The most successful female surfer of all time Layne Beachley, hosted a Pink Carpet Lunch at Ricky’s River Bar & Restaurant, to promote her Aim for the Stars Foundation, which was established in 2003 to ensure young Australian women have the financial and moral support required to achieve their dreams. Layne share her stories about her rise from World Champion surfer to entrepreneur, the passion behind supporting young women achieve their dreams and the pillars of her success – desire, drive and determination. "Through working with Layne for our celebrity Bodibreaks and other key events on a regular basis, we wanted to create a unique environment for international inspiration on a local level,” Nikki Fogden-Moore of Life's a Gym who initiated the lunch explains. “When I was coming through the ranks it was incredibly challenging. I had to hold down four jobs and I almost quit surfing three times due to financial burdens”, recalls Layne. “If I had given up then, I wouldn’t be able to support the dreams and aspirations of other women now. There are so many fabulous, inspiring and creative women out there who need some assistance to achieve their dreams, such as an opera singer, rally driver, marine biologist and a glider pilot just to name a few”. Besides sport, the foundation ha supported young women in music, culture, arts, science plus other areas over the last eight years and has given over $360,000 to girls and women Australia-wide.
Layne 39, joined the world surfing tour in her final year of high school. By 1992 she had reached the top 10 and in 1998 she was named Women's ASP World Champion, a title she held for six years in succession and then again in 2006. She holds the greatest number of consecutive world titles – male or female.
And all that Jazz Blue Angel’s Catherine Farrelly is a generous host as diners and jazz lovers will testify. Not surprisingly the restaurant was a sell-out soon after announcing that the popular Noosa Jazz Factory was entertaining and Cajun Creole dishes were on the menu with matching wines. Guests were greeted with Leeuwin Estate Pinot Noir Chardonnay and oysters roffignac followed by four courses which included Kinkoowaka mussels with Louisiana sauce piquante; prawn and sweet corn bisque; Old School" jambalaya with chicken and chorizo; and traditional Louisiana-style sweet potato and pecan pie served with a Spring Vale 2008 Louisiana Gewurztraminer. French-born head chef Michael Jakovljev, the Blue Angel teams and the jazz band were applauded with requests for an encore event. For those who enjoy cooking as well as eating, why not book for chef Michael’s classes every second Wednesday of the month from 10am until 1pm. Start with a glass of sparkling before learning the secrets to pasta in October, bread in November and Christmas pastries in December. A three course lunch is included in the $60 price.
Forty years and counting for celebrated Noosa playwright David Williamson's nearest and dearest joined him at Outrigger Little Hastings Street Resort as part of the Noosa Longweekend Festival's 10th anniversary celebrations to celebrate the dramatist's 40+ years as Australia's most prolific and successful playwright. David and his writer wife Kristin were toasted, and roasted by invited guests and members of the general public as they shared anecdotes about what it was like to work with David over the past four decades. Author Virginia Duigan delivered a speech on behalf of her husband, film director Bruce Beresford. Sydney's Ensemble Theatre Artistic Director Sandra Bates shared the trials and tribulations of David's career including his tenuous relationship with the drama critics. University friend Peter Crowley (widely believed to be the inspiration behind the character 'Cooley' from David's 1970's play, Don's Party) shared stories of David's student years.

New office helps Guide Dogs lead the way... Blindfold walks and Guide Dog training demonstrations were just two of the interactive activities Guide Dogs Queensland shared with the community when it celebrated the opening of its new office in Maroochydore recently. GDQ CEO Chris Laine said the opening was an important occasion, as the Association took pride in delivering services at a local level and working closely with clients, donors and volunteers. “We have six Guide Dog clients on the Sunshine Coast and many more who use the White Cane or benefit from counselling, support group networks or electronic travel aid training,” Ms Laine said. “We also have hundreds of volunteers who raise our pups or lend a hand to raise donations in what has been a challenging year for fundraising.” “The Sunshine Coast is home to some of our strongest supporters with the suburbs of Alexandra Headland and Parrearra ranked in the top ten of our most generous donors. ‘We are in desperate need of Puppy Raisers and also boarding homes for our Guide Dogs-in-training, so people can talk to us about welcoming a puppy into their home. bravura singing O n the southside of Brisbane, Renae Bedford’s father thought it was time to instill a love of music into his son and three daughters, so after piano lessons at 4, violin at 8, guitar at 12 and singing at 16, Renae was hooked. “I enjoyed classical music, but had a great love of big band music and decided to pursue jazz and contemporary,” recalls Renae who also loved acting, ballet, jazz, tap dancing and school musicals especially the Sound of Music. “We sang Doe a Deer, which is all about using 'solfa' (do re mi fa so la ti do), a method of learning music, over and over again at rehearsals and I think that was a contributing factor to my perfect pitch, plus we performed it in the key of C. Now I have what is known as 'fixed do' stuck in my head.” At the Conservatorium she studied classical history, theory and singing, but found she had a preference for jazz and contemporary music. Studying for an Associate Diploma of Jazz and meeting like-minded musicians, learning improvisation, arranging and songwriting were encouraged as was jamming and ensemble playing, which were eye openers as to how she could make a
living, hence looking at overseas contract work and session singing. “I actually ‘fell’ into jingle/session singing, during a gig at the Brisbane Sheraton when Kim Chandler, a leading session singer, invited me to sit in on the next recording session. This started a professional relationship with music producer Garry Smith, who I have been working with ever since. “I love the challenge of recording sessions. You have no idea what you’re going to sing, are given a lyric sheet, the producer sings the melody to you once or twice and off you go. Then there’s the studio magic of double tracking, triple tracking, ghost tracking, harmonies and more. It completely satisfies my musical nerd-side.” Renae was a backing vocalist for many touring artists such as Daryl Braithwaite, Ross Wilson, Doug Parkinson, Joe Camilleri, Marcia Hines, Vanessa Amorosi, Jon English, Lee Kernaghan and many more, before heading to China’s Shanghai Hilton with a few continues next page...

friends from the Conservatorium. “Our contact was to perform six nights a week, five sets per night for six months. I was only 19, it was my first time overseas and what a culture shock. China was coming out of the Cultural Revolution, there was no colour just beggars everywhere, lots of deprived people in grey or brown and no neon lights only street lights at night. People stared at us foreigners and children would run across busy streets to get a closer look. I managed to stick it out for the six months. I’m glad I did as it lead to further overseas contracts in amazing places.” Singing engagements took her to Hong Kong, New Caledonia, Thailand, short stints in Kuala Lumpur, Fiji, Vanuatu plus Whitsunday resorts and Japan became her home-awayfrom-home. “What a society and culture. The countryside is breathtaking, food to-die-for. I learned Japanese and when I came home, did a Bachelor of Arts with a major in Japanese and music at the University of Queensland. I often get ‘Japan-sick’ so was thrilled recently to visit Japan, see wonderful friends and take our daughter to Tokyo Disneyland, which she hasn’t stopped talking about.” In 1995 Renae met Andrew Suttie, a solicitor by day and an “incredible tenor and soprano saxophonist by night. We worked on and off together in different bands and finally married in 2005. My mother-in-law calls me ‘Nutty Suttie’. “We have a wonderfully funny four year-old daughter called Madeleine, who I’m convinced will be comedian.”

The Suttie family used to live in Brisbane, often camping at Teewah Beach and eventually moving to their ‘sanctuary’ at Doonan where bonfires under the stars are common place, and it’s only ten minutes from Noosa, a beautiful region where the end of road rage is considered a blessing. Camping and fishing at Teewah and Double Island Point remain forms of meditation and the imbibers of a glass or three of bubbles or wooded chardonnay, often visit the Hunter or Yarra Valleys in search of a good drop. Gigs are of course an important part of the agenda. Apart from her swing band, Renae works as a soloist and with a cover band Sakura, a Japanese word meaning cherry blossom, two or three nights most weeks at venues such as Sheraton Noosa Resort, Hyatt Regency Coolum and Novotel Twin Waters Resort. Renae’s big news is her album Starlight, which is due for release in November, is her own collection of jazz songs and has been a labour of love since she was 16. “The album is a combo of talented musicians called the Swing Collective plus a bit of everything - swing, blues, bossa nova and samba. “We began recording it when I was eight months pregnant and my tone was richer than usual. Madeleine arrived so the album was put on hold – until now. Finally it’s finished, available in hard copy and on iTunes and Amazon with the official CD launch at the stunning Majestic Theatre in Pomona. “I’ve never been happier: the perfect husband and child, a resort-like home in paradise, regular gigs, wonderful friends and now Starlight. I cannot wish for anything more.”

he Noosa Triathlon Multi Sport Festival has been drawing thousands to the town each year since its inception 29 years ago and today is the single biggest economic driver for Noosa and one that Tourism Noosa and Events Queensland have heavily invested in for many years. From 26 October, the streets will be flooded with bronzed and buffed bodies, and when the party is over there will have been more than 11,000 competitors and in excess of 90,000 spectators immerse themselves in the events and entertainment across the five days. Each year the Noosa Triathlon Multi Sport Festival sets new benchmarks and 2011 will be no different with triathlon entries already at capacity, but this is more than just a triathlon and if you missed out on a spot then take the ‘alternate’ tri experience. In a unique mix where Olympians meet weekend worriers across a number of sporting challenges the festival has certainly got the mix right. The Endura Noosa Run Swim Run is a good way to ease into the frenetic pace of the days ahead; the Breakfast Fun Run (5km),
raises money for the National Breast Cancer Foundation; the Tour de Noosa Cycle is a leisurely ride over the 40km tri course, or if you prefer head to the Seven Noosa Sport and Lifestyle Expo now the biggest of its kind in the Southern Hemisphere. Robbie McEwen will be launching his book, along with cooking up a story at our Really Good Food shows each day. The Saturday afternoon program is a sports fans delight with the Legends Triathlon with some of the biggest name athletes and celebs who’ll battle it out in teams over a modified triathlon course. The Asics 5km Bolt features Australia’s best elite runners, and the men’s and women’s Subaru Noosa Cycling Grand Prix includes Olympians and Tour de France greats. On Sunday cheer on competitors in the 29th Noosa Triathlon as Olympians, world champions and Australia’s best join age groupers and every day fitness enthusiasts on the same course in achieving their own challenges. Noosa will be teeming with athletes and celebrities all week long from V8 Supercar driver Will Davison, champion triathletes Courtney Atkinson and Emma Snowsill, James Tobin from Sunrise, Susie O’Neil, Ky Hurst, Bronte Barratt, Ken Wallace plus former superbike world champion Troy Bayliss and more. esigner Melanie Harris says her Eva Lilly label is aimed at the confident, self aware and sexy-style savvy woman who knows exactly what she wants out of life and how to get it. She is between the 25 and 45, has an eye for detail but wants a look that combines style and sexy silhouettes with a cheeky recklessness of daring, thrown in for some excitement. The summer range is influenced by a royal English garden party, gate crashed by a rock band that jumps the walls of class and spice things up with their leather and bad behaviour. It’s a proper garden party gone awry. The beautiful billowing floral cotton silks work well with the hints of leather in black or red to take you from a formal affair to an elegant stroll along the sand. English-born Melanie Harris grew up during the explosive fashion years of the 80s. She showed talent for art and design, excelled high school and says she followed in the footsteps of her grandmother, a seamstress: “I used to sit on the carpet as a young child watching with great interest as my grandmother took a pin from her lips and with care and precision fully pinned and altered the wedding gown on the mannequin. Snippets of lace would float to the floor like a delicate feather. Picking up the lace and being given a needle and thread started my love affair with fine fabrics.” Melanie went on to complete a B A (honours) degree in Fashion and Design at Southampton University and it didn’t take long before she developed her own style. She started her first business venture and used her contacts within the fashion industry producing garments for well known brands from t-shirt design to bespoke bridal gowns. A new start in Australia fuelled new ideas and a bigger business venture. After working for local designers, the 2010 Sunshine Coast Fashion Festival was followed by the Mercedes Benz Fashion Week. Both brought her much acclaim.

n the 1920s the centre of the sleepy riverside village was the only cafÊ The Favourite. It was owned by the Massouds and was the meeting place for troops during World War 11 when they drove their amphibious army ducks out of the river to collect their fresh fish and chips, cooked on a tiny wooden stove. The restaurant remains but is named after the Massoud matriarch Maisie. Today’s Noosaville is a thriving area with notable precincts that attract locals and visitors alike. With its kaleidoscope of shopping, dining and leisure options, down by the riverside is a real crowd pleaser and only a five-minute drive from cosmopolitan Hastings Street. The tranquil broad stretch of the Noosa River is edged with sand and runs parallel to Gympie Terrace. It has been charmingly landscaped, dotted with plentiful barbecues, gazebos, playgrounds, exercise equipment, timber picnic tables and bench seating under shaded trees from where lorikeets belt out birdsong in the late afternoon. Along the foreshore, info centres book tours to the Fraser Island, the Everglades and jazz cruises. ane Meredith was working in a high-end jewellery store in the late 1990s and was conscious of the parade of women who stopped and ogled at the sparkling adornments in the window. One day a young woman pushing a pram caught her attention. She had walked past many times before, always stopping to admire the ring of her dreams, always hesitating at the door and always wondering what it would be like to slip the ring on her finger - just once. But what was the point? She couldn’t afford it and knew it, as did the well-dressed sales assistants behind the counter who were used to shuffling price tags with more zeros than the young woman could hope to earn in a year. She says she was confused yet inspired by the inequity that only nine per cent of the world’s women could afford fine diamond jewellery. “At the time I was 39, single and one of the 91 per cent of women who couldn’t afford the thrill of owning their ‘dream’ piece of jewellery. hree years ago Nikki Parkinson left behind a successful 20-year career in journalism, the seeds of which were planted in a Maryborough high school because of her predilection for English. University earned her a cadetship typing stories on copy paper, surrounded by publoving smokers. The high point was being cast as an extra in Kylie Minogue's first movie, The Delinquents. “Kylie had not long left Neighbours but was already an international star,” recalls Nikki who after filming, joined the cast and crew at the local nightclub and danced with Kylie. A refreshing change of pace at the Sunshine Coast Daily and public relations at the Hyatt Coolum was interrupted by Chronic Fatigue Syndrome, brought on from glandular fever but working parttime in magazine production styling models for photo shoots, gave her the reason to ditch journalism. “I thought it would be more fun to style real people. I was right. So Styling You began. I also started a blog as a way of marketing my business online - the best ‘accidental’ business decision. “Blogging was just in its infancy and to be honest I didn't really get what it was all about at first. I started reading other blogs and noticing a community of loyal readers who returned every day and left comments. I wanted in on that, redesigned my blog and refocussed the content to be advice-driven. Essentially I virtually style people all around Australia.” Success followed as winners of the Sydney Writers Centre’s Best Australian Blog 2011 and the Jasmine Awards - Fragrance Foundation’s Best Blog Post. “This time last year I had 4000 unique visitors a month, July this year there were 46,000.” In the US some bloggers are earning $80,000 plus a year but digital media here is in its infancy. Nikki says forward thinking brands are harnessing the power of this new media and she’s excited to be part of it. Invitations to big fashion events are relished and meeting designer Alex Perry and model and TV presenter Jennifer Hawkins have been highlights. Nikki is also in demand as an MC and speaker. Juggling time is always a challenge taking “one day, one week, one month at a time, living by my electronic calendar which is synced to my phone and iPad. Trends in swimwear range from retro and animal prints to florals. Fun, wearable, and so new again are vintage boy-legs, highwaist fuller bottoms and under-wire tops. Although animal-inspired prints occur every year in swimwear, this season it’s a new take on the trend with the younger set wearing it for the first time. Imagine blooms of every size and colour, in virtually every line and across all age groups. Designers are offering fun, youthful floral prints even for the more mature who can finally say goodbye to those granny prints. where are they now?... For 17 years Mrs Marsh showed a generation of children how to care for their teeth in Colgate television ads and for the last 20 years, she has lived in Noosa. Who is the fictional teacher Mrs Marsh in reality? Virgoan Barbara Farrell was born in Holywood, Northern Island, trained at London’s Royal College of Music, worked in the West End and toured with people like Danny La Rue and June Bronhill. She met Aussie Frank Callcott while an entertainer on the Shaw Savill liner Ocean Monarch and he came on board in Singapore to service the poker machines. They married him three months later. She auditioned for the commercial at George Patterson Advertising. She was the last in the day to screen test, was hesitant about turning up and soaked to the skin from rain however when the phone rang the next day at her home in Sydney’s Burwood she screamed with delight, never imagining that her 12 month contract would extend to 17 years. Her character went on to become one of the most memorable in advertising history. In-between commercials for Colgate, Barbara worked for Stardem Promotions and had theatrical roles including the Black and White Minstrel Show and Annie.

We’re also fortunate that our medical services are second to none – and I should know. I adore the climate as do Red our marmalade cat and Maltese Terrier Benji, named after Frank’s favourite Western Suburbs footy player. Both are rescue animals and how different they look now from when they first arrived. Do you still get recognised as Mrs Marsh and do you miss being her? I’m approached by many adults who thank me for “making them brush their teeth” as children by using the simple demonstration of liquid and chalk. They often echo back to me lines from the commercials which became catch-phrases such as “it really does get in.” Sometimes I miss the old dear. I know not everyone liked her but she got the job done delivering important dental messages. I am often recognized in Noosa however the locals remember me more for my signature red heart-shaped glasses.

Rolling more PHOTOGRAPHER PAUL SMITH HAS CAPTURED THE QUINTESSENCE OF ROCK ‘N’ ROLL ROYALTY, AND AS HELEN FLANAGAN DISCOVERED BEHIND THE SCENES, HE ALSO HAS A BENEVOLENT HEART. olling Stone magazine was founded in 1967 and known for its political coverage. It changed its format in the 1990s to appeal to younger readers, often focusing on young television or film actors and pop music. Rolling Stone Australia began as a supplement in Go-Set magazine in 1969, became a full title in 1972 and today is the longest running international edition. Six years ago, Paul Smith received a call from the editor of the time, looking for photos of Ben Harper from an Australian concert. He liked Paul’s style of music photography and promptly asked him to be part of the team. “One of my first assignments was to cover Coldplay's Australian leg of its Twisted Logic tour,” recalls Paul a former professional skier and snowboarder on the European circuit, whose first camera was an old Canon film SLR with no controls, so he had to focus entirely on composition and light. “I set up a shot before they started knowing that during their hit single Yellow, frontman Chris Martin was going to jump off a speaker into a big yellow ball which would explode directly in front of me, so I’d get that perfect shot. However, from somewhere in the crowd, a bottle of water was thrown onto the stage saturating my gear. Disaster. My camera simply stopped working and despite my desperate attempts of bashing and shaking, I’d missed the opportunity. I ended up with only six shots from the whole concert but luckily that was enough to get me out of trouble.” Since then Paul has worked with myriad A-list artists such as Pearl Jam, Michael Stipe from REM, James Brown, Bob Dylan, Moby, BB King, John Mayer, Bob Geldof, also Florence and the Machine plus popular Australian acts including John Butler, Angus and Julia

Stone, Pete Murray, The Cat Empire and The Living End, taking portrait and publicity shots for tour posters, merchandise, CDs and more. “Music photography is about knowing and appreciating the artists, their music, and how they perform their songs so I can anticipate those magic moments, and capture the raw emotion and intimacy of the artist in an instant,” says Paul whose worst nightmare was in 2001 when shooting with a film camera in Thailand for three weeks, not realising, until he returned to Australia, the shutter was jammed and there were zero photos. “I try and keep in mind that I am the closest person to the performers so it is my role to make sure whoever sees the photographs, feel as though they are with me - up close and personal. On other occasions it’s simply being lucky enough to be in the right place at the right time. Once I was supposed to somewhere but decided to take a break, meet my brother for a beer and catch a bit of John Butler's set from the front of stage. Fortunately, I had a camera with me, because Keith Urban jumped on stage for a rare duet. What a brilliant performance, and I was the only photographer to be in the right position. “I do feel very lucky being paid to do something I love and am passionate about, and being able to combine my twin loves of music and photography. There are those moments where I do stop and take it all in, when I'm on stage listening to and watching the best bands in the world as I look out over thousands of people all moving to the same beat and appreciate that I get to record these special moments in time, both the great and the not-so-great.” One of the more bizarre moments for Rolling Stone was last year at Splendour in the Grass. Richard Ashcroft from The Verve was on Paul’s

live performance list however when he turned up there were only about 100 people in the audience because the legendary band The Pixies was on another stage at the same time. “Richard has a reputation as being a prima donna, and is accustomed to playing to thousands, so I knew one of his better tantrums was on the cards and he didn’t disappoint,” remarks Paul, a regular at other festivals including Parklife, Sunset Sounds, Homebake and the Byron Bay Bluesfest. “I did my usual thing photographing him from front of stage when he suddenly picked up a tambourine, hurled it at my head, threw his microphone into the speaker stack and proceeded to kick over the drums. He turned his attention back to me and another photographer friend, calling us on stage to fight him. Jokingly my mate asked him to jump off stage to neutral turf and Ashcroft did just that. He was even more irate because I was taking photos, which were later published. Security was everywhere putting an end to a very awkward situation. He only performed one song before storming off – a sad indictment for a music legend.” There have been many other stand-out moments. “I was in the dressing room of George Clinton from the Parliament of Funkadelic, who produced a lot of music for the Red Hot Chilli Peppers, ten minutes before he was due on stage.
He looked as though he barely had a pulse, and needed to be propped up by two girls from his entourage. But when he was on stage he was brilliant. I was also asked to photograph Bob Dylan backstage for the second time and true to form, he turned up at the festival, demanded his own private motor home miles away from the other artists and wouldn't let anyone within 50 metres of him. “I ended up taking photos of Sam Cutler, former tour manager for the Rolling Stones, Pink Floyd, Eric Clapton and The Grateful Dead in the back of his tour bus with the who's who of music stopping by. An interesting great guy.” On another level, Paul was first introduced to the down-to-earth George Negus and wife Kirsty. “It was fascinating to learn about the work they do for a variety of causes and this motivated me to help Frangipani Dreams. To see the time and effort Moy Sweetman puts in to her charity is truly inspiring, dedicating every spare moment to helping others, when she could do with a helping hand herself. “I came up with the idea of a collage when I was designing the home page for my website and saw all the photos combined as one piece of art. It was a matter of sorting through thousands of photos and blending colours and images that work well together. I am now taking quite a few custom
orders, with people personally choosing their preferred artists. Every collage is one-off. Paul loves working in all genres of photography from the big city venues to life in Noosa. “After working away, it’s always a pleasure to return to this beautiful place.

In harmony with the environment Noosa’s newest, official transport hub for visitor and local bus services, the $10m Junction Station has opened and will greatly reduce traffic congestion in and around the Hastings Street precinct and play a pivotal role in the revitalisation of Noosa Junction. Local architects Lindy Atkin and Stephen Guthrie of Bark Design Architects, who designed it in conjunction with engineering firm, Sinclair Knight Merz, said that they were very pleased with the overall outcome of the project and felt that their design captured the “natural look and feel” of Noosa. “Taking our design cues from Noosa's indigenous meaning of 'place of shade’, it was always our intention to incorporate as much landscaping and green space as possible with the built form and to

The awards, with more than 1000 nominations are revered in the food industry and judged by industry luminaries such as Maggie Beer, Alla Wolf Tasker, Philip Johnson and Cheong Liew. They recognise the best of Australia's food producers - from the dairy, the paddock, the earth and the sea. Matt Preston was the MC. Reflecting seasonality, provenance and plucked from the cold crisp waters of South Australia's Great Southern Ocean, Kinkawooka 'petit bouchot' mussels won the title of Producer of the Year. Spanner Crabs Noosa was a finalist. our years ago Jamie Milverton took inspiration from ye olde family tomato relish recipe and from humble beginnings his jams, relishes and more are winners. Sydney-born Jamie was an up-coming roller skater who, as the family moved around Queensland, always had his eye on the prize of a regional title. The dream was short-lived. Riding his bike home from school, he was run over by six semi trailer wheels. But cooking was in his heart. Aged four, with the help of his first book which just happened to be children’s cookery, his mum watched on as he made scones, chocolate crackles and cheese twists. At high school casual work extended to a bakery, various restaurant kitchens, at home cooking flambés and often scorching the ceiling was de rigueur. So it was only natural that Jamie’s path should lead to a career which he fast tracked with a pre vocational TAFE course. As an apprentice he worked on Fitzroy and Dunk Islands, back in Cairns, work included Dundee's and Kiplings which won restaurant of the year. When qualified he was chef de partie under Austrian chef Herbert Gerzer who instilled in him a love of fresh seafood and passed on his techniques for terrines, brioche and sacher torte. “One of my chef mates Rusty Russell Jarrott and I decided we should go to Noosa as we’d heard the produce was ace and the restaurant scene was buzzing especially where I worked at Bistro C, La Plage, Aqua Bar and the Sheraton Noosa Resort,” says effervescent Jamie who worked alongside executive chef Patrick Williams for many years, cooking for book launches with Jamie Oliver, Rick Stein, Ian Parmenter and the Two Fat Ladies. However it was numerous Hot and Spicy Food Festivals, working with Paul Blain, Jackie Passmore, Carol Selva Rajah, Wanitha Tanasingam and especially chef, educator Victor Pisapia that sparked Jamie’s enthusiasm and flare for gourmet products. These days Victor remains an inspiration as do many family members such as wife Nicole who encourages him to be creative and provides critical feedback. It was while taking a break from cheffing as a labourer, that Jamie met Nicole and when their daughter Taya was born four years ago, Jamie’s mother

gave him the recipe for tomato relish which had been passed on from her mother. The relish had won its section at the Rockhampton show eleven times, the Augusta Lawrence Memorial Trophy for Preserves and Sweets with the most overall points for many years and in 1997 the Florence Kele Memorial Trophy for most points overall in cooking. Preparation for Jamie’s Gourmet, working up to the range release, has been intense. Ingredients sourced from local farmers, the organic home garden with mizuna, spinach, broccoli, baby spinach, coriander, flat parsley, chives, basil, Vietnamese mint, oregano, rosemary and a variety of lettuces looked after and reaching fever pitch for the recipe development ensuring each product “wholesome and bring a wow factor to your taste buds”. Seared Scallops with Orange, Ginger and Lemongrass dressing by Citrus Australia Ingredients: 12 scallops 1 tbs butter 1 tsp olive oil 1 bok choy bunch, discard the stems 200g crème fraiche 2 oranges, peeled, pith and membrane removed Black sesame seeds
Orange Jelly 1 tsp gelatine 2 tbs cold water 200ml orange juice ½ tbs sugar 1½ tbs orange liqueur
Orange Dressing 1/8 tsp freshly grated ginger 1 tbs olive oil 1 red chilli, diced 2 tbs Thai basil ½ tsp orange liqueur 2 lemongrass stalks, cut and bruised (using the white part) ¼ cup freshly squeezed orange juice ½ tbs orange rind ½ orange, diced into 1 cm pieces Method: Orange Jelly: Make the orange jelly the day before. Soften the gelatine in cold water. In a saucepan heat the orange juice, sugar and orange liqueur. Dissolve the gelatine water in the heated orange juice. Pour into a shallow container, cool and allow to set. Once set, break the jelly into small segments using a fork.

All the spice flavours need to permeate the meat while it stays at 62 degrees - the perfect temperature. “The herb crusted lamb with chorizo froth wouldn’t be the same without the espelette piment [pepper] that my mother sent from France. I created this dish a couple of years ago and a pinch of espelette in the crust is absolutely necessary. Using our excellent quality Aussie lamb this dish is a magnifique tribute to Noosa and the South West of France.”

ichael Jakovljev, who heads the kitchen brigade at the Blue Angel, remembers his first attempt at cooking a classic dish on his own. It was duck breast with red wine jus and he confesses it was overcooked and the sauce was below par. Even so that’s quite an achievement for a 14-year old with the Serbian surname, who didn’t need placating, just an apprenticeship when he turned 15 where he lived in Alsace, which is located near the German and Swiss borders. For 14 years he worked in many different Michelin-starred restaurants in France and in Switzerland for the last eight, he was sous chef, responsible for functions at the 5-star two Michelin-starred Les Trois Rois in Basel, where the head chef Peter Knogl was Switzerland’s Chef of the year 2011. He came to Australia in search of new culinary experiences and when the opportunity came to work with some of the best chefs in the world at this year’s Noosa Food and Wine Festival, he had a taste for the region and decided to forego working in Sydney and Melbourne, opting instead to accept Catherine Farrelly’s offer at her Blue Angel restaurant. Michael is very serious about cooking with fresh Australian products using the classic French technique also mentoring his team, experiencing new dishes, finding creative ways to be different and fostering organic products wherever possible. One of his specialties is creating pastries with the renowned French pastry chef Eric Pernoud from La Maison de Provence in Cooroy. “For me, cooking is an infinite art,” describes Michael, who has cooked for celebrities such as Roger Federer, Leonardo DiCaprio and the national English Soccer team amongst many. “I love to eat and being a chef gives me the opportunity to play with textures and tastes, while catching the match between different products and produce. “Frederic Anton’s Le Pre Catelan is the best cookbook ever published and Alain Ducasse’s Le Grand Livre is certainly the bible of cooking. “In my cuisine the most important ingredients are salt and pepper. he tables turned on Hugo and Felix Webster last year when a gift to dad of a kitchen garden became their labour of love and earned them pocket money. It all began when Hugo studied permaculture in year seven at Good Shepherd Lutheran College. Then the plot thickened. He wanted a garden at home. Built literally from the ground up, buying everything from seedlings to manure at Eco Green, it was filling the large oblong, corrugated-iron tanklike structure with soil and mulch that seemed to take forever. It was backbreaking and sweaty in the extreme, especially for mum Cassie and dad Stuart. Hugo 12, and Felix 8, watched over by their one year old sister Daisy-Blossom, were non-plused at first however when the tomatoes, snow peas, bok choy, lettuce, green beans, broccolini and capsicums were freshly picked and eaten, Stuart decided he could turn his sons into junior entrepreneurs by paying them the market rate to supply produce to his Rock Salt restaurant and supplement what he buys from regular growers. With bushy capsicum plants, snow peas clambering everywhere and flowerfilled tomato plants reaching over two metres, it seemed like a fruitful idea. Every day the boys watered, fed, trimmed and weeded the completely organic crop, although once in a while it’s out with the garlic and olive oil mixture to control critters and pesky snails and slugs. Picking and watering are the favourite parts of the job while dad’s main role is overseeing the patch. And of course collecting and paying. Apart from the experience of growing their own vegetables Cassie says they wanted to teach them the value of money, hence selling to Rock Salt. “They reinvest 25 per cent back into the garden and the rest is profit for the neverending list of things they believe they must have. They also have a better appreciation of fresh food, love picking and eating beans and snow peas straight off the plants, but brussel sprouts - have yet to grow them.” Stuart says the boys usually pick once a week for the restaurant and the vegies are created into a special for that evening or could be an ingredient in one of the dishes on the new menu, such as spicy oven-dried tomato and balsamic onion tartlet, goats cheese and basil pesto; fresh fish of the day, lemon chive butter, seared snow peas; and a side of seared green beans and snow peas with mint butter. fter antipasti, cooking stations had everyone coming back for more Italiano dishes, international chef Luca Digirolamo proudly served suckling pig, and diets were out of the window with desserts. Wine, Peroni, Grappa and Limoncello were just some of the drink choices. The Taste of the Great Southern, a tri-nation experience in Eliza’s was an Australian versus South Africa wine dinner which had taste buds hankering for more. The culmination of the weekend however was the Chefs’ Alfresco when thousands turned out to experience over 50 Australian wine varieties, outstanding fare from the Hyatt chefs at international food stations and in the dedicated Sparkling Garden, French champagne and premium Australian sparkling wines were matched with Noosa Smokehouse salmon blinis, freshly shucked oysters and strawberries that had been kissed by the sun – twice. What a weekend. Bellissimo.

Hungry for the best but wondered who the taste police are? It’s a subjective minefield out there in restaurant land. Or is it?
hould we take heed from reviewers – the so-called experts with discerning palates, go it alone with our gut feel – literally, or mix it up by gleaning info from guides as well as foodie friends? Gourmet Traveller’s Australian annual Restaurant Guide is revered and “if a restaurant is reviewed here, you can count on it being a cut above. A trattoria in the suburbs of Adelaide or a Japanese fusion restaurant in the wilds of Noosa – the same standards apply so you can be sure our recommendations are worth your money and your time…” The top 100 was compiled using what many consider a controversial star ratings’ system with three being the max. Taking the number one slot was Sydney’s Marque and the top Queensland restaurant was Brisbane’s Ortiga which came in at 23. Wasabi was in 70th position and rated number one in Queensland regional. Also in the top 10 regional were Thomas Corner, Spirit House, Rickys River Bar & Restaurant which since its recent makeover, boasts a sophisticated bar delineated from the elegant restaurant and spilling out into a lounge area where tapas, cheeses and an impressive wine list complement the beachy casualness and broad water views. Embassy XO at Sunshine Beach was rated 10th and not surprising since chef Brendan Barker, who was behind the burners at Melbourne’s Ezards before assertively flavoured Asian-inspired food with an emphasis on Thai, Vietnamese and Nyonya ingredients and inspirations – totally suited to the sub-tropics, became his forte. Continually hitting the mark are fried pork dumplings, chu chow and vinegar; and Moreton
RIVER COTTAGE Bay bug dumplings with XO and lime. Follow with a salad of hot smoked kingfish, shredded vegetable and crispy noodles; beef cheeks braised in rock sugar and soy, toasted chilli and black bean sauce; plus wok-tossed greens with house-made oyster sauce, all of which will leave you sated but not enough to ignore steamed chocolate buns, chilli raspberry dipping sauce; and Hong Kong peanut butter French toast with banana ice cream. XtraOrdinary? Yes. When it comes to a bright shining star, the only other local restaurant apart from Wasabi to receive one was River Cottage which just weeks ago celebrated it first anniversary. When reminded that one star was for “a restaurant with an element of sparkle as well as professionalism which raises it beyond the everyday”, owner/chef Marc Wohner reacted in a totally humbling manner although his shyness did finally give way to a big smile. Quite an achievement for a German boy who did his apprenticeship when he was about 14 in a Michelin-

RIVER COTTAGE starred restaurant in Munich. After national service he moved to another Michelin-starred restaurant in Switzerland then to Scotland, where he also met Ruth, who later became his wife. After to-ing and fro-ing they eventually settled in Australia, he became head chef at Ricky Ricardo’s which became Rickys under new ownership and five years later, their dream of owning the Riverhouse came true. The new moniker of River Cottage gave them their own identity and as Ruth so succinctly says “slowly it’s becoming ours and we think we are doing something pretty special”. Now with a star to prove that’s so true. Dishes that prove Marc has finesse and an innate knowledge of local produce, techniques and flavours are pressed smoked duck breast, foie gras and pistachio, gingerbread, onion and port chutney plus watercress; beetroot sponge, baby beets, hazelnut goat’s cheese, beetroot crisp, puree horseradish; an exquisite tasting mélange of char grilled Mooloolaba prawns, watercress, green apple, tomato, shaved fennel and lemon aioli; Cone bay

nd stars... barramundi, sweet corn and bacon beignet, potato foam, green asparagus, and Banyuls sauce; char grilled Gippsland sirloin, Yorkshire pudding, cauliflower bake, mushroom, and caramelized onion; plus to finish, cheese aficionados will swoon with the selection of Tassie Pyengana farmhouse cheddar; French blue Rochebaron; and/or creamy French Buche d’affinois. Looking for a bigger finale? Can’t beat a soufflé. Turning the page to awards for wine lists seems so much easier than restaurants for the vin ordinaire as well as the fine wine drinkers to understand. After all bottles have a comprehensive method of labelling and taste-wise if it says shiraz you better believe it. But sorting out a myriad varieties, varietals and vintages to make a balanced and well thought-out list with integrity? That’s another story. A record number of 386 entries flooded in for Australia's Wine List of the Year in 2011. Established in 1994, the awards are presented by leading wine distributor, Fine Wine Partners and Gourmet Traveller WINE magazine. After careful deliberation, the judging panel which was chaired by leading Australian wine communicator, Peter Forrestal and included luminaries such as Gerard Bassett, Master of Wine, Master Sommelier and World's Best Sommelier 2010, from the UK, selected Pilu at Freshwater in Sydney the winner.
SAILS Each list is rated on its content, balance, suitability, presentation and pricing and whilst there’s always a place for the impressive encyclopaedic wine lists, the growing trend towards casual dining has lead to more small, perfectly formed lists achieving glass (goblet) ratings, of which the maximum is three. Locally Marino Maioli was chuffed that his Waterfront restaurant was given one goblet especially as a first time entrant. He said ‘Tim Watson does a great job devising the wine list and it is great to see his work recognised.” The Hyatt Regency Coolum received resounding endorsement for its extensive wine cellars, with three of its restaurants named. Signature restaurant Eliza’s earned two goblets, and the contemporary Italian Bruschetta was awarded one goblet, as was the ever popular McKenzie Grill.
The resort’s Director of Food and Beverage Steven Bowman said the awards were a welcome acknowledgement. “To be recognised for not just one, but three of our restaurants is a great honour from a very highly respected magazine. It places our wine lists among the best in Australia.” Taking a triple bow was Sails with three goblets, the highest achievement and a previous recipient. “There were only eight of these awarded in Queensland and Sails is the only restaurant north of Brisbane,” says a proud assistant manager Nigel Lee about the 20-page opus which stretches to some of the great wines of the world. “As you know we are passionate about the depth and integrity of our list which has about 550 different labels and over the years Lyndon Simmons (owner) has invested many thousands of dollars into building it. In addition there are three working wine cellars - the largest located in Rumba Wine Bar, to house the collection and ensure it is kept in pristine condition.”
EMBASSY XO Such an extensive wine list deserves time and due consideration to perfect marriages with food. Executive chef Paul Leete says “I’m excited about a Wagyu beef tataki which is Queensland beef, sliced thinly with accompaniments to be eaten in a similar style to sashimi; a freshly made soft corn tortilla filled with lightly battered Balmain bug and avocado; local hand made Cedar Creek buffalo mozzarella paired with lightly dried Noosa Reds tomato; Vietnamesestyle spanner crab and barramundi rolled up in betel leaf and grilled; and Moya Valley duck breast sliced over a Chinese-style taro cake. And what about a sticky with a luscious mango and passionfruit layered pavlova? All sounds like heaven on a plate and in a glass. Writer: Helen Flanagan

To sir with love...
On Richard Branson’s private island is an elegantly understated resort where Nusa Dua meets Noosa. Islands in the sun are exclusive getaways for Richard Branson and his latest is no exception. The 61 year-old is a regular visitor to Noosa and his decision to buy Makepeace Island in the middle of the estuarine waters Noosa River was made after a “boozy” lunch, he says. “”We came and looked at it and loved the fact that it was shaped like a love heart.” The 10 hectare mangrove-fringed island was bought with Virgin Blue co-founder and former Virgin Australia CEO Brett Godfrey for $2.86 million in 2003 from artist Brian Spencer and his wife Beverley. In 1979, the Spencers bought the derelict island, not even realising it was an island at first. It had been home to hordes of hippie squatters and originally called Pig Island. They added a new wing to the high-set Queenslander, Brian turned the boathouse into his studio and renamed the gum-studded island in honour of reclusive spinster “Shotgun Hannah” Makepeace who was bequeathed the property by her childless employers, the original owners Charles Nicholas and his wife. After much argy-bargy with Noosa Council including plans for the helipad being knocked back and the project manager locked in battle with local contractors, $7 million was spent including transforming the island into “a little Bali.” All the structures were made in Bali, much of it flat-packed Ikea-style and shipped to Australia in 46 containers, along with beautiful artworks and design features sourced in Bali and Java, including baths carved out of solid pieces of volcanic rock. The containers were barged up the narrow Noosa River and the painstaking reconstruction of a dozen classic buildings began, with interior design under the watchful creative eye of Brett Godfey’s wife Zahra. There’s a two-storey open-sided Long House wantilan or communal space which looks over the enormous lagoon pool, thatched roofs, lofty coconut palms, the obligatory Hindu sculptures, lots of brightly colours fabrics, Javanese day beds, eggshaped wicker lounges suspended over the pool and a well-stocked hardwood bar that seems to go on forever. There’s a tennis court of course, a 15-person spa – naturally, a theatre room and the steel barge which, loaded up with food, booze and music is perfect for parties afloat. “I've always loved Bali, since the days when as a young man I would try to get stoned on magic mushrooms,” Branson tells Noosa local Phil Jarratt. “I also have a passion for islands, so whenever I've had an opportunity to purchase an island, I've tended to create a little taste of Bali on it. “There’s something magical about islands – one advantage is that you can have the music as loud as you like and party as hard as you like.

“We never run our properties like a hotel. You run them like you’re going to somebody’s home – which is effectively what this is.” The island was intended as an exclusive getaway for family and friends but they have now opened it for private lease as an escape with 11 bedrooms in various configurations, for up to 22 people, with prices starting at $1,000 per person per night with a minimum of four nights or almost $17,000 a night for a full house in high season. The cost includes breakfast, lunch and dinner, non alcoholic drinks, transfers from the airport to the Noosa Marina, river transfers to the island, water skiing and much more. Alcohol is extra. Makepeace's manager and executive chef, Nick Jones is an Aussie married to a doctor, who was running an island resort next to Necker when Branson offered him a ticket home. Riverfront Bali House is Branson's personal villa, with four bedrooms, each with private bathroom, an extraordinary bath, handhewn from a solid boulder and decks. The other retreats are similarly well appointed, with two bedrooms sharing a spacious bathroom with rock spa bath, lots of polished stone, carved wood and a sitting room with a day bed. Four poster beds have a copy of the Kama Sutra, the manual of acrobatic sexual positions on the bedside tables. Richard Branson’s wry sense of humour perhaps? Well he does say "when I come here, I don't want to leave. It has a very special ambience. I find it a very romantic place. I’m sure one day it will be renamed Makelove Island."

urf-loving John Mainwaring has been in Noosa since 1972 and whatever he has designed from a boat shed house on Noosa Parade - a blend of a fishing shack and Indonesian pavilion-style with a central landscape spine, a house and office complex in Hastings Street which looked as though it had always been sitting on the dunes, to a house in Noosa Waters using plywood, timber, polycarbonate, corrugated fibro, he has always left an indelible stamp on Noosa – naturally Many other projects were a fit for his ardent interest in urban design but none were as fascinating as beginning work in1997 on the old banana plantation behind Hastings Street. Viridian sits unobtrusively in the valley, is almost the size of Hastings Street, environmentally sustainable, promises immense economic inertia, employs sensitive tectonics and respects the contours, allowing vegetation and wildlife corridors as well as landscape building form integration. “The architectural tectonics have been influenced by the Scandinavians, especially the late Ralph Erskine,” explains John, who lives in a ‘tree house’ at Viridian, has a koala that keeps him awake at times, and loves seeing a goanna share the village lane and ospreys soar through the valley. “The idea of ‘patching’ in the elevations shows the geometry to be vertical or horizontal. Beautiful Art unveiled for Spring at Buderim Village
T
o welcome Spring, Tiffany Jones Fine Art at Buderim have filling their delightful gallery an impressive range of nearly 100 paintings by some of Australia’s best known and highly regarded artists. Gallery director, Tiffany Jones reports that recent visitors are saying it’s one of their best selections ever. Collectors will be delighted to see in the exhibition two beautiful still life oils by the late Margaret Olley A.O. (1923-2011) who is regarded as Australia’s most famous female artist. Tiffany said: “Tributes for Olley have flowed since her sad passing on 26 July. Her solo exhibitions were highly anticipated and drew crowds of admirers and collectors keen to acquire her beautiful works. We are privileged to have two vibrant still life oils, which are amongst the few Olley paintings currently available for sale in Australia.” It was with a sad heart that the art world also said goodbye recently to another extremely gifted painter when the great landscape artist Michael Challen (19572011) passed away on 4 July at the Sunshine Coast. Challen’s breathtakingly detailed paintings captured the awe-inspiring beauty and dignity of Australia’s landscape. Showing now at Buderim is a striking triptych of the Bungle Bungles in the Kimberley, the location with which Michael Challen felt the deepest connection. This triptych is one of the very few works by Michael Challen currently available for sale in Australia. Being the Queensland specialists in art by Norman Lindsay, Tiffany Jones Fine Art Gallery have a special room in their gallery devoted to this legendary artist and are now showcasing five stunning watercolours painted during the 1920’s and 30’s which is the period Lindsay created his best watercolours. Perhaps the most spectacular of the Lindsay watercolours is "Benevolence", well known because it was reproduced in a series of limited edition prints in the 1930's. Tiffany says that owners of "Benevolence" prints will be delighted to have the once in a lifetime pleasure of seeing the original watercolour because despite being well over 70 years old, it is in pristine condition with incredible vivacity and breathtakingly beautiful blue colours. Another lovely Lindsay watercolour is the wistful "Model with Wisteria Blossoms at Springwood" which takes us on a journey back into the classical garden Norman Lindsay created at this beautiful home "Springwood" in the Blue Mountains. The scene of many parties and the inspiration for many paintings, the garden is dotted with his sculptures and a beautiful Wisteria walk that still exist. Another highlight of the Spring Exhibition is a beautiful Albert Namatjira watercolour of gum trees and ranges at Glen Helen that honours central Australia's unique beauty. Other works at the exhibition include originals by Sir Sidney Nolan, David Boyd, Ray Crooke, Tim Storrier, Hans Heysen, Nora Heysen, Mirka Mora, Patrick Kilvington, d’Arcy Doyle, Geoffrey Proud, Mirka Mora, Geoffrey Proud, Judy Drew, Kate Smith, Simonn Schumacher, Denise Daffara, Antje Collis and Rachel Carmichael. his year Montville hosted the Artists in Residence Walk on August 21. Illume Creations featuring Lyndon Davis of the Gubbi Gubbi mob playing an amazing Tina Cooper glass Tribal Tribute didgeridoo. he last year has confirmed that the genuine collectors are, after all these years, still out there...and the Shona sculptures have not lost their appeal. This massive range of artworks, hand-carved mostly during the 1990’s from rock specially selected from the quarries of Zimbabwe, is truly unique. “Between 1999 and 2005, the Rockart International business imported approximately 16,000 African Shona Sculptures which were being sold mostly via four galleries on the Sunshine Coast and auctions at the Noosa Sheraton Resort. So successful were the auctions, that auctioneer Dennis and his wife Toni decided to acquire the importing business in 2001. Toni was already operating the Lighthouse Gallery at Noosa Marina. “However, when the Glens later opted to retire and sell out of their four galleries, their entire precious collection was taken out of circulation and stored for a number of years. Following the passing of her husband, Dennis in 2006, Toni decided to unveil the booty of sculptures last year offering it publicly. Time moves on, however, and according to Toni, “it is time for a change”. A major transition is currently under way. Toni’s son-in-law, Craig, (Rockart International’s Operations Manager during the heady years 2001 – 2005) is taking over the Rockart International business. The bulk of the collection is being relocated to an out-of-town acreage, the “secret presentation” yet to be revealed. BUT - FOR NOW, the major, museum-quality pieces – with all their breathtaking allure and beauty are displayed in all their glory and are available to serious collectors at the Commerce Centre in Noosaville. There will be a display of MG’s thru the Years. Feature car this year is the ever popular MG with about 3 dozen MG’s, all different models some of which few people will have ever seen in Noosa. Previous years marques have included Alfa Romeo, Bristols, Jaguars, owners of which have travelled from around Australia and overseas to attend the event such is the esteem to which it is held. Also on display this year is a new category “Champion of Champions”. A Perpetual Trophy has been donated by Trevor and Joy Jones who’s MGA won last year. Organisers will have the past 5 or 6 winners of ‘Best in Show” on display Participating car clubs who are planning on making their club display this year include Austin Healy, Jaguar, Mercedes and Cobra car clubs. The trophy’s for all category’s will be high quality memorabilia from NBCCC. Also included is another new category “Modified & Muscle” cars (only slight changes from original), but not Hot Rods because of the limited room available. Queensland’s richest man, Clive Palmer, has vowed to invest "a couple of billion dollars" to make the Sunshine Coast the jewel in the state's tourism crown.
M
ining magnate Clive Palmer's first venture into the tourism industry is the purchase of the Hyatt Regency Coolum but he's not revealing how much it cost. The Hyatt will continue to manage the resort, while Lend Lease and Sekisui House, Japan's largest builder of premium homes, will focus on creating a world class beachfront residential community. "The Hyatt is one of the state's leading resorts and has a rich history," he says adding plans are in train to increase occupancy and make it one of the best resorts in the world. "Given its premium beachside resort amenities, two kilometres of beach frontage, 150 hectares of natural bushland and close proximity to the Sunshine Coast Airport, I see enormous scope to build on the Hyatt’s already very strong appeal." It also has a golf course which hosts the Australian PGA Championship each year, beach club, privately patrolled beach, tennis, arts and conference centres plus the largest day spa in the southern hemisphere. There are 324 hotel rooms, suites and villas sited in low-rise clusters amongst a natural environment of gardens, lakes and woodlands. Clive Palmer, who is listed on BRW's Rich List as having over $6 billion in assets, also owns the Gold Coast United Football Club which competes in the
Clive Palmer Hyundai A-League, has extensive harness racing interests in Queensland and has plans to develop an $8 billion coal mine and infrastructure project in the Galilee Basin in Central Queensland. Mr Palmer said he would promote the Coast as one of the leading regions in Australia, would use his Gold Coast United A-League team to sell it, will spend billions of dollars worth on improvements of the 1980’s built resort over a four year period, however the international market is his true target. He is adamant about attracting the lucrative Chinese market, including opening a sales office in Beijing to sell room nights for the Hyatt Coolum, plus push for direct flights from Asia to the Sunshine Coast to cement the area as a desired destination. “The tourism industry needs to be reinvigorated and the government should be promoting the area. Councils in general need to wake up to themselves – governments put too much regulation on development that forces our dollars to go elsewhere. This generation has let it (tourism) die. In the past we had images of Paul Hogan putting a shrimp on the barbie and World Expo. The potential has always been there, but we have let it slip. "There are 10 million Chinese going to Waikiki and the US on package tours each year. Why don't they come here?" Mr Palmer would not confirm or deny considering a casino element, but said an exciting familyoriented theme park or attraction could be in the mix. Hyatt’s general manager Maurice Holland said there was "little skin on the bones" of a family theme park consideration for the site. "We are an iconic destination and ambience is very important to maintain that. And Clive is sensitive to that. I couldn't see him spoiling it." Maurice said "everything would be considered" however he laughingly shrugged off the possible inclusion of the Big Pineapple on the site. "I don't think that's our game”.
