Out & About GREAT TIMES & EVENTS Tourism Noosa members kick up their heels... It was all action at the Tourism Noosa Christmas party held at Noosa Boathouse. As they say "what happens at a Christmas party stays at the Christmas party". But you can be sure there was plenty of merriment and fun to be had, as DJ Romeo kept the action in full swing.

nd lucky we were! What a day. Over 150 people, including media, restaurant owners, chefs and just good food lovers ventured out into the Mary Valley to meet local farmers and food producers on a hot summer's day, to talk about what they would like to see on their plates. Guests enjoyed a showcase of home-cooking laid out banquet style, with trestle tables covered in bowls and platters of delectable goodies from land, sea and garden - all provided by the producers themselves. Everyone was eager to ask questions as the producers explained their specialties to the clamouring crowd. This was farmgate to plate at its best!

or the third year in a row, Spicers Chefs in the City has been a huge success, culminating in a fabulous dinner for nearly 300 diners at Moda Events at Portside, in Brisbane. Spicers Group Sommelier, Peter Marchant and the head chef from each

Chris and Liam Hemsworth have always been competitive, but even going up for the same roles in major Hollywood blockbusters hasn’t ruined the relationship between the two younger siblings of Tinseltown’s hottest acting family, as Noosa Style discovers.

o have a Hollywood star in the family is a rare thing – but to have three leading men in your brood creates a ratio of celebrity offspring that few households can boast of. Enter the Hemsworths: the dominant band of brothers in the current cinematic scene.

While elder brother Luke started it all off, the younger siblings Chris and Liam have quickly become two of the hottest properties in Hollywood. With just seven years between the pair, Chris and Liam followed in their older brother’s footsteps from the relative obscurity of the Northern Territory – “There’s not much to do, so you spend a lot of time daydreaming and pretending to be characters in your own stories,” explains Chris – to the glitz and glamour of Los Angeles. Yet while Luke’s career could be comparatively labelled small-scale, Chris has made it difficult to imagine anyone else as

Thor and Liam’s turn in the hugely successful Hunger Games series has put the Hemsworths’ stamp on the Hollywood movie map. With such apparently fierce competition in Tinseltown, it’s a wonder they’re all ‘still speaking’. Liam, 26, explains how it used to be:“Me and Chris, when we were kids, we didn’t get along very well. I always looked up to my brothers and wanted to be hanging out

with them and their friends. I never had any issues with Luke because he was eight years older. There wasn’t any feeling of rivalry or anything like that.”

And although there will inevitably be times when the younger brothers find themselves competing for roles, they understand how the system works. When Chris and Liam both went for the lead role in 2011’s Thor, it eventually went to Chris who, with his bulging muscles and flowing blonde hair, seemed the perfect fit. Thankfully, Chris’ success did not spell the end for his and Liam’s relationship. “I believe in things happening for a reason,”

says Liam. “I wasn’t meant to get Thor; could you imagine anyone else but Chris playing him? I think it would have been weird potentially if I had got it as the little brother – things worked out for the better!” “That was probably the closest thing we’ve ever competed for, but even when we were both going for Thor we were never in direct competition with each other because it was at different times,” adds Chris, 33. “By the time I was in the running, he was

out and was giving me advice about what he thought they wanted and so on.” Just one year later, Liam’s perseverance paid off in the form of a role as Gale Hawthorne in the immensely popular Hunger Games franchise opposite Jennifer Lawrence. It was a fitting reward for the youngest Hemsworth, who had been looking to emulate his brothers in almost everything from a very early age.

engagement to Miley Cyrus, Chris has settled down with his wife of six years, Elsa Pataky. The couple have three children – daughter India Rose, born in 2012, and twin sons Tristan and Sasha, born in 2014 – and have recently relocated from the City of Angels back to Chris’ native country to settle in the Byron Bay area. “We’re going to be spending a lot more time in Australia,” the proud father confirms. “It’s the best place in the world for kids to grow up and it’s so beautiful. It will always be home for me, and my wife also loves the different kind of life you lead. After living in LA you can get tired of being consumed by the film business and now that I’ve got a bit of a name in the business it doesn’t matter if I’m here year-round or not.” The outlook remains sunny for the theatrical trio. With Luke currently enjoying his part in the Westworld TV reboot, Liam is set to star in Western Duel alongside Woody Harrelson, while Chris will be suiting up once again for the third instalment of the Thor franchise, Ragnarok, slated for release in 2017. Despite the close proximity of their careers, the brothers have somehow avoided films competing in the market, but “maybe when that happens there’ll be a proper Hemsworth smack-down,” grins Chris. Perhaps a joint on-screen venture is more plausible for the pair – or maybe even the full set?

h t r o w s m e H e k u L & s i r h C , m a i L “Everything they did, I did,” Liam laughs.“When they would build a treehouse, I wanted to be a part of it; when they started surfing, I wanted to go out with them even though I was too young. I was always following them around. I still do. And when they went into acting, I wanted to do it too!” Nowadays, while Liam has immersed himself even further in the celebrity world with a high-profile on-again-off-again

“We joke about it all the time – it would be really fun to do,” admits Liam.“I’d love to work with my brothers. It would be hard to do, because we’d just be messing around the whole time. But if something came along down the track and it made sense, we’d definitely consider it.”

Q & A: Liam, who has been the most inspirational person you have worked with on-screen so far? Jeff Goldblum is amazing; you never know what he is going to do. He creates such a happy vibe on set. He’ll enter a room and within 10 seconds – I guarantee – he’ll make every person in that room laugh or smile. I don’t know what it is; he’s just incredible like that.

Chris, how do your children cope with you being away filming for long periods of time? I just bribe them to make myself feel better.“I’ll bring you a present.” Immediately, the tears are gone and the smiles are back on their faces. That’s what’s called quality parenting. I’m all about the bribes. I don’t know how you parent without it!

he world’s largest surfing event by competitor numbers, returns for 8 Days of Pure Stoke with events for grommets to grandpas, dogs, body surfers, specialty and pro divisions. Unlike most tattoo enthusiasts who discover ink at a relatively early age, Marc Romanella was almost 40, when he decided to get his first tattoo. By Nicole Madigan

L

ittle did he know, it would be a moment that would change his life forever, serving as the catalyst for an innovative product concept and new business idea that has since become a global operation.

It all began with Romanella’s desire to heal his own tattoo naturally, without the use of lanolin, beeswax, petroleum or mineral oils, which are commonly used in over-the-counter treatments. Throughout his futile search, he quickly realised there was an enormous gap in an ever-growing market and soon commenced what would become a years long research and development program, involving tattoo artists, chemists, naturopaths and skin specialists alike. “We spent time ensuring that there were no contraindications, the lowest percentage of reaction possible, and most importantly creating a product that stabilised the ink within the dermis,” says Romanella. “The tattooing process is an invasive process. It hurts. It means so much to the person that selects their permanent design. It should last and now it can.” Two years and thirteen formulations later, Romanella finally had a product he was satisfied with. It was at that moment, after the spending two years selffunding the research project and working on preserving the art of others, Romanella decided to turn his discovery into a business. “I realised that I cared and was ready to change my life,” he says. "I watched as people walked like ants to work in Melbourne and I knew that wasn't for me.” And so, Romanella walked away from his fast-paced corporate career of 30 years, which included high-level hospitality roles such as overseeing the operations of Gary Mehigan’s Fenix and Big Kitchen Events. Taking it a step further, he packed up his bags, and left his home town of Melbourne to pursue his passion in Noosa. "The Sunshine Coast was a conscious decision, it was the perfect backdrop for the creative process required in my new line of work,” he says. “I need the ocean. I need the honesty of a home that encompasses beauty. "Noosa has everything. It is not only stunning, it is also a stone’s throw away from everywhere.”

he latest wave of exfoliation technology is referred to as hydrodermabrasion, which has combined the concepts of microdermabrasion, crystalless microdermabrasion, and liquid forms of exfoliation. B

risbane audiences can see the result of Lisa’s dedication because this Brisbane born, world class gymnast and Olympian has taken over one of the key solo acts, the Aerial Hoop - in the critically acclaimed KOOZA, by Cirque du Soleil, now showing under the Big Top at Skygate Brisbane Airport. “I have spent considerably more time in lycra than I had ever planned when I was young, but I have been lucky enough to have made a career out of what I love doing; out of what I started as a kid in Albany Creek when I was six years old and wanted to learn to do the splits and a handstand!” said Lisa. Lisa began gymnastics at age six at Lawnton Academy; she went to Albany Creek Primary School and later she traversed the city each day, from the northside to the south to attend senior school – at Holland Park, because it was close to Chandler sports complex where she trained. For almost ten years Lisa reigned supreme in Australian gymnastics. From her international debut at the 1995 World Championships in Sabae, Japan where she placed 12th with the Australian team, through to 2004 she competed at four World Championships and three Olympic Games (1996 Atlanta; 2000 Sydney and 2004 Athens). She held the Australian National Champion title in 1996 and 1997; earned two gold medals at the 1998 Commonwealth Games - and was the highest-ranked Australian WAG athlete at the 2000 Olympics in Sydney. She was the country’s most celebrated elite gymnast. And, while she may have shone at three Olympic Games, numerous world championships and won standing ovations for her role in another Cirque du Soleil production in Quidam, this season of Kooza in Brisbane will be the very first time Lisa Skinner has performed in front of her hometown crowd. She’s excited, and yes, just a touch nervous.

However, in a twist not unlike some of the breathtaking moves she performs under the Big Top, her time in the Cirque du Soleil spotlight almost didn’t happen. In 1997 when Cirque du Soleil scouts first approached Lisa she turned them down, because she had never seen a Cirque du Soleil show and... “thought joining a circus meant caravans and elephants, and I didn’t want that, I wanted to continue my career as an elite gymnast, to see how far I could go.” At the Sydney Olympic Games in 2000, Lisa made history as the first Australian gymnast ever to qualify for an individual event final at an Olympics, and scouts again approached her to consider Cirque du Soleil as a career. Again, she declined…. she still hadn’t ever seen a Cirque du Soleil show! After Sydney, Lisa took stock and a break from elite level competing. She came home to Mum and Dad and her two sisters and brother (all of whom are taller than her). Back in Brisbane she studied Human Movements at UQ. However, she wasn’t finished. “There was most definitely a voice in my head, I felt I still had more to do, I still wanted to compete, to see how far I could push it.” And so, after two years off, she launched herself back into training and stunned the gymnastics world by learning new skills, and matching debut athletes with her fitness and dedication. She returned to competition in 2003, and represented Australia at the 2003 World Artistic Gymnastics Championships, the 2004 Pacific Alliance Championships, and the 2004 Summer Olympics. At her third Olympics, she was an uneven bars and balance beam specialist. It was at the 2004 Athens Olympics that Lisa’s destiny turned. “By this time I had seen a few Cirque du Soleil shows and had been astounded at every one of them, at the level of excellence, at the continues next page...

There were no elephants, just incredible human beings doing extraordinary things!” She saw the Cirque du Soleil scouts at Athens and this time, she approached them. She was invited to Cirque du Solei’s General Formation of 2005 - the company’s talent pool sourced from all over the world. But before she could join, she needed not one but two shoulder reconstructions to mend damage caused by years of pushing her body to extremes. “My shoulders were basically held together with tape; and I knew I couldn’t start the new career I really wanted without having the operations and focusing on rehabilitation.” Lisa explained She returned home to Brisbane for the operations and recuperated at the family home, still her most-loved destination to visit in the world! All up, this took almost a year. After initial training in Montreal, she was offered a position on Alegrìa in the Power Track Team and later became the dance captain for the cast. Always looking to improve her skills, Lisa challenged her Artistic Director to find her a position on Quidam in one of the shows’ powerful aerial numbers. In 2010, Lisa joined the Aerial Hoops act on Quidam and toured all over the world with the show. She was in the USA and on a break from Quidam, when the call came through a few months ago from Cirque du Soleil – they needed her for Kooza, the Aerial Hoops performer had to leave the show for family reasons for a few months. “Which city?” she asked. “Brisbane” came the reply. And “yes” was her answer. In Kooza Lisa performs the Aerial Hoops act solo. “This is my first time in a solo act with Cirque du Soleil, and yes, it’s daunting – there is no-one to share the load, no-one to shift focus... the full weight of the audience lies with me – and I guess that’s why they called me; this is what I do, I’ve done it since I was six,” she said. And so, now Lisa get the chance to wow her hometown audiences - many in the audience will be people Lisa grew up with, her friends and even those she used to train with, old coaches and car pool drivers. Some will know her as one of the country’s greatest gymnasts. Others may recognise her from medal ceremonies. And there will be fans who applaud her after simply reading her story. I have learned it is not happiness that makes me grateful; rather being grateful makes me happy. This gratefulness has lead to me being able to live a simplified life. To intentionally choose it. It is never the result of an expensive trip or presents. I’ve learned it is an intentional choice based on acceptance of what is. To focus on what I do have. I now look at fulfilment and joy in my life. To be present with others. Presence and time shared is the greatest gift. I think about conversations, the memories, the laughter and the tears with special people in my life. To find the joy in giving. The journey of gift giving is the gift to myself. It’s not about how expensive the present is. It’s matching the gift to the person and then wrapping it up. I look at all of these things as a gift to myself, simply because I find myself always richer after giving to others and seeing the joy on their face.

ummer is full of so many wonderful things — but melting makeup, smeared eyeliner, and sticky lipstick are not among them. Below are the best tips for keeping makeup looking fresh and pretty, even when the weather and humidity is working against you.

1. MOISTURISE The way you care for your skin is just as important as the makeup you apply to it. Start by using an oilfree moisturiser in the morning before applying make up. You should also opt for an oil-free foundation formula to match. 2. PRIME You won't regret the few seconds it takes to apply a primer, which goes on after moisturiser or on its own but before face makeup. Primers are definitely a must in summer. They are light make skin feel incredibly silky allowing make up to spread more evenly and really help hold makeup in place.

3. BRONZE Bronzer makes your eyes look brighter, your teeth whiter — everyone looks better with a little warmth added to their skin. To keep the results looking fresh and natural I recommend applying bronzer just to the high points of your face, where the sun naturally hits you: forehead, cheekbones, chin, and nose. Covering every nook and cranny is what gives your face that fake look. Powder bronzers are the easiest to apply; look for one with varying shades — they'll blend together for the most authentic-looking results.You can also sweep a little bronzer onto your neck and earlobes, especially if you have short hair or are wearing a ponytail. 4. KEEP IT LIGHT. If you want to keep your makeup from creasing and cakingless is definitely more. On very hot days try and just use a tinted moisturizer and a concealer where you need it, make up likes to move around when it's hot, so the best way to avoid creasing is to wear less of it. 5. SKIP THE SHIMMER. Everyone loves a nice, dewy glow but there's a big difference between a healthy radiance and an over-the-top shine. "Avoid cream foundations or anything too luminous in the hot weather, as the humidity will make you extra shiny and sweatylooking if you have too much sparkle on your skin.

6. SHEER DELIGHT. Rich, deep colours have their place, but they can look heavy in summer. To lighten up your look, switch to sheer versions of your go-to lip and eye colours. Use a lip liner pre-application if you need extra definition, but go for a nude or pale blush pink shade to keep that carefree feeling. Because sheer colours are subtler, you almost can't go overboard. 7. LONGER EYE WEAR. For longer-lasting shadow, avoid using eye cream on your lids (it can break down makeup), and smooth on an eye primer instead. It will minimize creasing and create a base for the shadow to cling to so it lasts longer. For the ultimate in all-day wearability, layer a powder over a cream. Doubling up works

for eye liner too. Apply your regular pencil or liquid liner, then use a small angled brush to press dark shadow over the liner to set it for longer wear. 8. BLUSH. Blush adds balance and healthiness to any look, but if you're still using the same powdery formula, your flush might get caked faster than the time it takes you to get to work in the morning. Stains are great for longevity in hot weather, use a gel or blush stain, then blend a touch of a cream blush on top of it. Want to increase its wear? Dust a light, invisible setting powder overtop. Just be sure not to get too heavy-handed; you want to lock your look, not mattify it. 9. VIBRANT COLOURS Just as you're probably more likely to wear a vivid top or carry a bright bag this season, now's the perfect time to play up your makeup palette. Besides looking summery, livelier colours brighten the face and bring a youthful glow to skin. If you tend to stick with neutrals, experiment with just one area of your face. A punchy blush on the apples of the cheeks is a good place to start. 10. ELIMINATE SHINE A slick T-zone instantly screams "I'm hot" — and by hot I don't mean sexy. To eliminate unsightly shine in seconds, nothing beats blotting papers. They're cheap and easy— you just press and go. If you need to perk up your makeup -blot first, then follow up with a pressed powder with a hint of luminescence.You want to eliminate shine, but you still want to look a little glowy. 11. STAINS Toss your heavy matte lipsticks for the summer and try the season's simplest trend: stains. These long-lasting formulas offer sheer coverage that can be built up, making them super versatile. Stains are lovely because you can always add a lip balm to add moisture without worrying about the colour travelling. Try sweet pink shades for a traditional summery look, or go bold with tangerine and grape colours for something more daring. 12. WATERPROOF Love to swim? Don't worry about getting raccoon eyes — there are lots of amazing long-wear beauty products out there these days. Invest in a good waterproof mascara, or if you're blonde, try having your eyelashes tinted.

As a result, I am often asked in interviews for a man’s perspective on dating and what it is that women want? "So, if this is your year to meet the lady of your dreams, then here are my top tips, to help you navigate the dating minefield." says Stephen Handisides Pay attention and listen. When meeting a woman for the first time, look her in the eye, smile, ask questions and really listen. When other people join the conversation, introduce her by name, it shows you’ve been paying attention. She may not be your future partner, but every person you meet has something interesting to say. Be yourself. Don’t pretend to be an ex-military special forces hero if you left Army cadets when you were 15! Be yourself and be proud of who you are. If she doesn’t like who you are, then she isn’t worth it. Don’t talk about your Ex. Especially not on a first date. Don’t talk negatively about your ex-girlfriends. It will just make you look bad. Put down the phone. Turn your phone off, or at least put it on silent and in your pocket when on a date. It can all wait, give her the attention she deserves. Taking selfies and foodporn Instagram pictures on a date, just isn’t cool. Respect her and be a gentleman. Treat a lady with respect. Don’t be late. Offer to pay on the first date. Walk her to her car, open the car door and make sure she gets home safe. Be a gentleman.

F rench Style in Noosa…

A

fresh breeze is blowing on Noosa’s shores with the arrival of Saint James. While the name does not sound French it is one of the last remaining manufacturers of the traditional Marinière (striped sailor shirt). The company is based in a little Norman village of the same name, only 20 km from the Mont Saint Michel. The iconic style of the “marinière” has become an essential of everyone’s wardrobe, inspiring a chic relaxed seaside look. It all started far from the fashion magazines, in between Brittany and Normandy when it was worn by fishermen in the early 19th century. In 1858 the Marinière became a garment of the French Navy with strict regulation on size and numbers of stripes - 21 horizontal white stripes measuring 20mm and 20 to 21 indigo stripes measuring 10mm each. The legend goes that the number of stripes represents the number of Napoleonic victories at sea against the British army. The Marinière lost this working-man image when Coco Chanel, who spent a lot of her holiday time in Brittany, started wearing it in Deauville, a chic seaside town in Normandy. While she wasn’t selling it in her shop, she contributed to the popularity of this garment with the French bourgeoisie. During the 20th century, the style was to be endorsed by numerous celebrities in France, with Jean Cocteau, Pablo Picasso, Brigitte Bardot and Marcel Marceau, but also in Hollywood with John Wayne, Marlon Brando or James Dean & Audrey Hepburn. It also appeared on the fashion podiums with Jean-Paul Gautier and the iconic “Boy Toy” collection in the 1980’s. While the striped shirt has become a symbol of French style, it did not end up a cliché and people in France still wear it during the summer. his is a great way to use green bananas in a salad. The natural sweetness of Australian bananas balances the chilli. Use a food processor or mortar and pestle to crush the dressing ingredients for best results. The secret of this salad is to shred and chop all the ingredients well except the bananas. Prepare this just before you want to eat and serve as a side dish with seafood or chicken. Ingredients 1 live Tin Can Bay mud crab, about 1kg, chopped (see Note) coriander leaves, to serve Ginger, chilli and shallot sauce 2-3 long red chillies, coarsely chopped 2 cm knob ginger, peeled and coarsely chopped ½ bunch coriander, including roots, well rinsed

250 ml (1 cup) light soy sauce 250 ml (1 cups) mirin 125 ml (½ cup) white wine 75 ml sesame oil 190 ml sweet chilli sauce 2-3 garlic cloves 4 spring onions, coarsely chopped Method: Place the palm sugar and boiling water in a bowl and set aside to cool. Place the coriander, chilli, lemon juice, sugar, water, fish sauce and garlic in a food processor and process until fine. Pour into a medium sized bowl. Add the chopped tomatoes, Spanish onion and cucumber to the bowl. Then add the finely sliced green banana. Toss well. Sprinkle with peanuts and extra coriander.

I live by the old Aboriginal maxim ‘ I Eat From The Land I Walk On’ – such a fabulous ideal when living in or for that matter visiting Noosa.

t this time of the year the lush bounty of local and hinterland providence is inescapable. Beautiful fruits particularly have me taking extra oxygen into my cells as I gasp at the array of melons, pineapples, papaya – paw paw, banana, mangoes, strawberries and blueberries.

When in Noosa, plan a trip down to the Noosa Farmers Market held every Sunday from 6:00am in the AFL football ground car park in Weyba Rd. It’s one of Australia’s hidden food source gems with an abundance of fresh vegetables and fruit; the envy of our city sisters and brothers. I know it well, having spent 8 years there every Sunday with my green papaya digestive health product, which leads me to the health providing qualities of Queensland’s tropical fruit selection. First lets deal with the perennial question of ‘ Is there too much sugar in fresh fruit?’ Answer is NO. Definitely not, in fact 60% of the simple carbs in fruit are directed to the brain, particularly first thing in the day. These simple fructose based carbohydrates make the brain ‘fire’ – keeping the synaptic function of the brain running efficiently.

Then there are the vitamins and minerals in fruit. Pineapple is high in the enzyme bromelain. Although not generally consumed, the stem of the pineapple contains the highest amount of bromelain, which helps to reduce inflammation from infection and injuries. It is also useful for treating tendinitis, sprains, strains and other types of muscle injuries. It is also proteolytic in nature, which means it is great for getting the gut to function when struggling to break down proteins. Papaya or Paw Paw, again has wonderful proteolytic qualities. The green immature fruit especially, contains high levels of the enzyme called papain. I used this in its dried form to heal 45 years of gut issues and attendant symptoms. In its ripe form it is higher in naturally occurring fructose and a little lower in papain, but nevertheless still a wonderful fruit to begin your day with. Both red and rock melon are high in both VitC and VitA (in the form of carotenoids), along with potassium, and a host of B vitamins (B1, B3, B6, and folate) as well as vitamin K, magnesium, and fibre.

Bananas are a great energy food containing high levels of carbohydrates. Eating a banana a day will give you 33% of your daily potassium needs, 11% VitC, 8% Magnesium and a handful of other trace minerals including copper and manganese. Recipe

T

his is a dish I created back in the ’90s after a trip to Singapore. I was a bit disappointed with the Singapore chilli crab – not that it wasn’t nice, but it wasn’t what I expected. On returning home, I went into my kitchen and just reached for ingredients available in my pantry, and wrote down the measurements as I went along. The result is very much like me – a little bit of flavour from around the world. I blended it and just put it into a pot with a cleaned mud crab. The result blew everyone away. The recipe has never changed. Many chefs have it but they all know this is mine. Enjoy the beautiful flavours and don’t restrict yourself to crab – try prawns, chicken, tofu or vegetables. Healthy, tasty and rich.

Method: To make the sauce, place all the ingredients in a blender and process until smooth. Place the crab pieces in a large, heavy-based saucepan and pour the sauce over the top. Cover and cook over high heat until the sauce comes to the boil. Once the sauce reaches the boil, cook for 5 minutes, then reduce the heat to medium and cook for another 5 minutes, keeping the pan covered. To see if the crab is cooked, remove the lid and look for the tell-tale white droplets of protein being squeezed out of the shell, especially the claws. Scatter immediately scattered with coriander, with crab crackers, pickers and finger bowls of warm water with lemon.

Steamed mud crabs with ginger, chilli & shallot sauce

Serves: 2 Preparation time: 30 minutes Cooking time: 20 minutes Ingredients 1 live Tin Can Bay mud crab, about 1kg, chopped (see Note) coriander leaves, to serve Ginger, chilli and shallot sauce 2-3 long red chillies, coarsely chopped 2 cm knob ginger, peeled and coarsely chopped ½ bunch coriander, including roots, well rinsed 250 ml (1 cup) light soy sauce 250 ml (1 cups) mirin 125 ml (½ cup) white wine 75 ml sesame oil 190 ml sweet chilli sauce 2-3 garlic cloves 4 spring onions, coarsely chopped

Note To ensure you get a full mud crab, choose a live, heavy crab. I find the ones with brown bellies are always full. Please ensure they are killed humanely, and the best way to do that is to place them in the freezer for 30 minutes and then dissect them. To do this, remove the head, clean the gills and guts, without washing them in water, simply shake it out. Cut the body of the crab into 6 pieces, 3 each half and gently crack all the claws. If you can’t find Tin Can Bay mud crabs, just use the freshest mud crabs you can find.

Why so fashionable now? Rosé is even the pet wine of the splitting celebs Angelina Jolie and Brad Pitt. Their wine is from Provence. Never before has it and this Mediterranean category been so worldly popular.

N

ot pink wine but pale pink wine, blushed like a pale rosé, limp-coloured. And light on the tongue, dry. Now today guys drink rosé in spades, and hence another reason for the jump in popularity as mainstream beer sales

fall. And nobody can guess blokes are drinking a pale wine in a dark restaurant, so it could pass off for a grigio anyway. Is this the quiet and sly consumption pushing the data up! Hey, now I get it, here is the real reason for on-trend pale French rosés, as the cherry-coloureds and old-fashioned ones resembling pinot are being dropped for new stuff. Trend. But more drinkers enjoying this pink stuff is the turning point in sales acceptance and currently putting a little money in the pocket for cash-strapped Australian winemakers. The grape treaders could never convince sufficient persons to sip rosé, as most producers are closer to the farming community than being PR whizzes. But the digital age has given these pale drinks, never-to-be white wines a push. Why? The Twitter campaign led by the Yarra Valley-based De Bortoli family, and others, who make innovative and delicious-styled premium rosés was the cause. That was the Rosé Revolution when a particular day was singled out across the globe to grab nothing but rosé for your drink-of-the-day. After several years of banging on with the RR over social media the campaign is to be voted as successful.

Pink wine. DRINK SOME ROSÉS They come from all red grape varieties, no fail. Aix 2015 Coteaux d’Aix Provence AOP France a clever name after the town Aix-en-Provence, the heart of rosé from local grapes cinsaut, grenache and syrah. Straw-pale-pink, sniff the flowers, sip the tangy orange-skin bitter texture. A normal taste now for dry drinkers. Le Bout du Monde 2014 Domaine Serisier AOC Bordeaux, France made from merlot by Australians Richard and Shelly Serisier

in Fronsac. Many properties here only grow red grapes, this was bled (saigneé) from the main wine, more pink, a little more robust than Provence though quite rounded to drink. Longview Boat Shed Nebbiolo 2016, Australia, from this classic, tannic, tough-skinned Piedmontese grape, tinges of lilac, cherry and orange, a good grippy wine, bone dry, likeable Adelaide Hills to glug. This wine has been well loved in shows this year.

Castello di Melito Borgaio Rosato 2015 IGT Italy, from Gaiolein-Chianti, Chianti Classico, made from the blessed Tuscan grape sangiovese, another grippy inhabitant, making rebellious style rosé with attitude, orange, extra dry, textured, drunk with substantial white meats or pasta. What I now find is a large proportion of Australian wine properties making rosé. And the style is not the cerise, honey-sweet of old; local sunny Coast restaurants are uncovering customers prepared to try “blokes rosé”; lithe, onion-skin, dry-bitter-tang which is competition for less fruity whites like grigio, gruner, vermentino and alvarhino. Mr Pitt and Angelina make hundreds of thousands of bottles of Miraval pink. We have them to thank for their exploitative foray away from the screen to drink.

Leading high-end restaurants are typically synonymous with a combination of significant events, grandeur, great views, small meals on large plates, and sometimes indecipherable ingredient lists. However, Spicer's Clovelly Estate Executive Chef, Cameron Matthews sees another role for them: leading promotion of sustainable practice, an issue of increasing focus and importance in the food industry.

ameron’s kitchen is not foreign to luxury, but his aspirations are higher – and his vision of zero-waste, high-end restaurants in Australia, will now take him across the world. “The food industry needs more advocates to speak with authority about issues of sustainability, and with greater knowledge,” Mr Matthews said. “I hope to gather knowledge, tools, resources and new ideas to bring back to share and implement directly across a range of working Australian kitchens. “I want to find ways to reduce food waste to zero, whilst increasing awareness throughout the sector, sharing a blueprint of "best practice". Cameron will study within the kitchens and farms of the best sustainable restaurants in the world: Blue Hill at Stone Barns in New York, Relae in Denmark and Azurmendi in Spain. “It is truly humbling to have been selected as a Churchill Fellow, and I very much look forward to bringing these important findings back to our Australia community,” he said. “Ultimately I want to use everything I gain from my Fellowship experience to create a plan to increase environmentally sustainable restaurants. “My three children inspired my application – I feel the need to make my work count, to give it a reason and to change how most people see the way high-end restaurants work.” Cameron joins 106 Australians who will harness their passion to improve

The level of creativity displayed in the kitchens on this season of The Block from Freedom Kitchens has blown me away. Then, just when I thought I’d seen it all, the incredible kitchen from the ‘Challenge Apartment’ was revealed. To me, it was worthy of a 10 – and my fellow judges agreed – scoring it a perfect 40/40!

his showstopper embodies an emerging trend from this year's EuroCucina – New Heritage, where contemporary design celebrates heritage style, while incorporating touches of modern luxury.

There are so many standout features in this space, but the one that strikes you first is the stunning backlit Caesarstone Concetto White Quartz island bench. The 2017 Pirelli Calendar, created by one of the world’s top photographers, Peter Lindbergh, has set the world on fire. The 2017 edition sees the German master become the only photographer to have been asked to produce the Pirelli Calendar for the third time.

NS Right: Albert Gleizes - Composition

In the late 1920s a second wave of Australian women artists explored Modernism in France. Grace Crowley (1890 - 1979), and Anne Dangar (1885 - 1951) both from N.S.W. - and Dorrit Black (1891 - 1951) from South Australia.

I

n 1928 all three came together to study under Andre Lhote (French 1885 - 1962) at his studio in Paris. They also enrolled at his summer school at Mirmande in South Eastern France. Here they produced landscapes in a broad Cubist style. These works now hang in our State and National Galleries as a reminder of the intrepid adventures of our single lady artists in bringing the latest in Modernism to Australia. In 1929, the trio returned to Paris to study under Albert Gleizes (French 1881 - 1953), who in 1912 along with Jean Metzinger, coauthored the first major Treatise on Cubism to attempt to explain what they, Picasso, Braque and others were putting onto canvas, and why. In 1927, Gleizes had founded an artists colony in a large rented house called Moly Sabata - outside Sablons in the Rhone region. Gleizes was a great theorist and pioneer in art movements. Moly Sabata encompassed his art experimentation surrounding Catholicism and mysticism.

Our intrepid three spent time there, Black and Crowley produced a couple of works while there, adhering to his principles, and then moved on. Anne Dangar fell in love with the simple almost monastic lifestyle and spent most of the rest of her life there. She used mainly pottery and ceramic tiles to illustrate his theories and ended up running the colony. Black and Crowley returned to Australia to commence their own eventual illustrious careers in helping to pioneer Modernism here. Crowley corresponded with her best friend Dangar until Dangar's death in 1951. Leigh Murphy - 2016

Voyages Botanical: Christine Johnson “Voyages Botanical” is artist Christine Johnson’s tribute to the untamed treasures of Australia’s vast native lower garden. It is indeed a voyage: through rare and wonderful landscapes, but also through our botanical heritage and history. Voyages Botanical was inspired by Johnson’s time as a Creative Fellow at the State Library of Victoria. Her research, which drew on the library’s collection of rare books of botanical illustration, took her back to the pioneering work of early botanical artists including Sydney Parkinson, Pierre-Joseph Redouté and Ferdinand Bauer. This was the beginning of Johnson’s own creative journey that at once honours our past, present and future.

Elemental: Artists’ Books “Elemental” – is a delightful take on natural history by artists in the Noosa Paper and Books Group. Paper, found objects, drawing, printmaking, sewing and more, are raw materials for works that invite the audience to engage with the natural world and question their understanding of what makes a book. Wild/flower Women Kathleen McArthur (1915-2001) + Judith Wright (1915-2000) Art, environment and activism. The role of writers and artists has been crucial in raising awareness about the special qualities of the Queensland environment. Among those involved were the artist/writer Kathleen McArthur and poet Judith Wright. This exhibition features a selection of Kathleen’s beautiful wildflower paintings and ephemera drawn from the collections of Hugh McArthur, Fryer Library/University of QLD, Wildlife Preservation Society of QLD and Greg Roberts, many of which were based on Sunshine Coast flora. It also tells the story of how Kathleen and Judith’s love of ‘wildflowering’ inspired one of Australia’s first major conservation campaigns leading to the establishment of Cooloola National Park. wo artists recently signed to leading contemporary and aboriginal art gallery Jive Art on Hastings Street have taken Emily’s words to heart. The stunning oil paintings of internationally acclaimed artist Katherine Wood have captivated and delighted art collectors from Cape Town to Dubai and all places in between. Katherine produces powerful and dramatic abstracted sea and landscapes which she notes: ‘are not about reproducing reality; but capturing the energy that creates it’. A full time artist since 2002, Katherine has enjoyed phenomenal global success, with a series of sold out Exhibitions and a prized spot as Art Internationals’ Artist of the Month in 2008, the same year she was invited to exhibit her work at the Beijing Olympics. With a fine arts degree from Stellenbosch University in South Africa, her work has been in sold out exhibitions in London, New York, Dubai, Cape Town, Johannesburg, Durban, Sydney and Brisbane to name a few. Katherine keeps up with the global demand for her work by splitting her time between her existing gallery in South Africa and her home here on the Sunshine Coast where she now lives. Husband Duncan is also involved, managing her work and the relationships with representative Galleries around the world. Since moving to Noosa Heads in 2012, the popularity of Katherine’s work has continued to soar and in November she joined Jive Art. d e h s a e l n u s u n a d n a P e h t . . . y t i v i t a e r c f o e a wav Artist Jeanette Jefferies-Smith first began her love affair with Noosa during a holiday here over 20 years ago and like the thousands of tourists who flock to the area each year, she dreamed of one day living in the area.

‘Nothing says quintessential ‘Noosa’ quite like the Pandanus’, says Jeanette.

I

remember sitting at Little Cove in June 1996 and I made a promise to myself then that I would live here one day”, says Jeanette.

It’s a promise she fulfilled two decades later, returning as an award winning artist, a unique style of painting and with a fully-fledged passion for the Noosa landscape. “After spending half my life visiting Noosa I decided that the next half of my life I was going to be a permanent resident!” Settling in Peregian Springs in September, Jeanette wasted no time in immersing herself in the local landscapes and coastline, during which time she honed her inspiration on the iconic Pandanus Palm.

She spent a month studying the Pandanus in all its forms, locations and species, before commencing a collection that she considers her best work yet. ‘My work has always explored the richness of Australian land and seascapes but to focus a collection on the Pandanus unleashed a wave of creativity that enabled me to indulge my love of the ocean and preferred style of combining thick chunky paint and luscious vibrant colours.’ The result is Pandanus Perspectives, a collection of 16 works that range from abstract takes on the pandanus through to breathtaking panoramic seascapes of Noosa beaches. The initial collection was launched at a private home in Noosa, resulting in the sale of several pieces and 2 commissions. The early interest has inspired Jeanette to build on the collection. And with a background in interior design, she expects to see more Pandanus Perspective originals gracing the walls of homes across Noosa in the future. ‘My love for capturing the complexity of the Pandanus in all its forms has grown, not diminished as a result of producing the collection’, she says. Jeanette plans to launch private art classes and corporate team building workshops, both successful endeavours since she launched them on the Mid North Coast of New South Wales in 2010. Jeanette has also been commissioned by leading online book retailer Booktopia to produce an exclusive range of Aussie Christmas greeting cards ‘It’s hard to believe I’ve only been living in Noosa for a few months, but if feels like home’, she says. “And my paintbrush definitely agrees.”

Spring in France gives great vistas. Gratifying green everywhere after the normal bleak winter. Then the fresh colours come on trend, and the favourites for flower lovers stand out - purple irises, some yellow, cerise peonies and the innumerable fields of red poppies.

hen to immerse in the food culture. Fat white and the spindly, spiralling green wild asparagus burst into menus as chefs’ new seasonal choices. The asparagus proliferation is intense but gone within weeks. Glimpse the day-today new experiences inside Uncorked’s France wine and food tour Number 5 in 2017. During 2016 tour time it rained in Switzerland, the Seine flooded, the Rhône eddied and the Dordogne just got muddier. Sure beats an Aussie drought. Guests are occupied by walking the underground cellars. Travels across the French countryside, from autoroutes to national roads to just dirt tracks are taken to reach the wineries. The sites can be spectacular, driving on steep or narrow roads and always capable of developing wine thirst. We arrive at a four star hotel on a lake high above the Rhône Valley - in Ardeche province. After drives through forests, hillsides of white dairy cattle grazing and fields of red poppies, lunch is near. This a pine tree-lined dam built long ago. The main road bisects the cliff-lined hotel with its open-air lakeside dining. The Auberge du Lac chef prepares a designer lunch, and our group has the lake terrace in private. Amuse bouche (a titbit to stimulate the palate) never fails to encourage table sighs; a little, tangy, carefully moulded citrus and goat curd, smoked trout sliver, then fresh wild asparagus, fricasseed, garnish of corrugated black-topped stock-soaked morilles, poached eggs; a main of tiny pink lamb loin, dashes of pale, delectable and succulent savory jus (the green herb sometimes called donkey pepper), then cheese from the nearby Rhône Alps where the cows and sheep graze. Wines are paired to the courses: a nearby chardonnay, Grande Ardeche from the Burgundian innovator Louis Latour, then a great syrah, Hermitage Hill wine from Delas and finally the Côte-Rôtie (roasted slopes) syrah from Brunel de la Gardine. Around TOWN WHO’S MAKING A DIFFERENCE

For Shirley Fox, owning a homewares store in Noosa was a vivid and longheld dream. A dream she solidified the moment she walked down the city’s gorgeous boutique strip which overlooks the Noosa River. By Nicole Madigan

had holidayed in Noosaville several times with some friends who owned a unit here,” says Fox.

“It was then that I thought I would love my own store along the beautiful river.” The desire to own her own business, though, came a little earlier. “I remember working for a friend in a gorgeous homewares store in NSW and longing to have my own business in Noosaville someday,” says Fox, who at the time was living on

the South Coast of NSW. “I always had a love of homewares and gifts and fashion and beautiful things,” she says. “I have a passion for styling, selling and sourcing pretty things or helping customers find that perfect gift for someone special, and then gift wrapping the present!” So specific was her goal, Fox had even selected the precise shopfront she wanted – an art gallery at the time - long before it became her own. “I had met the shop owner and told him I was interested if it became available, but at the time it was leased so I didn't give it much thought of changing anytime soon.” Little did she know a change was indeed brewing and before long, the stars aligned and Fox received an unexpected call – the art gallery was closing and the shop was hers if she still wanted it. Which of course, she did. “Well it all happened so fast,” says Fox. “I was in a spin! “I organised stock ASAP, as I knew exactly what I wanted to sell, and with the help of my friends, moved interstate.” Just four weeks after that initial call, Saffron Noosa opened its doors. “I was so excited. “People said you won't do it - but I did!” Saffon Noosa opened just before Easter in 2011, and five years later, Fox is just as passionate about her new lifestyle as she ever was. “I love it just as much today,” says Fox, who styled Saffron to be reminiscent of provincial France meets the Hamptons, but with a relaxed vibe to compliment Noosa’s coastal lifestyle. “I wanted to create a place where people would feel at home as they walked in, something for everyone,” she says. “I arrive at work and light my candle, put on my beautiful Putumayo music from around the world and enjoy my workplace.” With an obvious penchant for anything blue, Fox stocks products

“My favourite colour is aqua and there is a lot of aqua at Saffron Noosa!” The charming boutique specialises in stunning and unique collections of homewares, accessories and furniture. Fox has a particular love for her beautiful luxe cushions. “We have a great range of cushions - feather cushions by Madras are stunning and they can add comfort and colour to any room.” As they do to the store itself. And while she relishes her workplace surroundings, Fox says she loves the added bonus of being based in one of the most beautiful cities in Australia. “I have a beautiful space opposite the Noosa river and often have a daydream moment watching the yachts sail by, or the ferry tooting or just watching the people walking enjoying their day,” she says. “The energy is amazing as everyone is happy - happy to be here on holidays! Or happy to be living in such a magical part of the world full of sunshine. “I am very happy to be living the life I love.” Saffron Noosa is open Monday to Saturday from 9am to 5pm and on Sundays from 10am until 4pm.
