It’s full steam ahead for David Rayner and Belinda Frew and their latest venture Thomas Corner after returning from St Tropez having shared in the 40th birthday festivities for celebrity chef Luke Mangan. At the champagne and rosefueled Club 55 lunch, guests from around the world including London, Tokyo, Melbourne, Sydney, Rome and of course Noosa. Seaside rendezvous Marvelling wide-eyed at the rich aquarium of sea life writes Helen Flanagan, has always been one of Pauline Daniels favourite pastimes. rowing up in Hong Kong proved to be magical childhood for Pauline Daniel and her sister, whose father had taken a Government posting there as a young man and met their mother on a golf course in Australia, immediately recognising her fine swing. During holidays from boarding school in Brisbane, the girls either returned to Hong Kong or went to Noosa where they roamed free. The National Park and beaches were their playgrounds and Mum and Dad never saw them until dinner time. “The connection with Noosa Heads began in the mid fifties when my parents purchased a block of land in Little Cove from Max Walker, one of the very few property agents at the time,” recollects Pauline.“The beach house was constructed some ten years later and we spent many holidays there. Much later my partner Tim Kenway and I lived in that very house until just a few years ago. My fascination with the sea and its rich bounty was further fuelled by snorkelling the outer bays of Noosa National Park and marvelling at the rich aquarium. “I’ve always collected tiny shells, the ones most people hardly notice and probably walk over on the beach. If you spend the time looking closely at the intricate shapes and patterns, they are even more fascinating than the bigger shells.” When Tim and Pauline purchased the Big Shell in 2002 it consolidated their mutual love of the sea. The shop, with its five metre high shell in the shape of an Australian bailer at the front entrance, was established by the Anderson family over forty years ago in conjunction with trips to the North Shore so people could marvel at the coloured sands. “We still have plates of these sands set in glass that has remained intact for four or five decades plus imagine the other weird and wonderful objects that have found their way through the door,” says Tim in an almost flippant shell-shocked way. “Yes, when we stepped through the shell and into the store it certainly came with a big whoosh. “The store has changed quite dramatically over the eight years and we have taken a certain amount of pride in its transformation from a decidedly tired tourist attraction to today’s bright and colourful gallery. We are always searching for different items and have a steady and loyal following of customers who know that they are likely to discover that special piece for their beach house or indeed the city house that transports them to the beach. We have shell suppliers from the four corners of the globe providing us with an exquisite array. In keeping with the nautical flavour we also have vintage surfboards, fishing creels and reels, oars from local Noosa river boats now out of commission, historical photos of Noosa, in fact anything with a connection to the sea. One of the black and white images is a snapshot taken at the intersection where the Surf Club now stands showing a holiday couple in an embrace while in the background a cow strolls across the road in the direction of what is now the New Zealand ice cream parlour. The store is constantly evolving, in fact sometimes I think it has a distinct

energy of its own.” Tim and Pauline fossick along the beaches and waterways around Tin Can Bay and the Great Sandy Straits for driftwood and sea glass; rummage in the secondhand and shops around Gympie; and some Alvey bakelite fishing reels from the 50s and 60s, were found in Crescent Head where Tim had been surfing. These were mighty additions to the eclectic mix of nautical paraphernalia. Driftwood was a priority for an artist from the Gold Coast says Tim:“Gleefully clasping a couple of crisp fifty dollar notes and making her selection, I could not help thinking how much I could stockpile. Mind you it doesn’t happen every day. “We’ve had much television coverage over the years, the most memorable was the visit from Magda Szubanski of Kath and Kim fame when she did her Magda Big Things tour. We were unaware she was coming until a wagon train of TV folk circled The Shell and she emerged from one of the vehicles.” Having access to such a wide variety of shells has fired up Pauline’s creative juices and inspired her to make fun shell jewellery and some truly spectacular shell mirrors and frames that now grace many beach houses. Felt is the textile of choice for designing creations such as flowers and headpieces. Pauline holds classes for button jewellery and she sells her quirky aptly named Bottletop range featuring vintage Japanese papers, chunky bead and buttons through her website. “Pauline and I started a complete makeover of our 1970’s style home in Tewantin a few years ago and it remains a work in progress to this very day,” Tim explains referring to the spotted the old hardiplank and cement tile roof house - with headroom for a hobbit underneath. “The corner, facing-north position and a wonderful fifty year old Bowen mango were a bonus, although it was a daily battle last season to get to the delicious fruit before the bats, possums and lorikeets. After a few false starts on the planning board the decision was made to completely strip the house back to the bare bones of solid hardwood frame and a fantastic full brushbox timber floor is ripe and ready for a new lease of life. We raised the house a further metre, ripped out all the existing lower floor walls, ran RSJ steel beams the length of the house, laid a new slab under and tore off the old roof. It is quite a transformation and in some ways the planning of

extras along the way, keeps the excitement level intact. With the amazing array of colour and nature’s jewels that we are surrounded by in the shop, surprisingly only a few pieces have made their way up the hill to our house.” “Tim and I share time at the shop and live with our faithfully wicked silky cross terrier called Buster who keeps an eye out for his four legged mates that pass by,” the shy yet ever-smiling Pauline says. “The move from the heart of Noosa’s holiday playground to a home in the burbs was at first a little sad, however the neighbours and friendly locals contribute so much to the village feel. My trusty green Volkswagen bug is often seen trotting out to Cooroy.” Pauline and Tim have known each other for forty years. “She was at my twenty first birthday party and I did share a house with her in Coolum when we both had jobs at the then solitary Surfair building at Marcoola,” explains Tim. We met up again in the early nineties by a strange quirk of fate and have forged a great life that just seems to become more interesting every day. “Pauline has a son who is a skipper on commercial fishing boats in North Queensland and I have three children living in Sydney’s Rocks area. All have learned to ride a longboard in the sheltered seclusion of Little Cove. “For me a mid week surf in the relative seclusion of Tea Tree Bay with a few friends is hard to beat. When the longboard disappeared off the surfing landscape for a long period back in the seventies, I continued to ride the nine foot plus surfboards that I had grown up with. I've been surfing since I was ten years old when I hired the massive beasts that were almost as difficult to get to the water as to stand erect on, on their way to the beach. These days I ride a relatively new Thomas 10 foot longboard that is a wave magnet, while my prized 67' Keyo and Hayden surfboards are a step into the past. “Whilst we love living in Tewantin, Noosa is just a short drive away and still retains that holiday feel. There’s nothing quite like a big drippy ice cream, a wander down Hastings Street, catching the sunset over Laguna Bay or watching the surf from First Point.” Pauline says she loves the National Park because it never changes. “I have a photo of me in a pram looking out over Granite Bay and it still looks the same, although I unfortunately, have changed a bit.”

Bollywood dance workshop Hurry Up & Wait!

There’s the world premiere of children’s play Hurry Up and Wait! by the Queensland Theatre Company and debase Productions that’s suitable for children 5-10 years; the gravity defying acts of the Acrobatica Under the Sun performers who climb, slide, spin, balance, juggle and flip without breaking a sweat is suitable for all ages; a Bollywood dance workshop is open to all ages; plus there’s a once-in-a-lifetime chance for ballet students 14 years+ to join one of two ballet master classes with internationally acclaimed ballet master Parrish Maynard who will keep toes twirling. Free activities include guided heritage walks which will allow people to learn the history and secrets of the northern Sunshine Coast region including Tewantin, Hastings Street, Mill Point, Pomona, Eumundi, Cooran, Cooroy and Kin Kin, plus the Gubbi Gubbi walk will teach the history of Noosa’s traditional Gubbi Gubbi people. The Macquarie art exhibition at Noosa Regional Gallery, themed ‘the land and its psyche’, features selected works by Australia’s emerging artists from the Macquarie Group Art Collection, which was formally established in 1986 to build up a group of works that would in time become a reflection of the bank's identity. At the time Macquarie was a very recently formed institution and an emerging force within the Australian financial markets so the collection of works were to reflect the spirit of the bank with focus on Australian artists whose works are influenced by their experience in this country, with a full commitment and dedication to grow and emerge as an artist. Grant McCorquodale from Macquarie said that the company’s policy is to hang works globally across Macquarie group receptions and external meeting rooms wherever Macquarie has an office. “We have over 60 offices across 25 countries now and the collection includes over 650 works. Works include indigenous and non indigenous artists with diversity across canvas, sculpture, photography and video. “Some recognised names to emerge in Australia and beyond, and represented in the collection, include Tim Maguire, Euan McLeod, Bronwyn Oliver, Bill Henson, Peter Kingston, Rosalie Gascoyne, Shaun Gladwell, Bill Robinson, Philip Wolfhagen, Gloria Petyarre, Lucy Culliton and George Tjungurrayi.” Foodies will be licking their lips with a menu of tantalizing events. Celebrity chef and owner of Sydney’s Billy Kwong restaurant, will treat guests to a sneak peek of her new book, It Tastes Better over a two course luncheon at Noosa Springs Country Club. Berardo’s restaurant and bar will be the venue for celebrity

lunches with one of Australia’s leading ladies of show business, Toni Lamond and comedian and author, Tim Ferguson. Toni will be sharing candid stories of her life as a cabaret singer, actor, dancer, comedienne and author whilst Tim will keep audiences in stitches as he reveals how he has made people laugh for the past 25 years. Ita Buttrose will arrive in via gondola along the Noosa River and then disembark to share the secrets of her stellar career over lunch at Trios Restaurant. Still on the water theme, sports hero Andrew Ettingshausen (ET) along with local, Sunshine Coast sporting identity Phippsy will have guests hooked with tales of their mutual love of fishing over breakfast at the Noosa Yacht and Rowing Club. Duck cooked three ways, with a glass of wine to accompany each course will be served when guests visit three of Noosa’s most celebrated restaurants Wasabi, Ricky’s River Restaurant and Bar and Rock Salt for the now famous Duck Waddle progressive lunch. Seafood will be celebrated as part of the Beachside Promenade event at Hastings Street’s Rococo, Season and Bistro C. The Hinterland Gourmet Safari will have diners boarding a coach for a hinterland tour to Blind Man Bluff’s Vineyard for wine tasting in Kenilworth and then to the Blackall Ranges for a four course degustation lunch (including wines) at the Reserve Restaurant Cellar followed by a tour of Eumundi’s gourmet chocolate factory, Cocoa Chocolat. Slow Food Noosa will host a Festival Film and Food event featuring a screening of Ang Lee’s Eat, Drink, Man, Woman followed by Chinese-style fare prepared by Daniel Mosedale from Blue Angel restaurant, Matt Golinksi from Rolling Dolmade catering and Ready, Steady Cook fame, Belinda Tuckwell from Ma Mensa and Katrina Ryan from The Spirit House. The world-premiere-preview of David Williamson's latest play Rhinestone Rex and Miss Monica starring Georgie Parker will be performed at The J Theatre which will host the dangerously funny Agatha Christie Radio Mysteries. Literary events featuring everyone’s favourite gardener Don Burke, Ita Buttrose, politician and pharmacist Terry White, social commentator Karen Brooks, high profile journalists and authors such as Paul Kelly, Margaret Simons and Anne Summers and sportswriter Mike Colman plus the writers who inspired Underbelly, John Silvester and Andrew Rule, animal behavioural specialist Dr Paul McGreevy, author and former journalist Iola Mathews, former pop star and author Michael White, University lecturer and sci-fi buff Gregory Nash and Dr Karen Hitchcock a medic and super mum. Tabletalk Caribbean Dreams’ scoop The exciting vibe of Caribbean music, played by Chicken George and Sharon Brooks wafted around Peregian Beach when Duncan Jones and Emma Sheehan celebrated their Caribbean Dreams’ first birthday. Twelve hundred scoops of the finest hand crafted gelati around, were given away as a fundraiser for the Make a Wish Foundation. “We encouraged people to make a donation and it was fantastic to see people’s generosity,” says an elated Duncan, ably assisted on the day by Flossy, the Make a Wish Foundation’s mascot, who cuddled everyone and danced with the kids. “The super popular flavours of Extreme Choc, Marz Bar and Rocher went very quickly and we were completely overwhelmed by the amount of people and support,” remarks Emma. “People were five wide at the counter and lines extended outside the shop.” Groovin’ and whiskin’ for all ages It’s not only ginger that’s taking the chilly edge

off winter at The Ginger Factory, there’s also a whole lot of free jazz, R&B and groove destined to turn up the heat each Sunday during the cooler months. The Ross Nixon Trio comprising vocalist and pianist, Ross Nixon, the equally talented and welltravelled musos, Max Sportelli on drums and percussion and Scott Williams on double bass will entertain at the Sunday Ginger Jam sessions in the fully-licensed café and undercover piazza the perfect setting to sit back and relax over a glass of wine or a locally brewed beer.

There also something special for the kids. During the June/July school holidays, The Ginger Factory is hosting two special kids cooking classes with Michelin-starred chef, Erik Van Alphen showing kids aged eight years and over how to cook a full menu of tasty, healthy fare the whole family can enjoy. On 30 June, it’s vegetable spring rolls with a yummy dipping sauce; BBQ lime and mint chicken skewers with tzatziki; strawberry and banana fruit sticks with a finger-licking chocolate sauce will be washed down with vanilla and malt smoothies, all made by the kids during this fourhour boredom-busting class. And on 7 July, there’s an equally impressive menu including chicken, ham and pea pot pies; avocado and cheese dip with carrot strips; yummy strawberry and chocolate pavlova nests and banana and berry smoothies. Classes are $85* per child and while children must be accompanied by a supervising adult*, there is no charge for adults not cooking or dining afterwards. Sicilian winter warmers Belinda Tuckwell from Ma Mensa’s winter menu descriptions conjure up mouth-watering images and fond memories. Take the Sicilian lifeguard seafood stew with mussels, jewfish, lots of local calamari in Moorish flavours, plus caperberries, pine nuts and an Arabic kiss. Hmm, surely she means chilli! A wonderful orecchiette pasta with braised beef cheeks, caramelized parsnips and peas is sticky and uncious. Match it with a 2006 Montrose barbera from Mudgee. A glass of sparkling prosecco sounds just the ticket with a warm lemon curd pudding, lemoncello and poached muscatels. Taste of Coolum Hyatt Regency Coolum’s weekend of food, wine, golf and fun, showcases over 40 winemakers from all regions of Australia and features the masters behind some of Australia’s best known wineries. A series of events including four Winemaker’s Dinners, the annual Winemakers Cup Golf Challenge and the much anticipated afternoon of food, wine and entertainment, the Chefs Alfresco, will lead guests on a gastronomic journey and satisfy all tastes. In a first for the weekend, guests can join some of Australia’s best female winemakers at the Winemaking Women Dinner, where winemakers from Oliver’s Taranga, Fox Gordon Wines, Radford Wines, Tower Estate and Yalumba will mingle with the crowd and share their tips and thoughts on winemaking. She was also famous for bathing in its fresh juice. Needless to say that wasn’t a daily occurrence as one basin required 22 pounds of fruit. In other parts of the globe meanwhile, many

firm, uniformly sized, bright-red berries with a distinctive berry fragrance and no white or green "shoulders" at the stem end, soft spots, bruising and mildew. White colouring indicates they have been picked too soon.The green leaf-like cap or hull should still be attached - not brown or wilted. Check the underside of the container to make sure there are no squashed berries or red liquid. This is a sign of over-ripeness. And today’s discerning aficionados appreciate that they are best when grown organically and savoured fresh with champagne, chocolate, Cointreau, Grand Marnier, Kirsch, ice cream, mascarpone, fresh white cheeses and almonds. Strawberries were originally cultivated in ancient Rome and varieties, such as Queensland’s camarosa, are descended from quite different species, which were introduced from North and South America in the seventeenth and eighteenth centuries. The aromatic, roughly conical-shaped berry is covered with what looks like tiny black dots which are called achenes, and are the true fruits of the strawberry plant. Each achene is really an individual fruit containing a single seed. This is why the strawberry is a 'false' or 'accessory' fruit because it comes from the base of the flower rather than the ovary. Strawberries are perfectly ripe when the strawberry is shiny. Look for plump,

store well. If not using immediately store in a single layer on a paper towel-lined tray in the refrigerator up to 2-3 days. Do not wash or remove caps before storing as strawberries absorb moisture. Immediately before using quickly wash berries (do not soak), with caps still intact, so the berries will not fill with water which dilutes the flavour of the strawberry. Remove the leaf-like caps with a sharp knife. Strawberries are low in fat and kilojoules and contain higher levels of vitamin C than other berries. They also contain iron to prevent anaemia, fatigue and lack of energy as well as over 40 phytochemicals which help provide protection against cancer and heart disease. Their antibacterial and anti-inflammatory qualities suggest they may help prevent kidney stones, act as a liver tonic and also joint pain relief. Cracking the classics In several Mediterranean countries the walnut is the classic nut often being used as the general word for nut. alnuts (genus Juglans) are thought to have come from ancient Persia or China. The Latin name, Juglans, derives from Jupiter glans, or ‘Jupiter's acorn’, a nut fit for a god. The Persians used walnuts for barter and the Greeks dedicated it to Diana, whose feasts were held under walnut trees which are deciduous and grow from 10 to 40 metres. The smooth outer green husk of the walnut splits open when it is ripe and ready for harvesting. An oval, beige, ridged shell encases the outer kernel which is formed into two distinctive halves. When mature, the outer shells harden and are easily cracked open while immature nuts are often picked before the outer shell has hardened if they are going to be pickled or candied. New season walnuts are wonderfully sweet so the removal of their skins is unnecessary however if you detect bitterness, place the shelled walnuts in a bowl, cover with boiling water, leave for 10 minutes, then drain and rub well in a clean tea towel. Spread onto baking paper and dry in a 120 degree oven for 10-15 minutes. Walnuts are healthy, high in antioxidants, rich in polyunsaturated fats, (omega-3 fatty acids), and research shows that eating them reduces heart disease. Use walnuts in salads, muesli, pasta, pesto, slices, pickles, cakes, confectionary, biscuits, desserts and liqueur. They are a perfect accompaniment to apples, pears, quinces, dates, figs, cream, blue cheese, goat’s cheese, chocolate, duck, potatoes, bitter greens and garlic.

Torta di Nocid Walnut Tart This is an exquisitely nutty and excitingly different cake. Frolla means soft and crumbly, so while the pastry may break easily when you’re lining the tin, once cooked it will melt in your mouth. Ingredients: Walnut filling 5 eggs, separated 200 g caster (superfine) sugar 50 g unsalted butter, softened 30 g plain (all-purpose) flour, sifted

zest of 1 lemon 300 g coarsely chopped walnuts Icing (confectioners’) sugar, for dusting Pasta frolla 200 g unsalted butter, chilled and chopped 300 g plain (all-purpose) flour, plus extra for dusting 2 large egg yolks 100 g caster (superfine) sugar Method: To make pasta frolla: Place butter and flour in a food processor and process until mixture resembles coarse breadcrumbs. Add the yolks, sugar and 1 tablespoon cold water and process

until the mixture just comes together. Form into a disc, wrap in plastic wrap and refrigerate for 30 minutes. Preheat oven to 190˚C (375˚F/Gas 5). Roll out the pastry between 2 sheets baking paper until 7 mm thick and use to line the base and sides of a lightly greased 24 cm springform cake tin. Trim the sides so it is 5 cm deep. (You will have some pastry left over.) Prick the base all over with a fork and freeze for 15 minutes. Line pastry with baking paper, fill with dried beans or rice and bake for 15 minutes. Remove paper and beans and bake for 10 minutes or until pastry is dry. Reduce oven temperature

to 180˚C (350˚F/Gas 4). To make walnut filling: Using electric beaters, whisk yolks and sugar for 10 minutes or until thick and pale. Beat in the butter, flour and lemon zest, then fold in the walnuts. In a separate bowl, whisk egg whites until soft peaks form, then fold into the mixture. Pour into tart shell, smooth top and bake for 20 minutes, turn the cake, cover with foil and bake for another 20 minutes or until a skewer inserted into the centre withdraws clean. Remove from oven and cool in tin. Serve dusted with icing sugar. Serves 10–12

I love using Nobby snapper which is caught on the Sunshine Reef, simply prepared on the char gill and served with shredded snow peas, lime and chive butter. Also a simple tart with an amaretti base, crème patisserie and topped with fresh Eumundi strawberries is the best. “Favourite ingredients? As a true northerner you can't beat baked beans on toast with melted cheddar cheese and HP sauce once a week. Unfortunately my wife and kids haven't seen the light...yet. “Head-to-head with a celebrity chef? That would have to be Marco Pierre White as I grew up with him. His cuisine had a big influence on the restaurant where I worked a commis chef. And thanks to TV’s Masterchef, customers are asking more questions than ever before. They want to know where ingredients come from, tips on cooking, recipes and they have a fascination with watching chefs at work. It can be quite a show on a busy night! I spent four hours on a rolling pin making some hand made Danish pastry for a strawberry tart tatin served with yoghurt sorbet and it was special, bursting with colour and flavour and that lovely tartness. “I love herbs from breakfast to dinner even in dessert and at home or at work I cannot live without pasta , fresh parmesan, golden eschalots, garlic, bakers flour, sourdough, cold pressed olive oil, risotto rice, home made stock, fresh tomatoes, salamis and a tin of peeled Romas. “The days of crazed angry Gordon Ramsey-style chefs are fazing out, replaced by zealous young guns who want to learn even basic skills from baking bread, smoking a whole fish and maintaining a sourdough. The funds collected will go towards promising medical research, as well as a range of patient support services, including specialised care, accommodation, counselling, transport and education. Leukaemia Foundation of Queensland CEO, Peter Johnstone, said money donated during the Doorknock Appeal would give patients and families in need, access to patient support services completely free of charge. “Many people don’t realise the enormous challenges faced by a patient diagnosed with a blood cancer. For many Queenslanders it means leaving their home immediately for intensive and lengthy medical treatment in a different city. De-Lovely Caroline Music is the food of love when Caroline O’Connor and other stars perform at the Longweekend.

W

hen Caroline O’Connor played Nini in Baz Luhrmann's Oscar-winning film Moulin Rouge, producers, directors and music lovers all over the world took notice. Her signature roles including Piaf, Judy Garland, Velma Kelly in Chicago, Anita in West Side Story and Mabel in Mack & Mabel, are unforgettable and her second visit to Noosa is eagerly awaited. The multi award-winning singer/dancer/actress who continues to grace the stages of Broadway, the West End, the Royal Albert Hall and Sydney Opera House is also looking forward to her return to berardo’s restaurant and bar. “It’s a magical snug setting and working in the round means no one misses out,” says the delightful impish-faced 47 year-old who looks more like a teenager and was born in England’s Lancashire England to Irish parents, who moved to Sydney. They say she started singing almost before she could speak and at age 10 was crowned Australian Irish Dance Champion. Her earliest stage experience included imitations of Ethel Merman that she performed for her dog, but soon Caroline set her sites on a more discerning audience and packed her bags to return to the UK to train at the prestigious Royal Ballet School in London. Afterwards, Caroline came back to Oz and the Australian Opera Ballet. While in a production there she met Anthony Warlow, the Australian musical theatre star, who told her she had too much personality for her ballet slippers and pointed her to the musicals. It turned out to be inspired advice. As her long list of major awards illustrate, Caroline has enjoyed great acclaim for stepping into the shoes of the likes of Edith Piaf, Judy Garland and - to her dog's delight - Ethel Merman, as well as headline roles in many of the world's best-loved musicals Her favourite by far is the one-woman play Bombshells which was written especially for Caroline by acclaimed playwright Joanna Murray-Smith. She has since filmed Bombshells for ABC Television and toured the play to sell out performances at the Edinburgh Festival, London’s West End at the Arts Theatre and at the World Stage Festival in Toronto, Canada. Caroline has recorded four solo CDs and has featured on numerous cast recordings and compilations She says diners at berardo’s can expect all the faves, surprises and wonderful music from her four-piece ensemble including her husband Barry on woodwind. Shrouded in mystery... After several decades writing and broadcasting in the UK, Jillie Collings, according to Helen Flanagan, has found a new audience and a new home. eading a lonely existence as a child had its drawbacks for Adelaide-born Jillie Collings but ultimately, burying herself in mystery books proved to be her saviour. After graduating with an arts degree and an unpublished book in her luggage Jillie moved to London to seek fame, fortune and a remedy for what was at the time considered to be a fatal disease. “My hair went white on the sea voyage worrying about it,” recalls Jillie. “This diagnosis

turned out to be a blessing in disguise, like most setbacks. While I was waiting for the tests to be repeated in London I wandered the streets and one day I saw a plaque advertising a palmist. I had never been to a fortune teller before but I chanced on one that was famous. He told me I would not die (yet) and that I had a long career ahead of me in journalism, authorship and broadcasting. Because he was so uncannily accurate about my past I felt inclined to believe him. His reading aroused interest in the paranormal and I began to study palmistry, graphology and astrology.” As a graphologist she analysed the handwriting of many famous and infamous people in the world from Princess Di, Joan Collins and Barry Humphries to Neilson, a mass murderer better known as the Black Panther. She landed her first job as an investigatory feature writer on Woman magazine, just prior to her

first book being published. “At the same time my then partner kept taking on too much work as a radio interviewer so I became known to the BBC when I filled in for him,” says Jillie who by now had a parallel career in radio and writing - as predicted by the palmist. “Of course then the inevitable happened. The astrologer of a rival women’s magazine decided to retire and I was asked to take over the astrology column. I was star hunted! This led to an intensive period of study whilst I passed exams, and I have practised astrology ever since. “Astrology helped me understand my son, who has a dual personality, being a delightful Gemini. It also helped me to understand my relationships and their cycles, and has done ever since. I now plot economic trends side by side with my husband. I use planetary waves and he uses the Elliot Wave. We usually agree.” Because of her near fatal disease Jillie also became interested in health and most of her eight non fiction titles are about health and the environment. “This led to The Guardian offering me a column called Life Forces which eventually became a book, called Life Forces: Guidelines for a Healthy Life on a Polluted Planet. My remaining book titles reflect my interest in physiological patterns and what they can tell us about ourselves.” Fast forward to Jillie and hubby Ben’s move to Noosa, a place she’d visited after her son moved from the Gold Coast about ten years ago, also her change in writing genres.“The one exception to my books is a children’s fantasy called The Castle in the Air, published by IJC Publications and distributed by Brumby’s Books. “I have to confess, as many writers claim today, this came through medium-ship. All my other titles were achieved by blood, sweat and tears, but the theme for The Castle in the Air

was given to me by a lovely old Chinese man in spirit. He said it was time for children to learn that there are other dimensions beyond this world. Physicists support this view now and think there may be as many as 10 or 11. However he also wanted to make them aware that everything around us has life and identity and to respect this. “There are some pretty strange characters in The Castle in the Air, which is a rescue station for all those who get lost though time warps such as in The Bermuda Triangle into dimensions beyond time.” The rollicking fantasy adventure begins when the two stars Emma and Kit, after promising to be home for lunch, they set out for a short sail in their small boat on the Miami Harbour. A strange mist appears and they are soon lost at sea. Things get even stranger when their rescuer appears; they slip through a timewarp and are soon guests of The Castle in the Air a multi-dimensional rescue station. What happens to Emma and Kit in the Castle? And what about the people that will never return – will that be them? Can they save the Castle in the Air? And will they learn the important lessons they need to get back to their lives on earth? Jillie’s next project is to update and re-release a book which proved very popular in the UK called Astrology and Your Child. “It’s a guide for parents seeking to understand the everunfolding mystery of their children through alternative means,” says Jillie who equates life in Noosa to living in a boutique hotel in Paradise. She is still an avid reader as evidenced by her home which is filled with bookshelves everywhere, even in the garage.“I can’t imagine ever feeling so passionate about e-books, even if they take up less space. All my books are friends with their own personas.”

he Australian Body Art Carnivale in Eumundi was a riot of colour,

centred around body art in many varied forms including using the human body as a canvas, pavement art, wearable art, vehicle body art,

photography and visual art. There were world-class street performers and buskers, craft workshops, a masked gallery walk, plus a Saturday night parade and award’s ceremony leading into the Carnivale street party. Amazed winners included Maria Mormile for brush and sponge body art; Vick Pattison - airbrush body art and the art of the body visual art competition; David Houghton - Wicked Camper vehicle art; Brian Tisdall- pavement art otherwise known as chalk art on the street and Yaneiro Velasquez who won wearable art or fabulous fashion made from recycled treasures. The 27-year-old student and former model who came to Australia from Venezuela in 2007 and studies fashion at Sunshine Coast TAFE, used recycled scrap metal as the basis for her award-winning dress.

The non-beer drinker spent more than a month working on the dress, including searching through a Maroochydore pub’s garbage bins before a friend at the local bowls club came to her rescue. Her crushed beer bottle tops and discarded copper wire dress earned her $2000, and will finance her final year range later this year after which she hopes to be a costume designer for movies.

It’s so under-rated. Adults can improve their swimming dramatically using my method and that’s because most people who didn't pursue swimming when they were kids and chose other sports were insufficiently taught or weren't taught at all. “Swimming is a technical sport, more like snow skiing, think cold, goggles and above all anxiety, yet it's unlike running which is natural for humans. We weren't made for swimming because you can’t breathe when you want to and there's nothing solid to hang on to, so anxiety sets in, leading to stress and fatigue over a short distance.” John's system, which he teaches at the Noosa Aquatic Centre, is all about relaxing and realising the right way is the easy way, as in all sports. “The last six years I’ve been doing the Noosa Blue Water Swim, thanks to meeting Phillip Harding in Sydney in the late '60s. I swim with him regularly and have obviously done such a good a coaching job, he now beats me in ocean swims. “Swimming is also a beautiful way of seeing nature and even meditating. I also think there’s a huge opportunity for groups of senior

He made a successful transition to business, travelled to France, where he was groomed by the cosmetics giant, L’Oreal, to become their Australian managing director and followed with a notable corporate career. He knows only too well the rollercoaster ride of life’s ups and downs however it’s his love of Mikki, his family and swimming especially through his Swim Easy System that give him constant strength.

WHEN JANE MEREDITH OPENED THE DOORS OF HER LITTLE HASTINGS STREET STORE 10 YEARS AGO, SHE BEGAN A JOURNEY THAT WOULD CHANGE THE WAY WOMEN AROUND AUSTRALIA VIEW FINE JEWELLERY. he store was Secrets; a diamond simulant boutique born from Ms Meredith’s belief that every woman deserved access to beautiful jewels – and a brand that has since grown to become the world’s leading diamond simulant retailer, encompassing 20 stores across Australia and New Zealand. entrenched social attitudes towards many things, including simulated diamonds.” Ms Meredith said a mind shift came from defining moments during the decade, such as September 11. “It had an unexpectedly profound effect on consumers, bringing an overnight change in attitude towards possessions and priorities as people realised there were more important things in life than preconceived ideas and outdated judgment systems,” Ms Meredith said. The first half of the decade marked a period of rapid growth for Secrets, with 15 new stores opening. The company entered its 10th year in 2010 with new branding and plans for expansion across Australia and internationally – with two stores set to open in Sydney later in the year. While people once asked ‘are they real?’, Ms Meredith said 10 years later women have embraced diamond simulants as “the new real”. “It isn’t as much about keeping secrets anymore; diamond simulants are flawless, perfect stones that women wear with pride and confidence, without compromising on colour, clarity or quality,” she said. Alex Stobbs, a music student with cystic fibrosis, had a passion to conduct the St Matthew Passion. This documentary followed Alex on his quest to fulfill his dream and culminated with his concert in front of over 800 people in London. Throughout, Alex suffered greatly with low energy levels and extreme shortness of breath from his damaged lungs. The St Matthew Passion is an extraordinary work, hailed by many as one of the most challenging and ambitious musical compositions in the entire western tradition. It is a work of dramatic action and devotional reflection interwoven with phenomenal skill by Bach to produce one of the greatest moving musical and emotional experiences. Adrian King, whose reputation for presenting wonderful musical concerts on the Coast continues to grow, will conduct this massive work. Love Letters at Noosa Arts Theatre oosa Arts Theatre will stage Love Letters in July. Love Letters has been hailed as “exhilarating, funny, moving” and “one of the most enchanting little plays of our time”. A R Gurney’s internationally acclaimed play traces the lifelong correspondence between a stuffy and dutiful lawyer, Senator Andrew Makepeace Ladd III, and a lovely, undisciplined and unstable artist, Melissa Gardner. Gurney takes them from second grade through the trauma of adulthood, marriage, divorce and middle age. At first, the two exchange notes and Valentines in school, soon replaced by letters and picture postcards. They never lose their individual idiosyncrasies. Andrew’s correspondence remains instructive while Melissa’s is spontaneous, with a biting ability to speak her mind in print. Although Andrew and Melissa never speak direct to each other on stage, they certainly react to each other’s correspondence, communicating fathoms of emotions beneath the words. For example, when Andrew reads a particularly self-serving account of his academic accomplishments, Melissa’s face moves from bemusement to boredom to chagrin. She can scarcely wait for the letter to end so that she can reply with criticisms of his literary style and his lack of self-knowledge. Similarly, as Melissa describes her casual romantic alliances, we can see in Andrew’s expressions his disapproval along with his curiosity. As opposites, each provides the other with what is needed. The irony is that they do not understand this until late in life. These are, in fact, star-crossed love letters. The play concludes on a poignant note, as we realize that the letters - the root of their lifelong relationship - are actually the instrument that keeps them apart. Love Letters featured in the Noosa Longweekend back in 2003 with Jean Kittson and Campbell McComas as Melissa and Andrew. It was a rave success and delighted audiences. Art Focusing on Surfari hotographer Nigel Arnison and partner Sally Ridyard purchased a framing workshop and numerous wide format printers in 2003 and started creating their own products including printing images onto canvas to meet the increased popularity and demand for quality products. They opened a gallery at Yaroomba, just south of Coolum in 2006 which Nigel says “was a fantastic space and we enjoyed some great years in our photography gallery and internet cafe, however we always had our eyes on Noosa.” Nigel continued to develop his own style, was dedicated to documenting great surf days amongst other things, purchased a water housing for his Nikon f90x, and spent the next few years trying to master the technique of shooting from the water. He established On Surfari in1999, and developed a relationship with Tropic Surf who hosted Nigel in the Maldives on two occasions to document their amazing surfing adventures. “Another aspect of photography that I have always enjoyed is the long exposure. I am constantly amazed how photography can take time and compress it onto something flat and tangible. When I studied photography I spent a lot of time learning how long exposure worked and today it still surprises me. It opens up a whole new world of angles and light.” Nigel and Sally’s latest adventure is On Surfari, their new gallery on Gympie Terrace Noosaville. “The gallery which opens on 1 July, will be a dedicated photography gallery with an exciting range of new images and formats,” explains Nigel, who also started teaching photography two years ago. “We’ll offer high end canvas printing for locals, camera buying advice and one on one photography lessons.

With sassy titles such as “Glad Rags”,“All that Jazz”,“Hotsy Totsy” and “Splash Me a Double”, the paintings evoke the glamour of the 1920’s and 1930’s and pay homage to designers and style icons of the era that liberated women’s fashion with a spirit of modernism. The paintings portray stylish women created from velvety lush pastels in rich, shimmering colours, which are the signature elements of Kate Smith’s work and evidence of her expertise with the pastel medium. Born in Manchester in 1947, Kate Smith immigrated to New Zealand as a “tenpound Pom” in 1952. After working in numerous creative pursuits such dress making, textile fashion design and teaching ballet, Kate took up drawing in 1973 after her husband bought her a 99-cent “How to Draw” book. A year later, Kate had become Auckland’s first street artist, presented her first solo show and became the family’s breadwinner. She moved to Australia in 1979 and her career flourished. Decades later with over 100 art prizes to her name and numerous successful solo exhibitions nationwide, Kate Smith has announced that her “Putting on the Ritz” exhibition at Tiffany Jones Fine Art Gallery will be her last solo exhibition in Australia. Renowned Noosa-based Australian Artist ore than 120 people attended the opening of renowned Noosa artist Belinda Herford, at the Sable Gallery at Noosa Sound. At what proved to be one of Noosa's social events of the year,guests were given a rare opportunity to view a complete period of Belinda's work, with several paintings being sold on the night. Prices ranged from $6,500 to $18,000. Exhibition organiser Anna Day said Belinda's paintings are hung in homes and corporates of art collectors and art lovers in Europe, the USA, Asia, New Zealand, Canada and across Australia. Her paintings are also the paintings of choice in Noosa's leading developments, including the new Firstlight Noosa, the luxury private residence development on Noosa Beach, as well as Settler's Cove and Elysium Noosa residences and the John Mainwaring-designed Viridian resort and residences on Little Hastings Street. "Her work continues to evolve, and these new expansive paintings bring a rich light and colour, nature again deconstructed," Ms Day said. "The journey does not end with the first viewing, as the depths of these paintings emerge over time. "This view of the standard of her work is held by the many art collectors who have acquired her work, recognised early by the Caloundra Regional Gallery, which staged the last Sunshine Coast exhibition of her work in 2007. "Belinda Herford's paintings are worked in oils on the finest Belgian linen, utilising the stumato painting technique. This technique involves a delicate multi-layering of dark on light to produce barely perceptible changes in colour, blurring the edges and outlines. It creates a mist-like effect of great subtly. Some of the paintings appear awash with water, others entice you to pat as you would a pet; they ripple and bend; you peer into and see no end.

Putipula Gallery is proud to showcase works from Iwantja Arts & Crafts from 26 June to 11 July 2010. The community is located on the eastern side of the Anangu Pitjantjatjara Lands, 8 km west of the Stuart Highway in the far north of South Australia on a rocky ridge called Indulkana. Although Indulkana is regarded as a Pitjantjatjara community, the majority of people at Indulkana refer to themselves as Yankunytjatjara, which is a group having its origins in the eastern section of the lands. The community consists of approximately 300 people with a small number of people occupying outlying traditional homelands. The first contemporary artworks produced at Indulkuna were lino prints. The technique was introduced to the community in 1952 by Rod Foster, a community adviser to Indulkana, and Adrian Marrie. Their understanding of Aboriginal culture was most helpful in providing information on the instigation and development of this “new� medium. Skills were learnt and the beginnings of a clear identity formed. Indulkana people are adept at carving and decorating punu (wooden artefacts). As lino carving is similar in technique, artists readily took to the style in the 1970s, first printing in monotone and then bursting into colour, many of those in the South Australian Museum. Iwantja artists are now acclaimed for their fine art paintings, with artists such as Alec Baker, Maringka Burton, Sadie Singer, Dianne Robinson, Peter Mungkuri and Maisie King. Aside from the paintings showcased by Iwantja, Putipula Gallery has a huge selection of works to choose from. The gallery directly represents ten remote 100% indigenous Art Centres. Besides being sweet smelling flowers, versatile lavenders are sought-after for multiple uses from culinary and medicinal to beautiful garden displays. he history of lavender’s dates back 2,500 years. In ancient times it was used for mummification and perfume by the Egyptians, Phoenicians, and people of Arabia. Mention of lavenders can also be found in the Bible, not by the name lavender but rather by the name used at that time - spikenard. The name ‘lavender’ comes from the Latin ‘lavare’ - to wash, and the botanical name ‘lavandula’ is derived from ‘livendula’ - bluish. Lavenders are a genus of 39 species of flowering plants in the mint family and are native to the Mediterranean region, south to tropical Africa and to the south-east regions of India. The genus includes annuals, herbaceous plants, sub shrubs, and small shrubs. The native range extends across the Canary Islands, North and East Africa, Southern Europe and the Mediterranean,

Arabia and India. Because the cultivated forms are planted in gardens worldwide, they are occasionally found growing wild as garden escapees, well beyond their natural range. As they cross-pollinates easily, there are countless variations within the species and colours range from pink and white to the classic purple hue. Landscape designer John Scomparin from Outside Noosa in Noosaville says lavender is arguably one of the most popular multi-purpose plants: “It can be grown as a shrub, in a pot or tub or as a hedge. You can cut it low or allow it to grow to its full height, which is about 800 mm tall and it is noted for its distinctive foliage and scent. Only a couple of varieties grow well in south-east Queensland, due to our wet summers and humidity – so choice is limited to French and Spanish varieties. French lavender in particular, thrives in our hot, humid conditions. “Most species of lavender can however be grown as an annual in the winter months. To prolong growth it should be planted in raised beds or mounds in well drained areas. For this reason I suggest mulching with a river pebble, instead of organic mulches. It can be grown in full sun and if grown in the shade will veer towards the light. You can also use them around the garden or mass plant them as a feature. Lavenders are really so versatile. “As lavender plants age, bushes can become woody. When pruning it's important to retain the green foliage and don’t cut back into the old wood. “Grey foliaged plants work well when highlighted with river pebble and from an aesthetic point of view, this can be a great feature, especially with the greenery of other shrubs adding contrast, is planted behind.” The flower spikes of lavender are used for floral arrangements and the pale purple buds are perfect for potpourri. The plant's oils are used as an antiseptic and are commonly used in aromatherapy. Lavenders have a unique fragrance produced by the combination of 180 different constituents and so are widely used in the perfume industry to add a top or middle note to commercial products.

Steve Cooper Maintaining Noosa’s mantle as a world-class tourist destination has its moments for the tourism chief, who was born in northern NSW, has been a visitor since he was 17 looking for the eternal wave, and stepped into the CEO’s role three years ago. What were your first impressions of Noosa, how has it been 'shaped' and what have been some of changes and achievements. Rounding Noosa Hill and catching that first glimpse of Laguna Bay is an impression that lingers today. Since that first intrepid road trip, Noosa has itself developed in myriad ways, resisting high rise development, traffic lights, pollution in the form of rampant signage and maintained its character, friendly traits, café culture, all entwined with a serious dash of Noosa style. With its enviable reputation, particularly with regards to sustainability it’s hard to go past saying: Sustainability means never having to say sorry to your grand children. My role is one of leadership, assisting a well qualified industry and management team excel in their areas of endeavor plus being proactive and flexible in an ever changing environment. Achievements have included new and innovative membership programs, major industry alliances with partners such as Virgin Blue, development and continuing development of MAYFIESTA and perhaps the most significant achievement has been the introduction of the new Noosa brand and communication program, designed to rekindle our relationship with our existing 1.7million annual visitors and importantly introduce and welcome an entirely new generation of visitors, in a constantly evolving market. Explain the changes to the Sunshine Coast tourism bodies. One of the vexing issues recently has been challenges to our community and industry after council amalgamations. The new council has seen amalgamation as a further catalyst for change. We Noosans have used this period as a chance to work together, to better understand each other, to not make the mistakes of the past whilst realizing that bigger is not necessarily better and that one size definitely does not fit all. The immediate future looks bright for the greater region, as we all understand that the real attribute of the Sunshine Coast is its broad appeal, recognising that well managed ‘man built’ attractions in the regions south can successfully coexist with what nature has provided for in the northern region, via National Parks and the rare biodiversity captured within the Noosa Biosphere. Proudly, Tourism Noosa has played a strong role in assisting and shaping

this future tourism industry through consultation, innovation, and developing new structures such as destination desks to promote our diversity. These desks represent the geographic diversity of the region delivered in a broad spectrum of formats, from the digital to the tangible, the latter being the case for the continued operation of Tourism Noosa Pty Ltd, of which I am part. This new structure, including Noosa is already reaping rewards as these new desks commence functionality and invite and receive new streams of funding from government at all its levels. Recall some of the more momentous moments. This period while challenging for the organization, has also been fruitful with Tourism Noosa’s two consecutive years in attainment of the nation’s highest marketing accolade at the Australian Tourism Awards and the construction of an architecturally designed Visitor Information Centre, incorporating state of the art facilities for our many guests and just as importantly our wonderful team of volunteers who represent the heart and soul of Noosa and share their untold wealth of knowledge. One of my favourite questions was from a European desperately keen to see the Noosa Lions Park, only to be advised that Lions Club of Noosa while professional and well accredited, sadly was yet to diversify in to zoo operations. What’s ahead for Tourism Noosa? The future for the tourism industry in Noosa is a challenging and bright one, the ground work achieved over the last few years has laid a solid foundation for growth, there is no doubting that no body or industry is immune to the recent and continuing economic down turn, Noosa is no exception, however the added resilience provided by the national and international strength of the Noosa brand, has definitely added a level of strength and a growing degree of optimism. What is it about today's Noosa that you love so much and how do you relax? Noosa today is a very vibrant, stylish community complemented by a world class environment and restaurant/cafe culture. Relaxation and work life balance is essential, I am lucky to have a great life partner in my wife Ann who being a tourism professional herself understands my role Our two married daughters keep us on our toes especially with first grandchild, ‘Will’ on the horizon. My hope is that our 43 kilo labrador, Murphy will finally meet his match and that the pitter patter of little feet in the mornings, is just that - not Murphy’s oversized flying frame desperate to take us all out on his walk.
