he lyrics of this well-known English rhyme date back to the 17th century, and although James Howell’s words may have changed slightly over the ensuing years, they are still the ones that readily spring to mind when it continues to rain, and rain, and rain! Over the years different poets have modified where the rain should go - most commonly to 'come again another day' but I propose we change them again to ‘don’t come back again any other day’! This season heralds the start of the cooler months. It's time to visit our fabulous boutiques and jewellers, who are all showcasing their latest collections. This season's fashion looks stunning. It's time to update your wardrobe to reflect this season's latest colours and styles - studs are back in a big way - on boots, bags and embellishments; as are the hero colours of black and red (thank you - my personal favourites!) as well as traditional favourites in cream, coffee and grey/blue; boots are an accessory you can't be without this season from short ankle boots to thigh-high ones fabulous! Most men think of Easter as the traditional time to commence all those renovation projects they did their 'thinking about' over the hot summer months. Gutsy kids help cancer research...

S

tudents are lining up for to participate in this year’s Gutsy Challenge, which asks them to eat fruit and vegetables for one week to raise money for gastro-intestinal (GI) cancer research. The Gutsy Challenge is the only national healthy eating program for children in Australia, and its focus is to encourage kids to establish healthy eating habits, with all monies raised helping to fund GI cancer research. Over 20,000 Australians are diagnosed with GI cancer each year, and it is the most common

form of cancer. GI cancer occurs in the oesophagus, stomach, liver, gall bladder, pancreas or bowel - according to Melisa Shishkin, Education Marketing Officer, GI Cancer Institute. There are two easy ways to participate, children can either seek sponsorship to eat two fruit and four vegetables each day for a week and as they raise money they can win great prizes, or the school may choose to hold and out-of-uniform day and ask students to donate a gold coin to support cancer research. “In Australia 500,000 primary school aged children are either overweight or obese. As they grow, obesity climbs to over 50% which can lead to ongoing health problems like

Pulling off a standing backward somersault is a feat by anyone’s standards but according to Helen Flanagan, in the most gruelling ocean-based competitions on the planet, Jordan Mercer takes some beating.

W

hen it comes to ironman champions, Darren Mercer and his younger brother Dean were podium fixtures. In similar surroundings many years later, little Jordan Mercer rode her bike up and down Ocean Street, Thirroul on Sydney’s south coast, went to the beach with her dad Darren and swam in the tidal pools at nearby Austinmer with her grandparents and sister Madie. Even in winter. And whether gymnastics, cross-country running or on the beach as a nipper, her competitive spirit was full-on from an early age. She kept good grades at Sunshine Coast Grammar School, was captain in year 12, always made sure the class was entertained, juggled training and competition with assignments and study, and always knew it was worth the effort. She was especially serious about sport but did she have iron in her blood? “If people think I’m on-track to emulate the success of my dad and uncle, that’s a very humbling thought,” says Jordan, 19, who was born under the star sign of Sagittarius and gained her Bronze Medallion at 15.“Although they are my idols and I look up to their achievements, I don't plan to follow them in any way. I have very different goals and this alone has really directed my career path. I admit my inner creative sometimes comes up with crazy dreams, however it’s those aspirations continues next page...

which have translated into amazing opportunities of travel, unforgettable experiences and ultimately being successful. “As long as I can remember, whenever I watched dad race and that was often, I thought there was only one way to finish and that was in first place. Later firsthand experience taught me this wasn't always the case. Being heavily involved in gymnastics and surf, both mentally and physically demanding sports, I learned how to win and lose. Such invaluable lessons my mother (Tiana) and dad instilled in me. So whatever I’m doing, my family have, and always will be, my number one supporters. Ups and downs included – no matter what the outcome.” With the Sunshine Coast’s great weather, excellent education facilities and an ideal place for Darren to complete his competitive career, the Mercer family made the move 13 years ago. “Castaways Beach where we live, is a piece of paradise,” enthuses Jordan who loves to surf, travel, play guitar and golf plus enjoy music in those rare spare moments. “We have an uncrowded open beach and it’s only a short trip to Noosa Beach where I love surfing the points. It ticks all of the boxes for the whole family and the Noosa Heads Surf Club [Darren is the club’s coach] is incredible, the people involved have a real sense of community and we have great friends. “Training is full on, but that’s part of my job. Three plus times a day six days a week can be pretty tricky, but training as hard as I do with such passion and focus tends to bring out the great as well as the super bad sides. It’s a hard job for dad being my coach but success is a reflection of his ability. He is motivating yet never pushy. He is after all the best ironman of all time and the greatest coach ever! “All the training in the world doesn’t help sometimes, such as the time I was concussed by a stray board which launched straight at me from a huge wave during a training session. I managed to escape with some memory loss and a large hematoma the size of a tennis ball on my forehead. Not pretty. “Of course I also receive phenomenal support from mum and my little sister Madie16, the smartest Mercer yet. She has a huge amount of talent but doesn't have the competitive bug. Instead of training like crazy and dedicating her life to such an unpredictable sport, she prefers to have fun and jump in for a session and socialise with friends.” Jordan, whose nickname is Magic, acknowledges that acceptance into the Australian Institute of Sport for gymnastics aged 12 was her first major achievement but obviously not one she fulfilled choosing the ocean rather than the parallel bars. “I think I made the right decision,” admits the professional athlete and winner of four gold medals at the 2012 ISA World Stand Up and Paddleboard Championships in Peru, with a big grin. “My greatest achievement to date is holding two Molokai to Oahu 54km World Paddle Board titles and also the female record. “I’d love to go to the Olympics one day. That’s no secret. There are a number of sports in which I’d like to train and make the dream come true but choosing one is the problem. Triathlon, slalom, wind surfing and sailing and what about ping pong?”

n a coup for the organisers of this year’s Gympie Music Muster, the international headline act, on its first tour downunder, will be The Mavericks. Billed as “the most interesting band in the world”, the band fuses traditional country with rock ‘n roll, in their killer-cool Tex-Mex style, and seasons it with saxophones and lashings of hot Latino. It’s a mix that has been slaying audiences for decades and the exclusive festival appearance is not to be missed. Oh What A Thrill, There Goes My Heart, Dance The Night Away, What A Cryin’ Shame’… the hits keep on rolling and their appearance will be amongst the most unforgettable ever presented anywhere. Golden Guitar winners litter the line-up, including both the female and male Artist of The Year with Troy Cassar-Daley performing songs from his awardwinning Home album, while Catherine Britt will showcase her current landmark release Always Never Enough, which earned seven nominations in the January Awards. In another coup, the Gympie Music Muster has confirmed global sensations Sleepy Man Banjo Boys from New Jersey, USA. With a combined age younger than Lee Kernaghan, ten year old banjo picker Jonny Mizzone, along with his brothers Robbie (13) on fiddle and Tommy (14) on guitar, burst onto the US music scene following their debut appearance on The David Letterman Show. he fastest drivers from several countries will fight for victory when of Rally International the Queensland takes its main event under lights to the Nambour Showgrounds on the Sunshine Coast in July. Competitors expected to come from Malaysia, India, New Caledonia, China, Japan, New Zealand and Australia will tackle a new Super Special stage course at the showgrounds on the first night of the 12-14 July rally. The spectator highlight to open the weekend will take more than 50 crews and cars on a high-speed, two-kilometre sprint around the showground precinct, including circuits of the main ring and a thrilling jump.

Car displays, fireworks, market stalls, children’s rides and food and drink outlets also are planned for a big night of family entertainment. The International Rally of Queensland, one of the Sunshine Coast’s biggest annual sporting fixtures, will host rounds of the FIA Asia Pacific Rally Championship, East Coast Bullbars Australian Rally Championship, Australian Classic Rally Series and other categories. The Nambour Super Special Stage was announced by rally Director Errol Bailey after a track inspection yesterday by fourtime Australian Rally Champion Neal Bates and top Queensland driver Ryan Smart.

L

ik’s journey had humble origins. Born in Melbourne, Australia, to Czech immigrants, it was his parents’ gift of a Kodak Brownie camera on his eighth birthday that set young Peter’s course. Entirely self-taught, Lik worked hard at his craft before making a life-changing decision: to go to the United States in 1984. A chance meeting with a fellow photographer in Alaska became a defining moment in Peter Lik’s life. He was introduced to the medium format panoramic camera and given the advice “Go big or go home.” Lik did both. He returned to Australia to photograph the vastness of the Great South Land. Peter then went on to open his own fine art publishing company as well as his first gallery in his adopted hometown of Cairns. He returned to the States in 1989 for another jaunt before undertaking a mammoth trip early in the new millennium to photograph landscapes of all 50 states. Fifty thousand miles and 1,000 rolls of film later, the “biggest challenge of my life” was completed. Highlights of Peter’s American odyssey can be found in his book “Spirit of America.” Lik’s stature as a photographer has been indisputably confirmed with his receipt of the award

of Master Photographer from both the Australian Institute of Professional Photography (AIPP) and the Professional Photographers of America (PPA). He has also been awarded fellowships by the British Institute of Professional Photographers (BIPP) and The Royal Photographic Society (RPS). Now based in Las Vegas, where he oversees his company LIK USA™, Lik’s career continues to boom. He has sold in excess of $300 million of fine art photography, has 14 galleries of his own and counts presidents and celebrities among his many collectors. Early 2011 saw two more landmarks for Lik when he sold his photograph “One,” taken on the banks of the Androscoggin River in New Hampshire, for $1 million, and had his classic image “Ghost” included in an exhibition of Nature’s Best Photography in the Smithsonian National Museum of Natural History in Washington D.C. Lik’s masterworks include “Ancient Spirit,” “Sacred Sunrise,” “Angel’s Heart,” “Tree of Life” and the highly acclaimed “Ghost.” Each Limited Edition release is greeted with great enthusiasm by collectors and this has been reflected in recent recordbreaking sales. Now at the top of his game, Peter Lik is “loving it!” at full throttle and the animated Aussie is showing no signs of slowing down.

We don’t have to talk about the consequences of this, you just have to think for yourself how much confusion there is in your life, really, on a deep level and if you could see through this how different your life would be on every level, not to mention the happiness you would have.

“Why I see what I see” VISUDDHACARA PHILIP AYRES - NISSARANA GALLERIES If you have visited Nissarana Galleries on Hastings St., you will understand that the beautiful works of fine art photographer Philip Ayres speak a different language than many other fine art photographs you may come across during your gallery visits. In his works on Australian landscape, Philip has seen beneath the conventional beauty and touched upon the spiritual essence of the scene and the story that lies therein. He attempts to bring us, the viewer, into a different realm of understanding about the possibilities that the land around us holds in ways we may have never considered before. This, Philip says, separates a truly great photograph from all the rest that have been merely photographed and in many cases later manipulated and are just a beautiful scene. The ability to do this does not come by chance but from many years of personal development and vast experience on the part of the photographer. Here, in his own words, Philip illuminates his background and how it has contributed to his unique ability in photography and he explains how the depth and gravity of these magnificent works was achieved. “I was born on the edge of the outback in a small country town surrounded by the largest red gum forest in the southern hemisphere. As a boy it was a real country life and I grew up observing nature and was very much immersed in the bush. It was my favourite place to go and play. I developed a deep love for this wilderness and the way you could loose yourself in these forests with its wildlife and waterways and not come out for hours, many times my mother thought I was lost or worse. In my early years at about 3 or 4 I was given my first box brownie camera, which I think was a hand-me-down and I loved taking photos of everyone and everything. I could hardly see through the viewfinder, but it was a buzz to hear that solid clunck when I took the photo. I still have that camera today. As I grew up that camera didn’t leave my side, I took it everywhere. My sister was a gifted artist and taught me to draw to keep up to school standards. In my teens I went to Melbourne for school and studied art, I had some fantastic teachers. I fell in love with oil painting and would spend many hours in the art room after school finished just painting. It was my release from the world where I could think and express myself without being told to do this or do that. After secondary school it was onto university with an ill chosen goal of accountancy. Within a few years I could see that was not how I wanted to live my life, that is, in a career with no expression. Without prompting I decided to pursue photography and fine art as a career realizing this is what I should have done all along. The problem with us is we always listen to other people and do not trust what our own heart is telling us. Soon I met a Lithuanian photographer, Ziggy, old school, a technical genius, and he trained me to work with him in his Toorak Studio where a passport photo was a full-blown portrait session. He was tough, teaching me to shoot without a light meter, to read the light with my eyes, always had to get it right, real ol’ school. I then saw an opportunity to open my horizons and study with Athol Shmith, who in the 50’s and 60’s was one of Australia’s most prestigious photographers. He was now the Head of Photography the Prahran College of Advanced Education. I submitted a folio

which he rejected, I was devastated, you know chance of a lifetime stuff, so I re shot and re printed the entire thing in two weeks, and this time he looked carefully over it and said I should get my eyes checked. I went away thinking I should have stuck with accountancy it was easier than this. After about a week or so I received a letter saying Athol has accepted me, and so I entered into studying photography with him while at the same time continuing to study painting. John Cato and Paul Cox were also our teachers there, they were fantastic, it was the creative place to be. There were others under Athols’ mentorship who have also become very prominent artists, it was a great time and a great environment to mix ideas and techniques. For me, I was hooked on medium format black and white and producing large black and white prints the old way. I’ll never forget the rush I would get from printing on the silver halide paper, immersing it in the chemistry and seeing the image appear before my eyes. It was magic! I am making an exclusive edition of these traditional prints for sale in my gallery, I think they should be released about mid-year. Time goes on and I found myself searching internally more than externally, for ideas and inspiration. I was drawn to eastern ways of thinking and took up yoga etc all fringe stuff in the 70’s, not mainstream like it is now. I moved into a house with 14 others in Carlton, this house became Tara House the Tibetan Buddhist Centre which now supports the Dalai Lama around the world. In that house on the full moon in May I met a Buddhist Monk from Thailand giving an all night meditation. I knew immediately that this was for me. I was fortunate to follow my friend from Australia to Bangkok and go to the monastery where the King had also ordained in his early life. The Abbot there was my teacher, he was one of the most respected monks in Thailand and is now the head monk in Thailand; he showed great compassion and personal interest to any new comer, particularly the foreign monks. The beauty of Bangkok then, is something I will always remember, especially in the early morning when I went through the streets with my monks’ bowl on alms rounds. The cool gentle light graced the blue haze lined streets and you could see the Temple of the Golden Mount rising above the lines of ochre robed monks as they walked receiving food, it was just wonderful. Although you have to renounce everything, for another year I held onto my mini 35mm Rollei snapping the monk’s life from the inside, but eventually I gave it and the film to a Canadian supporter and later lost contact with them. Someday those shots may turn up I would love to see them now. When I received full ordination I given the name ‘Visuddhacara’ and I continue to use that as my spiritual name to this day. I remained in Thailand living in various monasteries in the south and in the north for a few years before I went to Sri Lanka. Sri Lanka appealed to me because it was very similar to the culture of the Buddha’s time and it seemed like you could wander and live more like the monks of old. Soon I took up residence in an island monastery in a lagoon in the south. Here I studied the original Buddhist scriptures and practiced meditation, living in a remote corner of the island. Buddhist

Of course it’s easy to talk about these things but not so easy to practise, and it’s easy to read and learn but that’s not actually realising it, that takes much more dedication, patience and constant practice. Buddha said “the thorn of the meditator is non-practice”, we all have this thorn with our busy lifestyles so it’s up to us to decide what we want. So after a few years at the Island Monastery I went to a forest monastery purely dedicated to meditation. The name of the monastery was ‘Nissarana vana’ which literally means ‘Freedom Forest’, freedom from Samsara, the round of birth and death that is, and this later inspired my gallery name. I lived there practising meditation for several years. The teacher, Venerable Nyanarama, was my meditation master for the rest the years I was in robes. The time came and I left the comfort of his monastery wanting more seclusion and went to live in huts and caves in the Singharaja Forest, the central rain forest of Sri Lanka. There were no roads there, just the forest, the rivers and the villages in the edges of the forest. On the mountain behind me a pride of leopards lived and I could hear them at night, again it was wonderful, I listened to the sounds of nature by night and imbibed the beauty of the trees and crystal clear streams by day. Somehow being alone in nature helps you see deeper than what you would see when living with others. On the one hand being immersed in meditation most of the day and on the other listening to the messages of the forest really opens your mind to the reality that is always there but not commonly seen. Unfortunately the austerity of living in such a remote place forced me to return to the comfort of my homeland. In Australia I lived at a large forest monastery in the middle of the Dharug National Park and next to the Colo Wilderness, and this afforded me my much loved solitude. There I taught meditation and gave talks on the Buddha’s teachings. After a couple of years I decided to leave the robes and go my own way. For the next four years I lived enjoying the wilderness areas of Far North Queensland particularly the beach areas, finding these very conducive for meditation. I still had this passion for photography and soon took it up again, photographing landscapes and seeing them in a way I had never seen before.

In Melbourne in 1991 I founded ICPP International College of Creative Arts with a well-known American photographer to teach all aspects of photography and also visual arts. Over the next 17 years I taught aspiring photographers from all over the world to excel in their craft. The college grew into Australia’s largest photographic college with campuses in Melbourne, Sydney, India and the USA. As Director of Studies I critiqued the folio photography of thousands of students. This taught me a lot more about photography and what makes a truly great photograph and why the majority of photographs lack the qualities to make them outstanding, even if the photographer is already famous. I know a lot of my graduate students have gone onto produce outstanding work, exhibiting and working here and internationally and I feel very happy and proud about that. Throughout this time of teaching I kept photographing, adding to my folio of works and exhibiting, with the landscape being my favourite. In 2008 I moved on from the college and my passion now was to be in nature and create beautiful photographs and share what I experienced with the others. Over the next 5 years, with my partner Val, I travelling the outback photographing this incredible country and also journeyed overseas to photograph places such the jungles of Sarawak, and the breathtaking Himalayas. I think during these years I have produced some of my best work. It’s a long way from the days of my box brownie camera and I still have so much to learn. Photography is a never ending journey just like meditation; you never stop being inspired and never stop learning. Photographing landscape allows me that same connection with nature as I experienced living as a monk in the forest, it is a meditation in itself. The natural world around us is where our spirituality can be found no matter what religious beliefs we hold. It’s where our healing takes place which is obvious seeing we came from there. If we take the time to really see and listen its amazing what can be understood and whenever we see more then we are usually happier than before. Through my photographs I offer the viewer the opportunity to go beyond, there is much more, we just have to take the time to see. Of course creating fine art photographs is only half of it and they need to be appreciated by others, it’s always a two-way thing. For a long time we had been planning our street gallery on Hastings Street, Noosa to showcase my fine art photography. Nissarana Galleries is now open, with the big prints, it looks amazing, unlike any other I have seen, everything is so visually strong it captivates you when you enter, if you go you’ll love it, it really is worth a visit.”

hilst touring through Europe and Australia with an Irish dance troupe, Bobby Fox, the four times Irish dance champion was instantly smitten with the “country on the other side of the planet”. First stop on his arrival from Longford in Ireland was Westlake, outside Brisbane. His mission to learn other dance forms was short-lived however, following successful auditions in productions of Mamma Mia; Leader of the Pack, Dusty - The Original Pop Diva; We Will Rock You; Spamalot; Sweet Charity; plus Damn Yankies. Bobby knew he could sing but didn’t realise hitting the high notes was such a unique ability until auditions for Jersey Boys came along and he submitted a video. “I thought everyone could do it,” he says candidly, adding he had seen the show in New York, knew he had the look, was blown away by all the Four Seasons songs then and still is today. “For eight months though, despite phone calls from my manager, the tension continued to rise as more and more I heard about people missing out on roles. After university Casey’s dream of working in television was realised with a researcher’s role at Today Tonight in Brisbane. Sydney beckoned and her career skyrocketed in television and film production. From Big Brother, Deal or No Deal, and Ready Steady Cook, to Beauty and the Geek, The Secret Millionaire and Relocation Relocation, she was in constant demand at Shine Productions, Endemol Southern Star, Channel 9, Channel 7, Channel 10, the Lifestyle Channel and 20th Century Fox, where she had a production role in the Hollywood feature film X-Men Origins: Wolverine starring Hugh Jackman. “I met lots of celebrities, but Hugh was the most famous,” effuses Casey who these days lives at Sydney’s Bondi Beach with French-born IT specialist husband Nico Languillon and two-year-old Benjamin, better known as Benji.“I accompanied and worked with him in New Zealand for his role in Wolverine. “Hugh is an absolute gentleman. Others celebs I've worked with include Russell Crowe who narrated The Secret Millionaire, Liev Schreiber-Naomi Watts husband, and presenters Jules Lund, Andrew O'Keefe and John Burgess. “During the three years on Ready Steady Cook, Matt Golinski was recommended to me by a local foodie and what a pleasure working it was working with the consummate professional. He became a good mate and catered for my engagement party. I worked with lots of other celebrity chefs too including George Calombaris, Manu Feildel and Gary Mehigan, who I cast in their first television gig, the amazing ratings success story – Masterchef.” Life after television began on a fortuitous holiday in Italy when a boutique importing business called Objet Trouvé, a French term meaning ‘found object’ or ‘found art’, was borne. “I discovered Uashmama paper bags (pronounced ‘wash mama’) in Tuscany,” explains Casey, emphasising the paper is made using a virgin fibre from cultivation and not through deforestation. “Created originally as a bread bag they are

MATT POOLE made his mark on the final round of the IronMan Series...

ronMan Matt Poole has took out the 4th spot overall, following a head-to head clash in the final round of the Kellogg’s IronMan Series in Noosa Heads recently. After a disrupted pre-season, Matt’s discipline, endurance and strength helped him assert his dominance in one of the world’s most grueling ocean-based competitions. While the scorching heat, flat water and stormy weather led to a challenging eliminator round, the 2011 Red Bull Rookie of the Year used his famous sprint technique to gain speed on Corey Jones and Olympian, Ky Hurst in the final legs. “I had one goal today – to overtake Ky Hurst on the overall ratings and secure that fourth position and I’m stoked to have been able to do that,” said Matt. “It was the best I could have hoped for and what a way to finish the year!” His finish was a huge victory for the 'comeback kid', who has been putting in endless hours into rehab and grueling training to ensure that he stayed in top physical condition following a painful knee injury. Matt says he’s looking forward to keeping up the momentum to take out next year’s title. Outside of training to become an Australian IronMan champion, Matt works with the National Breast Cancer Foundation to help raise awareness for Breast Cancer Research in his role as an official foundation ambassador.

ith the promise of a better life in the land of milk and honey, the Taplin family took the slow boat from the Old Dart in 1968. They settled momentarily in Sydney’s Cronulla where Craig was born before upping stumps to Victoria’s Werribee. Here his parents caught and kept falcons, hawks and eagles, and hunted rabbits and ferrets. “Looking at photos of my beautiful 23-year-old mother, her two blonde haired boys and crazy bird of prey-loving adventurous husband, reminded me of what a great time we had… in all the places we lived,” recalls Craig referring especially to New Zealand where his dad was a farm hand, they shared holidays and camp sites near Lake Taupo with deer and morepork owls, he watched his parents on stage in Brigadoon and the Elephant Man, and One Flew Over the Cuckoos Nest and finally settle into regular jobs as a painter and a nurse. Back in Victoria, Craig caught the acting and singing bug, playing the lead role in Grease in an amateur production. With professional training, he scored many roles from Bennie in the pantomime Ginger Megs to his final curtain call as an actor in the opera La Boheme alongside Dame Kirri Te Kanawa, at the Melbourne Arts Centre. Needing money to travel and hopes of making it as an actor, he worked at the very cool Greasy Joes cafe in St Kilda’s Acland Street where dancing on the tables was common. “I’ll never forget the night two police officers in their uniforms graced the bar for a dance alongside topless men and women,” says Craig 44, with a laugh. From New York he hitched rides along Route 66 to Los Angeles, worked in London and Paris then back in Melbourne at famous Blakes restaurant, studying wine with Grant van Every, a leading sommelier, and pursuing his second passion of photography. Egged on by his flatmate Tara Moore he returned to London to complete his photographic studies in London, as an assistant n fashion and commercial shoots. “The 90s were about experimenting with photography, lots of late nights and travelling around India followed by South America to photograph a solar eclipse. It was my birthday – a turning point in my life, the realisation I was 30 and carefree.

“In a Canadian market selling postcards of my adventures in India, I met Jennifer and instantly fell in love. Our paths crossed a few times before I had enough courage to ask her out. Today we still laugh about how I was broke and she had to pay. “My true entrepreneurial spirit was also realised in Canada, although the crazy Belgium guy who was selling a travel website and had sold a mile of the Berlin Wall after it was knocked down, turned out to be not the real deal.” Never letting the grass grown under his feet, Craig stumbled across some crazy looking clogs with holes in them. He picked up the Australian distribution for Holey Soles, had a light bulb moment to create his own brand of footwear called Aussie Soles for the global market, and later decided to go public in the USA. In 2008 the GFC took hold, and the family returned home to Peregian Springs. Undeterred he started rebuilding the brand of orthopedically designed shoes that matched the ‘fast fashion’ look. “The Aussie way is to pick yourself up and keep going. We’ve won wars, we’ve survived natural disasters, and I will never stop or give up. Everyone needs comfy shoes and thongs like Aussie Soles that make you feel good.” On the flipside Craig enjoys Peregian Beach with his family.“My three girls love body boarding, although the youngest Jaya 5, [India is 13 and Savannah is 10] prefers playing in the surf and being washed up on the shore. We also like fishing at Stummers Creek, or Peregian Peach, and I like off shore fishing whenever possible. One day it will be the Northern Territory for a true barra experience. “Jen has been body building for about 18 months as a figure competitor and she’s also the queen of greens in the kitchen. We prefer mostly vegetarian cooking however use the barbecue for kangaroo steaks and the fish I catch. ‘I love my wife and my kids more than anything else in the world and believe we are all capable of achieving anything we put our hearts and souls into,” concludes Craig, the eternal optimist.

utch born Pauline Attias swapped a jet setting career as an international flight attendant for a beachside lifestyle seven years ago. Pauline and her pilot husband Yan had travelled the world. They decided to settle in Australia and drove from Sydney to Noosa to find their dream location. Pauline says they soon found a home but the job scene was up in the air. “Yan took up an offer to train pilots in Brisbane. I stayed at home with our daughter. To my surprise I discovered an interest in creating beautiful pieces for our home using shells and driftwood from the Sunshine Coast beaches,” she says. “While I was flying I used my creative skills to take photographs which I then sold to travel magazines. I had never thought of actually working with my hands to create individual homewares but I enjoyed it and soon started making pieces for other people. “I sold my work at the markets in Eumundi and Caloundra for a few years but I wanted to expand my range so I decided to open Très Noosa in Noosa Junction. This is my third year at Très Noosa. The shop is a local talking point, not just because of the eclectic range of products but because of the sand covered floor. “I love the combination of nature and style. My handmade products include shell frames, candles surrounded by shells, art works, soft furnishings and fashion. More than half of my wares are made by me or other local artisans but I also import items from Indonesia. “One of the latest additions to the range

Pauline believes nature and exclusivity never goes of style so she is now helping other people create their own unique pieces. Craft workshops are held at Très Noosa each Saturday and Sunday. Pauline says everyone is welcome.“The classes are taught by me or one of the other artists. People pay from $20 for the class and all materials are included. Classes can be held at other times for groups, it’s becoming a popular idea for birthday parties,” she says.

There are plenty of talented new designers but the successful ones listen to retailers, they make an effort to understand what the client wants and how much they are prepared to pay. “I discovered Rebecca Thompson a few years ago. She has grown with her success and knows how to create something new that our clients will love. I believe creativity and style are inbred, it is a gift some people have. Everyone can learn how to follow fashion but few people know how to lead it.” Cath has years of experience in interior design. She uses her knowledge and talent to source interesting pieces. “I may see an unusual cushion in a photo shoot, I will follow the trail and find the product,” she says. “I love to discover outstanding work by individual artisans. Lee Brennan is a great example. Lee is a cabinet maker by trade but he is an incredibly creative designer. He makes jewellery and furniture. Lee has created a few bespoke pieces for Noosa Classics. He creates the wow factor by thinking ahead of the current trend while making pieces that stand the test of time. “When people find an item of clothing, a décor item, a piece of furniture or jewellery that they love it gives them pleasure. ichele and Justin Warrick opened Little Cove Coffee Co at 205 Weyba Road, Noosaville just over a year ago. Michele says their former careers as an accountant and a teacher changed dramatically. “Coffee gripped us by the soul as well as the tastebuds and what started as a love grew into an obsession and finally a new lease on life. Now we roast beans instead of count them and wait tables instead of doing times tables, all in one of our favourite places on earth,” she says. Little Cove Coffee has already become a hub of real social networking. Michele says they are thrilled by the local support. “We love the fact that we know many of our customers by name and know how they prefer their coffee. We are proud to be a Noosa coffee destination and use only local milk and food products,” Michele says. “We have our signature blends on offer and explore coffee flavours by constantly roasting many different single origin coffee beans. Popcorn Pork Spare Ribs with Moroccan Yoghurt Dressing Serves: 4 (or more as a shared dish) 5 pork spare ribs 1½ cups plain flour 1 tbs sea salt flakes 1 tbs cracked black pepper 2L canola oil ½ cup pepitas 1 punnet enoki mushrooms Moroccan Yoghurt Dressing 1 tbs cumin seeds 1 tbs coriander seeds ½ cup natural yoghurt juice of 1 lemon Method Trim the pork spare ribs of any skin and excess fat. Chop the pork into 1.5 cm cubes. Mix the flour, salt and pepper together. Dust the pork pieces in the flour mix until they are well coated in the flour. In a large, deep frying pan, heat the canola oil to 180°C. Deep fry the pieces of pork, in batches, in the hot oil for around 2-3 minutes or until the pork is just cooked through. Place onto paper towels and season the pork with salt while it is still hot. Toast the pepitas in a dry pan over a medium heat until they just start to brown. Make the dressing: toast the cumin and coriander seeds in a dry pan over a medium heat until they become fragrant. This should take around 2-3 minutes. In a mortar and pestle, pound the seeds until they are a fine powder. Sift through a fine sieve. Add the coriander and cumin seeds to the yoghurt, according to your taste. Add the lemon juice. Toss the mushrooms and pepitas together with the pork. Finally, scatter some fennel fronds over the top as a garnish. Serve with the Moroccan Yoghurt Dressing. You can also serve with Pear and Fennel Salad

With family financial support they leased the shop next door and business went from strength to strength. “Organics is one of the biggest growth industries in the world, with people really starting to think about what they put in and on their bodies,” they explain proudly. ‘ As well as extending the coffee bar last year, we now stock around 5000 grocery, skin care, toiletry, and supplement lines, with a definite emphasis on quality certified organic products. We are also a certified organic retailer, which is added trust for our customers. Located in a tourist destination a lot of customers come from Sydney and Melbourne, and elsewhere. We are consistently told how well stocked our shop is – a sentiment also expressed by our suppliers. “Our passion is food - good food with integrity. Organics is a beautiful thing, but it isn’t just about staying away from harsh chemicals. It’s about people who care about how food is produced and cared for. The soils are nurtured back to the days of old, when they were rich in essential minerals and elements. Animals are actually cared for as if they were in the wild, grass fed and free to roam the paddocks. And let’s not forget the farmers - the people who produce our food. When you buy

organic, you are making sure the farmer is being paid a fair price for hard work that puts food on the table. People talk about ‘fair-trade’ which is generally set up for farmers in the third world, but what about our Aussie farmers. Don’t they deserve to be treated fairly? Corporations care only for their shareholders. They don’t care about farmers or people’s health.” Coconut products such as coconut water have soared in popularity thanks to celebrities such Miranda Kerr. Snails are considered by many as a garden pest, however others do their utmost to ensure they grow big and juicy.

M

any French restaurants were renowned for les escargots from dubious origins, drenched in garlic butter and served in the shells that came with the can. That’s so yesterday. Today, Cliff Wilson and partner Mary Page, amongst a hand full of snail farmers in Australia, have been nurturing helix aspersa, aka brown garden snails since 2008. Inspired by a story on ABC’s Landline program some years earlier, Cliff suggested his idea to Mary whilst they were caravanning around the country. Two weeks later, they were firmly ensconced in the Glasshouse Mountains where the temperature is more conducive to heliculture, the oldest from of animal husbandry on the planet. A gift of 80 garden snails was kept in a polystyrene box on the verandah while the shadeclothed trunk-shaped growing tunnels were installed. “Today we have 260 square metres of undercover housing and in excess of 100,000 snails,” explains Cliff, adding “helix aspera is an air breathing land snail originally from the Mediterranean region and the methods we

practise date back to ancient Greece. “Being an hermaphrodite, a pair will mate and each lay approximately 100 eggs, and reach adult size in about nine months when the breeding cycle starts. Eggs do not hatch, they form into perfect replicas of their parents but are totally independent. After the young appear we move the adults to another pen. “They’re low in fat but high in protein, as well as fatty acids, minerals, vitamins, amino and recognised as a super food. We feed them on fresh ground grain and give them fresh clean water daily. A supplement of fresh carrot is given regularly. “When they are market- ready at 8 grams+, they go into a purging box and given only water for five days before being sent to distributors such as Black Pearl Epicure in Brisbane or shipped live to restaurants in net bags of two dozen. “The taste falls between a mussel and a scallop with an earthiness that lends itself to cooking with the subtle flavours of herbs and white wine, but never in their shells full of garlic butter!” Cliff and Mary have raised five generations of Glasshouse Gourmet Snails, they conduct tours by

Cameron Matthews, the executive chef of The Long Apron is a big fan of Glasshouse Gourmet Snails, which arrive alive but dormant: “I keep them chilled, so they don’t come out of hibernation and turn into a snail stampede,” he says with a laugh. “I boil them for 30 seconds in lots of rapidly boiling, heavily salted water, put them into a water bath to stop the cooking process, and use a pair of tweezers to remove each snail from the shell, which is discarded. “In the recipe, the freshness of green apple, sweetness of fennel and leek plus the metallic, earthiness of morcilla work well with the grassiness of the snails and is a classic combination.”

Braised Glasshouse Snails, roasted leek, morcilla, fennel & apple Ingredients: Snails 5 per person Vichyssoise Spring onion oil Morcilla crumble Fennel, herb, apple salad Apple aioli Pea “dust” Roasted leek FD apple Morcilla ball Method: Snails: Wash snails, drain well, blanch in a large pot of boiling salted water for 30 seconds. Remove to an ice bath. Sweat some onion, fennel bulb, star anise, garlic cloves and 1 roma tomato cut in half, add the snails and beef stock, cook on low simmer for three hours until snails are very tender. Vichyssoise: Finely slice leeks – white only- and sweat in butter until very soft but not coloured, remove from heat and allow to cool, blend in high speed blender with buttermilk to a medium thick soup, season with salt and white pepper – you need to taste the white pepper a bit – strain through fine chinois and chill – serve chilled. Spring onion oil: Blanch the green stems of spring onions and refresh, chop roughly and place into blender jug with an equal amount of oil. Blend on high for 5 minutes. Strain through muslin – do not force – we only want the oil- not the solids.

Morcilla crumble (Spanish blood sausage) Poach the morcilla in simmering, salted water until cooked approximately 20 minutes; remove skin and “mince”. Fry with fresh ciabatta crumbs in olive oil until golden and aromatic, remove from heat, cool.

Reserve. Fennel, herb, apple salad: Combine shaved fennel, nasturtium leaves, dill fronds, fennel fronds, chervil leaves, julienned granny smith and crushed Freeze dried apple, dress with spring onion oil. Apple aioli Make as per a standard aioli, 2 garlic cloves, chopped 1 teaspoon sea salt 2 egg yolks 1 cup extra virgin olive oil 1 cup apple juice reduced to 2 tablespoons Peel of 2 apples Equivalent of 1 apple freeze dried 2 tablespoons lemon juice 2 teaspoons Dijon mustard Method: Process garlic, salt, freeze dried apple, lemon juice, apple peel, mustard and egg yolks in a food processor until well combined. With motor running, slowly add oil through feed tube, processing to form a thick mayonnaise. Transfer to a bowl. Stir in apple juice then pass through fine chinois, refrigerate until required. Pea “dust”: Make a pea puree by blanching frozen peas in boiling salted and sweetened water, puree, pass through fine chinois and chill immediately. When cold spread onto acetate sheets and dry at 60 c until crisp, grind in dry blender bowl. Roasted leek: Steam full leeks for 15 minutes, chill. Split in halves and grill cut side down on a BBQ plate until charred, chill. Dress with basic vinaigrette for service To serve: Reheat the snails in the stock. Place a good amount of Vichyssoise on bottom of plate, the lay a leek along it. Surround leek with hot snails and room temperature morcilla crumble. Toss the salad over and around the plate, then drizzle on some apple aioli and scatter over the pea “dust”.

Grilled Prawns with Creamy Dill and Lime Dressing Servings: 4 INGREDIENTS: 20 large green prawn cutlets 1/3 cup olive oil 2 tablespoon brandy or gin (optional) 4 shallots, finely chopped 1 small bunch dill, finely chopped Salt and freshly ground black pepper, to taste 125g Philadelphia Spreadable Light Cream Cheese 2 garlic cloves, crushed Juice of 1 lime 2 tablespoons rice bran oil olive oil, extra will do 1 lime, extra, cut into wedges, for serving

METHOD: 1. Soak 20 bamboo skewers in water for at least 30 minutes to prevent them from burning. Meanwhile, combine the olive oil, brandy or gin, half the shallots and half the dill in a large shallow dish and whisk together lightly then season. 2. Thread a prawn on to each skewer, running the skewer through the length of the prawn from head to tail, and then place in the marinade. 3.Turn the prawns so they are completely coated, then leave to marinate in the fridge for at least 1 hour. 4. In a bowl, mix together the cream cheese, remaining shallots and dill and lime juice, then set aside. 5. Heat a barbecue plate or grill pan to high. Drizzle half the rice bran oil on the barbecue and cook half the prawns for 2 minutes, then turn and cook another 1-2 minutes, until lightly coloured. 6. Place on a serving platter and then repeat with remaining prawns. 7. Dollop over creamy lime dressing and serve, with lime wedges on the side for squeezing.

Cutting the mustard Will Jake and Elle Harrison, the youngest competitors on ratings hit My Kitchen Rules rise to the occasion, asks Helen Flanagan.

I

t’s boiling point in the kitchen as the latest gate crashers Ashlee and Sophia bring out their knives and caustic tongues on My Kitchen Rules, while Minyama siblings Elle, 22 and Jake, 20, Harrison keep their absolute cool. Jake said cooking on the show was "80 million times more stressful" than he imagined it would be. Elle concurred saying the time constraints pushed relationships to the brink and she was thankful she had entered with her brother. Although they occasionally get hot-headed in the kitchen,“we say what we need to say and two to five minutes later, we're all happy. We never hold a grudge.” Jake and Elle are well travelled and enjoy the finer things in life. Elle has deferred her business and law degree at QUT, while Jake, 20, is studying an arts degree majoring in dance performance although a knee construction has restricted his ballet routines. Elle likes to go to the pub with her girlfriends and works at the Silver Spoon in Cotton Tree. Jake is a social butterfly and works at Tony Percuoco’s Tartufo in Brisbane. Both are enthusiastically competitive, have always cooked mainly European fare at home due to their mother’s Maltese heritage and wherever possible help out with the family’s horses, chickens and two dogs. Elle credits her parents with encouraging them to be independent and ambitious. "They've never said, 'No you can’t do that.' They’ve said, 'It's up to you. Try and do the right thing, but have fun.' Strange as it sounds they've disciplined us with love because we love them so much, we don't want to disappoint them. They weren’t around heaps when we were young as they had to travel for work. So we've always been treated like adults." Jake who’s outspoken, full of beans, and obviously wants to win says: “We've been crafting cheese platters since before I can remember. Cut the strawberries

up, put the dates and the dolmades on the side. We do all the cooking and the entertaining. Mum just sits back and opens a bottle of wine. We've done that since we were like, 10. She'll say, 'I've got some friends coming over' and I'll be like, 'Okay, I'll go to the grocery store and pick up this and that, where's your key card?' Mum will come home there'll be food on the way. “The kitchen is a place that equates to love,” adds Elle adding “we make a lot of freshly made pasta together; Jake's signature dessert for these occasions is black forest cake; mine is lemon meringue pie.” Insiders say what really goes on behind the scenes is more than just clever editing to create all the on-screen drama. Some teams struggle finding their way around the kitchen because it’s not theirs. A requirement is the kitchen (and bathrooms) must be completely separate from the dining room so guests don’t hear what is going on and vice versa, as Jake and Elle know. “When the episode goes to air we don’t know what the other teams have said about us,” admits Jake adding future episodes have more twists and turns than a roller coaster, and it’s true Ashlee and Sophia only know Asian cuisine. “It’s hilarious watching it back. But then again I'm not going to say something is delicious when it isn't. I don't like people when they go round the table and they can't make a decision on whether it is good or bad. "It's never about the team it's about the food in front of me. I am honest and everyone is afraid to be like that on the show because they know they are going to be portrayed horribly. It is OK. I'm not taking offence from it. It's just my style." Elle says her brother has always dealt with criticism and struggled to be accepted while growing up. Instead of being into football he was into dance. He would have rather been in home economics cooking and talk to the teachers. He has always been a bit more flamboyant and I think he definitely always got singled out. You have to talk the talk and walk the walk, and he does know a lot about food. He is dedicated and passionate and can back up what he says." Both wish to pursue a food career – in what capacity that’s still to be determined but Tartufo’s Tony Percuoco says “Jake will be managing my restaurant one day. I’m so proud of him. He learns from his mistakes and is a sponge for knowledge such as when my head chef Shane Veivers stayed behind until 5am showing him how a real kitchen rules.”

The 2012 Crown Ambassador began its journey, as it always does, in the Galaxy hop fields of the Ovens Valley in north-east Victoria. In March a team led by head brewer Tully Hadley hand-picked fresh galaxy hops, at their perfect ripeness. Fresh hops are a tremendous indulgence these days – used only sparingly, they bring aroma and style to a lager that is like no other. You only have to smell the aromas and taste the complexity of Crown Ambassador on the palate to appreciate this. After its initial fermentation around 20% of the brew was transferred using gentle pumping methods into both brand new and one-year-old Dargaud et Jaeglé (D&J) barrels exclusively crafted by one of France’s most esteemed cooperages. The remainder of the brew was transferred to traditional brewing tanks. In August, Hadley had three distinctly different brews at his disposal to blend – the rich oaky component, with hints of vanilla that had matured for four months in brand new oak, the toasty component that had rested in the seasoned oak barrels and the rich and malty component, with far more aromatic hop character, that had been resting in the traditional tanks. “In just four years we have established an incredible heritage and sense of tradition – with a tailored Riedel glass and our use of the French oak barrels – really it is a brewing and drinking experience like no other. You can happily drink your Crown Ambassador now - but it has been built to cellar for up to five years. And, just like a good wine will only improve and show its true colours with time and patience. “Since coming into our home two years ago Tess has given our family new happiness and bonding we would never have expected. Thank you RSPCA, we love our Tess. Pick up a dog from any shelter and it's love recycled. Every rescued dog has its own story. Dogs and Their Families is about the affection we have for our dogs and the love and loyalty given in return.” The dogs shown in the book are not all rescued dogs but they all have a loving family. Hot Tips to Caring for Pets in the Heat… With most of the hot days of summer behind us, there is still some blistering hot weather ahead. And whilst summertime may mean carefree fun for families, spare a thought for man’s best friend. Debbie Harrison, founder of BestDressedPets.com.au, explains that during summer we have to do the thinking for our pets. “If we’re distressed by the heat, there’s a good chance your pup needs some attention too. Certain breeds are more susceptible to heat-stroke and dehydration, so follow a few common sense rules.

My hot tips for caring for your pets this season: 1. Dress Light: If dressing your pup, ensure clothes are a loose fit in summer. For thin haired dogs, dress lightly and wear cap to prevent sunburn. 2. Cool Down: The best way to protect your pet on a hot sunny day is to dress it up with cool bandanas, wet the bandanna and put around their neck. 3. Slip, Slop, Slap: Skin cancer is the most common cancer among dogs, and putting a shirt on them to block harmful UV rays can help reduce their risk. Also apply sunscreen for noses and ears - at least SPF10. 4. Well Timed Exercise: Keep exercise to a minimum, but if you do go for a walk, avoid going between 10am and 4pm which is the hottest period

itrus originated from South-East Asia on the Malay Archipelago as well as tropical Asia, with the majority of basic varieties developed in China over the last 4000 years. The Arabs introduced bitter oranges and lemons to Spain and Portugal during their reign and Vasco de Gama introduced the first sweet oranges to Portugal in 1498, hence the plethora of Spanish and Portuguese names for citrus varieties such as Lisbon lemon, and Valencia and Seville oranges. Exceptions are the Washington navel orange from Brazil, the Meyer lemon from China and the Emperor mandarin (full name, Emperor of Canton) is a big surprise – it comes from Australia. So names aren’t always a sure guide to origin Vitamin C-rich citrus is the most popular of all fruit grown in Australia and is extremely versatile. From orange juice, cordials and liqueurs such as Cointreau, to eating lemon meringue pie, duck a l’orange, marmalade, laksas and fish with lemon sauce. From disinfectants, potpourri, oil such as bergamot which is used in many perfumes and cosmetics, and a bleaching agent (lemon) for hair to burning citronella candles to ward off mozzies. The Lisbon lemon is a favourite cultivar in a Mediterranean climate with alkaline soils. Mostly grafted onto the rootstock of a rough lemon, it will give three crops a year, with only a short gap in January/February where the tree won’t have any lemons at all. The blossoms have a very strong fragrance and will frequently be flowering and fruiting at the same time. Meyer lemon is easier to grow in the cooler regions and Eureka lemon is a better variety for humid areas. Yellow grapefruit has a tart sweetness, but even sweeter is the ruby red grapefruit with its beautifully coloured red flesh. The Valencia orange is a very juicy orange with a thin skin, like the ruby red orange. A lemonade tree is a cross between a lemon and a mandarin and the flavour is just like lemonade, without the bubbles of course. The Kaffir lime has become popular for its leaf, which is used as flavouring many Thai dishes. The fruits are extremely sour and not edible, but the plant makes an excellent container plant. The West Indian lime is smaller than the Tahitian lime. It has a fruit with seeds but it has the best lime flavour and is widely grown and consumed in the tropics, whereas the Tahitian lime has smaller, thin-skinned seedless, very juicy fruit.

on citrus... Nagami cumquat can be eaten whole, including the skin, unlike the Calamondin, which is incredibly sour. Chinotto citrus is one of the most ornamental species that has pendulous branches with very glossy leaves, with fruit that turns bright orange when ripe, but also with fruit too sour to be eaten fresh. These are all best grown in a warm protected area. “With attractive, shiny, evergreen leaves, sweet smelling flowers and wonderful fruit that add zing to so many recipes, citrus trees are fabulous plants for pots and one of the easiest fruit trees to grow in a garden,” recommends Outside Noosa’s John Scomparin. “Citrus, from the Rutaceae family, can be slow growing and form a shallow root system so ideal for pots and require very little pruning. “All varieties ripen slowly, so the fruit can be harvested over a period of months. Nowadays, with all the favoured varieties, they are produced on dwarf root stock. A normal citrus grows to about four metres, whereas on dwarfing root stock, the same plant will grow to about 1.5 metres. They also produce citrus with multiple grafts, so you can have two or three varieties on one plant – good for pots again, as well as compact courtyards and backyards. Think about a double grafted lemon and lime, for example if you’re partial to a gin and tonic or a Corona! “Citrus love sunshine - around five hours a day for maximum fruiting, so best plant in a north-facing position. Give them lots of water and a good quality, porous potting mix so it drains freely. Prune after fruiting. A cumquat for example, could be happy in a pot for up to twenty years, given the right care.” For Mediterranean-style gardens or a more formal look John has espaliered and topiarised cumquats very effectively and even in contemporary gardens he has successfully espaliered Valencia orange, lemon and kaffir lime trees.

“Benevolence” - Norman Lindsay

scaping from the everyday becomes possible when discovering the beautiful art of Norman Lindsay and stepping for a moment into the intriguing mind and fantasies of this great Australian artist. For many, when they hear the name Norman Lindsay they immediately think of surreal paintings of sexy, bohemian nudes or the movie “Sirens” starring Elle Macpherson which was based around Norman Lindsay’s life. However, there was a deeper side to this extraordinary artist who was widely read, articulate and also an accomplished writer. Lindsay’s incredible paintings were an insight into his ever-active imagination and sharpness of mind. Lindsay was a technically brilliant artist who first and foremost could draw with great accuracy and skill virtually anything he chose. He also holds the distinction of being one of the few artists in the history of Australian art who mastered most artistic mediums, including: pencil, pen and ink, etching, sculpture, watercolour and oil. He also built model ship replicas, played the piano and wrote several books. Opening in Buderim on Saturday 30 March and showing till Sat 20 April will be a wonderful exhibition “Unveiling Norman Lindsay” which presents the mystic world of Norman Lindsay in a boutique offering of exotic paintings that portray his fascination with Greek and Roman mythology, a passion for all things classical and his love of the female form. The exhibition will be presented by Tiffany Jones Fine Art Gallery who are recognised as the Queensland specialists in Lindsay’s art. Gallery director, Tiffany Jones says: “Most of the works in the exhibition were created during the 1920’s and 1930’s and as well as being sensual and very entertaining because of their detail and humour, some portray fascinating stories from Greek mythology.” Other intriguing works include rarely seen etchings from the 1920’s and 30’s, pencil nudes and a beautiful selection of watercolours. Amongst the watercolours are delightful court scenes, nudes in idyllic gardens and one of Lindsay’s most famous watercolours, “Benevolence”. Tiffany Jones said: “Benevolence is regarded as one of Lindsay’s most beautiful watercolours because of it’s striking blue colouring and the beautiful women depicted in the scene. The painting is well known by Lindsay collectors because a limited edition print run was made from the watercolour, however very few people have had the chance to see the original work because it’s only surfaced twice for sale since it was painted in 1934.” As well as the original works by Norman Lindsay on offer there are also collectable framed limited edition prints and fine books with illustrations of Lindsay’s etchings, pencils, cat drawings and his wife Rose who was one of his favourite models. ollowing a recent workshop with Lino Tagliapietra, hailed as the greatest living glass artist; Wolfgang Engel, a Montville glass artist, was inspired to once more create some of his most intricate lamp work pieces. Music impresario and the former manager of rock band Fleetwood Mac, Dennis Dunstan is concerned Noosa is fast becoming a retirement village, as bureaucracy and small-minded people shut down the live entertainment scene. I consult to the music industry all over the world and most recently was in Nashville where I did a seminar for graduating high school students called A Career in the Music Industry. This has sparked a lot of interest around Australia from teachers whose students are thinking about a career in the music business. You’re frustrated with the live entertainment scene in Noosa. Why? As much as we love Noosa and the lifestyle, I am concerned it’s regarded as a retirement village by many people. Have we let bureaucracy and small-minded people with nothing better to do, totally shut down the live entertainment scene in the premier destination for beaches, food and entertainment? Walk down Hastings Street after 9.30pm most nights and there’s hardly a soul around. No wonder many of our friends have chosen to go elsewhere for their holidays. Oh, we do have the Rolling Rock or as it's known to locals as the ‘Throbber’, but how many people over 30 have been in there and felt comfortable.

Recall some of momentous times the kid from the back blocks of Melbourne experienced whilst living in the USA for 23 years. My life was full-on. I was the co- manager of Fleetwood Mac and personal manager to founding member Mick Fleetwood for over 20 years. At the time, in the 80s, the music scene in Los Angeles was the epicentre of the world so it was challenging, very exciting and I met and mingled with the who's who of the industry including Madonna, The Eagles, Michael Jackson, BB King, even President George Bush, plus others I wish I’d never met. A great Aussie moment for me personally was orchestrating Men at Work flying to the USA to open up for Fleetwood Mac on their Tusk Tour, and to see them go onto super stardom. Why the move to Noosa and do you maintain links to the music industry? I always knew when I left behind the traffic congestion and smog of LA, to return home, it had to be in Noosa. That was in 2004. Through my company Frontrow Entertainment, I manage quality entertainers such as country star McAlister Kemp and Irish singing sensation, now local, girl Rebecca O'Connor, aka simply the best Tina Turner.

What changes can be made? A sensible plan along with new laws needs to put into place whereby music and dancing are allowed in venues, in an entertainment precinct which cannot to be shut down by someone who has just bought in or near the area. The recent story about a Sunshine beach restaurant being refused an entertainment licence to have an acoustic guitar playing is dumbfounding and beyond ludicrous. For Noosa to be a real contender as the best resort town in Australia, we need to have a ‘harmony law’, similar to other towns and cities. The way it stands now, if one person complains about music the police can come and force you to turn it down or even shut it down even if there are 500 people enjoying life. Bringing an international act or major Australian artist here would only be possible at one of our fantastic events, such as the Noosa International Food & Wine Festival, but the chance of coordinating dates with schedules is near impossible. There are currently only two indoor locations. The J has been shunned by most promoters because of bad acoustics and cost however the Noosa Surf Club is trying to fill a void by featuring local and Australian artists but it’s not suitable for anything major. I can only dream about the possibilities of a venue for national and international acts. What a magnet it would be for tourism. What about the de-amalgamation? Great news! I’m sure the new Council will return Noosa to a thriving mecca we all can enjoy plus market it internationally as the best place in the world to live and holiday. Oh and course with broad entertainment choices and pet friendly cafes! What’s life like away from the fast lane? Desiree and I bought a fixer-upper in Tinbeerwah on acreage and turned it into a plantation-style home where Crimson 19, who’s studying journalism at QUT and Ava 15, in year 11 at Sunshine Beach High, along with our mate the dog Scoota, can hang by the pool with the music pumping, have a killer barbecue plus be close enough to Noosa to enjoy everything it has to offer. Frankly though, if my girls are around me, I'm happy anywhere.
