Before The Good Food & Wine Show visited Brisbane recently, celebrity chefs Alistair McLeod and Matt Moran, as well as a group of local Queensland producers ventured up to the rooftop of The Pullman Hotel in Brisbane, which had been transformed into a rustic, cellar door - to give invited guests a 'taste' of Australia's most famous food and wine regions, including Granite Belt, Lockyer Valley, Gympie and the Sunshine Coast. With Yalumba wines in-hand, we dined on barramundi and crab fishcakes; satays, cheeses and canapés. And, then just to make an impression, Matt pulled out his trusty blowtorch to finish of his individual size Bombe Alaskas!

s I was sitting on the rustic timber seat by the entrance to the dog beach in Sunshine Beach, early one morning recently - watching the passing parade of surfers on their way down the path in search of the perfect wave; walkers fervently working on their cardio and tuned into whatever music or motivational piece was plugged into their earphones; dog owners taking their furry companions down for a quick paddle and then bringing them back to rinse off before their trek home; and those just looking for a little 'me time' on the beach before work - I wondered what it would be like to have no cares, no problems, no worries, and no commitments. At this time of the year we tend to think about the year that has just passed - and the year ahead. We always anticipate there will be change ahead - that's probably why we make those New Year's Resolutions - that we rarely keep. Sometimes in the living of life we forget how lucky we are - and forget to simply sit back and 'smell the roses' from time to time. The problems we think we have can usually be overcome. None are insurmountable.
n Australia, there are over 100 million beach visitations each year, and experienced volunteer surf lifesavers and paid lifeguards watch over these visitors to ensure their time at the beach is as safe and enjoyable as possible.
I Surf Life Saving calls for help this summer…
During the 2012-13 patrol season, surf lifesavers and Australian Lifeguard Service (ALS) lifeguards performed almost 12,000 rescues, 1million preventative actions, and over 64,000 first aid treatments on beaches around Australia. The summer safety messaging from the Surf Life Saving Association, who represent the Surf Life Saving movement across the country, is to respect the water and know your limitations. With the launch of their new national community awareness campaign, SLSA will utilise the iconic Noisework’s track Touch, and call on the Australian community to support the movement by donating much needed funds to the 100+ year old charity. Ingenious young building designer Chris Clout, articulates to Helen Flanagan about success and global aspirations.
C
hris Clout is well acquainted with the building industry, boasting an impressive portfolio of awards for insightful innovative designs. His prodigious talent reflects a profound understanding of the built form, as well as a keen passion for design. His achievements thus far for a 30 year-old are nothing short of outstanding. Chris had a hammer and nails in his hands at six when he built his first house. It was only a cubby house and it was followed by tree houses, but it did kick off two decades of building design, beginning with a career as a carpenter, and evolving into something of a phenomenon, whilst transcending the boundaries of conventional carpentry, with one-of-a-kind contemporary architecture. “I think it really helps knowing how to put things together,” says Chris who grew up with his close-knit family including a brother and sister, at Jervis Bay on the south coast of NSW. “My builder dad would let me order timber from the hardware store which I cut and sawed so I could build what I wanted. In my teens I became his apprentice and in my third year I designed and renovated the family home.” Chris worked for his Uncle Paul (Clout), who is well known in Noosa for his avant-garde building design and five years later he decided to go it alone. At the core of his creations is a humble philosophy centring on the important values of functional family life and living. This obviously resonated with the judges of
the Building Design Association of Australia’s (BDAA) National Design Excellence Awards in 2009, when Chris not only won but was the youngest ever recipient. The award was for Chris parent’s home in Castaways Beach.” They wanted something different so he came up with the idea of the Japan House,” says a very proud Dani Clout who juggles the management of Chris’ business with being an amazing mother to 8 month-old Cayden Christopher. holiday resorts, Chris has worked hard to achieve what others in his field are only dreaming about. His design tally so far is over 100 homes in Queensland, NSW, Melbourne, Perth, Bali and Vanuatu and he has won 51 awards at regional, state and national levels. Outshining some of Australia’s biggest designers with his clever ideas and big dreams, plus the notion that there should always be a strong element of water starting at the front door, flowing through the house to the pool, Chris’ striking resort-style pools and water features and seamless indoor/outdoor living, have come to the attention of several television producers. “Riverhouse, Saltwater House and Tropical House will feature on Amazing Water Houses which will air on HGTV, a popular cable channel in America as it mostly features Hollywood and Vegas homes,” an excited Chris says adding “they had never filmed outside America before. “Most recently the Tropical House in Noosa Waters was also chosen for two episodes of Sandcastles on Australia’s 7Two. It’s an architect-based show and when I told them I wasn’t an architect they said they didn’t care. They just loved my work especially the house which is like a grand ocean liner from the street, on a triangular block and looks more like an island retreat with its manmade rainforest at the entrance which leads to a circular pavilion area, kitchen, living and dining all jutting over the infinity pool with its perspex spa. The two separate wings wrap around the pool. “The design can be plonked on an island or by a river anywhere in the world. There were no restrictions on design from the Melbourne clients and they didn’t change a thing.” Chris has designed several houses including one currently at Sunshine Beach for his Uncle Glen (Watson); a design in Far North Queensland is centred round a helipad; and amongst other projects on the drawing board is a $4 million home in Sydney’s Cronulla. “Chris finds it so difficult to sleep, is at his most creative in bed and can never find the off switch,” admits Dani adding “he’s has also published his own coffee table book called Resort Houses, a Collection of Chris Clout’s Best Designs plus his proposal on the beach at Playa Del Carmen in Mexico is testament to the fact he’s so romantic.” Chris has global ambitions but he assures his legion of followers he’ll not be leaving Noosa. “I’m designing some of the best houses in the country and I want to build resorts all over the world such as Bali, Fiji and Thailand. My clients love the fact I’m based in Noosa as it gives them the perfect excuse to come here for a holiday. As for me it’s a great place to live and bring up a family. We love being parents. Cayden is the best thing that has ever happened to us. Dani wants two kids but I want three so we’ll see what happens,” concludes Chris almost forgetting about another family member – a Golden Retriever puppy called Indi.

UPCOMING EVENTS Mal-loving mutts carve it up at surf festival
T
he biggest field of international competitors seen in years is expected for the 23rd annual Cricks Noosa Festival of Surfing from 9 to 15 March, with entries received from California, Mexico, Hawaii, New Zealand, New Caledonia, France, UK, Indonesia and Japan. Six world champions are amongst the early entrants, including reigning world men’s longboard champion Taylor Jensen and reigning ISA world junior longboard champion Honolua Blomfield. The week-long festival will offer $12,500 in prize money over five professional divisions, plus more than 20 amateur, specialty and team divisions.
The Jeep Waterman Challenge will pit eight of the best all-round surfers in the world against each other in four surfing disciplines – longboard, shortboard, finless and body surfing. The Challenge will be conducted over the best conditions on offer between March 6-8 at remote Double Island
Point, with the invitees showing their skills to the public with an expression session on opening day, Sunday, March 9. California Design 1930–65: Living in a Modern Way

his exhibition reveals the iconic designs that emerged in mid-twentieth century California, from the innovative furniture of Charles and Ray Eames to the original Barbie doll and the classic symbol of the casual western lifestyle, Levi’s 501 jeans. Major innovations in materials and mass-produced goods as well as the strong tradition of the Californian ‘designercraftsman’ are conveyed through more than 250 fascinating objects. The Woodford Folk Festival is as much about its rituals and traditions as it is about the thousands of artists, performers and presenters that fill its many stages each year.
T
he theme of the 28th festival is derived from a quote from Mahatma Ghandi…"The only devils in this world are those running around in our hearts, and that is where all our battles should be fought." Festival Director Bill Hauritz explains, "Each year we've looked for a central festival theme that helps us envisage how our ceremonies and indeed programming will take shape. Finding universal themes and applying these to festivals is not easy” said Hauritz. This year, Woodford organisers enlisted children aged 7 to 10 years on the Sunshine Coast and surrounds to contribute to the Welcome Ceremony, which this year will include flaming hearts, cascading fireworks and a magnificent parade of monsters, lanterns, flags and illuminated sculptures. Using this year’s theme, “Facing Your Fears Away”, over 300 children bravely committed their inner monsters to paper. Twenty children were shortlisted and interviewed by the organisers and now, three of those children have been picked to have their Monsters made into 3.5m high puppets that will feature in the Welcome Ceremony, with an expected audience of 10,000 people. “We saw some wonderful children’s drawings of their monsters and Ghandi’s quote seemed to pull it all together for us” Hauritz said. Each year, the Woodford Folk Festival poster is a piece of artwork which festival devotees and art lovers rush to purchase due to its imaginative and intricate design, vivid colours and creativeness. This year’s stunning poster features a procession of people and their monsters passing through a beautiful living and growing heart – it’s a porthole to a place of aspirations and celebrations, the Woodford Folk Festival, and a visual representation of this year’s theme. The poster was designed by Gavin Ryan, Woodford’s resident graphic designer and illustrator for the festival since 2008. Ryan is a regular designer of stamps for Australia Post and has worked on a number of commissioned works as well as his own artworks. Of this year’s poster he said “It’s been the most challenging one I’ve done to date. t’s not surprising Zambezee is a success story. Lorelei Bedford and Natalie Hanley have over forty years in the fashion industry between them. Their first boutique at Mooloolaba was opened in 1997. Natalie’s love of fashion started at 14 when she met a lady who owned three boutiques in Mooloolaba. She juggled studies with weekend and holiday work, left to join swimsuit company Brian Rochford and in the late 90s returned to buy one of the three boutiques, with her mother. Lorelei was looking for a change from a long career in ceramics and raising her family, so together they were ready to tackle fashion head on.

Some of the highlights have been travelling to Europe to visit global brands such as Versace, meeting amazing women such as Maggie Tabberer and watching Jerry Hall and Sara Murdoch grace catwalks in Sydney.” Dismiss any thoughts of a generational gap when it comes to the doyennes of fashion who bounce ideas off each other daily and sometimes disagree yet give the idea a chance. “We trust in each other’s opinions to the point of preferring not to buy on our own. This mutual sounding board has worked so well for the last 17 years. “The Zambezee woman chooses quality over quantity, she has a love of beautiful fabrics which are cut to flatter and suit her figure, no matter the shape or size. “We have such a wonderful cross-section of clients, from all around Australia, also International and all ages. It is not uncommon for a 21 year-old to walk in and buy a Camilla, a 70 something has bought the day before. We absolutely love it plus it confirms Zambezee is built more on ageless style rather than the latest trend. “One of our favourite sayings comes from renowned fashion designer Mela Purdie who said ‘You wear the clothes - don’t let the clothes wear you’. We’ve searched everywhere and know we’ve found the perfect fitting jeans, dresses with silhouettes that flatter every shape, and beautiful jersey fabrics that glide and don’t cling. It’s probably why we have clients who’ve been shopping with us from the very first week we opened.” For Zambezee’s ten year celebration Lorelei and Natalie flew in iconic Australian designers George Gross and Harry Watt also Mela Purdie.” On another occasion we had a lot of fun with Alex Perry. Clients loved the opportunity of meeting him and watching models in his beautiful gowns sashay down the catwalk. “The joy of fashion these days is almost everything goes. There is no trend we follow. We stick to luxurious quality garments, which are cut to make the most out of one’s figure and items that will build on an existing wardrobe. We style our clients with a look that suits them, their figure and lifestyle. Nearby at berardo’s restaurant & bar, Jim Berardo has appointed new head chef Tim Montgomery ex Newcastle, where he put Bacchus on the map as one of NSW’s finest regional dining rooms. When it comes to transformations, the former Ma Mensa has been demolished and rebuilt with a stunning open space boasting a cocktail barrestaurant called Miss Moneypenny’s. BODY SQUATS Sets: Three - Repetition: 10 Squatting is the perfect exercise to tone your butt and look fab in that bikini. To perform this exercise correctly, stand with your legs shoulder-width apart, bend your knees while lowering yourself. Tilt your butt backwards as if you are sitting on a chair while keeping your back neutral at all times. You can stretch out your arms in front of you to help maintain your balance. PUSH UPS Sets: Three - Repetition: 10-15 Body weight push-ups are fantastic for your chest and triceps, and helps keep your arms looking fab and trim. Start by lying face down on the floor with your palms at shoulder level and your fingers pointing forward. Make sure you keep your back straight at all times. Push yourself up until your body weight rests only on your palms and toes. Lower yourself and repeat. If performing push-ups on your toes is too difficult, an alternative way to do them is on your knees. This helps reduce the lifting load by about 50 per cent. STANDING OVERHEAD PRESS Sets: Three The standing overhead press not only gives you

Hold for 10 to 30 seconds, gradually working up to a minute. Roll over and switch sides. LUNGES Sets: Three on each leg - Repetitions: 10 on each leg Body lunges are great to help you achieve toned legs and butt in no time! It’s important to do lunges properly to avoid unwanted pain or strain on your joints. To perform this exercise correctly, always keep your upper body straight with your shoulders back and relaxed and chin up. It helps to pick a point to stare at in front of you so you’re not always looking down. Step forward with one leg, lowering your hips until both knees are bent. Make sure your front knee is directly above your ankle. Stand back up and repeat.

purred by earlier-than-expected sightings of nesting turtles, Nev and Bev McLachlan have left their coastal home to head to the Deepwater National Park south of Agnes Water to patrol 22 kilometres of beach. What’s unusual about this mission is it will be the 37th year they’ve worked together to protect the turtles. Nev’s initial interest in turtle began when he was studying at Kelvin Grove Teachers College and his science lecturer Dr Col Limpus asked for volunteer researchers to go to Mon Repos in Bundaberg. Such was the magnetism of turtles, eight years later he took his new bride Bev, who was also treated to a sojourn on Heron Island. Their two children have also been involved with the conservation work. “Daughter Jaylene, now 29 was born on 21 December and by 26 December 26 we were at the beach on a turtle trek,” Bev says with a laugh.“She must hold the record for the youngest turtle tracker. “And there was no way Bev was missing out on the summer,” adds Nev. “Even when she was seven months’ pregnant with Ben (now 24), she was out on the beach.” Every evening the McLachlans drive their quad bikes onto the beach looking for turtles that have
come ashore to lay eggs. “We tag (if necessary), measure and record each visit by the turtle and leave the beach about dawn,” explains Bev adding “we’re fortunate to have loggerhead, green and flatback turtles visit, also it’s been a rare privilege to watch leatherback turtles. As the season progresses we look out for hatchling tracks, record information and also check nests to make sure they’re empty. By patrolling the beach we also keep predation of the nests by say goannas at bay.” Perhaps disheartening could be the effect of the floods with the subsequent silt from the rivers having a major effect on the feeding grounds. “It’s not looking good for the green turtle,” says Bev wistfully.“The bad weather has eroded much of the beach and consequently we have lost many nests. This will have a dire effect in 30 years time, when the hatchlings are old enough to come up and lay their own eggs. It’s a little early in the season to predict what the real effects are this year.” As for giving up Christmas, there’ll still be presents and a roast dinner but only Ben and his partner will be joining the volunteer excellence award winners on the beach this year, as Jaylene lives in the US. Of course at night it’s back to the Wreck Rock Turtle Monitoring Program.

Not so Goondiwindi-born and raised Tracey Smith whose intestinal fortitude and sartorial choice win high points even when the global heavyweights try to shut her down.

passion for glam started with Tracey watched in awe as ladies, totted-up in their finery and with bright red or pink nails, came from miles away to shop at a high-end boutique where her mother worked. Some years later she moved to Brisbane to become a dental assistant, in-between visiting her younger brother whose three daughters lined up to have their finger and toe nails painted. A seachange beckoned. But it only lasted three days.

“Let’s say strawberry picking wasn’t my forte but I was impressed with the boss,” says Tracey, who was too shy to utter a word to him so she left the large Beerwah farm quietly. “I returned a year later to visit family members and crossed paths with the farmer, who besides strawberries grows commercial crops of lychees and pineapples.” Fifteen years later she’s still there but needless to say a lot has changed. Six years ago Tracey and Farmer Len welcomed Buster into the world. “When I was in the delivery room the nurses announced ‘it’s a boy…what is his name?’ My husband proudly said ‘Buster Douglas Smith’. They all smiled, he left the room and the nurses asked me what the baby’s real name was. I said ‘Buster is the real name.’ It took me many weeks though to call him Buster. He was such a precious little bundle and Buster is such a tough name. But he’s definitely grown into it.”

Ingenious Tracey Smith enlightens Helen Flanagan about an audacious move from driving a tractor to flirting on the global stage with her own nail polish brand. Despite driving tractors and packing strawberries, Tracey’s nails remained strong, were manicured regularly and of course painted in fabulous colours, however after the birth of her son she was spending less time on the farm and more time indoors trying to be creative. “I always had a project, whether it was painting, sewing or knitting - none of which I was good at, but I gave it my best shot anyway.” It was about this time Tracey realised nail polish packaging did not reflect the beautiful colours inside the bottles, so she thought - why not create a brand. “I started in January 2010 by drawing how I thought the product should look and it obviously evolved from there. The quality was just as important as the presentation. There was no point having the polish looking pretty if it couldn’t perform so I made sure the formulation had all the qualities I look for, such as strong pigment, high gloss, long-wearing and chip resistant. “When the nail polish idea came to me I ran with it and haven’t stopped since. I remember the feeling of absolute excitement, closely followed by a nauseas feeling in the bottom of the stomach when the first shipment arrived. How exciting yet anxious especially re thoughts of how it would be received by consumers. “The original brand name was Oli-Pop after my niece Olivia, which she affectionately called herself and three pinks from the collection were named after her and sisters Meg and Harriet. “Trade mark issues from the global leader meant the name wasn’t to be, so Cate Ruby was chosen as it/she was fast becoming

ourists flock in their droves traipsing well-worn paths to the homes of famous people such as Sir Walter Raleigh, the explorer, soldier and writer who was imprisoned in the Tower of London, and eventually put to death after being accused of treason by James I. Today his birthplace, a 14th Century farmhouse in Devon’s Hayes Barton, is open to the public in the summer months. And it wasn’t so long ago when tea and biscuits were served after the tour by 10 year-old Angela Wright, who lived on the farm with her family. “I thought it was normal for people to come and visit our home and check out the kitchen, living rooms, bedrooms including the room where Raleigh was born in 1552, with the four poster bed and the crest on the window which was subsequently presented by HRH The Prince of Wales,” recounts Angela whose family values of hospitality and generosity are added to a magical and extraordinary upbringing. “I didn’t blink an eyelid at the time, but sometimes I wasn't quick enough to tidy up my room, so would duck inside a wardrobe or hide under the bed from the visitors. Well, until I had to serve tea!” These days Angela acknowledges the seeds of this early exposure to exploration
of whole new worlds, as Sir Walter Raleigh did 500 years ago, germinated an appetite for discovering new solutions to old dilemmas. “As a child my fantasy was to create a wonderful world full of adventures and reality - paddocks of guinea pigs, baby lambs and piglets to feed, cows to milk, a stable full of all kinds of horses, tree houses and tea parties. When I had my first child I was trying to find a way to recreate my country childhood for baby Sam, and all the other children who didn't have what I had. “I spent two years from researching and planning, to costing everything from the ham sandwiches to the new road needed into the Park in south-west London. David, my husband brought the strength and confidence to realise the potential of the Parks, my parents Roy and Marion Down have always been very entrepreneurial and eventually all my family agreed. We were all set, and the date just happened to be when my second baby was due. Six months of building resulted in Crealy The Great Farm Adventure which opened in 1989. It morphed over the years into Crealy Great Adventure Parks - with roller coasters, pirate ships, log flumes, go karts, over 40 horses plus campsites and lots of special events to entertain hundreds of thousands of guests.” Angela ran the family theme parks for over 20 years and was awarded an MBE by Her Majesty Queen Elizabeth II for services to tourism. Crealy continues as a family business today despite Angela, David, three of their five children plus three dogs moving to Australia in 2010. “Originally we intended to settle in Melbourne and open a Park there, but we're country people really and it didn't feel right. “Instead we took time out to get our visas and find new business opportunities plus we don’t do ‘boring’ so we took an unrepeatable, unmissable opportunity to bunk off for three months and explore Australia.” The Wrights looked all over the world and chose Australia, so why not scour the country to find the perfect place to live. “My father kept mentioning the Sunshine Coast so after WA, Victoria, New South Wales and much of the rest of Queensland we finally discovered Sunshine Beach. Just to make sure we went from Byron Bay to the Whitsundays and back again. After all it was more than three decades since I visited Australia as a 16 year-old

David runs a business based across Queensland and is a Noosa Coastguard and the two boys, Ed 20, and Tim 17, play for the Noosa Dolphins. Daughter Amy 15, plays a variety of sports and is a Wildlife Volunteer. After a successful business life generating millions of dollars in both hemispheres, Angela took two years out to study and given her entrepreneurial skills, test what's really important to business. Her unique ability is seeing opportunities and creating better futures by asking difficult questions, also analysing the past and connecting the best currently available solutions. She’s been a guest speaker around the world most recently at an internet marketing conference in London on her favourite subject, Reputation Marketing which is all about putting businesses in control of their online reputations. “Noosa can easily lead the way in Australia with a Five Star Reputation which will get us so many more visitors and investors. Backing up my theory is the fact that the Sunshine Coast is officially Google's Queensland e-town. What a coup. “I get excited about local business making decisions which make a difference. David always says, ‘you can't have more sizzle than sausage’ so I like to apply marketing which really is totally appropriate and of course works. And not with overhyped salesman waffle.” So, why would any family leave their UK home, leave their business, vehicles, horses and so much more to move halfway round the world? “Well what’s not to love about gorgeous Noosa such as going to the beach with our faithful hounds, partying at home, enjoying amazing life-changing adventures with our children plus having the glorious North Shore and the hinterland countryside on our doorstep. It feels like home.”

Tales of sea-changers are numerous but Steffen Binke’s criss-cross oceans. After 22 years of playing soccer for Germany at junior level, including European championships and World Cup and later at a professional level, Steffen who was born in Lauchhammer near Berlin, suffered a knee injury at 27, curtailing his career. He opted for a dive instructor ticket and travelled to 60 countries before “dropping anchor” in Cairns for 10 years.
I
’ve dived in 25 countries, each one with is different scenery,” recollects Steffen who was inspired by Pete Atkinson, a BBC wildlife photographer of the year. “Capturing underwater beauty was what I wanted to do and six months after making the decision, I had the shot of a life time with a Minke whale at close range. It won many awards and was published all over the world. “Being in the middle of a shark feeding frenzy on the Great Barrier Reef was more exciting than scary. There were about 50 and fortunately three Silvertips sharks nudged me as if to say get out of the way. It did teach me to respect wildlife and keep an appropriate distance.” Steffen met his partner Arielle briefly at a party before he took off on travels through Central America. He wanted to explore and develop his style realising there's much more to photography than animals. Arielle meanwhile, had left for Melbourne. One year later they reconnected via Facebook and decided to go on a “blind date road trip" from Melbourne to Brisbane. Three weeks later she returned to Cairns to visit with two bags and never left. Within the first month of their relationship, they came up with this daring idea to create an underwater portraiture business.” The timing was right to create Steffen Binke Photography - Steffen with his photographic skills and Arielle, a former fashion designer with a background in Photoshop. “But we’ve had ups and downs in the past four years. Arielle was diagnosed with breast cancer. It was a hard time but luckily she has beaten it with surgery and radiation. It made us realise how fragile and precious life is and of course the up was the arrival our little son, Marley. He arrived
unexpectedly five weeks early - a little miracle that couldn't wait to see the world. And when he did, he made his mark by peeing on me. Holding the little wonder for the first time was overwhelming. I had tears and apparently the nurses said I wouldn't stop talking and asking questions. “We decided to move to the beautiful Sunshine Coast as Cairns was becoming too small for our big dreams. We fell in love with Buderim the moment we saw it. Three months have passed and we’re convinced this is the best place to live and raise our son who’s now eight months old. Being only an hour from Brisbane, it’s also the ideal base for our business. “We chose underwater portraiture as we love working with water. It is truly mesmerising. Think of the ways water transports us and elevates our mood - an oasis, a midsummer rain shower, a dip in the ocean at dusk. Water makes everything more poetic, romantic, weightless and enchanting. That’s why it’s become our canvas. “Photographing babies, kids, couples, pregnant women and even dogs underwater is challenging and that why I love it. I have only a couple of seconds to get it right. I like to think we are different in all aspects of underwater portraiture plus what we’re doing photographically is arguably unique in Australia. We shoot in our underwater studio in Buderim but open to all locations as long as the water is clear. This can be a pool, beach, crystal clear lake or in the deep ocean. “Every now and then, I love returning to the ocean to photograph marine life. I have seen drastic changes from the day I started diving. Oceans are dying. That is no exaggeration. We have pushed the marine environment to the brink through overfishing, pollution and acidification. So I try and capture relevant moments to show Marley and others in later years how our ocean once looked. For instance I’ve just returned from Palau in Micronesia, a small paradise, which still intact with a fantastic marine life and beautiful rock islands.” When it comes to dream dive destinations, Steffen has his heart set on the Galapagos Islands: “It’s the number one dive spot in the world where you can see hundreds of Hammerheads, Mantas and Whale sharks. We’d also like to travel the world with Marley and spend summer every year in our three favourite countries - Australia, Germany and Mauritius. This way we’ll never have to experience another winter.”

ick and Mel Radford have a serious affection for Noosa, although a big part of their hearts remain across the ditch in Christchurch where their businesses are located. Christchurch also happens to be the place where Nick met his perfect match.“My girlfriend at the time inadvertently introduced me to my future wife Mel, who had just returned from overseas and had purchased Portfolio Model Agency, the top agency in town. “A few months later, we met again and were both unattached. Mel was scouting an acquaintance of mine for her books so she gave me a business card, but I wisely kept it and invited her for dinner the next night. The rest as they say is history “Ironically, Mel comes from a surfing family and my passion is
were creating, using his father’s felted yarns. “I was destined to be involved in the wool industry and at this juncture ready to start,” Nick recalls. “New Zealand wool has the longest fibres in the world and when it is felted to the unique specification my company uses, it allows us to push the textural boundaries whilst adhering to the fact that the product will still wear exceptionally well. The wool we use is also the whitest available, ensuring our yarns can be dyed the purest colours. “There was only one other company manufacturing high-end, textured rugs in New Zealand at the time, so I completed a startup business course in 2002, purchased a hand-tufting gun and began manufacturing my first custom rugs. “I was really motivated by the response we had from local luxury furniture stores, interior designers and architects to our initial five or so products. Within two years we were selling widely throughout NZ and speaking to few potential clients in Australia and the USA.” It didn’t take long before his first premises - a shed on his parent’s farm was inadequate so he moved into a vacant wing of Radford Yarns' factory. “This move really streamlined business. Wool comes in straight off the farm, into Radford Yarns, is processed into felted yarn, dyed a custom colour, manufactured

Soon, we were living together, acquired a Birman kitten called Marlow and married in a beautiful vineyard in the picturesque Nelson region in 2011. We honeymooned at the Hyatt in Coolum.” Impressed with the high calibre of homes and residents who are looking for top quality, custom made rugs on the Sunshine Coast, Nick and Mel opened a business in Noosaville earlier this year and have recently released a new range of rugs to complement their existing products. The customisable range of textured outdoor rugs is perfect for the sub-tropical climate. “The yarn is used on luxury yachts so is water, chlorine, UV and mould resistant,” explains Nick who has supplied products to Selma Hayek and other celebrities, many corporations and hotels in Australasia. Undoubtedly one of the more impressive installations was a large suite onboard The World cruise ship. The Radford name is synonymous with the manufacture of extremely durable, felted yarns using only the finest pure New Zealand wool. Hailing from the outskirts of Christchurch, Nick Radford’s father is from a long line of farmers, who after working for the New Zealand Wool Board for a number of years opened his own business called Radford Yarn Technologies Ltd in 1990. Success followed when his yarns were sold to the very high-end of carpet and rug manufacturing companies in Europe and the USA. Nick says life on the farm with his brother, sister and parents was fantastic and once he’d completed a Bachelor of Science degree, he spent three years travelling through Asia, Europe, South and North America where he saw products companies

into a rug or carpet, then exported, all from the same location, thus enabling us to offer world class lead times on heavily customised products. “Locally we are also extremely excited about an upcoming collection of rugs which has been designed by the talented artist Belinda Herford from Poeta. An exquisite rug will be on display at her and jeweller husband Gordon’s Hastings Street gallery soon.” With careful planning Nick and Mel are committed to running their businesses remotely. “Mel has left her agency with a capable PA and my production manager runs the factory, so much so, many of our clients do not know we’ve even left. Plus for me there are no day-to-day interruptions at factory level. We really look forward to travelling back to Christchurch every six weeks to catch up with our employees and clients, truly feeling we really have the best of both worlds. “We absolutely love the energy of Noosa and obviously the weather plays a huge part as do the friendly locals. Life for us has the perfect balance.

ychees promise to bring some cool to any occasion - and what better way to enjoy them than in a refreshing cocktail?Ideal for outdoor entertaining and relaxing in the sun with friends, the Lychee Mint Muddle is a refreshing tipple that is easy to make, and even easier to enjoy. Whilst lychees are the perfect cocktail companion, their versatility means they can be eaten straight from the fridge as a healthy and refreshing poolside snack, combined with goats’ cheese as a canapé or served with barramundi as a seasonal salsa. Australia has been growing lychees since the 1870s, when they were introduced by Chinese gold seekers. The popularity and demand for the luscious fruit has grown with 2,500 tonnes sold locally every year. “It’s no secret Australian lychees are the freshest and best in the world. Australian growers do not use sulphur dioxide to retain skin colour, so Australian lychees are always fresh, sweet, juicy and natural,” says the President of the Australian Lychee Growers Association, Ian Groves. “Australia has the longest lychee season in the world with fruit available for nearly five months, our mild climate lends itself to lychee growing. Early season fruit (from October to December) comes from North Queensland, while fruit available later in the season (January to mid-March) comes from South Queensland and Northern New South Wales,” Groves continues. Seven lychees (one serve) contain as much vitamin C as a small orange and provide 100 per cent of the recommended daily intake of vitamin C. Lychees also rank second behind strawberries in antioxidant levels , which help fight free radicals which can damage body cells. Most lychee varieties are ripe when the skin turns pink or red. Once picked, lychees do not continue to ripen, so choose fruit that is firm and springy, with lush red or pink skin. Fruit with a brown skin has changed colour due to contact with the air and in-store air conditioning, however taste is unaffected and these lychees are still perfect to eat. Keep fresh lychees wrapped in a plastic bag in the refrigerator for five to seven days to ensure freshness, or at room temperature for two to three days. Remember that lychees will discolour in just a couple of hours if left exposed to air-conditioning, as dehydration turns lychees brown. While eating quality is unaffected, the fruit may look poor. Lychees can be frozen or dried within their protective skin and kept for up to six months.

Method Muddle sugar, 10 lychees with the mint leaves and ice in a large jug. Top with sparkling wine or lemonade. Halve remaining lychees and add to the mixture. Serve in chilled glasses. From 1991 every Saturday at the Eumundi Markets, Tim fried off his handmade spice Garnisha pastes and the intensely fragrant aromas attracted fans in their droves. A wholesale business was a natural addition and today stock can be found in selected delis around Australia plus it’s available on-line. At the 6ha Garnisha property, dense arbours of gums hide the house and in one part of the garden, there’s a rustic chicken-wire fence which was originally built to keep out the kangaroos that chomped and trampled the various types of chilli plants. Basil and other herbs in-between are companion plants which discourage pests. When Tim started he couldn’t buy galangal or kaffir lime leaves but today they’re an integral of the garden along with red cardamom, turmeric, lemon grass, tamarind, pimento trees, fresh curry leaves, Tahitian limes, Thai mangos (nam doc mai) and varieties of chilli including serrano, habanero and naga, considered the world’s hottest chilli. A palm-sheltered timber and iron-roofed former railway shed is the spice kitchen and work room where Tim roasts the spices fenugreek, pepper, cumin and others - in the wok, then grinds them in the coffee grinder. He steeps them in warmed (gluten-free) cane vinegar, to create the sauces. One 20-litre pot yields 70 jars, 200-250 jars in a day. Well-known in the hospitality industry in Noosa, Roark Walsh has always had a serious connection to food and wine. These days he’s added art, well not art pieces per se - but wine labels featuring paintings from wellknown Noosa artists to a range of designer wines.

A visit to the artist’s gallery, Facebook or website could ensue and local businesses end up supporting each other.” For the first series the featured artists are Michael Whitehead, Warren Salter and Julia Carter. Michael Whitehead began work as a graphic artist in a Melbourne design studio in the mid-seventies. He taught in Victorian Secondary Colleges, opened a screen printing business, worked as a builder’s labourer and taken time out to travel overseas. He moved to Queensland in 1994, was a freelance designer and became a full time artist in 2002. His painting is featured on the non-vintage Brut Pinot Noir Chardonnay and his
artwork is exhibited at Jive Art 2 in Hastings Street. Warren Salter has been a full time painter and exhibiting artist for nearly twenty years. He’s been commissioned by many, shares the mysteries of art with young students and engages in community and environmental projects. The uncertainty of being an artist adds a mysterious quality gives his works. Warren’s painting features on the 2013 Sauvignon Blanc and he promotes himself through Facebook. Julia Carter’s paintings flow with energy, optimism and a sense of celebration. Such is her outlook on life. She sees connections to nature and life’s experiences and loves to explore the power of synchronicity and individual purpose. Her paintings are landscapes of the soul. “When I was approached by Roark for the Noosa Art Series, I thought it was a great concept,” commented Julia whose gallery is in Gateway Drive Noosaville and her featured artwork Dance of Life is on the 2012 Shiraz. “With all the leaves falling and dancing in the breeze and its vibrant red background, I thought it would be perfect for the red wine they had selected. I think the other labels are also a great complement to the chosen wines. “I’m delighted with whole project and yes, I have tasted the wine. It’s really beautiful, so much so I give a bottle away to everyone who buys a painting.” Wines from the Noosa Art Series are available in various restaurants and outlets such as the Sheraton Noosa Resort’s Wine Cellar. Colour is his voice... For someone who could barely communicate for the first 30 years of his life, Helen Flanagan is astounded how Peter Rowe has made up for lost time.

Facing the giants trestles Aerial acrobatic surfer Julian Wilson assures Helen Flanagan he’s on track to snare a world title or two.

This year he scored a stunning victory over Jordy Smith in the Mr Price Pro in Ballito, north of Durban. The use of natural stone in landscape designs from poolside, to driveways and entrances is very on-trend.
I
t’s not too late to get started on a paving project but you should seek professional advice to ensure your stone selection is ideally suited to its purpose. “Don’t forget to take into account qualities such as slip resistance, resistance to salt attack and absorption density,” says Outside Noosa’s landscape specialist John Scomparin. “With both quality and sustainability in mind, we have the luxury of being able to go to local quarries to source our preferred stone. For example, we featured Gympie sandstone in the recent refurbishment of the porte-cochere at the Sheraton Noosa Resort and Spa. “We also regularly use Kilkivan rock, which we have found works well for entrances, cladding on retaining walls, gatehouses, water features, letterboxes or even internal feature walls. “What is deemed ‘traditional’ stone laying is also getting a modern reboot. Cobbled driveways in bluestone are making a comeback and filetti paving – a traditional stone format found all across Europe, utilising long, thin pieces of stone – works particularly well with strong, architectural lines. Crazy paving is also very popular. Again, there is a good example of this with the pool surrounds and on pathways at the Sheraton - where we used Himalayan sandstone.” Outside Noosa is also a specifier of the impressive Eco Outdoor flooring and wall stone range. Ecco specialises in innovative and unique exterior surface treatments for both residential and commercial projects. “Paving and pools go hand in hand,” says Adbri Masonry ambassador Jason Hodges. “The right paver will not only finish the pool with a fashionable coping tile, but it can also provide a safe, slip resistant surface and transform the space into the centre piece of your backyard. “Before you start paving, choose a paver style and size that creates a perception of increased space. stretcherbond pattern.” Retaining walls provide a great opportunity to incorporate lighting into the pool area and vertical walls provide additional perspective and help enhance the effects of lighting, ensuring your summer party can continue into the night. Don’t forget to consider your background greenery. One of the benefits of installing garden walls around pool areas is to allow the use of premium soils and potting mixes, as opposed to using whatever soil is available in the ground. Better still, because they are raised, the walls can go a way towards protecting your plants from splashing and pool water. This also allows you to be more adventurous with your background flowering plants and greenery.” Clever landscaping around your pool could increase the value of your property, which is always something worth investing in.

Urban Dweller Encouraged to Think Green...

recent study on urban living indicates that shrinking backyards have an adverse effect on the environment. Turf Australia, which supports Australian turf growers, is urging Aussie homeowners to re-think their outdoor space - to contribute to the local environment both aesthetically and ecologically, and also to improve the value of their homes. “Vegetation surrounding the dwelling plays an important role in microclimate, storm drainage and biodiversity, having serious ecological implications,” says Griffith University’s Urban Research Professor, Tony HallI. It was found that a lawn can add a significant amount of value to the home. The survey, which polled real estate agents nationally, found that Aussie home buyers are prepared to pay up to $75,668 more for a lawn. Award-winning horticulturalist and Turf Australia spokesperson, Meredith Kirton, advises homemakers to consider the social and environmental importance of a natural lawn. “Surrounding the home with natural turf increases property value and aesthetic appeal but it also ensures you’re doing your bit towards environmental sustainability,” says Kirton. Natural lawns clean the air and support the environment. “A natural, turfed lawn acts as a ‘sink’; capturing carbon dioxide in the soil, absorbing one tonne of carbon per acre, per year,” Kirton says. “And, with outdoor living areas becoming smaller, it’s more important than ever to utilise the space we have and to reap the benefits of green living, no matter how small it may be,” Kirton says. “Even if you are an urban dweller, you can adapt your outdoor area using turf and natural materials in plant boxes, skirting or even vertical gardens which are becoming increasingly popular,” she adds.
Kirton offers simple tips for turf in city and suburban spaces; 1. Sculpt grass into interesting or useful shapes. Think mounds, grass step treads or even mini lawn parterres and mazes for the design crazed 2. If you must have paving, lay every second paver with a turf square instead. This looks stylish, whilst still allowing water to trickle into the water table 3. For courtyards with pets, grow a grassed plot specially for them to cool down in the summer heat and lounge on 4. Incorporate water (maybe a large bowl or small pond) to encourage natural cooling through evaporation 5. Grow deciduous vines on north and western walls and add pergolas to shade these hot spots

n an Australian first, truly out-of-this-world art has arrived exclusively in Brisbane, with leading international contemporary artist Cai Guo-Qiang taking over the Gallery of Modern Art. This is a real coup for Brisbane, as the exhibition marks Cai Guo-Qiang’s first Australian solo exhibition. ut an artist he most definitely is – and an acclaimed one at that. Michael has never looked back from his decision 16 years ago to dedicate himself to his passion, with his works widely collected around the world. Michael paints bold and vibrant, layered abstracts in his Noosa studio, and is represented by leading Galleries around Australia. With exhibitions in Germany this year and Hong Kong next, his international reputation is also expanding, but we are hopeful he will remain based here in Noosa. Jive Art on Hastings Street is considered Michael’s ‘home’ gallery and he works closely with Gallery director, Jan Sinclair. Jan says: “Michael’s paintings always exhibit integrity and deliberate intensity which are hallmarks of a gifted and visionary artist. Many people can produce good technical work, but few are able create paintings which draw you in and hold you there. Michael’s works immediately connect with people, although often they can’t say why – they just feel it”. Michael’s new exhibition, Serious Moonlight opens at Jive Art in December. This new series evolved from an earlier visit to Northern India. Michael used colours he had not previously imagined he would for the first Exhibition after his trip. “I found that I was employing light, subtle colour at first, then darker earth colours and tones to emulate the marble and stone forts and monuments. Serious Moonlight is the second exhibition and the palette seemed to have expanded naturally to include the colours of clothing and decorative aspects of Rajasthan life”. THE EXHIBITION WILL BE IN HER ART SPACE AT THE REAR OF HER GALLERY IN EUMUNDI. ‘I feel that I am one of the lucky ones to still be able to work in glass’, Tina says. This exhibition represents bringing back some soul nourishment into our lives and creating abundance to follow in whatever form you need! I am very excited about expressing my creativity and releasing the imaginary in forms of shape and my connection to the nautilus. The ‘Cornucopia’ is a fascinating and ancient creature that has been used as a symbol of nourishment and abundance throughout our history. Tina explains, ‘I was drawn to the very complex shape with its sacred geometry and symmetry of the spiral. As I researched its form and history it became increasingly clear that this fascinating creature just wanted to come and join the world in a glass form. The “Horn of Plenty” brings forth a living life form that reaches out to positive energies. Using the medium of Glass I create a translucent layer that signifies a subconscious movement of thought into overflowing sustenance and light.’ Tina mentions creating a new dimension to her work engaging with local blacksmiths; Luke and Jules to create wrought iron pieces that stand and encircle the nautiluses. She says, ‘The skilful blacksmiths blend traditional and modern methods of wrought iron making that illuminate and complement the ancient sea creatures. This series has taken over two years to create with the help of my talented team Jonathon Westacott, Mat Quirke and Sean O’Donoghue. I am releasing a selective and rare large Sealife / Great Barrier Reef Series which have not yet been seen by the public. Keen and astute Art collectors have been very patiently awaiting their release.’ The exhibition is open to the public from Saturday 9th November 2013 and runs until March 2013. It can be viewed in Tina’s Art Cave at the rear of her Gallery in Eumundi.

ulia Carter has had a triumphant year. On her wish-list was an exhibition in New York and in March she had a sell-out show at Art Expo New York at Hudson Pier. Requests from galleries in Miami, Florida, Los Angeles and others around world to her exhibit work followed. Her excitement continued in Hong Kong. “I returned for the 2013 Asia Contemporary Art Show in October which was twice as big as last year and a massive success,” exclaimed a thrilled Julia who has been asked to be represented plus have special solo show in Hong Kong next year at the New Gallery on Old Bailey, Kowloon. “I was approached by Maria Ying-Mathews, the founder and chairperson of Peace International Foundation to promote work for the prestigious International Peace Festival in Hong Kong, which is held in conjunction with the United Nations.” Meanwhile in Noosa, her home-town Julia is adding the final brush stroked to a new series and an exhibition aptly titled Soul Connection. “I’m inspired by the magical connections which interweave our daily lives. It’s all about the interactions we experience in our lives which have special significance, the people we meet, the opportunities we are given and the breathtaking moments when we connect with nature. “I’ve wanted to explore this subject for a while, but I’ve had a lot of commitments with overseas shows and commissions. “These paintings give me the freedom to explore experiment and play, allow my emotions to flow freely whilst unfolding and revealing an individual personality. THE KING & I... Rodgers and Hammerstein’s fifth musical together, The King and I is considered one of the jewels in their crown. Based on Margaret Landon’s 1944 novel Anna and the King of Siam, which took its inspiration from the memoirs of Anna Leonowens, a British governess to the children of King Mongkut of Siam (now Thailand) in the early 1860s, the show was a huge hit on Broadway in 1951.

Snow White and Seven Dwarfs If you are looking for super-duper holiday entertainment for the kids, book the pantomime Snow White and the Seven Dwarfs in the first three weekends of January. "I was brought up in the UK with its strong pantomime tradition and acted in many pantos as a child," says Susan Dearnley, who directed the panto to full houses last year and this year is also the choreographer. “From the ages of 15 to 19, I toured the UK and Europe as a professional dancer, joined the Billy Smarts Circus as the choreographer and trained chimpanzees, rode elephants, danced and did still trapeze." Snow White and the Seven Dwarfs is a heartwarming traditional panto with a terrific story, funny lines and comedy routines and plenty of villains to boo at. The adult audience is not left out as many of the gags are aimed at them. A talented and exuberant cast of 30 will amaze and entertain and there’ll be an opportunity to take photographs with the characters after the show. magine telling your friends your address is Hastings Street. Popular Tony and Linda Jedynak not only live, work and play on the famous boulevard, but for twenty-one years they’ve been known to don their ambassadorial-style hats in a flash and proudly gush glowing words about ‘their’ Noosa.

Why the move from Melbourne to Noosa? We’re childhood sweethearts who pursued careers as an internal auditor and superannuation fund consultant (Linda) and a surveyor (Tony) plus worked second jobs to build an investment pathway out of Melbourne. Things fell into place when parents Fran and George Coules (Linda’s) decided they wanted to escape too. After scouring the Queensland coast we bought management rights in Noosaville (run by the Coules) but we really needed a property big enough to sustain all four lifestyles which included golf and dining out. In 1991, fortune smiled upon us and Hotel Laguna was set in motion by developers Lyndon Simmons and Murray Charlton. We signed on the dotted line and finally moved in 1992. Our first child Jessica was born just as the doors opened for business. Michael was born in 1996.

What are some of your early memories? Twenty-one years ago Hastings Street was filled with quirky shops and cafes however most never survived due the spiralling rents. Boutiques and restaurants have always been our front yard, Noosa River is our backyard plus Jessica and Michael are amongst only a handful of kids who can boast they’ve been brought up since birth on one of Australia's most prestigious streets. Needless to say they’ve never had problems hating the neighbour’s children – because there weren’t any. Their best friends were shop assistants and restaurateurs, and they learned how to ride a bike and skateboard whilst weaving amongst shoppers and beachgoers. After four years, Fran and George retired and we concentrated on the business, parenting and getting involved in communitybased activities such as Tourism Noosa and the Hastings Street Association (Tony) and volunteering (Linda) in 1996 for the Noosa Jazz festival, firstly under the helm of Frank Johnson, then with the support of Garth Prowd and his company USM Events primarily, expanding the show for the next 16 years to over 150 National and international musicians. Garth and I finally stopped ‘blowing our trumpets’ in 2012.
What do you love most about Noosa? That’s the question guests ask all the time. We say “do you have a couple of hours?” Perhaps one of our most precious moments is coming home from overseas, heading over the hill and down Noosa Drive to Hastings Street with the breathtaking sparking blue water of Laguna Bay, and the clear bright blue sky. It’s just magnificent. What so wonderful about Hastings Street today? It’s good to see businesses have made their way back slowly and doesn’t the streetscape look amazing with all the fairy lights – a great initiative of the Hastings St Association. The buzz it had when we first came here has returned. At ‘our’ end of the street, the Noosa Beach House at the refurbed Sheraton Noosa Resort & Spa, plus Miss Moneypenny’s, also Seahaven being completed by the end of the year, bring reassurance of a big boost in tourism numbers. We have seen an amazing amount of renovation and refurbishment over the years and now it is time to sit back and enjoy what’s been recreated. Let’s keep the momentum going and let’s shout out to the rest of the world to come and see what we have here too. We are all truly blessed and passionate ‘Noosinians’. Now there’s a new word! Is moving from the street of good times on the cards? There’s been a thought about living off site but we quickly came to our senses. After work we head out the back door, sip a glass of wine, watch the sun set over the river and wave to the ferry as it meanders by for its last pick up of the day. If we decide not to cook it’s out the front door and choose any cuisine. Life doesn’t get much better really. Our street is arguably the best in the world.
