Jazz Festival triumphs

he Noosa Jazz Festival was an overwhelming success . Six hundred lunch goers basked in the sunshine for Tastings on Hastings, the pop-up restaurant on Hastings Street. Saturday night’s headline act with Grace Knight and Liam Burrows was a sell-out in the Lions Park while on at the Sunset Bar on Noosa’s Main Beach the Star Search Competition took place over three days culminating with Michael Morgan declared the winner by judges Andrew Lawson, Lee T-Bone Turner and Sharon Brooks. The festival also showcased rising stars such as Bullhorn and the Barksdale Brass Band. “From river jazz cruises and jazz in the arcade to events at restaurants and resorts such as RACV, there were over 300 performances,” said event oganiser Garth Prowd. n 1941 when the world was gripped by World War II and Robert Menzies was Prime Minister, 27-year old Buderim woman, Olive Jones (now Ashby) started working for a small ginger farming co-operative that would grow to become the world’s largest manufacturer of processed ginger. Buderim Ginger Growers’ Cooperative Association Ltd paid her a weekly wage of two pounds nine shillings – or $4.90 today. Buderim Ginger’s oldest original employee is 99 and still has fond memories of washing and cutting ginger. Ten years later bubbly 18-year old Doris Marbach (now Crerar and aged 80), joined as a junior office girl, stayed for 43 years and rose through the ranks as production manager, a director then board member. Recently Olive and Doris were honoured with special garden seat plaques at the launch of the Ginger Factory’s new Community Honour Walk, which pays homage to community members who have made significant contributions to the Sunshine Coast. Company CEO Murray Richardson joined mayor Mark Jamieson who applauded Buderim Ginger and its flourishing tourism arm, the Ginger Factory, which has operated from Yandina for over 25 years after moving from its original home atop Buderim Mountain in 1985. General manager Corinne Mikkelsen, said the walk was a way of giving back to the community and acknowledging those who’ve made a difference. “We’re privileged to have Doris and Olive as the first recipients and we will be calling on the public to nominate future candidates who work tirelessly in the community.” Photo: Andrew Seymour

The unveiling of the three amazing ladies who took part in the total make-over competition had everyone oohing and applauding. “Thanks to the support from so many amazing local business partners, we were thrilled to create full make-overs for three extremely deserving women, each with their own life challenges,” said salon owner and award-winning creative director Louise Starr, who faced with her own challenges started life all over again with just $1 in the bank. “I wanted to take this opportunity to present a new look and feel for the Surrender Dorothy brand to take us forward. A look which would be welcoming and groovy – just like the team”.

When it comes to attention from national and international fashionistas, Helen Flanagan says Jacinta Richmond is a runway success story
T
he genesis of this year’s International Fashion Festival was five years ago with the tiny-bycomparison Sunshine Coast Fashion Festival, a fashion parade vivacious Jacinta Richmond organised for a group of local designers. Today it has morphed into a week of events including solo shows, a number of group shows, networking educational events, features national and international labels, is aligned to fashion weeks around the world, and shows support for the World Fashion Organisation. “Success stories have included Blossom Betty, a Noosa label I discovered at Peregian Beach markets in 2008, which is now worn by key fashion personnel around the world and also from Noosa, Hive Swimwear which I cannot lay claim to, but has been part of our shows for years and is now stocked worldwide, plus most recently the ones to watch are Saucy Rose Swimwear and Eva Lilly Couture,” extols Jacinta who has toddler memories of fancy dress parades at Sunday school; at 16 wearing a mohair three-quarter batwing sleeve jumper with a white leather skirt like the models in Dolly magazine; international catwalk model friends who went to university with her and could afford clothes from Scanlon & Theodore and Collette Dinnigan; and a brief fling designing a cult children’s label called Melon and a limited edition luggage range called Coconut. With nine events, three locations including the main venue of Twin Waters Resort, ancillary lead-up events such as castings, the involvement of approximately 250 people including models, hair and make-up specialists, stage managers and presenters, and up to 600 at each event, the organisation is staggering yet Jacinta’s tenacity albeit coolness is the mark of a consummate professional. Being a chocoholic helps with the stress levels. “All the designers such as the nationally known Bachhara, Jonte, One Colour, Eva Wanganeen and of course the internationally known Ali Charisma, our guest label are standout designers with the latter sure to inspire with his story of humble beginnings to international runway success,” a proud Jacinta says, adding “the ultimate goal is to keep growing the event organically whilst promoting our local labels globally and of course our region for its employment and financial growth opportunities. “This is the first year we have offered a trade-only component to encourage buyers, fashion agents and fashion media to meet and greet with the talent on show. We go into summer before Europe and the USA, so they won’t be showing summer 2013 until May-September 2013, whereas we’re on the runway now.” Melbourne-born, single mum Jacinta lives one block away from the sands of Marcus Beach where she walks to with her surfboard under the arm. “As long as I am in the sun all nice and warm, I am relaxed. If I’m under a lot of pressure and very stressed, I give the house a really good clean, top to bottom. This releases so much tension. School
tellar performance hours are work hours, so in the lead up to something like IFW, once my daughter is in bed, and quite often before she is in bed, it’s also work time. I am very lucky to have an amazing 11-year-old. “I have learnt that the weekend is the weekend, and unless it is urgent (or too cold for me outside), then I don’t work and I don’t take work phone calls. Working for myself allows me to do odd hours, so I rarely miss a school or social event for my daughter. As I started to travel to attend various fashion weeks I had to leave my daughter at home in the care of others. It was heartbreaking because she was quite traumatised - the first time! The second time she barely had time for me on the phone because she was too busy having fun – heartbreak and relief all rolled into one.” This year’s International Fashion Week surpassed all expectations. Highlights included the Welcome to Country by Beverly Hand, an intimate welcome for international and interstate VIPs around a camp fire; Frocks in the Vines with many talented industry leaders sharing ideas; the Fashion Illumina 3D CGI by local artist Beau Deeley which had everyone at the cocktail party watching in awe; plus the live music which complemented each event. “Amongst the fashion highlights were the Swim and Lifestyle Show held on the sand with the VIPs in front row all seated on sun lounges,” effuses Jacinta who also gave credit to her team of professionals. “Eva Wanganeen’s indigenous-inspired hand painted silk had everyone clambering for more; the Ethical Design Show was brilliant; continues next page...

BELLA LUNA - KODACHROME BASIN STATE PARK, UTAH This shot has eluded me my entire photographic career. I have spent years trying to perfect this image, there are so many variables you don’t even think about. It’s a really touchy image, but when it all lines up, the result is out of this world… The remoteness of Kadachrome Basin in Utah was an obvious choice to finally nail this elusive image; remote, clean air, and a selection of cliff tops to shoot from. I had been watching the phase of the moon and tonight the moon was close to full. I had a specific composition in my mind and I searched for days to line up this classic tree with the moon. Tonight I hope it all comes together. It was a long night but I knew at some point my perseverance would be rewarded. I hope to share with you this amazing connection I had on this special evening with the moon, that affects our lives. eter Lik stands at the summit of landscape photography. Worldrenowned, highly awarded, and boasting a huge international following, Lik’s journey had humble origins. Born in Melbourne, Australia, to Czech immigrants, it was his parents’ gift of a Kodak Brownie camera on his eighth birthday that set young Peter’s course. Entirely self-taught, Lik worked hard at his craft before making a life-changing decision: to come to the United States in 1984. A defining moment in Lik’s life came when he was introduced to the medium format panoramic camera. This larger-than-life camera compelled Peter to rise to its challenge to “Go big or go home.” Lik did both. He returned to Australia to photograph the vastness of the Great South Land. Peter then went on to open his own fine art publishing company as well as his first gallery in his adopted hometown of Cairns. He returned to the States in 1989 for another jaunt before undertaking a mammoth trip early in the new millennium to photograph landscapes of all 50 states. Fifty thousand miles and 1,000 rolls of film later, the “biggest challenge of my life” was completed.
Highlights of Peter’s American odyssey can be found in his book “Spirit of America.” Lik’s stature as a photographer has been indisputably confirmed with his receipt of the award of Master Photographer from both the Australian Institute of Professional Photography (AIPP) and the Professional Photographers of America (PPA). He has also been awarded fellowships by the British Institute of Professional Photographers (BIPP) and The Royal Photographic Society (RPS). Two more landmarks for Lik were the world record sale of his photograph “One,” for $1 million and the exhibition of two of his iconic images, “Ghost” and “Inner Peace,” in the Smithsonian National Museum of Natural History in Washington D.C. Lik’s masterworks include “Ancient Spirit,” “Sacred Sunrise,” “Angel’s Heart,” “Tree of Life” and the highly acclaimed “Ghost.” Each Limited Edition release is greeted with great enthusiasm by collectors and this has been reflected in recent record- breaking sales. Now at the top of his game, Peter Lik is “loving it!” at full throttle and the animated Aussie is showing no signs of slowing down. TM

Ginger Factory MAGIC What do you call a lady magician? A Magicianess of course!

eturning to the Ginger Factory is the very popular Magicianess with her two sidekicks, who will dig deep into their amazing box of tricks and leave little and big kids spellbound. Assisted by Magic, her big white fluffy bunny and friendly wizard Grumbledore, free magic shows will run twice daily during weekdays for the school holidays. Children are encouraged to bring along their own wands and dress up as their favourite wizards and fairies to add to the magic. The fully interactive shows will be filled with a mesmerising line-up of illusions, theatre, puppetry and tricks, including one that will leave everyone gasping and asking “how did they do it?” After the show it’s time to enjoy the seasonal fare presented by three clever chefs headed by Jay Fischer in the Ginger Café. The spring menu features a tempting array of dishes including crispy pork belly with steamed broccolini, sweet soy, chilli and shallots, and for seafood lovers, you can’t go past the tiger prawn salad with mizuna leaves, roasted pistachios, drizzled with a raspberry and purple basil dressing. The Ginger Café also features a daily specials board offering a great selection of gourmet sandwiches, wraps and salads together with more substantial meals. Diners can also choose from a wide range of local and imported beers and Australian wines while sitting back and enjoying the beautiful garden surroundings. The Ginger Café is open daily for breakfast, lunch, snacks and coffee and is just a hop, skip and a jump from Bliss Ice Creamery, which offers specialty home-made ice cream.

The Fantasticks, a funny, zany, profound yet surprising with a real leap in the imagination, is the longest running musical in the world. It opens at the Noosa Ar ts Theatre in late September.

he story by Harvey Schwartz and music and lyrics by Tom Jones, originally opened off Broadway in 1960 and was performed eight times a week for the next 42 years. After a break of four years it re-opened off Broadway in 2006 and continues to this day with eight performances per week. It entertains and fascinates audiences of all ages with its unique mix of vaudeville, drama, romance, comedy and insights into the important things of life. The fable is about the innocence of young love between a boy and a girl and how through adversity their love for each deepens. Parental love and well-meaning but misguided interference is represented by the two all-knowing fathers who believe they can manipulate and control their children's lives by reverse psychology. They sing Never Say No. The allure of the enigmatic dangerous but enchanting and attractive rogue, El Gallo, is irresistible to all. He can fix everything, is worldly wise and can lead you into adventurous forbidden and exciting experiences. He also provides insight into life's dilemmas and mysteries especially when singing Try to Remember. To add more colour and comedy to the story, there is the ageing actor and his sidekick who has been specialising in dying scenes for forty years. What amazing comic scenes. Ian Mackellar, the director, has a real passion for
this show and a wonderful vision for how it should be directed to bring its charm and special genius to Noosa audiences. "The beauty of The Fantasticks is in the sheer simplicity under which it is presented - minimal set, mood lighting and an ensemble cast of just eight people," says Ian who has had a multi-faceted award-winning career in the theatre and also plays the role of Bellomy. "This musical is perfectly suited to the intimate space of the Noosa Arts Theatre." Other cast members include Sam Coward (El Gallo), who has worked in the entertainment business for 17 years as a producer, director or performer on stage and screen; Rachel Halverson (Louisa) has been involved in stage work from aged three, has been performing ever since and trained in many theatre schools in London, USA and now Australia; Callum Hamacek (Matt) has long been involved in many aspects of theatre, music and short films; Stephen Moore (Henry) has worked in the theatre for over 35 years, from back stage to walk-on roles to leads to directing and producing everything from theatre restaurant, cabaret, comedy, musicals and drama, and collected numerous awards along the way; John Woodlock (HucklebeeHHH) has been in musicals and plays since college days, sings with Noosa Chorale and has won several best actor awards; and Carly Partridge who those hat know her will find it unimaginable that she play a mute! There’s no denying that the Noosa River from its catchment in the coastal Great Sandy National Park all the way to the Pacific Ocean at Noosa is magnificent.

eandering south through lakes around Tewantin such as Cooloola, Como, Cootharaba, Cooroibah and Weyba, along the two major tributaries of Gin Gin and Teewah Creeks, the Noosa River is noted for its populations of migratory birds, the mystical dark tannin-stained waters of the Everglades, seven kilometres of beach north of the mouth which is popular for four-wheel driving, mammoth sand dunes which form the gateway to the world's largest sand island and heritage-listed Fraser Island and Richard Branson purchasing Makepeace Island in 2003. From sun-up at Noosaville, the river provides the perfect backdrop for taichi and yoga enthusiasts while joggers, walkers, cyclists and well behaved pooches plus their owners, are out in force. The tranquil broad stretch is edged with sand and runs parallel to Gympie Terrace. It has been charmingly landscaped, dotted with plentiful barbecues, gazebos, playgrounds, exercise equipment, timber picnic tables and bench seating under shaded trees from where lorikeets belt out birdsong in the late afternoon. Watch families playing cricket, swimmers enjoying the cool briny in summer and anglers hoping they’ll hook a tailor, whiting or flathead. Across the Noosa Waters’ canal bridge, the path continues to the marina at Tewantin or go the other way towards Noosa Heads and the Noosa National Park. Cyclists can use the dedicated pathway which extends from the Noosa River, looping around Noosa Waters or via the mangroves and creeks to Noosa Junction. Ducks waddle and pelicans flap their wings and thrust their beaks under water looking for a feed of fish or join seagulls onshore hoping for leftovers from the numerous barbeques. There are boat sheds for hiring a kayak or jet ski, chartering a barbecue pontoon, fishing tinnie or stand-up paddle board. The gondola cruises by and spells romance. On the other side of Gympie Terrace and just around each corner are places to hire a bike, side-by-side boutiques, book shops, cafes, takeaway food, gelaterias, day spas, hairdressers, homewares shops, liquor supplies and art galleries. At each end of the esplanade are smart restaurants and at the Tewantin end is the Noosa Yacht and Rowing Club, not only a social hub but a hit with kids wishing to learn how to sail. Life down by the riverside and environs exudes a casual elegance and relaxed ambience and with its smorgasbord of restaurants, alfresco eateries, organic produce, well-made coffee, ice creameries and takeaways, plus at the nottoo-far-away Sunday Farmers Markets, there's a culinary tour of the world to suit all tastes and budgets.

From working with Michelinstarred chefs to dive-master and photographer, Helen Flanagan wonders what Chris Klaas has up his sleeve next.
C
onvict links to the First Fleet, having English, German, Scottish and Irish in his genes and coming from a broken home has instilled into Chris Bell a.k.a. Chris Klaas a resilient work ethic, a love of art and culture plus the upmost respect for women, especially his mother who “worked her backside off” to pay for his private schooling in Brisbane. A chef’s apprenticeship at the Queensland Cricketers Club proved a fortuitous move, as it ignited an appetite for the culinary arts and afforded him the chance to
eventually work overseas. “Little did I know that it would stay with me for life and be an integral part of my photography,” Chris, 38, recalls admitting the hours however were a killer. “I was too much of an artiste extraordinaire with a fondness for wine, friends and the good life. But I knew it would always hold me in good stead.” While being a chef and a life model for David Paulson’s life drawing classes payed the rent when Chris was studying for a Bachelor of Visual Arts Photography at the Queensland College of Art, the three years in the heady world of fashion and advertising photography at Pioneer Studios in Sydney which followed, was insufficiently enriching. Adventure beckoned and after five years of backpacking Chris revelled in the sights of Europe and North

A Klaas of his own... America and shot more rolls of film than he had warm meals. Living in London for two years and working as a chef at Rhubarb Food Design, gave him an enormous insight into food preparation and food design – not surprising when you consider Michelinstarred chefs such as Heston Blumenthal were in charge of the burners. Several months each in Holland, Finland and elsewhere followed by Montreal for a year surviving the bitterness of winter gave him the impetus to return to Australia and a change of pace. Becoming a dive-master and working on dive boats was shortlived…well for now. After a year Chris had a yearning for a dose of European culture, was unsure what he was looking for in Belgium so returned to Aussie dive boats and photography. Then he found what he was looking for! “I met my partner, Ingrid, a Flemish gal from Belgium,” exclaims Chris. “She had come over on a working visa to be a nurse having grown up on a diet of The Flying Doctors, Neighbours and Home and Away. Ingrid had also travelled extensively, including work in Aruba for a year as a nurse where she also became a rescue diver. I’d found my match.” After convincing her to stay in Australia they lived in Brisbane, before finding a 25 year-old pole-house on a hill in Coolum Beach. “We bought the house in 2009 to renovate and turn it into our green sanctuary. In three years it’s been extensively landscaped with multiple organic vegetable gardens, fruit trees and native flora for the bird life. We’ve also added extensive solar panelling and a huge water tank. I don’t think we’ll ever finish it. It’s a life journey – not a project. “I’ve also started my own photography business and my goal is

We travel to Europe to see family whenever possible. I was lucky enough last year to shoot in Belgium, Holland, Finland and Spain for five weeks. “We have a fur-kid called Fergus. Every morning we go to the beach and run with him from Coolum to Peregian Beach and back. I surf whenever time permits and we are both still enthusiastic scuba divers. This broad life experience has allowed me to survive anywhere and indulge all my passions,” concludes Chris who is excited about his presentational of a seafood dish, its preparation, styling and photography at the Maleny Real Food Festival. Keeping him on his toes are frogs and teapots for the Sheil Collection in the Brisbane Arcade while at the Ardleigh Cleveland Gallery in the Palmer Coolum Resort it’s difficult keeping up the demand for pieces across the range, so much so Anthony’s surf ski and bike gather dust in the garage. “I apply my artistic vision to my life,” says introverted Anthony referring to his talents which extend beyond pottery. He may not be the culinary wizard one might expect but you should see his laundry. It’s covered in wallpaper using hundreds of colourful pages from glossy magazines. What a brilliantly ingenious labour of love.

bout 13 kilometres south of Noosa Heads, Peregian Beach is one of a string of lovely beaches between Noosa and Coolum. Just over the sand hills at the southern end of the beach you'll find Peregian Environmental Park, an area of wallum heath which bursts into a colourful profusion of wildflowers in spring. On the western side of Peregian Beach is Lake Weyba National Park, and Lake Weyba itself, which feeds into the estuary at Noosa Heads. Nearby, too, is the southern extension of the Noosa National Park with a rich mix of coastal heath and scrub and stately rainforest which provides sanctuary and support for a wealth of native flora and fauna. Peregian Village is sophisticated yet has all the charm of a coastal village. Stores are stocked with gorgeous homewares, stationary, office essentials, quirky and classy gifts and of course must-have accessories, beautiful boutiques for him, her and baby too, trendy surf fashion, beauty therapists who fully understand the meaning of serene and the many cafes are renowned for fresh, exciting fare. Two Sundays a month the Peregian Markets is a must visit – a hive of activity, creativity, fresh produce and fun. Many fashion labels start off here so keep an eye out. The park between the Peregian Surf Club and the lifeguard tower is a vibrant sight as locals and visitors stroll around the market and spill over into the village cafes and grassed area to read their Sunday papers and sip on a latte as the children lick the best ice creams around and play on the green. We've built an amazing live music scene here, thanks to some dedicated local musicians who set up Peregian Originals which is a mini-festival, held on the first and third Sunday of the month, in the park next to the Surf Club. There is no regular community music festival of its kind anywhere else in Australia. This makes me proud as punch. I also love that I can eat food from all corners of the globe, right here in Peregian – Moroccan veggie burgers, Thai green curries, French croissants and modern Australian cuisine...we're spoilt for choice." She’s worked in local boutiques, had management rights, studied personal training, travelled overseas and after a few champagnes with her friend Mary decided that Bounce Hair and Image was the business for her. “I’ve known Mary since she worked from a small room where Jetts Gym is located,” recalls Chrissy, “and the business totally represented my aspirations and principles. iffany Jones, her late mother Sharon and brothers Roderick and Stefan, an experienced team of art consultants, established the Tiffany Jones Fine Art Gallery in 2004. Today the renovated 50’s cottage is bursting with quality pieces by prestigious painters the who’s who of Australian art from Margaret Olley, Garry Shead, Brett Whiteley, Charles Blackman, Tim Storrier, David Boyd, John Perceval, Ray Crooke, Robert Dickerson and Jason Benjamin to Pro Hart, Sir Sidney Nolan, Albert Namatjira, Robert Dickerson, John Coburn, Hans Heysen, Geoffrey Proud, Hugh Sawrey and Patrick Kilvington plus nationally the gallery is known as a specialist in the artworks of Norman Lindsay and Hugh Sawrey who incidentally was born in Buderim. In addition there are exciting pieces by popular contemporary artists from all over Australia including Linda Keough, Kate Smith, Denise Daffara, Lori Pensini, Rachael Carmichael and Antje Collis.. Tiffany has loved everything creative and beautiful since a child and didn’t need much encouragement from her grandmother and mother who both had a feminist streak.

“My mother Sharon (who sadly passed away in May this year), was a big influence with her larger-than-life personality and boundless energy,” Tiffany remembers adding, “We were friends, as well as partners in crime, collecting beautiful things, finding artworks for our business and embarking on new projects, some of which were quite ambitious, including presenting fine art exhibitions out of thin air in far flung places, miles from home in regional areas. A great challenge but so much fun plus we met wonderful people along the way. “Then with the help of Sharon and my brothers, fellow directors Roderick and Stefan, we poured all our artistic frustrations into converting a run-down little cottage into one of Queensland’s most beautiful galleries. We’ve created an atmospheric place where people can enjoy the full experience both inside and out. The gallery is awash with colour from the stunning array of paintings, leadlight windows, striking Afghani carpets and glowing timber floorboards, plus the lush garden, airy verandas and exotic touches totally reflect our love of all things artistic plus memorable times we spent overseas.”

A day in the busy life of Tiffany ranges from chatting to people from all walks of life, selling and hanging artworks, liaising with artists and advising on art investment to organising framing and restoration, valuing and appraising, writing an art blog and working in the gallery’s garden, of course with the help of her brothers “Our main claim to fame,” says Tiffany, “is that we have the region’s largest and most varied selection of paintings available by Australia’s most important and collectable painters, with a focus not just on the ‘big name’ of the artist, but also offering what we feel are the better works by these painters. “An artist on people’s minds at the moment is Margaret Olley, because of the recent ABC documentary A Life in Paint. We are honoured to have the very gorgeous, original oil painting Cyclamen and Pomegranates, which was featured several times.” Apart from securing many collectable paintings for our clients and having several successful exhibitions, including a phenomenally successful Norman Lindsay exhibition in Brisbane in the late 1990s where we couldn't keep up with the demand,
we count one of our biggest successes as being the longevity of the business, becoming one of Queensland’s best galleries and weathering the financial downturn. “In my spare time I love to dance and have been enjoying Latin dancing for about five years. I also enjoy photography, gardening and writing and for indulgences I seek out travel, wine, music and beautiful jewellery. “My particular passion currently is the tango. I recently dived into a five week dancing adventure in Buenos Aires where I discovered the city, took dance lessons and tangoed into the wee hours at many tango salons. I recorded these experiences in a 380 page journal with photographs I took on the trip – a most satisfying way of combining my other interests.”

The battle for the title of Market Chef 2012 was a hard fought match between students from Noosa and Maroochydore High Schools, with initially ten schools and training colleges across the Sunshine competing over ten weeks in the Eumundi Markets outdoor kitchen. “It’s been a tough competition this year with an impressive high standard of cooking,” effused Peter Homan the Eumundi Markets manager. “To watch the students learn more about food selection, preparation and presentation has been a privilege.” Overseeing the grand final battle was chef Leigh Darlington who with a team of fellow local chefs, mentored the students each week and determined the mystery dish which was only made known to the grand finalists on the day, and featured fresh local ingredients and seasonal produce available from local growers and suppliers at Eumundi Markets. Steamed wild boar with a green mango salad and seared scallops with blood orange, Gympie Goats Cheese and baby fennel salad showed Noosa District State High School’s level of expertise from knife and cooking skills to plating up and earned them the title, a $500 market voucher to be spent at the Eumundi Markets on fresh produce plus the magnificent Market Chef trophy, made by Lewis Alessandro of Cutlery Creations.

alty sarongs, sunnies and sandy thongs are de rigueur at Café Le Monde, favourably situated across from the beach in Hastings Street. Coffee and breakfast aficionados flock there - just ask the folk who frequent the ‘table of knowledge’. In fact what’s not to love about this quintessential café with its cheeky, good humoured attitude, generous fare with an emphasis on local produce, impressive drinks list and live music several times per week. The look-at-me makeover which opens the space to the street was executed under the watchful eye of co-owners Ryan and Jaxon Taylor. Lounges, plump cushions and chairs in cool coloured fabrics and vibrant red bar stools complement the street-side on-the-go espresso bar which serves Clandestino Roasters specialty coffee every morning from 6am. Matt Holt has headed the kitchen brigade for 12 years and sous chef Paul Sing for eight. They source local produce including seafood, Noosa Reds tomatoes and Kilcoy beef where possible with specials such as gold band snapper served on a green pawpaw and rice noodle salad with chilli, palm sugar dressing, reflecting what’s freshly delivered on the day. Gold band snapper was also the hero of fish and chips, but of course dipped in a wispy James Squire Golden Ale batter and served with house made tartare and chips took on a whole new delicious direction. Thai beef rice noodle salad, with carrot, snow peas, bean shoots, spring onions, peanuts and more, added texture to the fresh take on a traditional flavour-filled Thai beef salad; a roasted pumpkin salad with wild rocket, goats cheese, roast capsicum, toasted pine nuts, red onion, apple balsamic vinegar and olive oil was a wondrous trip on the Mediterranean; and peeping though puff pastry atop the confit duck and wild mushroom pie with a Pedro Ximenez sherry jus, was the duck leg. Served with a creamy mash and sautéed Asian greens, it was declared delectable. The prelude to a leisurely repast is sharing tapas. Salt and pepper squid with harissa aioli; goong sarong Mooloolaba prawns with tomato and chilli jam; sticky pork belly skewers with green apple hoi sin sauce; and big and bold on flavour barbeque beef short ribs with smoked hickory barbecue sauce, proved the point implicitly. And fresh-from-the-oven garlic, chive and cheddar ciabatta was a delish surprise. A well-chosen wine list features a broad selection including small producers and, many by the glass. Queensland wines such as Ballandean’s Hidden Creek Chardonnay and Summit Merlot Cabernet also from the Granite Belt are overtaking many of the more familiar labels.

THE INDEFATIGABLE CLIVE PALMER HOSTED A NIGHT-OF-NIGHTS ROMANTIC TRIBUTE TO THE WORLD’S MOST FAMOUS MARITIME VESSEL AT THE PALMER COOLUM RESORT.

he Captain’s Atlantic Dinner replicated as close as possible, the final night onboard the ‘ship unsinkable’, with guests resplendent in their black tie and ballroom finery treated like the promenading gentry of the early 1900s. After receiving Titanic boarding cards they were transported to the Resort’s ballroom by vintage car before being greeted by none other than Captain Edward Smith himself. Pipers piped as diners strode over the gangplank, stepping aboard for pre-dinner champagne and their first look at the stunningly
decked-out dining room. A string quartet added to the salubrious, bygone era ambience as the eager crowd took their seats for the first of thirteen deliciously dainty courses. Each was an authentic dish from the Titanic’s original first class menu lovingly recreated by the Resort’s army of gifted chefs. There were oysters, soup and salmon, a feast of actors from Melbourne’s Titanic Theatre Restaurant, and top Irish band McGuinness & Co on sea shanties. Filet mignonette Lili, chicken Lyonnaise, lamb, duckling and sirloin of beef with asparagus vinaigrette and pate de foie gras followed, all served on replica crockery that in itself was a major talking point for guests. Amongst the beverages was a palatecleansing punch romaine and top French wines. Entertainers went through life-belt drills and the dark moment when all onboard the ship in 1912 realised its fate was sealed. Outside the dining room, local artist Wayne Fleming drew free caricatures for guests in the chilly night air, just as Jack did in the 1997 blockbuster movie. The four desserts presented on one plate were peaches in chartreuse jelly, French ice cream, Waldorf pudding and a chocolate and vanilla éclair. What a sweet way to end a totally memorable night, unlike those on the Titanic.

Cherry Sangria Preparation time: 15 minutes plus minimum 1 hour refrigeration time Serves: 6 Ingredients: 750ml red or white wine (a spicy shiraz or fresh sauvignon blanc is perfect) 1/4 cup caster sugar 1 orange 1 lemon 1 lime 1 litre lemonade 300g pitted cherries, halved
Method: 1. Combine the wine and sugar in a large jug. 2. Thinly slice the orange, lemon and lime and add to the wine mixture. 3. Stir in the cherries and chill for at least 1 hour (or up to three days). 4. When ready to serve, add the lemonade and serve over lots of ice. 5. White Chocolate and Cherry Panna Cotta Serves: Preparation Time: 20 minutes Cooking Time: 5 minutes, plus minimum 3 hours refrigeration time Ingredients: • 4 sheets leaf gelatine or 3 teaspoons powdered gelatine • 1/2 cup milk • 2 cups cream • 1/2 cup castor sugar • 100g good quality white chocolate • 200g pitted cherries • 100g whole cherries with stems on
Method: 1. If using leaf gelatine, soak the gelatine in the milk. If using powdered gelatine, sprinkle the gelatine over the milk, stir, then microwave on high for 30 seconds. 2. Place the cream, sugar and chocolate in a saucepan and stir over a medium heat until the chocolate has melted. 3. Add the gelatine and milk and stir until the gelatine has dissolved. 4. Place pitted cherries in the base of six moulds then pour over the panna cotta mixture. Refrigerate for three to six hours or overnight. 5. uring the 16th century the zucchini, which belongs to the Cucurbita genus - one of the oldest vegetable families in existence, was introduced to Spain and then later to Italy by the conquistadors. It was also referred to as courgette, which is derived from the original French term courge d'Italie. By the 19th century they were widely popular with the Italians who have known since cultivating them that the exquisite lush flowers were a delicacy. Comprised largely of water the egg-yolk coloured flower is also used in soups or fillings for quesadillas in Mexico and Central America. Two types of zucchini blossoms are sold at the markets and both are used in cooking. The male zucchini flower has a thin stem attached and the sturdier female usually has a small zucchini attached to the flower. Kim and Owen Jago started growing zucchini flowers about seven years ago when Owen was looking for a career change, also something they could do together. They had acreage at Landsborough and with a farming background on Kim’s side of
the family, Hinterland Zucchini Flowers was born and has blossomed into a very successful year-round business. “We started off small and now have niche markets for our produce selling our fresh flowers from Noosa to Melbourne through the markets and direct to providores who deliver from Noosa to Brisbane,” explains Kim. “We have 12 acres available to grow on but at present are using about six totally devoted to two varieties which are at different stages of growth. Crops are rotated every eight to ten weeks. “We offer both the morning open flowers which are very quick to stuff and the afternoon flower which we usually send interstate as it has a longer shelf life.” Choose flowers that are firm at the tip, not wilted, with petals only slightly open. The stamens inside the flowers should not be brown if fresh. Blossoms that are just starting to open are easier to stuff but are extremely perishable and ideally should be used on the day of purchase. Flowers can be sautéed, stuffed, roasted, steamed or chopped and added to risottos, frittatas and pasta.
Make a zucchini flower and tomato salad adding sliced pear, crumbled ricotta cheese and a generous drizzle of extra virgin olive oil; chop zucchini flowers and add to an omelette halfway through cooking, with plenty of cracked black pepper; or take a leaf out of the cookbooks of local chefs.

Portobello mushroom duxelle makes a good vego option. Ditto fresh herbs, grated parmesan, a dash of cream to smooth and a little egg white to set, crisp fried in a light polenta batter, drizzled with truffle oil and pistou for aroma and taste. Sounds bizarre but one of my chefs suggested black olive, strawberry and ricottastuffed flowers, battered, fried and drizzled with fig vincotto.

Seafood sensation

he simpatico between River Cottage’s Marc Wohner and seafood from Spanner Crabs Noosa forms the perfect partnership of flavours, freshness and technique. Testament to that was the annual seafood degustation dinner. After an amuse bouche of a Hervey Bay scallop, the hero of the first course was Hiramasa yellow tail kingfish which is reared sustainably in ocean pens in South Australia’s Port Lincoln, and after being gently smoked was served with yoghurt, apple and watercress. Chargrilled Freemantle octopus, sustainably caught in individual octopus traps has extraordinary flavour and texture, probably due to its underwater diet of lobster, crabs and scallop. This was enhanced by its accompaniments of candied chorizo, kalamata olives and pressed heirloom tomatoes. Wafer-thin sheets of lasagne, interleaved with generous succulent pieces of hand-picked spanner crab meat, plus an intensely fragrant bisque and a light foam, was divinely decadent. A vastly different yet clever style of presentation followed with a large jar of Italianstyle sweet, soft meat Kinkawooka (Aboriginal for ‘good waters’) mussels which are farmed in Boston Bay in Port Lincoln. Cone Bay barramundi from the Buccaneer Archipelago in the Kimberlys, is Australia’s only ocean reared barra, which means it’s guaranteed never to be muddy or earthy. The tides are amongst the biggest in the world so the fish spend 20 hours per day swimming against the current which promotes inter muscular fat and a sweet flavour. Served with wild mushrooms, potato foam, asparagus and truffle sauce the dish was a fitting finale. So good is the spanner crab Noosa lasagna it’s now a signature dish and stars on the current menu.

FISH AND PRAWN CAKES WITH MACADAMIAS AND MINT YOGHURT Serves ; 4 Preparation time: 20 mins Cooking time: 5 mins Ingredients: 100g (2/3 cup) roasted macadamia nuts, finely chopped 500g uncooked king prawns 400g boneless fish fillets 1/2 small onion, finely chopped 1 tbs green curry paste
2 tbs lemon juice 2 tbs chopped coriander leaves 1 tbs olive oil 1/2 cup plain yoghurt 1 1/2 tbs chopped mint
Method: Peel and devein the prawns. Chop the prawns and fish roughly. Combine in a food processor and blend until roughly chopped, remove.

Add the nuts, onion, curry paste, lemon juice and coriander to the fish mixture. Press the mixture together, divide into 8 and roll into patties. Heat the oil in a non-stick frying pan. Add 4 of the patties and cook on medium for 1 minute on each side or until just cooked through. Repeat with the remaining patties. Serve with combined yoghurt and mint.

food bite Has anyone noticed how much wonderful food is out there? An adventurous smorgasbord of super-fresh food using top-notch produce and crosses many culinary borders appeals to everyone’s palates. Mongolian Freestyle Billy Law from television’s popular Masterchef recently headed to the Sunshine Coast as part of Freestyle Escape’s celebrity chef program. In 1996, whilst studying in Toowoomba, thousands of miles from his home country, he missed home-cooked meals so much so, that he picked up a spatula, grabbed a wok and started cooking. “When it comes to cooking, my biggest inspiration has to be my mum,” says the Malaysian/Chinese Sydneysider. “There are recipes on my blog learned from my mother’s side, even though we weren’t really allowed to touch anything in the kitchen. Just look. This was great training as Ex Masterchef contestant - Billy Law now I follow my instincts and am always ready to explore new flavours. I love food in all its wild variety and I believe we should try everything once, love it or hate it.” With his Asian background and being influenced by western culture, he thinks he’s lucky to be exposed to both spectacular cuisines. He’s always on the move, camera in hand, travelling to different countries and exploring cultures whilst submerging himself in the sights and sounds of the culinary world. Since leaving Masterchef he works part time at a patisserie, is a keen blogger, hosts cooking demonstrations, has been a guest at numerous food festivals, has been busy completing his soon-to-be-released book Have You Eaten?, and is looking forward to hosting a 9-day culinary tour to his home country of Malaysia. n 2012, there are seven Symingtons working in the family business, six are the 13th generation of the family in the Port trade. pring - the ideal time to get rid of tired-looking pot plants and transform a boring balcony or courtyard into a creative space. Even for those with a new residence and small outdoor area, inspiration comes easily, with the latest pots and attractive plants being the most accessible approach to decoration. “Just about any plant that can be grown in the ground can be grown in a pot, from productive vegetables and fruit trees, to ornamentals, depending on the area and the environment,” explains Outside Noosa’s John Scomparin. “Pots used to be almost exclusively terracotta, but now there are more contemporary lines – slimline pots and troughs made of terrazzo, reconstituted concrete, lava stone as well as variations of terracotta - whitewashed and antique. We have also used pots to create interesting water features.”

Make a statement in a lightly shaded position with large terracotta or coloured (especially black) glazed cone pots filled with strappy grasses such as the tough and stylish Lomandra Variegated Tanika or the plain green leaved Lomandra Tanika. Dianellas come in various heights and leaf colours are hardy pot plants. Revelation displays tall stems of beautiful blue flowers followed by blue berries. Dianella Twisty has green curly foliage. If you like a clipped, tidy appearance and are looking for an alternative to English Box, try the new grey foliaged native Westringia Grey Box and Aussie Box. Grey Box grows to a height and width of about 40 centimetres and has small white spring flowers, while the taller Aussie Box has a height and width of 60 centimetres with mauve flowers. Both have dense foliage which can be trimmed and withstand salt-laden winds. Lillypillies make excellent screening or feature plants especially when clipped. Try the lovely weeping Cascade which grows to three metres and 1.5 metres wide and can be clipped to shape or underpruned to form a small weeping tree. New growth presents shades of dusky pink and bronze while the bird-attracting flowers are fluffy pink. “A grass tree creates a statuesque impression in a large pot in the sun,” adds John, “as do many grevilleas, while the hardy bird’s

This concept, while not new, is really taking off. These pots reduce the need for frequent watering and are a great low-maintenance option. Healthy potted plants begin with the right potting mix. Do not use soil, as it tends to become compacted quickly. Instead choose a good quality potting mix which contains organic materials, fertilisers and water-retaining particles such as water crystals. Quality potting mixes maintain a good balance between holding water and draining well, enabling plant roots to get sufficient water but not becoming waterlogged.

ith turtle time fast approaching, Tourism Queensland is encouraging Aussies to book ahead to secure a spot for the upcoming season. “Mon Repos supports the largest concentration of nesting marine turtles on Australia’s east coast, is a fertility hot spot and a conservation success story,” she said. “The turtle rookery is also one of the largest for loggerhead turtles in the South Pacific, with visitors witnessing hundreds of turtles laying eggs last season. “A trip to see the turtles is more than just a lesson in the ‘birds and the bees’, it’s one of Queensland’s most popular edu-tourism experiences.” Loggerhead sea turtles typically lay around 130 eggs per clutch, returning every two weeks to nest and laying up to four clutches per season. Data collected by the Mon Repos Rangers indicates female loggerheads are the most frequent visitors to Mon Repos shores.
Female turtles opting to nest at Mon Repos between November and January each year have produced predominantly female hatchlings for the last 12 years, a result of the sub-tropical conditions and heat of the sand which determines the sex of the turtle hatchlings. Successful nesting at Mon Repos is critical for the future of tourism in the region. These ancient sea creatures, with their inbuilt GPS, travel tens of thousands of kilometres before returning to the area they were born when they’re ready to nest - a ‘natal homing’ natural phenomenon. General Manager of Bundaberg North Burnett Tourism, Rick Matkowski, said visitors to Mon Repos could get within inches of the giant females, which could reach a metre in length and weigh up to 100 kilograms. “Tickets for the upcoming season, which begins on 10th November, are now on sale.” Nightly ranger-guided Turtle Encounters run seven nights a week and cost $10.55 for adults and $5.55 for children (five to 14 years). inter chills are out the door and Tiffany Jones Fine Art Gallery at Buderim are welcoming the arrival of sunny, warm days with a gorgeous new selection of paintings for their Spring season.
A feature of the gallery’s Spring showing is a wall of paintings by famed artist Tim Storrier, probably best known for dramatic paintings of fires and burning ropes beneath star studded desert skies. Gallery director Tiffany Jones explains: “As well as three of Storrier’s striking fire paintings, we have unusual works by Storrier including a work of a red velvet hat set against a black background and paintings of roses and wisteria suspended in night skies which are intriguing and a rarer subject by Storrier that collectors of his work would be curious to see.” An artist name currently on everyone’s mind because of recent television stories and documentaries is the late Margaret Olley, one of Australia’s best known and loved female artists acclaimed for her richly coloured floral and still life paintings. A beautiful still life oil of Cyclamen flowers by Olley that was featured in a recent television documentary about her life and work is one of the highlights of the Spring showing. Recently receiving publicity for his gorgeous oils is the late David Boyd who has a range of colourful, playful and uplifting paintings in the Spring exhibition that show children at play in the bush as well as rare early oils painted by Boyd in Europe in the 1960’s and 1970’s. Classic Australian landscapes by Albert Namatjira, Hans Heysen, d’Arcy Doyle and Joseph Frost add a touch of nostalgia and timeless elegance to the Spring showing. Frivolity and pomp and ceremony are portrayed in a delightful watercolour “Britannia” by Australia’s most famous painter of the female nude, Norman Lindsay. Rising art star Linda Keough is represented by a stately and refined new oil of a peacock in a formal hedged garden which features the soft and mysterious light that are signature elements of all her enchanting paintings. Other highlights of the current showing at Tiffany Jones Fine include painting by eminent artists such as Robert Dickerson, Garry Shead, Ray Crooke, Brett Whiteley, Charles Blackman, Hugh Sawrey, Geoffrey Proud and Pro Hart are also on offer. ortrait of Spain: Masterpieces from the Prado’ has been specially curated for the Queensland Art Gallery by the Museo Nacional del Prado, Madrid (the Prado). It is the largest and most significant international loan the Prado has ever undertaken, and is also the first exhibition from their collection ever to be shown in the Southern Hemisphere. This exhibition features over 100 masterpieces from one of the most revered collections of European painting in the world and tells the story of the evolution of painting in Spain over three and a half centuries. This ‘portrait of Spain’ shows the internal and external factors that contributed to the development of modern Spanish identity, through developments in painting on the Iberian Peninsula. On display are masterpieces by leading painters of the sixteenth, seventeenth and eighteenth centuries, including El Greco, Velázquez, Ribera and Murillo. Foreign artists who worked for the royal court and directly influenced the development of painting in Spain are also well represented, with superb paintings by Titian, Peter Paul Rubens, Giovanni Domenico Tiepolo and Anton Raphael Mengs all featured. This is an unprecedented opportunity to see extraordinary works of art, created by some of history’s most renowned and revered painters, from one of the most prestigious and unique museum collections in the world.

the last word …even those who get seasick in a bathtub, so to speak, can play an important part in the Coast Guard In between university commitments and fishing, Christian Dearnaley enjoys giving back to the Noosa marine environment as the youngest member of the Noosa Coast Guard. Tell us about growing up in Noosa?
I
Volunteers have the option of becoming either a radio operator or joining a boat crew. This means that even those who get seasick in a bathtub, so to speak, can play an important part in the Coast Guard. I’m lucky enough to not be affected by seasickness and don’t mind getting wet, which often happens on the back deck. Each boat crew has one duty week every month, so we must spend Saturday and Sunday from 7am-5pm at headquarters. The crew uses this time to partake in training exercises, carry out any regular maintenance on boats as well as the grounds and respond to any call-outs. The crew must then remain on call during the week, 24/7, in case of any call-outs.

The John Waddams, the primary rescue vessel, is a 10year old, with Mum buying me a 3m tinny with an old 6hp outboard when I was ten. Nothing flash, but we had a fantastic time, it gave me a 10m jet-powered mono hull that’s been completely overhauled. The cost of replacing it would have exceeded a million dollars. We recently replaced the Noosa Rescue, a 20year old vessel, with Davo’s Rescue, a 9m Naiad sponsored by the Noosa tackle shop. It has positive buoyancy due to the air-filled pontoons and the low profile makes it incredibly easy to work on the back deck when retrieving items or people from the water. One of my first assists was on this vessel, retrieving two men who had overturned their boat on the bar. Luckily we were out manoeuvring in the bay at the time and were able to be at the scene in under a minute. Their boat had flipped right in the middle of the bar meaning that they had waves breaking over their heads as they tried to gain their bearings and somehow swim out of the break. Alan Hall, who was skippering Davo’s at the time, had to situate our boat right in the centre of the bar to get close enough to the men. We took about two or three waves beam-on and the boat handled it excellently, which is imperative for a rescue vessel. We were able to get both men on board quickly and move safely outside the bar. . The third vessel is the bartender patrol, a 6mcentre console, which has recently been refurbished and repowered with a brand new 150HP outboard. It’s perfect for jobs in the river, as well as jobs outside when it’s not too rough. With the three vessels the Coast Guard is equipped for anything. The cost of fuel, maintenance and so many other things taste for the water and inspired my love of fishing. I have since upgraded my boat and now spend most of my time fiddling exceed $100,000 per year. What’s it about the not-for-profit Australian Volunteer Coast Guard Association that attracted a 19-year old, what’s involved and why is it so important to the community? I suppose it is my love of boats, in fact anything to do with the water plus a sense of giving something back to the Noosa marine environment I love so much, also helping out fellow boaties. The organisation was set up to promote the safe use of small vessels. Anyone can join Coast Guard, so long as they are over 18 and no previous experience is needed. The motto is Safety by All Means and this is carried out by four principles: education, example, examination as well as search and rescue. While the roles of volunteers differ there is one crucial role that’s common to both, that’s fundraising. This is vital for its survival and is something that we are expected to do, whether it’s asking for donations at the ferry or selling raffle tickets at the Eumundi Markets.

Why does the Coast Guard never ‘sleep’? As a coast guard volunteer, it’s our job to assist those who need help when needed. This could mean getting up at two in the morning to respond to a boat that’s flipped in the bar or spending every daylight hour searching for a body. It may also mean heading out into treacherous conditions when everyone else has gone home, to search for a distressed vessel. I love living in Noosa and being part of the Coast Guard Noosa especially in the holidays when it’s extra busy.
