Rolls Royce Dawn launches at Palazzo Versace Be still my beating heart. Amidst the fanfare and a looming storm on the horizon, Rolls Royce Queensland showcased the spectacular new 'Dawn' convertible to admiring guests. Unfortunately the fireworks and laser show had to be cancelled, but with a flurry of waiters proffering caviar and Moét & Chandon to attendees before the beautiful new Dawn arrived created a night to remember. Where's the 15 person spa?! Savvy Brisbane businessman, Damien Griffiths has been snapping up 'quirky' properties for his growing empire of trendy eateries and uber chic bars in Brisbane. We ventured into his latest 'must visit' locale, Les Bubbles, a Parisian-style steakhouse in Wickham Street, Fortitude Valley, for the VIP launch of the 2015 Brisbane Good Food & Wine Show. Couldn't wait to get celebrity chefs Alistair Mcleod, George Calombaris, Miguel Maestre and Adam Liaw 'in the frame' under the quirky sign at Les Bubbles; once a notorious 'bath house' and now a super chic bar and eatery. Lots of stunning cocktails were consumed on the evening, and a plethora of delectable canapés were devoured by guests. Can't wait to go back.

The girl who grows Pia Boschetti can’t live without the ocean, creativity or the pearls that she farms. From the islands where she was raised, Pia has come a long way to Noosa, but it’s a journey she has embraced, as Coco Seymour-Griffin discovers.

While many young women dream of wearing pearls, Pia loves to farm them. An ocean lover by nature since she was young, Pia grew up living and breathing the remote waters of the Abrolhos Islands, surrounded by the crayfish from her father’s catch, while others were learning their ABCs in a climate-controlled classroom. It was a childhood that shaped her into the woman she is today. continues next page...

“When I left school, I worked in real estate for four years, then travelled to Europe. On my return, I felt quite lost and unsure of what to do, so after some more travel and backpacking in Queensland, I started crayfishing with my brother. It was the most challenging thing I had done in my life, but I felt great at the end of each day! Growing up, there had been a couple of female skippers at our group of islands who had fascinated me and I had always wondered if I could do what they did. It turns out, I could!” With Pia’s attention turning from crayfish to South Sea Pearls however, fishing soon took on a whole new meaning, with pearling becoming more and more a passion of Pia’s with every day that passed. “My dedication to pearls was a fascination that grew. Initially it was an opportunity to try something new, but it soon became something more. I loved that pearls were natural gems, that they were organic in nature, and that you didn’t know what you were going to get. Their irregular shapes were beautiful and unique.”

was born in Geraldton, Western Australia, but was from a fishing family. My father was a crayfisherman in the Abrolhos Islands (off the Western Australian coast), and we used to spend about five months of the year over there.

I

“Life at the Abrolhos Islands was the greatest experience, especially as a child. We were never in the house – always in the water exploring in a dingy, camping out on deserted islands and interacting with dolphins, seals and sometimes sharks. The island I grew up on was mainly made up of first generation Italians who were born in Italy and were fishermen back home. The traditional coffee would occur daily at 3pm, and all the people who lived on the island would come and talk about their day and catch up.” Pia loved the vibe of island life. It was an idyllic world away from the hectic bustle of mainland living. Life was simple. You worked hard, lived your truth and found joy in nature. It was a philosophy that was to make a lasting impression on Pia.

With Pia on a mission to make pearling her life’s work, it wasn’t long before her infectious enthusiasm had caught on to others. “When I first started, they were only a few pearls, so I began by selling them out of our wholesale seafood shop located at the Geraldton’s Fishermen’s Wharf. They were very well received, and soon I was too busy to keep up (especially as I was away running the pearl farm much of the time). People loved that the pearls were local and genuine. “To meet the demand, I started working with a jeweller to create designs around the pearls, and decided to open a store in the centre of Geraldton. Once I did this, the concept flowed over to diamond and precious gem jewellery, and so Latitude Gallery was born, with ‘Jewellery Defining Art’ the ethos. My mission was to create jewellery that told a story.” Now, with stores in Geraldton, Montville and Noosa, Pia’s pieces are the talk of the jewellery circuit, with Pia having won the hearts of pearl lovers all over the world, including Ita Buttrose, Kevin Sheedy and Lisa McCume who have all visited Pia’s store in Geraldton. Having recently exhibited in Florida, Pia is certainly doing something right. But it hasn’t been an easy wave to ride. “Staying motivated has sometimes been a challenge as negative feedback has at times held me back. I have also always placed myself under a lot of pressure. But I am hardy. When I was fishing, I learnt about the dedication required to finish a job and about endurance (sometimes we did 18-hour days). This has held me in good stead. Success to me means being the best that I can be.”


“I developed Flotsam and Jetsam to raise environmental awareness whilst also celebrating art. I go to the Abrolhos Islands with volunteers, pick up the rubbish that has washed ashore, fill a 70-foot boat, bring it back to Geraldton, and lay the rubbish out on the wharf. All the locals and artists come down to pick through it, take it home and turn it into artwork. The work that comes in is mind blowing! People are so incredibly clever. The competition is judged by professionals, and some of the pieces sell for over $2000! The competition has been running for four years now, and I would love to do one here.”

As for the transition to Noosa, Pia’s heart swells. “When I was considering my next store, I knew I wanted it to be in a lovely place where I could live. What I love about Noosa is that you have the beaches and then you have the hinterland. I also love the way Hastings Street is right by the beach, the water is warm, the people are wonderful and everyone enjoys life.” Pia Boschetti is a girl after my own heart – a woman who lives from her core, is not afraid of hard work and embraces the beauty in life (with a little helping hand from nature). Having travelled the world, fished, farmed, designed, developed, and created, Pia has certainly lived a journey of inspiration. So, what could Pia not live without?

“The ocean. There is something in my heart that needs to be near the sea. It’s my greatest influence – it’s like my soul opens up. I love it.”

The Luxury Life...

LUXURY means different things to different people... ut it’s also the ideal time to kick start a new weight loss or healthy eating regime, and there’s still time to see results during the swimsuit season. i h t r o f t x e n So what’s p u o c r e w o p e l formidab Naomi Price and Luke Kennedy, Australia’s darling musical duo (and The Voice finalists), love Noosa almost as much as they love their craft, with so much success under their belts and even more on the horizon, as Coco Seymour-Griffin discovers. If there was ever a couple who live music from the moment they wake to the moment they sleep (most likely dreaming about it too), Naomi Price and Luke Kennedy would be it.

W

ith Naomi having recently received national acclaim for her outstanding performances on season four of The Voice Australia, which saw her reach the semi-finals as Ricky Martin’s last female artist and place sixth overall, and Luke as Ricky Martin’s grand finalist on season two of The Voice Australia, the first artist to have a Top Ten hit in the ARIA charts, it is clear that music comes as naturally to this golden couple as breathing does for the rest of us.

“I was introduced to a wide variety of music as a child by my parents, who always ensured I listened to everything from Prokofiev to The Beatles,” smiles Naomi.“Music has always been a powerful and important part of my life, and a wonderful outlet for emotion and connection.” “I can’t really remember not loving music,” adds Luke.“I don’t come from a long line of musicians, but my Dad always played the guitar and sang, so music was in our house. I first sang in front of people when I was still in kindy! I snuck up on stage when no one was looking at a presentation night for my Dad’s basketball club and got a few bars in before I was yanked from the stage! So, I had the desire to be singing in front of people before I even knew what that was.” With Naomi describing herself as driven, outgoing, suspicious and impulsive, and Luke a self-confessed optimist, hard worker and passionate player who loves a joke, with a common love of Noosa (they visit several times a year), it’s little wonder that sparks flew all those years ago. “We met whilst working on a community theatre production 11 years ago,” Naomi reveals.“We initially bonded over our mutual appreciation of John Mayer and went on to do many shows together. Obviously, Luke was immediately drawn to my ridiculous sense of humour as I think the first thing I ever did was tease him!”

As with many great love stories, Naomi and Luke started as fierce friends and romance blossomed. “We laugh a lot, I'm more attention to detail, and Luke is more relaxed and buoyant. Musically, I would say we share a love of theatricality and drama, but also happily smash out an Ed Sheeran song given the opportunity!” Naomi, now one of Australia’s leading cabaret and music theatre performers, best known for her performances as pop icons Adele in Rumour Has It and twerk superstar Miley in Wrecking Ball, is not only an astute creative but is also in possession of a savvy commercial streak with The Little Red Company production house (thelittleredcompany.com) to her name.

We never intended to form a partnership, but wrote a show together, and then needed the formal recognition for the work we were creating. The Little Red Company is now a proud Brisbane-based production house committed to creating new and exciting music-based work. Our longest running show to date has been Rumour Has It, which started over a bottle or two of wine! Neither Adam nor myself can really say how it originated, but our first performance of the show was a fifteen-minute excerpt for Brisbane Cabaret Festival. It has now toured nationally for three years and will enjoy a season at the Sydney Opera House in January.” With Naomi forging ahead, Luke is not far behind. Having enjoyed extensive international touring experience with Australia’s premier pop opera group The Ten Tenors prior to his star turn on The Voice Australia, including performances in Spain, Switzerland, Mexico, Peru, Norway, Germany, Russia, South Korea, the USA, Australia, New Zealand, France, the Netherlands, Poland, Slovenia and Australia, Luke is comfortable with his success. His numerous television appearances with the TEN have seen him a part of the Jerry Lewis MDA Telethon (broadcast to an audience of 32 million), the Emirates World Cup, and Vision Australia’s Carols by Candlelight. In addition to this, Luke has recently added TV presenter to his resume, joining Channel 7 Queensland’s popular travel and lifestyle program, The Great South East. Despite being new to presenting, Luke’s natural on-camera persona has garnered winning praise from his colleagues, as well as new and old fans alike.

Performing in a self written tribute to “ADELE” Photo: Dylan Evans “I have just finished a season of a new musical by Tim Finn called Ladies in Black, which will transfer to Melbourne Theatre Company in the new year,” declares Naomi. “And I am also working on a new production of Richard III for La Boite Theatre Company.” “I have just released an EP called Skin & Scars (available on iTunes), which I co-wrote, so I would like to tour that material more in 2016,” adds Luke.“I am also a member of Swing On This (with Rob Mills, Ben Mingay & Michael Falzon), which began as a show at the Adelaide Cabaret Festival last year, and has been building momentum through 2015. We just made our national debut at Carols In The Domain, so we shall see where this takes us. I’m fortunate enough to have performed on every continent in the world except Africa (and Antarctica), but Australia will always been home. ” There is no doubt that Naomi and Luke are a go-getting duo who love what they do, living out their musical dreams. Where so many have struggled, Naomi and Luke have succeeded, and it’s as much to do with their bucket-loads of talent as it is to do with their ethic of getting in, getting on and never giving up. “Teach your daughters less about glass slippers, and more about breaking through glass ceilings,” Naomi nods. Wise words indeed.

Brimming with ideas for Noosa and the ability to give them effect... When Ingrid Jackson was asked to put her name for ward as an independent candidate for Noosa Council at first she hesitated.

D

espite a high level career in corporate management and a long association with Noosa, most recently in some key community positions, the furthest thing from her thoughts was a representative role in local politics. But after mulling over the proposition for 24 hours, she thought, “Why not?” And now she’s full steam ahead in her bid for election to the Council when residents go to the polls on Saturday 19 March. “Keith and I first visited Noosa in 1991 and eventually bought a house here in 2003,” Ingrid says.“We decided to make the permanent move from Sydney in 2013.” After settling in to what she describes as “living in Paradise”, Ingrid was determined to play a productive part in contributing to the community. “We’d chosen to live here and I wanted to play an active role in Noosa affairs. “As secretary of the Noosa Parks Association and a board member of Noosa Chamber of Commerce, I’m pursuing my interests in the two critical areas that are required to make Noosa a great place - the environment and the economy.” For the former business consultant, it seems a logical progression from her Sydney-based career in corporate management. Ingrid was born in Hobart in the 1950s after her Czech parents, shattered by World War II and the subsequent Communist takeover of their country, migrated to Australia. “My mathematics professor father and our family later moved to Canada, where I went to school and completed a first university degree,” Ingrid says. “In 1977, as a young graduate, I returned to Australia and pursued a career mainly in human resources and communications management in large corporations.” These included periods at Westpac, Myer, the NSW Premier’s Department and in the Department of Foreign Affairs. Meeting with career success, in 1996 Ingrid decided to establish her own consultancy – Executive Management Solutions - advising clients such as the Commonwealth Bank, UNESCO, David Jones, Elders, Delta Electricity, Sydney Water, the Victorian State Revenue Office and NSW Public Works. She has a range of academic qualifications including a master’s degree in business administration from the Australian Graduate

School of Management, a graduate diploma in education from the University of NSW and an arts degree from the University of Alberta in Canada. In addition to her executive roles at Noosa Parks Association and the Chamber of Commerce, Ingrid is chair of the Sun Lagoon Resort and a member of Noosa Council’s boardwalk advisory group and many other local organisations. Her son Ben lives with his family in Sunshine Beach from where he manages Jackson PR Associates which consults to organisations in Papua New Guinea and the South Pacific. “I’ve adopted as my campaign motif achieving an exceptional Noosa through good policy and strong governance,” Ingrid says. “It’s a bit of a mouthful, but good policy to me is not just a collection of bright ideas. “It must take the form of practical and actionable strategies that benefit the greatest number of people. “Strong governance implies ethical, efficient and well-targeted local leadership that always takes as its first principle the well-being of individual members of the community,” she says. “These ideals provide me with clear-cut guiding principles which, in their implementation, will continue to build Noosa, already a magnificent place, to exceptional achievement.” At the top of Ingrid’s policy agenda is her goal to ensure the Council strikes the right balance between community, commerce and environment “The Noosa Parks Association and the Chamber of Commerce understand that a sustainable community must be both environmentally and economically viable,” she says. “They also know there is great public benefit for the Shire’s leading civic organisations to work in a collaborative way. I am absolutely supportive of this and determined that the Council will play an appropriate role.” Ingrid is especially concerned that facilitating business development has not been elevated to a higher priority role in the Council. “I know that the Council has to juggle competing priorities in its budget but its current one-person economic development unit is not enough to support business growth and diversification in the Shire,” she says. “I’ll press for a better-resourced business development unit with a mandate to attract suitable enterprise to the Shire and work with business groups to strengthen local commerce

and provide information to prospective enterprises wanting to establish here.” Recognising that Noosa has an ageing population beyond the Queensland average, Ingrid is particularly concerned to ensure the community caters for the consequences of this. “People say this is an issue for the State government, and it is,” she says, “but I’m very aware of the advocacy role a council can play in improving things, using its influence to press for change.” On her agenda is the promotion of the development of a specialist health care precinct in Noosa, the defence of Noosa Hospital and the provision of more graduated care facilities for the ageing. She is also determined to make Noosa a more supportive place for families. “I want to cooperate with Council staff to conduct an audit of local family and other relevant support groups to determine their requirements and identify the extent to which the Council may more effectively assist them. “And I will take a special interest in working to alleviate domestic violence, a blight on the Noosa community as it is across Australia, by working to establish a crisis shelter in Noosa.” Beyond the needs of the Noosa community, Ingrid believes the Noosa style in architecture and design can be better recognised and leveraged. “There is an identifiable Noosa style in architecture,” she says, “and this already attracts sporadic study tours by architects and designers from other parts of Australia. “I want to more widely promote this and uphold Noosa as a centre of excellence in built design. “In concert with this, I’ll also be proposing that the Council review its building codes in the 2016 planning scheme to incorporate the look and feel of Noosa and reinforce the lifestyle and economic basis of the Noosa experience.” Ingrid’s also keen to reinstate the former annual Noosa Design Awards to promote design excellence in the Shire. “I’ll work within Council and other organisations to restore these awards which will further promote Noosa as a centre of excellence in built design. “It’s an initiative that will encourage distinctive design, educate the community and promote Noosa as an exemplar of design excellence,” she says. “Local government is not only about bread and butter issues, it’s also about enhancing how we feel about where we live.”“

ommencing on the 16th February 2016, the program will provide fashion entrepreneurs a chance to follow in the footsteps of program alumni including the award winning Christie Murray from Christie Millinery and Hayley Elsaesser who have both showcased at Mercedes-Benz Fashion Week, Lis Harvey designer of Nico Underwear, Helen Bayley creator of Lovestar and Edwina Sinclair from SOOT. The program will offer participants real world knowledge and mentoring to help them start, connect, grow and scale their business. Anna Rooke Chief Executive Officer of QUT Creative Enterprise Australia said it can be tricky juggling the role of both creative and entrepreneur. “The Fashion Accelerator program gives designers and fashion entrepreneurs the opportunity to master the skills needed to manage a successful business,” she said. “Participants will have access to high-tech facilities and industrial grade equipment, regular workshops, networking events, mentoring, individual workspaces, Wi-Fi, access to The Coterie co-working space and so much more.”

The Fashion Accelerator Program has evolved in 2016 to a 5 month intensive, weekly meet up for workshops and training. "The intensive program encompasses critical business components including technical and development, business and finance, range development and branding, marketing and public relations” said Ms Rooke. “We have an excellent track record of Fashion Accelerator alumni who have continued to achieve outstanding results and awards for their work,” she said. Designer Christie Murray who completed the program in 2015, said the Fashion Accelerator program was an invaluable investment for the development of her label. “Throughout the course of CEA’s Fashion Accelerator program I gained considerable insight into the industry and received training that helped me to significantly develop my label,” she said. The menu also offers confit duck leg with potato rosti, wilted spinach, prosciutto and vincotto; pan fried fish of the day with fennel and orange salad and a red wine vinegar glaze; Char-grilled rump steak herb and sea salt hues cut chips, balsamic mushroom salad and red wine jus (you can even add king prawns); and don't forget their 'famous' Ribs slow cooked with rocket parmesan salad and house cut chips. Recipe The Tamarind Whole Snapper (as featured in Flavours of Queensland) Serves 2 - 4 Ingredients: 1kg whole snapper 1 coriander root 1 garlic clove 3 long red chillies, deseeded 3 kaffir lime leaf 2 tablespoons palm sugar 10ml fish sauce 25g pickled garlic 30ml pickled garlic juice 75ml tamarind water 10ml lime juice 3L vegetable oil, for deep frying 10g Thai basils Method: Pound the coriander and garlic together in a mortar and pestle until it develops into a course paste. In a pot, fry the paste of coriander and garlic until fragrant. Add the deseeded chilli, lime leaves and palm sugar. Stir until softened and caramelised on low heat. Add the fish sauce, pickled garlic and the pickled garlic juice. Simmer for 3 minutes. Add the tamarind water and leave on a low heat to slightly thicken for 4-5 minutes. When ready to serve, remove from heat and add lime juice. Heat your oil to 180째C and fry the whole snapper for 7 minutes. To serve: Drain the fish on a paper towel to remove excess liquid. Stand the fish upright and pour sauce over, then top with the Thai basil.

Sri Lankan Curry of Petuna Ocean Trout (as featured in Flavours of Queensland) Serves 4 4 x 180g Petuna ocean trout, skin on 100ml oil Salt 1 bunch coriander Raita 4 serves of steamed rice 2 limes, halved Sauce 50ml oil 1 medium onion, peeled and roughly chopped 2 cloves garlic, peeled and roughly chopped 1 x 5cm pandan leaf, roughly torn 2 curry leaves 2 green chillies, split lengthways ½ tablespoon fenugreek ½ tablespoon fennel seeds 1 teaspoon chilli powder 2 teaspoons cumin powder

1 teaspoon coriander powder 1 teaspoon turmeric 1 cinnamon stick, broken into pieces 500ml coconut milk Fish bones from a white fish Sauce Heat the oil in a large pot over medium heat and add the onion, garlic, pandan leaf, curry leaves and green chilli. Fry until the onions are translucent. Add the dry spices, coconut milk and fish bones and stir to combine. Leave to cook until the mixture has reduced by half. Remove the curry from the heat and strain it into a separate bowl. Set aside until ready to serve. Fish Heat the oil in a pan over high heat. Add the salt to season the pan. Gently place the ocean trout fillets in the pan, skin side down, and leave to cook for 2 to 3 minutes, or until the skin is crispy. Turn the fish and cook the other side. Once cooked, remove from heat and serve. Transfer to a tray to keep warm. To Serve Place a piece of ocean trout on the plate, skin side up, and drizzle with the strained sauce. Garnish with coriander sprigs and serve with raita, steamed rice and a couple of lime halves.

Walkers Nomadic Chicken with Kingaroy peanuts, puffed rice, lemon purée, wild bee honey (as featured in Flavours of Queensland) Serves 4 Pickled garlic, thinly sliced Salted peanuts Native bee honey Chiffonnade lemon leaf Rosemary flowers Lemon Purée 6 lemons 400ml mineral water 200g caster sugar Skin Terrine 1 Walkers Nomadic chicken 10g active meat glue Puffed Rice 300g basmati rice 3 lemon leaves Grape seed oil Butter Poached Chicken 2 Walkers Nomadic chicken breasts 300g clarified butter 5 juniper berries, crushed 5 slices jamon 1 lemon leaf Lemon Purée Chop the lemons into 2cm pieces and place in a pot with 400ml mineral water. Simmer until ¾ of the liquid has evaporated. Add 200g of caster sugar and continue to cook until almost dry. Blend the lemons and pass through a fine strainer. Add more fresh lemon juice or sugar if needed and place into a piping bag and chill in the refrigerator. Skin Terrine Remove the skin from the free-range chicken and scrape the skins of any excess fat. Layer skins into a cling film lined 2cm x 5cm mould. Wrap well in cling film and allow to rest for 12 hours. Once rested, steam for two hours. Refrigerate until cold then slice into six even portions. Puffed Rice Bring the basmati rice to a boil in 1L of water. Add three lemon leaves to infuse the flavour. Allow the rice to simmer for five minutes, then remove from heat and cover. Allow the rice to sit until all the liquid has been absorbed. Spread rice over greaseproof paper and dehydrate at 65°C turning it every 15 minutes to get an even dryness. Deep fry in 180°C grape seed oil until puffed. Butter Poached Chicken Remove the two breast fillets from the chicken and divide each breast into three slices. Place the clarified butter, five crushed juniper berries, sea salt, five slices of jamon and one lemon leaf in a small pan. Bring to 70°C. Add the chicken pieces and poach for 20 minutes, maintaining the heat at 70°C. To Serve First of all, pan-fry the chicken skin until crispy in a little oil. If Kombis are the very essence of retro swag, Nick ParkerDavies, nationally renowned Kombi restorer based here in Noosa, isn’t far behind, with every vehicle loved like one of his own. Coco SeymourGriffin reports.

hen it comes to Kombis, I’m a sucker.The very epitome of class, vintage style and that cool coastal vibe that can only otherwise be found by living at the beach, Kombis are a moving statement of surfer chic. Throw a few overnight bags on board and crank the tunes, and the world is your oyster. Or so it feels. Which is why people love the Kombi brand in that it represents the very essence of anti-establishment freedom, where live is lived on whim and a promise, and every day is a holiday.

So, on rolling up to meet Nick ParkerDavies, founder and owner of the raddest (and largest) independent VW restoration workshop in the southern hemisphere, Kombi Shop, to say I was like a child at a toy fair would be an understatement. With Kombi vans on every corner, some restored to immaculate perfection and others a strippeddown shell of potential, the place was a buzz of energy as machines whirred and the phone rang off the hook. A Brit by birth, Nick is a genius of his world. Having completed his apprenticeship in the UK, starting his own standard mechanical business soon after, it was an


Nick & Kerri Parker-Davies organic turn of events which lead Nick to begin specialising in Kombis, noticing a gap in the market and becoming the saviour of all the previously frustrated VW die-hards. “I did general mechanic work for the first eight years as a repair shop, but one day, saw a Kombi shell for sale on the other side of the country. I wanted it, bought it, and drove for hours to pick it up, dragging it back to my garage in a flurry of excitement to restore. This was my first foray in repairing a VW Kombi from scratch however, and it soon become apparent that sourcing an interior for it was near enough impossible. I couldn’t find anyone who sold them, despite there being a fairly big Kombi scene. So, I designed a template for the interior and had it made, along with a whole heap of others, realising that if I couldn’t buy one, there would be other fellow Kombi restorers like me desperate to purchase one also. “From there, I advertised in a national VW magazine and signed up to exhibit at a VW trade show, with

business cards at the ready. I hoped we would garner some interest, but really didn’t know how we were going to roll. At the beginning of the show, I left my brother Steve in charge of the stand as I went to have a look around at the other exhibitors. After five minutes, my phone rang. It was Steve requesting my return. We had a queue of 60 people around the block! Needless to say, within 12 months, my general repair shop had morphed into a VW Kombi garage.”

For seven years, Nick ran his successful Kombi hub, but soon felt he was ready for the next challenge. “We had been holidaying in Sydney twice a year, visiting family, when we began to consider what it would be like to live in Australia permanently. We loved the climate and the culture and although not city people, we knew there would be a little place with our name on it somewhere. Noosa made it onto our hit list purely from our research (neither Keri,

my wife, nor I had been there), and Keri came to have a look to suss it out. Needless to say, she loved it. Four months later, I visited Noosa also, and knew I had found paradise. I sold the business in the UK, and we set off for Australia with our son, Connor. And so started a new chapter of our lives.” Having run a very busy VW mecca in England, Nick was initially keen to have a break and do something different on arriving in Noosa. “As I had changed my environment, I was interested in a complete change work-wise too. The Kombi scene was not as buoyant here, and I was ready for a rest. After three months relaxing however, I felt rejuvenated and open to the possibility of starting a Kombi workshop. And so, like a glutton for punishment, I did, basing ourselves in a shed in Doonan. Now, ten years on, we are a team of eight and restore Kombis from all over Australia, working on high profile media projects such as the pink Cosmopolitan magazine Kombi and commercial promotions, including the Surf Board Museum and Kombi Coffee Van, in addition. Life is sweet.” With Connor, now 20, an integral part of the business, following in his dad’s footsteps, and Keri a key player in keeping the daily paperwork in check, Kombi Shop is very much a family enterprise, and an example of what can be achieved when believing in the Australian dream. “I love what I do,” smiles Nick.“I love getting up and going to work. To me, it is not work. I am as passionate about Kombis as the first day I bought my own. And it’s not about money. It’s about building something and watching it grow. If you do what fulfils you, the money follows.” A laid back, cruisy self-starter (and selfconfessed typical Aries), Nick is living the Kombi fantasy. Refusing to be discouraged when others said it couldn’t be done – starting a business based on European vehicles in a country that favoured the Asian market, while concurrently staring the global financial crisis square in the eye – Nick is glad he didn’t listen. “If I could give one piece of advice to others, it would be to feel the fear and do it anyway. Don’t listen to the naysayers and don’t think too deeply. If you feel it in your bones, it’s time to start.”

Having been a local all my life, with 35 years spent in retail in Noosa and three years in retirement, I felt I needed to do something more. When The White House came up for sale, I knew it was for me! I love white, and I enjoy going to work and meeting all our wonderful customers. Why is The White House so iconic in Noosa? The shop was originally opened in 2002, and is utterly unique. Essentially, it is a beautiful shop based in a beautiful place (at The Marina) and filled with an electic mix of all things white! How does white reflect the essence of Noosa living? White works at the beach, never dates, is always fresh, evokes a sense of relaxation and oozes style, just like Noosa!

Why do customers love The White House? Customers love to visit and browse, even if not buying – it’s quite an experience coming into the shop! Locals pop in often, and tourists come back year after year, often bringing their friends with them. What do you sell typically? Is there such a thing as a typical The White House item? ANYTHING WHITE AND BEAUTIFUL! Now in its second year, this acquisitive art award celebrates contemporary works that reflect the character of modern Australia’s coastal or hinterland environments – both urban and natural. The Noosa Art Award is open to Australian artists and designers and entries can be in a 2D or 3D medium. Entries close 31 January, with the winner to be announced at the gala opening on 7 May. The winner receiving $10,000 and the People’s Choice winner a $1000 cash prize donated by Friends Noosa Regional Gallery, in addition to reward, recognition and career opportunities, the value of entering for the Noosa Art Award 2016 is certainly affirmed.

Nina is also delighted with a new Award that commemorates the life, works and community engagement of a Noosa local artist and aims to promote excellence in contemporary Australian drawing. “The Lyn McCrea Memorial Drawing Prize was established by John McCrea this year to honour Lyn’s passion for drawing as fundamental to visual arts practice” said Nina. Auspiced by the Noosa Regional Gallery, the winner’s prize is $1000 cash and the work acquired into the McCrea Collection.

The late Lyn McCrea, a Pomona resident, loved versatility and painted and taught students in oils, acrylics and gouache, ink with pen, nib and Chinese brush, and graphite pencil. Lyn exhibited widely, won many prizes and competitions with her works represented in collections nationally and internationally. And, delightfully, the annual Friends Noosa Regional Gallery exhibition and awards “Taste of Art’, a Friends only exhibition, returns for its fifth year with this year’s theme being ‘Discover Noosa”. Hugely supported by the Noosa region’s talented group of artists and artisans membership, the ‘Taste of Art’ four-week exhibition opens on Friday 5 February. The Friends have also launched the inaugural Noosa Youth Art Award to encourage young and local creative aged between 16 – 23 years, the patron for this award is renowned local indigenous artist Jandamarra Cadd.

The most amazing creatures on the planet

One of the best things about being an underwater photographer is having the privilege of encounters with some of the most amazing creatures on the planet.

O

ne particular marine creature that is very close to my heart is the sea turtle. For those of you who have yet to experience the magic of Mon Repos Turtle Rookery, it is a 1.5km stretch of beach not far from Bundaberg and one of the most significant places in Australia for sea turtle nesting. One such encounter was in late November last year when the oldest tagged turtle in the world, an approximately 60 year old

Flatback Turtle made her way up the beach at Mon Repos to lay her clutch of eggs. She was first tagged at Mon Repos in 1976. The odds for survival really are stacked against these amazing creatures as only 1 in 1000 turtle hatchlings will survive the 30 years of swimming around the ocean dodging discarded fishing nets, pollution and boat strikes to make it back to the beach to lay their eggs. For an unforgettable family experience I would recommend visiting Mon Repos Turtle Rookery. After connecting with one of these amazing creatures and learning about their life cycle, it is likely that you and your children will never walk past another plastic bag on the beach again.

Leigh Murphy is not building an empire, he's quitting one…

After 44 years as an Art Dealer he has also amassed quite an impressive art collection.

L

eigh was a major wholesaler of big name art to the Australian art trade, while also working part-time for 15 years shipping European 19th and 20th century works to New York, London and Paris for sale from South America. With over 300 major name works to quit in the next six years, he has recently opened his gallery 'The Collection' in Noosa Junction, to find new collectors and buyers, as well as have a 'little fun'. Amongst the current works on display in the gallery, are two original Norman Lindsay works, one (as per image) is a Conté Crayon Drawing by the then 21 year-old Norman, of his then 16 year-old sister Ruby - a full frontal nude! The Lindsays were a bohemian clan and their upbringing in Creswick, Victoria, encouraged freedom of word, action, nudity… and communing thus in nature. Ruby herself an artist, tragically died in London in 1919 at the end of the big flu epidemic. The major oil that Leigh has by Norman Lindsay is of Miss Bedford, the daughter of Lionel Lindsay's friend and publisher.

NS The Amber Road Winds to Hastings Street…

I

t all began with a simple bridge and a return visit to Europe. Every artist revels in the formidable historical and contemporary galleries of Europe - the buildings themselves and the works they

display - but for Michael Whitehead, the creative spark came not from visiting these iconic structures, but from walking over what linked them - the humble bridge.

Michael says: “I noticed them everywhere, but particularly in Bruges and Amsterdam. Although these ancient bridges were originally built for purely utilitarian purposes, they stand today as beautiful monuments to ingenuity, creativity and connectivity. Some are incredibly intricate, others more functional, but all are strong and sculptural. That in itself was inspiring, but I wanted to know more, why these iconic structures were built and what they were originally built for. Beyond the obvious geographic connections, what other connections did these remarkable bridges enable?”. One answer was of course trade routes. There are hundreds of ancient trade routes throughout the world, and one of the very earliest known is Europe’s Amber Road. From ancient times, amber—“the gold of the north”—was traded along this route linking the North and Baltic Seas with the Adriatic. Declared one of history’s top 10 Ancient Highways by National Geographic

magazine, The Amber Road is an intriguing trail winding from St. Petersburg down through eastern and central Europe and into Venice. Michael’s latest body of work is inspired by this ancient pathway, the countries it winds through, its many bridges, the ancient inns in ancient ports that accommodated its travellers, and of course the characters, rituals and customs of the traders themselves. Michael is renowned for his bold, layered abstract works which reveal the story of their inspiration one rich layer at a time. The Amber Road is set to continue Michael’s intriguing personal journey as one of Australia’s most acclaimed contemporary abstract artists. The Amber Road opens at Jive Art on Hasting Street on December29 and runs until January 11. Several of Michael’s larger works will also be featured in the Sheraton Noosa in a rotating exhibit throughout the season. Also exhibiting at Jive Art during the 2016 season are leading Australian artist Dan Mason with his powerfully experimental mixed media works, and new artist Sue Dyde whose instinctive style has already drawn a popular gallery following. He confesses to having had some doubts along the way about his public commitment to post a portrait on his Facebook page, Paul Smith Images, every Sunday for fiftytwo weeks, but overall, he found the whole process extremely gratifying.

photos themselves, with his audience obviously relishing his personal insights and encounters with his subjects. ‘I thought I’d push myself out of my comfort zone by doing a little narrative with each portrait,’ he said.‘It was definitely the writing that proved most challenging every week, but as the year went on I actually found it really enjoyable, and hopefully I didn't bore anyone along the way.’ It’s safe to say that boredom was never an issue, with the number of Facebook followers growing exponentially each week, and coming from all corners of the globe. ‘I was

Although Smith has rubbed shoulders with a plethora of notables during his career, earning an enviable reputation as a highly respected and much-sought-after music photographer along the way, the Sunday Portrait Project final cut wasn’t limited to high profile personalities. He is just as intrigued by the faces and stories behind everyday characters, like the fearsome and heavily tattooed nameless Maori bikie featured in Week 21, or Brian, the homeless shoeshiner from Sydney whose evocative portrait earned a multitude of ‘Likes’ when it was posted in Week 51. It isn't difficult to see that Paul enjoyed his interactions with these everyday 'nobodies' as much as the big celebrity names, and it is this humble and empathetic approach that has endeared him to his ever-growing fanbase. The Sunday Portrait Project was born out of a desire to escape the ennui that can develop through the demands of the daily grind, and to regain his passion for the art of photography. 'You get lost in sense, when you do something you love for a job,’ Smith says. ‘It becomes all about the money and following briefs from the clients. I really wanted to rediscover my love of photography by taking on a creative project that was purely for myself, and I really feel like I’ve achieved that.’ The format of the Sunday Portrait Project also gave Paul the chance to tell some of the often-fascinating stories behind his photos. Indeed, he received almost as much love for these accompanying commentaries as he did for the

overwhelmed by the response,’ Smith admits. ‘If I slept in, and was a little late posting, I would start receiving messages from people asking where their Sunday Portrait was, and what time would I have it online?’

The social media platform also proved interesting for Smith in terms of direct feedback, something he is not normally privy to. The majority of responses to his work were tremendously positive, however, a couple of photos in the series created quite a controversy. Most notably was the dramatic Week 22 image 'Untitled', of a shirtless, bloodstained child pointing a gun straight at the camera. It sparked a heated online debate about violence in children’s television and video games, between strangers from around the world.

Now it is all over, Smith says he has found the entire Sunday Portrait Project experience immensely satisfying. 'I really loved just having fun with photography again, being able to indulge my artistic whims, and push myself in different ways,’ he says.

It is a topic that Paul feels quite strongly about. The restaurant offers guests two set menu options, which Chef Lachlan and his equally talented young team create according to what is in season, fresh and abundant. They don't print menus as the meal is to be a total surprise for diners, but they do cater for dietary requirements. Chef Lachlan grew up in the region and follows the Barossa tradition of giving back to the tight-knit community by sourcing his ingredients from the farms and producers in the area. Many of those farms are now owned by the friends that he went to school with.

One of our favourite chefs, Executive Chef Parashuram Pathak has just returned from a three month internship at one of the World’s Best Restaurants - twoMichelin star restaurant NOMA, - run by Chef René Redzepi in Copenhagen, Denmark.

OMA has been setting the food world on its head since its inception in 2003 - with its cutting-edge re-interpretation of Nordic food bringing accolades and the title of Best Restaurant in the World in 2010, 2011, 2012 and 2014. So this 'internship' so to speak, was a huge compliment to both Chef Para's culinary skills and his reputation in the industry, and a huge coup for the Intercontinental Sanctuary Cove Resort, who were happy to allow Chef Para the time away from the hotel to follow his dream. For Chef Parashuram the experience was a dream come true and he has returned to the Resort with his passion for food reignited and a keen eagerness to give diners the chance to experience a taste of what he has learned. Resort General Manager, Monique Harmer and Chef Para recently hosted a private dinner to showcase the new techniques that he learned at NOMA to a select group of media and hotel friends. This dinner was a 'one off' and gave guests a look into the credo behind the international reputation of NOMA. Chef Para added his own Gold Coast edge to the menu by incorporating elements of the sea in his creation of the 10 course degustation menu that was both innovative and confronting at the same time.

The restaurant is strongly progressive, and has the added bonus of being able to harvest produce from their own 150 acre farm. They also include foraged ingredients growing wild around the property, as well as vegetables, herbs and fruit grown in their gardens and orchards. Cleverly, they also match their dishes to the award-winning Hentley Farm wines. A marriage made in heaven. Our recent visit with La Chaine des Rotisseurs, was an homage to the chef who represented Australia in La Chaine des Rotisseurs Chef Competition, held in New York in 2009. At the competition he placed 3rd in the world! Our welcome to the charming vineyard with its cute stone buildings with long covered verandahs, flowered gardens and rustling vines, was heralded with oysters passionfruit & rosemary and a glass of 2014 Skin Contact Riesling in the gardens, before settling inside the restaurant to be surprised, delighted and impressed with Chef Lachlan's avant-garde approach to taste and presentation. Our degustation menu included: Murray Cod, mettwurst, verjuice, oxalis and wild rice; Tuna, chicken liver, egg yolk, sunflower & iceberg; Pork, celeriac, canola, radicchio & mustard; 'Egg' jersey cream, passionfruit & poppy seed; Yoghurt, wild fennel, granola & liquorice.

Now, he has created an all-new and slightly less Nordic menu for the Resort's signature restaurant, The Fireplace, based on the Queensland summer season and all that is on offer from farm and sea to plate this season. Chef Para is excited with what he and The Fireplace team have created. “We really like the freshness of the new summer menu. It is a very exciting season of the year because you see lots of stone fruits, various leave and flowers. The new menu consists various melons and citrus and since my return from NOMA we’ve also started to ferment a lot of fruits and vegetables and these feature heavily in this menu. “We’ve used our own Miso as well, which is another inspiration from my time at NOMA. We take a lot of time researching various flavour profiles and matched them accordingly and use as much fresh produce as possible in order to create a unique experience for our guests and bring a taste of the Gold Coast to the plate,” Chef Para said. The highlight on the menu for Chef Para is the Classic Duck Leg “Confit” - Fermented cherry, cauliflower and cranberry & mushroom royale. It's official Australian songstress, Delta Goodrem will be playing 'Grizabella' in the Brisbane season of Andrew Lloyd Webber's CATS.

Producers of Andrew Lloyd Webber’s CATS announced the news that DELTA GOODREM will play the role of Grizabella in the Brisbane season of the acclaimed West End revival production of CATS commencing on Friday 29 January at the Lyric Theatre, QPAC. Ms Goodrem, who has starred in the production since its Sydney opening on Friday 30 October, will sing Memory, one of the most wellknown songs of all time. CATS, one of the longest running shows in West End and on Broadway, received its world premiere at the New London Theatre in 1981 where it played for 21 record-breaking years and almost 9,000 performances. The production was the winner of the Olivier and Evening Standard Awards for Best Musical. In 1983 the Broadway production became

the recipient of seven Tony awards including Best Musical and ran for eighteen years. Since its world premiere, CATS has been presented in over 30 countries, has been translated into 15 languages and has been seen by over 73 million people worldwide. Tony Wellington believes Noosa is entering into its fourth modern epoch, and that gets him very excited. "We're on the cusp of something fantastic here," he says. "The next decade or two will see Noosa shine ever brighter.”

"This is a very exciting time," he enthuses. "We are entering a whole new period. And while we mustn't lose sight of what has been achieved in the past, we can also start to imagine how Noosa might look in the near future.” Wellington has signalled his intention to run for the position of Noosa Mayor. He's the only councillor on the Noosa Council to have been elected to both the massive

or over half a century, Noosa has deliberately gone against many trends” Tony explained. “It began in the early 1960s when Noosa's pioneering environmentalists set their sights on rescuing Cooloola and enlarging the Noosa National Park. The second wave was a focus on the built environment that saw Noosa turn its back on high-rise buildings and big city symbols.” "The third phase was somewhat diffuse, focussing more on the community. That sense of communal identity built to a thrilling crescendo during the 6-year struggle to reinstate the local Noosa Council following its 2008 shotgun marriage with Maroochy and Caloundra." Since being reconstituted in January 2014, the new Council has inevitably focussed on the nuts-and-bolts of its operations. But after the upcoming March local government elections, with most of that groundwork completed, Tony believes it will be clear sailing for Noosa Council.

Sunshine Coast Council and also the more boutique Noosa Council. His professional history is somewhat unique for a politician - an artist, photographer, filmmaker, author and tertiary lecturer. Tony lives in Tinbeerwah with his wife businesswoman Judy Ditter and has three grown up children and two grandchildren. So just how does Wellington envisage Noosa in ten or more year's time? "Put simply, Noosa is going to excel, and both Australia and the world will really start to take notice," he says. "Noosa has already distinguished itself, and that is the basis of our strong brand and a tourism industry that is worth $800 million to the local economy. But we can't just rely on tourism, which is a fickle business to say the least” Tony adds. “We need to diversify the local economy in ways that not only provide resistance to global shocks, but also help reinforce the Noosa ethos and lifestyle.”

"That means encouraging clean tech, IT, and environmental industries. We must also focus on education and sustainability research. The health & wellbeing sector is another area that fits in well with tourism and the Noosa way of life. And there are opportunities in agriculture and food manufacturing that will compliment Noosa's clean, green image.” "But it's got to be more than just a strong economy that we focus on. I believe that Noosa can become an exemplar for the nation, and indeed the world, in terms of living in congruence with the planet.” "Noosa Council can itself be a prototype, always looking for the best and most innovative ways of servicing our community. That could be in terms of low carbon, minimal waste activities. But it can also focus on genuine community wellbeing.” "I can see Noosa becoming a worldclass creative industries hub, with arts practitioners and cultural opportunities valued by residents and visitors alike. We could also be pioneering cutting-edge building design, and we already have award-winning architects moving in that direction. Plus Noosa will be known as a welcoming, compassionate, inclusive place where individual differences are celebrated.” "I believe that, on a global scale, concerns about our impact on the environment will become increasingly fervent. In a few decades' time, stemming the flow of environmental degradation will be the number one priority for every nation. That's why the planet needs places like Noosa. I see Noosa as a sort of laboratory for modern, sustainable living, where new ideas are not only trialled, but actually instigated.” "I am imagining a Noosa that will draw people from around the world to see how we managed to actually meet those high ideals enshrined in our UNESCO Biosphere Reserve status. In the future, I want Noosa to be studied and researched. And you know what those future researchers will come to realise? That Noosa is different because its residents had high expectations, and because its Council took brave, progressive steps.” Tony Wellington is certainly inspired and ignited about Noosa and its future. Noosa Council elections shall be held in March. There are seven elected Council positions – Mayor plus six Councillors. The Mayoral role is elected separately by Noosa constituents.
