The Junction Flava Food and Wine Street Fair

F

amily fun in overload! The day was full of fabulous food, lots of activities and live entertainment - and even bicyclepowered smoothies were on offer. A day to see what all the excitement is about in Noosa Junction. The local 'flava' was on show at the eclectic mix of eateries and shops. And the kiddies loved the Flava 4 Kids as well. This was an affordable food event that brought locals and visitors to the area to celebrate the uniqueness of the Junction.

nce again the Brisbane Times Good Food Guide Awards has shone a light on the fabulous dining experiences available on the Sunshine Coast. Our local restaurants rated brilliantly on the glittering awards night held in The Light Space in Brisbane. As the Pol Roger champagne flowed and guests supped on tantalising offerings, MC Alistair McLeod announced a 'who's who' of culinary masters.

The Peregian Beach Business Association's annual Peregian Fiesta was a huge success, and a highlight was when RACV Noosa Resort general manager, Darren McClenaghan presented the association president, Ron Leaman with a HeartSine Defibrillator for use in the area in case of emergency.

e’s young, he’s good looking and he’s currently world number 13 in the World Surf League (WSL) Longboard Championships. Nic Jones is a triple threat with a cheeky grin and a dogged determination to spend as much time as he can doing what he knows best – riding waves. And why wouldn’t he when he’s got salty blood in his veins? A Coastie through-and-through, Nic is a 21-year-old who is making his mark on the world without a second glance, having always dreamed of being where he is today on the surfing circuit, carving it up with relish.

“Since I was a child, I wanted to be a professional surfer,” explains Nic. “When I was little, I used to watch surf movies such as The Endless Summer 2 featuring Wingnut and Pat O'Connell, and Chris Bryson's Soul Patrol with such pure stoke. I would surf the armrest on the couch, pretending to nose ride and walk up and down the board! My father is a surfer, and I would always be at the beach with him and my older brother. I loved being in the water. “Then, when I was about eight years old, I competed in the families division in the Alexandra Headland Winter Classic. I borrowed my big brother's longboard and surfed with Dad. I

didn’t even catch a wave, but from there I worked my way up through local club events at North Shore Boardriders and Alex Mal Club, into state events, and kept progressing onto where I am today.” And it’s a position he has fought hard to get to, training nearly every day, attending coaching lessons regularly and falling out of bed early each morning to check the surf report while most of us are still in the comfort of our slumber. “I’m lucky as ex-world champ Josh Constable is my surf coach, and I've also had the benefit of surf coaching by Ian 'Porto' Portingale and Tim Just over the years. In addition, Peter White from

Classic Malibu shapes my boards and has also helped shape me as a surfer, providing opportunities and contacts all around the world [Nic is Classic Malibu’s team rider]. I enjoy the challenge of what I do. When I was a junior winning all the events, I would enter the open divisions as well, just so I could surf against people who were better than me. And when I got to the top of the amateur events, I felt ready to start competing in the WSL contests. “Now I'm up against the best in the world, and compete against world champions at every event I go to. My focus is to keep climbing the ladder though, and to keep working my way to the top, just like I have done in the past. Once I'm there, I want to keep my name there for as long as I can, but nothing is easy, nor is

anything to be taken for granted in surfing because it’s not just a battle against competitors, it’s also against the ocean – and it’s not judged on who is first across a line or anything simple, it is the result of another person's perception and opinion of a moment in time.” So what are the highs and lows for Nic Jones and how does he weather them? “Competing as a surfer is much like riding a wave in itself. There are amazing times when I compete overseas in prestigious events and feel like a star, or have a moment when everything comes together, but there are also difficult points when I am doing backto-back events and conditions don’t suit, or I have a bad result. Emotions are in a constant state of flux with surfing! One day I may win an event or have the best surf of my life, and the next I might lose in an early round or get an injury practicing. You never know.” Set to compete in France soon in a WSL Longboard Qualifying Series, then later in the year in the Taiwan Open of Surfing, flying straight to Hainan Island in China afterwards for the WSL World Longboard Championships, Nic certainly appears to be spending more time in the water than on ground, but he wouldn’t have it any other way.

“I think it’s important to give 110 per cent in whatever you do, because the effort you put in transfers straight into the benefits you get out. Success to me is about always moving forward and being happy. It’s good to have goals. I imagine mine are at the top of a cliff, and as long as I'm climbing closer to them and enjoying the ride while I do, I count that as a success. It takes years of hard work, dedication and sacrifice to achieve.” Crediting his family and friends as responsible for helping him become the man he is, and listing his older brother (who he describes as a ‘true legend’) as his inspiration, Nic is as down to earth as the boy next door, but with the work ethic of a shark. His personal training and surf coaching business, Jones Sports Performance, is concurrently flying high as his star has risen, and his newfound love of car racing (where he has worked up from a Formula Ford to the wheel of a Ferrari F430 Challenge with the hope of being able to take on the Italian Challenge Race Series next year), keeps him out of mischief when he does get a spare minute. He’s a dude with a clear idea of who he is, and long may it continue. “As Oscar Wilde said, ‘To live is the rarest thing in the world. Most people exist, that is all,” Nic smiles.

NS We must eat to sur vive. However, what we eat also determines much about our personality, our physical, emotional and mental health, and our potential.

I

t all starts before conception. What did our parents eat? A tree planted in healthy, nutrient-rich soil produces good quality fruit. A tree planted in nutrient-deficient soil produces either poor quality fruit or no fruit at all. It is the same with humans. We live in a world where food is mass produced. Nutrient levels are far below what they used to be even fifty years ago. Our soils have been farmed to exhaustion and are now mostly dependent on artificial fertilisers. Processed and refined foods dominate our supermarkets. Our hospitals are full to capacity and the pharmaceutical companies are making record profits. Cancer is a plague to our society and is no longer limited to older people. Childhood cancer is

growth, repair, maintenance and most physical and mental functions. In 1992 the Bordeaux University in France determined that the minimum amount of complete protein required daily by a sedentary person should be calculated by subtracting 100 from the person’s height in centimetres. This will give the number of grams of protein required for optimal health. A physically active person would need to increase protein intake in proportion to his or her level of exercise. Adequate protein can also be helpful in the relief of depression, as the amino acid, L-Tryptophan, enhances the production of serotonin, the body’s mood regulator. The storage and efficacy of iron in the system is dependent on protein status. Iron is transported and stored in blood in molecules that are predominantly made of protein. Accordingly, anaemia and protein deficiency often go hand in hand. Inadequate dietary protein or poor protein assimilation can adversely affect cognitive function, healing, hormonal balance, sleep, and growth in children. It is also related to fatigue, immune dysfunction, frequent infections and muscle wastage. Fats are also important for optimal health. The fat family has been black-listed as public enemy number one since the mid 1900’s. Whereas there are fats that heal and there are fats that kill. The good fats include cold pressed coconut, olive and other quality oils, butter, cheeses, eggs and, to the surprise of many, the fat on our meats. Even chicken skin has great nutritional value.

now the second most common cause of death, after accidents, in 114 year old children. My father once told me about friends who had just given birth to their first child. Shortly after delivery the child was diagnosed with a terminal bone disease and was not expected to live beyond a few months. My Dad asked me why I thought such a blow could happen to such a lovely couple. I suggested he should enquire as to the diet and lifestyle of the parents. Within a few days he reported back. The couple partook mainly of processed foods sugared cereals for breakfast, sweetened coffee, cakes, biscuits, pizzas, fast food meals, alcohol, soft drinks, etc. They never exercised and they rarely drank pure water. Under such conditions it is difficult to produce a healthy child. Even their own longevity would be in jeopardy. We live in a world in which common nutrient levels have been greatly diminished. Those who aspire to produce healthy children and achieve a long and healthy life, never needing pharmaceutical drugs or medical interventions, must maximise nutrition and minimise exposure to toxins. This should be the very first science for everyone today. There are three main nutrient categories, ie Protein, Fats and Carbohydrates. The most important is protein. The word, ‘protein’ is actually a plural word, referring to twenty two different amino acids that are all individual nutrients in their own right. All these amino acids are important, but eight are essential. When the nutritional information box on a food product displays the protein content, the product may not necessarily contain all the essential amino acids. It may only have a few in significant concentrations. Even one amino acid is referred to as protein. Complete proteins are found mostly in animal products such as eggs, chicken, red meats, fish and dairy foods. The various amino acids that comprise protein are responsible for our

As he states, “It is not the fats.” The brain has a mechanism to warn us when we have eaten enough protein or fat. We feel satisfied. However carbohydrates can make a full person feel hungry again. This is the food group that requires self-control. A diet low in fat leaves a person feeling dissatisfied. Hence one gravitates to carbohydrate foods. America adopted a low fat philosophy in the 1950’s. As a result the country now boasts the highest obesity rates in the world with 35% of the population classified as obese and 65% overweight. Carbohydrate foods include grains, sugars, legumes, fruits and vegetables. The French studies recommend that carbohydrate consumption should be kept to 80% of protein intake. It is best to dispense with sugar based foods and refined grains altogether. Also it is far more efficient to derive one’s prime energy from proteins and fats rather than carbohydrates. Appetite and craving are rarely true indicators of one’s nutritional needs, as many carbohydrate foods are addictive. Appropriate nutrition is a science. Food should be nutrient-dense, prepared in such a way as to smell, look and taste wonderful. A diet that is high in good fats, moderate in protein with controlled levels of carbohydrate encourages healing, while promoting wellness and longevity. Natural healer When they say energy doesn’t lie, Elizabeth Hughes couldn’t agree more having moved from the discipline of science into sentiment and from the Northern hemisphere to the Southern (to a place she describes as ‘one of the most beautiful on the planet’), as Coco Seymour-Griffin discovers.

I

n finding your path, I’m a true believer that life shows you the way if you let it. If you pay attention to living on purpose and how this makes you feel (as compared to living according to others’ idea of what matters), the difference is clear. Committing to living our best life is what’s brought many of us to live in Noosa after all, often resulting in us leaving family, friends and even careers, but as many of us will vouch, it is a change that goes to our very core, allowing us to see life in a way we have never been able to before.

And it’s a story that Elizabeth Hughes knows only too well having suffered a chronic neck condition that opened her up to a journey that altered her perspective forever, encouraging her to move half way across the world in the process. “It was 1994, I was living in the UK, and I was enduring constant neck pain. However, no matter where I went for treatment, nothing helped,” explains Elizabeth. “After seeing various physical therapists and undergoing massage and manipulation without effect, I finally decided to see a kinesiologist. This involved monitoring my muscle responses to ascertain whether my energy was in balance or not. “It was during this session, that my mind was cracked open. I was told that while my neck hurt, there was in fact nothing physically wrong with it, but that the pain I was experiencing was emotional in origin. I was given a flower essence to help my body heal, and within one hour, my neck pain was gone. I couldn’t believe it! I refused to leave the kinesiologist’s office until she had told me how she had known this, and I then enrolled on a diploma in kinesiology! It marked the beginning of a whole new chapter in my life and was a massive awakening for me.” Having taken a very science-based approach to health up until this point having achieved an honours degree in psychology and education, something shifted in Elizabeth that was never to shift back. Elizabeth’s world, as she had known it, had turned on its axis, and suddenly life looked different. Amazed at her experience, she couldn’t wait to help others in a similar manner. “I wanted to educate and empower people to listen to their bodies and to trust themselves more so that they could take responsibility for their own health in a way that I had been shown,” explains Elizabeth. Setting to work, Elizabeth wasted no time completing her diploma, ultimately going on to attain further qualifications in reflexology, nutrition, cranio-sacral therapy, aromatic medicine and biotyping, becoming an Advanced Australian Bush Flower Practitioner, in addition. As the go-to professional for natural healing, Elizabeth surged forward on her quest to bring kinesiology into mainstream consciousness, but it wasn’t long before she found herself craving a louder voice and a better place to help spread the kinesiology word even further. “As a family, we had been on holiday to Noosa, and had fallen in love with the laid back community, the blue skies and the perfect sand. It was clear the area attracted healers and artists from all over the world, so when we realised we were eligible to have visas to live here, we jumped at the opportunity to relocate. “At roughly the same time, I also came to realise

that I could only do so much working one-to-one in clinic. I was receiving phone calls from people asking if I could do kinesiology workshops in their area, and demand was high. And so my first book evolved, ‘Your Body Has The Answer – A Guide to Self-Testing with Kinesiology’. This was my way of helping as many people as possible find the answers they had been looking for.” Enjoying a hugely successful response to her book, Elizabeth was heartened that her message was finally out there in the wider public domain, but what happened next was something of a surprise. “From the success of the book, I started receiving emails asking whether the techniques contained within it could be applied to children. It was then that I realised that my writing was in fact unfinished, and that another book to help families understand and utilise natural healing methods was necessary. As a result, the idea for ‘Your Child’s Body Has The Answer – A Guide to Testing Your Child with Kinesiology’ was born, finally being released this month.” As author, accredited teacher (Elizabeth currently teaches the diploma in kinesiology through the registered training organisation, Aminya Academy of Natural Therapies), and director of her own thriving Coastal practice (with clients based all over Australia), Elizabeth has certainly embraced her mission to educate and heal, and credits Noosa with providing her and her family with the ability to do this. “Moving to Noosa from London helped me achieve my goals as the people here are so much more open-minded and aligned with my philosophies. Everyone loves an outdoor lifestyle and values their health, so I fit in perfectly! “As a family, we enjoy good health, amazing food, great education and wonderful opportunities in one of the most beautiful places on the planet! Some days, I go from presenting on stage to ironing school shirts (for teenage sons Harry and Stanley), but I wouldn’t have it any other way! It’s a juggle being a working mum – we have to be chefs, teachers, nurses, chauffeurs AND also meet our work commitments – but my husband and I work together as a team in order to make it happen. Understanding that each new day is filled with unlimited potential and new possibility gets me out of bed each morning. The early death of my mother taught me that.”

And Elizabeth’s message to others? “Live abundantly on all levels and listen to your body and trust it. Every symptom you have is a message from your body. Know that it is communicating with you, and if you can understand the message, you can help yourself heal.”

Health tip: SO WHAT IS KINESIOLOGY? “Kinesiology involves monitoring muscle responses to ascertain whether energy is in balance,” explains Elizabeth.“It is based on the principles that muscles and organs are connected to meridian energy lines, and to stay healthy this energy must be able to flow freely through those channels. It is like a combination of traditional Chinese medicine and chiropractic muscle testing techniques. It is also one of the only modalities that can be called ‘holistic’ as it takes into account the mental, emotional, physical, chemical and energetic parts of us. With kinesiology, every treatment is unique as it gets to the root cause of a symptom. Kinesiology reveals the cause of the symptom and the best possible treatment for it.”

ith more than half of all adults burnt in Queensland last year, it seems old habits die hard when it comes to changing our behaviours towards sun protection. While public education programs have helped to raise awareness of the dangers of sun exposure, the number of skin cancer cases is growing, with the Medical Journal of Australia reporting that in 1997 there were 412,493 cases nationally, in 2010, 767,347 cases and an estimated 938,991 cases will be reported in 2015. Brisbane-based sunscreen company Tropicare, has recently launched their new 50+ sunscreen, which has just been approved by the Therapeutic Goods Administration, the government body that regulates such products. The 50+ range includes a roll on with carabineer clip, bottle, convenient handbag tubes and sachets. Despite the high usage of sun protection and strong government supported health campaigns, people still debate the effectiveness of sunscreen in preventing cancers. However, a recent QUT study into the protection of sunscreen, has finally put any doubts to rest. The study, led by QUT researcher Dr Elke Hacker, revealed that sunscreen provides 100% protection against all three types of skin cancer (Basal Cell Carcinoma (BCC), Squamous Cell Carcinoma (SCC), and Malignant Melanoma) and also safeguards a ‘superhero gene’. “Sunscreen also shields the so-called superhero p53 gene – a gene that works to prevent cancer by repairing sun-damaged skin. As soon as skin becomes sun damaged, the p53 gene goes to work repairing that damage and thereby preventing skin cancer occurring.” said Dr Elke. “But overtime, if skin is burnt regularly, the p53 gene mutates and can no longer do the job it was intended for – it no longer repairs sun-damaged skin, and without this protection skin cancers are far more likely to occur,” she said. The study involved conducting a series of biopsies on 57 people before and after UV exposure, with and without sunscreen. “After 24 hours where the sunscreen had been applied, there were no DNA changes to the skin and no impact on the p53 gene,” said Dr Elke. Owner of Tropicare Diny Nicol feels that many Australians do not apply sunscreen correctly and need to be aware of different sun strengths regardless of if they are travelling north, to the tropics or to the snow fields on holidays.

“The other thing to remember is that the closer to the equator you get, the stronger the sun is, which requires a higher SPF,� said Diny.“Ground reflection also makes a difference, so you burn faster on a white sandy beach, snow, or near water.� Diny says that like makeups and fridge items, sunscreens too have use by dates, which must be checked and adhered to. “The Therapeutic Goods Administration highly recommends throwing out old sunscreens which are past their use by date. You wouldn’t drink milk that is past it’s used by date and the same rule applies to sunscreen,� she said. “Families going on holidays to the tropics, or on cruises, also need to remember that the sun is stronger there, and should take precautions not to get burnt from the strong sun.� “It is very important to reapply sunscreen every two hours or more often if it has been washed, perspired, or towelled off,� said Diny The old slip slop slap campaign has recently added seek shade, slide on sunglasses, and slip into a shirt to their sun safety message. “The sunscreen needs to be worn in conjunction with these other preventative measures, to ensure you are properly protected� said Diny. Wild cat “The only constant in life is change,” smiles Caroline Dockray. “So, be the change you want to see in the world.”

W

ith an astute demeanour, Caroline has been waiting for this moment all her life – prowling, watching, waiting to pounce. And now with the experience and skill she has been hanging out for, the time has come. And the result? Red Tiger, Caroline’s Noosa-based yogi lifestyle activewear label, has the fashion world in its jaws, and is roaring its way onto the global style scene – from Russia to New York, from retail giants Harvey Nicols to the glamorous independent boutiques you see splashed across fashion mag editorials. Feline in name and nature, this is one wild cat that is going places. Having chosen her moment so carefully, Caroline is now revelling in the energy abounding her space, creating a material manifestation of herself via her label – pouring the essence of who she is and what she believes into her pieces, and in doing so, creating a cult of collective consciousness that loves Red Tiger for what it is – authentic, vibrant, persuasive – just as Caroline is. Opportunity is her prey, and wow, what a game of cat and mouse it’s been so far.

Born into an Australian working class family, Caroline says she never felt ‘normal’. “I was different. An individual in style, character and with a creative edge, I would daydream, get easily bored, find myself inspired by small things, get lost in time, let my heart rule my head and I loved to kick against boundaries.”

With the guts of a wild cat and the stance of a disruptor, Caroline Dockray is making global strides with her Noosa leisure label, bringing a touch of zen to the activewear den, as Coco Seymour-Griffin reveals. Completing a qualification in fine arts at the Queensland College of Art and going on to attend fashion college, Caroline always knew she was an artist, but was savvy enough to understand that life required her to develop a business mind upon which she would be able to place her creativity. Hence, she started to look for ways to grow her understanding of this arena. “I realised I needed to branch out to better understand the world and the industry that I was wanting to enter into. So, where more awesome to do that than Harrods?” Not backwards in coming forwards, Caroline aimed as high as she possibly could and managed to secure a styling position at the universe’s most famous department store, where she worked for five years honing her skills and absorbing all London had to offer. “It was a dynamic and life changing time, developing concept stores and merchandising three ladies’ departments. It taught me to START where I wanted to FINISH.” And so, on her return to Australia, Caroline’s entrepreneurial career commenced (much to a lack of understanding by her parents who wanted her to get a ‘real job’), with her successfully designing concept uniforms for high-end boutique brands and undertaking promotional product design. Life was set for a time, but by far from complete. And as she turned 30, it started to even m o r e interesting. “I met Juan and I knew I had met my soulmate,” Caroline

explains. “We were on equal parallels, but until this point had been worlds apart, with Juan having only recently come to Brisbane as part of his travels from Chile. A farm boy (the youngest of four) growing up in the stunning countryside of Linares in the Maule Region of Chile Linares, Juan had, like me, always known he was a round peg who did not fit in a square hole. Feeling like a misfit and unsure of his direction in life, he had set out across the world to learn new languages along the way and discover who he was. There were no words needed though when we came together. We immediately knew we were meant to be.” Moving to Caloundra and starting a family, Caroline and Juan were soon very busy, with three kids under three, Rosita del Carmen (‘Song of Love’), Don Solomon Jon (‘World Peace Leader’) and Isita del Carmen (‘Song of Joy’), but the adventure of the journey never left Caroline, and her desire to bring her own label to life only grew greater with each day that passed. And then one day last year, she felt ready. It was time to press ‘GO’. From there, things happened quickly. The Tiger Den took shape in Noosaville, and a move for the family soon followed. Red Tiger was born. “It was time. I felt like I had been preparing for this moment forever,” reveals Caroline. Offering unique exclusive 100% Australian-made designer leisurewear, with each print in possession of a special meaning, Red Tiger did not hesitate to make strides away from the crowd, giving its range something that other brands were lacking – a heart. “Moving to Noosa felt like we had returned to our spiritual home,” beams Caroline. “We were drawn to the unspoilt beauty, lifestyle and culture, and this became apparent in what we found ourselves creating. We were finally living the dream and walking the walk.” With Juan and Caroline working Red Tiger together to keep up with its constant development and evolution, life clicked into a blissful yet busy groove, and a year on, is still gathering pace. “We hope to establish Red Tiger as a strong Australian textile manufacturer, building a legacy for our family,” reveals Caroline. “We feel so full of gratitude and appreciation, so are mindful about paying what we have achieved forward, taking on two apprentices to date, and soon engaging two school-based trainees. We have places annually for final year fashion interns in addition, and are going to be opening up office space to other creatives who need somewhere to work (in return for some minimal hours of creative work).” With their young brand now with claws, and a fourth baby on the way, Caroline couldn’t be happier. Here is a woman who has certainly earned her stripes.

“Everything we do comes from a place of love,” she smiles. “Love is the answer.” Go get ‘em Tiger.

ROASTERY & ESPRESSO BAR Dr Alex Russell’s recent PhD, undertaken at the School of Psychology at the University of Sydney, looks at whether novices can become wine experts. “A lot of people think that wine experts are full of it but I’ve been investigating this area for the past seven years and it turns out there is a knack to it. Informed by my research, here are my ten tips on how to become a wine expert:”

Gradually reduce the amount you put in until you can find that flavour without any additive. There are hundreds of possible

Drain beans, cover with cold water and simmer until beans are tender. Drain beans, reserving 100ml of cooking liquid. Simmer garlic in stock and bean liquid until tender, combine with other ingredients, season with salt and pepper and puree in blender until smooth. To serve: Toss tomatoes, pine nuts, capers and herbs together with a little olive oil, salt and pepper. Grill whiting and prawns until cooked. Place whiting and prawns on a spoonful of warm bean puree and top with salad.

Rick’s recipe... Dalmation Fresh Fig Tart Dalmatinska kolac od smokvi This is exactly my kind of pudding, so easy to knock up when the fig season comes around.One of the pleasures for me of living on both sides of the world is that I get two fig seasons.

Serves 8 For the pastry, mix the flour, salt and butter until it resembles breadcrumbs, then stir in the sugar.Mix the egg yolk and cream,and add to the flour mixture so that it comes together to form a dough. On a floured surface, roll out the pastry and use it to line a 26cm, loose-bottomed flan tin. (If too difficult to handle, wrap and chill for 30 minutes in the fridge.) Trim the edges of the pastry, cover with cling film and rest it in the freezer for 30 minutes. Heat the oven to 180°C/gas 4. Line the pastry with baking parchment, fill with baking beans or rice and bake blind for 30 minutes. Remove the paper and beans and cook for a further 30 minutes.Take out of the oven and lower the temperature to 160°C/gas 3. Soften the mascarpone with the honey in a small saucepan over a low heat. Pour into the pastry case, then lay the figs on top, cut-side up. Bake for 30 minutes until just starting to turn golden around the edges.To serve, allow to cool to room temperature before removing from the tin and cutting.

One way to keep asparagus fresher for longer is to wrap it in a damp tea towel, pop it in a plastic bag and store it in the crisper compartment of your refrigerator. Another way is to stand the fresh spears upright in a container with 1cm cold water, cover and store it in the refrigerator. When preparing asparagus, simply snap off the woody ends with your forefinger and thumb. It can be served both raw and cooked - try it fresh in salads and salsas, as well as in an endless variety of cooked dishes. Asparagus is low in kilojoules, and contains no fat or cholesterol, whilst providing fibre. That makes it a must for any diet, including a weight loss diet. Among her wellconnected guests was Tommy Hilton, who eventually added the drink to the bar menu at his hotel chain. This fiery red and oh so delicious twist on a classic was created for Buderim Ginger by mixologist maestro, Elle Toop.

Ingredients: 50ml Herradura Blanco Tequila 30ml Solerno Blood Orange Liqueur 20ml fresh lime juice 20ml Blood Orange juice 10 ml Buderim Ginger Refresher Cordial or Revitalise Cordial Pinch fresh Rosemary Ice cubes Method: 1.Into a cocktail shaker combine all ingredients with several ice cubes and shake vigorously. 2.Strain into a cold Margarita glass rimmed with salt 3.Garnish with a sprig of Rosemary and a wedge of Blood orange

Asparagus Stir-fry with marinated Asian-style Lamb Serves: 4 Cooking time: 7-10 minutes Get the lamb marinating while you prepare the veggies and cook the rice. Once the wok’s fired up you’re only minutes away from saying,‘Dinner’s ready!’ Ingredients... Marinade: 1 tablespoon dark Soy sauce 1 tablespoon Mirin (see Tip) 1 teaspoon Brown sugar 2 teaspoons Sesame oil 500g lamb fillet 2 bunches asparagus, woody ends removed 1 bunch of bok choy, halved 100g snow peas 1 large red chilli, thinly sliced 2 tablespoons oil for cooking Steamed rice to serve Fresh limes to serve Method: To make marinade place all ingredients in a container or plastic bag and mix well. Add lamb fillet and mix thoroughly to completely coat meat. Place in refrigerator for one hour, turning fillet every 15 minutes. Remove lamb from marinade. Heat a wok or large pan over high heat. Add 1 tablespoon of the oil and carefully add lamb. Cook on all sides for 2-3 minutes to seal meat. Remove from pan and allow to rest before slicing. Meanwhile, add remaining 1 tablespoon oil to pan. Heat over medium to high heat and stir-fry asparagus, snow peas and chillies for 1-2 minutes. Reduce heat then place a lid on pan so the vegetables steam for 1-2 minutes. Slice lamb and serve immediately with vegetables and steamed rice Tips: Mirin is a type of rice wine used as a seasoning and condiment in Japanese cooking. Get the rice steaming while you cook the lamb and vegetables.

Koonara named ‘Coonawarra Winery Of The Year’

oonara was recently announced as ‘Coonawarra’s Winery Of The Year’ for 2015, at the Melbourne International Wine Competition. The winery was in great company, with other regional winners including; Wyndham Estate in the Hunter Valley, Soul Growers in the Barossa, Taylors Wines in Clare Valley and Aramis Vineyards in McLaren Vale. “We are thrilled with the announcement,” said Dru Reschke, Koonara’s owner and vigneron. “There is a real buzz for Coonawarra wine internationally, and although we are famous for Cabernet, there is a huge demand for Shiraz from the region. There is such incredible quality coming out of all the wineries in Coonawarra at the moment - it’s great to be part of it.” The Melbourne International Wine Competition is one of the only international wine competitions with trade judges. The judges are comprised of buyers from top retail stores, sommeliers, restaurant owners, hotel beverage directors, distributors and importers. Judges included Kate Lawton who is Senior Buyer at Vinomofo; Peter Nixon, Dan Murphy's Natural Fine Wine Manager and Christian Maier, Sommelier and Buyer for RACV Clubs and Resorts. The recent announcement comes on the back of a ‘Five Star Winery’ rating by James Halliday. This year just 10.8% of the 2,800 wineries that were in the running, were awarded a ‘Five Star Winery’ by James Halliday. People who come to Coonawarra get rewarded, with over 66% of Coonawarra Cellar Doors holding a Halliday five star rating. “With such great wines in so many Cellar Doors, visitors to Coonawarra can feel confident they’re tasting wines of the highest quality,” said Mr Reschke. Steeped in the mystery of thousands of years of tradition, Sake is enjoyed as much for its beautiful rituals as it is for its complex and intriguing taste.

O

riginating in the Nara period 700AD, sake production has always been revered as a highly respected craft and the role of the Toji, or sake brewer, was likened to an artist or craftsman. Traditionally this title was passed down from father to son and even today many of the most famous sake houses are family businesses that go back generations. Slava Beliakova, Australian sake sommelier and writer of Sake Guide, explains that sake is made by fermenting a special type of sake rice that is larger, stronger and contains less protein that regular rice – it’s terrible to eat but perfect for sake! At the beginning of the process the rice is polished to remove the bran and then steeped in water for anywhere between a few minutes to overnight. The rice is then steamed and cooled, and a specialised type of mould – koji- is added and left to ferment for 2-3 days, to turn starches into sugars. This step is akin to malting in beer brewing. Yeast needs sugars to create alcohol, and koji mould creates those

Sake

The Secrets of Sake...

sugars. Once the mould has propagated over the rice, the rice is mixed with water, yeast and more freshly steamed rice to create the yeast starter. Over the period of two weeks, as yeasts grow stronger, more water, moulded rice and steamed rice are added until the final fermenting mash is formed. This mash – moromi – is left to its own devices for 20-40 days, until the master brewer determines that the sake is ready. The sake is filtered from this solid mixture and left to mature for 6-12 months to develop the flavour. With only a few exceptions, sake does not generally age past this point and so it is best consumed within a year of being made. As you can see, the process is quite an art form and each brewery has its own version of this method using different timing and measurements, which results in a very different product. “Sake’s range of flavours is truly fascinating,” explains Slava, “The Japanese have a saying: ‘Sake doesn’t fight with food’. What that means is that sake rarely clashes with food, and has a refreshing effect on the palate.” “Sake’s overall acidity is up to 10 times lower than wine’s. Sake is also rich in glutamic acid, the key component of the umami, that taste element that is savoury and satisfying. The savoury richness of sake, especially pronounced in junmai type, makes it a great match with equally rich food – cured meats, cheeses, steaks and stews. “ “The biggest sake flavour surprise of all is the floral and fruity aromas of sake’s premium grades, ginjo and daiginjo. A drinker will find apple and melon in spades, but also banana, strawberry, lychee and peach. Freshly cut grass, citrus and herbs are also waiting to be discovered. Some of the most aromatic sake brands in Australia are Dassai, Houraisen, Dewazakura and Taka.” For centuries sake has played an important role in the ritual ceremonies of Japanese culture. While today the traditions surrounding the consumption of sake have relaxed, it’s a wonderful experience to practice the rituals. Traditionally sake is drunk from small cups called ‘choko’ and poured from a ceramic flask called a ‘tokkuri’. It can also be served in a wooden box called a ‘masu’, which was originally used for measuring rice. Sake can be served chilled, at room temperature or heated. However it is generally thought that premium sake should be enjoyed chilled, while sake of with robust flavours, like junmai, can be heated. It is tradition never to serve your own sake and instead friends should serve each other. oosa Regional Gallery located riverfront adjacent to the Noosa Marina Tewantin has some exceptional Exhibitions on show. The diversity is interesting with a strong regional focus through the lens of a collaboration of local artists, writers, poets and a photographer and their interpretations of the local iconic Noosa biosphere and an exhibition of fascinating and unique artists books incorporating materials from the natural environment and found objects. Concurrently for some of this period, the biennial ‘Floating Land’ event has returned with a retrospective exhibition, an audio-visual immersive installation and a soundscape geotagged from the Gallery to the river mouth you can listen to on your smart phone. Recently Noosa Regional Gallery has also hosted significant touring exhibitions including the QAGOMA Indo-Pop exhibition and the Ah Xian: Metaphysica. It is said “Behind every great exhibition is a great curator”. But what do they actually do? Noosa Style spoke to Nina Shadforth, Director at the Noosa Regional Gallery and asked her what really happens behind the scenes? “Most who work in galleries have a skill set that is artistic or is a ‘creative’ as I prefer to call it”, replied Nina. “Understanding art-making and the processes involved helps immensely, because artists, like any profession, possess a specialised vocabulary.” Nina further explained that the curator needs to be able to translate to a diverse audience what an artist is wanting to communicate. And how does she do that? “Putting on an exhibition can be much like a wedding event” said Nina, “though we do it every six weeks and hopefully a wedding is only once” laughed Nina. Expanding on this wedding analogy Nina stressed the importance

Nina Shadforth, Director at the Noosa Regional Gallery of the planning stating “curating touring exhibitions require the longest lead time particularly when accessing artworks to loan from other collections.” When queried as to how contemporary art practice reflecting rapidly evolving media has impacted on curating, Nina reflected how it has been interesting to see digital arts practice evolving and making its way in to the artspace as the ‘now normal’ in terms of what constitutes an exhibition. “I remember seeing two works in a regional gallery some 12 years ago and recall asking myself ‘If this is this in an art gallery, how is it ‘art’. What was the curator seeing that I was missing?’ I really enjoyed seeing something digital and something completely new that pushed the boundaries of contemporary art. “ Nina noted that curators need to stay techno-savvy and to learn from artists’ technoworks which might be used as effective display mechanisms citing as an example the blockbuster Jean Paul Gaultier exhibition at the NGV and its projections on the mannequins. “The Jean Paul Gaultier exhibition would have to be my favourite for 2015 not only because I love fashion but also because of its innovative methods of display and use of new media throughout - not necessarily as an artwork but as a tool for displaying the works.” At the local level, Nina stated her best and most memorable exhibitions, in addition to working with the local and emerging artists, have been the ones where I have worked with private collectors. “Because at the onset you share some common ground and that’s the passion for art and equally the passion to share it with an audience.” Share the passion at the Noosa Regional Gallery, riverside Pelican Street, Tewantin. 07 5329 6145 E: :gallery@noosa.qld.gov.au www.noosaregionalgallery.com Open: Tues to Fri, 10am – 4pm, Sat & Sun, 10am – 3pm. NS PROFILING BLACKMAN’S Time in the Queensland Sun explored at Qld Art Gallery... Brisbane’s influence on the art of Charles Blackman, one of Australia’s most important artists, will be explored in a new exhibition at the Queensland Art Gallery. ‘Lure of the Sun: Charles Blackman in Queensland’ features over 50 paintings and works on paper drawn from more than 12 private and State collections, and explores the connections and friendships Blackman made while living in Queensland.

ueensland Art Gallery | Gallery of Modern Art (QAGOMA) Director Chris Saines, CNZM, said ‘Lure of the Sun’, presented as part of the Glencore Queensland Artists’ Gallery program, tells a fascinating story about the development of one of the country’s foremost artists. ‘When the Sydney-born Blackman first ventured across the border into Queensland in the late 1940s he was welcomed by several notable friends and

creative locals, including artist Laurence Hope and future wife Barbara Patterson,’ Mr Saines said. ‘These friendships and connections had a lasting influence on Blackman’s creative oeuvre and his practice from this period.’ Brisbane-inspired works from Blackman’s famous ‘Schoolgirl’, ‘Faces and flowers’ and ‘Alice’ series form a significant part of ‘Lure of the Sun’ and will be on display alongside works by fellow Australian artists Laurence Hope, Laurence Collinson and Jon Molvig. Michael Hawker, the Gallery’s Associate Curator of Australian Art, said the artist had maintained a significant connection with Queensland since his first visit and Brisbane remained an important influence later in his career. While in Queensland, Blackman became acquainted with the early works of Sidney Nolan whose formative influence on the young artist can be seen in works such as the 1952 painting from the Queensland Art Gallery Collection, City Lights.’ said Mr Hawker. ‘The work that most honours the friendships that the self-taught Blackman forged in Brisbane is The family 1955, a painting of Judith Wright, Jack McKinney and their daughter Meredith which recalls a winter’s day picnic at Cedar Creek near Mount Tamborine.’ To mark the opening of the exhibition, exhibition curator Michael Hawker will be joined by one of the subjects of The family, Meredith McKinney, to discuss Brisbane’s literary and art circles of the 1950-60s. This special event takes place in the QAG Lecture Theatre at 1.00pm on Saturday 7 November.

A couple of days before the start of Spring, we jetted into Hobart in Tasmania, a fascinating city set around the broad reach of the River Derwent and its estuary. A compact city where walking is a must, if you want to fully experience the tantalising historic streetscapes, restaurants, cafés and bars that dot the streets, along with a plethora of art galleries and design studios - all taking full advantage of the allure of water views and the constant movement of ships, ferries and watercraft.

W

e had hired an all-wheel drive car to make our way around Tasmania looking for sensational wines and fresh regional cuisine. And, we wanted to stay in heritage accommodation where possible, to really experience the Tasmania of our dreams. We chose Cleburne Homestead as our base for the three days we had in Hobart, just 15 minutes from the city heart. This National Estate and National Trust listed property features three unique sandstone B&B cottages and a main house all enveloped in a trueto-history country courtyard, where Peacocks roam with chickens and roosters, and Alpacas graze on the homestead's four acres. The highlight of our stay here had to be the included breakfast, taken each morning in the main house by a roaring fire. Each morning our hosts David and Penelope would prepare a stunning banquet for just the two of us. Fresh coffee, home baked breads, Italian 'french toast', charcuterie, cheeses, croissants, Penelope's own recipe muesli and yoghurt, juice…no wonder I put on weight! The weather was crisp (perhaps really cold!) but no one could ever say that Tasmania isn't worth packing an extra jumper for; and we'll even forgive the parking inspector for the ticket he stuck on our car while we were checking out the fresh seafood at Constitution Dock on our first day.

I had a 'must do' list for Tasmania…must eat lots of oysters (tick), must drink lots of fabulous wine (tick), must find lots of delicious local produce (tick), must try a scallop pie (tick) and must have a fresh crayfish (dong). We chose the wrong time for crayfish, although we did get to meet a local fisherman and SEE his catch. We were fortunate enough to strike Hobart when the skies were beautiful blue, and took the opportunity to drive up to Mt Wellington, which sits majestically above the city. I smiled as we passed houses trimmed with fluffy white, some with lots of snow covering their trees, eaves and cars and some totally devoid of any snow. A cosmic joke no doubt. We continued up the winding road astounded by the beauty of nature, stopping to take photos to send home to Queensland where it was a balmy 29 degrees. As we reached the peak (over 1270 metres) we were rewarded with a view over the whole city and the chance to be among the clouds. A tourist and photographer's dream day. 8. The Salamanca Markets at Salamanca has been running every Saturday since 1972 are an institution in Hobart. The street is lined with vendors as far as the eye can see, all offering local produce, crafts, clothing and an endless array of edible goodies to create panic for your decision making mechanism. The area offers

8. visitors a mind expanding selection of design studios and galleries mainly housed inn heritage warehouses, and a plethora of restaurants, cafés and bars to amply satiate your appetite. Afterwards we drove up to the historically beautiful Battery Point, where narrow streets are lined with quaint houses and cute eateries, and every frontyard seems to house an obligatory rose bush and Magnolia tree in full bloom. Originally settled in the early 1800s by those who worked at or for the wharves, the area proliferated with both dockworkers modest housing and merchant class mansions. Still true to the era this is a true step back in time. We had been told by so many people that we couldn't leave Hobart without visiting the MONA Gallery ( Museum of Old and New Art) on Peppermint Bay. The gallery is an engineering masterpiece that rivals the tombs of Egypt - a marvel to the expertise mankind and a vision shared by its owner and creator David Walsh. We also took a drive out on a wet, windy and freezing day to visit the eerily beautiful and depressing Port Arthur, a place of history both old and new…where old convict ruins still stand to this day and beckon visitors to explore and relive Australia's past. I couldn't leave Tasmania without trying a 'famous' Scallop Pie and

luckily it had just been added to the menu at Bangor Wine & Oyster Shed (what a concept!). Plump lusciously sweet Tasmanian scallops and fresh herbs swimming in a creamy sauce and enveloped in light fluffy pastry. Definitely need to go back again! It's not surprising that Hobart has previously been rated on of the world's top 10 cities by Lonely Planet. Tasmania has so much to offer visitors. Paddock to plate and strictly seasonal produce are not just trends here, they are a way of life, with fruit and vegetables grown on the island and picked daily for inclusion on menus and tables all over the island. All the meals are very generous in size, but be sure to save space for the dessert menu which included the Honey Créme Brulée which was delicious. The restaurant overlooks the Red Lantern tree in Gallipoli Park below, a 100 year-old Fig tree carrying 200 red lanterns that glow brightly adding a romantic feel to the night. On our stay we visited the QOMA to view the latest photographic exhibition and walked around the Qld Museum and Art Gallery for our fix of culture; and then next day joined a fabulous walking High Tea Tour of Brisbane City with Foodi, a 3 hour, fun way to indulge your passion for tantalising goodies, learn a little more about Brisbane's gourmet secrets, while 'possibly' walking off the effects they may have on your hips!

Swapping these calorie laden snacks for nutritious options means you can still enjoy a healthy snack without the hassle. 3.

NAP away. Between jetlag and jam-packed days it’s easy to wear yourself out when you’re travelling. Rather than cramming dozens of activities into each day, where possible try to factor in a nap – especially in the first few days of arriving at your destination.
