Smith said. “AEIOU Foundation launched its program in Carrara late last year, ahead of plans to construct a purpose built centre on the Gold Coast in 2012. This event will helped raise capital funding for that project.” “The difficult thing here is that the program takes two full years to complete, but the window for this kind of intensive therapy is only available to children aged two and a half to five years of age. We need to construct our new centre to make sure no family misses out. To do that, community awareness and support is vital,” Mr Smith said. Children with autism achieve incredible milestones, the kind that many of us take for granted, which makes them even more important to celebrate. AEIOU Foundation is Queensland-based and one of the country’s largest providers of full time early intervention for children diagnosed with autism aged two and a half to five years. D …it is what it is, without the fuss, foams and frozen powders. It is the honest, delicious food of a beautiful land and its people
ominique Rizzo’s effervescence and joie de vivre are infectious - traits obviously inherited from her parents, especially father Vincenzo, who left his family including a sister and three brothers in Sicily to explore Australia and escape the army. He settled in Brisbane and like many migrants gravitated to Cloudland where he met his Aussie wife Robyn. “Before Rosalie, we moved around a lot as mum and dad renovated houses,” reminisces Dominique who has two brothers, Adam and Christian and went to All Hallows in the Valley, where she loved languages, history and excelled at art theatre and drama.“I also did home economics and my mother says I brought home many a delicacy although I only recall a butter cake and a casserole. I also remember making a macramé owl on a stick in needlework. Thank goodness we’ve progressed.” Although a late bloomer career-wise, Dominique’s memories of cooking are when she was about three on her first holiday to Sicily, running amok on Zio (uncle) Fifo’s farm: “It was wonderful. Chasing pigs, chickens and goats, picking vegetables, plump lemons, oranges and grapes hanging from vines like jewels, collecting freshly laid eggs, playing for hours with my cousins, collecting pipis and clams and diving for sea urchins at another uncle’s place - experiencing a life never seen before.” Every visit thereafter, the Sicilian culture and language were instilled more and more in Dominique’s psyche and at 18 she felt a sense of belonging - a feeling of home. “I am in love with the food, slower pace of life, shopping fresh from the markets, a siesta and late night dining. I love Sicily because it doesn’t try to be any thing else. It’s a land of the people with full flavoured and simple foods that combined with the hand of a local signora could reign against the most skilled French chefs.” An interest in cooking began by watching her Sicilian Nonna (grandmother) and Zias (aunts) cooking, an uncle grilling sausages he’d just made or rolling meatballs, and at home with her mother baking cakes and biscuits, licking the bowl, beaters, spoon and spatula, lending a hand from aged 7 by baking cakes for her sweet-toothed father plus creating gourmet sandwiches for school lunch. At 21 she began her apprenticeship at the highly regarded before-its-time Mondo Organics under Brenda Fawdon who later became her business partner. It was more than a restaurant with cooking classes, organic Saturday markets, catering and making value-added products with everything either certified organic, biodynamic or in conversion. She eventually left to establish a
each and every detail of his dishes using Italian and Sicilian words, which I had to repeat over and over. To this day I love cooking with him however, like most of us who try and replicate the wonderful tastes of our mothers, fathers and nonnas, I can never get the sauce just like his. “Family meals even today are full of talking, some tears, laughing and always with loads of food, eating too much eggplant parmigianna, having leftovers and birthdays and milestones celebrated. Often tables were pulled together and even if there was not much in the house, mum always seemed to pull together a great meal.” When the word was out that Network 10’s Ready Steady Cook was looking for more female chefs, Brisbane’s Alistair McLeod mentioned Dominique to the producers. She passed the audition in flying colours although burnt the crusted fish dish. “It was in front of camera but I proceeded to scratch it off while saying that here was a great example of what you can do if it happens at home. It worked, they loved it and me because I never shut up while I cook. “In seven years on the show I’ve cooked with celebs, mainly from Australia, news readers, sports people, comedians, musicians and more. Some of the more memorable moments have been chicken being cut-up on camera to reveal rawness, forgetting an ingredient when asked what I was cooking, more burnings, dropping plates, tripping over, laughing so much my nose was running then snorting, working with contestants who couldn’t cook and of course funny things and naughty words that never got to air.” Dominique is also often seen on The Circle and The 7pm Project, and heard on national radio but her latest claim to fame is My Taste of Sicily, (Lantern) in which she invites the reader and the cook to experience the Sicilian palette of colours and flavours that give seemingly endless choices on the palate:“The sheer joy of Sicilian cooking - soul food cooking – is that – it is what it is, without the fuss, foams and frozen powders. It is the honest, delicious food of a beautiful land and its people.” At home on the north side of Brisbane, birds wake her every morning as the sun filters into the bedroom, there are parks everywhere and a great coffee shop, her salvation, is at the end of a run. “It is a sanctuary for me and my cats Muffin and Coco. “I hang out with my mum, live next door to my brother, love having his chooks roaming in my yard and everyone to my place although with the yard being slightly Jurassic at the moment, I have put the barbecues on hold as we were losing my niece and nephew amongst the weeds. “In an ideal world I’d like to spend five months in Sicily/Italy

It was her father however who had the greatest influence. “He loved throwing together a beautiful simple pasta dish, explaining

Pottsville surfer is making waves... Brittani Nicholl and Layne Beachley
POTTSVILLE’S BRITTANI NICHOLL IS THE PICTURE OF PERFECT HEALTH. THE 20-YEAR-OLD SURFER KEEPS FIT BY CHASING WAVES ALONG THE AUSTRALIAN COASTLINE AND AIMS TO JOIN THE WORLD PRO SURFING CIRCUIT. But appearances can be deceptive. This bubbly blonde lives with the debilitating bowel disease, Crohn’s disease - and has battled the illness since she was diagnosed at the age of seven. She has since required surgery to manage the condition, including having a temporary ileostomy bag. But, rather than letting the condition hold her back, Brittani’s bouts of ill health have just made her even more determined to succeed with surfing, leading a normal life, and now, in raising awareness of the illness. Brittani is a poster child for those coming to terms with a diagnosis of Crohn's or colitis. She isn't letting it get in the way of her surfing lifestyle and life ambitions. Her planned schedule for the rest of this year includes; the National Titles in Port Macquarie; Arugam Bay, Sri Lanka; and then Pantin, Spain and San Miguel, Portugal. Brittani also recently appeared on a national television campaign highlighting the needs of the chronically ill. As the face of Crohn’s & Colitis Australia’s Can’t Wait campaign, Brittani is raising awareness of the incurable bowel diseases which cause diarrhoea, fatigue, weight loss, and often require surgery for the 61,000 Australians living with the conditions. Appearing alongside Brittani in the TV advertisement is former Big Brother contestant Pete Timbs, who also has Crohn’s disease. Brittani said she was happy to promote the Can’t Wait message and encourage people to talk about illnesses usually deemed “too embarrassing” to discuss. “I really wanted to do this to create awareness so people can actually help make a difference to our lives. I hope it really opens peoples’ eyes,” she said. The campaign follows on from a survey by national charity Crohn’s & Colitis Australia (CCA) that found 41 per cent of respondents requiring urgent access to a toilet were told by retailers to go elsewhere, even when the nearest public toilets

were a long distance, and often locked. A further 61 per cent had difficulty accessing facilities. The worst offenders were petrol stations, cafes and retail shopping strips. More than half of the people denied access were turned away after explaining their illness, and producing a card outlining their need for urgent access to a toilet. Brittani, who earlier this year returned from competing in France and Portugal, said she hoped the Can’t Wait campaign would generate “empathy” and help to destigmatise the illness by encouraging people to talk openly about the conditions. The surfing community has supported her cause, with former world champion surfer Layne Beachely inviting Brittani to take part in the Commonwealth Bank Beachley Classic in May, captaining a celebrity team comprising Home & Away’s David Jones-Roberts, musical theatre star Rob Mills and former Test cricketer Stuart MacGill. The number of Australians diagnosed with Crohn’s disease or colitis, collectively known as inflammatory bowel disease (IBD), is expected to rise by 23 per cent by 2020. The conditions cost the nation $2.7 billion every year, and are more prevalent than epilepsy, multiple sclerosis and rheumatoid arthritis. CCA chief executive Francesca Manglaviti said the toilet access survey results were disappointing, and showed retailers needed to be better educated about the needs of people living with Crohn’s and colitis. “We really need retailers to be more compassionate when it comes to people with illnesses such as Crohn’s and colitis to get urgent access to toilets,” Ms Manglaviti said. “Retailers and their employees need to understand that people living with this disease can’t wait. When they need to go, they need to go immediately.” CCA issues members with a Can’t Wait card that can be shown to retailers, identifying them as someone with Crohn’s or colitis, requesting the holder be given access to toilet facilities. CCA can provide retailers with window stickers showing that the Can’t Wait card is welcomed at their venue. oday Kelly Baker is an online entrepreneur and a Telstra Business Women's Award winner – something she never dreamed of achieving in 2005, when aged 27, she left behind a corporate career and used all her savings to open an Edible Blooms store in Brisbane. There were just nine products - all beautiful fresh fruit bouquets. Within 12 months of launching, demand for Edible Blooms meant expansion and eventually an increase in the product range to more than 100. I found the perfect way to experience the philosophy of the chefs was to order the six course Tasting Menu, which gives diners the opportunity to sample many of the chef's signature dishes. This menu showcases the tastes of true Japanese cuisine prepared with minimal intrusion by the chef - offering true flavours, tastes and textures - and is presented as works of art on a plate. I also chose to have the optional wine matches, so that each course was presented with a perfectly matched wine or sake, perfectly tailored by Bar Manager Jack Henderson. My dishes included an appetiser and entree of fresh oyster with lime sauce, soft shell crab karage with shiso salsa and seared Wagyu with citrus soy sauce. chili and grated radish served with a Pelorus by Cloudy Bay Sparkling; followed by tuna, salmon and snapper sashimi with shallot, sesame seeds and garlic vinaigrette presented with a 2009 Mitchell Watervale Riesling. Then followed a fresh crabmeat croquette and scampi spring roll accompanied by a 2008 Giant Steps Sexton Chardonnay. Following was the prawn tempura sushi roll, fish tempura roll and seared salmon belly sushi drizzled with mayonnaise, sea salt and avocado matched with a Echigo Toji No Sato Sake... for the main I chose the NSW duck breast teriyaki with orange sauce perfectly matched by one of my favourite pinots, the 2009 Mt Difficulty Pinot Noir. By now I was getting a little bit full but managed to force myself to taste the Matcha Tiramisu, a classic Italian dessert with a Japanese twist - Green tea powder gives this dessert a unique twist and the accompanying Choya Umeshu plum wine helped. My lucky partner for the day chose his own dishes from the menu, for a 'starter a finely sliced Hiramasa Kingfish drizzled with yuzu dressing and tiny squares of fresh orange and micro herbs... delicious! was the comment. He then chose an entree of plump sauteed Hokkaido scallops with sweet, creamy miso mayonnaise; then for the main chose one of the signature dishes, Black Cod Saikyo Yaki grilled New Zealand black cod pre-marinated with a traditional saikyo miso sauce for at least two days (and equally as good as Nobu).. you will need to allow 20 minutes for this dish but it is well worth the wait. And in case you were wondering, yes my partner did have a glass of wine (but just one, he is the designated driver), a

aised in the deep, cool, remote and purest coastal waters in the world at New Zealand’s Marlborough Sounds in the South Island, Regal King Salmon is a naturally rich source of long chain omega-3s which gives a luscious, elegant texture and rich buttery flavour plus has important heart health benefits. It can be beneficial for the joints which great news for adults as well as a healthy mind for all life’s stages, including young children’s development of the brain and eyes. It’s an excellent source of high-quality protein containing most of the essential amino acids; is a natural source of vitamins A, B12 and D, as well as niacin and thiamin; and is low in sodium, which is linked to a reduced risk of hypertension. Although the salmon will keep in a fridge (at less than 4°C) for three to four days perfectly well, it is best eaten as fresh as possible. If frozen in a sealed freezer bag, salmon will last up to six months in the freezer. You should always defrost seafood in the fridge. Salmon is ready to eat when the flesh turns opaque. It is quite safe to serve salmon rare and it can also be eaten raw. Salmon cooks very quickly and should flake easily when tested with a fork. For oven baking place the salmon in a baking dish that has been greased or lined with foil. Brush the fish with oil, lemon juice or a mixture of both. Bake at 180°C, allowing eight to 10 minutes for 2cm thick fillets. A good rule of thumb is to measure the whole fish at its thickest part and cook it for 10 minutes per 2cm thickness (approximately 45 minutes for an average 2kg fish). When poaching avoid using thin fillets. Simmer in liquid flavoured with slices of lemon and parsley for four to six minutes ensuring there is enough liquid to cover the salmon. Poach whole salmon for six to eight minutes per 200g. Poached, the flavour improves if it is served the next day at room temperature. For the BBQ, cooking time will depend on the temperature. If it can be controlled, a medium-high heat should be used. Brush the salmon with oil and the season. For whole salmon, season the fish and brush with oil or lemon juice. Place slices of lemon and parsley in cavity and wrap in foil. Measure the whole fish at its thickest part and cook, following the
instructions for either over baking or BBQing, for 10 minutes per 2cm. Little wonder Regal King Salmon is preferred by many of the top restaurants in Australia.

250g Regal King Salmon top loin skin and blood line removed 100g fresh or frozen peas fresh horseradish 50 ml vegetable stock 25ml extra virgin olive oil I lemon zested Mixed baby herbs (baby watercress, mustard cress and purple basil) Japanese skewer 25g caviar 50g sea salt 50 sugars Black volcanic salt to garnish Pea puree If using fresh peas blanch in boiling salted water for 4 minutes or 1 minute if using frozen. Plunge immediately in iced water to cool down quite quickly to stop the cooking process. Place peas in a food blender with vegetable stock and olive oil and blend till quite smooth. Pass puree through a fine mesh sieve then season with salt and add lemon zest. Refrigerate till needed. Salmon Mix sea salt and sugar together and rub all over salmon and set aside for ten minutes. Once time is up rinse fish and pat dry. Slice fish across ways and place skewer thought he middle of the fish so it resembles a salmon paddle pop. Place salmon paddle pops on serving platter, place pea puree in a piping bag and pipe onto salmon. Continue with a few pearls of caviar on pea puree top with mixed baby herbs and grate fresh horseradish sprinkle with black salt and serve. Serves 20

The Who’s Who of the wine industry stepped out recently for the Coonawarra Barrel Series 14 Auction and Dinner, held at Katnook Estate Coonawarra. There certainly was a buzz around this year’s Barrel Series wines, which was evidenced by a larger than ever turn out at the Barrel Series tasting prior to the auction and dinner. When tasting the Coonawarra Barrel Series 14 wines in June 2011, Nick Ryan national wine writer stated: “This may well be the strongest line up of Coonawarra Barrel Series wines we have seen in years. The buzz around 2010 seems to have come to early fruition in a line-up of wines that are well endowed with the varietal and regional characteristics that get us all excited.” Barrels from Brand’s Laira Coonawarra, Parker Coonawarra Estate, Yalumba “The Menzies,” Wynns Coonawarra Estate, Katnook Estate Coonawarra, Majella Coonawarra, Zema Estate and Lindemans Coonawarra were hand selected as being representative of the finest Coonawarra Cabernet Sauvignon from the 2010 vintage to represent Barrel Series Auction 14. Gray has graciously offered to share his insights on the results and offers the following assessment. "In the current uncertain market, to have all six properties sell at auction was a good result. We were expecting a much better result as all properties had been transformed significantly and renovated to a very high standard." he said But, as market confidence has slipped in the last six months due to the state of the national and global economy, which has led to a lot of potential buyers sitting on the fence. It's often easier for them to make no decision - than to buy or sell property at the moment. Adding to people’s indecision is the mixed discussion about whether interest rates are likely to rise or fall Potential purchasers should be aware that selling property by auction is not just about that night, it's about pre and post auction negotiations. A lot of property at the moment is being sold pre auction - as agents know it's an uncertain market and will happily take a good offer before. "The properties that sold at a loss on the night of the program - in reality, the auctioneer would normally have used a vendor bid or passed the property in and

then negotiated afterwards, resulting in a higher result. " "As a TV show, it was better to get a result on the night. Of course, many properties sell within days of the auction night and at a much higher price - as demonstrated in The Block, where the second property sold that same night and the third and fourth sold within four days at a profit.” he continued "Some people will not go to a televised auction even though there was a large level of interest in the properties. Bidding at an auction is like public speaking and most people fear it more than death. To be put on the spot in front of such a large audience and on national TV would be a nightmare to a lot of people, and so they will not turn up or bid under any circumstances. The contestants had to spend a 20% budget to keep everyone on the same playing field. In reality, some properties might have been better off spending less - as there gets a point where you start to over capitalise." "Due to time constraints they also had to hire in and pay for tradesmen, where they would normally have done the work themselves - effectively for free, so they wouldn't have spent so much cash "Buying, renovating and flipping, is different to doing a buy and hold – the contestants had to do things properly, for
example, replacing sewage systems and getting guarantees in place. If they were selling they wouldn’t necessarily improve things that didn’t need immediate attention, or didn’t need to be fixed immediately.
Auction day arrived, with the Top 6 holding their collective breath as the auctions got underway. First up was The Weatherboard House, with Mel and the rest of the Green Team watching anxiously. The poor state of the property market was immediately apparent, with bidding getting off to a worryingly slow start. With the price creeping up steadily, however, The Weatherboard managed to reach $575,000, a profit of $1145. Next up was The Shop, with August pained to see his pride and joy fail to make a profit as the hammer fell at $700,000. Peter and Natalia were given equally little to celebrate, with The Half-Done House going for $770,000 and The Sixties Suburban for $730,000, some way short of their respective profit points. Thankfully it was a different story for Luke and The Inner-City Terrace, which enjoyed by far the best action of the night up to then by selling for $925,000 – a tidy $25,732 profit. The stage was set for a battle of David and Goliath, with the only house that could topple the competition’s biggest being its smallest. Village culture! Q: Tell us a little about yourself, how you came to be part of this industry? It all began at a young age of 17, growing a passion for furniture & home-wares, design and creativity. By the time I reached 18 I was buying, merchandising & developing stores. I also gained some great experiences working for some very strong brands in Australia through Merchandising and product development roles. I become extremely passionate about developing products & designing, It was always rewarding to see these products sell and become some of the fastest selling products within the Industry. I've taken a leap of faith in developing my very own store, my own Brand and building a future, Q: Village; what does it represent and how did you come up with the name? Village represents, people & cultures from all over the world, it's about working with families and villages, traditional methods in craftsmanship, originality and working with suppliers that support the world we live in by producing furniture from reclaimed woods. It's all about the generations ahead of us. It's about quality, Beauty & being in love with the products that surround you in your home. It's a Village: a place of home or community and that is exactly what Village represents. Q: What styles do you focus on that make Village so unique to your customers? Our style is definitely unique, It allows you to create your own, be confident to step outside of the usual structured design. We focus allot on natural products, earthy urban designs, luxurious soft furnishings embracing eclectic looks being empowered by things you love around you, developing a style that really works for you and your personality rather then following a specific trend. Q: Where do you look for inspiration on the products you manufacture and source? I turn mostly to nature, the earth and all the creativity that lies within it. Traveling throughout parts of the world through markets and villages, colours of spices and the earths fields, seeing some of the most amazing architecture and developments created by man. It's urges and fills such a desire to come home and share those experiences through
merchandising in the store, It gives me the courage and inspiration on the direction of where i am heading with Village, Each visit over sea's endorses the next collections, our evolving style or new trend. Globally, when I travel to meet with manufacturers overseas I am inspired to bring there beauty home, to share these experiences with my staff and customers, I really feel inspired by european designs but mostly inspired by amazing artisans that I find in other countries, These are the moments I am truly inspired. This is what keeps us so unique, keeping ahead of the pack means we are continuously evolving and making each visit to the store a new experience. Q: The most rewarding part of owning Village? Meeting people and sharing their experiences, Having a solid team that believe in the product and brand as much as I do. It's always rewarding learning from our customer that Village is unique and one of their favourite shopping destinations by far! That is what is most regarding about creating this brand knowing that I have broken through to customers and touched on a emotion in their lives. The E-Type is simply one of the most exciting cars ever created and a legacy to the genius of Jaguar’s founder, Sir William Lyons.” E-Type owners included celebrities such as George Best, Brigitte Bardot, Tony Curtis and Steve McQueen and the sports car became as synonymous with the Swinging Sixties as the Beatles and the mini skirt. “It is impossible to overstate the impact the E-Type had when it was unveiled in 1961,” said Ian Callum, Jaguar Design Director. “Here was a car that encapsulated the spirit of the revolutionary era it came to symbolise. Brisbane-based DM2 Architects, the original designers of the entire development back in the 80s, were drafted in to complete the renovation. n addition, the apartment had to sleep 10 plus people! No mean feat indeed. With the owners possessing five kids under the age of six, the owners wanted to create a haven where the family could be together or could escape each other. In this way, a second lounge and a large deck were crucial. They also wanted to have space for friends in addition, so the ability to have two families holidaying together comfortably was a must. After two years of planning, during which the original design of the apartment was tweaked and beautifully twisted, the unit now boasts a great deal more space, a slick design, an interior of clean lines, splashes of oceanic blues against a palette of fresh white, and modern stylish, yet functional, furniture. A tour of the apartment offers a private entrance to the penthouse via an inclinator, taking you straight into an open plan living dining area together with a beautiful large white kitchen and a huge terrace and sun deck spacious enough for a table of ten and, more importantly, with breathtaking panoramic views over Laguna Bay. The lounge is tastefully decorated with muted tones and

He has had the opportunity to work with Paul for the past year and says it has been an exciting culinary learning curve for him and is now keen to put his own touch to Paul's classic Thai dishes, whilst still respecting the fresh flavours and local produce. A rich Mussaman curry of slow braised beef with sweet potato, white radish, peanuts, pickled ginger and crispy shallots was our other main and equally as impressive. ccor Vacation Club celebrated the 90th Birthday of the Grand Mercure Melbourne, Flinders Lane building by recently completing a multi-million dollar makeover of the hotel. The project is the most ambitious in the history of owners, who have spent $4.3 million to bring the property back to its glamorous glory, so well known by stars of stage and screen over the past two decades. The building, located at 321 Flinders Lane, was built in 1921 on the former Dr. Jaeger’s Sanitary Woollen System Co. Ltd site, the company later evolving in to the internationally renowned Jaeger fashion House. The building was first tenanted in 1923 and housed various textile and fashion retailers including Wallace Buck & Goodes Pty Ltd, the founder of Henry Bucks & Co Pty Ltd. The design philosophy of Penny Del Castillo from In Design International drew inspiration from those early “fashion house” days with a view of creating an expression of sophisticated elegance, through an individual design concept that would remain unique to Grand Mercure Melbourne, Flinders lane. The result has turned this “all suite” apartment hotel into a market leading boutique product, which presents a contemporary range of sophisticated suites that infuse modern design philosophies with the architectural and historical heritage of the building. The design elements of the rooms and public areas continues the theme, the intricate detail of the carpet is custom made in Germany specifically for this hotel and ties into the German heritage of Dr. Jaeger who originated form Stuttgart. Historical Melbourne scenes are displayed in the black and white artwork that adorns the corridors, evolving into a celebration of Melbourne’s modern icons throughout the suites. The great thing is that property owners really seem to be thinking about the needs of pets as well as people, so taking a pet on a holiday has never been easier,” says Susie Willis from the PIAS. Make sure your pet’s vaccinations are up to date and that you have treatments for any conditions that may be a risk in the area you are going to. During summer, ticks are common in many parts of Australia and are a real risk to your pet. 4. Check that your pet’s identifying tags are secure and that they carry a phone number where you can be easily reached while you are on holidays. 5. If you are flying with your pet, always book your pet in before the flight and ensure he or she is in a secure crate. Arrive at the airport at least one hour before the flight. Discuss any special needs your pet may have with your vet well before travel time. 6. Even if it is a short car trip, you need to be aware of the road rules about travelling with pets in vehicles. The rules vary from State to State - so check with your local road authority or police as well as those for any areas you may be travelling to or through. It is better if your pet travels either in a carrier or a separate and secure area of the vehicle. 7. Pets tend to prefer routine, so on the day of departure, time your activities so your pet can rest in the car at its normal sleeping time. Cats are often more nervous about car rides than dogs - but a cat will be more likely to curl up for a sleep if it is in a carrier that it is familiar with. 8. When you arrive at your holiday destination you will need to keep both dogs and cats secure for the first few days. For a dog this means only letting it outside to a secure back yard or on a leash. Cats will need to be kept inside for at least the first week and probably for the duration of your holiday. 9. Take your pet’s familiar bedding and toys as well as everything you will need for the perfect pet-holiday: bowls, usual food, kitty litter or dog poo bags, leashes, towels, special treats, and basic first aid for your pet. Remember that National Parks do not allow pets (even when kept in the car) so observe the rules if visiting a National Park.

Lead by an astounding cast including Irish actor Brendan Gleeson and Australian actor Stephen Curry - this emotional yet uplifting film perfectly captures the true human spirit - and is a film that audiences all over the world will fall in love with. Simon Wincer who is renowned for bringing us films such as The Man from Snowy River, Phar Lap, Free Willy and numerous Australian and award winning US TV productions and telemovies has been touring regional Queensland as co-writer, co-producer and director of The Cup. “A great story makes a great movie” and although there was a lot of sadness surrounding Damien Oliver’s win at the 2002 Melbourne Cup, we knew that this was a story that should be told,” said Simon. Simon and co-writer Eric O’Keefe met with Damien Oliver, his manager and family once they had finished the screenplay and although it’s still something that is really hard for Damien and his mother Pat to talk about, they both felt it would be a great tribute to their son and brother Jason Oliver that the film was made. They were both very supportive throughout the whole process. Stephen Curry superbly portrays Damien Oliver - and in preparation for the role he shed 15 kilograms and spent two years at Simon’s farm learning to ride thoroughbreds. “Stephen was my one and only choice for the role of Damien and his dedication to the role was incredible,” said Simon. Stephen is also joined by a stellar Australian cast including Daniel McPherson, Colleen Hewitt, Jodi Gordon, Martin Sacks, Shaun Micallef, Tom Burlinson, Harli Ames, Alice Parkinson, film newcomer Bobby Fox and legendary actor Bill Hunter. Sadly this was Bill’s last film role. The film is open nationally now at all Birch Carrolll & Coyle and Event Cinemas.

The one-time Sydney grommet, now associate professor at the Rhode Island School of Design near New York, painstakingly crafted a dozen beautiful timber surfboards. Ranging in length from 1.5m to 2.8m and with various fin combinations, the boards feature artistic designs by surfing heavyweights such as Mambo designer and surfing champion Gerry Wedd and Quiksilver's director of research and design Phil Hayes. Walker explained a Chinese wood known as ‘coffin timber’ which is as light but much stronger than balsa, was used for the boards. "They are all of a hollow construction with a framework, skin of wood and laminated rails. Finished in fibreglass, the boards draw on designs dating back to the 1920s and are combined with contemporary design. "For decoration, I've collaborated with other artists to pick up on various aspects of Australian surfing and coastal culture. People interested in surfing history and surfing culture collect boards like these for both reasons - as artworks and to use." Walker’s interest in surfing took a back seat when he moved to Tasmania to study furniture design. Now an accomplished designer and craftsman, Walker divides his time between Australia and the United States which is where he met legendary board maker Dale Belze, igniting his passion for surfboard design. “Forms have changed, the way people surf has changed, technology’s changed,” he says “and these boards are a bit of a hybrid mix but they’re definitely rooted in the old school. “They are completely different to surfing on a foam board. They’ve got more weight, so they feel different in the water and under your foot, plus they behave differently. They’ve definitely got more glide and momentum.” “I guess I’m trying to contribute to the evolution of surfboard design and culture, but mainly I’m having fun.” The exhibition was opened by the legendary surfing photographer John Witzig.

ow Parade is the largest and most successful public art event in the world. The sculptures are made of flame-retardant fibreglass, are mounted onto cement bases and purchasers have included Oprah Winfrey and Elton John. But why has the cow? It is universally loved and represents different things to different people and
simply makes everyone smile. As an art canvas, there is no other animal or object that provides the form, flexibility, and contiguous breadth of a cow. ALICE COOPER ROCKED BRISBANE... The Brisbane Convention and Exhibition Centre was the scene of one of the best concerts this year, when Alice Cooper brought his No More Mr Nice Guy tour to Brisbane recently. Even before reaching our shores, Alice Cooper had played to sell-out audiences in Nth & Sth America and Europe and is still receiving rave reviews from both fans and media worldwide. His highly anticipated return to Australia coincided with the release of his new album, Welcome 2 My Nightmare, out through Sony Music now. The album was produced by longtime collaborator Bob Ezrin, who also produced the original Welcome To My Nightmare album in 1975, and
features a host of special guests (including the three other surviving members of the original band, “Nightmare” guitarists Steve Hunter and Dick Wagner, Alice’s touring band, Vince Gill, Rob Zombie, and, most shockingly, Ke$ha) as Alice revisits his legendary nightmares. For anyone who missed this show, let's hope that he comes back again soon. This show was a sensory spectacle, reminiscent of his older shows - huge sound, smoke, mirrors, props - even the obligatory Boa Constrictor - and a stellar band featuring Australian guitarist Orianthi Panagaris that was perfect backing for the man who introduced horror imagery to rock ‘n roll, and whose stagecraft and showmanship have permanently transformed the genre. As someone who was at the original 1975 Welcome To My Nightmare concert at Wembley Stadium, I can tell you that this was almost like reliving my youth. Fabulous fun!! Can't wait to buy the album.
