Corks popped to celebrate 20 years… at Noosa Classy Lady

he day may have been sweltering when Noosa Classy Lady in Noosaville celebrated 20 years of business recently, but owner Lorraine Kenway took the opportunity to celebrate and cool things down a little, as she welcomed holidaymakers and locals into her beautiful boutique to enjoy a glass of champagne, as they wandered amongst the vast array of fabulous swimwear, resort wear and accessories.

he J was all abuzz recently, when local tourism stalwarts and media waited for NLWF President Johanne Wright to reveal the new name for the popular Noosa Long Weekend Festival. With the announcement of the new name - Noosa Alive! - the crowd beamed with enthusiasm. Australian star of stage and screen, Naomi Price was also announced as this year's Festival Ambassador. Founder and Patron of the Festival, David Williamson AO said; ‘Noosa Alive! is a terrific name it really does speak to what happens in town when the festival is on. I urge our community and visitors to get involved, to have fun and lend the support needed to ensure that Noosa alive! lives on for another sixteen years and beyond’.

W

hile Nicole Kidman has ventured behind white picket fences before – discovering things are not what they seem in The Stepford Wives and Bewitched – even vapid robotic brides and witchcraft pale in comparison to the sinister secrets being kept in the idyllic coastal community of Monterey, California, where her latest project – Big Little Lies – is set. “It’s very topical and it’s very funny, but it’s also hopefully very moving and disturbing,” says the 49year-old, raising an eyebrow. Based on fellow Australian Liane Moriarty’s best-seller, Big Little Lies lifts the veil on the seemingly perfect lives of a group of mothers – revealing love trysts, deceit and maybe even murder. The sensational HBO series (showing in the UK on Sky Atlantic) is co-produced by Kidman and long-time friend Reese Witherspoon, playing Celeste and Madeline respectively. But despite them both being big shots in Hollywood, it fell to Kidman and her Aussie connections to get the series made. “I had coffee with Liane and said,‘Let us option your book please, and I promise you we’ll get it made,’” Kidman reveals.“She said,‘Only if you and Reese play Celeste and Madeline,’ and I said, ‘Deal’!”

Complex, funny, yet dark and vicious, Big Little Lies – which also stars Laura Dern, Shailene Woodley and Zoë Kravitz – was an opportunity for Kidman and Witherspoon to create a series which has a huge breadth of female roles, covering different phases in their lives.“When I read the book I really related to all of the characters, and I’ve met many women who feel the same way,” she explains.“So we were excited


to show the lives of these women in a very authentic way, and yet also be entertaining.” Kidman herself has had several incarnations over the years: from young starlet to one half of a Hollywood power couple during her decade-long marriage to Tom Cruise, and now a veritable film icon, producer and serious actress. She is also a devoted mother, having adopted two children with Cruise – Isabella, 24 and Connor, 22 – and two biological daughters – Sunday, eight and Faith, five – with country musician husband Keith Urban.

Like many working mothers, the task of balancing a film career with a home life is not always straightforward; compromises often have to be made.“I don’t know how practical it is to live life by rule when you’re raising children, but they’ll come wherever I’m working,” she says. “It has to work for them – their lives, their routines and their wants are the priority. I can’t be ripping a five and an eight-year-old away from all that. It hasn’t been me for a long time. I can’t pick up and take a job because it appeals to me, because it’s what I want to do.” continues next page... NoosaStyleLiving

NS continues from previous pages wasn’t there for dinner. It takes up so much of your life, and this is where a balance between work and family can be impossible. You have to make a choice and it will always be them. They come first.” While frustrating, Kidman’s career/family conundrum highlights an enormous shift in the attitude of the film industry, whereby older actresses – the stunning star will turn 50 in June – are being offered more interesting and diverse roles. Part of this is thanks to women like Witherspoon and Kidman who have moved into production and are therefore helping to create the opportunities they crave. “I’ve been doing this since I was 14 – and 35 years working is quite a horrifying number to say out loud! But it’s also really gratifying and comforting too because I now have that deep well of emotion that only comes with life experiences and I can call on those memories that I didn’t have when I was in my twenties. Consequently, there are far more roles available to me now than when I was younger…” She pauses to ponder this before declaring: “My goal was always to become a character actor. I wasn’t educated at drama school with the goal of being, you know, a movie star.”

THE SECRETS OF SUBURBIA Tricky as it is for any working mum, Kidman does often find herself torn. Harbouring desires of doing more theatre work following her stint in DNA discovery drama Photograph 51 in London’s West End, her daughters had other ideas.“I loved that instantaneous reaction which you never have with film,” she says.“I wanted to do Photograph 51 on Broadway, but then I put the plan to my girls and they said, ‘Nope!’

Playing the part of Celeste, mother to twin boys and married to Perry (Alexander Skarsgård) – an abusive, jet-setting businessman – in Big Little Lies Kidman has taken on one of her most complex and emotionally fraught roles and admits that even she wasn’t prepared for how physically and psychologically demanding filming would be. “It was deeply disturbing playing her,” she observes. “It’s a complicated character and I definitely felt the weight of it... it’s a very volatile relationship. They inflict pain on each other and there is an enormous amount of danger. At the end of a day’s shooting I’d go home and sit in the bath and cry.” Ever the pro, Kidman confesses that she had no choice but to plunge into the role with total abandon despite the physical toll. For authenticity, the use of stunt actors was not an option; the volatile and frightening confrontations with Perry would leave her with marks all over her neck and body. “So many of the bruises you see on me aren’t fake,” she reveals.“I had to do a shower scene where you would see a lot of them and I asked them not to put make-up on me. It needed to be pretty raw and out there.” The hard work has paid off – not only is Kidman receiving high praise for her performance, her character’s complex and devastating relationship serves to reinforce the stability and joy she has at home.“Keith and I always say that we are just so lucky to have each other,” she smiles.“In this world, to be able to come back to that love and that strength is so nourishing and powerful.”

How important is it that we persevere to ensure more interesting female characters in cinema? There are five great roles here [for women. It’s very, very rare. I like working with women, but first of all I like to find the right stories. For years I've worked to support women in all fields. And I believe in sisterhood. I learned so much from having a feminist mother who in the sixties fought for our rights and has always been involved in social work; we are sisters in the world and we have to support each other.

Buskers must pre-register The Noosa Busking Championships are presented by the Rotary Club of Noosa Heads and the Noosa Come Together Festival. All profits will be distributed to local disability charities including the Noosa Yacht & Rowing Club's Sailability program.

The Pomona King of the Mountain Festival held in the Noosa hinterland town of Pomona is a funfilled event for the whole family, ending with the gruelling Bendigo Bank King of the Mountain Challenge where competitors from around the world run up the steep face of Mount Cooroora. The festival program includes other familyfriendly races, a 3km family fun run, heritage markets, antiques fair, tug o war, amusement rides, local cuisine and live music. Festivities begin early with the arrival of car clubs showing off their classic vehicles. The 4.2km main race at 2.30pm is a steep, almost vertical climb up the mountain and back. Entrants come from around Australia, New Zealand, the Pacific Rim and the UK to compete. Celebrations continue afterwards and into the evening with live music and free entertainment. There's also the inaugural Prince & Princess race on Saturday 22 July for children aged 9-13, with prizes up for grabs and the opportunity to present the main race winner with their trophy on the Sunday. The festival is a project of The Cooroy & Pomona Lion’s Club.

Inspired DESIGN THINGS THAT MAKE YOU HAPPY

Earth, Wind and Sea… Growing up on the remote Abrolhos Islands off the coast of Western Australia, has been instrumental in Pia Boschetti’s life. This solitary region of earth, wind and sea has created her heart and soul...and a love of all things beautiful and pure.

P

ia has been visiting these islands her whole life, as her father was a Rock Lobster fisherman, so it was inevitable for Pia to pursue a career on the ocean. From initially working on Lobster boats, Tuna fishing, and working in the international Luxury Motor Yacht industry, and later developing the family Pearl Farm. All this time spent at sea enabled Pia to earn her skippers tickets, which she often jokes are higher than her husband's credentials. She was baptised, married her husband in the island church, and more recently her daughter has been able to enjoy the island life too. Most people recognise the Abrolhos Islands from the famous shipwreck 'The Batavia' from 1629, which Pia believe’s is a huge part of Australia’s history often left untold. More local people recognise these islands as a haven for catching fresh fish, lobsters and now one of the few places in Australia to grow Australian Black Pearls. Having recently purchased another pearl farm site, which is easier to access because of the airstrip on the island she calls home - it is now possible to make quicker visits to check on the progress at her pearl farms. There is also talk of tourism possibilities at these islands because for

now - only fishermen, pearlers and their friends are only allowed to stay overnight on these islands. As a hands-on Pearl Farm manager, Pia oversees all the operations, skippers the boats, whilst also managing the designing and marketing of her uniquely created jewellery. Pia maintains three jewellery galleries, the main gallery in Geraldton Western Australia, and two in Queensland, one in Hastings Street, Noosa Heads, and one in the main street of Montville in the Sunshine Coast Hinterland. She focuses on Australian grown, designed and Australian made pieces to showcase to the world. By designing her own pieces of jewellery, as well as including designs of other Australian jewellery artists, she is able to satisfy a market demand for high-end pieces. She initially started the jewellery galleries to exhibit her own beautiful pearls garnered from her family pearl farm, now this has evolved into featuring all gems from land and sea, including diamonds, opals, and pearls. This years newest collections feature Dream Catchers, Mermaids, and inspirations of Morocco. Pia is often referred to as 'the girl who grows the pearls' but she is also the guiding hand behind the success of Latitude Gallery.

Fast forward seven years and Poeta has morphed into a new space reflecting the ever changing times and tastes and experience of the creative owners Belinda Herford and Gordon Herford, Belinda’s many creative skills are on show for all to admire, whether it be fine art painting, furniture design or interior design. With the upcoming art exhibition “Under the Radar”, a thriving Pink Argyle diamond market and the recent stunning interior and brand revamp, Poeta is more beautiful than ever. We posed a few questions to find out more from this enigmatic couple. Your business partnership? B Our main business philosophy is ‘exchange in abundance’ - we like to make our clients feel important because they are. Gordon and I are best friends, have very

similar tastes and talk about everything. The fact that I work from my studio and Gordon creates his pieces at Poeta means that we work alone but we are true partners and its great working in the field of aesthetics with someone you love. G Without Belinda’s intellect, direction and drive there would be no Poeta and my continued growth as a designer may have stalled long ago. She is my muse. Other design genres? B I designed our current house in Noosa Heads and a thatched roof house in Coolum Beach with Gordon as well as renovations on several personal projects. I’ve just completed the new Poeta interior design, I collaborate on jewellery collections for Poeta and I won the Australian Gown of the Year Award back in 1986. G Architecture and landscape design has always interested me and I am fortunate to have a partner in Belinda with whom I collaborate on the projects. The difference in scale to jewellery is such a blast. Concepts on design? B I design for ambience and functionality - if a space feels good and looks good and functions well then it is good design to me. Creating beauty in an environment by way of installations and vignettes of creativity is definitely where I fell most comfortable. I like to incorporate ancient cultural artefacts and antique rugs with more modern pieces to create this; there’s a calm luxury about it that we both enjoy. continues next page....

Belinda Herford and Gordon Herford G Because a major part of my work at Poeta is commission-based, the clients’ personality and taste drives my conceptual direction to adorn the individual. Favourite pieces? Most proud achievements? That's easy, my beautiful wife's 3ct uncut cognac Argyle diamond set in 22ct yellow gold with Latin inscription engagement ring and "Fleur de Lumiere" winner of the Diamond Guild of Australia pink Argyle diamond award for design. What do you admire in each others work? B Gordon is an amazing sculptor, the majority of his pieces are done in the Lost Wax Method of the ancient Egyptians, a 2000 year old technique, or he builds the piece from metal by hand. I love his detailed workmanship and his desire to create the most beautiful individual pieces for his clients. He is world class and its a bonus that he’s a nice guy. G Painting would have to be one of the most difficult pursuits in the art world. I have always analogised it to walking nude down Pitt Street mall. Her bravery is only eclipsed by her spiritually touching brilliant works. What prompted the new look Poeta? We opened Poeta (latin for ‘the poet’) just over 5 years ago to showcase both the jewellery and the paintings; a perfect collaboration. It’s good to have a change and we now have an elegant modern museum style environment that reflects who we are as artists and is also welcoming for our clients.

Recently appointed FAN Ambassadors, that friendship has become an on-going collaboration to showcase, suppor t and create a greater awareness of Sunshine Coast and Gympie region’s food and beverage producers.

hile Martin and Petra both operate independent food related businesses, over the years there have been many synergies that have seen them come together as FAN ambassadors. Martin and Petra met a number of years ago. Petra had just developed Local Harvest an online directory, and Martin was hosting networking events through his Qld FBI network as an extension of his Freestyle dessert restaurants and Freestyle Escape Cooking School which became the venue for many Queensland Food and Beverage Industry (FBI) producer showcases. The showcases were a sensational combination of food and foodies capturing the essence of all the Sunshine Coast had to offer. Both were busy trying to connect food producers with consumers, chefs, restaurateurs and media, so a collaboration made sense and was a natural progression. They were both focussed on promoting the region and its producers, and both had a wicked sense of humour, so a great friendship was inevitable.

Together Martin and Petra have a lot of fun. They bounce off each other, both having the best interests of the producers they represent at heart. “Martin usually creates the party – it is what he is great at. Between the two of us, we flush out all of the producers, chefs and foodies, and then I make sure I am there to take photos, tell the stories, and of course eat the food… and then rave about how great it is – and local! We are both constantly encouraging everyone to SUPPORT LOCAL! The unstoppable pair have both also been involved with FAN – Food and Agribusiness Network, a Sunshine Coast based not-for-profit industry network, since its early inception and have recently been appointed FAN Ambassadors for the region. FAN was created as a business network that connects the value chain from production to consumption, and is collaborating with food and agribusinesses to create a more prosperous food and agribusiness economy - that celebrates the provenance and innovation of the greater Sunshine Coast, both locally and globally. The group has facilitated a number of great events and workshops and Martin and Petra are looking forward to some of the great initiatives that FAN is supporting, as well as seeing its membership and knowledge base grow, and they encourage anyone in food and its related industries to get involved. Considering Martin’s (AKA Sunshine Coast Foodie) has been cooking up a storm in his mother’s kitchen since the age of 7, it came as no surprise that he would choose a career with food, becoming a chef and later establishing Brisbane’s iconic Freestyle dessert restaurants, as well as the Sunshine Coast’s luxury Freestyle Escape and Cooking School.

These days, the journey continues with Martin actively involved with Mary Valley Country Harvest, Country Noosa and Gympie Gold Regional Produce, and if you have ever been to one of the paddock to plate lunches, or networking events that Martin has helped coordinate, you will understand that promoting our regional producers is something Martin loves! Petra also began her food journey at a young age, growing up on a farm. After a period of ‘disconnection’ Petra embarked on a journey to reconnect and discover what produce was grown on the Sunshine Coast. She wrote a number of food related books in an effort to showcase some of the fabulous producers, which ultimately led to her developing Local Harvest – The Sunshine Coast Regional Food Directory (www.sunshinecoastregionalfood.com.au). Twelve years on, it has become the Sunshine Coast’s leading directory for sourcing food and food related services – farm visits, cooking classes, boxed delivery services, meat producers, as well as every fruit and vegetable grown on the wider Sunshine Coast, and value-added products derived there from. The directory has over 300 producers listed, with more being added every day. It is a treasure trove for foodies, consumers and chefs, allowing them to source food directly from the producers or from the various retail outlets and markets on the Sunshine Coast and has proved an invaluable tool. As a photographer and writer, Petra also photographs and writes about many of the producers she visits on her blog Pebbles and Pomegranate Seeds (www.pebblesandpomegranateseeds.com.au).

The Marriage of Figaro Opera Australia’s critically acclaimed production of Mozart’s The Marriage of Figaro is coming to Noosa with a full scale touring production. Tickets going on sale early! – March 28, 2017. This much-loved opera will retain the music and storyline of Mozart’s original: however, it will be performed in English with a Chamber Orchestra designed to entertain audiences of all ages. Not only will our Noosa audience have the opportunity to enjoy the performance of this crowd pleasing production, but our talented young local songbirds from Sunshine Beach High School will also have the chance to perform in the actual show. Continuing on from the success of the 2014 tour of The Magic Flute, Opera Australia has continued its community engagement program and will provide 24 of our local students the opportunity to be trained and to perform with the national company. These lucky students will learn to sing songs from The Marriage of Figaro score in advance of the opera arriving in Noosa. Then they will rehearse with the professional cast, made up of some of Opera Australia’s finest singers, and join them on stage in an integral part of the performance. The cast of The Marriage of Figaro is impressive with multiple principal artists from Opera Australia, plus a live touring Chamber Orchestra under the baton of Maestro Simon Kenway. The local children’s chorus will be under the direction of Opera Australia’s Regional Children’s Chorus Master Joshua van Konkelenberg and their local choir leader, Vivienne Ellis of Sunshine Beach High School.

Studio Pilates is performed on specialised equipment providing either resistance or assistance for a wide variety of exercises. A programme will be developed for you by a physiotherapist to ensure your specific needs and fitness goals are met. There is a maximum of 4 clients per class, allowing close supervision by either a physiotherapist or certified pilates instructor. This means that Studio Pilates is ideal for those with any issues such as back or neck pain, or requiring rehabilitation from an injury. On the other hand, even Olympic athletes can have an intense, challenging workout because of the adaptability of the equipment, and most incorporate Studio Pilates in their fitness regime. Mat Pilates are floor classes for up to 10 people, (similar to yoga classes) using small apparatus such as resistance bands, foam rollers, fitballs, or even just your bodyweight to add challenge to the exercises. Because of the size of the classes, there is less adaptability possible for specific issues. Mat-work can be equally as challenging as Studio work and sometimes, even more so - especially in the advanced classes. We even offer a combined yoga/pilates class to bring further variety to your fitness regime. Petite dressing for Autumn There’s a fine line between hobo-chic and woman-under-a-blanket going about her daily routine. For many women of average build striking up the right ratio of fabric to body proportions is much easier – but if you’re petite, winter probably feels a little frumpy to you but today I’m going to try and make the task easier.

N

ow, knowing what I know about dressing petite women, I can say that getting it right only really comes down to a few different things - but the main two things to keep in mind is fit and proportions. As a smaller woman your mid-section and your legs often start and end at different places to the average sized woman. Your dress waists sometimes sit a little too low, your pants a bit long and not very fitted in the leg, your jackets a bit boxy – and while you may feel that this is what’s available in majority of stores, it’s not. In Australia we’re increasing our retailers to suit different demographics - and in city areas, we have a fabulous array of brands that cater to women who are smaller due to the large Asian population. Stores like Marcs, Forever New & Ted Baker are all great contenders for everyday, smart casual and cocktail clothing, and that’s not all. Department stores stock brands in their own petite sections, and brands are manufacturing different fits as they’ve come to terms with the fact that we’re not all the same up and down model shape. So here are some fabulous tips Fashion Stylist, Alarna Hope would like to pass on to clients struggling to get their style in order for Winter when they’re of a petite build: 1.Go Above The Knee: Keeping dresses, coats and longer jackets above the knee will make you look taller and will keep attention on the upper half of your body. 2. Work Those Legs: Using high-waisted pants and skirts will elongate your legs, while wearing the same colour shoe as your bottom half (nude for bare legs or black for black pants) will add some extra inches you didn’t know you had! 3. Waist Placement: It’s likely that the waist of most dresses and jackets aren’t quite as ideal and effortless looking as you’d like them to be. To fix this, have your tailor move the waist button on your jackets up higher and have the waist of your dresses lifted to create a more proportional shape. 4. Sleeve & Pant Length: Sleeve and pant length play a huge part in flattering your shape. Have your jacket sleeves altered to the crease between your wrist and your hand and your slim leg pants altered to the top of your ankle.

Noosa Food & Wine 2017 Noosa Food & Wine Festival 2017 has answered every food and wine lovers’ dream with an exciting program of events, which is on sale now. 70 events will take place across the four-day event, running from 18th until 21st May. A total of 45 visiting chefs from Australia’s best restaurants will flock to this year’s festival, which will have a presence across two festival villages – Noosa Main Beach and The Woods. Noosa’s top restaurants will also enjoy local collaborations as they play host to a number of visiting chefs.

ith more than 50 wineries and 100 food producers taking part in this year’s festival, there's something to suit every tastebud and budget Festival Director, Maria Crews, says this year’s festival is shaping up to be the best one yet. “We are thrilled to announce our jam-packed program of events for this year’s festival, which showcases the breadth and depth of Australia’s best chefs, winemakers and producers. The festival is a mixture of fun, relaxation and pure enjoyment as well as good food and wine – all in one iconic destination, Noosa. “Visitors will be spoilt for choice with each event we have on offer – there is something for everyone, every tastebud will be tantalised!” A handful of signature events will be hosted across the four-day event, each one offering something completely different and special, for the ultimate food and wine experience. Dinner will be elegantly matched with wines from the Sound of White Vineyard in Marlborough, New Zealand. All-time favourite, Noosa’s iconic Hasting Street will become a bustling lunch-lover’s dream. Visitors can dine on food from all of the restaurants at the famous Hastings Street Long lunch, with matching wines. For a truly exclusive experience, make memories at Make Peace with Wine. A private island off the coast of Noosa, Makepeace Island is Richard Branson’s haven in Australia. Presented by The Drinks List and hosted by Matt Skinner, guests will be introduced to the world of wine and shown that everyone can enjoy drinking wine. Complemented with food by Matt Stone and Jo Barrett from Oakridge Estate Winery, this will be culinary paradise. Ingredients 16 baby beetroot (beets), scrubbed 4 × 200 g (7 oz) blue-eye trevalla fillets, skin on, pin-boned 4 small, all-purpose potatoes (such as desiree), peeled and sliced as thinly as possible (preferably with a mandoline) 100 ml (3½ fl oz) ghee (see note page 26) 80 g (2¾ oz/⅓ cup) ricotta 2 cm (¾ in) piece fresh horseradish sea salt, to taste 2 tablespoons lemon oil, to serve Method: Preheat the oven to 200°C (400°F). Bring a medium saucepan of salted water to the boil over high heat. Add the beetroot and return to the boil. Reduce the heat to medium and simmer for 30–40 minutes, until the beetroot are just cooked through. Remove from the heat and drain. Peel the beetroot when comfortable to handle, but still hot, discarding the skins, then set the beetroot aside in a warm place. Place the trevalla fillets on a baking tray, skin

side down. Arrange the potato slices on top of each fillet in slightly overlapping layers, to resemble fish scales (see page 437). Turn the fish over, holding the potatoes in place, and press down gently to ensure the ‘scales’ stick. Trim around each fillet to remove any excess potato. Heat a large heavy-based, ovenproof frying pan over medium–high heat until a haze appears. Add the ghee. Gently add the fillets, potato side down, and fry until the potato is lightly golden. Transfer the pan to the oven and cook for a further 4 minutes. Remove the pan from the oven and gently remove the skin from each fillet. Turn the fillets over to sear quickly in the still-hot pan, then leave to rest for 1 minute before serving. (Cooking times may vary depending on the size of the fish from which the fillets were cut; for more information, see page 437.) Serve the fish, potato scales up, with the beetroot on the side. Top the beetroot with a scoop of ricotta then, using a microplane or fine grater, grate fresh horseradish over the ricotta and fish. Season with salt and finish with a splash of lemon oil.

his a one of the easiest dessert recipes and it takes no more time to multiply the recipe to feed a large party. Any seasonal fruits can be used. In winter, when mangoes are out of season, use strawberries. A shot or two of Malibu, Cointreau or other liquor is also a decadent addition to the fruit salad. PANNA COTTA 50 ml (1 fl oz) water 100 g (31⁄2 oz) sugar 11⁄2 gelatine leaves titanium strength or 31⁄2 leaves gold strength 100 ml (31⁄2 fl oz) coconut cream 200 ml (7 fl oz) mango purée 200 ml (7 fl oz) pure cream · Bring the water and sugar to the boil then

remove from heat. · Soften the gelatin sheets in cold tap water then squeeze out excess water before stirring into the warm sugar syrup. Cool to room temperature. · Place the sugar syrup and coconut cream in a large bowl and mix together. Stir through the mango purée. · Whip the cream to soft peaks and carefully fold through the mango mix. · Divide the panna cotta mix between 6 glasses and refrigerate for a minimum of 4 hours to set. THE SALAD 2 mangoes, peeled and cut into 2 cm (1 in) dice-sized pieces 3 passionfruit 1 tablespoon caster (superfine) sugar · Combine mangoes, passionfruit pulp and sugar in a bowl and stir to dissolve the

Leaf gelatine gives a smooth silken texture with no flavour, and is so superior to powdered gelatine which should be avoided at all costs. Leaf gelatine is available at good supermarkets and can be purchased from food outlets online.

he recipes are easy to manage and require too long in the kitchen or at the barbecue. They will just require a quick trip to your local seafood merchant and local farmers market to pick up the necessary goodies, and you'll be the toast of the table. And, don't forget to check our wine feature for the perfect bottle of wine.

SALMON PÂTÉ Serves 4 as an entrée Ingredients 125 ml (4 fl oz/½ cup) melted duck fat, or extra virgin olive oil 400 g (14 oz) salmon scraps (belly, tails, etc.), skin removed, pin-boned (see note)

2 thyme sprigs 1 garlic clove, peeled and finely chopped pinch each of sea salt and freshly ground black pepper ½ lemon sliced baguette, to serve cornichons, to serve capers, to serve Method Heat the duck fat in a small, deep frying pan over medium heat to 69°C (156°F), measuring the temperature using a thermometer. Add the salmon scraps, thyme sprigs and garlic to the warm fat. Remove the pan from the heat, cover tightly with foil and leave

to cool to room temperature. Once cooled completely, remove the salmon from the fat and transfer to a bowl. Using two forks, break the salmon apart, adding a little of the duck fat, as necessary, to keep the fish moist. Add the salt and pepper and a squeeze of lemon juice to taste. Serve the pâté with plain or toasted sliced baguette, cornichons and capers. Notes: Salmon pâté also makes a delicious canapé for a dinner party or cocktail soirée. This dish is a clever way to use left-over scraps of salmon. It can also be made with salmon fillet, cut into thin strips, or a mixture of fillet and other pieces.

A

utumn traditionally is about the dying off of leaves, the slowing of the ‘sap flow’ and the preparation for winter. For me, this is perhaps the best time of the year in Noosa. Sort of like a summer hangover, when you can still swim, walk, ride and continue to do lots of physical activity.

During this time, nutritional intake remains important and, apart from tapping into what’s available with the arrival of autumn, it’s a time to become fully aware of the need to eat food which supports your immune system. Pears, pineapple, pomegranate and plums, apples, avocados and bananas in the fruit section are so wonderful for the body at this time of year as are broccoli, cabbage, carrot and beetroot along with beans, artichoke, radish and corn. Essentially a good combination of root and ‘sun-driven’ vegetables is great at this time of the year. Removing inflammatory foods from my daily intake was the key for me. I am seeing so many people now who no longer need to eat animal products and instead have switched their protein sourcing to fully plant-based. All vegetables and fruit contain proteins to a major or minor degree. The wonderful upside of living a plant based lifestyle is it remains so much easier on my body – no aches or pains, no inflammation or acidity in the body – the latter being conducive to the presence of unwanted ‘bad bacteria’ – fungus and parasites. Here’s an interesting fact. Right now more than 30% of the lovely people I see in my line of work present with parasites, simply because their digestive metabolism is running so slow or, in some cases, not at all. The body becomes a breeding ground for a range of nefarious protein based alien life forms, becoming sluggish and tired as these critters deplete the body of not just nutrients, but also lots of energy as well.

It's Persimmon time again‌ Persimmon, rocket, blue cheese & candied walnut salad

T

his delicious and often overlooked fruit is a natural whole food, meaning they come in their natural state, giving us more nutrients than packaged or processed foods. Commonly eaten in China, Korea, Japan and Vietnam they are increasing in popularity each year in Australia, as we find new ways to serve them. Their nutrient benefits and delicious taste are perfect for both sweet and savoury dishes. The easiest way to eat them is like an apple - either whole or cut into quarters or slices, and as they contain 55% of our vitamin A and 80% of your vitamin C requirements, they are great at keeping our immune system strong to ward off colds during Autumn and Winter.

and fragrant. Using a small saucepan, combine sugar and water, stir with a metal spoon and boil. When you see the liquid begin to turn golden brown (be attentive), in just moments it will turn prefect amber. Immediately toss nuts into the toffee and fold through quickly. Work quickly. Pour out onto baking paper and gently separate nuts. Set aside. combine all salad ingredients in a large bowl. Make dressing by combining all dressing ingredients in a clean glass jar. Shake then pour over salad. Salad is best served in a shallow bowl or plate.

While there is always an abundance of fresh farm produce at the Noosa Farmers Market, sometimes it’s nice to go directly to the source, or have the source come to us – even if that means enjoying it on our plate at one of the many fabulous Noosa dining establishments.

T

he first one to get excited about is bamboo. Rebecca Nary-Dart of Big Heart Bamboo is growing bamboo shoots for Sunshine Coast restaurants that have never previously had the luxury of being able to source this ingredient locally. Grown at Belli Park, some lucky visitors also have the opportunity of stopping in at these magical groves via Noosa Hinterland Tours as part of one of their wonderful food tours. Wandering amongst the serenity of the bamboo is something you would normally expect to do in Asia, but now you can do it right here on the Sunshine Coast. Don’t have time for a tour… visit Noosa’s iconic Wasabi Restaurant and Bar, and Zeb Gilbert will serve some up in one of their exquisite dishes, just one of the restaurants utilising this fabulous fresh locally grown ingredient. Another producer that excites me is Wild Forage Australia, who I guess, is more of a forager than a producer, delivering some fabulous foraged ingredients to Noosa restaurants in the way of seaweed, sea succulents, native berries, wild herbs and other fabulous wild sourced goodies. These are abundant ingredients that most of us overlook, but Nick Blake is passionate about sourcing these wild foods and inspiring chefs throughout the Sunshine Coast. You will find these on restaurant menus in and around Noosa, and I am sure you will stumble upon them in the wild and possibly never know! Another great show of innovation is the recent emergence of two camel dairies; QCamel, near Beerwah, and Camelot Dairies, near Gympie. While camel milk is reasonably new to the Sunshine Coast, it has been in use since the beginning of time in the Middle East and many sing the praises of it nutritional merits. However, what is truly special, is being able to visit a camel dairy, which you now have the opportunity to do through Live It Tours’ specialist Camel Cuddles Tour, where you can get up close and personal with the

camels. And trust me, these gorgeous creatures really love their cuddles. Curious about camel milk? Visit The Bohemian Bungalow in Eumundi, and try their camel milk panna cotta – it is sensational! Gourmet Garnishes is another great specialist producer, growing a stunning array of edible flowers for the hospitality industry. Grown in Tinbeerwah, by Monique and Keith Roberts, restaurants have the joy of selecting from myriad blossom that are prettying up desserts and decadent dishes around Noosa. An interesting ingredient that has been getting quite a bit of attention of late is that of black garlic. Black garlic is essentially a cured garlic. The garlic itself is grown locally by Luke Stacey of Naturaleza Farm from the same seed stock that his grandmother used to grow her garlic from, making this a true heirloom garlic. Once harvested, Luke selects a batch to cure over a number of weeks, producing a rich

black, almost caramelised garlic which is sensational in dishes. Not quite as pungent as garlic in its raw form, it boasts additional nutritional properties and is claimed to be especially high in antioxidants. Something that you are going to start seeing in the future on menus around Noosa is the addition of Rhodavale Pork. Rhodavale Pork farms pasture raised, free-range pigs at their Lower Wonga property, and with the recent addition of their onsite processing facility, they now are able to offer their pastured pork to restaurants and consumers via their “Pop Up Piggy Shop”. Just email them an order, and meet them at their designated pick up point – or enjoy their succulent pork at one of the many restaurants that are sharing the love. There is nothing quite like ethically produced pork, and it is more than just the flavour. And finally, if you would like to go on a little adventure, The Falls Farm, just out of Mapleton, has what would have to be the cutest farm gate on the Sunshine Coast. Growing a variety of specialist heirloom vegetables, they are available at the farm gate on their Mapleton Falls Road farm gate. While you can visit during the week, there is a greater selection, including a signature range of preserves and condiments, available on Saturday mornings. Or, again, join Noosa Hinterland Tours on one of

their guided tours and visit the actual working farm. There are lots of great ways to experience locally produced food, whether it is direct from the producer, or from one of the many wonderful dining establishments in Noosa that support local. Australia's Champagne Imports Australia’s love affair with Champagne continues, popping the second largest number of bottles in history in 2016, according to an announcement made by the Comité Champagne at Prowein in Germany recently.

A

ustralia holds its position as the seventh largest champagne market on earth and fifth largest per head of population, with 7.4 million bottles landing in 2016, narrowly missing its all-time record of 8.1 million in 2015. These figures reveal the first drop in Australia’s champagne consumption since the aftermath of the global financial crisis in 2009. “Australia’s 2016 champagne sales could hardly be considered as a decline,” says Tyson Stelzer, author of The Champagne Guide and host of the Taste Champagne event series. “An exceptional sales record in 2015 was an anomaly, and 2016 figures perfectly fit Australia’s buoyant growth curve, popping an average of 600,000 more bottles every year since 2009.” These results confirm the recent trend of Australian drinkers turning away from beer and cheap sparkling wine in favour of more premium cuvées from the Champagne region in France. Champagne sold 306.1 million bottles globally in 2016, marginally less than its post-GFC record of 312.5 million bottles in 2015. The biggest growth

markets for champagne in 2016 were Mexico (up 31%), New Zealand (29%), Russia (22%), South Africa (22%), South Korea (16%) and Canada (12%). Despite this small decline in volume of sales, the average value per bottle of champagne sold globally in 2016 rose by 1.5%. “The diversification of cuvées is continuing in 2016: 8.6% more bottles of Champagne Rosé have been shipped than in the previous year, and prestige cuvées show an increase of 4.6%,” said Comité Champagne Communications Director Thibaut Le Mailloux. “Champagne consumers turn to ever rarer and more prestigious cuvées.” Australia missed this trend toward increased value in 2016, maintaining the same average bottle price as 2015, 7% lower than the average over the past 15 years. “Of Champagne’s top ten markets, Australia ranks lowest in proportion of Rosé consumed, lowest in grower Champagne and second-lowest in prestige Champagne,” reveals Stelzer. “Our per bottle spend remains one of the lowest in the world.” Tyson Stelzer will host Taste Champagne, Australia’s biggest champagne event series, to showcase the diversity of more than 160 cuvées from more than 50 champagne houses in Sydney, Canberra, Brisbane, Perth and Melbourne in August 2017.

Hastings Street has always been for the astute investor or the wealthy elite. Buying on the beach will start at 1.3 million and goes up to the 9 million range. The top end is tightly held and rarely comes onto the market but mid-range opportunities do exist especially on the western side of the street in the $600,000 range for a 1 bed unit. Buying into Hastings Street is more about owning your part of the strip to use when you are on holidays. It is one of the tourism capitals of Australia and owning real estate here is a privilege few people get to experience. Noosa Sound was once the swamp no one wanted but is now the postcard everyone wants to send home. Here you will find units, duplexes and luxurious homes on the Noosa river front. This area commands a price and it is justified considering the location and outlook that most of these properties portray. Cooroy, Pomona, Cooran and Kin Kin is where the ocean lifestyle is within reach and you make the adjustment into the country way. It is hard to believe but the hinterland towns are only 15 minutes to just over half an hour from Noosa Heads. The towns are self-sufficient and display an individual character of their own. Average house prices are in the $500,000 range but for substance you can buy a large home with a pool, bore, and everything you expect in a modern home for around $820,000. If you are looking to move to Noosa Shire and want to get guaranteed bang for your buck there areas have it. These days however, more and more Australians are looking to maximise their outdoor space for cooking, dining and entertaining – paving the way for an increase in the popularity of outdoor kitchens. The same way that you have a kitchen area, dining area, casual lounge area and a playroom indoors, you can create equivalent areas outdoors that serve the same purposes and help you unlock the potential of your space."

Look beyond the BBQ You can do much more outside food-wise than simply cooking on a barbecue. An outdoor kitchen can have cupboards, a fridge, sink and more – or it could be as simple as some cupboard space and a barbecue with a nice servery. If you wanted to do a bit more, you could look at installing a breakfast bar with some stools around it to make it more social and to create a casual space for breakfast, a cup of tea or reading the paper. Add to that a more formal dining area with seating and lounge space and you have the makings of the perfect outdoor living and entertaining space. It depends on the size and layout of your outdoor space. If you’ve got a small courtyard, then you might consider an outdoor kitchen and bench top with stools for dining, so you don’t have to clog up the space with a dining table as well as a servery. If you have a bigger space, you could have a full blown kitchen with a sink, fridge, wok burner, dishwasher and cupboard space.

’Keeffe, Preston, Cossington Smith: Making Modernism at the Queensland Art Gallery, celebrates the iconic works of American artist Georgia O'Keeffe (1887-1986) and pioneering Australian artists Margaret Preston (1875-1963) and Grace Cossington Smith (1892–1984). When I first entered the art trade at the beginning of the seventies‌ one of the Gods of the Australian art scene had just died‌ Sir William Dobell (1899 - 1970).

H

is small Foundation via Sotherby's launched a major sale of his work at the Sydney Opera House, the year of 1973, and monies were raised to benefit the work to be carried out under the terms of his Will. The sale also took interest in Dobell to a new peak. Dobell was born in Newcastle, New South Wales, and studied in 1925 at Julian Ashtons Sydney Art School. As a gay man, he moved to the more liberal London in 1929 , and enrolled at the Slade School under Wilson Steer and Henry Tonks. In 1931 he and a friend travelled to Belgium and Paris. The painting illustrated below of Pont Neuf in Paris and dated 1931, is the only known work of Dobell of Paris. On arrival in Paris, Dobell had a bad cold, a leaky apartment, and it didn't stop raining for the two months they were in there.

Dobell's biographers write that he was possibly the only artist to detest Paris! Dobell's light feathery stumbling of paint is stylistically a one-off in Australian art. His portraits and figure studies such as Margaret Olley, Helena Rubinstein and the Cypriot in the Qag, propel him into the top five Australian Portraitists. Bob King on a Terrace (Wanyi Wangi 1962) the oil illustrated here in black and white, was secured by me from a Brisbane collection in the 1980s, and now resides in the South. It is classic Dobell. A Pencil Drawing (illustrated) of Dobell's friend, the aforementioned Bob King asleep in Dobell's Wangi Wangi home, is currently hanging in The Gallery, in Noosa Junction. A tour de force in pencil. t's been 40 years since 70s super pop group ABBA first toured Down Under. In March, 1977 they toured every capital city in Australia - but Brisbane missed out. But now, thanks to an innovative new tour designed by historian Mat McLachlan, travellers can visit key sites from this pivotal WWII campaign without the blisters and bruises of a Kokoda trek.

he Kokoda 75th Anniversary Tour -- Without Trekking, is a unique opportunity to visit the hallowed ground of the Kokoda Track with ease and in comfort without the need to pull on the hiking boots. This is the perfect opportunity to pay your respects to the 2000 Australians who were killed or wounded in this bloody campaign, and to walk in the footsteps of a relative who fought in one of the most famous Australian battles of all time. Beginning in Port Moresby, the tour visits key WWII sites by airconditioned vehicle, including Bomana War Cemetery, the largest Australian military cemetery in the world, and Ower's Corner, which marks the beginning of the Kokoda Track. From there the tour will fly by chartered plane to the village of Kokoda, enjoying magnificent views of the Kokoda Track en-route. At Kokoda the group will explore the scenes of some of the toughest fights of the Kokoda Campaign, and commemorate the 75th anniversary of the recapture of Kokoda by Australian troops with a flag-raising ceremony. My spare time will be spent setting up my incredible show.. takes 5 hours to load in the theatre because it contains the most amazing special effects, sets, lighting, robotics, and first class theatrical production.
