The headline act for the Noosa Longweekend Festival’s 10 days of arts, literature, food and fun lived up to its reputation as the UK’s top professional a cappella group. ur wants and desires are a funny thing. All through the long, hot summer months we pine for the cooler days and chilly nights of winter. Well, when reality bites ( and it usually does!) - you will realise that those things just don't happen to real people like us. All dreams aside. They only happen in the movies that supposedly mirror our real lives! Surfer campaigns for rights of chronically ill...

P

ottsville surfer Brittani Nicholl is the face a new national television campaign highlighting the needs of the chronically ill. Brittani, 20, is the face of the Can’t Wait campaign by national charity Crohn’s & Colitis Australia (CCA) to raise awareness of the debilitating and incurable bowel diseases, Crohn’s disease and Colitis, which cause diarrhoea, fatigue, weight loss, and often require surgery for the 61,000 Australians living with the conditions. Brittani is supported in the campaign by former Big Brother contestant Pete Timbs, who also has Crohn’s disease. Brittani said she was happy to promote the Can’t Wait message and encourage people to talk about illnesses usually deemed “too embarrassing” to discuss. “I really wanted to do this to create awareness so people can actually help make a difference to our lives. Charismatic classy act... Besides his good looks Helen Flanagan was captivated by Daniel MacPherson’s life as an ironman, television host and gun slinger.

D

aniel MacPherson admits it was a steep leaning curve when he stepped onto the set of Neighbours’ Ramsay Street at the age of 17, straight out of Sydney Boys’ High School, a selective school for those with very high (mensa) intelligence. “I’m sure it was either dumb luck or the gift of the gab but I was always pretty good at school and was awarded the Ross Miller memorial award for being the best all-rounder,” Daniel says laughingly. “I still think I’m a jack of all trades, master of none.” Acting was never on his radar, rather economics at university and outside of study it was achieving his main ambition of a triathlete alongside his best mates. “I grew up in Cronulla, the eldest of three kids playing rugby in winter and from aged 11 raced in mentally challenging triathlons in summer, that’s if I wasn’t surfing, swimming or training of some sort. Otherwise, we were fishing, catching crabs or roaming the streets on our skateboards like little surf rats. “My brother is married and works in the coffee industry and surfs daily, my sister is studying acting in LA and mum and dad, who are separated, gave us a positive, loving upbringing, teaching us we could do anything we set our minds to.” Daniel met a talent scout at a triathlon and after some coaxing did acting lessons during his final year of school. Within 12 months he moved out of home and drove to Melbourne where he’d never set foot before. “My first day was a blur, I had less than no idea what I was doing, but being so naive was a blessing, because you are so uninhibited. I pushed myself hard to learn as much as I could but for the first 12 months or so, I knew so little that I didn’t even know I knew nothing.” Half way through his four years on Neighbours, Daniel decided to make a career out of acting and with no drama school behind him, thought working and learning in the English theatre was the best option. He alternated between the roles of Jesus and Judas in the stage musical Godspell in London where he met Robbie William’s best mate. Every Sunday the lads would stay at Robbie’s house enjoying a surreal and wonderful time while he was living in LA. continues next page... Aussie fans of The Bill were delighted when Daniel appeared as PC Cameron Tait, however before accepting the role he thought it was a long running stale cop show. “It was the last place I thought I’d work. The producers saw me when Godspell was touring and offered me a job. Day one was pretty crazy, the script was amended without my knowledge and suddenly I was naked. The upside was meeting my girlfriend of two years, Beth Cordingly who played Kerry. Downside was it was freezing! It was a great cast, all the old faces were most welcoming and it was an honour to work with Mark Wingett, Graham Cole and Trudy Goodwin. Such great people and performers. I look back at it very fondly.” Daniel says being a presenter and an actor are so different and he likes the challenge of both:

“Presenting is a lot like live theatre. There’s a buzz and satisfaction that comes from nailing a live TV show, being relaxed, in control and making the most of each moment. And when things go wrong, that’s when it really comes alive. Acting is a long term commitment, a lifelong choice. It means constantly growing, refining, learning - like a mistress of sorts - the more you learn you realise, the more you still have to learn.” On Dancing with the Stars, the simpatico with co-host Sonia Kruger both loving the energy is obvious, however Joshua Horner, the new judge this season and the other judges have ruffled a few feathers, taking a toll on the foot weary and emotional dancers. “A personality like Josh's certainly adds some spice and I think he’s a great addition. We have actually known each other since we were 18, so it’s a spin-out to be working together. “It’s interesting to see how the celeb athletes deal with it differently than the celeb actors or those from non entertainment worlds. The hours and fatigue build-up over the series as every day they’re asked to risk their reputations and dignity on the dance floor - live. That moment post dance, standing in front of the judges, having done 30 hours of dance training, surely must be like facing the firing squad. “It’s hard to see Manu not making the finals, Hayley is dancing very well but will she get enough votes and Damien is great, totally committed and having fun every week.” Dan, who celebrated his 31st birthday in April is growing some pretty mean facial hair at the moment for the lead role in the new TV series Wild Boys. “I’m playing a bushranger in the 1860s and it’s the greatest boy’s job. I get to shoot guns, ride horses, drink whisky, bare-knuckle fight as well as old-style boxing and swagger with a purpose. I get covered in dirt, fake blood and pretend I’m tough.” Dan says he balances out the rigours of the entertainment industry with sport and exercise. “That’s why I bought my beach shack at Sunshine Beach, so no matter where I’ve been in the world, I come home, surf, sleep, run along the beach, through the national park and get out on my bike with my mates. It clears my head and allows me to recharge. After racing the Hawaiian Ironman in 2009, I’ve had a long break from competing but I’m looking at running the Sydney Marathon in September. “At the moment I’m commuting between Sydney and Melbourne, but will be back in Sunshine Beach in a month or so. I have lots of family and plenty of mates staying. For me, it’s a place where I can rest, recharge and just be me; mow the lawn, clean the pool; surf the points, waste hours at Costa Noosa or just potter around. It’s good for the soul.” As to the future Daniel dreams of “a loving wife, couple of little Dmacs, acreage in the Noosa hinterland, the odd Hollywood film, maybe some directing and plenty of days on the Longboard with my mates.” Photos: DWTS Courtesy - Seven Network Photographer: David Cook

t’s back to grass roots at this year’s Noosa Jazz Festival with an impressive line-up of Australian and international artists offering all genres of jazz music and many mighty talents such as George Golla, Allan Browne, Geoff Bull, Brett Iggulden, George Washingmachine, Bob Barnard, Dan Barnett, Peter Gaudion, Ingrid James, Derek Capewell, Wil Sargesson, Jan Preston, Lee ‘T Bone’ Turner, the Brisbane Army Band Big Band and Noosa’s own, the Jazz Factory. The Jazz Party theme will draw together a spontaneous combustion of traditional jazz within the Bicentennial Hall followed by a stream of swing, modern, funk and blues bellowing along Hastings Street and in the Festival Village. Intimacy will also be a focus, recreating those 'smokey jazz room' experiences and the famous Tastings on Hastings will return with the best of Noosa food and wine, jazz via a roaming stage and six arenas plus roving entertainment from buskers and street theatre. Some of the best traditional through to contemporary Jazz will be played on daily river cruises, in Hastings Street restaurants and the Noosa Woods Park located at the river end of Hastings Street plus fringe music will entice music lovers into establishments with some surprising and different entertainment. Noosa Beach Classic Car Show

T

he prestigious Noosa Classic Car Show, Noosa Classic, will celebrate its 24th show on Sunday 25 September 2011 with a spectacular display of MGs plus other European and British classics and sports cars, American and Australian iron and muscle cars, Asian sports cars and classic competition cars. It will be held at Noosa Woods Park at the end of Hastings Street From humble beginnings in the late 80s the Noosa Beach Classic Car Show last year had more than 280 exhibitors and 5000-plus visitors. The show runs from 9am to 3pm; exhibitors must be parked by 8.30am; judging takes place from 10am-1pm; and the presentation of trophies is at 2pm. Tickets are $5 for spectators (children under 14 free) and $25 per car exhibited which includes two adults. The club invites high quality and interesting classic vehicles to enter, not necessarily cars straight off the show room floor or rust buckets from the barn. Egg & Honey Face Mask – suitable for all skin types Beat one egg white until it's stiff. Add 1 tablespoon honey and stir thoroughly. Apply all over your face, avoiding the eye area, and leave for 20 minutes. Rinse off with warm water & dry thoroughly. Egg Mask for Dull Skin Whisk a couple of egg whites and apply directly to the face (avoiding the eyes and mouth) then leave for 10-15 mins allowing the egg whites to dry, then rinse off with warm water. Egg White Under-Eye Treatment Whip one egg white until it's foamy. Apply one thin layer under the eyes to

noosaville Once a sleepy riverside village, Noosaville has been transformed into a thriving area with notable precincts that attract locals and visitors alike.

ith its kaleidoscope of shopping, dining and leisure options, down by the riverside is a real crowd pleaser and only a five-minute drive from cosmopolitan Hastings Street. The tranquil broad stretch of the Noosa River is edged with green space and runs parallel to Gympie Terrace. arly Cottam was born with determination in her veins. Raised and educated in Launceston, the self-confessed tomboy admired her father’s love of speed from cars and motorbikes to jet skis but she was only a kid so resorted instead to rowing. Piecing life together... There are hoarders of everything under the sun out there but when it comes to serious collecting John Auricht’s obsession for jigsaws takes some beating. A 24,000 piece jigsaw, just one of 120 adorning the walls, ceilings and more of John Auricht’s home will soon be surpassed in size, but where did it all begin? The first jigsaw was a 250 piece cardboard jigsaw of farm animals I completed at 10. It quickly grew when my parents bought my brother and me ten puzzles which we did in separate spaces until they bought us a table tennis table. We moved to Queensland from the Barossa Valley when I was 16 and I commenced an apprenticeship in carpentry, so had money to buy puzzles and always on the look-out for larger puzzles with 500, 1,000, 1,500 plus pieces in toy shops, then off the internet from overseas. I prefer photographic scenes, bright and glow in-the-dark puzzles. Is there a degree of difficulty and do pieces go back in their boxes after completion? Difficulty depends on the number of pieces, large sections of colour as in sky, ocean and trees, if colours all blend in together or if the jigsaw is say doubled sided. For fifteen years I carted around approx 60 1,000 piece puzzles I’d made up and stored them on shelves in the garage. That was until we built the deck on house and I had a brain wave to line the ceiling with the puzzles which had to be glued to a backing board, sealed and framed. Puzzles are never given away or swapped; I just keep buying more. Did you have to move house to accommodate your obsession? I bought a home when I was 30 so I could store more puzzles. I made coffee tables, dining tables as well as children’s wooden jigsaw puzzles for my business called Paramount Puzzles which has approximately 30 different designs, including one, two and three layers, with smaller pieces for the younger children to larger pieces for the younger ones. There are 120 plus puzzles and still counting on the walls and floor with about 60 on the verandah ceiling, 25 puzzles that glow in the dark in a portable room plus there’s a Where's Wally puzzle in the toilet. The total number of pieces is easily 210,000. How many pieces in your biggest? The world’s largest commercial jigsaw puzzle called Life consists of 24,000 pieces, is 4.3 metres long and 1.6 metres high and equates to the world record of 295 working hours piecing it together. There were four packs of 6,000 pieces each which were mixed together before being made. As far as we are aware no one else has done this in Australia. Karen (partner)

It comprises everything below and above the sea including the lost world, had to be sorted into many containers and was assembled on our dining table and stored on different boards in our office. What does Karen think about all of this? Where do I start, what an accomplishment. John is a very patient, totally inspirational and extremely focused. My job is to put the last piece in all the puzzles, which I suppose is my reward! Since we started renovating our home about six years ago, John joked that he was going to have the architect change the plans so we would not have any windows in the extensions. His latest venture with the 24,000 pieces was quite trying at times as that was all our life revolved around for almost three months. We’re running out of room which does concern me especially as he imagines building a home out of concrete tilt panels which he has done for a house in Peregian Beach. Tell me about the two of you outside jigsaw world. We’ve known each other for 14 years, lived together for nine and engaged for five. John, a foreman concreter is too busy with puzzles to get married. Karen (Stukla) has a daughter Justine who is nearly 18 and we have a cockatiel called Marty, a blue heeler called Shadow and we both enjoy renovating, gardening and cooking together. We’d love to visit some of the places depicted in the puzzles especially the ones of Fiji and Canada and the 18,000 piece puzzle in the office reminds us about going to Africa and meeting Simon who we’ve been sponsoring for five years What’s next? Karen is cringing but a 32,000 piece puzzle is now available. I’d also like to display the 24,000 piece one in a resort, gallery or tourist attraction such as Underwater World, be commissioned to make a 24,000 piece puzzle, also organise a fundraiser for a couple of charities with foam sections/pieces that could be painted by local artists, auctioned off and ultimately pieced together and cover a basketball stadium.

Winter Sails Whether bathed in winter sun on the beachfront or enjoying the evening warmth of indoors life doesn’t get much better than a table at Sails where the fine fare, service and wine, mirror the stunning location implicitly. Seafood chowder makes a welcome return and Paul Leete, who has been managing the burners as executive chef for 14 years describes it as “New England-style based on quality fish stock and a little cream. The chowder is thickened slightly by the addition of potatoes that break down during the cooking process. It gets its background smokiness from a base of sautéed pancetta, is not thick and gluggy, is more refined and showcases the beautiful poached seafood. Mudcrabs are sadly near the end of the season however there’s the ever-popular Moreton bay bugs from Gladstone, some weighing a whopping 500g each. The tail meat is removed from the shell, tossed with pink peppercorns, fennel seed and dill then

grilled and served with a garlicky skordalia and yellow butter beans. Paul also loves the “seafood ceviche of fish, prawns, scallop, cuttlefish - all local of course, lightly marinated in lime juice to set the proteins in the seafood then tossed with fresh zested coconut flesh and drizzled with coconut cream.” The cheese board proudly showcases the best of Queensland and Paul says not to forget saluting the start of the strawberry season. “We serve a white chocolate panna cotta with a vibrant red strawberry soup and both fresh and dried strawberries. That was until Shane Stanley thought it would be wonderful if locals could also buy direct. When he started the markets in 2002, there were just 28 stalls once a month and 400 people lusting after the picked-this-morning bright red sun-kissed tomatoes, baby green beans, avocados, peppery rocket, plump icebergs, Swiss brown mushrooms, shiny leafed herbs, juicy pineapples, succulent strawberries, paw paws, mangos, lady finger bananas and water melon, meat, seafood, dairy, value-added products and so many more must-have ingredients. And let’s not forget the ever tempting coffee or cool drinks, piping hot poffertjes which are little Dutch pancakes or wrapping your fist around a German sausage in a roll smothered in mustard as you stroll around. Today there are 75 stalls every week which equates to around 120 businesses and farms during the year depending on seasonality. Everything's environmentally friendly, sustainable, organic, free-range, vine ripened, farmfresh, freshly squeezed or baked, wood-fired, hand churned, traditionally grown and/or of course can press green buttons. Stalls have a more shop-here, buy-me look with larger tables groaning with a veritable array of choices. Tomatoes now come in heirloom, varied colours and sizes. Oodles of vegetables and fruit sit proudly beside eggs, finger limes, giant garlic, kaffir lime leaves, micro herbs and gerberas. There’s handpicked spanner crab meat, Mooloolaba green prawns and gravalax, wagyu beef, lamb backstraps, crocodile, quail, smoked meats, chevre, brie, fresh mozzarella and Swiss-style cheeses, artisan bread, macadamias, bush foods, preserves, d’vine relishes, dips, lime salt, olive oils and olives. Eat there or take home fare varies from bacon and egg rolls, curries, Japanese ramen, Cornish pasties and Eccles cakes, gourmet pies, quiches, satay, dumplings and if you’re looking for a gift including something sweet you cannot go past the deluxe nougat, fresh rocky road, Waterman’s handmade lavender soap, made-with-love skincare plus clever handcrafted bread boards and wooden spoons. Shane who has set up four markets and will now use his expertise to open markets in northern regions of Queensland says: “The market has become a hub for farmers and provides an honest day’s pay for an honest day’s work. recipes Whole Roasted Quail stuffed with Pear, Coriander, Ginger and Cashew Nuts Packham Triumph Pears... These pears have the longest season of any pear variety and are available from now until January. One of the only fruits to prosper in the unusually cold and wet conditions seen in growing regions this year, the pears will be large in size and bursting with flavour. Packham’s Triumph pears were created in Australia by Charles Packham in 1896 when he crossed a Williams’ pear with a Bell pear. This hybrid offers the best qualities of both. It is slow-ripening, and its trademark green flesh fades slightly in colour when ripe. For this reason, they are often confused with the Williams’ pear, which turns luxuriously golden as it ripens. Pears are a healthy snack rich in fibre, which can help lower cholesterol. According to the Glycemic Index, pears are low GI (41*) to offer longer-lasting energy.

Whole Roasted Quail stuffed with Pear, Coriander, Ginger and Cashew Nuts Serves: 4 4 whole quail (we recommend Game Farm) 2 bunches bok choy or similar Asian style green, washed well and trimmed 2 tbsp sesame oil For the stuffing: 2 cups homemade white bread crumbs 1 Packham pear, grated at the last minute 1/2 bunch fresh coriander, roughly chopped 2 cm piece fresh ginger, peeled and grated 150g raw cashews, roughly chopped 3 long shallots, finely chopped, green part only 1 free range egg, lightly whisked 1/4 cup olive oil Salt and pepper Pre heat the oven to 200 C For the stuffing: Place all the ingredients except the egg and olive oil into a large ceramic bowl and mix well. Add the egg and olive oil, season and stir until the mixture is well combined. Place the stuffing mixture evenly into the cavity of each bird and close off using a toothpick. Season the birds well with salt and pepper and place them into a large baking tray and into the pre- heated oven for 20-25 mins or until just cooked. Remove the baking tray from the oven and allow the birds to rest for 10 mins. Meanwhile, place a wok over a medium high heat and add the sesame oil. Add the bok choy and stir fry for 2 to 3 mins or until just wilted. To serve: Divide the stir fried greens onto 4 plates and place a bird on top of each one. Pour over any juices left in the bottom of the baking tray. Serve immediately.

AS A KID AND A TRIPLET, ENGLISH-BORN CATHERINE FARRELLY HAS FOND MEMORIES OF TRADITIONAL SUNDAY LUNCHES WITH ALL THE FAMILY.

H

er earliest memory of cooking was aged five with her dad eating everything she put on a plate whether he liked it or not. At school in New Zealand she won winning competitions and eventually her passion for food evolved into a hospitality career working at some of the better-known restaurants in Christchurch. Bitten by the travel bug she gained further experience in England and Spain and as a flight attendant for the New Zealand airline Origin, discovered fine fare and top wines at every stop-over until she married and was whisked away to Australia. In the first series of Masterchef, Catherine reached the final 25 in Queensland, an excellent effort considering 7,000 people had applied on-line. This was whittled down to 250 for an initial audition. ‘We had to be there at 6.30am with a dish prepared dish that could be eaten cold,” recalls Catherine adding people were dressed up in all sorts of costumes. “One lady came as a builder and instead of hammers and nails had kitchen utensils. I lost count of how many times everyone yelled ‘welcome to Masterchef’ to camera. “I waited until 2pm for my name to be called and with eight others critiqued each others dishes, then had a one-on-one with the producers, who told me they’d call – you know the ‘don’t call us, we’ll call you’ scenario. But they did. .After jumping around the house with joy, it suddenly hit me - what was I going to cook. “The next day we had 45 minutes to cook then 15 minutes to finish off the dish in front of the judges. There were only six places up for grabs so it was going to be tight. Unfortunately the answer was no however I felt more motivated than ever to pursue my passion for great food.” Catherine worked as the cellar door manager for the Symphony Hill wines, rated 4.5 stars by James Halliday, the first in Queensland winery to win gold at the 2005 Sydney Royal wine show. Now her ultimate dream of owning a restaurant has come to fruition. “The fantastic location of Blue Angel looking out across the river plus the beautiful sunsets complement the beautiful food perfectly,” comments Catherine, adding Robert Young, who did his apprenticeship at Brisbane’s Azafran under Marc Bocquee and worked in Sydney at Pyrmont’s Sugaroom, has stepped up to the

plate as head chef, a role he is relishing. “After two years working with former owner/chef Daniel Mosedale, Robert is adamant about continuing Daniel’s passion for high quality local organic produce such as Spanner Crabs Noosa and Steve Waugh’s fruit and vegetables, to provide diners with a gastronomic experience they will never forget. “The menu will change from time to time to follow produce in season and without giving too much away, favourite dishes such as the barramundi, Petuna ocean trout and of course the hot ice oysters and chocolate tasting plate will stay. New additions will include Dakota Vale duck confit, spanner crab soufflé and much more.” Pork Belly The award-winning wine list will, in the main remain as is, although Catherine says there’ll be alterations depending on vintages available. “And of course I’ll be looking at introducing some Queensland wines as the quality from the Granite Belt region has increased dramatically with many such as Symphony Hill winning awards.” Needless to say Blue Angel’s reputation for excellent service will still be a talking point and stay tuned on Facebook and Twitter for the latest on forthcoming events including a New Orleans jazz evening in August. he latest eatery receiving glowing reports from foodies is Tempo. Coowned by familiar faces from Aromas Sam Ingham-Myers and Jules Santisi with Aromas’ owner Brent Ogilvie and Jay Fisher the former sous chef of Aromas heading up the kitchen, the word is out. Everything is fantastic especially the pizzas. Eating al fresco, enjoying an on-tap Peroni and bubbles, you can watch the boats bobbing on the river and the kids playing in the park. Perched on the wharf are two quintessential Noosa restaurants with uninterrupted views over the river and amazing orange-hued sunsets. At Ricky's River Bar + Restaurant there's a knowledgeable and friendly front of house team and the popular and talented Glenn Bowman, formerly of Sunshine Beach’s Alegria, heads the kitchen brigade. Next door, Wasabi has Hajime Horiguchi plating up contemporary Japanese, which national food critics continually rave about. The restaurant is arguably one of only a few landbased restaurants in town where you cannot see other buildings, people walking, or cars driving past. Those with an eye and an inquiring mind for real estate will have a field day peering into the windows of Tom Offermann Real Estate which also looks after holiday accommodation. "Two hundred holiday apartments fringe the waterfront peninsular formed by Quamby Place, so that means that we are always surrounded by happy and relaxed holiday makers eating at our restaurants and cafes. This creates a wonderful environment in which to work and needless to say a lot of walk-in business,” says the perennially happy Tom. enowned for its variety of fresh food and picked-today produce, the Original Eumundi Markets has launched Market Chef which market manager Peter Homan says is all about students from high schools across the Sunshine Coast battling it out in an outdoor kitchen every Wednesday: “Our young market chefs will compete with new recipes each week, all of which will feature ingredients from local growers and suppliers to highlight the quality and diversity of produce available at the markets. The Market Chef battles are hosted by chef Peter Wolfe, renowned for his kitchen wizardry and for his exciting recipes incorporating bush foods and organic ingredients. He regards it as a privilege to be sharing his knowledge of food selection, preparation and presentation with the students as well as market visitors.

“It’s hard to imagine a more vibrant location for a cooking class – the colours, music and the market buzz combine to provide a unique backdrop for the students to cook,” Peter says. Schools competing for the title of Market Chef 2011 are Immanuel Lutheran College; Peregian Beach College; St Theresa’s Catholic College; Burnside State High School; Maroochydore State High School; Sunshine Beach High School and St Andrews Anglican College. Most recently St Andrew’s were in a heat (and won) against St Theresa's Catholic College. Conducting the cooking competition was chef Max Porter who used to have Native Sun, a Noosaville restaurant famous for duck. Included on the kid’s menu was golden potato pancake with panache.

aised in the deep, cool, remote and purest coastal waters in the world at New Zealand’s Marlborough Sounds in the South Island, Regal King Salmon is a naturally rich source of long chain omega-3s which gives a luscious, elegant texture and rich buttery flavour plus has important heart health benefits. It can be beneficial for the joints which great news for adults as well as a healthy mind for all life’s stages, including young children’s development of the brain and eyes. It’s an excellent source of highquality protein containing most of the essential amino acids; is a natural source of vitamins A, B12 and D, as well as niacin and thiamin; and is low in sodium, which is linked to a reduced risk of hypertension. Although the salmon will keep in a fridge (at less than 4°C) for three to four days perfectly well, it is best eaten as fresh as possible. If frozen in a sealed freezer bag, salmon will last up to six months in the freezer. You should always defrost seafood in the fridge. Salmon is ready to eat when the flesh turns opaque. It is quite safe to serve salmon rare and it can also be eaten raw. Salmon cooks very quickly and should flake easily when tested with a fork. For oven baking place the salmon in a baking dish that has been greased or lined with foil. Brush the fish with oil, lemon juice or a mixture of both. Bake at 180°C, allowing eight to 10 minutes for 2cm thick fillets. A good rule of thumb is to measure the whole fish at its thickest part and cook it for 10 minutes per 2cm thickness (approximately 45 minutes for an average 2kg fish). When poaching avoid using thin fillets. Simmer in liquid flavoured with slices of lemon and parsley for four to six minutes ensuring there is enough liquid to cover the salmon. Poach whole salmon for six to eight minutes per 200g. Poached, the flavour improves if it is served the next day at room temperature. For the BBQ, cooking time will depend on the temperature. If it can be controlled, a mediumhigh heat should be used. Brush the salmon with oil and the season. For whole salmon, season the fish and brush

Plunge immediately in iced water to cool down quite quickly to stop the cooking process. Place peas in a food blender with vegetable stock and olive oil and blend till quite smooth. Pass puree through a fine mesh sieve then season with salt and add lemon zest. Refrigerate till needed. Salmon Mix sea salt and sugar together and rub all over salmon and set aside for ten minutes. Once time is up rinse fish and pat dry. Slice fish across ways and place skewer thought he middle of the fish so it resembles a salmon paddle pop. Place salmon paddle pops on serving platter, place pea puree in a piping bag and pipe onto salmon. Continue with a few pearls of caviar on pea puree top with mixed baby herbs and grate fresh horseradish sprinkle with black salt and serve. Serves 20

e knows everything you need to know about shrubs and trees, flowers, ferns and pot plants. So, if your green fingers have lost their lustre, visit him at the Noosa Gardener Nursery near Coles at Noosa Junction. Growing herbs even with this chilly weather around is another specialty. Philip suggests having them at your finger tips in the kitchen is not just essential for the cook but they also make a beautiful and fragrant decoration. “How fulfilling it is to pick a fresh sprig from plants you have grown yourself,” Philip says. “Herbs are easy to grow, cheap to buy and can fit anywhere. Don't wait till you have a perfectly laid out master plot - just get some planted. Put them on a windowsill, in pots on a balcony, in between plants in the garden and in the veggie patch, but make sure they are close enough to the kitchen to pick them fresh each time you are cooking. “When we moved house I made the mistake of planting everything in the veggie patch down the back, now we have chives, parsley, basil, oregano and rosemary just near the front door. With very little effort I can now transform a toasted ham and cheese sandwich into a gourmet delight. “Herbs look good in the garden too. You can use oregano, thyme, especially lemon and pizza thyme, and rosemary Huntington carpet as very attractive ground covers. Curry plants and Rosemary Tuscan blue make excellent low hedges. Chives and parsley look great as a border.” Philip says you cannot go past growing herbs in containers and he has them potted up ready to take pride of place if that’s your preference. Rather than ignore the tragic history at Sydney’s Quarantine Station, it’s been embraced with luxury accommodation, numerous bells and whistles and a good dose of paranormal activity.

W

ith its dress-circle location at North Head, secluded in a sandy cove beside native bushland and towering cliffs and sweeping views of Sydney Harbour and city centre, the truly unique Q Station on 36 hectares, is the site of Australia’s first and longest-running quarantine station, a place of internment for more than 13,000 people over 150 years of operation. The museum explains the strange limbo of months of quarantine for ships that entered the heads with even a whiff of bubonic plague, Spanish influenza, cholera, typhus fever or smallpox on board. Suspect ships stayed several days or many weeks until the threat had passed or were amongst the unlucky passengers were 500 who died and were buried on site. All Q Station’s rooms have been sensitively adapted in the contemporary style of a modern hotel, from the original first and second-class accommodation wings, which were deliberately positioned to catch the best of the site’s sea breezes and afternoon sun to counteract the miasma or “bad air”, thought to be the source of illness. Breakfast is served in the original second-class dining room, the Engineroom bar overlooks Quarantine Beach, the wharf-side luggage store is a fascinating museum and visitor centre, outside are dozens of stone inscriptions that record ships’ arrivals on

wharf-side rock faces and nearby and the station's original boiler house is an impressive restaurant which instead of finishing with a night cap why not join the ghost tour. It’s fun for believers and sceptics alike. Historians have narrowed ownership to two people, the most likely a man who died of smallpox before he could inform his family of his illness or the location of their inheritance. Today it’s our good fortune to sleep amongst the spirits and appreciate the journey so many took before Q Station became a powerful attraction and historical getaway. I

n the eyes of the Chinese, the symmetrical beauty and longlasting quality of the camellia has long been appreciated by young lovers as the token for expressing devotion to each other. The petals reflect the spirit of a lady and the holder of the petals called the calyx, represents the young man entrusted by the lady as her protector. In their native habitat, the Ryukyu Islands and the islands of Japan, sasanqua camellias, the botanical name, grow from bushy plants to small upright spreading trees with some varieties almost vine-like. In nature they grow from creek gullies to sunny hillside locations and most, if not all, cultivated sasanquas are garden hybrids which tolerate sunny positions, semi shade and different soil types. The small evergreen tree or large shrub grows to around six metres tall and four metres wide. Outside Noosa’s John Scomparin says he uses sasanqua camellias in all gardens and landscape designs as appropriate

and wherever possible. “They are a wonderful, versatile shrub which has magnificent single or semi-double blooms in colours ranging from white though to deep pinks and reds, flowering from autumn into early winter. Once established they are quite drought tolerant, can be used as a specimen plant in the garden, as a standard, topiary or hedge, are easy to espalier or train up a wall on wire, or if grown in pots not only look fantastic but last for years. “Fertilise in spring with camellia and azalea food especially when young, also prune in spring after flowering with a good pair of hedge trimmers to maintain shape and bushiness. Once the new year starts, it is wise to stop pruning to maximise bud set and consequent flowering.” Look for sasanquas with their smaller flowers, as they are ideally suited to a sub-tropical climate and espaliering whereas most other camellias prefer part shade. John’s favourite varieties include Hiru single pink, Little Pearl double white, Jennifer Susan double pink, Mino-No-Yuki double pink, Yuletide single red plus Sestsugekka single white.

Qld buzzing in anticipation when the 3 day event returns for its 27th year to the Nambour Showgrounds from 8th 10th July. One of the new additions to this year’s expo is the Living Backyard feature, an inspiring collection of displays designed to reflect various backyards showing how you can create a bio-diverse environment in your own outdoor space. Visitors will discover how to make their own living backyard wildlife-friendly with simple ideas to attract butterflies, bees, birds and other backyard critters to their gardens by providing food, protection and nesting sites. A celebration of all things gardening, featuring the largest range of plants in one

ubbed Bette Davis because of her dying scenes trying to get out of school, proved to be the genesis of Alli Pope’s acting career in film and television including Neighbours and Blue Heelers. She also had a chain of retail clothing outlets in Melbourne, specialising in swimwear and active wear. Fast forward16 years ago. A move to Noosa proved to be fortuitous in more ways than one. John Bailey’s family background was entrenched in building and horse racing. His parents owned a string of successful thoroughbreds, the most famous being Galilee, winner of the 1966 Melbourne Cup, 1966 Caulfield Cup and 1967 Sydney Cup, the only horse to ever win them all in the one season and still one of Bart Cummings’ best horses. John and Alli owned Lazuli Blue for ten years which they enjoyed immensely, winning awards for best breakfast which no doubt had a lot to do with John’s hollandaise sauce, the recipe he still will not divulge today. After 13 years together they ‘eloped’ to the Whitsundays on Valentine’s Day and with six kids between them plus Bob the big sooky Rottweiler, they’re reminiscent of the Brady bunch. “We do everything together. John really fell into theatre because I loved it so much, so he will produce, direct even act, plus build all the sets and make them ‘tourable’, which at times is difficult,” explains Alli about their company Jally Productions which has

worked with well known stage identities such as Peter Sumner who directed their production of The Castle; Val Lehman who directed Steaming which toured throughout Queensland, NSW and Victoria with 45 shows in 30 venues; and One Flew over the Cuckoo’s Nest with Tony Bonner. “Currently we’re working on Ladies Night, with Ken James, Dale Pengelly, Steven Tandy and Barry Williams, (Greg of The Brady Bunch). What a hoot. Ladies Night, the original Full Monty story will be touring Australia for about five months, which is huge for us. “Over the last two years we have moved into children’s theatre, especially interactive and educational programs. This has given us the chance to perform at The Adelaide Fringe Festival and throughout Queensland schools. Next month one of my own shows, Snow White and the Seven Cool Dudes will tour Queensland and NSW for a month which is very exciting! “I teach drama at The ‘J’ for six to12 year olds. Some of my students have been involved in our shows or have been cast in TV commercials and local films through Jally Casting. One girl is just 16 and performed with us at The 2011 Adelaide Fringe Festival and will tour with Snow White.” “In the past few years I’ve had the opportunity to work with local filmmaker, Tim Lennon, doing some of the casting and directing. His latest film, One Way or Another has just ‘wrapped’, is currently in postproduction, has an interesting twist and features a lot of local faces. It is expected to be released in September.” Appearing nude of semi nude for shows such as Steaming, Alli says it’s no big deal. “It’s only the character stripping off, not me, so I just get on with it. I find some people get embarrassed if they’ve seen me naked. As an actor on stage, I feel naked most of the time anyway - clothes on or off!”

iffany Jones Fine Art Gallery at Buderim are delighted to be showing the Sunshine Coast’s most impressive selection of fine art with nearly 100 paintings by Australia’s most eminent artists. Sourced from a range of excellent private collections, the current display at Tiffany Jones Fine Art Gallery is a celebration of work by some of Australia’s best known and highly regarded artists. Gallery director, Tiffany Jones said: “As part of our Winter 2011 season, we are thrilled to offer some stunning paintings with perhaps the most exciting being three beautiful still life oil paintings by Australia’s greatest living female artist, Margaret Olley.” “Margaret Olley’s fame continues to grow with her distinctive face being the subject of this year’s winning Archibald Prize entry from Sydney-based artist Ben Quilty. Olley was the subject of another other Archibald Prize winning entry by William Dobell in 1948” Ms Jones said. Being the Queensland specialists for artworks by Norman Lindsay and Hugh Sawrey, Tiffany Jones Fine Art also has special pieces by these artists now available. Famous outback painter Hugh Sawrey has a range of oils on show, including a magnificent action piece titled “The Stockman” which is illustrated on page 32 of the book “The Stockman” published by Ure Smith Press in 1991. Two valuable watercolours by Norman Lindsay valued at $38,000 and $69,500 are also showing at Buderim. Tiffany explains that both are from the 1920’s, regarded by art experts as the period when Lindsay painted his finest watercolours. Another highlight of the Winter 2011 exhibition is a striking and large oil painting by Garry Shead who is currently one of Australia’s most collectable artists. Tiffany explains that the oil painting “The Edge”, valued at over $170,000, is a desirable work because it comes from Shead’s lyrical and much sought after D.H. Lawrence series of the early 1990’s. Garry Shead’s D.H. Lawrence Series was influenced by Lawrence's novel “Kangaroo”. Shead became intrigued by Lawrence after discovering letters by the author on an expedition to the Sepik Highlands in Papua New Guinea in 1968. In a special coincidence, the gallery is also showing a work each by the famous late duo, Sir Hans Heysen (1877-1968) and his talented daughter, Nora Heysen (1911-2003). Hans Heysen is represented by a softly toned 1920’s watercolour depicting his signature theme of cattle grazing under stately gum trees on his rural property “The Cedars” at Handorf in the Adelaide Hills. Hans Heysen won the prestigious Wynne Prize for landscape painting a record 9 times. Other works by other eminent Australian painters at the exhibition include pieces by Sir Sidney Nolan, Albert Namatjira, David Boyd, Pro Hart, Patrick Kilvington, Tom Garrett, d’Arcy Doyle, Geoffrey Proud, Mirka Mora and Judy Drew; plus pieces by Michael Challen, Robert Todonai, Robert Pope, Kate Smith, Simonn Schumacher, Densie Daffara, Antje Collis and Rachel Carmichael. ith a promise of an ‘Australian-first' council model that gives more power to residents, reinstating the controversial population cap and keeping rates stable, de-amalgamation heavyweights including former Noosa mayor from 1988 to 1997 and alliance spokesperson Noel Playford, plus a posse of youthful campaigners and agitators such as funds manager Ptor Gjestland, architect Sharyn Kerrigan and general manager Ryan Taylor, share their views on why the NIA is determined to break away from the welded Sunshine Coast to achieve a new Noosa Council. WHAT IS THE NIA?

I believe the amalgamation has not achieved any significant benefits and has eroded community respect and identity. It is too big and elongated to work as one region. The proposed new model for the new Noosa Council is inspiring and innovative. Ryan Taylor: I was raised in Noosa and am now raising my own children here. In 2008 everyone I know was part of the 96 per cent of the community who voted against de-amalgamation. We want our council back so we can selfgovern and once again be in charge of our own destiny. This is not about elitism, is more than just an identity crisis and is about preserving and sustaining the townships of Noosa for future generations to enjoy and appreciate. We currently have two councilors on a council of 12 therefore we are being taxed without appropriate representation. We have no control over our future. The current conglomerate council with its ‘one size fits all policy’ is clearly not working.

Noel Playford: The NIA (Noosa Independence Alliance) is an alliance between four community groups - Noosa Parks Association, EDV Residents Group, Friends of Noosa and the Noosa Biosphere Association.
