When I received an invitation to be amongst the first to step foot inside Australia's first Jamie's Ministry of Food and take part in the inaugural cooking class, I couldn't have been happier. No one could ever doubt Jamie Oliver's love of food - or his passion for its creation. HIs ''back to basics' philosophy is full of enthusiasm, tempered by his righteous indignation for the 'fast food' mentality that many people have these days. I was a good student as my succulent orange marinated chicken kebabs and sticky, spicy tomato relish proved.

L

uckily, I'm a 'glass half full' kind of woman - so I tend to bend, dip, roll and sway with the world as it seems to carelessly spin out of control. I'm just waiting patiently for nature, the politicians, financial trends and world events to calm down and steer back onto a more rational course. Happily, life does go on - no matter what happens around us. And, I do have the added advantage of living in beautiful S. E. Queensland, This season as the weather starts to finally turn a little chilly, we have the opportunity to snuggle up under the covers with a great glass of red wine, a fantastic book and a little chocolate indulgence - and simply enjoy the simple pleasures of life. ountry roads we Troy Cassar-Daley’s love of country music is only surpassed as Helen Flanagan found out, by his utmost devotion for wife Laurel Edwards.

ans will tell you Troy Cassar-Daley is a fantastic guy, great entertainer, brilliant guitarist and the most amazing vocalist. With 21 Golden Guitars, four ARIAs plus other industry awards and accolades galore, there’s no denying he’s at the top of the Australian country music scene and has a reputation amongst his Australian music industry peers as being one of the most respected singer/songwriters in country music. But where did it all begin? At school in Grafton, shy Troy made friends easily and in an effort to keep up with his older cousins, the 10-year old took guitar lessons with Leonie Hayes who instilled in him confidence to sing in front of his class and at local concerts. He’d thought being a cook on a station in the bush had appeal but with encouragement from his family and his year eight English teacher Troy began to appreciate the written word, a trait that translated into poetry and song writing. “My career was always going to be a slow burn but meeting my girl Laurel helped motivate me to get more serious with music,” recalls Troy who was playing in a covers band when Laurel organized the big-wigs from Sony music to check him out. “A month later after the Tamworth Country Music Festival, I had an offer from boss Denis Handlin who gave me the big break. He remains a great friend today.” Beyond the Dancing was his first album, first Aria award and first Golden Guitar. “The big thrill for me was having it presented by Slim Dusty.” Laurel Edwards grew up in Balmoral and from a tender age was singing and performing plus listening to her two older sister’s recordings of the Eagles, Pink Floyd, Barbara Streisand, Neil Young and Fleetwood Mac. That was until aged 8 when she received a transistor radio, ‘glued’ it to her ear and with hairbrush in hand bopped to Olivia Newton John, Anne Murray and Rita Coolidge and other tops of the pops on 4IP and 4BK. Her first public appearance at the Warana Festival was frightening but she was hooked Her first television appearance was on Channel 7’s Telethon, Jamie Dunn became her mentor after hearing her sing on Wombat and the teenager was given her first big break as host of the Channel 9 kids show ‘OK – Only for Kids’ on Saturday mornings. When OK finished, other gigs popped up and in ’92 she auditioned for the 4KQ Breaky Show and for the last 14 years she has been a presenter on The Great South East on Channel 7. The first night Troy and Laurel met she was devastated he’d neglected to take her contact details. After tracking him down and on their first date, an album launch, they clicked despite Laurel constantly pushing his hand off her butt. Troy takes up the story: “When the beautiful brunette and I first met at the Gympie Muster in 1993 we struck a chord that is still ringing today. “We started doing a few shows together with my Blue Healer band and loved every minute of it. “The proposal believe it or not was back stage at the Gympie Muster. Talk about continuity! Laurel was ironing my shirt and I fell to my knee in the dust and said ‘will you marry me?’ She said ‘yes’, then I went to ask my future father-in-law for permission.”

They are great young people, very caring and respectful.” Troy is understandably besotted with every facet of country music. “I love every part of my job from writing, recording and playing live as it’s always full of surprises to meeting so many great people along the way,” Troy, who hopes to visit Ireland one day, also Italy and his father’s birth place in Malta, remarks. “Regarding awards, the Golden Guitars are a part of our foundation so they are very cherished although all awards are appreciated that's for sure. And the recent four shows with Kenny Rogers, the last one at the Opera House were just amazing. Such a responsive crowd, incredible sound and something I’ll never forget.” For Laurel and Troy there are many high points to living in Brisbane however there was a testy time earlier this year. “Any spare weekends we escape town and head to the farm at Fernvale, where we often have family and friends come and stay, eat, drink and jam on the verandah until wee hours,” says Laurel who admits that living in cosmopolitan Bulimba ticks all the right boxes when it comes to the best Peking Duck pancakes in the world at Billy Wongs in Cannon Hill, Thai at Pochanna in Bulimba and for a rib eye on the bone it’s Oxford 152. “During the floods we couldn’t get to the farm as the roads were cut off so we gave a hand to people in our local area. But when we finally got through to the farm it was overwhelming. Everything was covered in mud. The river had burst its banks and was into the second level. By day three I became quite emotional after sifting through memorabilia such as photos. Troy put the call out and friends came from everywhere and pitched in. Two weeks after we had a little fundraiser at the local butchers in Lowood for the Wickman family whose 4 year old, Jesse was washed away. We sang a few songs and it was very difficult but it really hit home that we had lost nothing compared to most.” Whilst plans were being hatched for the family to head to Nashville for a two-month stint with Troy song writing and working with some of America’s best country music stars, Laurel continuing her 4KQ radio gig and Clay and Jem attending middle school, Troy toured his beloved NSW North Coast of NSW. “I wanted to pay homage to my beloved home area in song as so many of my tunes over the years have drawn inspiration from this area with stories of small towns, old fisherman, love and hardship. It’s not just a show but a journey for me and the listener and the stories will be the glue holding it all together. “The tour will be followed with two rare shows at Nambour and Kedron Wavell with Laurel and me doing it all again playing some great old songs as well as our own originals with a wonderful band. “To share a common love of music is rare in a marriage and to also do it professionally means it’s a perfect match for me,” enthuses Troy who envisages growing old with Laurel with lots of laughter, travel, fishing, grandkids and a big garden.

roy Cassar-Daley “Troy proposed at the Muster in practically the same spot where we met,” recalls Laurel who has never ironed Troy’s shirts since. “It wasn’t very romantic as we were standing in the dust in a makeshift tarp tent but it meant a lot to us. “The wedding day was humble, the reception beautiful and the highlight of the speeches was my father-in-law Ray in front of my Aboriginal family from Grafton and Laurel’s family and friends,” says Troy with a grin. “He said there was going to be an issue of colour. Everyone sighed, the room was still as he said ‘so when it comes to the state of origin there will be maroon AND blue’. Everyone laughed then cried as he went on to say he’d played a lot of football with many blokes in different coloured jerseys but it was the character and heart on the inside of the jersey that counts. What a great speech.” “The 1996 wedding was a very carefree wonderful day,” describes Laurel. “My sister made my gown, mum the cake and family and friends helped set up of the reception. We married at the very pretty St. Mary’s at Kangaroo Point and the honeymoon went from a luxurious week at Hayman Island then a great week camping in the back of Troy’s EH Holden station wagon.” Family help continued when children came along and Laurel was on the breakfast radio and Troy was on tour as his career was taking off. “Our kids are our world that's for sure,” proud dad Troy says referring to Clay 13 and Jem 10. “Being a parent is not a job, it's

Despite a near-death experience Helen Flanagan says Karen Phillips maintains an amazing ability to empower and inspire others.

ith an engaging personality, looks to match and a life-long drive to make a difference Karen Phillip’s career has been based on connecting people through the vernacular, events and training. At 14 the proud Queenslander was one of the youngest delegates invited by the Federal Government to attend the nation’s first National Youth Conference and at 15 her outstanding services to youth were recognised with the Australian Young Citizen of the Year Award. – a venerable start to a career in communications and event management in SE Queensland, London and Asia. “As a cadet journalist my editor kept saying that I needed to work with people rather than just write about them,” recalls Karen who at 27 and with total disregard for the knockers, launched her own company promoting tourism and hospitality clients followed by luxury brands such as Bang & Olufsen, Aston Martin and Sunseeker Motor Yachts. “I’ve met and worked with so many amazing people from all walks of life but it’s the ones who make the emotional connection that leave indelible memories such as Jane Fonda, a standout with over 1,200 people, the largest in Australia, plus dancing on the stage with Olivia Newton-John last year, one of three events we did.” Making mistakes is all part of life’s journey however when Karen fell down a ravine in Bali nearly 12 months ago, broke her back, suffered facial and internal injuries and was lucky to survive, picking up the pieces was a different story. “The fall shook me to my core not just because I was injured but because I realised simultaneously how fragile life is yet at the

same time it ignited my determination to make a difference and fulfill a lifetime goal of writing a special book for Australian women. The fall has been a major setback because I am still getting over the injuries and I’m someone who’s always in so much hurry to get things accomplished, yet I am forced to slow down and deal with getting better. It’s a hard learning curve but it has given me more understanding of other people's difficulties and disabilities.” The 50 woman featured in Woman’s Words of Wisdom, Power & Passion (KP Media $34.95) are truly inspirational on many levels from openness to honesty and motivation. “Even stars have bad hair days, have to dust themselves off, refocus and get on with it,” says Karen who based the book on Queenslander, Christine Fortelny, a four-time cancer sufferer and it was launched by the Governor-General of Australia, Ms Quentin Bryce. “I love Carla Zampatti's line in the book that if she can do it anyone can. That truly inspired me as everyone sees Carla as such a success story and yet when you read about her beginnings you realise she’s had to overcome incredible challenges to achieve success. The underlying goal of creating this book has been to create a connection for women and I am thrilled with the interest and difference it is making for women. One reader actually said she had bought a copy for her husband to read so he could 'finally' understand women.” Karen and Tony return to Bali later in the year to have the holiday they missed out on. In the meantime her near-death experience has inspired a presentation called One Defining Moment with corporate groups pondering that every day may not be good, but there's something good in every day.

e's dined with Rock Hudson, walked down endless red carpets with the stars and become a household name in Australian entertainment for not only his enviable knowledge of everything showbiz, but also his personable flair. Rachel Syers chats with

H

John-Michael Howson, OAM, about the latest musical he's written and is bringing to the Gold Coast soon, which is set to reignite the city's own glamorous history… the famous Surfers Paradise pyjama parties.

How did you come to write your new Australian musical Pyjamas in Paradise? I was in New York and went to see Grease yet again - mainly because Brooke Shields was in it and I wanted to see what she was like on stage – and as I was walking down Broadway I began to think how there had never been an Australian teenage musical like Grease, Where the Boys Are, Happy Days … that style of show that was set in the '50s. It was no good doing a high school musical because it had been done. Then I began to think to back in the '50s and '60s for me and it was when Surfers Paradise was really just starting up and there was no such thing as the Gold Coast really. The highrise thing hadn't even started then. I have a friend called Peter Pinne from Melbourne who had just retired from a production in South America and he had written quite a few small scale musicals and he was in Miami and I was in LA so I asked him if he'd like to work on the show with me. We wrote it in 2005 and it sat in a draw for a while but now it's all happening. In this industry you just need to be patient. Did you draw inspiration from your own trips to Surfers Paradise in that era? I came up at that time when I was about 18 and there were just hotels along the coast and we thought it was terribly glamorous – they had just built the Broadbeach Hotel, you had to have a swimsuit made by Paula Stafford… we thought it was all extremely exotic. It was a much more innocent age too – we never saw any drugs, it was very good natured and there was no violence. It was a pretty sober age where you could have a good time without writing yourself off and being drugged out of your head. This is a horrible age all based on liquor and getting as plastered as you can and belting up anyone you don't like the look of which was unheard of. I think it's past redemption and part of the culture now so this is a musical that memorialises an Australia that really doesn't exist anymore. How did you create the music for the show? So we developed Pyjamas in Paradise from there using iconic hit songs from the '50s and '60s era and original songs as well. Peter and myself wrote the original lyrics and we also had Ashley Irwin involved. He's an Australian arranger composer living in LA and has just done arranging and conducting for the new Clint Eastwood movie Hereafter. He's won several Emmy awards for his arrangements and he's a wonderful talent so it is in every way an all Australian musical. Do you have any plans to slow down and retire any time soon? I have no intention of ever retiring - I'm not even remotely interested in

the word. The other day Broadway director , playwright and screenwriter Arthur Laurents who wrote Westside Story the movie, The Way We Were and many stage and movie hits, died at age 93 and he was still working on projects when he died. And Mr Broadway, George Abbott, was 102 and still directing a play he'd written when he was 99 - I should be so lucky! Where are you based these days? When I did The Mike Walsh Show for many years on TV and other shows I used to travel around the world endlessly and it was in about 1989 I decided I was sick of all the flights and I went to live in LA and ended up being there for 17 years. I went everywhere - covered 23 Oscars, umpteen Emmy Awards, Tony Awards, and lived in planes. After all that travel two things came out of that. Firstly, I'm a wonderful packer and secondly, I like staying at home now. Someone asked me if I was going to cover the latest royal wedding and I laughed and told them that I'd been there, done that. I moved back to Australia about four years ago and basically home for me is now a wonderful house in Melbourne surrounded by parks and gardens where I live with my four little chihuahuas. They take me for a walk every day! I've never lived in the 'burbs before but I love this place and I have lots of friends here. Will you be flying in to the Gold Coast for the Arts Centre's opening night of your show? Oh yes - I'll be up there in August for rehearsals first and then for opening night I'll be sitting in the back row like I normally do for all my first shows. I always sit in the back row where you can see the audience and watch if you really start getting that reaction and you can think to yourself, 'Wow, they like it!'. Plus if it were a dud everyone would be looking at me if I was down the front so I figure up the back I can make a quick escape … luckily that hasn't been necessary yet. I love opening night because one of the most exciting things with this business is you write the script, which is just words on paper, then there's the casting, then watching it come to life in the rehearsal room and it's hard work. So when you see something coming together on the stage on opening night and you get the audience reaction and they actually find it funny, it's wonderful.

Bubbling over with accolades Winning the Best French Wine Book, being saluted by France’s finest champagne houses and so much more are all in a day’s work for Bernadette O’Shea.

C

hampagne consultant and former florist Bernadette O’Shea feels blessed. Her career began at 17 with a glass of Moét et Chandon and every month thereafter she splurged on a bottle from a different champagne house, teaching herself the differences, making copious notes along the way. Today the “Queen of Bubbles” as she’s been referred to by Frédéric Heidsieck of the House of Roederer, has a full-time job talking, teaching, giving lectures, writing, hosting dinner and cocktail parties, advising chefs on matching champagne and of course sipping the euphoric drop. “The universal toast speaks every language. It celebrates joy, happiness, friendship – all the great moments in life. The moment you even watch it being opened and poured lifts your heart. If you drink champagne, all you want to do is sit and dream or go make love.” In 1984 she won the coveted Vin du Champagne award and spent a month in France’s Champagne region. “Champagne changed my life. I decided to be a missionary for champagne, to convert the world to it. And did you know champagne is good for motion sickness, respiratory ailments and the brain, plus you don’t get hangovers with real champagne.” In 1992 Bernadette received the equivalent of a knighthood, the Chevalier de l’ordre du Merite Agricole. She considers it her greatest honour. “And to think a French ship sailed into Brisbane so I could be knighted on French soil.” It’s a remarkable journey given Bernadette grew up in a large Catholic family of non-drinkers, yet has retained her unwavering faith and along the way developed an extraordinary sensory ability which transcends taste and smell. Throughout her career, Bernadette has collected valuable and

interesting information, created many special occasions, travelled annually to her spiritual home of Champagne to visit champenois friends and conducted an incredible amount of research which, after five years evolved into the very luxe tome Champagne and Chandeliers - Grand Dining Celebrations. ($120 www.champagneconsultant.com). It was recently named Best French Wine Book for 2010 in the Gourmand World Cookbook Awards. “It’s an amazing accolade. To be recognized as “best in the world” in my category is a great honour, and this section has never been won by an Australian before. So it is a first and I am very proud to see Australia up there on the world stage. “The organisers search the world looking for worthy books, mine was brought to their attention and I was invited to enter. There are many food and wine categories – with more food than wine sections plus the awards are unique - benefiting from a worldwide competition with 154 countries participating. For the 2010 awards 53 countries were represented with wine and drinks books. “Champagne and Chandeliers has been translated into French and hopefully will now be sought after by a French publishing company. If this happens I’m hoping for a trip to France for the launch.” Bernadette, who received a certificate stating “Best in the World” French Wine Book Gourmand World Awards and of course all the glory that goes with it, lives in Brisbane’s Wilston, and ‘converses’ in French with cattle dog Meunier named after the three grapes used to make champagne. She has been privileged to visit the champagne houses often drinking astounding vintages. “An 1892 moved me to tears. I didn’t think anything could be so perfect. “My favourite year is 1964 and I’ve got a couple of bottles. I call them my babies. They call out when I go to the cellar: Pick me! Release me! All the beautiful bubbles waiting for the cork to pop,” Bernadette says with a big sigh.

AN AFTERNOON WITH THE MASTER OF MOLECULAR GASTRONOMY.... It’s not ever yday that you are given the oppor tunity to literally sit at the feet of one of the world’s most famous chefs, as Kaylene Murray discovered.

T

hree Michelin star chef Heston Blumenthal, famed for his extraordinarily innovative cooking style, as well as his world-famous restaurant The Fat Duck in Bray, Berkshire, was on the Gold Coast recently to share his passion for creativity at a once-in-a-lifetime event at Sanctuary Cove. Like a modern day magician set loose in a kitchen, Heston Blumenthal has made quite a name for himself by blowing things up - as well as reducing, foaming, freezing, deconstructing and reconstructing what most of us see as every day food. His creativity offers a new realm of delicious cuisine where boundaries simply do not exist. The culinary genius, notorious for his ‘hard to imagine’ dishes such as ‘The Sound of the Sea’ featuring edible sand, bacon and egg ice-cream and snail porridge,was guest of honour at a Conversation with Heston Blumenthal - an exclusive weekend event that offered participants an insight into his unique philosophies and intriguing way of looking at food and cooking. Heston was quite at home on the Gold Coast (possibly because it was a wet weekend), casually dressed and sitting on a stool in the luxury, waterfront home at Sanctuary Cove, where guests were invited to sit in the living room, sip a glass of wine and listen as he relayed his tales of wonderment and invention. As he explained “Food is such a major part of our lives and is integral to our memories and experiences at all ages, “it's not just about cooking, it's about using all your senses to create that perfect dining experience.” “Eating is the only thing we do that involves all our senses.” Heston said It would be hard to find a true foodie who hasn’t been mesmerised by his creativity and boundless energy (not to mention his caste iron stomach) - as he has explored the world far and wide for ingredients that do justice to his themed dinners viewed by millions on his TV show Heston’s Feasts. I did say to Heston that I would fly half way round the world for a chance to be at one of those dinners. Hopefully he took note! Guests were extremely surprised to find out that Heston didn’t really have any interest in cooking as a child. Unlike the young enigmas involved with Junior Masterchef, Heston didn’t follow his mother around the kitchen hoping to whip up a soufflé or bake the family roast. Heston says it came on a bit later - and it was the science side of it that captured his attention. Like all little boys he wanted to see how and why things happened. Never mind the

consequences! “Don’t tell me that I can’t do something - I need to see why I can’t - what happens.” he said Thus over time, his passion for alchemy and cooking experiments was created and is still being nurtured in his ‘culinary playground’- the kitchen. Heston happily answered questions at the end of his 'conversation', with the guests and provided the commentary for the film of some of his finer multi-sensory creations. The only problem was that although we sniffed the aromas sprayed in the room and tasted a few flavours meant to trick our senses - we didn't get to try any of Heston's culinary treats. Although plates of delicious treats (not Heston's) were dotted around the room, not one person dared break the spell by indulging. Heston had the floor and in his quiet, calm and personal way - he kept everyone fascinated to the last minute. If he wasn’t whisked away by his manager to get ready for that night’s dinner, I think he would quite happily have kept talking about food well into the night. Viva Italiano... IOESCO at Sanctuary Cove...

P

erfectly positioned on a picturesque, tree-lined avenue just off the main street of Sanctuary Cove's Marine Village, Ioesco Café Cucina Bar offers diners a welcome italian inspired culinary haven in which to enjoy a quiet cup of quality coffee, an exotic cocktail with friends, a laidback luncheon or romantic dinner. The glass walled restaurant features a showcase marble bar where guests can sip a glass of Mumm champagne, a boutique beer or Italian aperitif before entering the main dining area, which seats about 80 people in an extended room offering lovely daytime and nighttime ambience. Owner/chef Max Alfieri is never one to sit quietly in the back corner...(he is definitely not 'Baby)'... not when he can be extolling the virtues of his thriving Italian restaurant. that exudes tempting aromas to lure passers-by. Co-owner and wife, Amanda Alfieri is the prettier of the two - and as maitre d guides the floor staff with expertise and welcomes diners into the restaurant. She is full of quiet confidence and I would think - the patience of a saint. As Amanda explains they are offering genuine Italian cuisine made with fresh produce and Italian passion - all served with sophistication and warmth. On occasions they hold special musical evenings full of Italian opera perfomed by Max's brother and Italian Opera star, Rocco when he is visiting from Italy.

Max is always striving to ensure that his diners are wined and dined to the best of his ability - meaning that all his dishes are prepared with love and care. So, as we dined on a cool autumn night, we tried several items from the extensive menu; entrees of fresh whiting fillets coated in parmesan and parsley then panfried; the carrot and pear soup with crumbled blue cheese and toasted almonds was exceptional; and the anatra di bosco was a tantalising dish of roasted duck breast served with a Peking flavour sherry and mushroom cream sauce. Our choices for mains included the traditional scaloppine al limone, which offered tender veal medallions with a sauce of white wine, lemon, garlic and e. v. olive oil; as well as Max's new autumn/winter menu addition, succulent slow cooked rabbit that had been soaked in milk for 24 hours before cooking down in onions and secrets ingredients, till it literally fell off the bones, and was then folded through handmade pappardelle pasta. Yum. We finished with a new dessert pizza topped with a brown sugar and cinnamon crumble, chocolate and strawberries which was very special - not too sweet - just right! All the while, Max worked feverously in the kitchen, ensuring that all his diners' other dishes would be just as succulent. This restaurant is a must visit, but be sure to book as it is a favourite with locals. Fish Fillet with Orange Ginger Hollandaise with chargrilled orange, Serves 4 Ingredients: 2 egg yolks 2 tbs water 220 g butter, melted 1 tbs lemon juice Juice of 1/2 orange 1/4 tsp of fresh ginger, grated 2 tbs grated orange rind 3 tbs olive oil 4 fresh white fillets (approx 200g each) 2 bunches asparagus 400 gm baby potatoes 1 tbs butter 1 clove of garlic, crushed 1 tbs finely chopped parsley 1 tbs capers

Method: 1. Orange Hollandaise: Put the egg yolks and water into a glass bowl set over a pan of simmering water, making sure the base of the bowl is not touching the water. Whisk until the mixture has doubled in size and is thick and creamy. Remove the bowl from the heat and gradually whisk in the melted butter to thicken more. Whisk in the lemon juice, orange juice and ginger. Keep warm over the pan of warm water while the fish is cooking. 2. Cut asparagus in half lengthwise and boil, steam or microwave asparagus until tender; drain. 3. Garlic and parley potatoes: Place potatoes with a pinch of salt in a saucepan of cold water. Bring to the boil. Cook until

tender, then drain. Cool and cut in half. Heat one tablespoon of butter in a frying pan, add potatoes. Cook for 6-8 mins or until crisp and golden. Add crushed garlic and parsley, salt and pepper to taste and coat potatoes. 4. Chargrilled Orange: Thickly slice orange and chargrill on the griddle until golden brown on both sides. 5. Heat the olive oil in a frying pan and cook the fish fillets for 3-4 minutes on each side, until golden and cooked. 6. Serve the fish fillets on asparagus with the garlic and parsley tossed potatoes and orange ginger hollandaise with capers. Place a chargrilled orange slice on the fish and sprinkle extra orange rind over the fish.

Spicy Orange and Caramel Tart

Serves: 6 Ingredients: 2 sheets of ready made shortcrust pastry 150 gm of dark chocolate, melted 440 gm can condensed milk 2 tablespoons golden syrup 30 grams butter 2 1/2 tbs orange rind, finely grated 1 orange, sliced 1-2mm thick 3/4 cup castor sugar 1 cinnamon stick 6 cardamom pods 1/2 tsp ground cardamom 1/4 cup fresh orange juice 1/2 tbs orange rind, finely grated Method: 1. Preheat oven to 180째C. Line a rectangular 10cm x 33cm loose-bottomed

tart pan with baking paper, line with ready made shortcrust pastry. Pick the base of the pastry and bake in the oven for 20 minutes or until cooked, then cool. 2. Melt the chocolate in a heatproof microwave dish. Microwave uncovered, stirring every 30 seconds or until smooth. Coat the bottom of the cooked pastry shell with the melted chocolate. 3. Caramel: Place the condensed milk, golden syrup and butter into a saucepan, stir over low heat until caramel has thickened, bring slowly to boil, remove from heat and add 2 tablespoons orange rind and stir. Cool then spread the chocolate base with the caramel and return to the oven for a further 10 minutes. 4. Candied Orange: Blanch orange slices in boiling water for 2 minutes, then drain. Combine castor sugar with 1/2 cup water

in a pan with cinnamon and cardamom pods tied in muslin. Bring to a simmer over medium heat, stirring to dissolve sugar, then add Aussie orange slices. Cook for 1015 minutes until white pith looks translucent. Drain then dry on a wire rack for 30 minutes. Retain the syrup 5. Spiced Orange Sauce: Using the retained syrup, add the ground cardamom, add 1/4 cup of orange juice and 1/4 cup of castor sugar over medium heat, stirring to dissolve the sugar. Cook, stirring for 2-3 minutes, or until sugar has dissolved. Boil without stirring until slightly thick and golden. Add 1/2 tablespoon orange rind. 6. Place the candied orange slices on the caramel and pour over the spiced orange sauce, then serve.

Owner/chef Tony Percuoco embarked on a total turnaround of the great Australian ''sea change' last year, when he moved from the bright blue ocean views of Marina Mirage on the Gold Coast to the inner-city hustle and bustle of cosmopolitan Brisbane to open his own restaurant and bar.

hen queried about his life-changing decision to leave Ristorante Fellini on the Gold Coast, where he has spent nearly 20 years of his life as co-owner/co-chef, Tony explained that he was ready for the next big step in his journey through life. With the mentoring and encouragement of older brother and renowned Sydney chef/restaurateur, Armando Percuoco, Tony and his business partner and fiance, Gordana Slavic have created a dynamic venue that more than delivers on its promise to bring true Italian food to Brisbane. "I'm not reinventing the wheel" Tony Percuoco explained to me with a smile... " I'm presenting fresh, quality produce cooked with passion and prepared with true traditional Italian style." From your initial entrance through the huge timber doors of the restaurant that once housed Belle Epoque in the Emporium Centre at Fortitude Valley, diners are taken back in time to a traditional Italian brasserie, boasting an atmosphere oozing Italian style and a 'familia' ambience, The huge dining area offers private and public dining spaces separated by large dark timber columns and subtle lighting; the floors feature black and white mosaic tiles, tables are swathed in crisp white tablecloths and the extensive bar area is dominated by a magnificent hand beaten pewter bar with backlighted shelves of cosmopolitan delights. Tony Percuoco is a hands-on restaurateur, and you will often see him exiting the bustling kitchen to visit diners at their tables to ensure that everything is to their liking. Of course, there really isn't any real need - other than Tony's passion and need to know that diners are happy and satiated by their dining experience at Tartufo. The restaurant runs smoothly and efficiently at all times. Taking care of the diners and ensuring their every need is met are Gordana and maitre d 'with the most' Jeffrey Cheng, as well as their expert team of waitstaff. In the kitchen Tony is ably assisted by head chef Shane Vievers, and a team of food professionals - all eager to give diners a real taste of Italy The menu is diverse but we found the degustation menu offers diners the perfect way to taste and understand Tony's food philosophy. By leaving the choices in his hands, you can sit back, relax and enjoy his selection of smaller dishes - each more irresistible than the last. There is also the option to include perfectly matched wines with each course, which we find a wonderful idea. Our experience included Capesante alla griglia seared scallops on cauliflower puree, served on grilled beetroot with beetroot and parsley oil and micro herbs, presented with a Henske 2008 Louis Semillon. Then followed a ripe fig wrapped in pancetta, oven-baked and served with a silky smooth gorgonzola cream sauce, and matched with a Stonier Chardonnay. Pappardelle al sugo di coniglio is a handmade pappardelle served with a rabbit ragout finished with pecorino romano and freshly cracked black pepper. One of the restaurant's main course dishes, Porchetta contadina, Kingaroy belly pork filled with lardo colonnata style, sage, rosemary and garlic served with cavolo nero, hot mustard fruits and pan juices has diners venturing great distances to savour. And in deference to Manu Feildel and Pete Evans (My Kitchen Rules) - our compliments to the kitchen, as all the dishes were seasoned perfectly. Tartufo's wine lists are extensive featuring new and old world wines and Australian greats, and the attentive staff are always eager to assist with the choice of perfect wine to match your menu selections. The dessert list is tempting - vanilla bean panna cotta served with a mint and citrus salad and white chocolate shavings; tartina di fichi, hand-made

Yellow Papaya & Prawn Salad with dill and garlic aioli (Serves: 4) Ingredients: 1 medium yellow papaw (peeled, deseeded and cut into cubes) 2 cups mixed salad leaves 12 large king prawns (cooked, peeled & deveined) 4 tbsp good quality mayonnaise 1/2 lemon (juice & zest) 1/2 bunch dill chopped & extra sprigs for garnish minced garlic, salt & pepper to taste Method: Place washed salad leaves into a shallow bowl. urgen Schirmacher has been practicing as a professional interior designer for almost 23 years, and has completed projects at home and abroad. He is a member of the "Design Institute Australia". Son of internationally renowned architect Hans J. Schirmacher, Jurgen initially studied architecture before changing course and completing an Advanced Diploma in Interior Design in 1987. Whilst still a student, he designed and manufactured a stainless steel coffee set, which went on to win several awards. As there was a gap in the local market for innovative yet classically inspired lamps and furniture, he became involved in the design and manufacture of a range of up-market lamps, furniture and objects d' art whilst continuing with his interior design work. Jurgen's design philosophy includes a legacy of strict discipline, which is evident in all of his completed work. He has always believed in a hands-on approach and has renovated and restored several historical houses, often doing a lot of the physical work himself, from tiling and cabinetwork, to paint techniques, plumbing and even landscaping. He has also designed, documented and project-managed the construction of several houses over the years, although the mainstay of his work remains interior design. This hands-on approach has enabled him to work closely with most of the trades and to “speak” their language as it were. Purchasing or building a house is one of the biggest investments that people will make in their lifetime. Renovating and restoring a property is equally daunting, but at the end of the day adds value to the house if it is well designed and professionally implemented. It makes sense therefore to plan each and every detail meticulously,

setting out a time frame for budget and implementation. Jurgen always advises his clients to develop a “Master Plan” of how they would like to enjoy their house and the lifestyle it offers in the years to come. He then works “backwards” in the planning, so that each step of additions, renovations & changes moves towards the end goal. His motto has always been to do things right the first time so as to avoid changes as these can be very costly. All the houses that he has worked on have seen a dramatic increase in value once completed. One project a historic farmhouse that Jurgen tastefully renovated and restored over a period of 7 years - increased in value by 780 %. No job is too big or small. All projects, and clients receive the same depth of commitment, passion, responsibility and individuality. Each valued client has different needs and enjoys a different lifestyle, and it is for this reason that Jurgen blends into his interiors a mix of both classical and contemporary elements that create a timeless appeal. A successful project is a reflection of the people who live and work in it. Lifestyles, moods and needs must be considered, and it is the task of an interior designer to interpret these needs and transform them into a working reality. Jurgen and his father have been working independently for the past two decades but have recently formed the A2Architecture+Design collaboration. In 1978 I was in the process of producing a brochure for the museum, when we cruised along in the Detroit silently up the road to our photo location and back, the range was obviously limited, which we can only assume is the reason it has taken a 100 years (the first electric car was built in around 1890’s or so) to now become commercially viable, or is there some other devious reason petrol companies and governments with all their revenue creating taxes have slowed the progress? In the meantime there is a lot of activity at the big end of town to get new models out, including Land Rover, Jaguar, Toyota and many more. Jaguar have just announced theirs with a very limited 50klm all electric range and a price tag of over a million dollars,. Another company that has done all the work and sold more than 1600 cars worldwide, is possibly the only real totally electric alternative, the US company Tesla. Writer: Tom Murray

Jaguar gears up production for the C-X75 electric supercar Jaguar has announced it will launch the C-X75 concept car as an exclusive hybrid supercar. "People expect Jaguar to be innovators that is when Jaguar is at its best," said Adrian Hallmark, the Jaguar brand director. "The C-X75 received an incredible reception as a concept car. We've been building on that momentum and there is a clear business case for this exclusive halo model. No other vehicle will better signify Jaguar's renewed confidence and excellence in technological innovation than this." The C-X75 will be developed in association with Williams F1, which will provide its engineering expertise in areas including aerodynamics, carbon composite manufacture and hybrid technologies. It will come with a relatively small petrol engine, with two powerful electric motors with 4WD, and is expected to do 0-100 kmph in less than three seconds, with an all-electric range in excess of 50 km. It will mix internal combustion with electric motors to achieve supercar performance, with less than 99g/km CO2 emissions. The C-X75 will be true-to-concept, lightweight, all carbon-fibre chassis. Only 250 examples will be built, each costing between A$1,000,0000 to $1,300,000 in Britain depending on market and local taxes.

Tesla electric car proves the futu

0 - 97k in 3.7 s With exhilarating performance and a range of 400 kilometres at a cost of around $9 in power, Tom Murray found this electric car to be a real option.

he Tesla, bearing a little resemblance to the Lotus Elise is understandable as it is built on a lengthened and widened chassis, and utilises the windscreen and steering column dash and a couple of knobs, but that’s it - the rest is all Tesla with every panel newly designed and created in carbon fibre. The power source is essentially 1600 computer batteries with an expected 8-9 years life span, so running costs are kept to a minimum. A quick trip around Brisbane’s Portside area certainly received some second looks, as we silently whisked by. Pedestrians can be a hazard so a heightened driver awareness is required as you silently approach, apart from that it’s all go. So the drill is, after sliding in to the snug cabin, which is comfortable once in with plenty of leg room available. The cabin is essentially no different to any other car apart from not having a gear stick... just 4 push buttons on a centre consul, a big D button for is for GO... just press this and accelerate away. Full neck snapping acceleration requires an extra selection on the LCD screen, which also gives you all the info required on power

Braking is another interesting feature, as you lift off the accelerator the Regenerative Braking Energy gives the batteries a charge, the electric motor inertia essentially stops the car on it’s own, with minium brake pedal needed. More than 96 per cent of the 30,000 hectares of wooded hills, rocky headlands and shingle beaches are managed by Queensland Parks and Wildlife. Stretching over nine kilometres, Whitehaven’s 98 per cent pure white silica sand or minute power-size grains of quartz, is almost blinding in brightness. Swimming in the brilliant blue water, it’s without a doubt, the jewel of the Whitsundays. After snorkelling in search of colourful coral, tropical fish and other marine life, an excellent barbecue lunch and glass of wine was a refreshing reward for having such awesome fun with more of the same promised in the afternoon. Ross, the skipper was also hoping that Mother Nature would heed his pleas for wind so the 35 on board could experience sailing up to 30 knots on one of the world’s fastest sailing catamarans. ndré Rieu has fully recovered from a viral infection of the vestibular nerve which took months of rest and rehabilitation at his home in Maastricht, The Netherlands before being given the all clear to perform again. Exercises he received from an Australian fan who had suffered a similar infection were a key component to his recovery and are now part of his daily ritual. "I received so many letters from doctors, physicians and fans with suggestions on how to get better. I read them all but it wasn't until I read the letter from Bill Henshall in Perth and implemented his suggestions that I noticed it was really getting better every day. Without his help I would probably still be desperate for the right treatment," a thankful André said adding the Celebration of Music tour promises to be an outstanding and unforgettable performance. "I am so excited to be back on stage, doing what I love most, playing beautiful music, together with my orchestra for all my fans. The audience can expect a night they will never forget, full of beautiful waltzes, the Platin Tenors, our sopranos, Mirusia from Australia, Carmen from Brazil, Kimmy from South Africa
