1/2. Blue Angel Menu Tasting... Local accommodation managers and front of house staff were afforded the pleasure of taste testing the new season menu at Blue Angel. As the afternoon event launched into sunset, glasses of wine and beer were the perfect accompaniment to the tasty delights from chef/owner Daniel Mosedale. New menu items included Betel leaves with Noosa spanner crab, green pawpaw, peanuts & roast chilli with palm sugar and lime dressing; Grilled Hervey Bay scallops with parsley, garlic and Pernod butter with brioche crumbs

Tom Offermann volunteered his time as auctioneer at Ricky’s River Bar and Restaurant’s flood relief lunch and raised more than $25,000 from the capacity crowd, who indulged in six courses with matching wines. An amazing holiday to the Cocos Islands attracted a bid of $3,500 and a Tinbeerwah couple paid $6,000 for a dinner party, which somehow during the auction was raised from eight people to ten and a carton of Spanish wine was increased from one to two. Ricky’s head chef Glenn Bowman will create a Spanishthemed feast in their home and be served by the effusive Paul Holmes.

Although the opening of Sake at Eagle Street Pier was delayed by the Brisbane floods, nothing could stand in 5. the way of its fabulous food and hospitality at the launch celebrations. With endless flutes of Veuve Clicquot, colourful cocktails and trays of stunning signature dishes, guests were delighted to savour the ambience of the riverside venue.

Celebrity chef and co-host of My Kitchen Rules and restaurant owner Manu Feildel wowed guests at the launch of his first cookbook in Noosa recently. Two days of sold-out lunches at Berardos was testament to Manu's star power - and he didn't disappoint - as he delighted, titillated and even juggled for his appreciative audience. If the long queue of eager purchasers waiting to have their copies signed is anything to go by, Manu's French Kitchen will be a best seller. Investing in the future... She’s young, savvy and as Helen Flanagan deduced, Rebekah Offermann also has all the hallmarks of a future entrepreneur.
M
arketing residential property is predominantly
the domain of men and it’s unusual for young women to choose it as a career. However with
a dedication to the great outdoors, real estate in her blood and armed with a bachelor of business degree, why wouldn’t pretty 20-something Rebekah Offermann choose real estate? And in her home town? Rebekah grew up in a quiet street in Sunshine Beach, played with the neighbouring kids in the National Park across the street or down the steep hill at the beach. At university she majored in advertising and public relations for her business degree and recalls the “best part was getting right into the psychology and strategy of marketing to create communications that were highly targeted and effective. “After uni I landed a job at one of the big ad agencies in Rebekah Offermann
Brisbane, where I worked in client management on some interesting accounts, the majority of them real estate or property related.” Bitten by the travel bug, she was off to see the world at high speed. “Thirteen countries in thirteen weeks, including South Africa, most of Europe, and some South East Asia,” recounts Rebekah, whose first car was a Toyota Echo sporty model with many mother-pleasing safety features. “Some of the top experiences were shark diving with Great Whites off South Africa, jungle trekking in Thailand, sinking our canoe and getting marooned on the outer reef in Fiji and getting lost in the back alleys of Marrakesh

when some local kids told us the wrong way back. But my all time favourite country was Spain. I loved the atmosphere, food, countryside and coastline. I ducked over there again late last year to visit a friend and we had an absolute blast touring around in a little rental car.” “I also took a working holiday in 2009 and lived in Japan teaching English for a year in a small private independent school, to kids from four to 14. This was one of the most amazing experiences; the kids were so much fun and really enjoyed learning, especially going on excursions to the beach or the athletics field with Miss Offermann.” Having dealt with developers at the advertising agency and a yearning for real estate sales because it represented such variety and enormous opportunities including meeting interesting people, she joined Tom Offermann real estate where her father is the principal and being young was advantageous. “I think when you combine youth with energy and a passion to excel, it’s a dynamite combination,” says Rebekah whose first sale was a block of land in Tewantin four weeks after she started. She regards her dad is her mentor in business and mum for life advice. “She has an amazing moral compass so I always feel better after a chat with her.” Seeing the levels of success that can be achieved through innovative thought and hard work has been a huge inspiration. “I believe ‘history’ is history, it’s not important to be able to drive around and rattle off what you’ve sold over the past 20 years, it’s about knowing the market now and being able to change with the industry plus keep up with relevant technology and innovations.” Creating competition amongst buyers, allowing the property to reach its full price potential makes Rebekah a big fan of the auction process: “The marketing campaigns we run, generate significant urgency and excitement from the market, resulting in a cash, unconditional contract for the seller. The average days on market for an auction property is also significantly lower than for private treaty and in this industry time is an important factor. “A large portion of our enquiry comes from the internet, but in turn, a lot of web traffic is generated by press advertising and other mediums. A comprehensive marketing campaign is still a vital investment, to ensure that every potential buyer has seen the property so the seller can be assured that the maximum price in the market has been achieved. “For me closing a deal is the same rush, whether it’s $400,000 or $4 million. It’s about having all parties in agreement and everyone looking forward to the next chapter.” Rebekah’s latest set of wheels is a zippy Mini Cooper S or if it’s a quick trip to the beach she hops on her Vespa – another brand with “personality. Snowboarding is one of my favourite things and I recently bought a stand up paddle board which I enjoy for the exercise and fresh air. I’m yet to graduate to paddling in the ocean, mainly because I can’t fit the paddle board in the Mini.” Rebekah has Iceland, India and South America on her wish-list, loves going to Thai and Italian restaurants with friends, cannot live without her iPhone and iPad and is crazy about leather handbags and shoes. “If a big package gets delivered to reception, the girls usually know I’ve been shoe shopping online again. And more investment properties are definitely in the future plan. I purchased my first property 5 years ago and it has proved to be a strong performer in terms of capital gains.”

ohn Pilger, Clive James, Tim Winton, Li Cunxin, Jack Thompson, Bruce Petty, Bruce Beresford, Tom Burlinson, Ken Done, Piers Lane, Jane Rutter, Max Gillies, Jean Kittson, Tim Flannery, Geraldine Doogue, Bryce Courtenay, Kylie Kwong, Robyn Nevin and International Stars of Ballet comprising principals from the San Francisco Ballet, are some of the diverse talent who’ve been part of previous Noosa Longweekends. This year also promises an exceptional line-up. So what was the genesis of the 10 day cultural feast and who was on the foundation committee? “Queenslander Brett Dean, who had spent 16 years as a violist with the Berlin Philharmonic, had just returned to live in Noosa and he became a driving force behind the idea of starting a local arts festival,” says David Williamson, who on reflection admits there was naivety with the venture and the box office was run from a kitchen table. “He also agreed to procure classical musicians cheaply. Leonie Palmer was our culinary expert and became the first president. Michael Gloster volunteered to enthuse guests about the local environment, I was responsible for theatre, Kristin for literature and we shared film. “We took roles in ‘Charitable Intent’. It was reminiscent of our earliest ventures on stage, in the 1970s at little theatres like Melbourne’s La Mama. We missed cues, muffed lines (David more than Kristin!) but the audiences didn’t mind and the season was extended. We were amazed. “In the first few years performers were not offered any payment, just an airfare and a few nights free accommodation. For this they were expected not just to perform but to mingle with the locals

and become part of the scene. Bryan Brown came down offstage and shared anecdotes with the audience over a few beers, and then disappeared into the surf for days with his newfound friends. Film critics Margaret Pomeranz and David Stratton judged short films screened on a wild, stormy night in a huge tent that was packed with excited young film-makers and became mentors to many of them. Booker Prize winners Peter Carey and Tom Keneally waded in the shallows on Noosa beach with their trousers rolled up, chatting to other paddlers. A sceptical local audience confronted international journalist John Pilger but after his talk most of them queued up to buy his books and shake his hand. And who could forget the opening night when fireworks exploded from barges out to sea and lit up the whole of Noosa beach, after which hundreds of people of three generations danced in the sand to the live performance of that timeless band, the Delltones? “If we couldn’t find enough free hotel accommodation for our actors, musicians and artists we asked local people to lend them a house. Michael Leunig and his family stayed for a week in a luxury house and managed to blow up the spa, but he generously donated so many paintings to the festival that we didn’t even mention it. String quartets rehearsed in our living room and committee meetings were held on a long table on our veranda. Volunteers drove the artists to their venues, took them sightseeing in their boats on the Noosa River and cleaned up after the parties. There were no paid staff and the event had no office. But by the end of the first, ten day Noosa Longweekend Festival we realised we’d have to keep going. The people had embraced it and were asking for more.” This 10th year of the festival, which also celebrates David Williamson’s 40th anniversary as one of Australia’s leading playwrights, will take place from Friday 17 to Sunday 26 June with 75 free and ticketed events including theatre, dance, music, cabaret, forums, literature , practical workshops, supper clubs, film, food and free community events. A new, David Williamson play has been the cornerstone of many festivals and 2011 will be no exception. Williamson will stage a number of preview performances (ahead of the play’s official world premiere) of At Any Cost. A sneak preview of the program ahead of its official launch on 3 May reveals James Morrison and Ita Buttrose will be attending, there’ll be poetry and Bollywood dancing workshops, a special ballet performance, foodie events, a black tie, celebratory dinner in honour of David Williamson and Brahms Requiem will be performed by the 70 voice Noosa Chorale accompanied by a 30 piece orchestra and soloists from Queensland Symphony Orchestra. Kerrie Friend lives in Las Vegas but as told to Helen Flanagan over a glass of champagne, Noosa is her favourite place in the world.
I
t’s been a long time between drinks downunder, in fact 17 years since the various Friend families had been together at Kerrie’s

Work kicked in once the family departed with Kerrie’s manager the indefatigable Max Markson, cracking the whip. “First stop was a Kerrie Friend, Greg Evans and mini Dexter secret Perfect Match reunion with Greg Evans and a very cute miniature Dexter, the original now residing in the Museum of Technology in Melbourne and hard to get out,” Kerrie says with a laugh, adding that these days Greg is a very busy marriage celebrant. “Woman’s Day magazine had the exclusive and it was a blast. We talked endlessly about the show, our funny outfits and hairstyles and watched a few episodes. I also caught up with Sue, his wife after about 10 years so that was a double blessing.” Kerrie’s book, Image 52 Weeks to a New You, which sells worldwide and was launched in 2006, is the basis of the television series. “It's an infotainment program about the spirit, soul and body but all done in an entertaining, lively way with the segments working beautifully together,” Fortysomething Kerrie, who also filmed a segment for A Current Affair in Noosa, explains. “It will vary each week from travel, beauty, fitness, healthy cooking, books, upto-the-minute fashion and the latest in health and wellness from around the world. We see it as an Aussie show but with an international flavour.” Melded into it will be topical ‘stuff’ from Kerrie and her US-born television producer hubby’s friends and celebrities in Tinsel Town aka Hollywood. “And one of the best things about the pilot is it features a long segment on Noosa – aerials shots and the beautiful surrounds. “In the future we see Noosa as the place where we live and produce television from however we’ll continue to have a US base. hat is it about shoes? Who can forget the bright, blingy satin blue, silver buckled Manolo Blahniks from Sex and the City; Carrie Bradshaw’s every woman’s dream walkin-robe with myriad gorgeous rows; former first lady Imelda Marcos owning up to having a fetish and 1,060 pairs; and Oprah Winfrey saying “I still have my feet on the ground, I just wear better shoes.” Well on its way to being etched in the annals of shoebiz history is Ben Nothling and Natalie Miller’s Holster Fashion. Might sound a far-fetched idea until you consider the jelly sandals, espadrille wedges and more have been seen on the feet of celebs and even royalty worldwide including Dannii Minogue, Katie Price aka Jordan, Kristy Hinze, Sophie Monk and the Duchess of Kent. They’ve even been called the ‘Rolls Royce of jelly shoes’ by a leading UK retailer and are sold in over 40 countries. Not bad for a couple who started with surfboard covers, shell belts and leather sandals imported from Indonesia. Brisbane-born Ben 35, the business director of Holster Fashion says Noosa-born Natalie 28, who he met in Hastings Street and is his business partner and wife, quit university studies when the brand took off in 2002. “We realised it was better for Natalie to focus on design rather than a uni degree, whilst I oversee the general running of the company, the production and delivery, shipping and managing all the distributors,“ comments Ben, who admits to a serious addiction to surfing, “the best sport in the world and the only way to unleash stress. “The Holster idea was conceived in Indonesia and in 2001 I registered the name which comes from the notion that when you go surfing in places like Indonesia, you sometimes take a surfboard called a gun for big surf. So where do you put your gun? In a holster. “We really stumbled into the business. I remember one afternoon sitting on the deck at home and Nat said she thought a shoe would look nice in a certain way, so we grabbed some leather
materials and started cutting and sticking them together to make the first Holster shoe design. I contacted suppliers but many didn’t want to deal with us because of the small quantities, however found one and in went our first order for 1200 pairs. It sold really well and we knew we were onto something. “Our first range of footwear was leather sandals from Indonesia. Selfridges did a nice order for these so we knew that we had half an idea if a massive account like them ordered your shoes. Now they order jellies from us each season.” In 2004, Natalie decided to use her natural flair for design to produce a range of jelly sandals, a relatively untouched niche in the adult footwear market. She focused on quality and detail, with the addition of bling diamante embellishments. It is this creative point of difference that has been Holster Fashion’s key to global success, further supported by an unparalleled commitment to high calibre production by their two Asian-based manufacturers. Jellies can be worn from the beach to the bar, are odour resistant, comfortable and have a slight arch support which is better for posture compared to wearing flat rubber thongs. Holster has 250 accounts in Australia including David Jones; ritzy stores in the UK such as Harvey Nicholls, Fenwicks, Russell & Bromley and Bentalls are stockists; and there’s a growing on-line business, however with all market leaders, other brands and factories are copying their designs causing many headaches and the need to constantly stay ahead. Despite all that they’ve made the decision to always reside and work in Noosa. “With the internet you can run a business from anywhere plus we’d never live in a city because here is the perfect place to live and a great environment to bring up children,” says Ben who’s excited about the imminent birth of their son. “Plus we love bush walking with our dogs, stand up paddle boarding and surfing, dining at say Rickys and Wasabi and enjoying a Heineken Beer, SA red wine or Margaret River rose. “Hopefully Holster will be the number one sandal brand in the world within 10 years. That’s our goal. Seeing women in other parts of the world wearing our shoes makes us the happiest. It’s more a feeling of achievement than looking at the bank account.”

Living in a Simone Leete
Making jewellery from liquorice allsorts and iced Vovo biscuits became the genesis to unpicking old lace and creating glamorous frocks, writes Helen Flanagan.
S
imone Leete is sold on vintage. Her great aunt Marjorie designed and made bridal gowns which grew into the whole shebang from offering cakes to car hire “Her house was like a treasure trove and she was always behind the sewing machine,” says Brisbaneborn Simone who became hooked on sewing and made her first garment, a pair of knickers when just nine, on a treadle machine similar to the one she has today. “She also made my mum’s clothes, some of mine and I still wear a black dress and beaded jacket which aunty Marjorie made for a wedding in Toowoomba when Mum was 17. I keep beautiful glass beads, buttons and laces stored in original 1940s Permaset (fabric ink) glass jars and just love and am inspired by the glamour and style of years gone-by. “The lady across the road helped me with

pattern making and often I adapted shop-bought patterns or vintage ones such as a jacket made in vintage brocade, for my school formal. “I am somewhat trend-driven or does that mean a victim of fashion? I used to hand paint T-shirts, dye Volley sandshoes, make studded leather belts and feather earrings. I still enjoy designing and making jewellery and accessories although like to think I’ve graduated since the early 80s when I varnished liquorice allsorts and iced Vovos to make brooches and necklaces and spend hours creating colourful statement pieces such as key rings from chip packets, which I would shrink in the oven.” Thoughts of working in the theatre materialised in the make-up department of Channel 7 during school holidays. This was followed by helping out on hair shows, photo shoots and live theatre and she designed costumes, painted the set and did makeup for the year 12 show. A year of studying costume and set design was the entrée to becoming a production assistant at Expo 88. “It was an incredible experience helping designers bring their creations to life using anything from fibre glass, foam, mirrors and lighting plus thinking outside the box to ensure headpieces were light and could be balanced by the stilt performers.” Simone and Paul Leete met in high school, married in 1993, and furiously saved for a trip around the world which turned into a big

material world... adventure although a hard slog as mortgage payments on their first house also had to be met. “Our first stop was Japan. We were detained at the airport with the threat of being sent home because we didn’t have visas - a slight oversight. We spent two weeks and nearly our entire savings there arriving in London with just enough money to rent a dodgy bed-sit on the wrong side of town. “I applied for the job in a beautiful boutique in Bond St and started the next day. Thankfully I was given designer outfits to wear but unfortunately my Doc Martins weren’t appropriate so had to invest in a fabulous pair of silver loafers. Paul worked ridiculously long hours at Terrence Conran’s Quaglinos restaurant. “The last two months we backpacked around America and Canada which was amazing. Paul tells the story differently because he had to carry all of his belongings and half of mine. You never know when a girl needs to throw on a pair of lime snake skin sandals or a fabulous sequinned frock do you?” After their move to Noosa in 1997, with Paul ensconced as executive chef of Sails, Simone was in her element dressing up for work and styling customers at boutiques such as Morag’s and Toscani. At the same time she was itching to realise her dream of becoming a designer. Mimi First was launched at Sydney’s Fashion Exposed in 2008. “The success is in the Forever & Always lifestyle clothing range which I design and have the production done in Bali. The collection is made up of easy care fashion essentials, is very feminine and in viscose with many styles featuring silk detail and colours exclusive
to Mimi,” says the ever-smiling, red-lipped Simone who is enamoured with her and Paul’s lifestyle which includes morning swims on Main Beach, afternoons unwinding on the jetty with a glass of wine and at home, admiring Paul’s prolific garden and his other ‘girls’ – Audrey the pussy and five eggs-cellent chickens. “I enjoy the freedom of design process, am drawn to natural fibres and of course vintage fabrics. I do all of the fabric dying, printing, beading and hand finishing. I also design couture stylegarments and high-end accessories and have created a number of one-off race wear outfits including shoes, handbags and jewellery for the invitation-only Melbourne Cup Fashions on the Field with entrants hand-picked by the organisers. I’ve been fortunate enough to finish in the top 10, three out of four times.” The 2010 entry, a structured dress and cape was complemented by a modern twist on a turban plus a commissioned jewelencrusted fingerless glove. This year bets are on that MiMi First will be first.

Crazy litt le thing called music... After an unbelievable journey on X-Factor, mentored along the way by Kyle Sandilands, Helen Flanagan thinks Andrew Lawson has the world on a string.
he Sony Music recording contract was within arm’s reach, but snaffled in the XFactor finals by Altiyan Childs with Sally Chatfield, the runner-up. Tears welled when the fresh-faced, laidback Andrew Lawson received a standing ovation and missed out on the final two spots with his rendition of Sinatra’s Fly Me To The Moon. But from his first audition to singing with James Blunt, he proved he has the talent to go places. Where did it all start? Born in Northern Ireland Andrew, his sister Alex and parents Julie and Harry, moved to New Zealand when he was six years old, then to Cooroy about five years ago. Julie says the family was surrounded my music, from in the car to ‘performing’ for grandparents, especially songs by Harry’s idols Elvis, Sinatra, Dean Martin and Willie Nelson: “Andrew started playing guitar at seven, took to the stage for the first time at the Dannevirke South School prize giving presentation, did a lot of singing in primary school, formed a band with him as lead singer and cut a disc to raise money for a new drum kit for the school. “Singing is the first thing he does when he gets up, the last thing he does before bed and he chose jazz when he auditioned for the Queensland Conservatorium, studying for a bachelor of Music degree, which he later dropped out of,” recalls Julie, who is PA to the principal of a real estate company, went to the 7 Network’s Sydney studios for every performance and thought: “Sundays were fine however the first elimination night and the following eight Mondays were nerve wrecking.” ''I just stopped going to the Conservatorium,” explains Andrew, who describes his songwriting as “John Mayer's lyrics style; Jack

My parents were shocked and wondered what I was going to do. But I said something will happen. Auditions for X-Factor and the thought of kick-starting my career came along so something happened.'' Andrew returned briefly to his former school Sunshine Beach High, landing on the oval which was swathed in a sea of ‘I love Andrew’ signs, in the X-Factor helicopter. He performed a duet of the R & B classic Shake Your Tail Feather with sister Alex and had dinner at home with his family and Kyle Sandilands, the celebrity judge that everybody loves to hate and who certainly doesn’t beat around the bush, before heading to the Noosa Surf Lifesaving Club for another performance. “It was a surreal experience - crazy, really crazy,” says a thrilled Andrew who’s inspired by John Mayer’s endless talent and of course Michael Bublé. Although there’s a veil of secrecy surrounding Andrew’s future plans, a move to Sydney was mooted, also interested sponsors including a clothing label and needless to say touring nationally and internationally are high on the agenda: “I’d love to make a living from singing and performing, and be a musician who is respected and brings something new to the industry. I know I have something different to everyone else. A music career, that’s definitely the only thing I'm good at. “But I’ll never forget Noosa. Nothing beats the beach and the surf or Friday night barbecues in the Lions Park with my friends. I’ll be back.”

From humble beginnings as a tiny regional event ten years ago, the Audi Noosa Food & Wine Festival, one of the nation’s stellar food events has now reached international status.

Or finally escape to the Barossa Valley with Maggie and Saskia Beer for lunch, when they will demonstrate three of their favourite dishes using the finest produce from the region whilst sharing the secrets behind their success. Darren Cosgrove from Yalumba Wines will pair the wines. Saskia and Maggie will also be in Maggie’s Farm Shop on Saturday and Sunday plus give a cooking demonstration on Saturday. The Asian Food Trail visits the Garnisha Spice Farm where Martin Boetz, Cheong Liew and Luke DaleRoberts will take care of the banquet, Sam Christie the cocktails, Michael Hatcher, the Hungerford wines, and Matt Preston the chat. One of Australia’s favourite chefs and TV personalities, Gary Mehigan will be on hosting duties on the Seafood Afloat Trail, accompanied by chefs Maurice Esposito, Hajime Horiguchi and David Pugh with the produce hero being Noosa Spanner Crabs, accompanied by Pizzini Wines. Also in the grand marquee over the weekend will be seminars from food trends to food critics, wine and champagne master classes, a produce market, a contemporary aboriginal art exhibition, kitchen and homewares expo, a Queensland cheese exhibition and celebrity chefs cooking demos. In addition live entertainment includes the Australian Michael Jackson Tribute Show, Rhonda Burchmore and Kylie double Lucy Holmes. You’ll be able to critique the critics who’ll be cooking up Noosa-style street food from Mexican and Chinese to Italian and Balinese; and enjoy dishes from local restaurant food kiosks with wine choices galore. Guest chefs in Noosa restaurants include Hadleigh Troy from Restaurant Amuse in WA at Blue Angel; Javier Codina from Moda in Brisbane at Rickys, Ben O’Donohue from Southbank Surf Club in Brisbane at Bistro C and Tony Percuoco from Tartufo also in Brisbane, at Ma’Mensa. Jim Berardo, the creator and director of the festival, said 25,000 are expected to attend this year, a massive increase from the 100 or so who were part of the first event, and with 150 contributors including chefs, Shane Bailey, the executive chef of berardo’s, says he has his work cut out co-ordinating everyone and organising all the elements and logistics. Refreshing acidy and perfume Whether it’s smothering a pavlova or shaking it up in a cocktail, passionfruit remains an Aussie favourite.
N
ostalgic memories of the prolific passiflora edulis or common passionfruit vine climbing vigorously over everything in back gardens or squeezing out the sun-warmed fresh pulp and popping it straight into the mouth, are common. And did you think it was named because it created a passion in the people who ate it? Wrong. The passionfruit is native to Brazil and when the Jesuit missionaries first saw it they thought the striking flowers portrayed the Crucifixion. Passion in this instance means suffering rather than pleasure, because it shows the ten petals and sepals representing the apostles; the crown of thorns was seen in the filaments; the five anthers represented the five wounds; three stigmas were allied with the nails; and the vine’s tendrils equated to the whips. There are several hundred species of passionfruit mostly coming from the south and central American tropics and it was the Spanish explorers who took it back to Europe then in the early 1800s it was became known in Australia, where there are native several native species. Botanically a berry, the passionfruit is the size of an egg, round to egg-shaped with a thick, purple skin, which becomes dull and wrinkled as ripened. Inside, the pulp is yellowish-orange, sweet and jelly-like with many edible, black seeds covered in jelly-like pulp.
Varieties vary in size, taste and colour from yellow to banana-shaped and often larger than the purple one. It is available all year round, and grows abundantly in south-east Queensland and northern NSW, with the peak being December to July. It’s an excellent source of vitamin C, dietary fibre and beta carotene which the body converts to vitamin A, plus contains more of the B complex vitamins riboflavin and niacin and more iron than other fruits. Store passionfruit in a fruit bowl for up to 10 days or refrigerate for a longer period. Eat the juicy seeds, discard the skin, cut in half, scoop out the flesh with a spoon and eat, freeze the pulp in ice cube trays for later use or simply freeze the fruit whole. Passionfruit goes with bananas, cream, custard, ice cream, kiwifruit, meringue, pavlova, orange juice, rum, tropical fruits, yoghurt, and is excellent in fruit salads, drinks, sauces, jam, curd and flummeries. Recipes for ice cream, creams and custards often require passionfruit juice. This should be added later when the custard is cool as it is too acidic to be cooked and will cause curdling.
Passionfruit swizzle Ingredients: 180 ml golden rum - Pampero works well 40 ml lemon juice 60 ml/1/4 cup crème de pêche (peach liqueur) 20 ml sugar syrup 120 ml passionfruit pulp 4 passionfruit halves, to garnish Method; Place all the ingredients in a shaker filled with crushed ice, then swizzle (stir). Pour into four highball glasses, top with extra crushed ice and garnish each drink with the pulp of half a passionfruit. hree mates escaped Hastings Street 13 years ago. They set up Trio’s on the River, with Geoff Cohen, who originally hails from leading Sydney restaurants heading the kitchen brigade, a role he relishes to this day. The predominantly seafood restaurant, perched on the Noosa Marina, pumps day and night by consistently meeting the market from fish and chips to aged beef and duck. “Being at Mooloolaba wharf when the tuna and prawn trawlers dock, is a thrill, similarly at Hervey Bay witnessing the extra large green bugs,” says Geoff who regards Larousse Gastronomique and David Thompson’s Thai Food as his bibles hence his style of classic French and Asian. He is influenced by travels in Thailand and a stickler for harmonious flavours, but wonders who on earth conceived the nonsensical idea of combining red meat and fruit. “Favourite ingredients include wild garlic, chilli, lemongrass and chef’s best friend salt. Balance is vital so the dish is not over-powering and with a few notable exceptions such as our slow-cooked rosemary-crusted leg of lamb which takes three hours, ingredients should be simply cooked so the flavours speak for themselves.” Good examples are the ever popular salt and pepper calamari with kaffir lime aioli; asparagus with diaphanous tempura; and a large gold band snapper, which is cooked Thai-style and serves two people. Geoff says the industry is tough especially when tourist numbers are down, however he continues to mentor his team especially the apprentices, loves to play golf and go surfing in those rare spare moments and after long hours of hard yakka, there’s nothing finer than a Grand Marnier or Cognac. Before Noosa beckoned, Dayle Merlo was mixing it with the best in the kitchens of Orexis, Tolarno, Florentino and Clichy in Melbourne. Ten years ago, after Palmers and berardo’s he moved to the other side of Hastings Street to Bistro C. “On creative days I get to play, innovate and see what the day will bring,” says Dayle who says his style is eclectic and the industry dynamic. He regards Julie his partner of 26 years a huge influence on his career, ditto his first chef, Alistair Punshon who had an uncompromising passion for doing things exceptionally well. “He coached me to grow way beyond what I thought my limits were, showed me the benefits of hard work, discipline and the truth of a team being bigger than the sum of its parts. He went on to be the director of food and beverage for the Sydney Olympics. “There have been over 50 apprentices in my time here and I really enjoy seeing ‘green but keen’ kids join, then years later getting emails from the UK, Canada, Spain and everywhere in between telling me how well they’re doing or asking for a recipe.” Dayle says research tends to be via the web these days however Stephanie Alexander’s Cook's Companion and Charmaine Soloman's Complete Asian Cookbook inspire him to twist and tweek. “Often the best ideas come while trying to balance a menu and make it appealing to as many people as possible, without repeating too many ingredients and use what’s available locally. “Noosa Red tomatoes are a perennial favourite, Olive Care in Nambour has the best olives and oil I’ve had in years, there are the wicked little seasonal treats like fresh figs, pomegranates and cherries and I'm loving Suncoast Limes,

especially wicked lime salt, dried limes that infuse a wonderful flavour into curries and I’m addicted to the marmalade. “A pork belly dish, slow cooked in master stock, sliced, caramelised in maple syrup and served on a prawn and pea nasi goreng with sticky tamarind and Suncoast Lime glaze and a chilli local pineapple relish, shows off some of those flavours.” Dayle says he’ll eat almost anything but had a lot of trouble understanding the attraction to sea urchins: “When I tried them, I thought they'd been left in the sun for a week before they were served. They can keep them.” Working in London restaurants many moons ago gave Gareth Collins the taste and the passion. From the Tradewinds Hotel in American Samoa to the Chef de Cuisine of Eliza's Restaurant at the Hyatt Regency Coolum via Ricky Ricardo’s, Earth Bistro and Peregian Springs Golf Club, he has plied his craft, reveling in the beautiful locations and inspirational people he has met along the way. “For ideas, I graze around markets and food shops, check the Internet, refer to Thomas Keller's The French Laundry and dine out,” admits Gareth who describes his cooking style as modern world, and nominates Byron Bay pork, Hervey Bay scallops, Bethonga pineapple, Bendele Farm duck, Queensland soft shell mudcrab, sesame and fennel seeds plus ruby grapefruit as his favourite ingredients. “Some of the dishes they’re used in are: A beautiful loin of White River veal slow-cooked at a low temperature and served with white preserved tuna and pickled garlic; Petuna ocean trout with potato soufflé, pea puree and lemon creme fraiche; and for the vegetarians I have a dry roasted Bethonga pineapple and snake bean curry with onion bahji, coconut and kaffir lime rice plus pickle potatoes. “On the bizarre side, I was once given a box of Spanish gooseneck barnacles, the ugliest looking things ever. I had absolutely no idea what to do with them so left them in the fridge, racked my brains for a couple of days as there was no internet and in the end just threw them out. Bit of a shame really. Today of course it would be totally different.”

Baked Honey Pears with double cream
Serves: 2 Preparation: 15 minutes Cooking: 20-25 minutes Oven: 200C fan forced
Ingredients: 2 pears (choose from Corella, Red Sensation, Packham, Beurré Bosc or Winter Nellis) Juice of 1 orange and zest of 1/2 orange (zest the orange first then cut it in half and juice it) 1/2 cup honey 1 tbsp brown sugar
Method: 1. Preheat oven. 2. Peel the pears but leave the stems intact, then cut the base off (very minimally) to enable them to stand upright. 3. Mix together the orange juice, honey, zest, and brown sugar. 4. Place the pears in a baking dish and drizzle with the honey syrup. 5. Bake until golden (about 20-25 minutes) and serve with dollops of double cream.

ith one of Australia’s favourite citrus fruits, the Aussie mandarin, back in season what better way to celebrate than with an Australian mandarin champagne cocktail. 2010 Diageo Reserve ‘World Class Bartender of the Year,’ Adam Brewer, has developed six delicious new cocktails, with mandarin juice as the key ingredient, introducing a unique new flavour to the Australian market. “The delicious and fragrant mandarin perfectly complements white sprits and champagnes to produce sweet, succulent, seductive cocktails,” Mr Brewer said. “Winter drinks tend to be heavier concoctions, but sweet tasting mandarins mix beautifully with champagne or white spirits to create a lighter and more refreshing drink.” With the majority of mandarins grown in Queensland, there is no excuse not to try one. We have chosen a couple of wonderful cocktails for you to make and enjoy at home.
Mandarin Daiquiri Ingredients: 50mL White Rum 10mL Cherry Liqueur 40mL freshly squeezed mandarin juice 20mL fresh lime juice 10mL sugar syrup* Method: Add all ingredients to a cocktail shaker add plenty of ice and shake. Serving suggestions: Strain into a martini glass. Garnish with a lime wheel. *To make sugar syrup mix 2 parts white sugar to 1 part hot water and stir until dissolved.
Sparkling Mandarin Ingredients: 30mL Gin 40mL freshly squeezed mandarin juice 10mL fresh lemon juice 10mL sugar syrup Method: Add all ingredients to a cocktail shaker add plenty of ice and shake. Strain in to a champagne flute and top with Champagne (or Australian sparkling to keep with the theme).

hen the Waterfront’s Marino Maioli met Craig McCabe there was a natural simpatico. Not surprising given Marino’s background of establishing restaurants in Sydney such as Fiorentino, Uno Uno and the legendary Lucio’s and Craig’s pedigree, which includes working with the renowned Javier Codina, at his long running Brisbane establishment, Gianni's. “Previous to that my gorgeous French/Polynesian-born wife Maeva, and I were running our artisan bakery, The Artisan Bread & Pastry Co, where I taught myself about long fermentation sourdoughs and classical pastry,” recalls Craig who uses the same starter-culture which is about four years old at the Waterfront, where he is head chef and addicted to the adrenalin rush. ”It’s all about the constant race with the clock, to be ready for the lunch service and again for dinner service, to produce the freshest and best food for the customers in a given amount of time and when it all comes together dealing with all the variables it's the best feeling,” says a proud Craig, whose awards include Courier Mail Chef of the Year and Young Chef of the Year in 2008, adding gifted Italian chef Stefano Cavillini, who he worked for in London has had the biggest influence on his career. “My food is simple. Do as little as possible and treat the ingredients with respect so the
flavours speak for themselves. Most ideas evolve from what’s in season, available on the day, intelligently put together at a totally reasonable price. “Apples are fantastic at the moment, the best they are all year and farmers’ markets are great so the public has access to the produce we use in the restaurant and things you cannot buy in supermarkets such as artisan cheeses, honey, live seafood and organic ducks. “I love the local fish. I talk to the fishmongers early in the morning, every morning, to get the freshest. “We do a brodetto of fish and shellfish, a collection of whatever fresh fish we have in the kitchen that day as well as Hervey Bay scallops, baby clams, mussels and big Mooloolaba prawns. They are all poached in a light prawn stock that we make from the fish bones and prawn shells, fresh tomatoes plus saffron so it's full flavoured. And don’t forget salt, for me one of the most important ingredients. Not enough and a dish will be bland, too much and will be horrible.” The Waterfront’s inviting space abutting the water and park is complemented by the mostly Italian-inspired fare and professional service. Apart from seafood, the whole vineripened cherry tomatoes on sour dough ciabatta, add vroom to bruschetta; the pappardelle of rabbit with fresh tomato, olive and parsley sauce and truffled pecorino; the veal saltimbocca; and the roasted baby beetroot salad with watercress and goats cheese, are all taste sensations on the small, well thought out menu.

Chardonnay at Clover Hill’s beautiful Pipers River winery, which just happens to be owned by an American of French descent. It’s therefore bred in Australia, trained in France (or at least the winemakers are) and owned by an American. Clover Hill’s Cuvée Exceptionnelle Blanc de Blancs is only produced, in limited quantities, during years when the chardonnay vintage is considered exceptional. The judges obviously agreed on this assessment of the 2006 vintage. The field was about as competitive as that of the other great race as well, with the likes of Arras, Brown Brothers, Jansz, Chandon and Yarra Burn competing for the trophy. Karina, who was present Cup eve to collect the trophy, was also thrilled to be in Marysville the following day for the Marysville Sparkling Wine Festival. “The town’s community spirit and tenacity is fantastic,” she said. “It’s great to be surrounded by people who are so passionate about food and wine and their community.” Clover Hill certainly won the trifecta,

arysville hosted the inaugural Australian Sparkling Wine Competition recently, with the winners being announced at a special Cup Eve Gala dinner. The judging panel comprised wine community luminaries James Halliday, John Ellis, Ian McKenzie and Cait Looney. In what could be described as a Cup Day omen, Clover Hill’s Blanc de Blancs 2006 was awarded the trophy for Champion Wine of Show. This winning wine is made by French/Australian winemaking duo Loïc Le Calvez and Karina Dambergs, using 100% Tasmanian

rchitect Gary George’s brief, to design the idiosyncratic residence around artwork and artifacts collected over 20 years by long term Noosa business people, was interpreted with creative vision and meticulously built on the 827 m² allotment in arguably the finest street in Noosa Waters, by Duncan Squires. Statuesque 30 year-old Canary Island date palms, Italian clay roof tiles, Juliette balconies, window boxes with trailing flowers, bronze water feature, customised Italian-patterned ceramic pots, forged iron entry gates and massive timber doors are features of an unassuming Porters’ nut brown lime-washed façade creating an aged look. But from the moment you walk through the imposing foyer, one cannot help feeling entranced. Implicit and explicit relationships between outdoor and indoor spaces rely on

ancy lime in your lager, Mexican beer or margarita? How about a lime tart, lime marmalade or lime squeezed onto fish? It’s such a versatile citrus that’s jam-packed with goodness, in fact weight for weight, a lime has 1½ times as much acid as a lemon and is an excellent source of Vitamin C. The Tahitian lime (C. aurantifolia) is thought to be a hybrid of the West Indian lime and the citron. Also called the Persian lime, this tree grows to about three metres, produces green, thin-skinned juicy fruit in late autumn to winter, often in summer and does well in the garden or in pots. The seedless fruit is small and green when ripe although if left on the tree it becomes more yellow as it matures. The juice content rises but the sharp, distinctive lime flavour tends to become replaced by a less pleasant taste. Buying and using green Tahitian limes is definitely the way to go. Trees are easy to grow and reasonably frost tolerant. Citrus blossoms are recognised for their sublime aroma and although native bees become very active, flowers do not require assistance from them or other insects for pollination. Kaffir lime (C. hystrix) will reach 1.5 metres, but because the leaves are picked for cooking, the plants usually remain small in size. They also make good pot specimens. Very common throughout SE Asia, it has a distinctive appearance. The leaves have a 'waist' giving them a double-leaf shape, while the fruits are very knobbly. They are an essential ingredient in many Thai recipes, including green curries, fish dishes and soups. The flesh of the fruit is usually thrown away, but the rind and zest is sometimes used. Australian finger lime (C. australasica) or rainforest pearl, grows from three to 10 metres. It is a hardy, spiny, shrub or small tree, is closely related to the domestic citrus and has small long, narrow, brownish green fruit with a sour acquired taste and best used as a garnish, in sauces and drinks. It grows best in subtropical climates. The ideal position for lime trees is full sun. Keep them well watered when the fruit is forming in spring and early summer. Trees growing in the ground should be fertilised in August and February. Use Complete Citrus Food alternating with Dynamic Lifter. Feed citrus growing in pots every six to eight weeks. Once again alternate Complete Citrus Food with Dynamic Lifter, or use 3-4 month Osmocote applied in spring and early summer.

lassically-trained local portrait and fine art photographer Sandra Faye is chuffed and justifiably so. She was awarded two silver and two bronze awards at the recent 2011 Canon Creative Asia Photography Awards, which was open to entries world wide. “It’s such an honour to be recognised by peers in an industry which I love being part of and allows my passion for creativity to shine,” an excited Sandra Faye who only entered four images, says. ”It’s a big responsibility when entrusted with photographing a subject, ensuring the lighting is spot on and ultimately making art out it. And I’m always so proud when say, a beautiful pregnant lady or maybe a couple, comes to the studio to be photographed and then returns some time later for a shoot with the bub. The excitement is the same whether it’s with a family, for a fashion or model portfolio, corporate, fantasy and glam boudoir fine art portraiture.” Sandra has a purpose-built photographic studio, known as Studio 417 near Pomona, on four acres of park-like gardens looked after by her husband Kerry, where she has total control over the environment to always give the best
possible professional result. When an aunt bought a classic Box Brownie camera for her eighth birthday, it started a life-long love affair learning darkroom techniques, hand colouring, retouching and of course later she fully embraced the digital age. She obtained a distinction in Diploma of Photography and Photo Imaging in 2006, is a fully accredited member of the Australian Institute of Professional Photography (AIPP) and won the institute’s silver award in 2009 and a merit award in 2010. Studio 417 is also available for hire, also photographers and clients are welcome to use the gardens, where mature trees, a dam, flowing creek and bamboo grove lending themselves to a perfect backdrop. beautiful display of 10 paintings by one of Australia’s most iconic painters will be a rare treat on offer for art lovers visiting the Sunshine Coast this Easter. Original works by the famous painter David Boyd, who comes from one of Australia’s most distinguished dynasty of artists, will be a special feature at Tiffany Jones Fine Art Gallery in Buderim this April. David Boyd, who will be 87 this year, was born in 1924 into one of Australia’s most celebrated artistic dynasties and has exhibited his paintings in Australia, Europe, the United Kingdom, United States of America and Hong Kong. Growing up at Murrumbeena in Victoria David Boyd’s grandparents, parents and siblings were all artists. Collectively the Boyd family have made an enormous and very important contribution to the Australian art world with their art works held in most of Australia’s National and State art galleries as well as countless private collections worldwide. A multi talented creator, Boyd’s paintings are widely known and avidly collected all over Australia. He was also a renowned potter and at age 17 studied music at the Melba Memorial Conservatorium of Music in Melbourne before being conscripted into the army. Her design touches are evident throughout, from the large Bordeaux arm chairs complete with alpaca throws, recliners, French Oak bookcases and sideboards adorning the lounge areas to beautiful modern French furnishings and luxurious linens in the suites. Devotees of degustations, long lunches and romantic dinners will adore The Long Apron, the in-house restaurant with its French doors that open to an outside courtyard and invite dining al fresco de rigueur and is open to the public. Alternatively, the French table near the kitchen is for friends to enjoy beautifully presented platters with dishes such as hearty seafood bouillabaisse, cassoulet and duck confit, and be spoilt by waitstaff who adhere to old-fashioned service and take the angst out of decisions. Choosing the menu prestige, a 10-course degustation proved to be the piece de resistance. Thinking about it, that’s not really surprising given the executive chef is the likeable and well credentialed Cameron Matthews who has relentlessly pursued excellence, including the acclaimed Simone’s Restaurant in Bright and Donovan’s in St Kilda before moving north to Restaurant Lurleen’s at Sirromet Winery and Siggi’s in Brisbane. Today his passion for French-influenced dishes, where each simple ingredient comes together as a complex, harmonious compilation on the plate has been realised. Cameron explained each dish as we nodded our heads in admiration and amazement wondering where the creativity for such artistically presented dishes stemmed from. Jeffery Deaver sampled the stunning vehicle on his recent visit to the Emirates, where he commented, “I’m really excited about being back in Dubai. It is an inspirational and awe-inspiring city and makes a perfect Bond location—especially for a novel that pushes our hero to new extremes.” Regarding the book's title, which was revealed in January, Deaver added: “In the world of espionage, giving an agent carte blanche on a mission comes with an enormous amount of trust and constantly tests both personal and professional judgement. After finding my true self again I completed Cert IV in Youth Work, Cert IV in Government and a Diploma of Community Welfare Work, and Entrepreneurship, along with other courses in personal and professional development training. You’ve encountered many obstacles and hurdles. When I was 16 I gave birth to my daughter, at 18 I gave birth to my son and by 20 I was a single mother living in Sydney’s western suburbs. I had been through years of emotional and physical abuse, weighed just 40kg, had zero self esteem, self belief and resorted to alcohol and drugs to fill the void of no love, affection, kindness or support from the father of my children, his family or anyone. We’d moved to Sydney for a better life but apart from the happy and positive time working briefly for the NSW Department of Housing, my self esteem reached an all-time low. I eventually moved back to the Coast and my home where my ancestors, family and friends are. What are you involved in currently? I was brought up in contemporary times in a modern day Australia. So, I am walking in two
traditional values in these contemporary times? This can only occur through ongoing awareness and education so I can then educate the people around me and be recognised for achievements. In 2010 I was awarded the Young Citizen of the Year because of my proactive commitment to Aboriginal & Torres Strait Islander youth and community development. When I sat in the Queensland Youth Parliament in 2010 as ‘minister’ for indigenous affairs in one of three elected indigenous representative seats, it was historymaking and had never happened anywhere in Australia. My speech for the Indigenous Rights Bill was about the opportunity for Queensland to become a leader in appropriate consultation and engagement with indigenous communities. Australia is now ours to share and we should be embracing our indigenous cultures across Australia. This is truly something for all Australians to be proud of. Why is the Noosa Biosphere so important and Noosa so special? The Biosphere is important because it covers the four pillars of sustainability of communities: social, economic, environment and culture. I’m on the Cultural Board because I see it as an opportunity for awareness, education and input of Aboriginal history and heritage of the region. Noosa is special because of its ancient history, diversity within the landscape, diversity of the people and diversity of opportunities within its communities. .

I recently left the Department of Education where I worked for the North Coast Region Indigenous Education Unit and developed and facilitated a leadership program from Pine Rivers to Bundaberg. I’m now with John Pearson Consulting working on a Future Indigenous Leaders Program for the SEQ region which involves local and state government policy development plus strategic planning. I’m on various boards including the Australian Indigenous Youth Academy Board and do consultancy work with all different types of service providers covering all levels. I’m passionate about Aboriginal & Torres Strait Islander education and awareness of our cultures, languages, history and ways of life, am one of 12 Australian Action Partners with Oxfam International Youth Partnerships 2010 -2013 where 300 18 to 25 year olds from 100 different countries have been selected to take on the role of leadership within our communities and our nation, to further our commitment and dedication to social justice, equality and humanitarian work. I am also the founder and coordinator of Motivate - Our Place, Our Culture, Our People. What are some of today’s challenges? How do I remain true and hold strong in my

Juggling motherhood and a career whilst recovering from a serious car accident is no mean feat. How do you do it and still find time for you? I’m 25, daughter Bella-Michelle is 9 and son Cayden is 7. The most difficult challenge of all is separating me and who I am, from my work. I have learned that the most important thing to do is put myself first and take care of my health, both physically and mentally. If I don’t then I can’t give the best to those around me. I’ve been in some very dark places including a head-on car collision in 2007. The doctors thought I would die and certainly never walk again. I spent three months in a bed and 10 months in a wheelchair. That period gave me a lot to think about. I came to the realisation that we have only one life and one go at it. The time is now to create a future for my children and build a better community. What's on your wish list? I’d love to be able to travel the world including Australia, to experience and embrace the different cultures, ways of life and diversity of the universe, plus live happily and comfortably with Aboriginal & Torres Strait Islander cultures, history and heritage because indigenous knowledge is critical to the way we use and sustain our land and waterways. Also being proud of Australia as a nation, no matter what heritage or nationality is vital.
