 100 sweet wines were entered for the 2011 competition, and judged by some of Australia’s most talented palates, including Ben Edwards and chaired by Lester Jesberg (a prolific wine show judge and author of Winewise). They were also joined by International guest judge Simon Nunns (Coopers Creek Vineyards, New Zealand) who was thrilled to see a higher number of New Zealand wines entered this year; two of which,

In 1895 Marqués de Riscal Reserva was the first wine outside France to win the coveted award at the Exposition de Bordeaux. I waited days for the right cloud cover in order to emulate a perfect reflection to compliment the moon which came to create a natural stairway. Moments after I pressed the shutter, the clouds concealed the beauty of the moon and the shot was gone forever. When you look at this image I hope you feel as I did facing the full moon. I live for these experiences where only the serenity and beauty in nature can deliver.

LAST SURF - Crystal Pier, Pacific Beach, California This evening was a pretty low tide and I wanted to capture the magic of California in a reflection. As the waves receded, the light I was chasing was perfect. A ripper sunset really kicked in on the horizon and I quickly fired off a few frames at the perfect moment. Composition was critical as I wanted the pier to carry your eye right into the image... to take you there.

International photographer Peter Lik

P

eter Lik stands at the summit of landscape photography. World-renowned, highly awarded, and boasting a huge international following, Lik’s journey had humble origins. Born in Melbourne, Australia, to Czech immigrants, it was his parents’ gift of a Kodak Brownie camera on his eighth birthday that set young Peter’s course. Entirely self-taught, Lik worked hard at his craft before making a life-changing decision: to come to the United States in 1984. A defining moment in Lik’s life came when he was introduced to the medium format panoramic camera. This larger-than-life camera compelled Peter to rise to its challenge to “Go big or go home.” Lik did both. He returned to Australia to photograph the vastness of the Great South Land. Peter then went on to open his own fine art publishing company as well as his first gallery in his adopted hometown of Cairns. He returned to the States in 1989 for another jaunt before undertaking a mammoth trip early in the new millennium to photograph landscapes of all 50 states. Fifty thousand miles and 1,000 rolls of film later, the “biggest challenge of my life” was completed. Highlights of Peter’s American odyssey can be found in his book “Spirit of America.”

Lik’s stature as a photographer has been indisputably confirmed with his receipt of the award of Master Photographer from both the Australian Institute of Professional Photography (AIPP) and the Professional Photographers of America (PPA). He has also been awarded fellowships by the British Institute of Professional Photographers (BIPP) and The Royal Photographic Society (RPS). Two more landmarks for Lik were the world record sale of his photograph “One,” for $1 million and the exhibition of two of his iconic images, “Ghost” and “Inner Peace,” in the Smithsonian National Museum of Natural History in Washington D.C. Lik’s masterworks include “Ancient Spirit,” “Sacred Sunrise,” “Angel’s Heart,” “Tree of Life” and the highly acclaimed “Ghost.” Each Limited Edition release is greeted with great enthusiasm by collectors and this has been reflected in recent record- breaking sales. Now at the top of his game, Peter Lik is “loving it!” at full throttle and the animated Aussie is showing no signs of slowing down.

his Autumn and over the Easter holidays Tiffany Jones Fine Art at Buderim are focussing on quality and beauty with an amazing array of paintings on offer that reads like a “Who’s Who” of the Australian art world. Now on show for art buffs and collectors is an eclectic exhibition of 80 paintings by some of Australia’s best known artists which has just been hung in preparation for local and visitors to enjoy over the next few months. Gallery director, Tiffany Jones explains that the focus of this Autumn’s season is the representation of high end works by eminent painters who will be represented by beautiful paintings from their best periods. Collectors with an eye for colour will be delighted to see two large and very striking oils of tropical north Queensland by respected 90-year old painter, Ray Crooke AO, a former winner of the Archibald Prize. One of the most evocative and valuable paintings in the Autumn exhibition is a richly toned work by Garry Shead entitled “Black Stockings” which evokes the sensuality of tango. The suited male dancer guides his female partner on the dance floor and she is dressed in nothing but back suspender stockings! Catching everyone’s eye with its intoxicating colours and immediately visible textures is a magnificent John Perceval still life oil of glowingly golden sunflowers set against a vibrant blue background. Also showing are a fun and very entertaining selection of pastels by the figurative painter Geoffrey Proud which show his highly imaginative character and wit in a series of pastels depicting rabbits in fun antics holidaying at the beach, playing in flower laden gardens, rowing on lakes and whizzing by in high speed race cars!

Tiffany Jones Fine Art also specialise in paintings by outback painter and stockman Hugh Sawrey CBE (1919-1999). Aptly portraying the history and people of country Australia, one of the oils by Sawrey “Ah Fong the Green Grocer” depicts a Chinese grocer in his coolie hat arriving in town with his horse driven cart laden with groceries to deliver to townsfolk. Also being the Queensland specialists in art by Norman Lindsay, Tiffany Jones Fine Art Gallery have a special room in their gallery devoted to this legendary artist and as part of their ever changing display are now showing a sensual oil of a female nude entitled “The Drape” which shows Lindsay’s mastery at capturing the female form. Driving Impressions The 2012 Ford Focus feels like a European car in the way it's been tuned to provide both sharp handling and a refined ride. There's very little body roll in corners, while the sharp, communicative steering is a revelation given that it's electrically assisted. Our trip to Bundaberg took about three hours from the Gold Coast on the Bruce Highway that led through quaint towns, and lush countryside. Gently rolling hills and farms offered an interesting and welcome panorama, so different from our usual blue ocean views. Our journey took us through the town of Childers which technically sits on the highway, a town of contrasts - none more so than the trendy cafés, ice cream parlours, antique shops and boutiques that would be at home in more cosmopolitan towns like Byron Bay and Montville. Add to that the iconic Queensland corner pub and meeting halls - and you have a village atmosphere that so many visitors yearn for. Just 5 kms north of the township continuing our journey to Bundaberg, we visited Australia’s largest free-flight aviary, the Flying High Bird Sanctuary, which boasts the largest walk through, free-flight aviary in Australia covering nearly 2 acres with a height of over 7metres and over 400m of walking tracks in a rainforest setting. Owners David and Anne welcome visitors and are eager to share their passion for the parrots and Macaws within. The camels in the back

Bundaberg, Childers and Mon Repos an eclectic journey of discovery

As we ventured further north to Bundaberg and into the main street, we were excited by the promise of fabulous local produce on offer at Indulge Café, This is fast becoming one of Queensland's most talked about cafes. Nestled half way along the wide thoroughfare of a town that sleeps from midday on Saturdays until Monday morning, this foodie's haven where owner, Amanda serves fantastic coffee and incredible regionally inspired food. Who knew that Bundaberg is a food bowl for Australia with a limitless list of produce available. But that is a whole other story - and you'll have to wait for next issue for that. Amanda is going to show us all that is on available in the region when we go back. It has been so many years since we've visited Bundaberg best known for its iconic rum and softdrinks, that we dare not say just how long. And oh how things have changed over the years. Bundaberg is now an emerging cosmopolitan destination - still with a sleepy, country town edge but so much more exciting than before. This is a perfect destination for those looking for something different - the Hinkler Hall of Aviation;

Botanic Gardens Complex; Bundaberg Rum Distillery Bondstore; and Bundaberg Brewed Drinks factory; We also found a fabulous seafood restaurant attached to a fresh seafood market called Grunskie's by the River, where diners can come in and choose their own fish or seafood and have it cooked to enjoy while sitting on the wide verandah dining area and watching the passing parade on the river below. Live entertainment on the weekends ensures there is always a full house. We then ventured another 15 minutes to Bargara and after such a huge day we were still on track to see the turtles. Witnessing the miracle of life is within the reach of everyone willing to visit this pristine region - and offers visitors a feeling that can’t be described by words alone. Even if the night we made to trip out onto the beach was black, cold and raining! We stayed at The Point, a quality apartment building offering all amenities for holiday makers and searchers of Sea Turtles. Luckily for us the manager let us know that it could be a very long night, as turtles don't come in on cue. And he was right we were on the beach at midnight and others much longer. But as they say "it was all worth it."

Audiences will be treated to the crème de la crème of Australian talent including names such as John Bell, Bruce Beresford, Andrew Denton, Peter FizSimons, Jennifer Byrne, Anthony Garcia, William Barton, Expressions Dance Company and more, as well as an unprecedented line-up of international performers hailing from Quebec, New York and London. He’s also hinted that audiences could be in for a few surprises as part of the festival’s eleventh year. Continuing on the tradition from the first festival in 2001, patron and dramatist, David Williamson will present his latest play When Dad Married Fury. The black comedy will be presented directly after its Sydney Ensemble Theatre Company season and revolves around the significant birthday of family patriarch, Alan and the surprise introduction of his new foreign wife – much to the horror of his children and grandchildren. ooking for the best seats in the house for Lady Gaga, tickets to the State of Origin, or wish to surprise your loved one in the most romantic even unconventional way possible and just happen to be staying at a 5-star hotel at the time? Who do you call? The concierge has an innate understanding of how to exceed guest’s expectations and no matter how bespoke or unusual, discretion is guaranteed. And that includes quelling the most outrageous requests. Many concierges wear distinctive gold crossed keys as members of the internationally recognised and prestigious Les Clefs d'Or which identifies them as true professionals who provide the utmost in caring, attentive service to their hotel guests. Once the domain of men, it’s not unusual to be met by ladies such as Dorothea von Gnielinski who in 1997 became was the first female concierge in Brisbane. These days she’s the chief concierge at the Brisbane Marriott and maintains “there’s nothing that a woman can’t do and that includes lifting heavy luggage.” From advising guests about restaurants, matching their tastes and making last minute bookings for a top table; securing front row seats to a concert; ensuring an international (“no names please”) pop star and his/her group had the best deep sea fishing experience with food and a well-stocked bar to match; and being on first name basis with stars such as Jerry Lewis, Whitney Houston and the Black Eyed Peas; to confirming or making travel, tour and transfer arrangements. As long as it’s legal it can be done. Nothing is impossible also for New Zealand-born Dale Ramsbotham, concierge of the Sheraton Mirage on the Gold Coast. He’s happy setting up beachside proposals, making shopaholic’s dreams come true, discussing the pro and cons of certain pillows in a guest’s suite, arranging a limousine or airport

transfer, making a restaurant booking or recommending a tour. And not just any tour or restaurant, Dale always speaks from experience. Well except in the case of regular guests from New Caledonia who only spoke French and wanted to buy two Border Collies. “I found kennels in Maryborough, hired a car and sent them on their way,” recalls a happy Dale.“And you should of seen the big smiles when they returned to the Sheraton with photos of the puppies and a bottle of Dom Perignon.” The epitome of a concierge has to be second generation Elvis Soiza, who is proud to say that with his Christian name “people don’t forget you, although as a kid I hated it”. Formerly the head concierge for Sofitel Brisbane, these days he is the regional chief concierge for First Contact, a new concept in Brisbane that provides an all-inclusive, highly personalised concierge-style service in managed buildings such as the popular Riverside Centre in Eagle Street. “A concierge provides the human face to a property whether it be a hotel or an office building,” explains Elvis who has been in hospitality for over 37 years. “He or she is the friend when you are away from home or at your workplace and can be called upon to advise, soothe, inform, entertain and organise the impossible or delay the inevitable - at any time.’ With an enviable ‘black’ book of connections, ‘Mr Fix it’ can organise just about anything from flowers and exclusive back stage passes to sold out concerts or arranging a real pink elephant as a birthday surprise for the wife of an Arab Sheik. Elvis was working in London and the sheik, a regular guest of the hotel, explained that his wife’s favourite animal was an elephant and colour was pink. Elvis’ mega A-list includes the Queen, John Howard, Michael Jackson, John Travolta, Madonna, Big Arnie, Pavarotti, most recently John Cleese and one of his favourites is Bette Midler who asked him for local gossip and details about Brisbane so she could localise her show. The last thing Elvis expected to be doing that day was writing with Ms Middler, but if that’s what a guest requires then that’s what he does.
